Man-made floating islands on Peru's Lake Titicaca made entirely from totora reeds provide locals, the Uros people, with a home like no other.

The Uros pre-date the Inca civilization and continue to hunt and fish the plentiful land and waters they occupy. Set in the shadow of the Andes, on the world’s highest navigable lake, they make a living from fishing and selling local arts and crafts to tourists.

The tower has 72 residential floors, a panoramic terrace and an open-air observation gallery on the 72nd floor. Opened in July 2012, it is the tallest building in Western Europe and the second in the UK, overshadowed only by the Emley Moor transmitting station.

The exhibition offered a variety of free virtual gardening events, activities for the whole family, exclusive tours, and educational lectures. There were also daily interactive sessions for families who wanted to introduce a little creativity to their gardens, with an exclusive Q&A session hosted by advisors of the RHS (Royal Horticultural Society).

Hidcote Manor Garden // Jardín de Hidcote Manor Located in Gloucestershire, England, this of the most beautiful gardens in the country, as well as being a major influence on the arts and crafts world, more specifically an artistic movement that preceded European modernism in the 1930s and was characterised by the refined use of medieval, romantic and folk artistic impression. The garden is linked by several "rooms", each displaying trees, plants and rare flowers. With so many influential names to choose from, each edition of BBMag will profile a leading figure from the world of music, literature, and art. We would need countless pages to name each and every notable ambassador of Latin culture over time!

To kick off Latinos that Rock! we have selected Frida Kahlo, a Mexican with a fascinating professional and personal life story.

Considered light-years ahead of her time, the painter’s work—inspired by the popular culture of her home country—centres around portraying Mexican folklore, nature, and people, including many self-portraits.

Her catalogue of work was only widely recognised posthumously, as of the late 1970s. More recently, in the early 1990s, she was embraced as an icon by the feminist and LGBTQ + movements.

Magdalena Carmen Frida Kahlo y Calderón was born at the family home in Coyoacán —known as the “Blue House” on July 6, 1907 and died on July 13, 1954. Her father, Carl Wilhelm Kahlo, was a German who, on arrival to Mexico in 1891, adopted a more “Spanish” name, Guillermo Kahlo. Her mother, Matilde Gonzalez y Calderón, was a Catholic of indigenous origin.

Para ese primer Latinos That Rock!, elegimos a la mexicana Frida Kahlo, con tuvo una vida fascinante, tanto profesional como personal.

Considerada una mujer a años luz de su tiempo e inspirándose en la cultura popular de su país, la pintora retrató en sus obras mucho folclore, arte popular y naturaleza mexicana, además de innumerables autorretratos. Su trabajo solo fue ampliamente reconocido y publicitado a fines de la década de 1970 y, más recientemente, a principios de la década de 1990, fue considerado un ícono mexicano y recibido como un ídolo por los movimientos feministas y LGBTQ +.

Nacida Magdalena Carmen Frida Kahlo y Calderón, en Coyoacán, el 6 de julio de 1907 en la casa de su padre, conocida como La Casa Azul, falleció el 13 de julio de 1954.

Su padre era un oficial nacido en Pforzheim, Alemania: Carl Wilhelm Kahlo, quien al llegar a México en 1891, tradujo y adoptó el “nombre español” de Guillermo Kahlo.

La madre, Matilde González y Calderón, era una ferviente católica de origen indígena y español.

She met the love of her life, the Mexican painter Diego Rivera, when she joined the Mexican Communist Party in 1928. They married the following year. Between 1930 and 1933, they spent their time between New York and Detroit.

Frida twice hosted Leon Trotsky at her home in Coyoacán, and, years later, they became romantically involved when she separated from Rivera. Diego openly accepted Kahlo's relationships with women (she was bisexual), but not her affairs with men. Diego had a relationship with Frida's younger sister, Cristina. They were able to get past this as a couple but decided to build a second house next to their first one, connected by a bridge. They remained married but lived separately, meeting at dawn each day.

Frida attempted suicide several times. When she was found dead in her bed, she had been ill for a long time with severe pneumonia and, although her death certificate registered the cause of death as pulmonary embolism, the possibility of an overdose was never ruled out.

The last entry in her diary read: "I hope my departure is happy, and I hope never to return—Frida". Her ashes are kept in the house where she lived, which became the Frida Kahlo Museum.

En 1925, a la edad de 18 años, Frida sufrió un grave accidente cuando el autobús en el que viajaba chocó contra un tren. El parachoques de uno de los vehículos le atravesó la espalda provocando una fractura pélvica.

Esto la dejó por varios meses en el hospital, entre la vida y la muerte, siendo sometida a diversas operaciones para la reconstrucción del cuerpo perforado en diferentes partes. Durante el resto de su vida, la pintora tuvo que llevar varios chalecos ortopédicos. Algunos de ellos incluso fueron retratados en sus obras, como el chaleco de yeso sobre el lienzo titulado La Columna Rota. El accidente también le impidió llevar a cabo cualquier embarazo.

Conoció a su gran amor, el muralista mexicano Diego Rivera, cuando se afilió al Partido Comunista Mexicano en 1928, y se casó con él al año siguiente. De 1930 a 1933, pasaron la mayor parte del tiempo entre Nueva York y Detroit. Frida recibió en dos ocasiones a León Trotsky en su casa de Coyoacán, con quien, años después, tuvo un romance cuando se separó de Rivera. Diego aceptaba abiertamente las relaciones de Kahlo (que era bisexual) con las mujeres, pero no las relaciones de su esposa con hombres. Rivera mantuvo una relación con Cristina, la hermana menor de Frida, hecho que ella descubrió.

Después de la reconciliación con su esposo, Frida construyó, a un lado de la casa de Diego, una igualita, conectada por un puente. Vivían como marido y mujer, a pesar de no vivir juntos. Sus encuentros eran por las noches o al amanecer, en su casa o en la de él.

Frida intentó suicidarse varias veces. Cuando fue encontrada muerta en su cama, llevaba mucho tiempo enferma por una neumonía grave y, aunque su certificado de defunción registró la causa de muerte como embolia pulmonar, nunca se descartó la hipótesis de haber muerto por sobredosis de medicamentos.

En el diario que escribía, estaba su último apunte: "Espero que mi partida sea feliz, y espero no volver nunca más Frida". Sus cenizas están en la casa donde vivió y que se convirtió en el Museo Frida Kahlo.

In 1925, at the age of 18, Frida suffered a serious accident when the bus she was riding on collided with a train.

She sustained major injuries, including a pelvic fracture.

This left her in the hospital for several months, clinging to life and undergoing numerous operations and necessary reconstruction surgeries. The painter had to wear orthopaedic vests for the rest of her life. Some of them were even featured in her works, such as painting A Coluna Partida. The accident also prevented her from ever having children.

Among the multiple films based on her life, we single out two: Frida: Still Life (1986), directed by Paul Leduc, which is shot as if a collage of the painter’s memories before death; and Frida (2002), which is a biopic that features Salma Hayek in the role of Frida and Alfred Molina as Diego Rivera.

Coldplay’s 2008 album, Viva la Vida, meaning “Long Live Life” was inspired by a painting by Frida with the same title.

In Brazil, she is mentioned in the song Esquadros (1992) by the singer Adriana Calcanhotto and, in addition, is the subject of a book in the Argentine series, Antiprincesas (2015).

Even Google honoured her in 2010 by creating a stylised doodle of her self-portrait.

The original paintings of the famous Mexican have fetched incredible figures at auction: in 2006, at Sotheby’s in New York, Roots was acquired for US$5.6 million. Two Nudes in the Forest (The Land Itself), painted in 1939, was sold for US$8 million at a Christie's auction, also in New York

he countries that make up Latin America are as distinct from one another as the region is from other parts of the world. So, what unites them? In addition to geographical proximity and the Spanish language (with the exception of Portuguese in Brazil and French in Haiti), perhaps it’s the culture, the climate, the more relaxed outlook on life than European counterparts. There are a number of familiarities that unite them but, at the same time, many aspects that make them unique thanks to their historical context. This is, ultimately, the charm of Latin America.

Argentina A

rgentina is the second largest country in South America, behind Brazil. Its capital, Buenos Aires, is a popular tourist destination, offering visitors a wide gambit of attractions, from cultural tours ranging from the Obelisk to the La Bombonera stadium, home to the Boca Juniors football team.

Patagonia is another region that is very popular with tourists as well as the city of Ushuaia and the El Calafate region, home to very cold weather and jaw-dropping landscapes, perfect to observe penguins and sea lions. The Glaciares National Park, with its enormous glaciers, is also well worth a visit.

To add a little flavour to your trip, the most famous dish is chorizo steak, a succulent cut almost the size of the plate it’s served on, the empanadas and the all-conquering alfajor.

ith Spanish, Quechua and many other indigenous dialects as official languages, Bolivia is one of the most culturally diverse countries in Latin America and has two capitals: La Paz and Sucre.

A favourite among tourist, Bolivia is home to beautiful and little-explored landscapes as the Sajama National Park, which is nestled close to the extinct Sajama volcano and the Payachata volcano complex (on the frontier between Bolivia and Chile), plenty of the natural wildlife of the Andean region, such as the vicuña, a close relative of the llama and alpaca, and the viscacha, a species of Bolivian chinchilla.

After an active day, how about ordering a majao or majadito? This is a local dish made with dried meat, rice, paprika, fried plantains and a fried egg.

La Patagonia argentina es otra región popular así como la ciudad de Ushuaia y la región de El Calafate que tienen temperaturas muy frías y paisajes espléndidos, con muchos pingüinos y lobos marinos o el Parque Nacional Los Glaciares, con gigantescos glaciares.

Atrae a muchos turistas por sus atractivos precios y albergar hermosos y poco conocidos paisajes, tales como el Parque Nacional Sajama, cerca del volcán extinto Sajama y del complejo volcánico Payachata, en la frontera entre Bolivia y Chile, con muchos animales típicos de la región andina, como la vicuña, pariente cercano de las llamas y alpacas, y la vizcacha, especie de conejo chinchilla boliviano.

CHILE hile has established itself as one of the more economically stable countries in South America.

The most popular destinations are those that cater for ecotourism or historical trips, such as the world-famous Easter Island, where the Moais (giant heads carved in stone) dominate or the Villarrica National Park, in the Andes, home to snow-capped volcanoes and lakes. It is worth noting that the Villarrica volcano is considered one of the most active in Latin America.

When it comes to gastronomy, fish and seafood are the staples and used to create regional delicacies such as Congrio soup, an eel broth made with onion, coriander, garlic, pepper and carrot.

hile se ha consolidado como uno de los países económicamente más estables de América del Sur. Los destinos más populares son aquellos que ofrecen opciones de ecoturismo o turismo histórico. El Parque Nacional Villarrica alberga volcanes y lagos cubiertos de nieve en los Andes. Un detalle importante es que el volcán Villarrica es considerado uno de los más activos de Latinoamérica.

También es popular la mundialmente famosa Isla de Pascua, donde están presentes los Moáis (cabezas gigantes talladas en piedra).

En lo que respecta a la gastronomía, la base utilizada son los pescados y mariscos, en diversas preparaciones como el caldo de congrio, un guiso de anguila con cebolla, cilantro, ajo, pimiento y zanahoria.

In the capital, Bogotá, visitors can find the Museo del Oro, which contains the largest collection of objects from preColombian America. There are plenty of other museums and parks, like Parque Jaime Duque.

For history lovers, one of the most exciting locations is Ciudad Perdida, also known as Teyuna. Recently discovered, Teyuna, which is located in Sierra Nevada de Santa Marta, is the archaeological site of an unknown people that lived 650 years before Machu Picchu.

To make your trip that much tastier, be sure to try patacones, a snack made with fried plantains, or any other local dish made with corn, a vegetable that powers the nation.

Costa Rica C

osta Rica is defined by its wonderful natural resources. From sea turtles returning to the ocean having laid their eggs to tropical birds in full flight, the country is Central America's number one pick for environmental tourism. During the rainy season, another incredible scene to witness is the crowds of brightly coloured frogs searching for mating partners. Whale watching is another favourite attraction.

Costa Ricans share similar culinary tastes to Brazilians, with traditional preferences for foods like rice and beans. A special sauce, called natilla, is widely used to season meats and even as a filling used in breads and sandwiches.

Slightly sour in taste, it can be found in any supermarket.

o que mejor define a Costa Rica son sus maravillosos recursos naturales. Desde tortugas marinas que regresan al mar después de poner sus huevos en la arena de las playas hasta bandadas de aves en vuelo, el país es líder en turismo ambiental en Centroamérica.

En época de lluvias, otra actividad increíble es ver una multitud de ranas de los más variados colores en busca de compañeros de apareamiento. Por no hablar del avistamiento de ballenas, ¡bastante común en la región!

Con platos similares a los brasileños, como arroz y frijoles, Costa Rica seguramente complacerá a todo tipo de paladares. uba is a destination steeped in history and home to stunning scenery. Habana Vieja is a UNESCO heritage site and a hub for Cuban history. If you want to learn more out about the Cuban revolution, led by Fidel Castro, the Museo de la Revolución is the spot.

Now, if beach life is more your thing, get yourself to Cayos, Varadero and Trinidad, where you can sample some of the country’s culinary delights, such as ropa vieja, a Cuban favourite.

Habana Vieja, un sitio en la lista de los patrimonios de la UNESCO, es donde se encuentra la mayor parte de la historia de Cuba. Dominican Republic T

he island of Hispania, the largest in the Caribbean, was where Christopher Columbus first landed in the New World. It is home to rainforest, savanna and mountains, including Pico Duarte, the highest mountain in the Caribbean (3,098m).

The Dominican Republic occupies two thirds of this island (which it shares with Haiti) of white sands and crystalclear waters. Punta Cana is the most popular destination with great options for diving and windsurfing. The capital, Santo Domingo, is made up of 16 cobbled streets and is a UNESCO World Heritage Site on account of its Spanish monuments, such as the Primada de América Cathedral, a Gothic building built over five centuries ago.

The typical plate in the Dominican Republic is one made up of rice and beans, with chicken or meat, accompanied by a salad of avocado and tostones (fried plantain).

In the capital, Quito, several historic buildings are UNESCO World Heritage Sites and the bustling city also has a very lively nightlife.

Surfers will feel well catered for in the quaint and welcoming city of Montañita. It’s a great place for those looking for some rest and relaxation, away from the usual beach crowds.

One of the trademark dishes is cuy—a roasted guinea pig.

It’s also popular in Peru, among communities that live in regions near the Andes mountain range.

hile a small country, El Salvador serves up some headline acts when it comes to natural landscapes, especially those in the foothills of volcanoes.

You can also visit Mayan ruins throughout the country.

El Sunzal is the most tranquil beach, perfect for those looking to escape to a coastal wonderland.

Pupusa is the country’s signature dish, a tortilla made with corn or rice and stuffed with cheese, beans or minced meat. Tortillas made with potatoes are delicious and common in urban areas.

Es posible encontrar algunas ruinas mayas esparcidas por todo el país. El Sunzal es la playa más tranquila, apta para quienes buscan relajar y disfrutar del paisaje marítimo.

GUATEMALA Q

uetzaltenango is Guatemala’s second city and the country’s main historical and cultural centre. Tourists can visit two volcanoes by foot, Laguna Chicabal and (the still active) Santa Maria. In addition, many buildings from the colonial era have been fully preserved and represent a fascinating mix of architectural influences, including German.

Monterrico’s beach is made almost entirely from volcanic ash, so don’t forget your flip-flops or other appropriate footwear as the ground is very hot. If you’re Lucky, you might catch a glimpse of sea turtles in their natural habitat.

One interesting fact: the ancient Mayan people first created chocolate in Guatemala. Other traditional foods include fiambre, which is a rich salad of meats, greens, vegetables, eggs, and fish.

The largest tourist draws are the archaeological sites of extinct civilisations, called Mesoamericanas. Guadalajara is the second largest city and where several of the best-known Mexican traditions began, such as tequila, mariachi music and charros (traditional horseman).

One of the most popular destinations is Cancun, with its crystal blue waters. However, there are several other famous Mexican cities worth visiting, such as Los Cabos, Acapulco, San Cristóbal de las Casas, Chichen-Itzá, to name a few.

Mexican food is popular worldwide: tacos, burritos, nachos, guacamole, chillies, enchilada, quesadillas, salsas, etc.

Mexican gastronomy has actually been designated status as an Intangible Cultural Heritage by UNESCO. One warning though: Mexican food can be very spicy.

n addition to the magical charm and ancient intrigue of Machu Picchu, the city of Cusco, located in the Peruvian Andes, is another hit and was once the capital of the Inca Empire. As such, it boasts countless archaeological remains and is famous for its Spanish colonial architecture. The Plaza de Armas is the central square of the old town, with arcades, carved wooden balconies and ruins of Inca walls.

The Convento de Santo Domingo, a Baroque masterpiece, was built on top of the Inca Temple of the Sun. Arequipa is the colonial-era capital of a region by the same name. Surrounded by three volcanoes, baroque-style buildings are built using ashlar, a white volcanic stone. You can even visit volcanoes without a guide.

Carapulca is a typical dish and dates back to the early days of Inca cuisine: it is a meat stew (usually pork or chicken) made with dried potatoes, traditionally called “chuño” or “papaseca”.

here is far more to Uruguay than Punta Del Este, a famous resort that has always attracted the international jet set. Like Colonia del Sacramento, for example, a city in the southwest on the opposite side of the Río de La Plata from Buenos Aires. It is famous for its Barrio Histórico, an area replete with buildings from when it was a Portuguese colony. To the north of the neighbourhood is the 19th century lighthouse, the Colonia del Sacramento, which offers wonderful river views.

In addition to traditional barbecue, known as parrilla, tourists with a sweet tooth can indulge in Uruguayan dulce de leche—a real treat!

ne of the more pronounced aspects of Brazilian multiculturalism is the country’s diverse and appetising cuisine. Few are able to resist the enticing smell of feijoada at lunchtime, especially when it’s served with the notorious farofa, a mouth-watering stuffing-like combination of manioc flour, nuts and other preferred ingredients, such as eggs and onions. But Brazilians don’t survive just on feijoada. One of the most traditional and cherished ingredients in Brazilian cooking is cassava root, affectionately known as “mandioquinha“, which is mostly served fried, cooked, or mashed. Using traditional ingredients in new recipes is a certain way.

The famous self service restaurants in Brazil are particularly healthy options, for the wallet too, as there are generally two types of service: comida por quilo (food per kilo), where diners pay according to the weight of their food (excluding the weight of the plate), and the à la carte variety, where all dishes carry a fixed price. Both usually offer a wide variety of dishes to guarantee as much choice as possible, including vegetarian options.

However, the jewel in the crown of Brazilian dining is rodízio (which loosely translates as all-you-can-eat), especially when it comes to eating at a barbecue steakhouse. It works in a similar fashion to most buffet meal deals: each customer pays a set amount and is entitled to eat all they want (drinks are paid separately). However, it is perhaps what you eat and the way it is served which is less common. At barbeque rodízios waiters circulate the tables offering diners an opulent array of delectable cuts of meat and, at your request, they carve the meat of your preference right there at the table. Thanks to a novel set of table signs, customers can dictate to staff when they would like to be offered more. The green side to this small table plaque says “Yes, please”, and when shown, indicates that you would like to continue on your carnivorous venture, whilst red, by virtue of the words “No thank you”, means you are having a pause or are completely satisfied.

Entre ellos se encuentra la coxinha, uno de los bocadillos más queridos del pueblo brasileño. Su versión más conocida está elaborada con masa de trigo y relleno de pollo, todo en forma de muslo de pollo. Tan popular como las coxinhas, hay empanadas, panes de queso, croquetas y varios más.

There are always several central figures behind such gastronomic endeavours, but one of the most crucial is undoubtedly the chef. Today, chefs are gaining increasing recognition thanks to shows like MasterChef, a TV programme that, in short, pits several wannabe chefs against each other like kitchen gladiators. It is thanks to platforms like this that various Brazilian chefs have gained international notoriety, and have gone on to promote lectures and exhibitions about Brazilian gastronomy and participate in (or create) international festivals that share the same objective. Several have created exclusive events relating to Brazilian food, or indeed have opened their own restaurants, both of which further help to propel the internationalisation of Brazil’s unique cuisine.

Another well-documented Brazilian indulgency is coffee, with Brazil being the world’s largest producer and exporter of coffee beans, a position the country has held consecutively over the last 150 years. The history of Brazilian coffee, therefore, is a long one and dates back to the Ciclo do Café (Coffee Cycle), which began in the second half of the eighteenth century. Brazilian coffee beans are second to none, enough even to prompt the legendary singer Frank Sinatra to record a song in 1946 in their honour: “The Coffee Song”, the lyrics to which make on-going reference to the exacerbated consumption of coffee in Brazil.

One of the most common mealtime practices in Brazil, particularly after lunch, is to order a cafezinho (“a small coffee”: an espresso) as a means of helping digestion. You might say that coffee works for Brazilians just like tea works for the British. Unlike the “cafezinho”, which is served in an espresso cup, there are other gourmet coffees available in Brazil, which are usually more expensive and ground using more refined beans. There are though, of course, more dayto-day blends, used mostly to make filtered coffee at home to help wash down a welcome slice of cake in a moment of afternoon leniency.

One of the staples is the coxinha, one of the most beloved savoury nibbles amongst Brazilians. In its most recognised form, it is a dumpling made of shredded chicken and encased in a wheat flour dough, which is moulded into the shape of a chicken thigh before being fried. Of similar popularity in such haunts are pastéis (small crispy parcels stuffed with meat, cheese or palm heart), pães de queijo (cheese breads), croquettes and several other goodies.

Vegetarians need not fret either since these steakhouses always boast a scrumptious salad bar.

Among this cast of home-grown Brazilian specialties, there is one that stands out for its freshness amid the oppressive tropical heat: açaí, which is a berry that comes from the Amazon region and is a staple source of nourishment for the region’s inhabitants. You can often find it being sold in kiosks that line Brazilian beaches, as a refreshing antidote to the heat. It is most commonly served in either a frozen form, like an ice cream, or in a juice, and is often accompanied by other fruits, condensed milk and granola.

That said, in some regions of Brazil, like Pará and Amazonia, açaí is also used to make savoury sauces that are served as an accompaniment to hot dishes.

In the UK, açaí is still a relatively recent phenomenon, but one that is gaining popularity. The cold and sweet variant, more common in the southeast of Brazil, can be found in specialist retailers in London, and can even be bought online. The salty version might require a little more determination to track down, but the ingredients needed to make it are readily available.

British supermarkets, mostly London-based given the increasing numbers of Brazilians either living in or visiting the city and the sudden emerging hunger for Brazilian cuisine in the capital, have been quick to diversify their offering to accommodate such tastes. Years ago it would have been almost impossible to find some of the products that today are commonplace. These products include black beans, cassava flour, Brazilian wines, cachaça and guaraná.

Speaking of wine, the UK is Europe’s principal importer of Brazilian wines, which, according to the companies responsible for collating import data, are popular because they contain a lower alcohol content and are fruitier, hence retain the fresh taste of the grapes.

The caipirinha, in turn, helped spearhead Brazil’s burgeoning interest in artisan beers: micro-brewing. This custom also seems to be spreading its roots to the world of spices. Due to its independent and experimental character, each beer can be brewed to the specific preferences and tastes of its maker. In the same way, Brits can now experiment with uniquely Brazilian flavours, and mix them with their usual ingredients to capture a truly new and differentiated taste. Many of the speciality stores that stock Brazilian products, regardless of whether they are pre-cooked to order or in their crudest form, such as black beans, now offer a home delivery service. It has never been easier to eat tapioca (made with tapioca starch and stuffed with a filling of the cook’s preference, usually cheese or

The states of São Paulo and Rio de Janeiro are long-time contributors to Brazil’s gastronomic pedigree, mainly because they are both home to international cities. But what of Minas Gerais, or Espírito Santo? Minas is the rightful proprietor of the legendary pão de queijo (cheese bread) and doce de leite (a pudding made with milk and sugar), while moqueca capixaba (similar to the fish stew of the Northeast, but made without the use of dendê palm oil and with a unique and special red colouring), is the calling card of Espírito Santo.

Finally, gastronomy in the South has been greatly influenced by German and Italian migrants, an influx that helped establish, for example, the culture of pasta and apple pie dessert. This is Brazil’s barbequing capital and, given the colder climes that can chill the state, southerners are never far from a chimarrão, a hot tea made with mate leaves and sipped from a bomba (bombilla in Portuguese), a metal straw equipped with a filter to prevent the swallowing of any leaf fragments.

Brazilian gastronomy is clearly worthy of applause for its constant evolution and adaptation, and is a welcome prospect for anyone wanting to experience one of the richest cuisines in the world.

The Northeast, from the coast to the hinterland, prides itself on a veritable feast of national culinary trademarks.

Some examples included sun-dried meat, acarajé (small fritters made with beans, onion, salt and palm oil, and of direct African heritage), fish moqueca (also of African origin, a kind of fish casserole) and rapadura (a hardened sweet made from brown sugar). Northeastern food is so memorable that the great Brazilian romanticist writer, Jorge Amado, makes constant reference to it in his highly revered books.

This is a recipe I created for Taste of London and uses Brazilian avocados. Then I took it to the largest fruit fair in the world, Fruit Logistic in Berlin, and adapted it as a snack to accompany a cold beer (we were in Germany, after all!). It was a hit! It looks like a sort of vegan “fish and chips”, just without the fish, and with avocado.

Un aguacate pequeño generalmente se corta en 6 tiras, y los más grandes alcanzan hasta 8 rebanadas.

Si lo vas a hacer de inmediato, no es necesario que uses limón. Pero si lo vas a usar después y en cantidad, pon un poco de limón en el aguacate ya cortado para que no se oscurezca.

To make the batter, place the flour in a bowl, before adding the salt and pepper. Gradually pour in the cold beer, stirring all the while with a fork or whisk. The batter shouldn’t be too thick or too thin; it needs to be the consistency of a banana smoothie.

The versatility of caipirinha flavours delights the most diverse palates

othing is more important to the culture of a people than their own cuisine. In this section you’ll find a series of articles on typical cocktails from Latin America, a region brimming with history, culture and tradition.

Starting with Brazil, of course, we need to talk about the famous caipirinha; an easy-to-prepare tropical cocktail, which is already engrained into the country's heritage by signed decree—Nº 4,851, 10/2/2003, recognises the caipirinha as a Brazilian cocktail with alcoholic strength from 15% to 36% by volume, made exclusively with cachaça, lime and sugar). There are several theories as to its origins. The most famous is that it was once a remedy for influenza, created in the interior of São Paulo. The word “caipira” is an old Tupi term used to refer to people from the countryside.

It didn’t take Brazilian creativity long to adapt this recipe to incorporate the abundance of tropical fruits found in the country. And so, the classic caipirinha gave way to the various new recipes featuring fruits like passionfruit, kiwi, cashew, and so on. Given that cachaça is the base, there are very few constrains and so endless options to try. There are those who like it stronger, sweeter, and with less ice.

Regardless of preference, the cocktail is one of the most beloved in Brazil. Before sharing our exclusive recipe, we want to recognise that the international success of the caipirinha is, in part, thanks to the huge effort of bartender Mestre Derivan de Souza to get this cocktail inducted to the International Bartenders Association (IBA).

ow we travel to Peru on our cocktail tour of LATAM. Like all of Latin American countries, Peru has a distinct history and some interesting traits: it was the birthplace of one of the oldest civilizations in the world, the Inca Empire. Geographically, bordered by the Andes and the Amazon, it is a land of unique natural riches.

In terms of this local drink, the grape is the raw material.

Pisco, a word that means "bird" in the ancient Quechua language, is distilled grape. Without going into too much debate about its origin, the Peruvian Pisco Sour, without a doubt, is the best-known variant of the cocktail (there is also a Chilean version, which is not as internationally popular).

The history of the cocktail takes us back to the 1920s, in Lima, Peru’s capital. Morris' Bar in Lima, opened by American bartender Victor Vaughen Morrisse, become a popular hang-out for Peruvian aristocracy and ex-pats.

A local bartender, Mario Bruiget, created the modern cocktail recipe by adding drops of Angostura and egg whites. Since then it has become an international phenomenon. Let's get to the recipe for this iconic cocktail!

The margarita is an aperitif, with the perfect mix of ingredients to stimulate one’s appetite. Tequila is the base, and the cocktail was conceived in the late 1940s, with various stories laying claim to its origin.

Mexican cuisine, with its unique flavours, is one of the most cherished in bars around the globe. One of its mainstays is tequila, a distilled alcoholic drink made from blue agave, a plant that grows in volcanic soils and arid climates. It takes up to 8 years to reach the ideal maturity.

The first time the modern-day recipe was published was in 1953, in Esquire Magazine. Over time, the drink has become increasingly popular, especially in the United States during the 1960s and 1970s. The invention of the electric blender gave way to the frozen margarita.

Let's try the classic margarita:

One of the fundamental characteristics of typical Latin music is the diversity of sounds that represent a huge mix of traditions and people. In other words, the music we consider traditional is the culmination of influences from African, European and indigenous populations, and based mainly in Spanish, Portuguese and Creole languages.

The Tango, for example, is arguably the greatest exponent of music and dance from Argentina. It emerged in the suburbs of Buenos Aires at the end of the 18th century and mixed with Cuban influences. Ever since, it has captured the imagination of fans worldwide and became a symbol of Latin American style, set to both spirited and melancholic songs.

El tango, por ejemplo, es la mayor expresión de la música y la danza argentina. The Tango has influenced many other dance forms, including Cúmbia, a very famous rhythm in Latin musical circles and in particular Columbia. It is generally accepted that the name is derived from cumbé, a word of Bantu origin (an ethnolinguistic group from sub-Saharan Africa) which means party or dance.

In addition to Rumba, bolero is also famous in Cuba and other Latin American countries, especially Mexico, as highlighted by Mexican composer and pianist Agustín Lara who created Bolero-danzón. The song Besame Mucho, for example, was famous for being covered by the Beatles, Céline Dion, Frank Sinatra and many others.

Speaking of Mexico, it is important to mention Mariachi, a word that defines both the musical genre and the groups that present it. Perhaps you have seen them in films or series depicting Mexico: they are those groups of singers/ musicians who wear showy hats and fancy outfits. Playing violin, trumpets, acoustic guitars and Mexican guitars,

Samba is a well-known rhythm that dates back to urban Afro-Brazilian communities in Rio de Janeiro, Brazil, at the beginning of the 20th century. Today, it is responsible for gathering a global audience to watch a parade of more than 70,000 people (on average 4,500 from each one of 20 samba schools) for three days in what is seen as the biggest carnival on Earth. In Chile, the musical genre that stands out is called Cueca, which accompanies common dances or cuecazos—parties dedicated exclusively to the practice of Cueca. It has been the official national dance of the country since 1979, with two variants: Cueca Nortina and Chilota—the first is instrumental only, while the second has a singer. The main instruments used are the standard guitar and the Chilean guitar, which features 25 strings.

Many Reggaeton fans think that the style originated in Jamaica, like Reggae. However, this mix of genres first appeared in Panama, before becoming popular in Costa Rica and then spreading its influence around the world. Combining Spanish rhythms, synthesiser-enhanced electronic music and Reggae, Reggaeton is one of the growing exponents of Latin American culture today.

Finally, another famous rhythm in Central America is Palo de Mayo, which originated in Nicaragua and has considerable influence in Honduras, Belize and El Salvador, among others. Since the 17th century, Palo de Mayo has been performed to celebrate the arrival of the rainy season and life in general. Over time, the genre was influenced by the arrival of Africans and became a symbol of major national celebration.

To discover the range and quality of Latin American film, just take a look at any of region’s film festivals. Among them, the Festival de Cinema Latino-Americano de São Paulo, the Festival Internacional de Cinema de Valdivia, the Festival Internacional de Cinema de Guadalajara, among others. The productions on show are fantastic and fully deserving of the recognition they receive.

Some of the standout winners include: Tesoros (2017, Mexico), by renowned director Maria Novaro; Conducta (2014, Cuba), which is a sensitive look at the reality of school life in Cuba; Mala Junta (2016, Chile), a provocative drama about prejudice in adolescence and politics; Maria llena de gracia eres (2004, Colombia), a drama about a mother in despair; La teta asustada (2009, Peru), which sheds a light on the abuses suffered by Peruvian women.

Unfortunately, to date, only a handful of authors have been recognised with the Nobel Prize (Gabriela Mistral, in 1945; Miguel Ángel Asturias, in 1967; Pablo Neruda, in 1971; Gabriel García Márquez, in 1982; Octavio Paz, in 1990; and Mario Vargas Llosa, in 2010). But that does not detract from the quality of many other notable names. Whether in Portuguese or Spanish, writers constantly strive for recognition in a market that seems to have already forgotten about books. Some authors of note include Jorge Luis Borges, from Argentina; Rubén Darío, from Nicaragua; Jorge Icaza, from Ecuador, among others.

Many works of the 20th century made reference and criticism to periods of military dictatorship. This is selfevident when we consider that most countries in South America have suffered institutional coups that generated, to a greater or lesser degree, political instability. Literature provided one way to circumvent censorship.

Other subjects that are widely discussed are national identities, broader society and people, the transformation of European stories into a Latin context, and even science fiction or terror. It is often misunderstood that the latter is a genre exclusive to English-speaking countries—but this is simply is not true. For example, Brazilian Oscar Nestarez is a celebrated horror writer.

Art Across the disciplines of architecture, fine arts and sculpture, Latin America is home to some very talented artists. The Bolivian Marina Núñez del Prado, for example, was one of the greatest modern sculptors. Much artistic expression reflects the urge (and need) to profile indigenous cultures and the true roots of the continent’s population (as opposed to colonial art, which tended to propagate religion).

One very unique movement was Mexican muralism, led by three painters: Diego Rivera, José Orozco and David Siqueiros. The trio sought to raise awareness among the wider population about the inequalities of living standards among certain tiers of Mexican society in a bid to lobby for greater social welfare provisions.

And then, of course, there’s the art of the indigenous people. Whether in the form of paintings or crafts, they are prized art forms that are essential to maintaining age-old cultures in a world of rapid change.

he year was poised to be a landmark year for the LGBTQ community, with a 2020 event calendar stacked with cultural exhibitions and events open to the general public. This marked a big step for a wide range of art forms, and a very special part of society. Unfortunately, the Covid-19 pandemic had other ideas and, as of March, scuppered any plans for these in-person events. But don’t fret… many of them are now available online.

Many of the artists that were due to exhibit at these LGTBQ events have turned to social media as a means of giving continuity to this important schedule of planned events.

To complement this edition’s other features on virtual events and goings on in the UK, here are our top tips for online attractions designed specifically for the LGBTQ community. Take your pick and enjoy!

Aubrey Beardsley This budding artist, who left us far too early at just 25, is more than deserving of an online exhibition at the Tate. His talent shines ever brighter, mostly through his provocative, erotic and exquisite paintings that shocked London in the late Victorian Era. Victoria and Albert Museum Home to more than 2.3 million artefacts, this Londonbased art and design museum has a team dedicated to curating exhibitions designed to explore the universe of queer, gender and sexuality. The LGBTQ Working Group, for example, helped to identify and analyse relevant arts for the community, sharing its findings through the blog "Out in the Museum". Another event that ended up going digital was the LGBTQ Parade. Although the official event was cancelled in London, in many other parts of the world, such as Brazil, it was either rescheduled or transferred to an online format.

In addition, many artists performed exclusively throughout June to promote and celebrate a month of LGBTQ Pride.

But there was more still, including other online exclusives, such as drag queens shows, conversations with important public figures, interviews with influential actors and actresses, and more.

Today, the number one means of remote communication is Zoom; people are even using the app to host parties from their living rooms. This represents quite a leap forward from the early days of Skype—we now have so many options. Thankfully, we are able to adapt to troubled times and not lose hope, especially those among the LGBTQ community.

Swimming is one of the most beneficial activities for the human body; by using all four limbs, swimming promotes muscle development, which is fundamental for children and adults wishing to improve their overall flexibility.

Other benefits include improved blood circulation, recovery from physical injury, and enhanced lung capacity.

The associated water pressure ultimately means that exercises carried out in a pool expend up to five times more calories than the same activities in a gym.

The history of swimming, therefore, has been one marked by eminent athletes who have often braved uncharted waters in search of fame and recognition. Medical research has also led to the increased use of swimming as a means of physical treatment, such as with injury rehabilitation and arthritis.

Swimming is arguably the most complete sport that exists as it forces each and every muscle to work in unison: ideally it should be part of our daily routine, each and every day!

Let's start with an obvious one: the Peruvian Hairless Dog comes from, yes you guessed it, Peru. Ancient drawings from times of the Incas show that this type of dog has been around for some time. They have no hair, as the name suggests. In addition, they generally come in three sizes—small, medium and large—and are a loyal and intelligent companion.

The Havanese Bichon shares the same lineage as the Frisé, Poodle, Maltese and others. The difference is that it comes from Cuba, hence the

name. Although they can appear a little aggressive—with a high-pitched bark—they have a very kind nature.

The Uruguayan Cimarron probably has Portuguese ancestry. They were abandoned by the colonisers and actually hunted as a wild animal! Those that survived were reincorporated into domestic life by the locals, who still use them as guard dogs and herders today.

And when you hear a snappy, squeaky bark you’re probably within earshot of a Chihuahua. Originally from Mexico, these tiny dogs, due to their size, are delicate and need plenty of attention and care.

Then, finally, there’s the Calupoh from Mexico, a genetic crossbreeding project between dogs and wolves.

With traits common in both animals, they are loyal, fast, agile and always keen to please their owner. They tend to be black but can also be found with a slightly lighter coat.

Desde perros de raza hasta perros mestizos, estas pequeñas criaturas están en todas partes y son de varios tamaños, colores y estados de ánimo.

El cimarrón uruguayo probablemente tuvo como antepasados algunos perros de Portugal. Abandonados por los colonizadores y cazados como animales salvajes, los sobrevivientes fueron adoptados y domesticados por los lugareños, quienes los utilizan como perros guardianes y vaqueros hasta el día de hoy.

Empecemos por lo obvio. El Perro Pelado Peruano proviene, obviamente, de Perú. Inscripciones y dibujos de los incas muestran que este tipo de perro ya estaba presente en sociedades muy antiguas, conservándose hasta la actualidad.

No tiene pelo, de ahí el nombre; además, se puede encontrar en tres tamaños (pequeño, mediano y grande); es excelente compañero e inteligente.

Escuchas ladridos agudos, casi chirriantes. Al caminar un poco más, se encuentra con él, el diminuto chihuahua. Originarios de México, estos perritos, por su pequeño tamaño, son muy delicados y necesitan atención y cuidados.

El Bichón Habanero es del mismo linaje que el Frisé, el Caniche, el Maltés y otros. La diferencia es que nació en Cuba, quien le prestó el nombre de su capital a la raza. Es amable, aunque a veces parece enojado, lo que se nota por su ladrido agudo.
