It’s official. Winter is here. While it’s true that many of us live in Southern California for the sunny skies and near perfect temperatures most of the year, there’s something special about this season in particular. Maybe it’s the cooler weather, the patch of blue peaking through the few fleecy clouds, or the evening lights that remind me of the city—the holidays are my favorite time of year, when warmth and joy come from time spent with family and loved ones. Despite how busy this year has been, I always look forward to decorating my home for the holidays. This usually entails a trip to the attic to pull down all of the décor I’ve stored away year after year. And although I have had these things for decades (mostly homemade crafts my children made for me when they were in school), I am always surprised at what I find wrapped inside—these memories from holidays past are always the most valuable part of the season to me. This season is intended to be all about fun, relaxation, and building new memories for the years to come. Regardless of whether you prefer to spend your winter at home by the fireside or dashing through the snow at an exclusive winter destination, this issue is your guide to making the most of the season: from holiday gifts for everyone on your list to top-notch ski resorts, it’s all here. This coincidence was just the cherry on top of an altogether great shoot of the restaurant’s delicious food. 7 Robert Pingatore While Robert has a passion for cutting-edge technology and claims the research of new gadgets as a highlight of producing bask Tech, this season’s search for the coolest products was accompanied by unexpected developments in the technology world. He says, “it is always fun to be right on the edge of the big game-changers, and digging into the Kindle Fire and discovering what makes it so hot gave me an enormous appreciation for where Amazon is taking consumer electronics and cloud computing.”

On top of the myriad shopping opportunities, you’ll find a park-like setting, complete with a bocce court that invites family fun. Or, check out the Farmer’s Market any given Saturday for a different, but equally engaging, type of shopping.

Optivest CEO and bask Brief Contributor Mark Van Mourick sat down with us to give us his outlook on the global economy, his take on the joys of philanthropy, and his thoughts on what makes successful entrepreneurs tick.

bask: What are you going to be using bask Brief to share with readers? Mark Van Mourick: Really, it’s going to be a quarterly review and forecast of the market, the economy, and what direction we are moving. Optivest is a firm designed for the long haul, so I won’t be getting caught up in hot trends or the weekly moves on Wall Street. Among other models, I will continue to use historical trends to understand where our economy is today and likely will be tomorrow. b: How do you determine who you will and won’t work with? MVM: Well, I’d love to work with everyone, but we just don’t have the bandwidth for it. Mostly, I work with entrepreneurs who have sold out and now need to upgrade their investment counsel to plan for their retirement. And, it’s more the serious, safe money. We don’t chase the venture capital deals or speculative things. It helps that I’m in the same season of life as most of my accounts, although I continue working, as do some of my clients. They have the means to retire whenever they want, but they choose to keep working. b: That brings us to the fact that you have mentioned you hope to never retire. What do you mean? MVM: I crossed a point a number of years back where my passive income from my savings covers all of my expenses, so I know I could. I know what retirement would look like financially. But, I’ve seen a lot of people that come to us in retirement, if they’re active and they’re healthy and have good business acumen, they go back to work in a few years. Maybe it’s in a nonprofit or as a consultant, so that’s one reason. I’m also fortunate enough to be able to work remotely from our home in Vail, Colorado, or while we are on philanthropic trips experiencing third world travel, which leads to our six-figure giving

base that we would have to suspend if I were to stop working. And I feel like there are three sides to healthy living: work, self-indulgence and giving back. While that balance changes seasonally, it is important to me to find the level in those three areas. Bottom line is that I don’t think I’d ever not work; I enjoy what I do. I read financial stuff on the weekends when I don’t have to, and I like figuring out the economy and the markets. b: How did you discover that there is a balance among those three values of work, self-indulgence and giving back? MVM: Taking those in reverse order, I believe my Christian faith has led me to believe in the power of giving back. And my selfish nature certainly dominates the selfindulgent side. But, I think there’s a balance. We’re supposed to love ourselves, and I think that’s part of loving ourselves, which, at least for me, is through recreation. And the giving back, well, in my mind, it’s all God’s money, so it’s not, “How much should I give?” rather it’s, “How much should I keep?” I think every generation ought to earn their own money and give their own money away. I don’t think it’s the responsibility to pass it on to the next generation so much as it is to use it to the best of your abilities now, and that’s what I’m doing. Mind you, this is my belief for my money, not my clients’! As for the work question, I think full retirement is so overrated. I think you need to have a little tension on your brain, a reason to get up in the morning.

whom had walked more than two days for their first time in a medical clinic. The first person in line was a pregnant mom who had the deadliest form of malaria. I mean, this is a bug that kills in a couple days. Both she and her baby were saved, and they certainly would not have [been] if there were no clinic. So, while some of the schooling and leadership programs are hard to measure in terms of success, saving a pregnant mother and her child? That’s a visual memory for a lifetime.

b: What was the most rewarding climb of your mountaineering career? MVM: We climbed the Dru (the Aguille de Dru), after which I had named my son. We visited it when he was nine and I told him that when he was 18, we would climb it together. And we did! When he turned 18, we went back and we climbed it. It was just the right amount of challenge. We spent three weeks there, just getting ready. It was late summer and yet, it snowed a half-meter just before we and our two guides got started. It was an incredibly long day: 22 hours, on a liter of water with snacks in our pockets with 25 pitches. We reached the top by 6 PM and then spent most of the night rappelling down the mountain and then hiking back down the glacier. It was a very special and rewarding experience for both of us. b: You were involved in the Boy Scouts [for] a long time. What lesson really struck home for you as a Scoutmaster? MVM: The first time activities that the boys get to do will end up being vocations or avocations for them later in life. If not for taking these boys out (and about a third of them came from single mother households, so we Scoutmasters often became father figures to them), these boys wouldn’t have these experiences. They get to ski, they waterski, they ice skate, camp, cook…there are a lot of skills that they learn, whether it’s archery, learning to shoot a rifle, rowing a boat, or sailing. These are activities that they would have had no other exposure to were it not for scouting. It’s amazing that we can introduce [them to] some of these things that they will have a great interest in later on in life.

b: Speaking of philanthropic efforts, which do you feel are doing the greatest good, or of which you are most proud? MVM: We’re in seven countries now. Money goes so far in third world countries. Most of what we have done has been medical or health-related. We’ve built clinics, orphanages, freshwater wells, made large distributions of wheelchairs, supported organizations that pull women out of situations of forced prostitution. The moment that really sticks out in my mind: we opened a medical clinic on a small Indonesian island called Sumba. b: Changing gears to recreation, if you absolutely had to, what is the hierarchy of your favorite outdoor sports? MVM: I love skiing. And heli-skiing in Canada is about as good as it gets for me. I try to get a week of that in a year. Plus, we spend quite a few weeks a year in Vail, Colorado, where I can still get work done while not being in the office. Mountaineering and climbing, rock climbing, would definitely be number two. I’m really loving boating right now; we’ve had a good size boat for the last few years, and I really enjoy doing that with my family. Surfing, I love with my boys. It really is a social activity when we’re out there together. Camping, hiking and scuba diving would round out the list.

b: How much does having those circles of people with common core values help? MVM: In business, and really all of life, so much of everything boils down to relationships, whether it’s relationships with family, friends, coworkers or clients. That’s something that’s crucial to me here at Optivest, that we have a harmonious environment in which to work. It sounds cliché, but we push for a family atmosphere here. It’s a critical and important part of who we are and how we treat all of our clients.

2012 market outlook US Economy As the US continues to struggle to maintain modest growth, our economy has become more dependent on foreign economies than ever before. Though we do not believe that the European bank problems are large enough to take us back into a recession on their own, a “hard landing” in China would. Fortunately, according to China’s

economists, a hard landing is unlikely without a recession in the US first. Therefore, we return our focus to the US economy teetering near break-even between the stagnation in Europe and the more modest growth in the Asian/Latin American economies. There is a tremendous amount of cash on the sidelines but confidence is low and we need a jump-start to get the economy moving again.

2012 will be another volatile year as outside forces along with election year politics increasingly influence our US markets. We will be carefully watching for the above economic catalysts to spark sustainable growth and we will remain prepared to act defensively in the event that they do not. growth is estimated to be 4-6% and to grow seven-fold over the next 20 years (Goldman Sachs).

recessions Despite the dire headlines, an imminent second recession is unlikely. The most widely followed early warning indicator of a pending recession is the “Conference Board’s Leading Economic Index.” This index has turned down for two to three months before every recession since 1958. As of the latest data reported on October 20th, the index is still climbing this year. Furthermore, recessions by their nature are “excesses in need of a correction.” So far, consumers have not bid up the prices of houses or durable goods, as was done in 2007 before the last recession. The household debt service burden is back to 1985 levels and savings rates are at 20-year highs (Wells Fargo). Banks are not overlending. Companies are not over-hiring. Inventories are not too high. Households are not over-exposed to stocks. Liquidity is at historic levels. It is hard to see how today’s economy would be deemed to be in excess of anything and needing to be recessed. More quarters of continued sluggish growth are more likely.

fixed income We are forecasting that interest rates will stay near current levels until mid-year 2012, then long-term rates should move up by about 1% by year-end. Current high-yield corporate bond spreads should narrow as the economy improves and look attractive at today’s prices. Hire a Wedding Planner Everybody knows someone who could help plan your wedding, but it is best to hire a wedding planner with the same mindset as when hiring an attorney– professionalism first. The right wedding planner will save you thousands of dollars and ensure that the money you do spend is used to deliver the best experience possible. Don’t skimp and don’t entrust this day to a friend of the family simply to avoid hurt feelings. Pick a Place There are countless stunning settings in Southern California for beautiful, romantic weddings. But remember: if you decide to use a private home or venue in or near a residential neighborhood, you are going to have the police at your door telling you to turn down the music. People love weddings as long as they are not next door.

Yes, I am getting married. It was a big decision, but deciding to propose was just the first of many big decisions in a process that will decide how simple, sumptuous, stressful, sexy or silly the actual wedding will be. The Harvesters is a group of some of Orange County’s most supportive leading ladies brought together by a mutual mission: to aid the Second Harvest Food Bank’s quest to end hunger. This year marked the 19th annual luncheon held by these philanthropy-minded women, which commenced with a silent auction showcasing items from Orange County’s local luxury purveyors. Attendees graciously bid on the items as they sipped champagne generously provided by Caroline Jones of Cartier. The highlight of the afternoon is always the high energy New York style fashion show, kindly put on by South Coast Plaza, which previewed looks from Chanel, Gucci, YSL and Christian Dior to name just a few. kids of kilimanjaro The nonprofit organization Kids of Kilimanjaro, which provides school lunch programs for 15,000 young students in East Africa, held its 6th Annual Gala Fundraiser on October 22nd to great success. The event, which took place at the sophisticated Beverly Hills Hotel, was held in Beverly Hills for the first time in honor of its supporters in Los Angeles. Guests enjoyed a keynote address given by The Honorable Bill Richardson, current Special Envoy for the Organization of American States and former Governor of New Mexico. In addition to an elegant cocktail party and seated dinner, the evening included a live and silent auction for a number of enviable items. Raising a record $218,448, items such as a two-night stay at the luxurious Pelican Hill Resort, a week’s vacation in an outstanding private residence in Kauai, a dress worn by Jennifer Lopez, and exclusive menswear by John Varvatos were auctioned.

The Beckstrand Cancer Foundation, an organization that aims to improve and enhance the quality of life for cancer patients and their families, celebrated its 8th Annual Diamond and Pearl Ball on October 22nd at The Balboa Bay Club & Resort. Guests were touched by the life story told by Honoree Fran Drescher, a cancer survivor, who is known for her performances in “The Nanny.” The evening commenced with red carpet arrivals including several celebrity guests such as Regina King, Adam Rodriguez and Board President George O’Connell, followed by a silent auction featuring luxury items from various donors. In line with the evening’s theme, the star-studded event included a “Moulin Rouge” inspired performance and seated dinner. As a child, my favorite part of school was lunchtime. This was the time my friends and I would meet to buy cafeteria food or trade our packed lunches. What I didn’t realize then was the energy this seemingly simple lunchtime tradition gave me to carry on throughout the day and how it helped me focus on my classes, afterschool activities and homework. The lunch selections and overabundance of food we have in America are easy to take for granted. Unfortunately, in many areas of the world, children miss out on this much needed midday boost of energy and nutrition as schools cannot afford to provide lunch for their students. In 2004, an altruistic entrepreneur by the name of George Namkung, a local OC resident, had the opportunity to fulfill a lifelong dream by trekking to Africa. George has traveled to over 90 countries for work and personal reasons, but had yet to experience Africa. After reading about the global warming hitting Kilimanjaro and the possibility that glaciers would disappear by 2015, he knew it was time to go. It took six nights and seven days to hike to the very top of the beautiful peak that claims the title of the highest stand-alone mountain in the world at 19,330 feet.

George has spent time volunteering since college and always sees local schools and children as the most important places and people to visit at any destination. There is a little village in Tanzania in the Monduli and Moshi Districts, high up the mountaintop of Mt. Kilimanjaro, where children wake up enthused to attend school. Unfortunately, the schools could not afford to nourish them with lunch, and tens of thousands of children had to leave to go beg. This situation is especially tragic when considering that, with the education they were forced to miss school, these children could work to propel themselves out of poverty. Minutes before George had to board his flight back home, he visited the last school. There, he found unimaginably decrepit conditions–dirt floors, no windows, no air conditioning, great heat, no water, no food, and a minimal amount of the supplies that schools need to operate. Faced with this harsh reality, George was eager to find a way to help. Hunger at the school was the most pressing issue. Neither the school, the government or the parents could afford to provide lunch. Proper nutrition is vital not only to allow children to focus on their classes, but also to improve their immune systems to fight malnutrition and malaria, common issues that continue to plague this region today. George recounts, “I saw preschoolers putting their heads down, falling asleep, and even fainting, not being able to pay attention in class. Older kids left the school to pick berries in the fields, or journeyed to the village to beg for food. My defining moment was when I asked a class, ‘What is one question you want to ask me before I leave?’ I randomly picked a cute girl with vibrant energy, and she says, ‘I don’t have a question, but I have a request. I wish you a long and happy, healthy life, so I could have the opportunity to see you again.’ continued

From that moment, which melted my heart, I said I was in. I am committed to helping these kids. That has stuck with me since then, and will forever. I asked the teacher if that was a common phrase they learned to say to tourists. The teacher replied no, she said that out of her own heart.” Inspired, George established Kids of Kilimanjaro, a 501 (c) non-profit organization that works to provide in-school meal programs. The association works directly with the local department of education and at least 90 cents of each dollar raised benefits the children. Corn, milk and sugar are the main staples for pre-school children, while beans and rice are supplied to elementary school children. To date, the organization has served 15,000 students at 48 schools, and raised more than $1 million. Today, school attendance is at 100% and graduation rates have greatly increased. With the basic need of food met, the students have energy to carry on throughout the day. This allows them to graduate to middle school and high school where lunches are supplied. Without an education, there is no promising future for these kids than to become a farmer and raise cattle. This lunch program presents a sustainable method for impoverished children to achieve success through health and education.

Getting involved with this highly worthwhile organization is surprisingly simple. It only costs $22 to feed one child for an entire school year. Elementary school students in the US even hold their own events to raise money. Public speaking, event fundraising and donating are all ways to help. Kids for Kilimanjaro holds an annual gala which raises money primarily through attendees, auction and table sponsors (corporate sponsors are welcome). Recently, GNLD International became the Founding Corporate Sponsor for Kids of Kilimanjaro, and has picked Kids for Kilimanjaro as their Charity of Choice. As George explains, “What we need most is funding. Once we commit to 15,000 students to feed everyday, we must; we can’t just turn away one day and say ‘sorry, we can’t feed you anymore’.”

Sometimes you feel like you’re just one person; how can you make a difference, what does it mean to change the world? One person can truly make a difference, whether you’re involved at the local or regional, national or international levels, one person can make a difference. We all have the capacity. The Tanzanian government has little or no money for events like drought, famine or flooding. The U.N. agencies provide help with global issues such as HIV/AIDS, malaria, malnutrition, but these are long term programs. There is no organization like Kids of Kilimanjaro, who will accept your donation dollars and make an IMMEDIATE impact in helping to feed hungry students who want and desperately need an education. In my opinion, there is no better investment for your dollars than in helping impoverished students who need to eat in order to learn.

Chocolate Poached Pear

A delectable side of chutney to complement your meal or the finishing touch of a chocolate poached pear illustrates the theory that less is definitely more.

6 large, firm pears 3 cups red wine 1 cup sherry wine 1 cup water 2 tablespoons chopped ginger 1/3 cup sugar 2 strips lemon peel 1 bay leaf For the sauce: 2 cups bittersweet chocolate chips Combine all ingredients except pears in a heavy saucepan and bring to a boil. Reduce heat to simmer and cook for about 8 minutes. Turn heat off. Add pears to the liquid. Cover saucepan and cook over low heat, gently simmering for about 15 minutes. Remove pears from heat and let cool. For chocolate sauce: Put chips in a double boiler and melt completely. Immediately drizzle or dip pears in chocolate sauce.

Jalapeño Pineapple Chutney 4 Jalapeños seeded and chopped 3 1/2 cups canned pineapple chunks (drain and reserve syrup) 1 1/2 cups white vinegar 1 cup firmly packed brown sugar 1 teaspoon salt 1/2 cup golden raisins 2 tablespoons candied ginger, finely chopped 2 garlic cloves In a saucepan, combine all ingredients except pineapple chunks. Bring to a boil and reduce to a simmer for 10 minutes. Add pineapple chunks and continue to simmer for another 30 minutes or until sauce becomes thick. Let cool and serve at room temperature.

Twenty-nine-year-old Amar Santana is a culinary rock star. Previously the chef of Charlie Palmer, he opened his own restaurant in Laguna, Broadway by Amar Santana, and it is serving some of the most innovative food in Orange County. With so many delicious items on the menu, you can easily build a meal from the various small plate and appetizer options. On the night I visited, the amuse-bouche was four golden cheese and chorizo filled rice balls (arancini). While an amuse is usually a small bite from the chef, there were no complaints about this generous starter, which I would have happily paid for if it were on the menu. The chicken liver mousse is topped with pickled onions, whole grain mustard and crunchy potato chips and served with grilled sourdough for spreading. The roasted heirloom beet salad is visually stunning and delicious: yellow, red, and purple beets are diced, shaved and chopped, and then served with goat cheese crema, almond crumble, tart sumac and argon oil. Pan roasted scallops top savory sea urchin risotto and crispy, tempura sea beans. For dessert, the hazelnut praline is reminiscent of a kicked up Kit Kat, with black cardamom ice cream, burnt banana cream and tangy passion fruit sauce. Bottles of olive oil line the walls, indicating a primary focus on the cuisine. Begin your meal with a trio of crostini, including delicious mushroom; truffled artichoke spread is topped with fresh, shaved mushrooms, grated Parmesan, and scallions that have all been coated in a buttery olive oil. The zucchini carpaccio is composed of raw, thinly sliced zucchini, dotted with toasted pine nuts and shaved parmesan, and then finished with a drizzle of nutty olive oil and lemon juice. For a main course, the chef’s signature lamb chops are a must. The chops are coated in Herbs de Provence and black pepper, then grilled and briefly smoked right before serving. They rest on pillows of goat cheese and chive gnocchi and roasted honey eggplant, crowned with rosemary garlic olive oil. The communal table is a great place to try a glass of wine from

Pizzas vary from the perennial favorite of Prosciutto di Parma, rucola (arugula), tomato and mozzarella to spicy salumi, mozzarella, tomato and Fresno chile. All of the toppings are layered onto the perfect crust: thin, light, chewy yet crispy, and slightly charred in the woodburning oven. End with the butterscotch budino, a rich pudding finished with crème fraiche whipped cream, caramel sauce, and sea salt. While some may say they don’t make them like they used to, we’ve scouted dessert hot spots where they actually make them better.

Cake Monkey in Burbank takes your childhood favorites and transforms them into sophisticated adult indulgences. They have revolutionized the Ding Dong with the creation of the Cakewich in three delectable flavors. The Black and White is a moist chocolate cake sandwich filled with delicate vanilla buttercream, crunchy Valrhona pearls, and coated in bittersweet chocolate. Candy bar lovers will want to try the Peanut Butter and Marshmallow: rich yellow cake filled with peanut buttercream, homemade marshmallow and covered in chocolate. A former burlesque house on skid row, Nickel Diner in downtown LA is a throwback from a passed-but-not-forgotten epoch. People come from all over the city for the sweet and savory donuts dipped in a thick maple glaze and then rolled in crispy bacon. Just as delicious, the dessert menu features updated classics with a twist. The Red Velvet cake is both scrumptious and beautiful, with contrasting layers of brilliant red cake and bright white cream cheese frosting. Valrhona chocolate pearls are dotted throughout the cake, adding a surprisingly crispy crunch to what would be an otherwise “normal” cake. The Chocolate Crunch cake combines salty, crispy potato chips and crunchy peanuts with layers of moist chocolate cake and smooth chocolate buttercream frosting. The S’mores cake is the quintessential summer treat and a far cry from the gooey graham cracker sandwiches at camp. Traditional Bananas Foster is transformed into a creamy, custardy bread pudding, studded with crunchy, candied pecans and served with a caramel gelato. The standard campfire favorite, S’mores, is recreated in a rich dessert with layers of hazelnut graham cracker sponge cake, milk chocolate and homemade vanilla marshmallow.
