First Place Pork in Myrtle Beach was Pitmaster James Davila, and his brother Justin Powell, for The Saucy Pig. Goodbye 2018

Audrey Evans Campbell

Editor & Publisher acampbell@bqtimes.com 2018 - Well, You came in hot and made a large bang at the beginning of the summer; and you are going out with a larger one. I can’t say I’m not happy to see you go. Although, I have had some of my highest highs going to one of the best BBQ contest ever (check out the ad for Skinny’s BBQ Throw-down in the paper it’s coming back in May this year.... YOU DON’T WANT TO MISS THIS EVENT!) and following it up with finding out I was pregnant (OOOOPPPSSS)... the blows and rocks you have sent my way in the last couple of months are some I’d much rather forget and not have to live through. I don’t wish any harm on anyone and I can assure you I’ve never fully understood

THE BBQ TIMES

what many go through with a loved one or themselves battling Cancer. I’ll keep it short and sweet because that’s about all the energy I have left at the moment. Cancer is hard. Cancer sucks! Our BBQ friends and family are the absolute best of any in the world. I don’t know what the next couple of months hold other than continuing this horrid battle with my mom and bringing a new baby in the world. That truly is all I know to be a fact as I write this. I cannot thank some of you enough for what you are doing to help my mother and I will forever be in debt to some of you for the lengths you have truly gone. Due to the current circumstances I am in I really only have one choice on how to handle the paper in regards to January and February. I am going to do a joint edition going out in late January. I will find a way to make it up to the subscribers. I wanted to go ahead and make a decision and let you know in this edition what the plan was so you all knew what was coming. January is generally pretty slow for the BBQ circuit starting back up and the baby is due the first week of February which would normally be my paper week for the February edition. With mom’s situation and taking all of these things into play as well I felt it was the only decision that I could make. I hope everyone can understand. PLEASE continue to keep my mother in your prayers as we head into what is going to be a very hard Holiday season for us.

CHRISTMAS HIJACKED BY BBQ

Kathy Carter

Barbecue Musings Kcwriter57@yahoo.com Hi y’all, Mrs. Kathy here with more BBQ musings. Tis the season and all that goes with it. I can’t believe my family’s Christmas celebration has become another BBQ event. It starts for me as soon as The Big Pig Jig is over. That contest is too much work to share with Christmas. But the day after we get home out come the decorations and music. Christmas is my favorite time of year. I’m really into decorating inside and out. I love to bake cookies, send cards, sing carols at church and hunt for the perfect gifts. To visit family and go looking at lights. Somehow, over the years, mine and my husband (Naked Dave’s) Christmas celebration has been hijacked by BBQ. Little by little, pigs have invaded our decorating scheme. We have been gifted all kinds. Cute, pink pig ornaments for the tree. A sparkly, lit up Santa pig and three little pig elves for the front yard. We have a flying angel pig that stands in the outdoor manger scene. Someone, for a joke, gave me a kneeling pig to put in the creche that’s on our mantle. We jumped on the pig train and sent Christmas cards with merry pigs on them one year. We have pigs everywhere. There are pig planters on the front porch. They sport Santa hats and lighted candy canes. Pigs have never been my favored animal to use as a theme. I have given in and try to make the best of it. A little holly, red ribbon and lights can transform anything into a Christmas decoration. Right? Besides, I believe all the animals in the barnyard were there on that special night to witness the birth of baby Jesus. What a celebration that had to be! I’ll bet the shepherds had barbecue. Our family hosts a unique get together

on Christmas Eve day, Naked Dave enlists the aid of family and friends to cook a whole hog and smoke other various and sundry meats. There are as many as five or six cookers set up around the yard belching smoke and sending the flavorful smells of barbecue wafting through the neighborhood. The cookers hold ribs, loins, shoulders, hams and turkeys which will be Christmas lunch for everyone here. We cook extra and take it to a shelter for those who will be there on that day. Someone always brings hot dogs and sausages and the fixins’ and throws them on a grill. We have a picnic and good fellowship. It’s just like a BBQ contest. The libations flow and each pit-master tries to outdo the other. There’s a lot of banter back and forth. You know, “mine’s better than yours, don’t burn it like you did at the last competition, the dogs want even eat it, the recipes a secret, etc.” The children run around letting off steam. The wives relax, happy to have the holiday prep behind them. We all have a great time of fun and fellowship centered around Christmas and BBQ. My kitchen and back porch are BBQ central and are in complete disorder. Barbecue sauce is all over the counters, grease is in the sink and trailing out the door. The floor is gritty with dry rubs. The noise and laughter’s as loud as the jet runway at Atlanta International Airport. The mess is cleaned up by secret elves. Gifts magically appear under the tree that weren’t there before. Hopefully, they don’t contain anymore pigs. What matters is we had fun and the meat for Christmas dinner is done. Dave and I go visiting Christmas afternoon and re-gift BBQ left over from the smoke-fest the day before. Heaven knows I don’t want it! So, fire up those cookers and decorate the tree. It’s time for family and barbecue, twinkle lights and barbecue, carols and barbecue, eggnog and barbecue, fruitcake and barbecue, and pigs around the Christmas tree and barbecue! Remember during all the preparations and celebrations the real reason for the season. Have a wonderful Christmas and a delicious New Year from our family to yours. Keep Chillin’ and Grillin’. P.S. Dave, I left my wish list in your jacket pocket with your checkbook. It does not include BBQ tools, an apron, heat resistant gloves or goggles.

Christmas Equals Family

Vic Clevenger

Columnist The Cookin’ Comedian On my TV are the holiday cooking episodes like cookie challenges or how to make a great gravy for the mashed potatoes. This beats watching those sappy movies on the Hallmark channel and it still gets the holiday spirit stirring. All of this takes me back to all of those family get-togethers each year at my aunt’s home. The whole family showed up from Michigan, Ohio and of course those of us who lived in Kentucky. It was the one time of year we could count on seeing everyone and what a time it was when us cousins got togeth-

THE BBQ TIMES

er. There’s even a picture floating around of me with one of my younger cousins around a beautifully decorated tree and the reason why he’s crying, is well none of your business. No family get together is complete without food and lots of it. The Christmas turkey was never outdone by the Christmas ham, yep we had both because there were tons of us there. I was recently teaching a holiday BBQ class to some men who were also to bring sides to eat what I’d prepared earlier in the day. Almost every side dish came with a label from the local grocery store, which I found funny. But at the family Christmas feast growing up, rarely did you see a store label. Most of our sides were prepared from the harvest of the giant family garden and those that weren’t grown in the garden, like potatoes, well, homemade potato salad was still there. Everyone pitched in and everyone enjoyed the leftovers, because they were used the next day when we all got together again. Oh and who can forget about the presents handed out?! I had one rule growing up. Yep it was my rule, not my parents or my grandparents, mine. No clothes for Christmas! What kid sends Santa a letter or sits on his lap at the mall and tells ole St. Nick, “I want a pony, a jet plane, some tighty-whit-

PAGE 5

eys and don’t forget to bring me socks.” No kid ever wants clothes for Christmas (or on birthdays for that matter). I believe in this rule so much, once I began a dad, I refused to let “Santa” place clothes under the tree. But alas, no one ever listened to my rules. So undies and socks were a standard gift, under the tree, not even a stocking stuffer, ugh! One year however, my mom tricked me. I tore open the wrapping paper to reveal what I suspected, a shirt box from JC Penny’s. There is nothing at Penny’s a kid wants. Suspicious, I lifted the lid to reveal that clothes covering tissue paper. But when I removed the paper, thinking I was getting a shirt or undies, the gift of Star Trek Walkie Talkies was a relief. By the way, there is much more to this story than I had time for here, so ask me about it or come to a Christmas so of mine. Now days, my mom is gone and my dad lives with my brother about 1000 miles away (but we talk all the time) so needless to say, the years have changed the family feasts. Through the years I would tell my daughters all of my Christmas stories till they started telling me they had heard it before or finish my story for me. This this year I have a new grandson to tell all my stories to and to the coolest part is I get to begin new ones. As he gets older I can tell him about receiving a new bike (on more than one occasion) or a record player, which leads me to explain to him what a record is and a 1000 more. Eventually most of my happy Christmas memory

stories with include him. When you get to my age, it’s not really the gifts we hold dear, it’s the memories, the stories, we enjoy the most. It’s the look on the little one’s faces that brighten the day muck like the star did for the Wise Men. These days when I’m asked what I would like for Christmas my answer is, “Whatever, just surprise me.” The truth is I really don’t care if I get a gift because my gift is watching the kids get theirs. They will get me a gift which will be creative or a book, which I will enjoy mainly because they, are here to give it to me. I know what you’re thinking, “Vic, this walk down memory lane is nice and made me think about Christmases past. But how does this relate to BBQ?” Well, family and memories is how it relates. We all talk about the BBQ family and what it means to each of us. The memories I’ve made from our annual Family Reunion known as the NBBQA National Conference to Memphis in May to the World Food Championships are too numerous to mention here. I know I’ve recounted the teams which help the other teams who’ve received a final call at Memphis. The love this family has for one another was most recently on display at the World Food Championships as each BBQ or steak family member got a call the others in our BBQ family couldn’t hardly wait to congratulate the winners. Many

sater. Even knowing that the comp is competing with the much larger Gridiron Grill-off in Pompano and the World Food Championships in Orange Beach, AL (just an hour away) they were determined to make this event a success and tie it in with their Veterans Day Weekend celebrations. The location and timing of the event made it very difficult to draw teams and judges. It took a few weeks but we were able to seat 26 judges and had 9 teams compete. I want to thank the judges that stepped up and answered my call, y’all are awesome! Pam & Tim Giebeig even took a break from the World Food to judge! For the 50/50 raffle contest there was $104 in the pot. Marshall Wise- heart won the Judges half and, because every team walked, it was decided to donate the team half to Operation BBQ Relief. Speaking of folks coming over from the World Food, we were all amazed at Jim Elser/Sweet Smoke Q for competing there and taking Second in the duck ancillary, coming to Milton to compete and finishing with a Grand, then going back to Orange Beach and taking Third in BBQ. Message from The President: Georgia BBQ Association

By Greg Sebastian GBA President As 2018 draws to a close, the Georgia Barbecue Association wishes everyone a Merry Christmas and Happy Holidays! I hope everyone takes the opportunity to reflect on the past year, celebrate our accomplishments, think of all the good times we have had together, recall the new friends we have made, and remember those we have lost. The GBA will be taking our traditional break from competitions for a couple of months, but I assure you that there will still be lots going on behind the scenes. For example, information about the next meeting of the Board of Directors will be announced once the details have been decided. We hope everyone will take the opportunity to express their opinions, thoughts, and suggestions about making

the GBA better. The GBA will also hold our next judge training class on February 9, 2019 in Griffin, Georgia. The class is open to any GBA member and is required to judge GBA sanctioned events. You can become a GBA member and register for the class on our website at BBQGA.com. Simply scroll through the list of upcoming events and click on the “Judge Registration” button for the class. At the half day class, you will learn about competition BBQ and how to score it according to the GBA rules. We do not try to teach you what you like or don’t like, just things to look for and how to report your impressions in a consistent way. The GBA uses comparative judging, which is different from most BBQ organizations. Rather than scoring the entries based on an “ideal,” the entries are only compared to the other contest entries that day. At the end of the class there is a simulated judging exercise with samples prepared by a competition cook team. This makes a great holiday gift for yourself or the BBQ fan in your life. The GBA is also pleased to announce the formal creation and incorporation of the of-

ficial Georgia Barbecue Hall of Fame. The purpose will be to publicly recognize a distinguished and select group of innovators, visionaries, leaders, and luminaries who have made significant contributions to the development and advancement of the art, science, business, or sport of barbecue in the State of Georgia. The GBA is currently working to formalize the nomination, selection, and induction process, as well as developing operational and funding procedures. Although it will be run and administered by the GBA, it will

PAGE 15 include recognition of any deserving party, regardless of their affiliation or association. We look forward to honoring the cooks, restaurateurs, competitors, event organizers, equipment manufacturers, and others that have made Georgia barbecue so great. More information will be announced when it becomes available. Finally, the GBA returns to competition on February 23, 2019 with the Dilly Dally in Dooly in Vienna, Georgia. The following week, we head to Tifton, Georgia on March 2 for the Rhythm and Ribs BBQ Festival. Then it is on to the double points contest at the Fire Ant Festival in Ashburn, Georgia on March 23. We are constantly working on new events, so keep checking the GBA calendar and Facebook page for the latest info.

THE BBQ TIMES

LET’S GET COOKING Dana Hillis Pitmaster

Big Papas Country Kitchen lighthousepointe@hotmail.com This time of year there are a lot of opportunities to cook. The SCA has a lot of contests on the schedule including a big double header at the Shed restaurant, and another big double header at David Haskett’s Flamingo Lakes contest. The Flamingo lakes contest has changed to a GBA and has a Friday and Sunday SCA steak contest and also features the Battle at BBQ Junc-

tion. The contest has filled up and will be a huge success as usual. This contest has a lot going on and is always a good time. Flamingo Lakes is a great location for a contest and if you attend you will agree. We just came back from the World Food Championships where we competed in steak along with about 80 other teams. The WFC is a food competitors dream competition and is a true adventure to go watch. It has grown bigger every year and they give away $350000 and serious bragging rights. We did not place in the top 5 on our competition so we did not get a chance to move on. We took a roadtrip to Hazelhurst Georgia for an SCA contest and had a great time. I got to the big town of Hazelhurst and got to hang out with Casey and Judy Jones and Gene Skillin and eat some local chicken wings. We had some good laughs and had a good time cooking this contest. We did not get a call in steak or wings but we did get a Fourth place call in desert. This little contest was set up on a little golf course and I will definitely be back. The people at this contest made you laugh and feel at home and I cant wait to go back. Our next adventure was up in North Florida to a cool little contest in Monticello.

I pulled in late on Thursday night and was told to park anywhere convenient. I pulled in next to sweet smoke q and settled in for the night. The next morning I got up early in search of coffee and when I found my way back I was asked to move over 2 spots which I gladly did. A few minutes later Belly Up BBQ pulled in and took the spot I was originally in. I have been cooking for a long time but I guess if you can imitate President Trump and can host the Tim and Brian show you can make people move out of whatever spot you want. I have heard Brian Coleman do his imitation of the president and ex presidents and will gladly move out of his way to here him perform! Katrina Richardson is the organizer for the Monticello contest and everyone needs to get in touch with her and sign up for this contest. This small town deserves support for their contest and it has the down home feel that old time contests used to have. Show up and support this contest and you will see what a cool little town this is. I rode around town and stopped at some stores and the contest was advertised everywhere and was on the radio stations. If you have never seen a greased hawg competition you need to come to this contest. It was fun watching the kids and was even more fun watching the adult category.

DECEMBER 2018 Brian Coleman not only can put on a show, cook some great BBQ, but he is also quite the hawg wrestler! There is a nice little contest coming up in lake Wales that also has an SCA contest and is a contest that needs to be on your schedule. This is another one of those feel good contests and could always use a few more teams. There is a contest coming up in January in Naples and I need everyone to put this contest on there schedule. I know the first of the year finds everyone tired from the holidays but this contest has been around for several years and deserves support from all of us. There is plenty of power and water and room at this contest and the payout is one of the better payouts that we have. Naples in January is not a bad place to be and there is some good entertainment on the stage, and we usually have some pretty good cold beverages and Janet plans to put on one of her famous breakfast buffets. This contest is close to home for me and if anybody needs anything just let me know. Lets all enjoy the coming year and I wish good health and good luck to all in the upcoming cooking season. Cook BBQ for your neighbors and friends. It makes them happy! See everyone at a contest soon!

Another year is coming to a end. With the last contest finally in the books, Congrats to Lee and Amanda from Pig-Chicka-Cow- Cow on your Team of the year win. After the scores were totaled for the year they edged out Sweet Smoke Q by 1 point. In December we only have one more event. This will be a packed weekend December 7-8 in Winter Haven. The Jefferson BBQ Fest • September 3, 2018 • Monticello, Florida {Call me crazy, but, ain’t that one of the Queens and The Divine Ms. Z?} What a sweet set up, in what seemed like a small park, managed to fit the big rigs with plenty of room to grow. As always, Lead Rep, Ed Shemanski, Bill Tanner, Dennis Schmitz and Charles Golden worked hard to make sure everything went off without a hitch. All judges were on time and ready for some great BBQ. Local businesses sponsored the festival events, Corn Hole contest, Greased Pig Chase and a Bounce House sponsored by the Mexican Restaurant next

Although the Jefferson BBQ Fest is a newly sanctioned FBA contest this event has been happening for several years. Many thanks to Katrina Richardson, her crew of volunteers and new contest liaison Dennis Schmitz who have worked together to grow and finally sanction the contest from it’s humble beginnings. And in spite of all the hurricane Michael damage we

door...BTW, Dana Hillis, Hobo and I had dinner there on Friday... seriously yummy. There were several new teams. One of them was coming up short on time for their chicken turn in be- cause he couldn’t walk any faster or run at all, so be- cause of the 15 minimum team count everyone needed to turn in everything. Brian Coleman, Belly Up BBQ saw the dilemma, ran out, grabbed the guy’s turn in box and ran it to turn in with barely seconds

saw upon arrival, the weather was sunny and thankfully the con- test went forward as planned. In order to qualify for the Jack Daniels Invitational there needs to be at least 15 teams for a first time sanctioned event. At game time, there were only 14. However, with the help from a very special, last minute, Ace in the Hole, all girl pro team ... Drunk Wives Matter, The Jefferson BBQ Fest met that goal. You go Girls!
