Standout 2012s
A horizontal tasting of 2012s offers a glimpse at their fresh youthfulness, seductive opulence, and balanced restraint. For those seeking 2012s, these standout bo lings from this historically perfect vintage won’t disappoint.
Gamble Family Vineyards, 2012 Paramount The Gamble Family Vineyards 2012 Paramount was close to prime drinking time, showing some signs of age. The nose is highly floral with perfumed aromas of purple flowers, sage, fig, and cured meats. The palate is lighter in style and the tannins are showing their age, but overall showing off a restrained fruity profile with dried strawberry, leather, and pepper.

In 2012, Napa Valley wine country was a different place. It was before the state’s successive most devastating fires ravaged local communities and long before the pandemic brought life as we knew it to a halt. Now, with another decade of harvests gone by, winemakers reflect on the beauty of the 2012 vintage—a vintage that has been recognized as one of Northern California’s greatest and one that will always be cherished for its carefree place in history. “2012 was almost perfect… no frost, mild spring, no rush to harvest due to rain,” said Jason Moore, owner and winemaker of Modus Operandi. “The only issue with 2012 was the issue of an extremely large harvest, so we were all trying to figure out where to put the fruit and ultimately the wine.” And while abundance isn’t always a mark of quality when it comes to grape growing, in 2012, it wasn’t a hindrance to the phenolic ripeness of fruit and overall quality of grapes coming off the vine. “Despite large crops, the fruit composition was of a higher quality than the norm,” admi ed Tom Gamble, proprietor of Gamble Family Vineyards. “2012 was a dream throughout the growing season,” stated Robin Lail, founder and owner of Lail Vineyards; this was especially the case coming off the heels of 16

the 2011 vintage, which was remarkably wet and cold and resulted in low yields and grapes that struggled to achieve their typical California ripeness. Inglenook winemaker Chris Phelps stated, “The 2012 growing season in the mid-Napa Valley, and specifically in Rutherford, was reminiscent of the great vintages of 2001 and 2007.” The gradual ripening during the impeccable 2012 growing season produced grapes with perfect physiological ripeness, showcasing fruit-forward flavors, complexity, and structure in the finished wines. At ten years old, the 2012 vintage is showing youthful qualities with abundant freshness, and still so much promise for aging upwards of another decade.
“ 2012 was almost perfect… no frost, mild spring, no rush to harvest due to rain...” JASON MOORE OWNER AND WINEMAKER OF MODUS OPERANDI
“The summer ripening months were somewhat cool with a stretch of warm days that perfectly advanced the ripening period to produce fruit-forward and balanced wines,” said Larkmead Vineyards winemaker Avery Heelan. The slow and even ripening set the stage for “wines of remarkable opulence and restraint,” furthered Rebekah Wineburg, winemaker at Quintessa. Indeed, the elegant juxtaposition of opulence and restraint is the hallmark of the vintage. These are wines that flirt with perfection and beautifully express why Napa Valley has become the contender that it has on the world wine scene. Vibrant aromas of fruit lead the way for this bouquet with black cherry, cassis, and blueberry, while baking spice and sweet tobacco leaf follow. This Cabernet is still grippy with tannins and showing notes of black cherry and dark chocolate-covered cranberry. It’s got an almost chalk-like texture with notes of dry leaves that bring structure and complexity to the palate—boasting very French Bordeaux-like qualities.
Lail Vineyards, 2012 J. Daniel Cuvée Cabernet Sauvignon This wine opens with a seductive, truffle-like aroma combined with black cherry on the nose. It opens so with loads of spice on the front palate and mouthwatering acidity. The tannins still have grip but are already well-integrated into the flavors of dark chocolate-covered blueberries, clove, and white pepper. This is a seamless, excellently structured 2012 with lovely balance.
Larkmead Vineyards, 2012 Solari Cabernet Sauvignon Aromas of dark chocolate and espresso lead to a similarly styled palate with notes of baking chocolate, roasted coffee beans, and subtle hints of blueberry and black tea. There’s an almost smokey-like quality to this Cabernet that brings an added layer of complexity to its well-structured palate.
Modus Operandi, 2012 Cabernet Sauvignon Classic black cherry and baking spice notes open on the nose, with a hint of Christmas fruit cake and olives. This is a very youthful 2012 with a still strong and gripping tannin profile. It’s full-bodied and smooth, very masculine in style, with notes of blueberry and a long, juicy finish.
Quintessa, 2012 Napa Valley Red Wine Still youthful aromas of plum and cassis blend seamlessly with notes of cured meat, graphite, violets, and black olive. The palate is smooth and silky in texture with a graceful tannin structure that is still holding strong, indicating a much longer life ahead. Flavors of red cherry cola and blueberry coalesce with violet, cured meats, and a brine-like quality. 17

You may just be sipping on a lovely Cabernet Sauvignon. In the world of wine, Cabernet Sauvignon is one of the most widely recognized red grape varieties. It is one of the seven “noble” grape varieties which also include Pinot Noir, Merlot and Syrah. Noble grapes is a term which describes recognizable grapes that produce top quality wines all over the world. The noble grape varietals are also noted for the specific expression of the local terroir where they are grown. Cabernet Sauvignon definitely fits the bill! In the winery, Cabernet Sauvignon is an easy and straightforward wine to make which makes it a kind of favorite wine of winemakers. fermenting vessels and either the native or added yeast begins the fermentation. As the mass of pulp and skins rises to the top of the fermenting wine, forming a cap, it is either punched down into the juice, or the juice is pumped back over the cap to extract the color and flavor from the skins. A er fermentation ceases, the pulp and skins are le to macerate for a period of time from a few days up to a month, depending on the style the winemaker is looking for. Typically, the wine is then pressed, and the clear wine is run off into oak barrels. Cabernet Sauvignon loves oak and can withstand long periods of time in the barrels. The rich and robust profile of the grape are so ened with oak and aging and the flavors of vanilla and spice complement the natural notes of blackberry, blackcurrant and tobacco

Cabernet Sauvignon is a wine of deeper hues of dark ruby purple when young and aging to a brick red over years in the cellar. The primary fruit aromas and flavors of Cabernet are mostly of the black fruit family and can include black currant, cassis, blackberry, black plum and black cherry. There are o en secondary aromas and flavors of herbs, spices, green olives, mint, leather and tobacco. If grown in cooler climates, where it may not be as ripe when picked, there are usually vegetal, asparagus and green pepper notes that are likely to be present. The use of oak barrels will impart flavors of vanilla and smoke, as well as oak. With aging, the notes of cedar, leather, cigar box and earthy qualities are added to the mix. Cabernet Sauvignon possesses a great intensity and depth of flavor and it’s classic profile is rather full-bodied with high tannins and a strong acidity that contributes to the wine’s aging potential. The thick skins contribute to the tannic structure and young Cabernet can be rather harshly astringent or “tight” in the mouth. These tannins, however, also act as a preservative, helping the wine to age, and as it ages, the tannins so en. Many years ago, if a Cabernet was drinkable in its youth, it was dismissed as a bad wine. Modern winemaking techniques now produce wines that are supple enough to be enjoyed young, but can also age gracefully for many years.

In the United States, if a label says Cabernet Sauvignon, at least 75% of the grapes used must be Cabernet Sauvignon. In recent years, a category called Meritage was created to account for wines which are blends of the five traditional Bordeaux varietals – Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot – of which neither are above the 75% level. BY STEPHANIE CULEN
WINE COUNTRY THIS MONTH
Cabernet Sauvignon is a natural cross of Cabernet Franc and Sauvignon Blanc that occurred by chance sometime in the 1600s in France and is grown in nearly every major wine producing country. A big part of the global success of Cabernet Sauvignon is that it is a tough, hardy vine that consistently produces good quality fruit. The grapes are small with skins that are tough and thick with a deep bluish black color. The thickness and the toughness of the skin results in good resistance to vine diseases and help it to recover quickly in the event of late seasonal rains. The vine does require a fairly long growing season, however, and generally any moderately warm, not too rainy climate, with well drained soils is best suited for the grape. In general, regions that are cooler have more potential for herbaceous notes and the infamous “green bell pepper” aroma that occurs from less than ideally ripened grapes. In regions where the grape is exposed to excess warmth and over-ripening, there is a propensity for the wine to have more “jammy” notes.

What’s in a glass Would wine in any other glass smell as sweet? “The generous size of a Bordeaux glass allows the bouquet to develop fully. The shape directs the flow of wine onto the zone of the tongue which perceives sweetness, thus accentuating the fruit and de-emphasizing the bi er qualities of the tannin.” riedelusa.net

Beet Wellington This vegetarian dish is a nod to the classic Beef Wellington. A more deconstructed version, this dish is simple to put together and has enough umami to stand up to Cabernet and provide satisfaction without any meat required. how to pair like a pro Cabernet tends to be the favorite accompaniment of fat-laced red meat and rich sauces. The quintessential pairing of Cabernet Sauvignon is with lamb. Perhaps there is a connection, a er all to the sheep that gives presence to the Bordeaux town flag of Pauillac which is the home of Chateaux Latour, Lafite Rothschild, and Mouton Rothschild. With a roast leg, or with lamb chops, the flavor of Cabernet is ideal, and the tannins present in the wine serve to cut the fa iness, and refresh the palate. Sauces with garlic, red wine marinades, mustard, rosemary or other herbs will add flavor to the lamb and complement the wine deliciously. The other optimal choice with Cabernet is beef served with a simple herb bu er, or with a red wine sauce. Furthermore, the oak influences of Cabernet can be matched with similar cooking methods such as grilling or smoking. Complimentary oak-flavored spices like vanilla, dill weed, black pepper and brown sugar can also pair nicely. The flavors of Cabernet, and especially its standard load of tannin do not go well with fish dishes, but there is a role for Cabernet with a whole roast chicken sauced with garlic, bu er and herbs. Cabernet also goes well with with heartier English cheeses like Cheddar, Wensleydale, Cheshire or Gloucester. The general rule of thumb is to consider that as the preparation and the saucing of the food gets richer, the be er the match with a big, bold Cabernet Sauvignon. But no ma er what you like to eat, another rule of thumb is to drink what you enjoy! And, for many people, Cabernet Sauvignon is a favorite grape to imbibe!

This is a bold and lively Bordeaux blend of Cabernet Sauvignon, Cabernet Franc, Malbec and Merlot with smooth textures and fruitforward notes of ripe plum, back cherry, and cassis. There’s a nice line of acidity racing through the well-structured palate, and given its youth, the tannins are already very nicely integrated.

This is a powerhouse Cabernet Sauvignon and one that pairs well with thick cuts of beef. Made of mostly Mount Veeder fruit, the bouquet boasts notes of baking chocolate and espresso with a rocky minerality. The palate brings forward ripe fruited flavors of mixed berry, cassis, and baking spice; it’s wellstructured with unfolding layers of complexity. The oak is nicely integrated, and the wine shows off its power with a long finish. Pair this with a steak or cellar it, as it’s got a long life to live.

Faust 2019 The Pact Cabernet Sauvignon, $125 The Faust Coombsville expression of Cabernet Sauvignon in The Pact bo ling is beautiful. Black cherry and blackberry fruit abound on the nose with hints eucalyptus and stones. While the palate is bold and dense, it shows complexity in its juxtaposition of fruit against more savory culinary herb notes, and in the full-bodied style boldly poised against so tannins. This is another Napa Cab perfectly suited for aging.
Aperture 2021 Barrel Fermented Sauvignon Blanc, $45 Sauvignon Blanc is one of those versatile grapes that’s always exciting to see how a producer works with the fruit. This expression is made from the highly aromatic Sauvignon Musqué clone and blended with a small 3% of Sémillon, giving it a layer of texture and so ness to round out the Sauvignon Blanc’s acidity. The wine also spends time on lees in 33% new French oak barrels—the remainder in once and second use barrels. This is a beautiful wine with bright acidity and a silky profile, full of zesty citrus, pineapple, and notes of wet stone.

GOOD TO KNOW
Wine Tasting
• Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved wine-growing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed a er it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.
Helpful Tips
Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etique e tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go: • Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.) • Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.
• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape.
• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those li le sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will! • Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)?
• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them. • Enjoy yourself! Be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time. Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind ... let’s go tasting and have fun! BY DONALD SONDERLING
(It’s prudent to double check your planned visit, if possible, the day of your visit.)
• Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bo le or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bo le). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting).
• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip.
• Seek smaller, out-of-the-way, boutique wineries. • Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine. • Bring something to snack on such as crackers, breadsticks or a bague e, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery
• Terroir: The accumulation of all conditions surrounding a grape-growing site, including soil, sunlight, daytime an nigh ime temperatures, rainfall, drainage, elevation, etc., all contributing to each wine’s uniqueness.
• Don’t try to do too much. In general, three to four wineries will fill your day. WINE COUNTRY THIS MONTH
• Finish: The impression a wine leaves on the palate a er swallowing or spi ing. • Lees: Dead yeast cells from fermentation that se le at the bo om of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”
• Sediment: Residue accumulated during extended aging of a bo le of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.
• Ask your server to recommend their favorite wineries to visit.
44
• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat).
• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality.
• Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white!
WALT WINES, SONOMA
• Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bo led: The wine was under the control of the producer, start to finish.
