Oh, spring… a season that reminds me of new birth, home, family and all the possibilities that come with the bloom of the new season. It’s a chance for change and new beginnings, and it’s hope for the future. Sadly, this spring has also brought the loss of my beautiful and beloved mom. In light of this, I’ve decided to dedicate this issue to my mom, Harriet. After being in publishing for over 20 years, my mom has been my biggest supporter as well as critic along the way. She never missed a chance to ask me when she could expect to see the next issue and if I was sure she was still on the mailing list! She critiqued the publisher’s note every chance she got, and when I was going through her things I found the last issue of bask on her bookshelf, where she had fondly written in notes and corrections. Mom will be greatly missed, but the memories she’s given us continue to show me what it truly means to fill a home with wonderful family memories and innumerable other lessons that have taken my sisters and me a long way. So it’s even more fitting that this Spring issue also happens to be our home issue. The home designs featured in this issue are inspiring to say the least—from the most luscious linens to the sweetest ceramics, you’re sure to find something that speaks to you. Whether you want something big or small to freshen up your home for the new season, we’ll show you where to find it and how to showcase it. Along with our myriad nesting tips, you’ll also find travel destinations that will make you want to pack up a bag for a weekend jaunt to LA or extended expedition to Fiji, and the most entrancing reads and best new everyday fashions to take with you. We’ve also scouted soothing spa treatments to rejuvenate you along with the season, the freshest foods you’ll want to try out, and a host of other ways you can take advantage of the stunning scenery of this season in Southern California. Ultimately, spring is about fresh opportunities, change, growth, and of course family and the home. As Mother’s Day approaches, I send this one out to my mom, and all the other mothers who have touched our lives along the way and made home a place of family and magical memories. 4 Tony Lattimore A Chicago native who first fell in love with Southern California during a visit in high school, Tony relocated to Orange County after serving in Desert Storm. Recognized for his work as a fitness model in the popular P90X training videos and lauded for his near-legendary networking, he brings his energetic personality and his love of photography to bask. 5 Cyrus Antia A father as well as one of the best product and architectural photographers, Cyrus has shot everything from jewelry to exotic supercars to supper clubs. The interactive, lifestyle-driven showroom is divided into four sections entitled dream, play, choose, and live. Within these four sections, clients will find an array of premium appliances for kitchen, bath, and outdoor living, along with several user-friendly features, including a map of the showroom, as well as entertaining storyboards and demystification stations for certain appliances. The creatively written storyboards found scattered around the showroom are all about a moment in time, while the demystification stations take a topic and educate the consumer in a whimsical way. For instance, the demystification station in the refrigerator section asks the question, “Are you a squirrel?” It then continues the topic with whether you need space to store a lot of food. This presentation style is as fun and clever as it is useful in determining your specific needs. “It’s all about engaging the client,” adds Arnold. After viewing the enclosed spa-sanctuary space, you’ll understand exactly what Arnold means about engaging the client. The calming Sanctuary area features a dry heat sauna complete with various therapies, including heat, aroma, and sound; a soaking tub; massage tables; a steam room with waterfall; a shower wall with 33 different fixtures that you can turn on; and a faucet wall. The Sanctuary room can even be reserved for clients who wish to try out the products in a private setting, and Fixtures Living will also arrange to bring in a masseuse, if so desired. Another showroom highlight is the inviting Patio area, which is located just beyond the grilling section in the middle of the store. The stunning interior space includes a bar-like seating area, skylights, a live plant wall, refrigerators, a small hearth oven, and beer on tap (Stone Brewing Co. IPA during my recent visit). The place is so inviting that it encourages socialization for hours on end, and even grilling on the weekends. With so much to explore at Fixtures Living, it’s easy to see why Arnold says that the average person spends over three hours in the showroom on a typical Saturday. The Kitchen space is another must-see with its state-ofthe-art exhibits and remarkable display of product lines, including Dacor, Miele, Gaggenau, KitchenAid, Electrolux, and La Cornue, to name a few. Other tempting reasons to visit the Kitchen area include daily cooking demonstrations and tastings, as well as microbrew tastings. As an innovative showroom that is truly leading the way among appliance retailers, Fixtures Living prides itself on being green-friendly. All of the water used in store demonstrations gets recycled, and recycled stone and glass can be found throughout the showroom. The Costa Mesa store is currently in the process of going for a Silver LEED Certification, and according to Arnold, “it is the first retail location going through certification from the ground up.” Fixtures Living is also an extremely dog-friendly place, and there’s even a cute pet spa area. Mondays are also known as Woof-Days, where canines can get a specially made, nutritious treat from 11:00 a.m.–2:00 p.m. There are equally enticing events for the pet-owners throughout the week, including Taste Bud Tuesdays; Recipe Wednesdays; “Something Else” Thursdays for demonstrations and tips on various subjects; and Fixtures Fridays, where clients can meet a local farmer, sample his or her food, and learn about cooking with farm-fresh ingredients. None. “I’ve been told, only in Dubai have others seen design work anywhere like this,” says Rick Fahmie of the meticulously detailed and exotic Kitchen Expo design firm in La Jolla. His custom cabinetry with high-gloss finishes resembles that of yachts and look like glamorous works of art. “I do very special jobs for very special clients,” he explains. And his jobs go well beyond the kitchen. “Kitchens are the catalysts to homes,” he says, hence the company name. He’s matched wood doors to clients’ Rolls-Royces, designed a patented wood ping-pong table, created striking, intricate wood ceiling masterpieces, and the requests and projects go on. Whole Foods, Gone to the Dogs
We spend a lot of time prioritizing our own health and wellness, but it can be tough to remember that our furry friends need the same type of attention. This realization got me thinking about a place that’s always piqued my interest, but I had yet to explore. Open for just over a year with a prime PCH spot, business is booming at Just Food For Dogs—and with good reason. So, I headed to the doggie hotspot to talk with founder Shawn Buckley about his one-of-akind dog joint and his thoughts on wellness for man’s, and this woman’s, best friend. “We’re no doggie diner with birthday parties or froufrou cupcakes,” the frank, but friendly, Buckley quickly stated. “People ask us to have the parties, and the answer is always no.” “We’re the world’s first dog kitchen. There’s nothing else like this anywhere in the world.” Buckley says. And he’s definitely done his dog diligence prior to opening his all-original canine cuisine kitchen.
“Feed your dog a whole food diet— doesn’t matter if we make it or you make it; and if you want to make it, we’ll give you the recipe and show you how for free.”
So what’s on the menu? The meals consist of whole food recipes that are certified for human consumption by the FDA/USDA, but formulated for a dog’s nutritional needs. You’ll find freshly frozen meals of lamb, turkey, chicken and more, as well as supplements and treats, but don’t expect pink cakes or treats in heart shapes. “We don’t bother making treats in any other shape than square, because dogs don’t care, and they aren’t for us. We’d rather spend the money on flank steak like that served at A Restaurant down the street,” Buckley told me.
When I visited with my Lab, the open kitchen was buzzing with activity (and yes, of course my pooch went nuts for the place). Locals and their pets kept popping in to pick up their weekly goods of meals made with no preservatives—nothing but meats, whole grains and veggies cooked to the minimum for maximum nutritional value. Buckley, one of the four owners, got his canine kitchen idea after wondering what exactly was in his dog’s food. And after he found out (let’s just say it’s similar to urban myths of what’s in hot dogs—and worse), he said goodbye forever to commercial dog food. His whole food kitchen also works with specialty rockstar vets, such as Southern California Veterinary Specialty Hospital, creating custom food for dogs fighting cancer, liver disease and other diseases. But what Buckley really wants to do is help prevent illness in dogs with the right food—and he’ll tell you confidently that dogs’ wellness is all about the food they eat. Adding, “I’m not just saying that because that’s what we do. Feed your dog a whole food diet—doesn’t matter if we make it or you make it; and if you want to make it, we’ll give you the recipe and show you how for free—but don’t feed them anything in a bag or a can because it’s not healthy.” Your pooch’s quality meals are available for pick-up, local homedelivery service from Dana Point to Long Beach, or for longer distances you can also have them shipped to your doorstep. At first, my overall objective was to lift and tone the areas that gravity had weighed in on over the years, and ultimately learn how to eat better than I was. The prospect of getting into a new rhythm of working out, especially during the first couple of weeks was incredibly challenging, but Cora’s style of training is not only all encompassing but also personally tailored. She customized a fitness plan that worked well for my body type— including weight, cardiovascular and nutritional training—which allowed me to work at my own pace and see steady, gradual results. Proving that ‘what you eat is 80% of how you look,’ Cora educated me on how to eat right for my body. She sent me home with lists of do’s and don’ts—what to eat and what not to eat—and checked in with me every day to encourage healthy eating patterns. Her daily counseling helped me redefine my eating habits. Over time, the physical results were obvious, but what was most important to me was that I felt healthy. There’s something about the New Year that inspires new beginnings. As cliché as the idea sounds (and after a whirlwind of holiday happenings), I felt inspired to get in shape for summer, inside and out. For the most part, I thought I was in good shape, exercising nearly every day and eating healthy (I thought). But, of course, like most people I had my weaknesses—occasional late-night dinners, an extra glass of wine here and there, and rarely getting enough sleep. So in honor of the New Year—and the coveted annual summer oceanside getaway

for my birthday—I was inspired to restore my lifestyle, my regimen, and my approach to living in balance. Just going to the gym wasn’t giving me the results I wanted. So, last winter I began working out with personal fitness trainer and owner of Laguna Fitness, Cora Kasperski. I’d heard about her studio and the Laguna Beach location was ideal, so after meeting with Cora and seeing pictures of all the bodies she had transformed, I was committed, and soon I became Cora’s ‘newest project’.
As a former competitive fitness champion, Cora is a free-weight expert. Although my goal was not necessarily to lose weight, after only four weeks of training three times a week, I saw a noticeable change in my physique. My clothes fit and looked better on, and each week I could lift heavier weights, enough to see more muscle definition but without looking too bulky. With the right direction, I’d begun to achieve the results I wanted; I felt physically stronger and empowered to continue on this new regimen. >

There’s so much to love about Fiji, it’s hard to know where to begin. Beyond the lure of the stunning island landscapes, clear azure waters and luxurious resorts that make up this South Pacific country is the main thing that makes Fiji so unique from any other tropical destination—the people. For the Fijians, who will merrily and proudly tell you that they used to be cannibals (and then sell you a beautifully carved wooden ceremonial fork that was once used for eating a foe’s brains), are simply the nicest people in the whole world. Take the staff at Turtle Island Resort, for example. They sing when you arrive; they cheerily greet you with the happy words “Bula bula” whenever they see you; they offer you cups of kava, their traditional root-based drink, guaranteed to numb your mouth and make you tipsy, and then they sing some more. They dance and sing and laugh with you the whole time you are on that private island, especially during the traditional meke performance held each week. And they sing when you leave as well, and seem genuinely sorry to say goodbye. Throughout your trip, no matter where you roam, the Fijians at every resort, restaurant, bar, spa or shop you visit are so friendly you will feel like you’ve somehow come home, into a large extended family that loves life, loves their beautiful country and loves sharing it with visitors. To reach this paradise, catch a lateevening nonstop flight out of LAX on Air Pacific to Nadi (NAN), Fiji’s main city, remembering that you will lose a day as
you cross the international date line. You’ll arrive early in the morning, which means you can book into one of the beautiful resorts on nearby Denarau Island (the Westin and the Sheraton are top picks, a ten-minute ride from the airport) and relax by the ocean, take a refreshing nap or even play a round of golf; or you can choose to keep right on going, hopping a seaplane or a helicopter straight to a luxurious private island, one of the 330 islands that make up the country. If you are traveling as a couple, there’s no place better than Turtle Island, the legendary resort in the Yasawa Group of islands, located northwest of Viti Levu, the main island where you arrived. Catch their seaplane for a quick half-hour ride, and be ready to shoot photos out the windows, as you fly over numerous other lush islands along the way. Opened in 1980 by American owner (and resident) Richard Evanson, Turtle Island Resort is a fascinating mix of privacy and camaraderie, as only 14 couples (and couples only) are ever on the island at once. The all-inclusive experience (including top-shelf spirits and wines) begins with meeting your Bure Mama, a lovely Fijian woman who tends to your every need, and chronicles your trip via photos and video, too, all of which you receive in a beautiful wooden album when you depart. That might sound like too much communal living for some, but never fear. The Turtle Island experience is totally what you make it. Book a private picnic on a deserted beach, have dinner for two alone under the stars or have an intimate couple’s massage; whatever level of involvement with the other visitors you desire is yours to choose. “We’re known for our romantic setting,” says general manager Alexander Weiss, “but it’s funny. We find that even the couples who come to us thinking they only want privacy end up wanting to be a part of the group after spending a few days with us.” Choose the Vonu Point bure (“bure” is the Fijian name for a villa or bungalow) set high on a hill and you’ll have incredible views overlooking the Blue Lagoon, so-called for the 1980 Brooke Shields film of the same name, which was shot here just before the resort was built. In fact, it was that film production that motivated Evanson to create this magical destination, for it was then that he realized that having island-loving people visiting his private paradise was actually a lot of fun. Evanson still lives

on the island he purchased in 1972, and vacationers are often treated to his company—and his stories of 40 years of island living—at one of the communal meals or cocktail parties. The waters of that Blue Lagoon are crystal clear and warm, and if you are staying up on Vonu Point, the sun sets outside your floor-to-ceiling windows in a riot of gorgeous colors reflected off the azure water. Down on the sand, in the pretty beachfront bures, you can simply step out your front door, take a few steps across the sand and walk right into that welcoming ocean, which teems with colorful tropical fish. Regardless of where you stay on Turtle Island (TurtleFiji.com) something is bound to amaze you. While you may be visiting for the first time, many of the couples you meet there will be on a completely different number. I met three couples who had been there fourteen times; a few others who were on their third, fourth, fifth visits; and a few more who were on their first, and already planning their return. It’s a place that reflects the thing that makes Fiji a paradise destination like no other, for the Fijians you meet there will touch your heart and make you want to stay in their country forever.

Stunning visuals are only part of what Cloud Nine Labs produces—a one-stop-shop of sorts for marketing and design jobs from A-Z, this swiftly growing business has expanded rapidly from their humble beginnings just five years ago, yet retains their hands-on, interactive feel while offering the services of a much larger conglomerate. Ian Lai and Ethan Fialkow make up the creative genius and business mastermind behind this innovative fi rm, and offer bask a peek behind the scenes of these remarkable labs.
bask: TELL US ABOUT YOUR COMPANY… WHEN DID YOU FIRST GET STARTED? Ian: We met in late 2006 and things came together pretty fast. At the time I was a struggling graphic designer who couldn’t get organized enough to work independently; in fact, I had started a company just a year prior that had failed in just six months. My work had always been good but the business management side always seemed rather elusive. Ethan: I was practicing law and upon meeting Ian, I was immediately inspired to dust off my creative side to see outside of my world as an attorney. He opened my eyes to a world of colors and art, creativity and dreams. He was the creative that needed some help with the business aspect; I was the JDMBA who knew business in and out but needed help to think creatively. b: WHAT INSPIRED YOU TO WORK IN THIS INDUSTRY? Ian: What continues to strike me is the direct results our work can produce for our clients. Something as simple as updating their brand, print collateral and website provides almost instantaneous results. Consumers take notice faster, talk about the company/service longer and are swayed to buy because of something as simple as a well thought out brand image. Add one of our marketing campaigns to the picture and you have results that can captivate millions and perhaps even make millions in sales, especially if an e-commerce aspect is part of what we do. Ethan: The work we produce, hands down. It›s so incredible to see these jaw dropping designs come to life from a dream one of our designers had the night before. Because of this artistic prowess we are able to create deliverables out of thin air—the only two components necessary are

an excellent creative visionary who directs the designers and a computer, then wham, something is created that people will pay a premium for. b: WHO HAVE BEEN SOME OF YOUR MOST INTERESTING CLIENTS? Ian: We have a small handful of celebrity clients that always seem to be a kick, bringing us into some very interesting projects. Just last month the team got involved in what turned out to be the fairly large project of designing a full body tattoo for a well-known rocker. Ethan: For me, the collaboration between two clients is always interesting. Our longtime client M2 Benefit Solutions partnered on a project with Lifelock and we were hired to develop their joint website. After its launch it turns out President Obama saw the site because of a service discount going to military families and commented, “nice looking website.” b: WHAT DO YOU FIND MOST CHALLENGING ABOUT THIS FIELD? Ian: From the creative chair the challenge is in understanding the users or audience at whom our clients would like to aim their brand and marketing. In order for what we do to be effective, we really need to crawl deep into the heads of the consumers: know what they’re thinking, how they’re feeling and take into account other technical considerations like how much money they’re making, what kind of alternatives they have, etc. Although our job is a ton of fun and artistic, there is a lot of work we do before getting to that part. Ethan: Operationally, it’s the ongoing process of educating the clients. Some come to us with a preconceived notion of exactly what they want and how they want to do it. In reality their plan may not be the most effective route to take, and trying to gently convince a CEO, sole proprietor or

director of marketing of better alternatives is especially challenging. We really do have our clients’ best interests in mind, and if we have to get a little scathed before they see that, that’s a risk we are willing to take. b: WHAT ROLES DO YOU EACH TAKE ON IN A PROJECT? Ian: I am the creative quarterback. This means I originate the creative direction or play for every single project and pass the idea along to my team, who creates a series of designs under my watchful eye. Ethan: I handle operations. Despite our growth over the years I have made a point to stay at the front of both new client intakes as well as existing client management. Both Ian and I believe that direct ownership involvement in the Creative and Operational aspects is key for service and product execution because it enables us to take a daily temperature of how the organization is doing, namely areas that we need to improve upon, and it removes the feeling of detachment that most people complain about when working with a large agency. b: I HEAR YOU’RE OPENING AN OFFICE IN LOS ANGELES. Ian: Oh yes, I’m really excited for this one. We made it official a couple of months back and have signed a lease in the West Hollywood area. We can’t wait to start tapping into one of the best sources for creative talent in
the entire country, alongside marketing our services to a myriad of companies only found in Southern California. Ethan: That is correct. We’re in the process of building while we make the necessary arrangements at the Chicago office for Ian to relocate and develop this new office. As of right now we hope to have everything fully functional by early summer, perhaps even late spring. b: IAN, HAVE YOU ALWAYS BEEN THE CRAZY ARTIST TYPE? Ian: Crazy is a kind, benign way of putting it—I’ve been called much worse. [laughs] Although I admit I’m not a very good judge of how people would actually classify me, I can read people’s reactions to

I get a lot of nervous laughs or stunned looks; some even turn ghostly white and excuse themselves. I usually don’t even remember what I was talking about, but this leads me to believe that I am not normal. Crazy comes along with being an artist; there’s nothing I can do about it and I’m at peace with that now. Ethan: I’ve gotten used to the crazy and now enjoy it. The way he innately behaves fuels such an intense fire made up of creativity and drive; I’m just glad I’m around to help control the flames if they get out of hand. Planning a business sale is no mean feat, something the members of the Orange County Exit Planning Roundtable know all too well. These highly skilled roundtable members specialize in helping to facilitate the sales of some of OC’s most valuable companies. I was recently given the opportunity to pull up a chair at the latest meeting of the Orange County Exit Planning Roundtable, an innovative new group of OC professionals who have developed a unique, holistic approach to the practice of private business sale. I entered into the conference room for the meeting with my own personal image of a roundtable: the old King Arthur notion of equality symbolized with no head or foot at the table. Interestingly, I was not far off—except, in the place of swords were stacks of documents evidencing years of experience and insight offering the same protection for our modern day kingdom. Entrepreneurial ambition has brought Orange County to the forefront of innovation and advancement, producing some of the most lucrative businesses in the country. Yet a business that may have taken just one resourceful mind to build up needs many to coordinate a tailored, successful exit strategy. The OC Exit Planning Roundtable is a “top of their field” group of professionals with complementary disciplines, specializing in working with owners of privately held, middle market companies intending to exit their companies in the next few years. The uniqueness of this collaboration isn’t in the job titles of the professionals involved, but in the names listed above these titles: principals in each of the companies represented—arguably the best in their fields in Orange County—with the clout and resources needed to facilitate optimum outcomes. Seated at the Roundtable are eight professionals representing each step in the journey from the decision to sell a business all the way through to enjoying the benefits of life post-sale. Taking

into consideration that most business owners will have components of their exit planning team already established, the Roundtable has been designed as a non-exclusive network to serve business owners in collaboration with their existing outside advisors. Mark Van Mourick, resident investment portfolio specialist and founder of the group, charges that surrounding a business owner with exit planning specialists at the beginning of the process is crucial. “Every successful entrepreneur will already have a team of advisors, but hardly any will have the caliber of the team we have put together in this Roundtable. Upgrading to a team of seasoned experts when it matters most can greatly impact the smoothness of the transaction, the maximization of after-tax funds for the business owner and the peace of mind during retirement.” In the last year, 1,308 Orange County businesses were sold—up 8.5% from 2010. The process for selling a business begins long before most consider the option, and requires well-organized strategists to put it into action. The OC Exit Planning Roundtable places focus on helping business owners formulate and optimize their exit planning goals, including succession, maximum sale value, minimum taxation, risk management and retirement investing. Robert (Bob) Wright, CPA, advises, “Some sellers don’t think the work begins until the agreement is being drafted. By then the basic deal terms have been agreed to and change can kill the deal.” Not having yet sold a multi-million dollar, privately held company of my own, I looked to the Roundtable to explain how one might begin to navigate this complex process. Their first
recommendation was to ensure the viability of the business before the sale. Darrell Passwater, a professor of Business at Biola University (logging more than 20 years as a management consultant), assists business owners in developing an effective business strategy that best positions them to achieve an optimum sales price with the smoothest sales transaction possible. “Once a business owner concludes that they want to sell their business, it seems wise to me to create the healthiest balance sheet and work culture possible,” says Passwater. “Both are essential to attracting a potential buyer.” Because each Roundtable professional works under individual contracts and bills without referral fees, interest in the success of the business owner remains paramount. Members of the team then have the opportunity to recommend other members of the group they deem necessary to meet the needs of the client in the next stages of the exit planning process. These Roundtable alliances are trustworthy and sound, removing the guesswork for the business owner, who ultimately makes the decision to “upgrade” his/her advisory team. During the first stage of assessing and improving the health of a company prior to putting it up for sale, the business coach will enlist the services of two other professionals seated at the roundtable: the lawyer and the CPA. Filling two of these seats are the partners from the regional law office of Brown & Streza, Matt Brown and Dick Streza. This business planning attorney team specializes in designing a legal structure that will optimize tax savings at the end of the transaction. “When it comes to exit planning, it should be a process, not an event, so there is rarely any time that is too early,” believes Brown. strive “to do things right the first time by planning proactively,” and Brown heeds warning against waiting too long to assemble an advisory team: “We have saved clients literally millions of dollars by shielding them from having to repay a portion of the purchase price when the buyer decides things did not work out as they had hoped. We accomplish this by using attorneys specifically focused on M&A transactions when selling to a third party.” Working closely with lawyers to prepare businesses for sale is Robert Wright, CPA and Managing Director at Wright Ford Young & Co., who explains that there are several goals for the client at this point. “Probably the biggest are: 1) Helping them understand the after tax results of the deal they are entering into; 2) Helping them understand the warranties, representations and obligations they are committing to; 3) And helping the client and the buyer to be sure the definitions in the agreement regarding formulas for determining after closing calculations are understood by all.” The beauty of these Roundtable collaborations comes in the accountability of the referrals, which are personally taken up and not passed off to associates, along with the freedom to refer each client to the next Roundtable member as each specialist sees fit for the clients’ needs. Paul Donnelly, Managing Director at B. Riley & Co., sat at the next seat of the table. He asserted that the strength of the Roundtable is not only in their coordination and cooperation, but also in their independence. “If I feel like the client needs more insurance coverage, I’m going to say that. We have to have that independence to speak up for the clients’ needs outside of our field.” Donnelly specializes in mergers and acquisitions, recapitalizing and most importantly finding buyers. Representing one of the larger companies, and working closely with investment bankers in financing a sale on the buyer side is Geoffrey
Coar, Senior Vice President at US Bank on the commercial side. Coar is responsible for relationship management and business development in Orange County, with a focus on middle market companies with annual revenues between $20 and $500 million. He explains his contribution to the exit planning team as “providing a more cost effective solution to help manage future interest expense and better structure to allow for: growth, acquisition or adjustment of the capital structure of the balance sheet.” Two more heavy hitters sit at the Roundtable: insurance brokers from Signature Insurance Group (AKA Brakke-Schafnitz), represented by principal Matthew Schafnitz and Vice President of Financial Services Eric Gerwig. Their focus is on helping and protecting businesses with commercial insurance including: workers comp, general and property liability, surety bonds, health insurance, retirement planning, and life insurance. Gerwig explains that Signature Insurance Group embodies the same model of relationally focused—not transactional focused—collaboration. “My favorite part of the planning process is helping business owners transition from running the day-to-day operations of their business to enjoying the rest of their lives. Our process allows them to do this without worry or regret that they got a fair price. Their business, retirement and estate planning is left in very capable hands.” The final stage of business exit planning is initiated just before settling with a buyer. A portfolio advisor with great insight and experience is crucial at this point in the sale process. Filling this role and seat is Mark Van Mourick, CEO of investment management firm Optivest, Inc. and founder of the Orange County Exit Planning Roundtable. Van Mourick personally manages the investments of over 60 wealthy families in Orange County, and is the author of the after-success investment book Cash Out, Cash In. Van Mourick poses a few critical questions to clients in the months leading up to a sale in order to help them achieve their
desired outcome: “1. What are realistic income and growth expectations given [the client’s] individual risk, liquidity, control requirements and time horizon? 2. What are the best investment allocations for the client? 3. And importantly, given the client’s likely sale proceeds, can they retire in the style they have in mind? This type of planning should be done at least six months prior to the sale (24 months is optimum) and refined just before going under contract.” As these men discussed their contributions, I began to see a resemblance between the archaic knights I had originally envisioned and the modernday Roundtable. Attributes of accountability and honor were evident in the Roundtable’s penned code of ethics, placing emphasis on the business owner’s interest first, upholding transparency and full disclosure. Staples in successful exit planning, the members of the Orange County Exit Planning Roundtable assert that theirs and their clients’ successes will always be built upon the collaboration among a strong team of specialists. Robert Wright adds, “Most sellers have never sold a business before. They do not want to ‘experiment’ with possibly their largest asset. Moving from the world of a successful, established photographer to the rainforests of Peru, Nancy Santullo left everything behind and discovered the ‘something more’ to life that so many of us dream of finding. Her drastically life-altering decision led her to found the charity House of the Children, committed to bringing clean water to severely underprivileged Peruvians.

By age 12, Nancy always had a camera in hand, which eventually led to winning a photo contest in college. But by age 33, she found herself yearning for more, and searching for ways in which she could help those in need. As many Westerners do, she began by exploring Eastern schools of thought such as Buddhism, Yoga and Eastern medicine. A Taoist master advised her to go south and work with energies in that part of the world. Following this advice led Nancy to take a leap of faith that changed her outlook on life forever. One fateful day in 1999, she packed her bags, sold all of her belongings, and took a three-month sabbatical trip to Peru. Nancy was interested in heading to the rainforest, initially in search of a rainforest shaman and to learn about medicinal plant medicine that is known to connect people with the origin of life. When she arrived in the rainforest, which was the size of Connecticut, she stayed for over a week. While she searched for the shaman, she found the children that would later form the basis for her charitable foundation, House of the Children (HOTC). As Nancy continued to return to this rainforest, she began to help the community little by little. Although
she had never camped before, she found a familiarity in that forest. She found the magnitude and beauty all encompassing, and explains, “I understood its impact on the rest of the world.” HOTC’s initial focus was in the community of Huacaria, located in the southeastern Peruvian Amazon between lowland tropical rainforest and the cloud forests of the Andean foothills. On her first visit, Nancy asked a teacher if she had a wish list of things she could purchase from the city and bring back. The teacher asked for clean water. Water! Something we often overlook in the States. In the rainforest they had an open septic pit with human waste in areas that kids played in. Daily, children and women would go to the river and fetch water. Sometimes, they would boil the water to drink, but other times they wouldn’t, which naturally led to illnesses. These circumstances triggered Nancy’s idea of how to turn their wish for clean water into reality. Fulfilling one’s destiny can be a journey of many windy, unexpected roads. When Nancy began her quest, many people did not understand the idea of packing up and starting fresh. Some friends stopped talking to her; family couldn’t comprehend how she could ‘leave it all behind.’ Yet, as Nancy explains, “I sold every item of designer furniture. I have an eye for beauty and well-made things. But I knew that as I let those things go, a lot went to friends, and the one thing about beautiful things is that there [are] always more when I am ready to come back to that world. As difficult as it was to sell [and give away] all that I owned materially, the next level was giving up who and what I thought I was. I was immersed in that rainforest as it was calling me and I answered that call. continued

From making a living documenting exterior beauty, Nancy Santullo embarked on a journey to awaken the inner beauty of herself and those around her as she sought the next level of her life. As an established fashion photographer, she had the lifestyle many of us dream about. Over a decade ago, she was photographing runway shows in New York and celebrities in Los Angeles, making a very comfortable living. But beyond the pictureperfect external appearance of her life, Nancy was searching for a deeper purpose.

The energy was calling me; I was resonating with what it had to teach me, what the people had to teach me.” After her three-month visit, Nancy came home to Orange County and announced that she was starting HOTC, and within 45 days the foundation had become a non-profit. From 1999 to 2003, she traveled back and forth to Peru, all the while writing grant letters, and by 2003, the project she had worked so diligently on finally came to fruition. As I asked Nancy about the children, her eyes lit up and she flashed the biggest smile of our four-hour coffee date. She explained, “It’s life in its simplest. You hear laughter throughout the forest from children without shoes on, [and there’s] an innocence when they look at you. When a native looks at you, it’s simple, there’s a truth to them that hasn’t been cumbered with things and physical objects and stresses of a developed society that’s based in physical and material objects. [That] innocence and beauty is so captivating.” Daily, Nancy awakes in her tent at 5:30 am, typically from a child bringing her a papaya or pineapple in exchange for a pack of crackers, then she begins the day by making breakfast for the crew. Nancy’s Italian heritage leads her to use food to bring people together, show gratitude and motivate people to continue working hard each day. To date, 16 beautiful stone sinks have been built through low-tech methods, slow sandfilters, and a living machine biological process that cleans 99.99% of bacteria from water for 180 people, 75 of whom are children. These moments remind Nancy that it was worth all the work and sacrifices, and prove what can be accomplished when people work together for the good of the whole. There were many 14-hour days in the humidity and rain, but her

friends and surrounding community continued to encourage her to rise above the obstacles. Immersing herself in the rainforest community was incredibly difficult at first. There was a history of suppression from the Peruvian government in this tribe. They were skeptical of Nancy’s intentions, as many non-profits and people had tried to change things previously. That wasn’t her intention. She wanted to remind them that if they wanted change, they themselves had to be a part of the solution. However, their doubts receded and she gained their trust once they experienced clean water because of the promises she fulfilled. The people who helped build the sinks came from all walks of life, with no experience. Nancy actively involved the children and women in the project with biology classes and art and dance ceremonies. “Experts in the region told me I’d fail because no one had done it before. But something greater within myself guided me forward and illuminated the path.” Each time she fell, she dusted herself off and got back up. Eventually, they went on to build bathrooms that were eco-friendly, which helped teach health education to children and mothers— while the physical structure is the first step, the solution to the community’s issues lies in longterm sustainability. As the project came along, Nancy also taught villagers how to monitor water quality and how to repair the system if it broke down. Nancy’s team includes two medical anthropologists, engineers from the US, local teachers and health officials. They buy 95% of supplies from Peru, as they try to keep the production process as local as possible. Nancy is now in construction in the rainforest 8 to 11 months out of the year. In the weeks she’s not, she’s
back in Orange County fundraising for the ever-growing demand for clean water. After the completion of the first project, other communities heard about it and wanted to learn, so the first group was sent to the next community and, as you can imagine, a chain reaction ensued. Ultimately, this project is about being willing to take a step, to move out of being comfortable and secure, and to move into change and growth. How to help? It costs $1200 to build a sink, which is estimated to last 20 to 50 years. When you donate directly, 100% goes to charity; donating online sends 97% straight to HOTC. HOTC has empowered these communities through awakening their own talents and abilities to advance themselves. Nancy explains that through this journey, “I had to walk through my own fears; I was out there on my own, [in] a culture so different. But I learned that we are all one. When we really put down our borders, our religions, there’s a union that happens quite naturally [and] anything becomes possible. That’s what inspires me the most.” HouseoftheChildren.org

RYAN ADAMS An Orange County local opens Three Seventy Common, a place to gather around the table to share a meal in a fun, family-style setting. The menu is geared toward sharing and is comprised of small, medium and large dishes, sides and charcuterie. If you like Caesar, the TJ salad will not disappoint, with cold, crispy Romaine, a creamy dressing and crunchy croutons. The broccolini is lightly sautéed and then blanketed with a fried egg, shaved Asiago, sliced prosciutto and finally, dusted with toasted breadcrumbs. On a cold evening, the Poutine is a comforting way to warm up. After spending a week in Whistler and sampling Poutine every chance I could, I can tell you that Ryan’s is one of the best. French fries are smothered in a rich veal gravy, and then topped with

caramelized leeks, peas, cheddar and bacon, and drizzled with a horseradish crèma. Another favorite is the foie gras, which is seared and then served with huckleberry pancakes, bacon, and a little maple syrup. Finish your meal with the indulgent “Presley”—cinnamon toast, sweet bananas, and peanut butter ice cream. Sundays are a great night to visit, when chef Ryan exchanges his regular menu for an affordable multicourse dinner. The menu changes weekly and consists of a protein, a few sides and dessert. Ryan calls these evenings “Sunday Socials;” they are reminiscent of his family dinners, gathered around a table, eating great food and sharing stories from the week.

Please share a little about your background, and why you decided to open Three Seventy Common. I was the chef of a longtime Laguna Beach favorite, Sorrento Grille, and when the opportunity arose, I was able to purchase the venue in 2011. My dream was always to open my own restaurant—a comfortable, neighborhood eatery where people could gather to eat, drink and have a good time. I revamped the space to offer a fresh urban look and created a menu that celebrates our local farmlands and purveyors, reflecting both my experiences growing up in Laguna Niguel and the diversity of our community.
What got you cooking? My grandmother and mother, primarily. As a mischievous child, frequently getting into trouble, they taught me to cook, which focused my energy in a positive manner. Also, I remember one of my favorite teachers telling me, “Do what you love to do as a hobby and you will never grow bored with it.”

What are your favorite spring dishes? Fried chicken, you can’t beat spring chicken for frying.
What are your favorite ingredients to cook with during spring? Mushrooms, spring onions and garlic, spring chicken, and lamb.
What dishes do you recommend for easy entertaining? One-pot meals served family style. A great dish for entertaining is a New England clam boil—clams, sausage and corn, covered in seaweed and cooked in salted water. It’s a great way to surprise your guests—so much fun and really interactive.
What do you always have in your fridge? Sriracha. I love this sauce and put it on almost everything.

What are your favorite food memories? Every fall during my childhood, there was the delicious smell of fresh baked goods, such as bread and plum crisp, at my grandparents’ house. The neighbors had an overabundance of fruit on their trees that they would share with my grandmother. She would make the most amazing persimmon molasses cake that still inspires me today.

The area around PCH and Marguerite is bustling every Saturday morning when locals visit the farmer’s market to shop for seasonal produce and flowers from the purveyors they have come to know. However, while the market has a large offering, it is missing one important food group: cheese. But there’s no need to worry. Vin Goat is now open right across the street, and can fill in any gaps from the market. At any given time, it carries 150-200 varieties of artisan and farmstead cheese that are ready for consumption, cut to order at their peak. Come in and taste the cheeses, which are made by hand and often from the sheep, cow or goat milk on that particular farm. Since these are small batch cheeses, the skills that have been passed down through generations can be tasted in the product; their flavor is more distinct than that found in a mass produced cheese.
