I

t’s finally fall in sunny Orange County, however, it certainly doesn’t feel much like it yet! I, for one, am really looking forward to some cooler days. It would be lovely to see a few fall colors on my morning hikes, but at least we can visit stores and places like Roger’s Gardens for a feel of what our East Coast neighbors experience year after year. All the kids are back in school, football season is upon us and Halloween, the unofficial beginning of the holiday season, is on the horizon, which seems to start earlier and earlier each year!

The Fall 2017 issue of bask Magazine also ushers in our seven-year anniversary, which I can hardly believe. Where did the past seven years go? It went by way too fast for all of us. This time each year I always take the opportunity to thank all of our loyal advertisers who have been with us since the beginning; there are far too many to list, but you all know who you are. We would like to mention that one of our great partner advertisers, Halston Home, has just changed their name to Vesta Luxury Home Staging, so be sure to look for their ad in this issue for more details. A

s I write this letter, I’m en route to one of my favorite cities of all time: Chicago. I wasn’t born there, but for some reason it’s one of those places that always feels like home. It’s a beautiful scene filled with seasons, stunning architecture, and history, a comfortable yet unpredictable place. Granted, I’ve never endured an entire winter (or summer, for that matter) in the Windy City—I’m not sure I could do that—but I still love to visit time and time again. Before my plane touches down, you can bet that already I’ve secured nightly dinner reservations and museum visits to all my local favorites, and added a few new discoveries on the docket too. This is a town I usually visit around this time of year, but still, in preparation for packing the perfect wardrobe—and for the first time nearly all summer—I found myself checking my weather app. With cooling temps surprisingly in the forecast, that’s when it hit me: fall is finally here. Good-bye to the heat wave and ridiculous electric bills. Hello boots, cashmere sweaters and holiday travel! This is the start of my favorite time of year. Hard to imagine I’m a girl born and raised in sunny California, 26

because I adore and long for fall and winter so much. But aside from landscape and temperature changes, what I love most are the celebrations this time of year brings—from Halloween to Thanksgiving feasts to New Year’s parties—spent with family and friends. Fall also brings with it a little something extra to look forward to and be grateful for: bask’s seven-year anniversary. As our publisher Jolie mentioned, we’ve been fortunate to work with so many talented people over the years—advertisers and contributors—who have also become our partners and friends. ell-known for masterfully creating extraordinary spaces around the globe—from luxury retailers like Barneys New York, to opulent hotels like The London Edition and Waldorf Astoria in Beijing—international design firm Yabu Pushelberg makes a mark closer to home with its re-creation of historic Las Alcobas, a Luxury Collection hotel, in lovely St. Helena, Napa Valley.

From Orange County, there are a number of routes that lead to California’s coveted wine country. Sometimes I fly to San Francisco then drive the 60-plus miles to Napa, but on this particular trip, I drive the whole distance, glimpsing all the quaint towns and beautiful topography from the ground, and spending one night in Carmel Valley. I head out early the following morning; once I reach Yountville, I know am close to the hotel, but before arriving there I make a leisurely stop at Bouchon Bakery for an Americano and at least one of their delicious French desserts. After somewhat of a long drive, I feel I’ve earned this tiny, but sweet, indulgence. An hour later, I arrive at Las Alcobas and am pleasantly surprised. Since the hotel was newly restored earlier this year, I’ve forgotten what used to be here, and what it looked like. Steering toward the valet, I’m completely struck by the splendid Georgian-like dwelling before me. It’s white, grand and discreetly luxe with sophisticated craftsmanship and a wide porch that wraps invitingly around the entire façade.

From the entrance, I’m welcomed by a team of attentive staff, one of who leads me from my car through the property and to my quarters. (There’s no “check-in” process as with many other hotels.) As we meander the grounds, I notice three additional buildings. More modern in aesthetic, each structure has its own unique character; all, meanwhile, are artfully adjoined by an expansive verdant lawn. The building on my left, the Acacia Barn, is also white, exuding natural appeal, while modernized

with stacked black steel framed glazing set inside wooden posts supporting the gable end. In contrast, the spa building on my right is an earthy tone, and the three-story accommodations toward the back of the property are an unimposing juxtaposition of farmhouse modern meets chic ski lodge. As I enter my room, I survey the cozy space—it’s minimal, but finely appointed with muted decor like creamy floor-to-ceiling linen drapes, a lone ash wood and leather side chair that resembles a contemporary take on a Windsor chair, a farmhouse glass-topped trestle table, and earthy gray wood planks that stretch to the focal point of the room: a spacious deck with a fire pit overlooking mesmerizing views of lush Beringer vineyards.

With a vision such as this and accommodations so enchanting, it’s easy and quite enjoyable whiling away the next couple of days marveling at the vineyards just a few feet beyond, reading on the deck and sipping wine by the fire after the sun has set. I also make a visit to the spa, atrio, where I choose a blend of essentials oils used during my massage. The treatments are designed to strengthen one’s overall wellbeing, which mine certainly achieves. Both the delightful scents I select (a melange of orange and lemon) and the massage I receive leave me feeling completely relaxed and


at ease. But I can’t help but feel that it’s not only the massage… because everything about this place feels like a much-loved retreat.

For the final night of my stay, I save the best for last: a fascinating dining experience at Acacia House, helmed by celebrity chef, Chris Cosentino. I’d been eyeing the menu all week, uncertain how to narrow down my choices with so many enticing options available. But alas, I decide on some novelty selections I might not find closer to home. To start: “Chips & Dip.” Not just any ordinary chips and dip, mind you, but beautifully whipped lebneh topped with caviar and served with homemade, perfectly salted gaufrettes. Superbly savory. Followed by: “Surf & Turf,” delicate and crispy sweetbreads with a light lobster ravigote. And for the final course: “Iberico Pork Schnitzel.” Quite possibly one of the most divine things I’ve ever tasted, with an exquisite crisp and crunchy exterior with a moist interior, a mount of arugula and topped with a sprinkling of caviar. (My mouth still waters just thinking about it.)

Putting a Stamp On It The connoisseurs behind Sugar Paper share their love for chic stationary—and time-honored tradition—with Newport Beach

T

here’s something particularly special about receiving, or sending, a hand-written note. Something of a pastime, really—the unexpected arrival of a thick, square-shaped, uniquely embellished envelope that appears in the mail, standing out among a sea of rectangular letters and bulky catalogs. But when you walk in to Sugar Paper’s new brick-and-mortar Lido Marina Village boutique (the first located in the Brentwood Country Mart), you too will instantly feel inspired to dust off your No.2 pencil and put it to paper. To visit the quaint shop, commissioned by Studio LIFE.STYLE, which designed the space to be “a beautiful white jewel box,” is to (momentarily) abandon tech messaging—the proverbial thank-you text, follow-up email and occasional e-vite—in exchange for a more personal communiqué. Inside, the delicate space is neatly filled with a wondrous display of bespoke stationary—greeting cards, notebooks, calendars, candles, shiny desk accessories, and more—distinctly curated by self-proclaimed traditionalists and cofounders Chelsea Shukov and Jamie Grobecker. “Having a decade of experience in retail, we designed the store to specifically highlight our product in a way that properly tells the Sugar Paper story,” says Grobecker. “While the flagship store will always hold a special place in our heart, this Newport Beach shop is certainly our dream Sugar Paper store.” Today, the brand continues to grow, collaborating with the likes of J.Crew and Target, while expanding as far as Harrod’s in London. Lucky for us locals, this darling gem is just around the corner.

With its newest boutique located at Lido Marina Village, the Northern California-based company brings its sustainable fabrics and zero-waste philosophy to OC’s coastal shores. While on a global travel adventure, brand founder Linda Balti was inspired to create Amour Vert after learning that the fashion industry is the second most polluting trade in the world. Segerstrom Center for the Arts sets an opening celebration for a new public plaza

A

rts enthusiasts who have visited Segerstrom Center for the Arts in the last several months have most likely noticed a major transformation on its 14-acre cultural campus underway. The Center’s much-anticipated plaza, which has been in the planning stages for five years and under construction since January, now has an official opening date of Saturday, October 28. The Grand Opening Celebration of the Julianne and George Argyros Plaza is set to launch with a ribbon-cutting at 11 a.m., followed by free performances, concerts, events and tours of the theaters. The renovated 54,750-square-foot space offers much for patrons to explore, including an outdoor cafe, two green zones, a stage for complimentary yearround performances, a circular grand staircase leading from the plaza to the mezzanine level of Segerstrom Hall, and a new entrance to the Judy Morr Theater. Additionally, the space will include shaded seating and picnic areas with Wi-Fi, plus an observation deck atop the full-service cafe. A 24-foothigh-fountain will occupy the center of the traffic circle in front of Segerstrom Hall and will serve as a welcoming centerpiece to visitors. Designed by Los Angeles architect Michael Maltzan, the Julianne and George Argyros Plaza is a stunning addition to the dynamic arts campus, which also includes the Tony Award-winning South Coast Repertory and a site dedicated to the future home of the Orange County Museum of Art. What drives your passion for selling real estate?

I have always loved architecture and the art of interior design. At a young age, I started working at Nordstrom, and continued throughout my college years. You are known for your sales dominance in Shady Canyon. What makes this marketplace so desirable?

I’ve been fortunate to work within Shady Canyon, and since 2008 have sold more homes than any other agent in the community. Even though the community has been here for a little over a decade, it has quickly established itself as an address of choice among Orange County’s captains of industry and professional athletes. In many ways, Shady Canyon is reminiscent of the hillsides of Tuscany in Italy—with the same kind of topography and scenery. It is located near the coast, yet also offers a countryside setting that is close to freeways, shopping, dining and recreation. In addition to being very secure and private (with two guard gates), Shady Canyon also offers a famed Tom Fazio golf course, a Country Club, walking and biking trails, swim, tennis and fitness facilities, and much more.

How did the launch of the Jacqueline Thompson Group come about?

I started my solo career in real estate just before the 2008 banking debacle. I remember holding open houses during 2008-2011, when buyers were fearful of the environment, and I remember the long 15-hour work days of showing homes with little results. I remember going home after a long work day and calling and emailing potential buyers, as I left no stone

unturned. Eventually my hard work paid off, as I was able to negotiate and put deals together. From that time on, the referrals kept coming in. At one point, I realized I had worked for five years straight without a day off. I was very hands-on, and was involved in every aspect of my job. Fortuitously, I was approached by several agents who asked to work with me. I was able to commit to giving these agents quality mentoring, which was important to me. To this day, I have the same agents working with me. At The Jacqueline Thompson Group, quality is more important than quantity. My goal has always been to exceed our clients’ expectations. To do so, I start with giving clients quality service. I have never been driven to hire dozens of agents to work under me. My goal has always been to maintain the integrity of my relationships with my clientele, and to deliver quality service. At The Jacqueline Thompson Group, I am proud to say that we are lean and mean. How important is being well versed in international business nuances when closing a transaction?

Although the global business environment, coupled with technological advances, has been able to bring buyers and sellers together, there are still cultural gaps that need attention. This has never been more true than in the real estate industry. Being well-versed in international


business nuances is extremely important as the ability to navigate and understand a foreign client’s way of doing business strongly helps from beginning to end—from the first showing at the home, during the negotiation process and until escrow closes. I once had a buyer call me en route home to China to inquire on a listing of mine that just came on the market. Although we had not met yet, I let the buyer know that most likely the home would sell before he could return to see it. Naturally he was reluctant to make an offer without seeing the home, and meeting me in person. After developing a rapport with the buyer on the telephone, he was still reluctant to make an offer on the home, so I asked if he would consider meeting with a client of mine that was in China visiting family at the time. The two met, my client was able to give reassurance to the buyer and I successfully closed escrow on the home shortly after that. It was exciting to give him the keys months later when he returned to see his new home in the U.S. for the first time. Will you speak to the importance of being hands-on with all your clients and transactions? As you can expect, the business of selling and buying a home is very personal. I work extremely hard to give my clients—whether a buyer or seller—quality and hands-on experience. It is always my goal that the relationship I build from a transaction continues to grow throughout the years. I have to be available 24/7 to each and every client that I help, or I should not be taking on additional business, which is counterintuitive to those that are looking to just sell as many homes as possible. Having been in the business for a decade, I am proud to say that I am still very hands-on.

How have you honed your ability to match a property with the ideal buyer?

The single most important trait for a successful real estate agent is the ability to listen and ask the right questions. From the onset, I have really learned to listen to my clients’ needs. Sometimes listening to your clients’ needs will help you save them time. Often, asking the right questions will help the client to understand their own needs. No matter how many homes my clients end up touring, most of them end up purchasing one of the first three properties I select for them. Being able to listen to their needs, and

asking the right questions, helps me suggest the best homes to fit their needs. And what do you find most rewarding? The relationships I have been able to build with clients and colleagues alike, and of course the fabulous homes I have been honored to represent. I get to see the most stunning homes on a daily basis; it can’t get better than that! What are your passions and preoccupations outside of real estate?

I have always loved sports, and have always been ultra-competitive. Swimming and soccer are two of my favorite pastimes. The Super Bowl is a big deal in our family, and in

recent years, for at least three hours during the Super Bowl, I try not to pick up the phone when it rings. Spending time with Bill, my husband of 17 years, has always been my favorite passion. It takes a very patient and understanding person to allow me to work the long hours I need to properly service my clients. Together, we support the charities closest to our hearts, which are associated with children, churches and synagogues. My family was very fortunate to have been helped by our local church when we immigrated to the United States, so we strongly endeavor to pay it forward whenever we can. Life is very rewarding when you can share your love and fortune with others.

Now, he and his team work with leading architects, builders, and Realtors, primarily in Newport Coast and Laguna Beach, to design and build beautiful homes from the ground up. The result: elegant spaces incorporating an aesthetic that includes the unique and unexpected—from the use of natural stone or custom mosaic to an unusual cabinet door style or a custom-made door handle. Although asking de Jager to select a favorite project from his vast repertoire is like asking him to choose a favorite child, his first major commission always will hold a special place in his heart—its inspiration a young family who relocated from Europe to Southern California and were looking to build a special home. “Their biggest

arly in life, Errol de Jager would scribble 3-D designs he’d then use to craft elaborate imaginary playhouses. He also recalls reorganizing the spaces in his parents’ home until it drove them crazy, moving furniture and redecorating weekly. “While I have a hard time remembering a phone number, I have been blessed with the gift of being able to visualize space from 3-D drawings,” he says. “When many see four lines on a piece of paper as a simple square, I quickly see a cube and then start wondering.”

DeJager Designs concern was that it had to have a sense of authenticity to the Northern Italian style of the architecture . . . family-friendly, full of the unexpected, and most importantly, not an Orange County beige box,” he says. “The collaborative efforts with my client led to many buying trips abroad, flying crews in from Europe for specialty finishes, and resulted in an amazing home, and more importantly, an enduring friendship.” Most recently, a trio of homes being built by developers in L.A. has allowed him to push design boundaries. Among them: a 26,000-square-foot Rob Sinclair-designed home in Bel-Air boasting six cascading, light-filled levels that flow seamlessly between courtyards, interiors, and terraces. Then there’s the 5,000-square-foot home in Laguna Beach, where the cliffs and ocean inspired de Jager to use a blend of textured stone and smooth surfaces to create a perfect balance of warmth and sophistication, complete with a stone courtyard featuring a 20-foot water wall with a stunning fire feature. “I am often told that I am one of very few designers who have the holistic vision and ability to help navigate a project from concept, through architecture, construction, landscape and interior design,” says de Jager. “My contribution is truly collaborative, and always with the singular focus of delivering to my client a home that exceeds all expectations.”

How and when did Hilton Builders begin?

What makes you passionate about the industry?

The company literally began by two people following their passion. I had planned to enter law school after graduation from UCLA. Dan went into the lumber business. But our passion was building and design, which we always did for ourselves. We couldn’t buy a house without remodeling it. One day a friend asked us to build for them and we replied we could not legally build for someone else because we didn’t have a license. We had always been owner-builder. She said, ‘So go get one!’ So we did, and that is how we became professional builders. That was 42 years ago!

We find it absolutely thrilling to create something new, different and beautiful for every client and every project. One of the things we enjoy the most is becoming part of our clients’ lives and being able to enjoy their homes after construction, as we are invited to so many of their parties. I must say it is wonderful to hear the accolades first-hand from the friends, neighbors, and relatives. What’s not to love!

What makes the business distinct from its competitors? We love what we do. We are innovators. We can take clients into homes that we built 25 years ago and see things that our competitors are just now doing. We have always kept abreast of all the latest technologies and new materials. Our employees. We trained our own in-house carpenters to be the most highly skilled in the industry. They have over 100 years of combined experience with our company and take great pride in their work. Our subcontractors. Our subs are the best in the industry for quality and competitive pricing and are always willing to go above and beyond for our clients. Some have worked with us for as long as 30 years. Meticulous record-keeping and open-book project accounting. When we started building for other people I asked myself, ‘How would I want to be treated if I were at the mercy of a builder?’ Hence the complete open book system. Total perfectionism and unsurpassed attention to detail. Service above and beyond—before, during and after construction. Our clients are amazed that we truly are available for them 24-7. For example, a client’s new oven continued to stop functioning and the manufacturer refused to replace it. The client’s were having an important party and were afraid that the oven would stop working again. So we bought a brand new oven, got it installed before the party and then took on the fight with the manufacturer.

How would you describe your style and the core of your design philosophy? We don’t have a style per se. It’s all about the clients’ style, tastes, and wishes. We have built and done the interior design for just about every style home imaginable including Contemporary, Mid-century Modern, Tuscan, Mediterranean, Asian, Cape Cod, Dutch Colonial, Caribbean and Industrial, to name a few. Some clients prefer symmetry over asymmetry, warm colors over cool colors, monochromatic over dramatic. The evolution and mélange of all styles is exciting. We love coming up with new variations on old themes. We want every nook and cranny of the entire house to be spectacular. There are no secondary spaces as far as we are concerned. What are your main sources of inspiration? Architecture and design from around the world. For example, in France we were fascinated by some beautiful stone buildings with old wood doors that needed to be replaced. Rather than putting on new wood doors, large glass doors were used instead. The first opportunity we had to use this application came when we were remodeling a Tuscan-style home on Linda Isle. I suggested a glass door imbedded into the stone. They trusted us and the result was spectacular. We were the very first company in Newport Beach to do this. What is your ultimate goal with every client? We want all clients to be ecstatic with their home and look back at the process and say, ‘It was fun, and the results went beyond our highest expectations.’

Community of Champions For the inaugural Heroes & Living Legends Gala, more than 200 supporters gathered at The Duke Hotel in Newport Beach for an inspirational evening that raised $729,000 to benefit Open Gate International (OGI), which empowers vulnerable populations with vocational training for long-term economic stability. Hosted by Deidre Pujols, CEO and founder of OGI, and Albert Pujols, first baseman for the Los Angeles Angels of Anaheim, the event featured a cocktail reception, interactive culinary productions, live music, fine dining, a live auction and more. Special guests included other Angels players, local celebrities, honorary emcee Jose Mota and Baseball Hall of Fame Coach Tony La Russa. A tremendous success, the inaugural gala supporting OGI was nothing if not winning.

SeaChange Soirée It was an enchanting evening along the OC coast for the 10th annual SeaChange Summer Party to support Oceana, the world’s largest ocean conservation organization. Nearly 400 guests attended the sold-out event, which was held at a private coastal villa in Laguna Beach and raised more than $1.2 million to help protect our oceans. This year’s festivities, which featured actor and longtime Oceana Board Member Ted Danson as master of ceremonies, honored celebrities Sam Waterston and Lily Tomlin for their ocean advocacy. SeaChange guests indulged in specialty Nolet cocktails and delicious cuisine, while silent and live auctions featured an array of exclusive items. Once again, SeaChange supported Oceana’s campaign to restore our oceans and precious marine life.

F+P - Stars & Stripes Wondrous Weekend Set against the picturesque backdrop of Cabo San Lucas, the 21st Annual Stars & Stripes Tournament, a popular three-day fishing, golf and music festival, raised more than $3 million to benefit seven youth organizations in Orange County, San Diego and Mexico. ustralia. Just the word evokes a longing to board a plane and see what all the fuss is about. And for good reason, since this bucket-list destination is truly one of the world’s great places. As Australia is almost as large as the United States, trying to see its entirety in one trip isn’t very practical for most Americans. But with a few weeks—or even a month—to visit, travelers can view most of the eastern side of this magnificent, massive island continent, experiencing its incredibly friendly citizens, 19 UNESCO World Heritage sites and gorgeous land and seascapes. Despite the distance, the trip from Southern California to Australia is easy. On one of the daily nonstop fl ights

from Los Angeles International Airport to Sydney Airport, on airlines Virgin Australia, Qantas, United or American, you take off late in the evening and land some 15 hours later, fi rst thing in the morning. You’ll lose a day in the process, but your body won’t know it. Just sleep normally (a lie-flat bed in business class certainly helps) and wake up ready to roll. (The same scenario is true for nonstop LAX fl ights to Melbourne and Brisbane.) Once you arrive in Australia, the experiences are endless. Here, a collection of our favorites, state to state, along the east coast, from swimming with sharks in Far North Queensland to marveling at the rugged beauty of the Twelve Apostles in southern Victoria.

Start in Sydney, one of the planet’s most visually spectacular cities. This vibrant place has its must-see stops, especially for the first timer. Ascend the steps of the Sydney Opera House (take in a show there, too); wander through the Botanical Gardens and gaze at the huge sulfur-crested cockatoos, ibis and rainbow lorikeets; and climb the Sydney Harbour Bridge. Stay at the Four Seasons Hotel near Circular Quay with its spectacular views of the city’s celebrated harbor, or choose the ultra-chic QT Sydney, an edgy and fun boutique hotel in the center of town. For a wonderful day, head to Coogee Beach, then hike the spectacular four-mile cliff-top walk to Bondi Beach for swimming, surfing, sunning, and shopping. Keep walking into Watson’s Bay to try Moreton Bay Bugs (picture a less attractive lobster) and other local seafood delights at Doyles on the Beach, a restaurant that dates to 1885, then ride the ferry back across the gorgeous harbor to Circular Quay at the city’s heart. Stop by Chippendale and Barangaroo, the up-and-coming neighborhoods that are taking Sydney by storm. Visit the famed White Rabbit Gallery and other newer galleries that have made Chippendale the place to be, and take in the historical Aboriginal roots of Barangaroo inside The Cutaway, the area’s massive cultural space and market area. Be certain to eat at Cirrus, where the worldclass seafood will tantalize your taste buds. If planning a trip to Sydney in June, when it’s their winter, experience the incredible annual light installation-projections called Vivid, an electric art festival that’s a fantastic sight to see. Find more art further north in New South Wales; Byron Bay and Tweed Heads are favorite getaway spots for both locals and tourists. Tweed Regional Gallery boasts a fascinating permanent exhibit on famed Australian artist Margaret Olley, as well as beautiful rotating displays and a bucolic setting. Nearby, Byron Bay has it all for a perfect holiday, including luxurious places to stay— Elements of Byron, with its freestanding modern villas, lavish pool and serene private beach is one of the newest choices—along with chic shops, plenty of water sports and an iconic lighthouse with expansive views. Farm-to-table eateries abound in this laid-back region, with Mavis’s Kitchen, Paper Daisy, Three Blue Ducks on the Farm and Harvest Café all worth seeking out for their fine fare.

You’ll know you’ve arrived as you wend up the mountain and spot the koala and wallaby crossing signs; it’s wild up here, and you never know what you’ll encounter on a hike into the bush (as Aussies call the woods). Gwinganna’s gorgeous world-class spa (with 33 treatment rooms) is an integral part of the retreat experience, which emphasizes the Aboriginal idea of Dreamtime—stopping to rest, relax and be pampered. Digital detoxing is another focus, so be ready to do without phones, computers and televisions while visiting. Come down from the Gwinganna state of bliss to surf along the Gold Coast, where the breaks are legendary (it isn’t called “Surfer’s Paradise” for nothing). With names like The Superbank, Burleigh Heads, Mermaid and The Spit, there’s plenty of waves to go around here. Think Miami Beach, but with great surf. If you’d rather feed wild dolphins and swim with sea turtles and dugongs, go straight to Brisbane, where Moreton Island’s Tangalooma Resort offers these incredible experiences. Every night, a family of 12 wild dolphins arrive, looking for a dinnertime snack. It’s quite a rush to feed one, then watch him swim off into the Coral Sea. Even more of a rush comes in Far North Queensland, where two stunning World Heritage sites await. Fly to Cairns, the jumping off point for the first of these sites, the Great Barrier Reef, and get ready to swim with sharks—species that don’t bite humans, of course—as well as stingrays, moray eels, sea turtles, manta rays and much more. Make your home base the lovely Thala Beach Nature Reserve with a villa in the midst of the beachfront forest, then choose a day trip (it takes two to three hours to get out to the reef) on one of the luxurious Quicksilver Cruises departing from Port Douglas or Cairns. Scuba divers will adore going all in with Reef Encounter’s liveaboard ship—head out for three full days on the water, dive four times a day, and wine and dine too. (Choose the “Top Deck” package and be pampered every step of the way.) The Great Barrier Reef is truly is a breathtaking place for divers and snorkelers to experience.

QUEENSLAND You could spend months in the vast state of Queensland, moving from one striking landscape to another, but practically speaking, taking in the southern part of the state (Brisbane, the Gold Coast and Surfer’s Paradise) then flying to the far north (Cairns, Port Douglas, the Great Barrier Reef and the Daintree Rainforest) is the best way to see the highlights of this sunny, warm and unique region. Beyond - Australia The second World Heritage site in the area is Daintree National Park, the world’s oldest rainforest, where crocodiles still swim free, rare species thrive and wild landscapes abound. Take a guided tour to the park, including Mossman Gorge and the wild beach at Cape Tribulation to the far north, with a river trip for croc spotting. A helicopter ride is an incredible way to see this part of the world, too. VICTORIA No visit to the eastern coast of Australia is complete without a stop in the state of Victoria to see Melbourne (arguably the country’s most sophisticated city) and beyond. Make the legendary Langham Hotel home base for its top-notch service, famous afternoon tea and incredible buffet at Melba Restaurant (where locals seem to outnumber tourists). It’s in the heart of town, making for an easy stroll to the National Gallery of Victoria, the massive Royal Botanical Gardens, St. Paul’s Cathedral, the Melbourne Star Observation Wheel and the countless coffee shops, secret bars and fabulous restaurants that make this such a vibrant city. Melbourne has embraced street art like no other place in the world, especially in the narrow laneways and arcades that date back to Victorian times and have emerged as the cultural meeting places of those in-the-know. Visit Hosier Lane, where graffiti artists

are encouraged to paint on all the walls, then check out ACDC Lane, and begin to look for the clandestine bars and restaurants dotting the Central Business District. For inside info, pick up a Luckie Guide card deck (Eats or Bars), with 52 curated places that you might never find otherwise. Some of the hottest places (like Eau de Vie or Bar Americano) don’t even have signs, but they’re packed and have a seriously cool vibe. Two favorites for food are the Arbory Bar & Eatery, along the river, and Cumulus, Inc., one of the many sophisticated choices on Flinders Lane. Before finishing up this extensive tour of Australia’s east coast, take a day to travel to another of the Land Down Under’s natural wonders: the Great Ocean Road and the Twelve Apostles, alluring limestone rock formations rising out of the Southern Ocean. With its boutique retail, elevated design and generally easy air, the impeccably dressed development is precisely what modern retail of any memorable or lasting sort requires: a point of differentiation. Setting aside its 47 boat slips and unhurried street setting, Lido is, specifically and essentially, a local story.

Lord, brought in to do the hand-painting work (signs, flooring, sailboats), DJM conceptualized Lido’s design, contemporizing it to simple yet sophisticated effect, blending an archetypal palette of black, white, and gray with natural wood and brass.

hen famed restaurateurs Don Myers and Peter Serantoni announced they were expanding the well-loved Cha Cha’s Latin Kitchen Brea to Irvine, lovers of Latin American cuisine leapt for joy. “Cha Cha’s Latin Kitchen Irvine is all of the best things from Brea and then some,” says Myers. “We brought on renowned designer Thomas Schoos for an al fresco dining feel throughout, including the bar, which takes center stage.” The design is not the only element that got a fresh look; while the menu retains classic favorites such as the Seafood Caldo of fresh fish, shrimp, clams, squid and saffron-tomato broth with angel hair (yes, please!), Ceviche Sampler of shrimp and ahi aguachile, and the Crab and Shrimp Enchiladas with creamy habanero pesto sauce, newcomers include the Wild Mushroom Sopes, and Empanadas. And now, corn is ground in-house for masa dishes and tortillas. From the bar, homemade infusions and fresh-squeezed juices are the essence of signature cocktails like the Cha Cha’s Margarita, Platinum Mojito, and Pepino Martini (a personal favorite). And save room for dessert, Cha Cha’s features a Caramel Flan that quite possibly might be the best you’ve ever had.

“Being from Sicily, I grew up by the sea and Newport Beach reminds me a lot of Sicily in many ways, with the boats, the water, and the friendly locals,” shares Giuseppe Accardi, known as “G” and owner of the recently opened Mr. G’s Bistro on Balboa Island. Drawing inspiration from dishes enjoyed in childhood and Sunday Suppers with friends and family, it was G’s vision to create a restaurant worthy of these fond memories. Having hovered over the stove as a child, G can now be found in the kitchen, especially on Sundays, making his highly praised Rigatoni. “I love cooking,” says G. “There’s a bit of nostalgia in my cooking from my family heritage and also from my travels.” In addition to the Rigatoni, which is served exclusively on Sundays, look for starters such as the refreshing Burrata with orange, prosciutto, mint and honey; pastas like their signature Tagliatelle Bouillabase, Grilled Lamb Chops and the popular Mussels with Calabrian chili, tomato, garlic and white wine. hef Tim Goodell is highly acclaimed, and multi-awardwinning for a reason… his cuisine is utterly mind-blowing, no matter the fare. A culinary icon with restaurants such as the former Aubergine and Troquet and the newer Public Kitchen & Bar Hollywood, Goodell’s newest culinary endeavor is Royal Hen on Balboa Island. “Inspired by Old-World Parisian and English pubs,” says Goodell, “the décor and cuisine at Royal Hen takes you away from current time.” As do the tantalizing flavors of his dishes, which elevate the palate with creations such as the Brussels Sprouts Caesar Salad; Foie Gras and Chicken Liver Toast with cherry moustarda; Maccheroni alla Chitarra short ribs; and Rabbit and Black Truffle Agnolotti with squab liver crema. Richer in flavor as the menu progresses, dishes are designed for guests to share and include ingredients like house-made sausages and veal cheek.

General manager, Elizabeth Blankstein, hand selects the Hen’s self-described “esoteric wine list,” selections of which she’ll artfully pair with each dish upon request. The Cuvee Delaye Saint-Veran chardonnay pairs nicely with the previously referenced Brussels Sprouts Caesar and Foie Gras, while the Piedrasassi Harrison Clarke Vineyard syrah/mourvedre is the perfect accompaniment to the short ribs. Don’t forget to ask about the secret menu featuring Goodell’s best burger. Though off the menu, “I kept the burger available for the locals,” shares the chef.” [It’s] still a best-kept secret.” 124

Creating Stories Chef Cathy Pavlos comes full circle at Provenance AS TOLD TO SUSAN IRBY

TO MEET CHEF CATHY PAVLOS IS ELECTRIFYING. Her smile illuminates the room. Her welcoming enthusiasm draws in guests. Her culinary creations abound with depth derived from her training as an art historian and teacher of architectural history, her knowledge of French, Italian and Latin cooking techniques, and morsels of family memories revealing her Italian roots. Here, chef Cathy on food, family, and the journey to “come home.” What does the name Provenance mean to you?

With a degree in art history, I taught Architectural History. Provenance is a term used in art history to trace origins of a piece of art back to its source. When you ask what is the provenance of a valuable object, you are asking who owned this object over time, who created it, and why. In this day and age, guests care about the source of their food; here at Provenance, we can trace the origin of all of our ingredients back to their source. We know our purveyors and our purveyors’ purveyors.

Your business card reads: “Locally Sourced, Napa Valley Inspired, Chef & Ingredient Driven.” Why Napa Valley?

When I was a kid, Orange County was rural. I could ride my horse to school; I raised sheep, goats, and rabbits, and my grandfather was a commercial farmer in Huntington Beach. The phrase “locally sourced and ingredient driven” may sound trendy today, but that was the way many of us lived in the ‘50s and ‘60s. We weren’t being stylish; we were living off of what the land could provide. Napa Valley today reminds me of northern Italy where my family lives and, also of Orange County where I grew up. It is no exaggeration to say that Napa Valley is home to some of the best restaurants in the USA. What makes a successful licensed architect quit her job to work at a health emporium washing dishes?

For the most part of my life, I worked white-collar jobs: architect, project manager, college professor, academic administration. I have four college degrees, including a PhD in Environmental Design and Analysis. By 2001, I wanted to get back to my roots—I was my Italian immigrant grandma’s sous chef at the age of 4, and she was the best cook around. Everyone would come to her house to eat Sunday Suppers. We’d cook for 50 and she’d never break a sweat—all of it locally sourced and ingredient-driven. 126

In our conversation, you mentioned that American palates have gotten brighter. Why do you think this is?

As a population, especially in California, we have been able to taste very ethnically diverse foods; moreover, the last couple of generations have traveled abroad and experienced the rich cultures of the Middle East, Asia and Latin America. At Provenance, we have created many sauces and condiments, based on authentic recipes from Asia, Latin America, and the Middle East, but we’ve tweaked them for a more contemporary California taste. And, we’re not pulling any punches on the heat; if the sauce is supposed to be hot, it is, and our guests have loved it. You’ve said, “I am still an Academic at heart.” How does that translate into your life now and the foods you create at Provenance?

I spent a lot of years doing research—in art history, in architecture and in the social sciences—and this process gave me an appreciation for history, context, time, and place. I spend a lot of time these days researching recipes and cooking techniques. I love a good backstory; all of our menu items have a great backstory. I also research our suppliers and get their backstory out there too. There are so many small farmers and ranchers doing everything right and they don’t get the credit that they deserve. As it is now, you make the dish. If a dish were to make you, what would it make?

Interestingly enough, my dishes have made me, I guess. In another life, I used to paint and draw; I was an active architect who created models and built from them. When I first began in culinary, I was pretty conservative, learning as I was doing. I knew that plating was important to me and so was taste. My grandma taught me that you first eat with your eyes. My training as an architect taught me to use the elements of line, form, color, and texture, and put them together using the principles of rhythm, balance, proportion and scale. I was also taught about time and place. In the early years of culinary I struggled because I separated my earlier design training from my culinary training. It was only in the last couple of years here at Provenance that I realized that it has all come together and I could still be an artist, and as a result, my plates have come alive.

What’s next for Cathy Pavlos?

I will be spending more time up in Napa Valley in the coming years, and commute back and forth. The Culinary Institute of America (CIA) has opened their new Graduate School of Business in Copia in downtown Napa. I am going back to teaching—this time in Culinary Arts and Business. Each time that I come back to Orange County from Napa and Sonoma Counties, I bring something back that we integrate into the operations or menu at Provenance. It’s a win-win. I’ve met so many chefs, purveyors, farmers, foragers, and ranchers—and all of them have inspired me. In a way, I have come full circle, and I have come home.

Brimming with bijoux, the annual publication is, like the iconic Tiffany Setting, truly timeless. The Blue Book emerged from the grander vision of Tiffany & Co. founder, Charles Lewis Tiffany, whose decision to establish a small “fancy goods” store in New York City in 1837, bankrolled with $1,000 from his father, proved an incredibly prosperous move. From the 19th century, Tiffany gemologists searched far and wide for the best stones, procuring such talismans as the North Carolina emerald, Russia amethyst and African blue-violet tanzanite—gems that inspired many a Tiffany treasure, including a glittering homage to the jewelry of the Mughal Court in India in the 1920s. “The most wonderful thing about the evolution of the Blue Book is that from 1845 till now, it’s really a time capsule that shows what the styles and trends are at the time,” says Melvyn Kirtley, chief gemologist and vice president of High Jewelry, Tiffany & Co. “Tiffany Blue Book designs are…embedded in the company’s DNA.”
