Saving Green by Staying Green BBB’s 2nd Annual E-Cycle Event Keeps Identity Theft at Bay
On Saturday, July 18, BBB serving Denver/Boulder hosted in partnership
with 9NEWS our annual E-Cycle event sponsored by Techno+Rescue and benefiting the Denver Metro Crime Stoppers at Coors Field. We had a fantastic turnout from the community via donations and recycled electronic items. Kim States, CEO of the BBB, said of the event, “Identity theft is the fastest-growing crime in America. Properly disposing of electronics such as computers is one step consumers can take to protect themselves. The event not only provided secure data destruction, but also supported the valuable work of Crime Stoppers, so it was a twopronged approach to cyber-crime in our community.” The event raised nearly $44,000 for the Denver Metro Crime Stoppers, a 400-percent increase from the $10,500 raised in 2014 at the inaugural event. BBB would like to thank everyone who came out and recycled their electronics. We're looking forward to next year! ✤

Businesses love to tell consumers that they’re the best. Every day we’re bombarded by ads on trucks, on yard signs, online and so much more. All businesses vow to offer the highest service, but their claims of honor aren’t always true. That’s why we decided to launch our new “Bad Isn’t Always So Obvious” advertising campaign. Here at the BBB, we realize that bad companies often advertise just like the good ones.

Home Fire Protection Tips
Scam Alert Beware of door-to-door sales representatives who try to use scare tactics to induce you to buy their systems. They may tell horror stories designed to scare parents into installing an overly expensive system to protect their children. Also, be wary of anyone offering to install a system for free or in exchange for referrals. This often backfires, and you’ll be stuck having to pay the full price of an overpriced system.
As cold weather rolls in, so do accidents related to heating equipment and electrical fires. Protect yourself and your family this winter by taking preventative steps now to avoid home fires.
Heating Equipment Many fires stem from improperly operated or incorrectly installed heating equipment. Have your heating system checked at least once a year by a qualified expert. Unless you are fully experienced, do not attempt any do-it-yourself jobs where heating is concerned. Call a professional; the safety is worth the price tag.
Prepare an Escape Plan No matter what precautions you may take to prevent a major fire, you should still be prepared. Create an escape plan with all members of your family and practice fire drills. Include a meeting place where the family will assemble in case of fire. Assign a responsible buddy for elderly persons or very young children.
Portable electric heaters and kerosene heaters present special hazards. Check with local authorities as to the legality of kerosene heaters in your community, and buy only heaters that carry the label of an independent testing laboratory. Use them with care, follow the manufacturer's instructions, and keep them away from curtains, bedding, furniture and other combustible materials.
Wood Stoves and Fireplaces While cozy, wood stoves and fireplaces present several potential hazards, keep fires where they should be (behind the grate) by making sure that: › All chimney connections are properly inspected and cleaned before use. The connections should be tightly fitted and sealed at the joints. › A sturdy fire screen or heat-tempered glass doors are in front of each fireplace.
Electrical Dangers
PHOTOS, TOP TO BOTTOM: RTIMAGES; OPTIMARC; BALONCICI; ALTANAKA
We rely on electrical appliances more than ever these days, so make sure your wiring and circuits can carry the load of additional applications. If you frequently blow a fuse when you turn on an electrical appliance, your circuits are overloaded. Do not try to put in a larger-capacity fuse; have your wiring or circuit systems extended by an electrician. Avoid extension cords, and never run them under rugs, over hooks or through door openings where wires could become worn.
Cooking is the leading cause of home fires, and unattended cooking is the major culprit. Stay near the stove when cooking to avoid any unpleasant surprises.
› Install smoke detectors on every level of your home and outside the sleeping areas. Test smoke detectors once a month. › Never smoke in bed or when drowsy. › Be sure all matches and smoking materials are kept up high, out of the reach of children. › Never leave young children unattended. › Practice your escape plan twice a year, especially at night.
› Stay out of the dwelling until firefighters say it is safe to go back in.
› Keep the stove clean and free of grease and other combustibles. In case of a grease fire in a pan, cover the pan with a lid to smother the fire, and turn off the burner. Leave the pan until it is completely cold. › Be sure window curtains cannot blow over or near the stove. Do not hang combustibles such as clothes or paper over the stove. › Heat oils slowly. › Instruct small children to stay at least 3 feet away from the stove. › Wear short or tight-fitting sleeves when cooking, and always use oven mitts to protect yourself.

Additional Tips to Remember
› If fire strikes, first get out of the house. Then, call the fire department.

Safety around the House
Winter Weatherproofing For Your Home
› Never leave oil-soaked rags lying about. After using, hang them outside to dry and then throw them away. › Do not store gasoline, benzene, naphtha or similar solvents around the home. These flammable liquids give off vapors that can be ignited readily. › Keep basement, attic and other storage areas clear of useless debris such as broken furniture, old clothes and rags. Keep everything 3 feet away from the furnace, space heater and water heater. › Keep your yard free of leaves, debris and combustible rubbish.
As we enter into the cold weather months, it is important that you ensure your house is properly ready for the effects cold weather can bring. Here are a few ways that homeowners can safely winterize their homes and save money in the process. › Caulking and Weather Stripping. To prevent air leaks, homeowners should inspect the caulking around windows and doors to check for cracking and peeling. In addition, ensure that doors and windows are shut tightly and no cold air is coming in due to worn-down weather stripping.
Smoke detectors are your first defense against fire. When shopping for smoke detectors, purchase units that bear the label of an independent testing laboratory. Get competitive bids for installation of a system from at least two or three companies, so you can compare prices. Ask for names of former customers you may contact for references. Be sure to properly maintain detectors and replace batteries regularly. Because most fires take place outside of sleeping areas, be sure to install the detectors near bedrooms. If caught in early stages, a small fire can be fought successfully with a fire extinguisher. Familiarize yourself with your extinguisher by reading the instructions and rereading them from time to time. If shopping for a new extinguisher, look for a designation of “ABC,” meaning it can extinguish ordinary combustibles like wood (class A fires), combustible and flammable liquids like grease (class B), and electrical fires (class C). A good place to keep your extinguisher is in the kitchen. Make sure your extinguisher is tested by an independent testing laboratory. Both the class designation and the mark of laboratory testing should appear directly on the extinguisher. 12
BBB Community Guide
› Ceiling fans. By reversing the direction of your ceiling fan so the blades turn clockwise, you push warm air down and force it around the room. › Furnace. Furnaces older than 15 years might be due for replacement. For newer furnaces, make sure the filter is clean and the thermostat works properly. › Heating ducts. Ducts should be cleaned once every two years. Homeowners should also consider adding insulation to any exposed ductwork to prevent losing heated air. › Emergency kit. When a winter storm strikes, an emergency kit should have all essential materials in one handy place. An emergency kit should include flashlights, candles and matches, a first-aid kit, bottled water, nonperishable food and a battery-powered radio. Create the same emergency kit for the car as well, including a couple of blankets. › Smoke alarm and carbon monoxide detectors. Test smoke alarms and carbon monoxide detectors and install fresh batteries. Homeowners should consider replacing smoke alarms older than 10 years. › Gutters and ridge vents. Gutters should be cleaned to prevent any clogs that would cause rainwater to back up and freeze, making the gutters expand and crack. The ridge vents need to be cleaned as well to help prevent stagnant air. › Outdoor Plumbing. To weatherproof your outdoor plumbing, shut off the supply of water to outdoor spigots, swamp coolers and sprinkler systems; then drain them. Depending on your irrigation system, you may also need a contractor to blow out any excess moisture with compressed air. Also, cover the outdoor components of your air conditioner or swamp cooler to protect them from the elements. › Windows. Window screens should be taken down and replaced with storm windows; they provide an extra layer of protection and keep the house warmer. Investing in a window insulator kit is an inexpensive option to keep out drafts. ✤

AUTO MAINTENANCE
Easy Riding:
Preventive maintenance will keep your car running smoothly through the winter months
BY ELI WALLACE
W
Staying Cool Check your coolant to keep your cooling system from freezing—and your car from overheating. Don’t fill up your coolant tank with tap water, as the impurities will cause corrosion. Ideally, you want a 50/50 mix of distilled water and antifreeze, which lowers the freezing temperature of the coolant. On older cars, it’s worth the small charge from a repair shop to pressure-test the cooling system. This exposes minor leaks and broken hoses that can lead to huge problems later—like a crack in a major engine part. 16
BBB Community Guide
Keeping Traction The single biggest thing you can do to be winter-ready is to put chains in the back of your car now, especially considering the volatility of Colorado’s weather. Having good tires isn’t just important for you; it’s a safety issue for everyone on the road. In fact, the Colorado Legislature has considered making it mandatory for non-AWD vehicles to carry chains on specific stretches of mountain roads. Make sure your tires have good tread by inserting a penny into the tire’s tread. If part of Lincoln’s head is covered by the tread, your tread is still good. Be sure to check all your tires, as they can wear unevenly. Another consideration is the season rating of your tires. Many performance tires are rated for summers only, because they’re made of a rubber compound that constricts in cold weather, essentially leaving your tires bald on snow. Safest of all are studded winter tires. Though these tires are expensive, it’s less expensive than a wreck. The peace of mind that comes with studded tires is worth the extra effort to put the tires on and take them off seasonally. Additionally, wheels often get banged up from sliding around in the snow. If your car has a nice set of alloy or aluminum wheels, it might be worth it to purchase inexpensive steel rims that can be placed on your winter tires. To find out about wheel sizing for your car, talk to a specialist or find your car’s specs on www.wheelfitment.net.
PHOTO LEFT: APPSTOCK; PHOTO RIGHT: IAKOV KALININ
ith the impending holidays, the kids’ schoolwork and the endless hustle of fall activities, getting your car ready for the winter can slip further and further down the to-do list. But the time to think about winter car care is now, not when you’re stuck in a snowbank and 20 minutes late to the holiday party. The good news? Getting your car in winter-ready condition doesn’t have to drain your funds and will probably even save you money in the long run. These tips should be performed in addition to regular car maintenance, like oil changes, topping off your wiper fluid and checking timing belts around 100,000 miles.

The single most common thing that goes out on a car is the battery, and there’s no more dreaded sound than that clickclick-click of an engine that won’t turn over. Colorado’s extreme temperatures can reduce the average car battery’s life span from 5 years to as little as 3 years, and something as simple as hitting a pothole can kill a cell on a lead-plated battery. Short commutes, leaving a car sitting for extended periods, and other factors—like onboard electronics or “Stop-Start” technology—place additional drains on batteries. Around the 3-4 year mark, start expecting battery issues. Electronic testers, which you can buy at an auto-parts store, give you a snapshot of your battery’s health. A battery test is part of a standard oil change, but the testers can’t always predict battery death. If you see corrosion around the terminals or smell a rotten-egg odor, the battery is acidifying. Carefully clean off the corrosion, add water to the battery, and expect to need a new battery soon. It’s worth checking first to see if you’re covered by a warranty, especially if the battery has already died. Ask associates in the store about which batteries are compatible with your car. The cheapest option isn’t always the best for your driving style. If you drive on rough roads, 4WD or off-road, or even if you seem to have consistent issues with your battery, you might want to look into longer-lasting dry cell batteries.

Especially for older cars, today’s ethanol mix causes carbon buildup in fuel-injected vehicles and can corrode engine parts. Fuel stabilizers are cheap and easy to use, costing less than $10 per jug. However, you’ll want to take extra steps, like draining the tank, if the car is expected to sit for longer than a year. ✤ Since 1994

HOME INSPECTION
WHAT TO EXPECT
WHEN YOU’RE
INSPECTING BY MARY LYNN BRUNY
Y
ou’ve found your dream home— or the closest to it you can afford— and it’s under contract. But under its pretty façade may be a few ugly surprises in the form of expensive necessary repairs. Or maybe not. You just don’t know until it’s inspected. Although a professional inspection is optional, most home buyers elect to have one unless they’re planning an extensive remodel or scrapping the home. Getting an inspection gives you an overview of any problems or potential problems that may need addressing. With this documentation you can negotiate with the sellers to make the repairs or request a cash credit at closing. A professional inspection also documents your home’s condition and could be useful for insurance purposes in case of future damage. After your property is under contract, schedule an inspection as soon as possible. You can usually schedule it in one to five days. If the inspection raises issues that require further consultation, this will give you time to meet with the right professionals and get further information and quotes. Inspection costs vary depending on the property size, but expect to pay between $300 and $400. For that you’ll get a comprehensive on-site inspection and a detailed written report with digi20

tal photographs and recommendations for maintenance and repairs, or further consultation. For additional fees you can usually add a sewer-line scope ($140-ish) and a radon test ($130-ish). Most inspectors—but not all—are certified by agencies like the American Society of Home Inspectors (ASHI). Agencies require inspectors to have extensive training, examinations and experience. Certified inspectors also must comply with industry standards and practices, and adhere to a code of ethics. The best way to find a good inspector is through the BBB website, recommendations from friends or your realtor or loan officer. Be sure to check the inspection company online to see what it inspects and guarantees. “I don’t think you need to spend a ton of money, but I wouldn’t choose the cheapest,” says recent Longmont
home buyer Olivia DeJana. “You want to go with an experienced inspector who knows his stuff. The home inspector can either save you a lot of money, or he can miss things that can cost you a lot of money in the long run.” “It’s important to understand the purpose of an inspection. It’s not to locate every little piddling thing that needs to be fixed,” DeJana says. “It’s to find the bigger issues, to make sure the home is safe and structurally sound, and that all the major systems are working appropriately.” The inspection also checks whether the property’s systems are up to code. “‘Is it deemed safe by today’s standards?’ is more the direction we take,” says local ASHI-certified inspector Lou Conte of AmeriSpec Inspection Services in Boulder. The inspection won’t address radon, asbestos, lead paint and mold. If the inspector Continues on page 22

sees evidence of these, they will certainly note it, but radon, lead and most asbestos are not visible. The inspection won’t cover septic systems either. (Boulder County has its own inspection system for septic systems; if you have a septic system, plan on writing additional checks.) See the chart on page 24 for what inspections commonly cover. All inspection reports have disclaimers and limitations of liability. These usually state the report is based on visual inspections and that no attempt was made to gain access to hidden areas. For instance, in the older home Linda Roan-Yager recently purchased, asbestos tiles were found after her family moved in and removed some carpeting. An inspector would not be expected to find those. Most companies limit an inspector’s liability to the return of their inspection fee, though some include certain guarantees. Judy Amabile, who purchased her home in 2013, notes that her inspection came with a free, 30-day guarantee that if anything inspected was said to be in working order and didn’t function the company would pay for the repair. “The problem with this guarantee is it usually takes more than 30 days to close on a house,” she points out. “By the time I moved in and found the oven wasn’t working, the warranty period had expired.”
Join the Process You can join your inspector during the inspection or just receive the report afterward. But it’s best to go and ask questions. “Definitely walk with your inspector,” recommends Brain Doyle, veteran project manager at Triad Construction. “If you
find something afterward that’s not on the report it will be much harder to discuss it later.” Good inspectors will also point out things you should be aware of, like that oddly hung cable wire in your backyard. If you join the inspector, wear sensible shoes and clothes that can get dirty as you examine the basement, garage and attic. Also, a good inspector will point out where critical items are—the main water shut-off valve, the furnace power switch and filters and the main dryer vent—and how to operate and maintain them. “We have all this redwood trim in our house and we had no idea how to take care of it,” Roan-Yager says. “Our inspector talked with us about that and told us how often to stain and oil it.” Keep in mind an inspection will only provide an overview of problems or potential problems, not solutions. “The inspector will find it,” Doyle says, “but you’ll need to get a specific professional to fix it.” Even the best inspectors don’t catch everything. “We really liked our inspector and thought he did a good job with our older home with lots of issues,” Roan-Yager says. “But one thing he missed was our heating system. He checked it by turning it on, and it came on. But it’s baseboard heat and some of the runs work and some don’t. He didn’t check each run.”
Common Concerns In his 15 years as a home inspector Conte has only had one inspection where he found no issue. “It was a newer 800-squareContinues on page 24

Assuming you want to proceed with the home purchase after an inspection, you should meet with your realtor to strategize before your Inspection Objection Deadline. You may want to ask the sellers to fix any problems before closing or ask for financial compensation at closing. “My advice to both buyers and sellers is to negotiate for a cash credit,” Hoeffler says. “The seller doesn’t have any interest in doing the best repairs possible. There can be a whole other set of issues because the buyer isn’t happy with the repairs or the repairs don’t get done on time. Then the closing gets delayed.” But a seller’s willingness to accept your requests will depend on market conditions and their own assessment of the inspection, not yours. “A seller in a hot market isn’t going to be real negotiable regardless of what’s wrong, if they’ve had the house on the market for one week and have multiple offers,” Hoeffler says. “But most buyers and sellers work through the issues. Reasonable people come to a reasonable settlement and move forward.” ✤

foot condo,” he says. Assuming your home will have problems, what are the most common? Many issues arise from deferred maintenance, says Wright Kingdom Real Estate broker associate John Hoeffler. “For instance, we often see furnaces that need to be cleaned and reinspected because the filter hadn’t been changed in three years.” Conte sees a lot of improperly installed furnaces and water heaters, as well as incorrect or inadequate roofing details. “And I see hundreds of safety-related items,” he says, “from potential carbon monoxide poisoning to sharp lawn edging.” Other common problems are slope drainage and radon. “Sixty to 70 percent of the in24

spection reports I look at show some area of yard with a negative slope, so water runoff drains back toward the house,” which can lead to serious foundation problems, Hoeffler says. Radon is also a recurrent issue: “It comes in high for more than half of the homes tested,” he says. Hoeffler recommends sewer-line scopes for houses built before 1980. “In older homes we often see clay sewer lines clogged with tree roots,” he says. Single-strand aluminum wiring is a big safety issue, Conte says. “The problem is it heats up and cools off so quickly that the connections can come loose and start a fire. This is very expensive to correct.” Another costly repair is replacing polybutylene plumbing. “Polybutylene

was the first generation of plastic pipe commonly used in the ’60s and ’70s,” Conte notes. “It was later determined to be faulty and has been recalled.” Synthetic stucco can also present a problem. “Most stucco you see on a house in Colorado isn’t real stucco; it’s some form of artificial stucco,” Hoeffler says. “If it’s not sealed correctly, moisture can get behind it and cause mold, woodpeckers can peck through it, and it can cause broken seals and cracks. If the house is all stucco many inspectors recommend you have a second inspector check it out.” The most expensive fix is foundation problems. “Major structural damage, such as a hillside home that has moved to a point where it’s going to require piers or additional concrete retaining walls, or worse than that... that is going to be very, very expensive,” Conte says.

BBB FOUNDATION
Teaching Youth the Importance of Integrity and Ethics
BY BAILEY DENMARK
BBB FOUNDATION DIRECTOR OF DEVELOPMENT & MARKETING
July 15th marked the kickoff to BBB Foundation’s game-changing business ethics certification program, LIFT. The LIFT OFF event, hosted by Denver’s only BBB accredited data center, FORTRUST, celebrated the beginning of the facilitator and volunteer recruitment for LIFT’s pilot launch in September. LIFT OFF was a great success thanks to the excellent turnout and the wonderful tasting stations provided by Mu Brewing, Leopold Bros. Distillery, Vapor Distillery and Twisted Cream.
LIFT Program Excitement The LIFT Program is unique in that it focuses solely on middle school-aged and high school-aged students and provides them an opportunity to learn about and embrace a highly ethical code of conduct that they can use and be proud of in their everyday lives as well as in their future business/work endeavors. Upon entering the workforce, the student can show current or prospective employers that they completed a course in ethics and have

committed to upholding the LIFT Commitment to Conduct in their school, work and personal life. The LIFT Business Ethics Certification Program grew out of BBB Foundation’s desire to cultivate an honest, ethical future workforce to continue the BBB’s work of ensuring marketplace trust. LIFT aims to tackle the ever-increasing problem of dubious ethics being taught and accepted in our society. BBB Foundation fosters growth and ethics education in today’s young people in order to shape tomorrow’s business and consumer marketplace. “Prior to the pilot program launch, we will be collecting data from students via our partners, Generation Schools and the Denver Scholarship Foundation,” stated Aimee Charlton, VP of BBB Foundation. “This data will help us create a baseline of local students to gauge their general knowledge of ethics and ethical problems that face today’s youth.” The Foundation will use incoming/outgoing student evaluations to track progress after the baseline has been established to generate a report after each semester to track progress. Target class size for the LIFT program is between 15 to 35 students. Program creators believe that this range is large enough to provide good, meaningful academic discourse but small enough to assure that attention is paid to each individual student. BBB Foundation is currently partnering with four organizations –Denver Scholarship Foundation, Mi Casa Resource Center, Generation Schools Network and Open World Learning for the 2015 pilot that is targeted to reach between 700 and 1,000 students. In 2016, for the full launch of LIFT, BBB Foundation will target four additional partnership organizations to reach between 1,000 and 1,500 students for the Spring 2016 semester. As the program is fine-tuned, BBB Foundation will continue to scale larger to ensure it is reaching as many young people as pos-

BBB Foundation is looking for volunteer facilitators from the professional community who are passionate about ethics, education and youth. We also encourage recently retired business owners and local military professionals who are excited to work with youth to make a lasting impact. Each facilitator will be trained on content and how to work effectively with students in a classroom setting. Facilitators are asked to commit eight to -10 hours over two months. Both the facilitators and the partner organizations will be required to report back to BBB Foundation with lessons learned, best practices and any issues that arose during the pilot phase so that we can fine-tune the program for the full launch. If you’re interesting in becoming a facilitator for the LIFT program, or would like to know more about BBB Foundation and learn about other ways to get involved in this gamechanging program, please visit our website at www.tomorrowsmarketplace.org, or contact Bailey Denmark, Director of Development & Marketing at BDenmark@Denver.BBB.org, or call 303-996-3658. ✤

FALL HARVEST
FallFeasts Here are a few delicious ways to use up your fall vegetables.
BY CAROL BROCK
Fall is a lovely turning point. With summer behind and winter ahead, our gardens are getting ready to tuck themselves in for a winter snooze. But what do you do with all those fruits and vegetables that are done ripening on the vine? You get busy! Here are some quick, easy ways to turn fall’s bounty into delicious feasts you can eat now or freeze for later.
Bunches of Basil
Too many tomatoes are never a problem. Between fresh salsa and pasta sauce, you’ll be lucky to have any leftovers! But if you do, here’s another thing to try: Make a quick and easy soup by blending 4 fresh tomatoes, 1 peeled cucumber, 1 small red onion, 1 medium green bell pepper, 1 celery stalk, 4 small garlic cloves, and 2 tablespoons each of olive oil and red wine vinegar. Season to taste with salt and pepper. Chill at least two hours before serving. Garnish with fresh basil (recipe courtesy Living Well with Heart Disease). 28

Cukes with Kick Too many cucumbers but not enough lettuce? Make a cucumber concoction instead. Slice the cucumbers into spears and toss with olive oil, fresh lemon juice, sea salt and Tabasco for a light and zippy finger food!

You Say Tom-“A”-to
For a green winter treat, harvest your basil in fall and put it in a food processor or blender along with fresh garlic, olive oil and your choice of walnuts or pine nuts. (Omit the Parmesan, which you can add in fresh when you use your pesto.) Blend and transfer the pesto to ice cube trays. Cover the trays with plastic newspaper bags or plastic wrap and put them in the freezer. Add the cubes to stir-fries, or defrost and spoon over chicken, fish or pasta. You can also use pesto for pizza sauce.
Peck of Peppers If you’re luckier than me, your bell peppers yielded more than a single pepper this season. My bells were a bust, but my Big Jim chiles were plentiful. If you have a bunch of larger chiles, like Big Jims or poblanos, roast them on the grill or in a toaster oven. When the skins blister and char, put the peppers in a plastic or paper bag for an hour to cool. When you remove the peppers, the skins will easily peel off. Discard the skins (or save them for stock), and put the peppers in gallon freezer bags. Lay the bags flat, leaving a little space between the peppers so you can remove only as many as you need once they freeze. Use frozen peppers in soups, stews, casseroles, eggs and other dishes.
Apple of Your Eye If you don’t have an apple tree, buy apples late in fall when prices drop at a farmers’ market or local farm. Purchase storage apples (Jonathan, Fuji, Rome, Granny Smith, Melrose or Winesap) and wrap them separately in newspaper (in a section with only black ink, not colored ink). Put them in a cardboard box lined with shredded paper or hay or straw and place the box in a garage or basement. Be sure the apples don’t touch. Non-storage apples (Gala, Honeycrisp, Red and Golden Delicious) can become a delicious snack that will last at least a month or so in the refrigerator. Slice the apples into wedges, put the wedges on a cookie tray lined with parchment paper, and generously sprinkle with cinnamon. Place the tray in a 200-degree oven for two hours, or until the apples are sufficiently dried. After the apples cool, store them in a glass jar in the refrigerator.

Tasty Tomatillos If you have tomatillos (and you should, yum!), pick them when the tomatillos are firm and the papery husks have started to split. Remove the husks and place 6 tomatillos in a pan of water, along with 2 fresh garlic cloves and ½ to 1 deseeded jalapeño (depending on preferred spiciness). Boil the water until the tomatillos are fork tender (don’t overboil). Drain and place the tomatillos, jalapeños and garlic in a food processor or blender, along with a quarter of a fresh onion, fresh cilantro to taste, fresh lime juice from a quarter of a lime, a teaspoon of ground cumin and a dash of chili powder. Process and spoon the salsa on fish, fish tacos, enchiladas and burritos. Tomatillo salsa freezes nicely for later use.
Very Veggie Get Nutty Butternut squash is a sure sign of fall. This versatile vegetable is good in many dishes, but we like it as soup. Sauté 4 large shallots, 2 large minced garlic cloves and 3 teaspoons highquality curry powder in 4 tablespoons olive oil or butter (or a combination) over medium-low heat. Add 2½ pounds peeled diced squash (butternut, delicata, pumpkin, or a mixture). Cover and cook over low heat until the squash is tender, stirring occasionally, about 12 minutes. Add 4 cups unsalted chicken broth, cover and simmer for 10 minutes more, or until tender. Season to taste with salt and pepper. Transfer mixture to a food processor or blender and puree in batches. Thin with additional stock, if necessary. To serve, top each bowl with a dollop of plain yogurt or roasted red pepper sauce. Sprinkle soup with minced fresh mint and garnish with whole mint leaves. This soup can be served warm or chilled, and it also freezes well.
Veggie packets to use in pastas, stir-fries and casseroles are a nice treat come winter, and a quick meal. Some fall veggies for packets include carrots, snow peas, green beans, zucchini, broccoli, peppers and cauliflower. Slice the veggies and blanch each variety of vegetable separately in boiling water (don’t boil longer than one to two minutes, tops). Plunge the veggies into an ice bath to cool and stop the cooking process, and to retain their color. Only keep veggies in the ice bath long enough to cool, two to three minutes. Drain and dry quickly, then pack assorted veggies into freezer bags. Keep the bags flat—don’t stack the veggies— and place them in the coldest part of the freezer for fastest freezing.
Soup’s On With winter coming on, soup’s always a favorite. Freeze all vegetable peelings to toss into homemade stock later on. 30

Cherry Idea Cherry tomatoes are the quintessential sweet summer treat that you can snack on well into winter if you cut them in half and place them, cut side up, in a shallow baking dish lined with parchment paper. Drizzle the tomatoes with olive oil and sprinkle with minced fresh garlic and fresh thyme, basil, oregano, rosemary or marjoram. Season with salt and pepper and place the tomatoes in a 225-degree oven for three hours, or until the tomatoes shrivel and are half their size. Use roasted tomatoes as pizza toppers, toss them with fresh greens, or put them in pasta with fresh herbs. To store roasted tomatoes through winter, place them in freezer bags or clean lidded glass jars and store in the freezer for up to six months. Use the leftover olive oil for salad dressing or sautéing. ✤

ant to be happier, healthier and have a greater sense of purpose in your life? Do you desire to make the world a better place? Would you like to make new friends and be more connected with your community? If you answered yes to any of these questions, then volunteering may be right for you! Scientific studies have shown that volunteering is beneficial to your health. A 2013 survey by United Health Group revealed that 76 percent of people who volunteered in the last 12 months feel healthier. 94 percent of respondents said that volunteering helped improve their mood, and 78 percent said it reduced their stress level. Furthermore, the study showed that people who volunteer feel a greater sense of connection to their communities and to other people, with 96 percent of respondents saying that volunteering enriches their sense of purpose in life. The positive relationship between volunteering and health is a huge benefit, but there is another significant reason to serve. Individuals who volunteer are making a significant, meaningful difference in their community. Many nonprofits rely heavily on volunteers to help advance their mission, and without people pledging their time, many organizations 32

would cease to exist. Volunteers are the link that connects a nonprofit’s mission with its actionable agenda in the community. According to the Corporation for National and Community Service, 61.8 million people in the United States contribute 8 billion hours of volunteerism annually. The estimated economic value of this is $162 billion. In addition to the economic impact, volunteers help strengthen the social fabric of communities by building a strong, safe, cohesive community, by enhancing civic engagement, and by delivering public goods and services—all of which are just as important as volunteering’s economic impact. A vast number of organizations cater to just about everyone’s interests: youth organizations, environmental groups, animal shelters and civic groups are just a few examples of the types of charities in the community. BBB Serving Denver/Boulder reports on over 1,000 nonprofit organizations, and helps volunteers find and connect with nonprofit organizations they can trust. HOLIDAY DECOR
Decorate SMARTER How to dress the house for all of fall BY ELI WALLACE
F
The Harvest Base Warm autumnal hues will feel cozy even as snow starts falling. Aim for a natural base using leaves, dried flowers and cozy elements like blankets. Don’t be afraid to go over-the-top with the harvest theme! Pile on the hay bales, farm equipment (rakes and shovels go a long way) and produce like pumpkins, gourds and even wheat. Decorative squashes last until they rot; one trick to add longevity is to soak them in a solution of 10 parts water, one part bleach for 10 minutes, then let dry and display.
Overlooked Classics Apples, pears and corn are often overlooked in favor of pumpkins, but can add color for little cost. Arrange apples and red pears in a dish with nuts for an easy-peasy centerpiece, or pile colorful corn in a basket for a welcoming porch look. If you’re a fan of whimsy, there’s nothing quite like an oldfashioned scarecrow. Remove the head for a creepy Halloween lawn ornament, and replace for some harvest fun. Owlrelated décor also works for both seasons.
High Impact Do better, not more! Aim for high-impact visual areas, like the front door, dining table and mantel. When you walk into your house, where does your eye naturally fall? That’s prime real estate for a few pumpkins or a dried bouquet.
Understated Spooky For a different take on the holidays, add candelabra to the table and decorate with stark willow branches or pinecones. Apple-green candles add unique harvest color, while darker colors like plum or cranberry add spook factor. These Addams

all’s back-to-back holiday onslaught promises a home filled with spooky ghosts, plump turkeys and evergreen wreaths. But keeping up with holiday spirit takes both time and money during an already hectic season. Luckily, a little forethought and planning can make those Halloween decorations last through the end of November.
Family touches are perfect for Halloween, and the addition of turkey is all that’s needed to bring the look into Thanksgiving.

Painted Fun Trendy painted pumpkins let you change the look midseason. Leave the pumpkins natural during Halloween, and have a painting party in early November. Go big with non-traditional colors and geometric designs to add impact and whimsy. Easy Add-Ins For those with kids, a purely harvest theme might not cut it— after all, the kids want ghosts and ghouls! The trick is to add a few low-effort seasonal touches while keeping the same natural fall base. Avoid anything you have to hang, like lights or fake cobwebs. Tombstones and jack-o-lanterns are easier to add and remove. Make candy the focal point indoors. Sprinkle candy corn (caution: it’ll probably get eaten) on the table or put colorful treats in a clear glass jar to make a centerpiece. By limiting the number of Halloween-specific decorations you put up, you’ll cut decorating in half—and have that much more time to spend actually enjoying the holidays! ✤
