CO LI N FASSN I D G E From Dublin to Sydney, Colin Fassnidge made a life for himself as one of the city’s finest chefs. With two successful restaurants, cookery books and a place on the My Kitchen Rules judging panel, he’s a role model for anyone looking to live and work in Sydney. Here, he tells us how it all happened and what he makes of the hospitality industry today.
It’s a lot less up itself! It’s a lot easier to eat out, a lot cheaper, but you can eat really great food cheaply and get great service, whereas years ago it was a bit more stuffy. And there are so many nationalities as well; it’s a melting pot, which is great. How does it compare to other cities around the world?
I would compare it a little bit to San Francisco. I went to Paris last year to do Omnivore, a food festival, and I didn’t really want to go because they’re quite caught up in the rules of cooking, similar to London, where they use the same ingredients for one dish, whereas Australia is still finding itself. Sydney’s a lot more exciting. What’s your ethos on food?
Nose to tail – we buy the animal whole and try to use all of it. We also offer value for money, we don’t want to rip people off or do anything too trendy, and people enjoy what we do. What advice would you give to someone from Ireland or anywhere overseas that wanted to use their skills and bring them to Australia?
We sponsor a lot of Irish and English because they’ve got a good work ethic – the Aussie chefs haven’t really got a good work ethic until they go to Europe and then come back. It’s a different working atmosphere in Europe, they work hard and fast, and I’d say to just bring that working attitude with you, because you’ll get a job easily; they love chefs from Europe. 10

What are the biggest challenges when moving to Australia, making a success of it and keeping that success?
The biggest challenge might be to have too much lifestyle! That’s why everyone lives here because you work just as hard as you would in Europe, but you’ve got this lifestyle. And to keep it, you just work hard and realise it’s not all about the money. Use the guys that can teach you something – it’s a lot better than getting the high paid jobs that serve crap food, because in five years time you’ll still be doing crap food. What do you do to enjoy the work/life balance in Australia?
I’ve got two young children and I live at the beach, so a lot of it revolves around that, especially in Sydney. There’s a lot of outdoors time and I spend a lot of time on my motorbikes. It’s just like any coastal area where it’s sunny. There’s a lot of time around water. I do scuba diving and a bit of spear fishing and swimming. 1. Hire a Bike
Scattered across Melbourne’s CBD you will find 51 ‘tourist friendly’ bike stations that offer daily hire for just $2.90 per day. The city is bicycle friendly with lanes running along Yarra River, through the Botanic Gardens, in and out of the city streets and through to the outer suburbs.
2.Get lost in the laneways
There’s a certain mystique and secrecy about the many graffiti and cafe lined laneways hidden in the streets of Melbourne’s city. Here, he offers up some helpful information on how you can start working behind a bar in Sydney, Australia. What is the bar industry in Sydney looking for from new applicants?
There are so many people out there who work in bars, that it’s a matter of sorting through the CVs and finding the ones that show promise or show that they’ve got the skills to step in and start without too much trouble.
By promise, is it enough to just show enthusiasm?
Basically, you can’t train personality – if you’re looking at two job applicants, both have little to no experience in a bar, but one has a cocktail course under their belt, it shows that they’ve gone out and sought information and tried to better their skill set.
As no one can work in a bar without a Responsible Service of Alcohol certificate, what steps do you suggest them to take?
Get the RSA before you even start applying for jobs. The BarMax Bar Skills Course teaches the basics, then the BarMax Cocktail Course takes that and builds on it. Many bars have got cocktails

in them these days and it’s good for someone to have half an idea of what they’re stepping into.
How would you advise someone to apply for a bar job?
In person is always going to be the best way – face time with the manager, present yourself, and show that you’re keen. You can now find most jobs on a Facebook page called The Sydney Bartender Exchange – a handy little resource.
Would there be training involved?
There’s always going to be a trial shift to see how people work, whether they gel with the crew, and to find out whether they would actually like to work with you! Bars that have a bigger group will have more of a training programme; groups like Swillhouse and Merivale invest in training.
How would someone fair moving from somewhere like London to Sydney?
The cocktail culture in the UK and in London in particular is so much more developed than in Australia. There are great bars and bartenders, but the general populous in the UK would know so much more and drink more often than in Australia. Even if you think you don’t know that much, you’re already a step ahead of someone who has grown up in Australia. NICOLA GRACE: ON HOW SHE BECAME A BOWER HEALTHCARE NURSE & MADE THE MOVE FROM THE UK TO AUSTRALIA Like many overseas nurses looking for work in New South Wales, Nicola Grace has signed up to Bower Healthcare. From starting her application in the UK to moving to Cronulla six months later, here she tells us how easy and efficient they made her move to Australia. What attracted you to apply to Bower Healthcare? When I was still living in the UK and considering making the move to Australia, a colleague told me about her time working for Bower Healthcare in Sydney. She had really enjoyed working for the agency and suggested that I get in touch with them myself. What experience and qualifications were they looking for? I found it very similar to applying for a job in the UK; I had to provide a CV showing experience and qualifications relevant to the area of nursing that I wanted to work in, along with referees. I also had to register with AHPRA, the Australian equivalent of the NMC, and provide evidence of screening for various diseases, such as TB and Hep B. Were you in Australia or overseas when applying? I was still in the UK when I originally contacted Bower Healthcare and I explained that I was planning to arrive in Sydney after travelling in Asia and South America for around six months. Graham Bower was very quick to respond to my email, and suggested that I stay in touch during my travels, with a view to completing my application on arrival in Australia. I did contact the agency towards the end of my trip and then Graham explained the steps I could start taking to speed up the process once I arrived.
How regularly did you receive contact from Bower after applying? I had lots of questions before I arrived, about the kind of work I might be able to get and the practicalities of working as an overseas nurse, so the agency responded to explain more about this whenever I had a query. Within a few days of getting to Sydney, I had an appointment at the agency where we went through all the compliancy and paperwork that I needed to complete. We came up with a simple list of tasks, such as applying for a tax file number and organising my medical records. I’m now waiting on a few things to come back before I can start work in a couple of weeks’ time. The agency has been in regular contact since I arrived, providing advice and keeping me updated on the progress of my application. How has your experience been looking for work with Bower Healthcare? The agency has been very involved in helping me to apply to join them and to get work once I am signed up. They have explained everything clearly all along, supported me to settle in to working a new country with a new healthcare system, and they have assured me that they will be able to find me the shifts that I am looking for. Do you feel secure working through Bower Healthcare? I do feel secure working through the agency. Doing casual shifts is obviously different to finding a permanent job, as I will not have contracted hours, but I am confident that I will be able to work where and when I want to through the agency. Time to Submit Your 2014-15 Tax Return
The new Australian tax year began on 1st July, so it’s now time to submit your 2014-15 Tax Return. If you don’t know where to begin, we’re here to help. When you start working in Australia, you need to apply for a Tax File Number and give it to your employer. It’s important to get your Tax File Number as soon as you start working, otherwise you may have to pay emergency tax, which will take a great, big 45% of your earnings, but you can claim this back. While you’ve been working, you’ll also have been paying into a superannuation fund, which is about 9.5% of your earnings, and you have the right to claim this back if your visa expires and you leave Australia. If you’re a non-resident, you will pay 32.5% tax on your income. By submitting a tax return, you can claim back on work-related expenses, but these must have been paid for by you and not reimbursed, be related to your job, and you need records to prove the expense in the form of a receipt. If the expense is for professional and personal use, you can claim a deduction for the professional use only. So what comes under “work-related expense”?
Travel
You can claim for travel expenses that are directly related to your work with the exception of your regular commute between home and work. For example, you can claim for the cost of travelling between two separate workplaces or from your normal workplace to an alternative workplace. 30

Clothing
You can only claim for clothing that is specific to your job, that you can’t use everyday, and that makes you recognisable for that job, for example high-vis jackets, steel-capped boots, chef checked trousers and aprons. The clothing must also have been paid for by you and may require evidence of such. You can also claim cleaning costs for clothing that is specific for your job.
Electronic Devices
If you use your computer, phone or any other electronic devices for work purposes, you may be able to claim back a deduction of the cost of the device and the cost of running it e.g. phone calls, repairs to office furniture, and electricity. If you use your computer half the time for personal use and the other half for work purposes, you can only claim for 50% of the cost.
Tools
If you buy tools for your work and aren’t reimbursed by your employer, you can claim for some or all of the cost. These include computers, desks, chairs, filing cabinets, power tools, protective clothing and equipment and technical items. You can also claim back the cost of repairing and insuring these items. To me this isn’t work; it’s life, just on a much bigger scale when you’re looking after 100-150 people a week. Being a part of this island family has made me ridiculously happy; to be a part of people’s memories of their travels, to feed them, to make them smile and share the island with them makes me buzz with happiness. People walk away inspired to be more natural in their lives, whether it be a promise to themselves to not slap on the make-up everyday or simply to walk bare foot and pick up rubbish when they see it on the beach. After the success of 2014’s debut weekend edition, it will be taking over Port Hedland Turf Club on Friday 21st and Saturday 22nd August, and Port Hedland Civic Centre Gardens on Sunday 23rd August for the Sunday Sundowner. This is a great excuse to travel to this beautiful part of Australia. Manta Rays
Gracefully swimming through the shallow lagoons on the Ningaloo Reef, Manta Rays are beautiful to watch. Their nearly seven-metre width makes them appear formidable, but with a placid nature and minus the sting in their tail, travellers to the Ningaloo are able to snorkel in the water with them.

Western Australia is filled to the brim with exciting wildlife encounters. So here’s just a handful of creatures you can hope to meet whilst touring Australia’s largest state. Whale Sharks

gili islands A trio of paradise islands located off the northwest coast of Lombok, the Gilis were once legendary among backpackers exploring the next big step on the banana pancake trail. For many of us, train journeys are something you have to take to get from A to B, but the train between the cities of Jodhpur and Udaipur in India is something a little out of the ordinary. Travelling through the scenic Kambli Ghat Pass near Jojawar, Rajasthan, this is not a tourist train, but one that locals use everyday. As a result, if you do get to board, you can enjoy interesting conversation with them (well, if your Indian or their English is any good), as they try to suppress their surprise and excitement of meeting someone from overseas. least. If you seek local, cultural experiences while travelling, the Kambli Ghat Pass will tick all of the boxes. While it’s not a tourist train per se, the Kambli Ghat Pass is still a picturesque ride through the beautiful hills and forests of Aravallis and the Aravali Range as well as desert-like landscapes, with one very memorable surprise guest. The train makes a scheduled stop to feed Langur monkeys, and these greedy devils know exactly when and where to jump on board. The passengers hold out biscuits for the monkeys, but these hungry primates can get aggressive, so there are bars across all of the windows. Now, you wouldn’t see that on the London Underground…
The Blue City
To say that Jodhpur leaves a lasting impression would be doing it an injustice. The second-largest city in Rajasthan is looked down upon by the great Mehrangarh Fort, 100ft tall and 400ft above the skyline of Jodhpur. Today, it may be best known for featuring in Hollywood movie, The Dark Knight Rises, but this imposing and muscular structure
holds some of the finest palaces in the state, and its museum preserves priceless relics of ancient India. Most striking of all is its red sandstone colour contrasting with the beautiful blue of the local houses, giving Jodhpur the nickname The Blue City. Theories behind the choice of colour range from its connotation of Brahmin to its use of repelling insects – but, whatever the reason, it’s certainly led many travellers to wander the old quarters and has as a result become the tourist hub of Jodhpur. INTERVIEWS Hi Russell, how are you? I’m very well, thank you. Very happy to be doing an interview with you for British Balls Magazine!

So, Trew World Order… Yes, that’s the name of this tour.
Do you travel much? A fair bit, in the last little bit of time I’ve been to Vancouver and Marrakesh making a film with Nicolas Cage playing the part of God! I’ve been on holiday to the Caribbean – I get around a bit.
What would be your New Trew World Order? Well, I’m just trying my best to live in it by showing off and making jokes. Really, what the whole thing’s about is trying to deal with the problems of our time of inequality and ecological meltdown. These are the priorities. Will you tailor the content to an Australian audience? Absolutely, completely. The point is to galvanise the people of the areas that we’re visiting. So we’ll talk about Tony Abbott and that mad agricultural minister, Barnaby Pipkin or whatever he’s called, and bespoke solutions for Australia are very much the order of the day – and jokes around the stuff in Australia news, definitely. Will it be a stand-up or will you encourage discussion and debate from the audience? Not during the show, no. I expect people to sit quietly or roar with laughter when required. It will certainly be provocative and inspiring and engage people that are already doing stuff in communities in Australia. The point of it is to bring people together and stir people up. You’ve visited Down Under numerous times before, so do you know what you’ll be getting up to when you’re not on stage? Not yet, no. I haven’t got any plans yet. What should I do? Well, do you like coffee? Yeah, I bloody do. You should definitely try some of Melbourne’s world-famous coffee. Right, I’m gonna neck a lot of coffee in Melbourne – I’m gonna get buzzed. What would be your ideal holiday? I like getting lost with people. I’m really interested in going to Latin America and learning about
You returned to film with The Emperor’s New Clothes; as a documentary touching on the subject of bankers’ bonuses, what were the biggest struggles you faced? To be honest, it wasn’t a struggle, it was really good fun to film. I was working with Michael Winterbottom who’s such a brilliant filmmaker that it was pretty easy. It’s a subject that I’m interested in and that I was fascinated to learn more about. The struggle is the people that you meet, that are losing their jobs because of the financial crash or unable to get educated, you talk to them for a while and then you leave. I feel like, “Oh, God, this isn’t really good enough. We should be doing more.” Was it eye-opening? Always, yeah. Not that I’m oblivious to the struggles, I’m aware of it, but it was certainly interesting to experience first-hand, to go round people’s houses and hang out with them and see what struggles people endure. So Russell, what gets you out of bed in the morning? Ermm, the cat. Do you know what I like to do now? I go on runs and climb over things, meet new people and go into churches and wander around freely. Really, it’s a revolutionary act to just jump over someone’s fence, explore space and step outside of the prescribed lines of the city. Is that easy for you being the popular figure that you are? As long as I run quickly. there – I think everybody in England has got family in Australia! We’ve got good memories of good weather, good food, the ocean – and I can’t wait to get back. What are you looking forward to seeing when you return? We’re just looking forward to seeing the audience’s faces, playing them some music and enjoying the privilege of what we’ve got. It’s a wonderful feeling. Maybe we can get some Australian live music, because there are some great bands in Australia in the hotels, bars and clubs.
UB40 Original UB40 member and saxophonist, Brian Travers, chats to us about the Reggae group’s new album and Australia tour this coming November. Hi Brian, how are you? Good, thanks! You’re touring Australia in November; how are you anticipating it? We’ve been four or five times before, and we haven’t been for about five years, so we’re really looking forward to it. What memories does Australia hold for you? Well we first came in 1980 and we hadn’t really been many places when we were kids, and UB40 was the first band we’d ever been in. Our first record was a hit and it was like a dream really! It took us all around the world. The first time we went to Australia, we landed in Sydney and had a few days off, and we couldn’t believe that by making a record we could travel all over the world. It’s been like that for 36 years. We’ve always had a nice time in Australia and we’ve all got family 72

You’re also heading back into the studio to record a new album… We are. There’s a new initiative started called Pledge Music, where somebody buys your record before they’ve heard it – before you’ve made it even. That’s generally the way it works; when you go into a record store, you haven’t heard the whole record. It’s a way of refinancing the recording industry and it seems to be working. We’re looking forward to it; we’re making music, that’s what we do. Will it be completed by the Australian tour? I don’t think so, you know. We’re starting in September – we’ve got a bunch of song ideas written, but I don’t imagine it will be finished and mixed by the time November comes. It probably won’t be released until 2016. If there’s anything finalised, we might play something in Australia. We’ve had 40 top 30 hits. We’ve had as many hits as the Bee Gees and Status Quo – which seems ridiculous, I know! We can’t just play hit records at a gig, it would be like a cabaret show, so we try and be eclectic and do stuff from the past and stuff people have never heard with a few surprises.

GENGAHR Gengahr are a fourpiece Indie-Psych-Pop band from London making their first visit to Australia for Splendour In The Grass. Having just released their debut album, ‘A Dream Outside’, we had a chat with frontman, Felix Bushe.
You’ve toured with Wolf Alice, The Maccabees and alt-J, and you’re touring non-stop throughout the European summer, how much have live shows contributed to your fan base so far? With support shows, you hope that you’re playing to a receptive audience and potentially you could take some fans home with you – not literally, obviously – your music sinks in and they then go and see you play on your own or listen to your music. That’s a battling process, a war zone for all bands, trying to gather fans after a show. And we know that we have to tour and play as many shows as possible. If you look at the bands that have been successful in the last five years, they’ve had relentless touring schedules, and that’s what we’ve got to look forward to if we want to make it work. You have a visit to Australia for Splendour In The Grass; is this your first visit or tour of Australia? It’s going to be the first time any of us have been to Australia, which is really exciting. It’s probably the furthest I’ve ever been away from home – in fact it’s definitely the furthest! We did SXSW in Texas recently and that was our biggest trip so far.
That’s one of the nice things about the band at the moment is that we’ve got to travel a lot and see a lot of places we’d never have seen. We’ve done extensive touring of Europe and now we’re on our way to Australia, and I love it. What sort of things would be on your Australia bucket list? We have been joking about it but we’re all terrified of sharks so swimming with sharks would be kind of amazing. I’m fascinated by them but also terrified of them, so that’s definitely got to be up there. We often put on David Attenborough documentaries in the van, and Australia’s wildlife is far more exciting than what we get in the UK so that’s one of my biggest interests to see some pretty gnarly animals! Having mentioned gnarly animals… Did you name yourselves after a Pokémon? Yeah. Why? Initially we were called RES, but there’s already a rapper called RES so we had to change our name due to copyright infringement. When we changed it, we were all thinking of new ideas and everything sounded so pretentious and annoying, just putting two cool words together to make something random. It was pretty dumb anyway so we thought about just picking our favourite Pokémon. We went with it – we changed the spelling of it slightly because we didn’t want to end up getting sued again!

So, ‘A Dream Outside’ dropped in Australia on 12th June! How are you feeling now it’s finally out? It’s just nice to have it out; we feel like we’ve been sat on it for a while. We finished it in December and there’s quite a long wait and you want people to hear it. People have said kind things about it so I’m just excited to see it in record shops.
MAMBO BROTHERS The Kings of Ibiza, Christian & Alan Anadon are the Mambo Brothers. With the Ibiza summer season in full swing, we caught up with the duo to find out more about the routes of the world famous Café Mambo, DJ selection, secret spots and taking Mambos on tour.
Sounds like bliss. Being based in arguably the best location in Ibiza for sunsets and DJ sets are there any moments that you just won’t forget? First time Sasha came to play back in ’95, Roger Sanchez in ’98, Axwell, Sebastian Ingrosso and Steve Angello as Swedish House Mafia in 2008, Carl Cox playing the keyboard with the Brand New Heavies – there are many of them! Also, the first time we tasted our first Bottle of Mambo Hierbas with Eric Prydz. Who selects the DJs that will be playing each season? The way we do it is when our DJ friends are on the island, we call them and if they able they come down to play some records… It’s never been too formal. Is there anyone that you have still not yet secured to play? To be honest, we’ve been very lucky to have from the beginning DJs like Sasha, John Digweed, Pete Tong, Carl Cox, Jeff Miles, Roger Sanchez and nowadays thanks to all this history of DJs, the new scene of superstars DJs like David Guetta to Tiesto, Guy Gerber, Steve Aoki, Calvin Harris, Solomun… still supporting what we do.

Who do you think will be the highlight of this summer? There are going to be many highlights this summer, to name some, Aoki with Friends on Mondays, Bob Sinclair on Saturdays is always very special as you can even expect some 8’0s disco mixed up with deep house, which creates a super great vibe! Fatboy Slim in August, Eric Prydz in July… So you’re now taking Mambo on tour; how is it, and are you planning another one? What was a highlight? Well, we started with Mambo on Tour at the beginning of 2013, and last year it took place in more than 40 cities around the world, it was really, really successful – we didn’t expect this. The tour still goes on, and now we’ve been invited to host our own arena which is amazing! Having grown up in Ibiza, are there any secret spots you like to get away to from the partying? Cala Gracioneta, a small beach close to Punta Galera – it has a restaurant with fantastic paellas… And of course Formentera. Where’s your favourite local/traditional place to eat on the island? Can Cosmi, in Santa Ines. Being the number one world party destination, what’s your favourite part of the season? Here, he speak to BBM about his new album, his European summer and creating calmer tracks…
Where in the world are you right now? I’m in Paris airport waiting for my flight. ‘Love Somebody’ is a chic, fresh and captivating offering from you. Why did you decide to create tracks that had a calmer side to them? I actually didn’t. It came naturally to me because that’s what I’m into at the moment. I’ve always functioned like that, creating music according to what I was feeling at the time. And why was Hot Creations the right label for you to release it on? Hot Creations is a label I have tremendous love for. So naturally, it’s them I thought of first for my album. The music they produce corresponds entirely to the one I sent them. If your former releases were for the dancefloor, how would you describe the setting for ‘Love Somebody’? For me, ‘Love Somebody’ is an album to listen to during a before or an after, to basically chill out. It’s not exactly dance-floor nightclub music, although I did try to play a couple of tracks in this context and they worked very well. I guess you just need to play them at the right time.
Your live shows are as crazy as ever, and I loved the video recently of you in Buenos Aires and someone in the audience with their feet in the air! Where will you be heading to in the next month or two? I’ll be playing in France, Spain, Mexico, Hungary, Turkey… The list goes on! Are you looking forward to the Ibiza season? I am so impatient to be in Ibiza because, amongst other great events, I’ve got two shows at Paradise DC10 and at Cocoon Amnesia. This is all so very exciting. Will you be having a little holiday yourself? I rarely take any holiday, mainly because I’m perpetually on holiday! But it would be great to take a few weeks off at some point in order to rest in a quiet, serene place – and to recharge my batteries. From your time with Heretik System to now, are there any parties or venues that stick in your mind from over the years? There are many places and events that will be forever etched in my memory. For example, the Molitor pool with Heretik, or the first time I went to the Kabbalah festival, or more recently that club in Buenos Aires.

Over the last few months the silver back ape has gained a huge following because of his stunning good looks and is now Japan’s number one heartthrob. Just imagine his Tinder profile! No Japanese lady could resist his broody stare, ripped muscles and swiping right. Step aside Christian Grey, Shabani is in town and he doesn’t need a Red Room to showcase his kinky side. Flinging his poo is all he needs to do to get a little dirty!

Imagine coming downstairs and catching a whiff of the foulest stench in the air coming from the kitchen. Your gut instinct is to investigate, but the last thing you’d imagine to find is your housemate preparing one of his turds in a roll of puff pastry. Let us introduce you to the last person you would dream about living with; even Josef Fritzl would be a more desirable housemate! One man moved into a home courtesy of Chapter 1, a charity providing affordable housing and from the start began to get under the skin of his fellow housemates. They weren’t too fussed about his layabout lifestyle and constant weed smoking but, there’s always a line that people cross and cooking and eating poo seems to be it! A woman living with the creep questioned what he was cooking up, and he answered “magic sauce”. What! Were you expecting a sane response? “It was definitely poo. He took it out and he ate it. How could we be expected to cook in that kitchen after that?”
