As spring marks new beginnings, I can’t help but think of these new beginnings in comparison to my actual beginnings in the publishing industry. We shot our spring fashion spread at South Coast Plaza—the shopping destination that has defined Orange County lifestyle for decades, and continues to do so. In the last three decades that I have been going to South Coast Plaza, so much about it has changed. When I first stepped foot in South Coast Plaza more than thirty years ago, I would take my daughter shopping and we would stop at our favorite lunch spot, Forty Carrots. Yes, Forty Carrots for those who recall that quaint little spot. I fell into the publishing world right around that time, and along with many milestones and memories, the rest is history. Now, it is recognized as an international shopping destination, attracting fashion enthusiasts from all over the world. South Coast Plaza evokes those memories in me so it was truly an honor to be able to work with the Plaza for our fashion spread along with a few of our partners, including Saks Fifth Avenue, Piaget, Max Mara, and MAC Cosmetics. This issue represents spring renewal focusing on health, happiness, and home. I found three amazing, hand-carved and whimsical warriors at an art shop in San Francisco and a historical guardian I found in an antique shop in Carmel. The five of them are all sacred friends and have protected me and my family without fail for nearly two decades.” Spring Cleansing: “There is a great juice bar called Nekter that was started by a local couple. They offer a one-day cleanse that uses six juice combinations over the course of a day, in either a basic or advanced package. I actually made it through the whole day without hunger on just the juices with a handful of raw almonds at dinner. I felt great not only that day, but the following day and now I try to cleanse every month or so.”

music theatre RICHARD JACKSON Now-May 5 The Orange County Museum of Art presents a new Richard Jackson exhibition, Ain’t Painting a Pain, a retrospective of a radical Los Angeles artist. In a series of room-size installations, the exhibition presents a number of major works never before seen in this country. His wild “action” paintings, mutated with sculptures, are presented in their full glory. A 350-page catalogue will accompany the exhibition, which, after its OC run, will travel to Munich and Belgium.

Virtuoso Bobby McFerrin brings his amazing vocal talents to the Walt Disney Concert Hall for an evening of jazz, classical, and pop music with his trademark octave-floating bass to falsetto sound. He has performed and recorded with musicians such as Herbie Hancock, Chick Corea, Yo-Yo Ma, and a host of other legends. His 1984 album The Voice made jazz history, recording for the first time a solo vocal album without any accompaniment, and his 1988 Simple Pleasures album included his infectious hit Don’t Worry, Be Happy.

BILLY ELLIOT Broadway hit Billy Elliot pirouettes on to the Segerstrom Hall stage, with its 10 Tony Awards, including Best Musical, in tow. Based on the 2000 film, the play is a story of a young boy in a sad working-class mining town in Northern England. In the midst of a depression, Billy discovers an odd love and talent—ballet. Taunted by those around him, he escapes to a haven of dance, the Royal Ballet School, a first for such a working-class youth. While dark at times, the show blossoms with hope, laughter, and triumph, all to music composed by Sir Elton John.

THE FANTASTICKS
South Coast Repertory brings the Fantasticks to the Segerstrom Stage as its final performance of the year. The remarkable production, with a book and lyrics by Tom Jones and music by Harvey Schmidt, ran for nearly 42 years after its opening in May of 1960. The duo received an Obie Award and the Special Tony Award for their efforts in 1992. This classic is reimagined by famed director Amanda Dehnert, who adds a series of visual illusions and fantasy to this timeless production. Come see one of the most popular musicals of all time, in a presentation the Washington Post says is “fresh and alive again.”

FLEETWOOD MAC May 28 Multi Grammy-winning and Rock & Roll Hall of Fame inductees, BritishAmerican rock legends Fleetwood Mac bring their 34-city US tour to the Honda Center after a threeyear hiatus. The tour marks the 35th anniversary of their 1977 Rumours album, one of the most successful records in history with over 40 million copies sold worldwide. The band’s current lineup includes founding members Mick Fleetwood and John McVie, along with the ever-spinning Steve Nicks and Lindsey Buckingham, who later joined the band in 1975.

Andrea Bocelli, the brilliant and blind tenor from Pisa, Italy, somehow finds his way to the Hollywood Bowl to perform with the Los Angeles Festival Orchestra. This talented crossover classical and pop artist has sold over 80 million albums worldwide, received a 1999 nomination for Best New Artist at the Grammy Awards, won the Golden Globe and an Academy Award nomination for his The Prayer duet with Celine Dion, as well as the dubious distinction of being named one of People Magazine’s 50 Most Beautiful People in 1998. CATCH ME IF YOU CAN June 25-30 Catch Me If You Can, the musical based on the 2002 Steven Spielberg film about Frank Abagnale, the teenager who successfully pulled off cons worth millions of dollars, lands at Segerstrom Hall during its national tour. After a run in Seattle, it took off on Broadway in 2011 and garnered four Tony Award nominations, including Best Musical. The stage production features a very sixties-based score by the Hairspray team of Marc Shaiman and Scott Wittman, and is a comic caper to be enjoyed by all.

bask: How did you develop your concept? Kuen Rameson: I wanted something that I couldn’t find out there. I was looking for sensorial aspects like design, fragrance, and efficacy. Esthetically, I wanted beautiful, clean, modern packaging, something that would look fabulous in my shower, and I had to have pumps on all the containers—not that mishmash of different colored bottles upside down! For the fragrance, I worked with one of the most highly-acclaimed global fragrance houses to create our signature Coco de Soleil fragrance—it’s rich in coconut, almond and rum… a sensual, intoxicating fragrance reminiscent of the French Riviera. As for efficacy, I made it pure— took out everything bad so it’s sulfate-free, sodium chloride-free, and paraben-free—and used only the most premium ingredients. I didn’t give my chemists a budget… I just said make me the best products that exist so that once people try them, they will want them forever. b: What is the biggest obstacle you’ve had to overcome in attempting a new business? KR: Definitely learning everything from scratch…the beauty industry was such a dichotomy from the investment world. Initially, I knew nothing about regulatory, manufacturing, distribution/retail…had never even heard of a PO or EDI…so I would talk very corporate and then rush to look everything up and learn everything I could as I went along. Also, I didn’t know any of the key players in the beauty [business]. Fortunately, it’s a

small industry, and there have been some very dear friends that introduced me to everyone I needed to know. The beauty world has been so kind to me; everyone in it wants to see young, fresh, burgeoning brands succeed. b: You must have some beauty secrets—what’s your everyday routine? KR: I believe true beauty comes from the inside out. If you’re in a really happy place in your life, and you take the best care of yourself, it will show! So, like the GLOSS Moderne Collection I created—for health and nutrition—I avoid all the bad stuff, like preservatives and artificial anything, and enjoy the highest quality nourishment…pure, organic, wild, grass-fed…along with special treats and indulgences from time to time! And as far as beauty secrets on the outside, I take impeccable care of my skin, teeth, and hair. If you put all of this together, it brings so much happiness that you just have to smile…and that’s the best beauty secret of all. b: What are your must-have products? KR: Oooh, I have so many! Urban Fiji After our 6am arrival, and while waiting for the sun to rise, we were greeted by our driver who would take us for a “recovery” day to the Sofitel Resort on Denarau Island. Within the first hour, however, we met a series of Fijians who were not exactly what we had expected. We were pestered by our driver, whom whined bitterly over how much money he had lost due to the recent cyclone and now needed money from us. The driver was one step behind since the folks in the coffee shop at the hotel had already taken our money by treating US as Fijian money (it trades for only about 50% of the value of the US dollar). The trouble continued with our travel agents who had no idea of when our flight would leave the following day. To top that, the pace of service made the zombie apocalypse on the Walking Dead look like a world-class track meet. Unfortunately, we spent an uneventful day in Danarau, with diminishing hopes of Fiji, including four hours on the phone late that night trying to find someone, anyone, who could tell us when, if ever, our flight would take us to our resort on the other island. The following day, after our flight finally left (three hours late), we were flown in what appeared to be a prototype for the Wright Brothers Kitty Hawk aircraft to an airport an hour from the airport we needed to go to and our luggage was unceremoniously

were nearly ready to take the next flight out—to anywhere—by the time we got to our resort after a 2-hour ride through the wilds of Fiji.
Rural Fiji All of our concerns magically disappeared upon our arrival at Namale and the real spirit of the Fijian people was first revealed to us. Greeting us were nearly a dozen staff members singing, clapping, and warmly greeting us in a sincere and remarkably friendly manner—all to the chant of “bula,” the traditional Fijian greeting, like the Hawaiian aloha or the Italian prego. Pronounced “boolah,” it literally means “life” but is routinely used as a greeting. A wave of warmth and hospitality, aided by being ushered to the restaurant and presented with a cold beverage, immediately transformed our view of Fiji. Within

Jean-Michel Cousteau Fiji Islands Resort is the most famous family resort in Fiji. With its award winning “Bula” kids club, nannies, and ecological focus, the resort has been a favorite for years. Namale is our resort of choice. Motivational speaker Anthony Robbins owns this luxurious resort, and it is often ranked the top resort in Fiji, although the property needs some remodeling. It features two restaurants and bars, multiple private decks, a beach, horseback riding, pools, a small 9-hole golf course, an indoor basketball court, a large spa, a bowling alley, and a worldclass diving program. Likuliku Lagoon Resort is a beautiful resort, and the first in Fiji with over-water bungalows. Turtle Island is one of Fiji’s top resorts, featuring the beautiful “Blue Lagoon” and a series of private bungalows. The Wakaya Club is another of the top resorts, and it features large bungalows, a mansion, and a host of activities.

We snorkeled, had amazing dives on a one of a kind dive boat (complete with a subwoofer and amazing sound system designed by the owner himself), paddle boarded in the harbor, golfed, swam, bowled, played pool and ping pong, hiked,

Warm, calm and stunning—diving (or snorkeling) in Fiji is among the best in the world. Rising up from the Tonga Trench are waters filled with life that help create the largest collection of soft coral anywhere in the world. On our dives, we saw amazing soft coral, lobsters, underwater caterpillars (as they are called by the locals), all species of fish, and hundreds of sharks, including reef, bull, photo: Chris McLennan
and hammerheads. The water is stunningly clear blue, and so warm that wetsuits are generally not required.

Wherever you stay, no trip will be complete without the Kava Ceremony, an event for ceremonial purposes and nearly any social occasion. In fact, many Fijian villagers partake in kava for hours on end nearly every night. Simply stated, kava is a mild narcotic drink made from the pepper plant (aka piper methysticum). The ceremony consists of the kava being placed in a large, carved wooden bowl, where those participating in the ceremony sit on the floor around the bowl, clap to accept the kava, and drink the muddy looking water, which results in a slight numbing of the mouth. Tip: a nearby quick sip of Johnny Walker or Patron makes the ceremony far more enjoyable.
Where to Stay Fiji has a number of beautiful resorts in addition to Namale, and the islands are a favorite destination for romantic vacations. Most of the finer resorts are quite small, having only 20 or so “bures” or bungalows on property, some of which sit on stilts in the water. Fijians are gifted with the talent of making guests welcome, and at the intimate resorts most of the staff will greet you by name and know your favorite drink within a day or two. And, while small, luxury abounds.

THE INN Established in 1923 for Edward D. Libbey, whose dream started with a private country club and golf course, died before the hotel was built, although his design plans were still carried out and the Inn was built nearly a decade later. State of the Art: Multifunctional Electronics Unveiled This year marks a tipping point where mobile computing and mobile devices have left the desktop in the dust. In early January, the Consumer Electronics Show (CES) debuted the latest devices that are scheduled to land on retail shelves during the back-to-school season. Once reserved for high-end PCs, the new devices have excellent screens and impressive multi-core processor power; the time has arrived when one can essentially watch almost anything, anytime, and anywhere. Critics have assailed the consumer electronics industry for slowing innovation. However, if you look a bit deeper into performance, software, and services, you will find that electronics are evolving as fast as ever and finally getting easier to use. Yes, really this time.
TV Sets Just when you thought you had the best giant HD flat screen money can buy, the consumer electronics industry creates the Ultra HD (UHD). UHD is also known as 4K TV, or 4x the resolution of HD TV. Overall, perceived picture quality is a function of many factors, including color palette, contrast ration, brightness, resolution, and source material. Over the next few years, the 4K UHD TV will upscale the old HD 1080p content making it look even better. Screens sizes are also inching upward. Most manufacturers now have offerings up to a whopping 80 inches. LED has won out over Plasma and now OLED (Organic Light Emitting Diode) is chipping away at LED for sheer brilliance and absolute dazzle, but screen sizes will remain relatively small, and very expensive, for another year or two. On the other hand, there is more to picture quality than just the number of pixels. Color palette, contrast, dynamic range and motion control all contribute. So, when you shop for an HD, or UHD TV, be sure to look at a variety of content, including Blu-ray, under different conditions.

Whatever you choose, you won’t be disappointed with any of the following choices for 2013: Sony’s Bravia X900 UHD TVs include multiple versions. All of the high-end models include WiFi and SideView, and a second screen feature for tablets and smartphones to control and supplement what you see on the big screen. Many Sony TVs, like LG, integrate Google TV, which includes voice commands via a special remote with an embedded mic. Get used to the Google TV search feature and you will never go back to a programming guide as it can locate almost anything. Samsung’s UN85S9 is state of the art UHD TV. At 85 inches, Super Bowl parties will take on new meaning and at 4K you will feel like you’re sitting in a private screening room. Samsung’s 2013 TVs feature vastly improved voice commands, and a recommendation system much like how Netflix provides suggestions and tracks favorites. Consider Samsung’s design, interface, and comprehensive selection, and it’s easy to see why it has become the top consumer electronics brand in the world. All of the latest UDHD sets have excellent 3D capability, but this year it doesn’t appear to be a focal point. We still believe that for big sporting events and certain movies, 3D will still be a desirable accessory but not the main mode of viewing.

Lenovo has products that flip (The Yoga), twist (The ThinkPad) and split, where the keyboard detaches completely (The ThinkPad Helix). Sony’s Vaio Duo and Toshiba’s Satellite U925t slip and slide their keyboards into place whereas Samsung’s ATIV Smart PC’s keyboard splits off. Android is unstoppable and comes with an almost unlimited range of applications. Android powered tablets include Sony’s Xperia, and, likely the best, Google’s own Nexus 7. Samsung started the phablet category blurring the lines between ultrabook convertibes, tablets, and phones with its Galaxy Note, sporting the once considered quaint stylus, and an oversized HD 5.5” screen. Over 100 million Galaxy units shipped—making it a serious iPhone rival. Not only is holding the Galaxy to your head for a phone call awkward, but also looks odd and is probably best used with a headset. Although you may not think you need a giant phone/small tablet, once you have gotten used to the excellent screen, quad-core power and versatility you may not go back. Direct to US, consumer newcomer Huawei’s Ascend D2 and Sony’s Xperia P are Androidbased phones that can easily double pose as tablets. The D2 is a serious entertainment machine sporting a 5-inch HD retina display, Dolby surround stereo, and 16 megapixel camera.
Alternative Transportation Z Board If the skateboard park has lost its lure, maybe consider skateboarding as transportation. The electric powered, weight sensing ZBoard was launched on Kickstarter. It accelerates as you lean forward and decelerates as you lean back (think Segway), with a top speed of 17 MPH and a range of 10 miles, it will get you around town and only set you back $949. Electric Bikes During our recent stay in Tel Aviv we noticed a plethora of electric bikes ceaselessly weaving in and out of traffic, bike lanes, and sidewalks. Proponents argue that electric bikes will also catch on here as a healthy, efficient commuter alternative. Bike lane-legal ebikes have top speeds of up to 20 MPH and 700 watts, enough to get you up hills and to local destinations for work or play. SoCal-based Currie Tech and Swiss made Stromer make top of the line choices that are both pedal assisted and controlled via a throttle with regenerative breaking. The new eFlow from Currie Tech features a removable high-capacity Samsung lithium-ion battery pack, seamlessly integrated into the bike’s seatpost for a sleek, balanced design. The eFlow has a healthy 35-mile range, taking up to six hours for a full recharge, but you can easily carry a spare battery, just in case.

Home On the Ranch A Pleasant Path
For more than a century, Rancho Mission Viejo has maintained thousands of acres just outside our backdoor. Known as “the greatest of all California ranchos,� the 23,000-acre historic landscape has been home to the last working ranch in Orange County, miles of trails, citrus and avocado groves, as well as several established communities in the southern valley. Committed to ranching, agriculture, and preservation, this year, the family-owned and-operated company introduces Sendero, the first mixed-use residential village in the new planned ranch community. Here, we invited President and CEO, Tony Moiso, and Senior Vice President of Community Development, Paul Johnson, of Rancho Mission Viejo to give folks a look at what the future holds for this scenic sanctuary.

bask: What inspired the Sendero concept? And how important is the notion of a connected atmosphere? Paul Johnson: There are two terms that are important to what we accomplished in Ladera and what we’re bringing [to Sendero]. The first term is intergenerational living. There are builders thinking about intergenerational housing, [and] building new types of product, where three levels of generations can be [together]—grandparents, parents, and kids. Intergeneration is, in my mind, at least two levels: it’s intergenerational within a family context and also to people who don’t know each other. What we’re doing in Sendero is bringing out what we will call the 55+, the boomers, into a situation where they can intermix and live with all other age groups. We are bringing small, age-qualified neighborhoods [into] a master planned community that’s all ages to live in one environment. We also do well at building social capital in a community. It’s a big term, but it’s really simple. When you can provide a way in which people can connect and build relationships, suddenly their engagement, their trust, [and] their reciprocity of how they treat each other changes; it raises the level of what a community can be about. [This concept] can occur in any community, but we accelerate [the process] by bringing in a community service organization that’s permanently funded, that allows clubs to form, and people who have common interests to come together. photo: Eddie Perlas
b: Creating a community such as Rancho Mission Viejo and a new village such as Sendero is a team effort. How did you put together a successful team? Tony Moiso: Our internal Ranch team forms the foundation of our community development efforts. Each team member brings an incredible amount of talent, knowledge, and expertise to everything we do. We also carefully select the consultant teams, which consist of the very best in the real estate development industry. b: How does The Ranch differ from other similar spaces? TM: In addition to our great location in South Orange County, Rancho Mission Viejo is a working ranch—the last working ranch in Orange County. Generations of my family have been blessed to own and manage the Ranch since 1882. In addition, Rancho Mission Viejo is home to The Reserve at Rancho Mission Viejo, which, over time, will become one of the largest habitat reserves in California. Plus, Rancho Mission Viejo will offer up to 6,000 55+ homes and 8,000 allage homes set within inter-generational villages. So, there are many ways the Ranch is unique and distinct from other places and planned communities. Yet, perhaps the most important difference is what we call our culture of care, or the goal of establishing communities, which foster real Ranch-style hospitality. Ranch communities include many social gathering places that offer all sorts of ways for residents to come together and interact through programs and events at clubhouses, connections made on-line and in-person, traditional celebrations, and activities for all ages and interests. Starting with the village of Sendero, residents of Rancho Mission Viejo will be invited to participate in all sorts of events—and be as connected as they desire.

b: Has today’s lifestyle had a defining impact on the overall concept? Is this style a new way of thinking? PJ: Long ago we started to look at how the new-aging boomer wants to retire. How do they want to live? What’s the environment they want to be in? Until today, or [in recent] years, the real formula was these large communities in the middle of nowhere, where you picked up all your roots, moved out to this place, and that was it. You were in this massive community and that was where you were going to retire. So, we started to research how people [really] want to retire. At that point, we decided there’s a better solution. We think the solution is taking these small age-qualified neighborhoods, and intermingling [them] right inside the market rate. So, now you’re living with people of like interest and lifestyle. We are simply breaking down the fabric and [creating] a much more livable community. b: Many neighborhoods feel so impersonal—what are they doing wrong? PJ: They don’t have a way to accelerate people getting to know each other. We [provide] this organization that is permanently funded and staffed, who canvas the neighborhood to [connect] people with similar interests; that is what builds the social capital. We are one of the few community developers that commits to that process. We focus on making sure the neighborhoods are small and provide a way for people to physically connect. b: Seventy-five percent of the ranchlands are preserved. How have you been able to maintain this for so many years? TM: When other landowning families made the decision to sell their lands, we held onto the Ranch. It was a very difficult thing to do because the pressure, at times, was so strong to sell. However, my family and I are guided by the words of my grandmother to “take care of the land and the land will take care of you.” With that as background, more than two decades ago, my family and I voluntarily enrolled the remaining 23,000 acres of Rancho Mission Viejo into a scientific study program designed to identify those lands which should be conserved as a habitat reserve and those lands suitable for development, and in 2004, our Ranch plan was approved by the Orange County Board of Supervisors. The plan for Rancho Mission Viejo sets aside 75 percent…about 17,000 acres…of the

TM: Certainly, The Reserve contributes to a better future, as does the establishment of places for people to live, work, and play. Yet, beyond that, we believe that the blessings of landownership come with the responsibility to be a good neighbor. As such, we do what we can to support local charities through our annual Rancho Mission Viejo Rodeo and other charitable activities. We also make sure that schools, parks, libraries, and houses of worship are included in each of our communities, as well as pay our fair share and more toward new roads and all sorts of additional infrastructure improvements. And, beginning in Ladera Ranch, we embraced such green practices as reducing impacts to local landfills by recycling homebuilder construction waste, adopting innovative water storage and water-wise landscaping practices, using photovoltaics in community facilities, as well as adopting a long list of in-home conservation practices. These continue at Sendero will be implemented throughout Rancho Mission Viejo. In addition, by creating employment areas within the communities we create, we help reduce vehicle-miles traveled and reduce emissions in an important way. There is also a long list of conservation practices implemented by our ranching and farming operations. So, we believe that everything we do contributes to a better future for residents today, as well as for those to come.

Nearly 500 guests attended the 5th annual CHOC Cherishes Children Gala. Held at the Island Hotel in Newport Beach, the gala’s theme, “A Future Built on Hope,” raised money for the “Change CHOC, Change the World” campaign to build a state-of-the-art patient care tower. The volunteers and guests also contributed to raising $900,000 to provide continued support for the health of children in Orange County. During the awards presentation, The Sisters of St. Joseph and St. Joseph Hospital of Orange received a Lifetime Achievement Award from Kimberly Cripe, CHOC President and CEO. At the end of the evening, Cripe announced a $27 million gift from Newport Beach resident Bill Holmes. In honor of his generous donation, the new building will be named the Bill Holmes Tower and is scheduled to open this spring.

Over 300 of Newport’s finest donned their swanky cocktail attire for a night of exquisite flavor. Held at the five-star Island Hotel in Newport Beach, the sixth annual Pacific Coast Wine Festival proved to be an appetizing evening of fine wines and delectable pairings offered by 50 wineries. In a ballroom adorned in shades of wine colors with corks peeking out of centerpieces, guests enjoyed the three-course meal and entertainment, provided by three talented members of the Pacific Symphony Youth Orchestra. The evening culminated with an exhilarating live auction led by Jim Nye, which raised $200,000 for Pacific Symphony’s artistic and education programs.

Following a multi-million dollar transformation, The Center Club in Costa Mesa celebrated its Grand Re-Opening & Annual Charity Classic Fundraiser. The Center Club, a private business and social club, unveiled its extensive renovation to more than 400 guests, the largest remodel of the Club’s 27-year history. The event not only commemorated the newly renovated Center Club, but also honored its founder, Henry T. Segerstrom for his visionary leadership.

Eastern Inspirations The world’s oldest cultures have influenced design for thousands of years. bask: You’re amazingly fit. Advice? Katy Clark: I love to run; it’s healing to me to be in the sun, the air, and have time to think. But not everybody loves running. I help people find out what works for them, what they love, then we do that. b: How much exercise is enough? KC: My easy rule: you have to be sweating, breathing heavy or sore the next day. If you don’t hit one of those three, it’s not a workout. b: Is there hope for those who hate working out? KC: There’s so much from swimming to yoga to rock climbing—there’s almost no excuse to not find something you love to do. But you have to have the guts to try something new. It’s okay to be uncomfortable. b: Can you really love food and be fit? KC: Yes, but you need to retrain your palate. I love a good In-N-Out burger, but I don’t
love how I feel afterwards. And I know I won’t love how I look if I continue to eat them. b: Importance of food versus fitness? KC: Seventy percent of wellness is diet. Some people think ‘I’ll just keep working out and eat whatever,’ but if you don’t change your diet, it’s just sabotage. b: Tell us about your Light and Luscious series.
b: Current food trends? KC: Quinoa, people are starting to see it as the powerhouse it is—more nuts and berries, less dairy and gluten...and realizing how food reacts to your body, instead of just consuming. b: Foods to lose? KC: Diet soda. It’s like the bad boyfriend: does nothing for you. b: Your favorite spice?
KC: I teach classes at the Sub-Zero & Wolf showroom in Costa Mesa. It’s during lunch hours, people get educated and motivated about healthy eating—and enjoy a delicious meal.
KC: Turmeric! It’s full of anti-inflammatories. I love putting a little bit of spice in everything I eat.
b: Your Food Network Star experience?
KC: I’d like to be on ESPN SportsCenter, out on the field, chatting with the players, getting the live scoop of what just went on. That, or a teacher.
KC: I wouldn’t be who I am today if it wasn’t for the show. It catapulted me into becoming the woman I always knew I was. I’m so grateful.

FIT CHEF KATY “GOOD FOR YOU” BAKED OATMEAL “This one is a hit! You can prep it the night before and leave it in the fridge. Or, bake it ahead of time and serve with warm milk in the morning.” ½ cup cinnamon applesauce ½ cup pure maple syrup ½ cup of egg substitute 3 cups uncooked whole oats 2 teaspoons baking powder 1 teaspoon salt 1 cup vanilla almond milk 1 tablespoon cinnamon ½ cup almond slivers 1 cup blueberries warmed vanilla almond milk for serving Combine applesauce, maple syrup, and egg substitute. Mix well. Add oatmeal, baking powder, and almond milk. Mix in almonds and blueberries, gently. Pour into a greased 9 x 9 baking dish and bake at 350 degrees for 35-40 minutes. Let oatmeal stand for a few minutes. Serve in squares with warm almond milk poured on top. Garnish with blueberries and almonds before serving!
