Be Thankful...Give Thanks! November is one of my favorite months of the year and I am certain many of you will agree. The air is cooler, the leaves are changing colors, the fragrance of turkey and dressing permeate the kitchen (or down here in the South the wonderful smell of fried turkeys on the back porch) and time is spent with family and friends during the long holiday weekend. Your home is probably the same as mine on Thanksgiving Day. Once the meal has been devoured, the men proceed to the couch to watch football and the women gather in the kitchen to clean dishes. The children race in and out of the house and laughter fills the air. As Christians, we have so much to be thankful for - family, friends and good health to name a few.

I am truly thankful to the many dedicated readers of this “Good News” Christian magazine each month. I absolutely love hearing the wonderful responses from many of you. If you are reading Bay Area Christian Family for the first time, I thank you for choosing to wrap your hands around something so positive and uplifting. Holiday Meal Planning Guide

Lucy’s Sweet Potato Casserole Supreme

How much is enough when preparing for holiday dinners? The following info will help. The servings are generous, so for small children, count one serving per two children.

Meat - If using a whole turkey, 1 lb.

per person. If using ham or turkey breast, ½ lb. per person Dressing - 1 cup per person Bread - 2 rolls or servings per person Beans/vegetables - 1 lb. of dried beans serves 6 people; for prepared vegetables, ½ cup per serving Creamed potatoes - 1 cup per serving. An average potato will yield one serving, so figure 1 potato per person Gravy - 1/6 cup per serving Pies - 1 average pie serves 6 people Cakes - An average 2-layer cake serves 10 people Tea, coffee, or other beverage - For dinner beverage (tea), figure on 3 - 8 oz. servings per person (24 oz. per person). 1 gallon = 128 ounces, or 5+ servings. For after dinner beverage (coffee), figure one 8-oz. serving per person.

Easy Cranberry Bread

Here’s all you’ll need to make this delicious sweet bread: (A) 2 cups of all-purpose flour; (B) 1 cup of quick oats; (C) ¾ cup of sugar; (D) 2 tsp. of baking powder; (E) ½ tsp. of baking soda; (F) ¾ cup of orange juice; (G) 2 eggs; (H) 1/3 cup of vegetable, corn, or canola oil; (I) ½ tsp. of orange extract; and (J) ¾ cups of fresh or frozen cranberries. (Optional: 1 cup of chopped walnuts).

Ingredients:

4 lb sweet potato 1 ½ cup granulated sugar 1 cup milk 2 each egg 1 ½ teaspoon pumpkin pie spice 1 teaspoon vanilla extract 1 ½ teaspoon kosher salt 8 tablespoon Butter, softened, divided 1 cup Pecans, chopped, toasted ½ cup brown sugar

Preparation

Peel and dice sweet potatoes. Cover sweet potatoes in a large pot with cold water. Boil for 25 minutes until very tender. Drain and mash sweet potatoes. Add 4 tbsp. softened butter and stir until melted. Add sugar, eggs, pumpkin pie spice, vanilla, salt and milk. Combine well. In a separate bowl combine brown sugar and flour. Cut in remaining 4 tbsp. softened butter until fully incorporated. Add pecans and combine. Fold pecan mixture into sweet potato mixture. Spread in a 9x13 baking dish that has been sprayed with non stick cooking spray. Bake at 350 degrees for 30 minutes. Remove and top with marshmallows. Return to oven and bake for another 15-20 minutes until marshmallows are lightly browned. Serve hot. — Chef Lucy Greer Greer’s Market & Catering

Combine the flour, oats, sugar, baking powder, and baking soda. In a separate bowl, combine the juice, eggs, oil, and extract. Gradually add this mixture to the dry ingredients. Lastly, mix in the cranberries. Pour the batter into a greased loaf pan and baked in a preheated 350-degree oven for about 55 minutes, or until a toothpick inserted in the center comes out clean. Place the pan on a cooling rack for at least 10 minutes before trying to remove the bread from the pan.

Give thanks. This Thanksgiving, make your own place cards and put a different Scripture verse on each one. Invite each person at your table to read the verse on his place card and name something he’s thankful for. A few good verses to use: “Give thanks to the Lord, for He is good, His faithful love endures forever” (I Chronicles 16:34, HCSB). “Hallelujah! Bloom Where You Are Planted

About five years ago my two young sons decided they wanted a “strawberry farm”. I was raised in the country and I know a little bit about farming. So, I hopped on the internet and ordered a bundle of 25 strawberry plants. They arrived in short order, we planted them in small pots, then placed those pots in a wagon for safekeeping until they were large enough to be planted in the ground. Once potted the strawberry plants grew quickly as did grass and weeds. One afternoon while watering the plants I explained to the boys why we needed to pull the grass and weeds out of the pots the strawberries were growing in. Grass and weeds are good for nothing! The boys worked their way through the pots pulling out the unwanted guests and finished in short order. Except for one pot. Growing in one pot along with the strawberry plant was a green sprout a little taller than the rest. They wanted to leave it. I told them it was just a weed. Good for nothing, remember? I recall the response vividly, “can we just leave it and see how big it gets”? Sure, why not. Our strawberry farm now contained 25 strawberry plants…… and 1 weed. As the days went by our strawberry plants grew, as did our weed. Driving in from work one day I glanced at the wagon parked by the privacy fence and did a double take. Turns out our weed wasn’t a weed after all, it was a flower. I stopped and took a picture. Now, consider this……. That flower was not a flower that someone intentionally planted in a flower bed, in front of a nice house, with other flowers, waiting to be admired by the world. Not even close. It was an errant discarded seed from who knows where, that found fertile ground, sprouted among strawberries, in a plastic cup, packed into an old wagon, halfway down a drive way, beside a fence……. but it bloomed anyway Also, consider the astonishing odds for this single seed…… Arriving from who knows where. Landing in fertile ground. Spared by the farmer instead of being pulled up and cast out. Then blooming in a place where a grown man lives that can be moved enough by the whole story to stop his vehicle, get out, and take a picture of this errant flower growing in a wagon. Then five years later dust off that picture and write a story about it to relay the power of blooming wherever you are planted. The odds of this happening for that single seed are incalculable, but here you are reading that story.

right where it was planted. It made a difference then and even though years have now passed, it’s work is still being multiplied today! If you are waiting for the right time, right place, right audience you will wait forever. Offer your best work now, on a consistent basis, in spite of the evidence, then watch the evidence begin to change. Have some faith. Get in the Boat. “I distinctly remember it having the feeling of being welcomed into someone’s lovely home, not an institution. It was so clean and well-maintained, and the children’s rooms were colorful and individualized as much as possible to the unique affinities of each child. I also remember meeting one of the house parents and how proud he was of the home and his attention as a loving father to some of the children living there.” ABCH Trustee Kelly McMurry attended our Christmas Open House a few years ago. This was before she had attended her first board meeting, so it served as her first impression of us. Every year in December, our house parents and children prepare their homes, adorning them in Christmas lights, Christmas trees, and colorful ornaments, to welcome guests inside their doors and inside the ministry of Alabama Baptist Children’s Homes (ABCH). We love to invite the community into our ministry in this way, giving everyone an opportunity to see what we do and what we are all about firsthand. Her name was Helen and she was brilliant. She graduated from high school at age fourteen and earned a master's degree from Columbia University by the time she was twenty. Raised in a secular Jewish home, she was an atheist for much of her life. She won awards for her poetry and joined the American Communist Party. She married a fellow communist during WWII and had two children. After converting to Christianity in her mid-thirties, she visited England and she fell in love with Jack, a writer who greatly admired her but did not return her romantic interest. In 1953, after finding out that her husband was having an affair with her cousin and wanted a divorce, she left America and moved to England. Three years later Helen Joy Davidman married the English writer. Everyone called him Jack, but his actual name was Clive Staples Lewis. In her excellent new book, Becoming Mrs. Lewis (Thomas Nelson $25.99), Birmingham, Ala. author Patti Callahan Henry offers a fictional account of the remarkable love story involving Alabama’s Patti Callahan one of the most significant Christian writers of Henry is the author of Bethe last century. Joy Davidman was brilliant, coming Mrs. Lewis as well as Driftwood Summer which passionate, and a maverick. C. S. Lewis may have been equally brilliant, but a passionate appeared on the New York maverick he was not. Perhaps the death of his Times best seller list. The Auburn University graduate mother and the horror of the Great War compelled him to keep his passions and feelings worked as a pediatric clinical nurse specialist before safely locked away. But Joy held the key, and becoming a full-time writer. she unlocked his heart and set him free. After I finished reading Becoming Mrs. Lewis, I thought about a verse in the First Epistle of John. "He who loves, knows God." I have no doubt that loving Joy Davidman brought Lewis closer to God, for it isn’t our doctrinal acumen that opens the door to the Kingdom of God. We Are Making Our Brain MAD, Destroying our Brain Health As we age, certain parts of our brain not only become irate and disgruntled, they go MAD or a type of crazy, where our brain is eventually stricken with various dementia diseases, specifically Alzheimer’s. For starters, we have eaten the Modern American Diet (MAD) for our entire lives.

3 Types of Food Comprise MAD: 1. Processed Foods, all of them. 2. Harmful 6 White Foods…white wheat flour, white rice, white potatoes, white sugar, corn (it’s white when processed). The are all simple carbs which immediately turn to sugar. White milk contains casein which is a protein type molecule which envelopes nutrients and prevents their absorption. 3. Toxic Foods. What we put into our mouths is too often laced with toxins (aluminum, fluoride, pesticides); preservatives; synthetic hormones; antibiotics, bleach (how do you think sugar, flour and milk are so white?); excess gluten; genetically modified grains; and hydrogenated oils. When eaten over time, they destroy our brain. First, because we eat too much sugar, the brain quits producing insulin. (Our head brain as well as our pancreas creates insulin. Insulin is the hormone we create to get nutrients into our cells.) When the brain quits producing insulin, the neuronal supportive cells become insulin dependent and nutrients cannot get into, penetrate these cells. Consequently, they shrivel and die. This type of dementia is called Type III Diabetes, or diabetes of the brain. When we eat MAD foods for weeks, months, years to decades, we destroy the gut lining (leaky gut anyone?) and damage the communication between our gut and our head brain. This lack of communication robs our energy and negatively influences our mood, emotion and cognition. In addition, nutrients don’t get transferred efficiently to other body systems causing augmented creation and function of enzymes, newborn cells and hormones that aid in digestion and sleep Dr. Mark Hyman, a family physician and a medical director at the Cleveland Clinic, presented research and theories of fourteen MDs, PhDs, and specialists from around the U.S. in an education program I recently attended. After describing this immense problem, the prescribing conclusion was the same from all the speakers: for better health, for a more productive brain, clean up your gut. Instead of starving our brains by eating a MAD diet, we need to provide our brain with a buffet of healthy nutrients. Don’t make your brain MAD, avoid the Modern American Diet. 1 on 1 with Jason S. Greene: January Is Too Late! I hear it every year right about now. “I’m coming to see you after the first of the year.” The only problem with that plan is that January is just too late. “Too late for what”, you ask? January is too late to make a decision, or a resolution to get in shape. Because by the time January rolls around you have already gained 5 or 10 more pounds than last year. Why? Because you never quite made it to the gym last January or the ten January’s before that! Plus we are now entering the winter-feeding frenzy better known as the holidays. Plain and simple you need to make a “New You Resolution” now, and leave cleaning out the garage for your New Year’s Resolution list. By getting a plan now you will at least be burning more calories, and you definitely need to be burning more calories this time of year. We all know you are not going to skip grandma’s pie at the big family get together. One other huge advantage about starting now is that exercise has been proven in countless studies to actually lower your stress level. Do you remember last Christmas? Remember the stress that came along with the glad tidings and good cheer? Below is a simple list of things to help you get started now. And do me a favor when you see me in a restaurant. Don’t tell me you’re coming to see me after the first of the year. Either tell me your coming to see me tomorrow or just give me kind smile. Broken promises about next year I can do without, but smiles are always nice, especially during the holidays. 1. Set a goal. You cannot get there if you do not know where you are heading so set a goal. 2. Make your goal specific. Do not proclaim, “I am going to lose some weight”. It is too easy to fudge the results. Instead try: “I am going to lose 30 pounds this year and/or two dress sizes.” 3. Break the “big goal” down into smaller goals. In order to keep you from getting discouraged break it down into several smaller goals. In other words do not proclaim “I am going to lose 30-pounds” and leave it at that. Instead say “I am going to lose 30-pounds by losing 0.58 pounds per week.” That means every week you have a goal and it keeps you focused! 4. Make a plan. How are you going to do it? Ever heard the saying “Failing to plan is planning to fail”? Well it is true in all facets of life especially health and fitness. 5. Get a partner or hire a trainer. The number one thing that matters is accountability. If it is in your budget the best money you will ever spend is on a personal trainer. A good personal trainer will help you set reasonable goals, help you make a plan and coach you until you reach your goal. If a trainer is not an option then enlist a friend or friends who have the same goals and same basic level of fitness and hold each other accountable. I have been doing this for over 35-years and I’m telling you the number one factor in your fitness success is accountability. — Jason S.
