Where food and wine are forever intertwined!
Winery founder Vittorio Sattui became one of San Francisco’s first Italian immigrant wine merchants in 1885, and his legacy of crafting fine wine lives on today through his greatgrandson, and winery owner, Dario Sattui. Dario’s vision for creating a welcoming respite along Napa’s Highway 29 wine trail started forty-five years ago with simple sandwiches served to guests when buying wine. The idea: Eat a little something, stay a little longer, buy more wine. It worked. The winery’s Artisan Deli and Marketplace has now grown into a visual feast with over 100 locally sourced and imported sweet, savory, and housemade food products ready to fill your pantry (and tummy!). Food and wine are forever intertwined at V.Sattui; their mantra of “mangia” playing out daily. Guests can dine on their gourmet foods while sipping a bottle of wine in the expansive picnic grounds overlooking the vineyards. Perfetto!
House-made Italian specialties. Who better than Stefano Masanti, a Michelin-starred chef who travels from his hometown in the Italian Alps to oversee the V. Sattui culinary kitchen each summer. Chef Stefano's culinary knowledge has helped the winery expand its Artisan Deli and Marketplace offerings to become a must-stop culinary destination. House-Cured Salumi, Pâté & Mousse Secretly guarded old-family recipes come to life in the winery’s Salumeria. Their signature Bresaola and Lonzino recipes are kept tightly under wraps and house-cured to perfection. Slow-
cured salumi of Finocchiona, spicy Sopressata, mild Vittorio Classico, and Pepperoni are all pre-sliced, ready to eat. Portions are hand-sliced to order using a bright red flywheel slicer imported from Italy. Coming soon: A new display curing/hanging room will be added to the marketplace for guests to see the ancient art of making salumi firsthand. Chef Stefano’s personal recipe for Duck Liver Mousse and Country Pâté are not to be missed. All can be enjoyed with a buttery Chardonnay, fruity red Zinfandel, a bottle of V. dedicated cheese mongers on staff daily, you’ll receive expert recommendations for your cheese and wine pairings. From creamy soft-ripened Brie-style cheeses, to imported aged Parmesan, to English Cheddars and a plethora in between, there’s a cheese in the case for you! Mustards and Spreads Their proprietary line of small-batch mustards is the perfect accompaniment to the deli meats or grilled sausages at home. Mustard flavors include Stone Ground Horseradish, Sweet & Spicy Raspberry, Smoky, and Honey. Their house-made Artichoke Spread was introduced over 30 years ago and is still a top seller. CIA Graduate and former Sous Chef at famed Kollar Chocolates, Kat brings her expertise in couture chocolate making to V.Sattui using the estate’s honey and other unique flavor combinations. Who doesn’t love sparkling wine? With harvest in full swing, the sisters at Breathless Wines are asking that pivotal question. The Breathless team includes Sisters One, Two and Three: Sharon Cohn, Rebecca Faust, and Cynthia Faust. Honorary Sister Four, Penny Gadd-Coster, is the most important sister of the bunch according to Cohn. An acclaimed winemaker, Gadd-Coster brings her nearly 35 years of winemaking experience to Breathless Wines. Having worked with Rebecca Faust at custom crush and bottling facility Rack & Riddle since 2007, Gadd-Coster was easily adopted into the Breathless Wines fold.
The Breathless website includes this quote by Napoleon, “Champagne: in victory, one deserves it; in defeat, one needs it.” A better truth has never been spoken and the ritual of champagne is what defines Breathless Wines. With an adorable hand-painted, vintage-style label, the sparkling wines are celebration-ready. When tastings are in full swing, guests can make reservations for events like the Sabrage Experience. Here, experienced guides give one-on-one instruction in the art and technique of opening a bottle of sparkling wine using a saber. Not for the weak of heart, the show-stopping ceremony is an exciting ritual for any tasting experience. Of course, it’s not all bubbles at Breathless. The delicious offerings also include a beautiful still Chardonnay, a rose-hued still Rosé, a delicate aperitif called Ratafia, as well as a lovely still Pinot Noir.
“Sparkling wine is bubbly, fun, effervescent. We couldn’t do any of this without our own bubbly Penny,” said Cohn. “She helps bring the sparkle to our Sparkling wine.” Embracing another harvest season with the style for which they are known, the formidable team of Sisters was up “harvest-early” on a recent August morning to oversee grape picking for their award-wining wines. Largely known for their bubbles, the methode champenoise sparkling wines include the Blanc de Noirs, Breathless Brut, Blanc de Blancs, and Sparkling Rosé. Each with its own pedigree and list of accolades, the sparkling wines are not only Breathless Wines’ claim to fame but what their fans and loyal customers truly clamor for.

Welcome Back After months of seemingly never-ending shut downs, the beautiful Breathless tasting room is once again open in downtown Healdsburg. Reservations for al fresco tastings on the sunny patio and in the gorgeous gardens can be made during regular business hours; Thursday through Monday from 11 a.m. to 6 p.m. Cohn was quick to point out that the WINE COUNTRY THIS WEEK
outdoor seating areas have been carefully arranged to comply with social distancing guidelines as well as the comfort and enjoyment of guests. “Our tasting room Ambassadors will be masked and we can accommodate groups of up to eight people,” said Cohn who followed that up by saying, “We are thrilled to welcome our guests back once again!”
Tasting Room Events With a sense of community at its core, Cohn said the team donates its tasting room space to a nonprofit on a monthly basis enabling a local organization to host a celebration, fundraiser or thank you event for top-level donors. At capacity, the space accommodates 100 people and can easily host 75 following social distancing guidelines. There is also a monthly Crepes & Bubbles event where guests can enjoy both offerings. And, no celebration would be complete without music so a monthly Bubbly Hour with music takes place from 4 to 7 p.m. Check the website for details about all three.
Winery Events Breakfast at Breathless – the last Sunday of the month through October hosted by Crêperie Chez Solange. Each ticket includes a sweet or savory French Crêpe and a delicious glass of bubbles, served on the garden patio. Crostini with Grilled Fig and Proscuitto An elegant little appetizer that hits all the notes: salty, crunchy, chewy, sweet, and tangy – in a beautiful bite that is perfect when washed down with a sip of bubbles. You can prepare all the ingredients the day before and just assemble the crostini about an hour before serving. INGREDIENTS
• 1 sweet French baguette cut into 24 slices • 1-1/2 cups your favorite spreadable cheese such as herbed farmers, goat or cream cheese. • 6 large figs, sliced into 4 slices each (24 slices) • 2 tablespoons olive oil • 4-6 oz sliced proscuitto, divided into 24 slices • 1 cup balsamic vinegar • Butter for toasting baguettes • Sea salt • Fresh basil leaves for garnish DIRECTIONS
Toast the baguette slices with butter and a sprinkle of sea salt. Heat vinegar in a saucepan and reduce until it is syrupy (for added sweetness or thickness you can add some honey). Heat your grill to medium heat. Brush figs with olive oil, grill on each side for 1-2 minutes, just to soften them up and achieve a little caramelization. Layer: Toast, cheese, fig slice, prosciutto, a drizzle of balsamic and basil leaf for garnish! Serve at room temperature and pair with Breathless Brut.

What’s New: Breathless Ambassadors To survive the past year-plus, wineries have become incredibly creative in the face of covid-related shutdowns. Treating it as a mere bump in the road, the Breathless team quickly pivoted to a Brand Ambassador model that was launched on September 1, 2021. Today, there is a growing cadre of Breathless Ambassadors who share the wines through casual, private tastings they’ve arranged with family and friends. The newly converted can then purchase their favorites through the Breathless Wines’ website for either special occasions or, every day quaffing. “We have so many wonderful customers who love to share our wines,” said Cohn. “This was a perfect next step for helping spread the word about Breathless Wines, especially when our tasting room had to be closed.”

Hands Across the Valley Tasting Event to Help Feed the Hungry The 29th Annual Hands Across the Valley will take place on Saturday, September 25, from 4 to 10 p.m. at the historic Charles Krug Winery in St. Helena. In addition to the walk-around tasting featuring noted Napa Valley chefs, restaurateurs and winemakers, and the silent and live auctions, the event features dancing under the stars with the classic soft-rock sounds from one of the Bay Area’s most sought after party bands, Mustache Harbor. Wine Tasting
Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go:
• Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.)

• Be flexible Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind-LET’S GO TASTING AND HAVE FUN! • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.
• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!
• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting).

GOOD TO KNOW • Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved winegrowing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed after it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.
• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape. • Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bottled: The wine was under the control of the producer, start to finish.
• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat).

• Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white!
• Ask your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries.
•E at breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine.
• Bring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery • Don’t try to do too much. In general, three to four wineries will fill your day.
• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being.
• Finish: The impression a wine leaves on the palate after swallowing or spitting. • Lees: Dead yeast cells from fermentation that settle at the bottom of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”
• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. • Sediment: Residue accumulated during extended aging of a bottle of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.
• Enjoy yourself!
• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip.
Please be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time.
• Terroir: The accumulation of all conditions surrounding a grape-growing site, including soil, sunlight, daytime an nighttime temperatures, rainfall, drainage, elevation, etc., all contributing to each wine’s uniqueness.
• Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them.
