Fabulous Fremantle Frolic Feast upon Fremantle’s foodie delights Food Loose Tours provide a range of food tours in Perth, in which you’re guided through the city’s culinary gems. We were invited to join their brand new Fabulous Fremantle Frolic, where we were introduced to some of Fremantle’s finest restaurants and cafes.
The next stop was a popular spot among Perth’s vegans – The Raw Kitchen – that dishes up raw food with only fresh ingredients. We were introduced to the restaurant’s vegan ice cream – that contains no sugar, gluten or milk but plenty of flavours including chocolate mint and salted caramel, and coconut and raisin. The Modern Eatery – one of Fremantle’s hottest new eating spots – was up next to treat us to sushi and other Japanese delights. The sushi chef himself greeted us and proudly showcased his special skills before our very eyes. For refreshments, bowls of Japanese style crunchy salad with crispy grated sweet potato were also served. We were then taken to Frank’s Gourmet Meat and Galati A & Sons – two quaint Italian-owned shops.
Frank’s provides fresh meat, pasta and herbs, while Galati A & Sons sells fresh vegetables at bargain prices, as well as tasty Italian desserts such as cannoli and tiramisu. We were invited to shop for 20 minutes in these local businesses, which Food Loose Tours make an effort to support. Much to our delight, we ended our Fabulous Fremantle Frolic with a visit to a liquor store – The Freo Doctor. After roaming the store and ordering a drink, we enjoyed them in the underground cellar with deli plates as we got to know the rest of our group. Food Loose Tours is a must for foodies in Perth. WHAT’S IT LIKE NURSING IN OZ WITH HEALTHCARE AUSTRALIA (HCA)? This month, we speak to Linda Gustini, a scrub nurse originally from Italy, about her experience nursing and travelling in Australia. Now on her second Working Holiday Visa, she reveals all about the amazing destinations she’s visited and how she plans to make her move to nurse in Australia more permanent. How did you plan where you were going to work and travel? In my first year, I set myself a goal to see the whole country in the first 12 months just in case I didn’t get my second year Visa. I planned my travels around Australia and then I got in touch with HCA every time I was in a new place so that I could start nursing. Has working for HCA made it easier for you to see Australia? It’s been very flexible because I could decide when I wanted to work and when I wanted to take time off. You don’t miss out on cool things like you would in a permanent job and need to ask for time off months in advance! How have you found adjusting to nursing in Australia? I found the system very similar to when I was working in the UK so it didn’t take me any time to adjust! Theatre seems to be quite standardised wherever you go and a lot of the policies are similar. Everyone has been so helpful and welcoming in Australia – the nurses here are well trained so it’s been smooth sailing all the way! How has agency work helped you fund your travels? I’ve made enough money in Australia to be able to support myself and save a lot as well. I’ve seen pretty much the whole country in one year and I’ve done all the things I wanted with the earnings 24

I’ve made during my stay. It’s flexible so you can work to save or take longer holidays – it just depends what you want to do! What have been the highlights of your Australian adventure so far? The West Coast was great to experience rural Australia – it’s so nice and wild there, and they have the whitest sand I have ever seen (except for in the Whitsundays!). The East Coast is lovely too! I went to all the national parks, crocodile watching in the Northern Territory, and then I went to the desert. The desert was so cool; I’d never seen anything that vast, empty and beautiful before – it’s stunning! What advice would you give to other nurses who are thinking of nursing in Australia? Do it! I haven’t worked a day in my life because I love my job so much and I’m getting to do it in such a beautiful country. It can be a little daunting at first because you don’t know how different it will be but you know what you are doing – you’re a nurse no matter what! Just enjoy travelling, meeting people and have fun – I love it! Do you plan to stay here in Australia? Yes! I have applied for a permanent visa – a skilled work visa. As nurses, we have the best job ever if you want to travel – and they need nurses in Australia!

A Guide to the Lingo You may think that by moving from the UK to Australia, the one thing you don’t have to worry yourself with is learning a new language. But don’t think you’ve got off that lightly. Over several centuries, those Australians have stretched and played with the English language as if it were a ball of dough, so it’s important to bone up on the sayings and phrases that you will undoubtedly encounter as you make a new life for yourself in Oz. Here are a selection: 1) Arvo. This is short for ‘afternoon’. ‘Morvo’ and ‘Evo’ didn’t catch on. 2) Bluey. This is used for an array of different
things from ‘swag’ (because personal possessions were traditionally transported in a blue blanket covering) to a traffic ticket (because they were originally printed on blue paper) but the most entertaining answer is it is used to describe someone with red hair. Yes, you heard correctly.
3) Boardies. These are the shorts typically worn by surfboarders.
4) Boogie board. A half-sized surfboard. For small er surfboarders. 5) Chook. This is an affectionate term for a
chicken, usually the kind kept as pets rather than the kind you see in the frozen aisle of Coles.
6) Coles. It’s a supermarket in case you were wondering.
7) Dunny budgie. Or you could just say ‘blowfly’.

GET YOUR RSA TO WORK IN HOSPITALITY You won’t be serving any martini espressos without one… In Australia, you need to have completed an RSA to work in a licensed premises that serves alcohol, such as bars, restaurants and hotels. The Responsible Service of Alcohol is a mandatory course, not only required by those working behind a bar, but also security staff, wait staff and reception. In New South Wales, the RSA course can be completed in one day. During the course, you’ll learn all about your legal responsibilities, how to spot fake IDs and how to recognise signs of intoxication and deal with them appropriately. Once you’ve completed the RSA you receive an Interim Certificate from your training organisation that is valid for 90 days. Within this time, you are allowed to work in a licensed premises, but you must also apply for a Photo Competency Card that will last for five years. Your RSA only applies to the Australian state in which you complete it. As each state has its own

individual rules and regulations, you can’t use your RSA from one to another (if you get your RSA in New South Wales, you can’t use it in Victoria), however you may be able to do a bridging course. The RSA makes you legal to work around and serve alcohol. You will not get a job in New South Wales without one, no matter what previous experience you have. Freshwater Fun On Fraser Island It’s about to get real hot on Fraser Island… With summer descending upon us, the Fraser Island rainforest (that grows out of sand, don’t you know?) gets incredibly humid with sometimes extreme temperatures. Luckily, the island is blessed with natural lakes and pools that provide relief from the heat. With more than 100 freshwater lakes dotted around Fraser, there’s every chance you’ll find one that can accommodate your refreshment needs. 40 of these lakes are perched – the water doesn’t come from streams or flow into the ocean, but it is, in fact, rainwater. The most famous of these lakes is Lake McKenzie. A sparkling azure jewel surrounded by trees, Lake McKenzie is about 150 hectares and five metres deep. Swimming in it is like swimming in a very large manmade pool, only cleaner. The water is so clean that the use of sun lotion and soap isn’t advised, as they act as pollutants. While crystal clear, the acidity in Lake McKenzie that means no animals can survive in it – it’s perfectly safe to go swimming in, though. The lovely, soft, white sand, is also a great natural exfoliator. Another of Fraser Island’s perched lakes is Lake Wabby. At 11.4 metres, it’s the deepest on the island, and has much lower acidity levels than Lake McKenzie, making it home to catfish, rainbow fish and honey blue-eye. may be no more due to the bordering sand dune blowing into the lake and eventually swallowing it whole. For nature lovers, Lake Allom is the lake for you. GENTLEMAN’S DUB CLUB “I’ll immerse myself in a big pile of snow”
Gentleman’s Dub Club lead singer, Jonathan Scratchley, reveals just what it takes to pull off their riotous, energetic live show, before they head to the ski slopes of Bansko, Bulgaria for Horizon Festival 2016. There are eight of you on stage during a gig; is it important to bounce off of each other? Literally [laughs] I think that’s a real advantage of being in a band. We’re so lucky that we’ve been going for 10 years and they’re my best friends so it makes it such an enjoyable experience and really pays off when we’re on stage and writing music. Do you play around with your songs on stage? Loads. But it’s funny – sometimes we never talk about it. You all just do what feels right and that’s the real advantage of knowing a group of people and playing with them for a long time. One of our biggest tunes, ‘Emergency’, we recorded and performed the same way for literally five years, and then last summer we just started doing it a bit differently – and we haven’t even spoken about it! I just think that’s amazing! You’re playing at Horizon Festival in Bansko ski resort in Bulgaria. The festival looks mental with thermal pools, underground raves, hot tub cinemas and ski slopes; will you have a chance to immerse yourself in it all? I imagine I’ll immerse myself in a big pile of snow! 74

The plan is to go out for a few days. I’ve been to the resort and it’s really great skiing, a lovely place to spend time. I’m not very good at skiing because I’m tall – but I try! Do you know what you’ll be doing for the set yet? Between now and then we’ve got Christmas, a little tour – I’m not 100% sure what we’ll do, but the chances are we’ll be playing a lot of songs off [latest album] ‘The Big Smoke’. Do you have to up your game at festivals? Constantly. We play more festivals than anything else so we have to up our game otherwise we fall on our arse. It’s so much to do with energy that we can’t allow ourselves to become complacent or assume that it’s gonna go well. So, what’s the craziest thing that’s happened at one of your gigs? Quite a lot of stuff happens… We often have the stage invaded. [We had a] gig in Manchester that was pretty mental. We went for a bite to eat and we came round to the back of the venue and these two riot vans turned up telling us it was over capacity, so I was wondering if the show was even gonna happen. Next, a fire engine comes round – the stairs had collapsed in the venue!

FLUX PAVILION “The first show I ever went to was The Prodigy; I took my shirt off and danced as hard as I could.” Having set electronic fans into a frenzy with the release of debut album, ‘Tesla’, you could say 2015 has been Flux Pavilion’s year. We got to know the man behind the music a little better. Hi Josh, how are you? Very well, thank you. The skies in London are grey and it gets dark at 4pm – my kind of weather. Where in the world are you right now? Sitting in the chair at my hairdresser’s – Butchers on Hackney Road Cool! So, 2015’s been a big year for you having released your debut album, ‘Tesla’; what did you want it to say about Flux Pavilion? The main concept was defining Flux Pavilion to myself. It’s interesting to be living in an industry that changes every day; it was nice to try and define a point in time that collects all my ideas from the past few years and all my ideas for the next few years. You followed the album release with a mammoth US tour. What have you had in store for ticket-holders? My set has been mainly about presenting the album in its own environment. A lot of the music was written as I was playing it out so the live experience is a big part of the process; I also played some guitar and sang a little just to make it different every night.
How do you cope with the demands of touring? Do you have any rituals? I’m a pretty quiet guy for the most part so I tend to find as much relaxation as I can. Before I go on I like to collect my thoughts and take a deep breath. Performing for me happens on stage, the rest of the time I prefer to hang back. Who are you championing in electronic music right now? I’m currently listening to Rustie’s and Grimes’ new records. Our new signing to Circus, Diskord, are really working it right now and the new Engine Earz album is amazing. What was your first ever club night or festival experience? The first show I ever went to was The Prodigy; I took my shirt off and danced as hard as I could. It was really empowering to experience so much freedom surrounded by people and it was the music that gave me that. I’ve always aimed to give as many other people that experience as I can. What shows stand out for you in 2015? The EDC shows this year have been amazing. It’s kind of over the top and fabulous, which are high on my list of loves. And what can we expect from you in 2016? I’m in the studio working on so much more music, so I’m anticipating releasing a lot next year, which means more touring too!

Following the release of his fourth album, ‘Claustrophobia’, on his very own Hotflush label, and returning to Australia for small shows in top venues, we speak to Scuba about the past, present and future… We’ve been listening to your back catalogue; do you ever listen back to any of your old stuff? What are your thoughts on it now? [Laughs] Very occasionally. Actually, when I was making ‘Claustrophobia’ I listened back to my first three albums and was surprised to find that I liked the first one, ‘A Mutual Antipathy’, the most. I’ve thought a lot about how to get back to that way of making music; not so much in a stylistic sense, more about being in that kind of headspace. Your live shows are bringing you to Australia this December; will you get to make it into a bit of a holiday? What can ticket holders expect from your current show? Sadly, this time I’ve only got a few days to spend in the country. I’m looking forward to playing some smaller shows after having done festival tours the past couple of times I’ve been over. I hope people can expect a great set… and not too much of a jet-lagged one! And there will be a lot of techno… even during the day! You’re playing three shows during one Saturday, including the Chinese Laundry Garden Party in Sydney and HOLEANDCORNER in Melbourne; with such a 76

schedule, is it hard to keep up with where you are from one day to the next? Yes, that day is definitely not a typical one for me, but it should be a lot of fun. Touring can get a bit hectic, it’s true, but it’s ridiculous to complain too much about that kind of thing. I’ve had day jobs in the past so I’m well aware of how lucky I am to be doing what I love and getting paid for it. What destinations and performances have stood out for you in 2015? I had a great time at Labyrinth Festival in Japan this September – that’s the best festival in the world in my opinion. I’ve enjoyed playing and travelling in Italy this year, especially parties at Bunker in Turin and Cave in Gallipoli. And, of course, Berghain in Berlin, where I’ve been lucky enough to play five times this year. It’s still a very special place. If there was anywhere you could visit next year – to tour or travel – where would you pick? I want to do more in South America, especially Brazil and Argentina… so hopefully that’s going to happen!

Leaving South Africa for Switzerland at a young age, what were your musical influences growing up? I miss being in the wilderness and in that beautiful nature. Ever since we moved I have always travelled a lot and I think that is what influences my music quite a bit. Regarding genres, I pretty much listened to everything. From classical music in very early stages, to rock and grunge later and even hip-hop before electronic music. How did the move into house music come about? Was it natural for you? In my family, nobody ever really appreciated house music (including me!). We were more into real bands and instruments… But then I ran into friends who had their own studios and opened my eyes. I wasn’t aware before how experimental you can be, how “real” the music can sound. I wanted to know more and more about it and started playing around myself. Where does the name Nora En Pure come from? What does it symbolise for you? I just needed a name back then, I wasn’t sure what would ever happen with this music so I
just chose one. It should be something short but still special in case it would ever turn out into something bigger. And now I’m grateful I chose this name, as it’s unique. There’s nothing in the world that has this name. How can someone in the crowd grab your attention? I try to look into people’s eyes when playing. If I see they are having fun it makes me super happy. However, seeing them on their phones, even if it’s taking pictures or filming, it’s less nice. I think most DJs would prefer for their audience to dance and enjoy it, rather than being caught up on their phones. What lessons and experiences have you taken from playing on stages at Ultra Music Festival and Mysteryland? The U.S. is quite different from Europe and the rest of the world when it comes to club music. I feel they mostly wanna have a good party, an energetic set. My music however is quite chilled so I had to find ways to present my music in a way that keeps them busy! If you could make one thing happen in 2016, what would it be? Touring is the most awesome thing ever but sometimes you miss important things between family and friends. In 2016, there will be a couple of important family events, so I pray they don’t fall on the same dates as important festivals or tours!

Four Tet BBM’s Electronic Artist Of The Year, 2015
Kieran Hebden may not be a household name to many but his pioneering musical creativity will have ricocheted around your eardrums at some point. Hebden has been using the pseudonym Four Tet since 1998, transforming his sound throughout the years. Fusing hip-hop, electronica, free jazz and open folk strings with house, he creates a sound that is uniquely Four Tet.
His desire for independence made him leave his record label, so with no manager, he books and organises most tours himself. He managed to get all his songs taken off Spotify, he shies away from the limelight and his priority isn’t selling records, explaining to Groove: “Saying no to big companies isn’t necessarily bad. I just need to follow the things that feel right and true to me.”
Hebden’s music is notable for its rich sounds and harmonious melodies as well as for eschewing the traditional pop songs in favour of a more abstract approach. Hebden’s second album, ‘Pause’, is his most popular to date, on which he takes on folk and electronic samples coining the genre Folktronica. However as with all of his records, he is now ready to move on from Folktronica as he feels he has said what needed to be said, telling The Guardian earlier this year: “I want to be able to look back when I’m an old man and have these records tell a story.”
Despite this, he is no stranger to collaborations, working with some of the most ground-breaking names in music including numerous projects with Thom Yorke and remixes for Aphex Twin, Super Furry Animals, Radiohead, Manic Street Preachers, Sia and Black Sabbath. In 2008 he joined up with composer David Arnold to write ‘Crawl, End Crawl’ for the end credits of ‘Quantum of Solace’, finding himself part of the hugely successful James Bond franchise.
The 37-year-old utilises sounds that are part of his culture and uses them in the most unlikely way possible. His new album, ‘Morning/Evening’, is inspired by his Indian roots. He inherited a collection of movie soundtracks and devotional vinyls from his late grandfather but it wasn’t until his grandmother passed away years later that he listened to the records. Slowly becoming obsessed, Hebden weaved the sound into his own. Besides his unique and ever-changing sound, there are a few things that set Hebden apart from other artists.
One thing that’s for sure is Hebden loves playing live. In clubs, he purposely keeps tickets to his all-nighters low in order to support serious club culture rather than exploit it. The rest of 2015 will see Four Tet embark on a US tour before he heads to Australia for Let Them Eat Cake on New Year’s Day. Held at Werribee Mansion in Victoria alongside Ben UFO, Âme and Daniel Avery among many others, ticket-holders can expect a spectacular Four Tet set to welcome 2016 in style.

Hailing from London, electro veterans Hot Chip have announced that they will be performing four shows across Australia. Famous for making rocking dance floors around the world, the charismatic quintet will be performing headline shows in Sydney, Perth, Melbourne and Brisbane in January. The group that owned the late noughties - when they first broke into the mainstream back in 2006 with their sophomore album ‘The Warning’, it was clear that the synth-sensation were going to be a force to be reckoned with. The troupe quickly became known worldwide for their defiant drum beats and velvet smooth rhythm and began climbing the charts two years later with their third album Made in the Dark, which soared to #4 in the UK. Some of their biggest and most memorable tracks include ‘One Life Stand’, ‘I Feel Better’ and the catchy ‘Over and Over’.
Fast forwarding to more recent days, following their sixth studio album release earlier this year, they recently brought out a 4-track EP containing an epic, 7-minute-long, reinterpretation of rock legend Bruce Springsteen’s ‘Dancing in the Dark’. Appearing at their Brisbane and Perth slots will be the New York based singer song-writer Empress Of, who only just released her first album in September this year but rapidly gained recognition, earning a four star review from the Guardian. Airbnb The New Tinder It turns out, even users of Airbnb only have one thing on their minds – and it’s not where to find a bedroom that has WiFi. Guests and hosts have admitted to using the accommodation booking site to find others that they find attractive, with some hosts even admitting to preferring single guests. Not always premeditated, hook-ups appear to be happening all over the world, from France to Brazil. One lucky 25-year-old fella from London described his experience with a 36-year-old Brazilian, divulging, “We had amazing sex. Mind blowing. Sheen’s Not Winning Anymore

The news we were all expecting finally came to light in November: Charlie Sheen has HIV. In an interview with Today host, Matt Lauer, the former Two and a Half Men star admitted to having the disease and spending “upwards of $10 million” trying to keep people quiet about it – money well spent, clearly. Since the revelation, there have been rumours of sex tapes showing the actor smoking crack and performing oral sex on a man – which truly gives a new meaning to Eight Men Out. He could also be facing lawsuits from former lovers (including porn stars and hookers) who claim he never told them about the virus. Looks like there are going to be a few thousand awkward phone calls made this month…
In perhaps the greatest of great escapes, an 11-year-old girl was found 1000km from home after being handcuffed by police and running away. Arrested at Tennant Creek Primary School in front of her classmates for property offences, the girl was put in handcuffs after becoming “uncooperative and aggressive”, and somehow ended up near Darwin. How she got there, we don’t know (we doubt even she does growing up in Tennant Creek), but neither do the geniuses at NT Police.

A Case Of Mistaken Identity We all know that the spiders in Australia are pretty menacing – us Brits bang on about it enough, but we doubt even we would have reacted so badly that the police had to be called. This is exactly what happened to one bloke in Wollstonecraft, NSW, who had police knocking on his door due to reports of a “violent domestic”. Numerous calls reported to hearing a woman screaming, a man yelling, “I’m going to kill you. Die! Die!”, and sounds of furniture being thrown around. Turns out, the guy is just a pussy and “really hates spiders”. Oh, and he screams like a girl.
