Exciting news! After 22 years as editor, I’m over the moon excited to tell you that I am the new owner and publisher of Wine Country This Month and Very Napa Valley magazines! It was in 2000 that I first met with the late co-founder Doug Martin. It was he and Elizabeth Garneau who started California Visitors Review in 1981. So much has changed in the last 22 years: • We switched from newsprint to glossy paper • The magazine changed its name to Wine Country This Week • WineCountryThisWeek.com went live • Brehm Communications purchased Wine Country This Week • Wine Country This Month in Central Coast was created • We launched Very Napa Valley Magazine • Throughout the years we also tried other publications including Day Trips in Sonoma County, Napa Valley and Central Coast, Cheers! in Sierra Foothills and the Wine Club Buyers Club. Then Covid hit. We stopped printing for the first time in 39 years. Last year we came back as a monthly publication and better than ever! What has not changed is our valued partners, many that have been with us since the beginning including Rombauer Vineyards, Frank Family Vineyards, Inn at the Tides, Prager Winery & Portworks, V. Sattui Winery and Whitehall Lane Winery. Others that have been with us for almost as long are Bennett Lane Winery, Cole’s Chop House, Ferrari-Carano Vineyards and Winery, Ledson Winery & Vineyards, Sequoia Grove Winery, St. Francis Winery and Vineyards as well as Beau Wine Tours and Stagecoach Express & Company. It's relationships like these that we value and hope to continue as the list grows. Our mission has always been to be the best resource for visitors to Wine Country, the one that people look for when they return and folks in hospitality turn to for the most current information on what's happening, where to go and what to do. That will always reamin the same and is a perfect fit because that is something I love to do. When visiting here, I am the one our family and friends call upon to take them wine tasting, sightseeing or to advise them on their travels. My background started in graphic design at the ROP Graphic Arts program at Montgomery High School in Santa Rosa and moved into layout and editing at The Sonoma Index-Tribune. (Or, maybe it started when I was the editor of my second-grade newspaper done on a Ditto machine, or when I designed my first wine label while at Petaluma Junior High!) I even have a 1925 Chandler & Price letterpress for creating artisan invitations, business stationery, note cards and more. Beyond printing, graphic design and playing tour guide, I love cooking for family and friends, hiking and playing most any card game. I have loved living in Sonoma Valley with my husband, Tony Grant for 33 years. We have a son, Anthony Grant, currently living in Georgia and a daughter, Kali Grant of Sonoma (also a graphic designer) as well as our granddaughter, Abigail Grant, also in Georgia. ich and Leslie Frank are two people whose personalities are bigger than life, and so is the winery they founded, Frank Family Vineyards. Rich’s career included decades as head of Paramount Studios and President of Disney Studios. Leslie’s career spanned decades as an Emmy award-winning broadcast journalist and news anchor. In their own way, they captured our emotions by bringing news, tears, sorrow, joy, and laughter into our homes and theatres throughout America. And, for the last 30 years, Frank Family Vineyards has brought joy to wine lovers throughout the country through their consistently remarkable wines and strong community values. Frank Family Vineyards is a leader in Napa Valley. Their slogan “great wine happens every day” is a concept rooted in the winery’s promise to make every guest experience the best – a sense of slowing down and enjoying the best things in life: family, fine wine, and connection with place. There are three tastings to choose from, each with its own focus, such as the Wines of Winston Hill Tasting which explores single-vineyard versatility from Frank Family’s iconic Rutherford estate. Sipping their estate-driven wines, you will learn the history of this unique property, which houses the third oldest winery in Napa Valley. It’s one thing to grow great grapes and produce great wine, however when you blend the art, science, and passion of winemaking with sharing and preserving Napa Valley history, that becomes extra-special. Simply put, a visit and tasting at Frank Family Vineyards will create memories that will last a lifetime, and I speak from personal experience. 15


Magnum is a German Shephard rescue dog and the official winery greeter. During the month of November, 20% of proceeds from Frank Family’s 2019 Napa Valley Cabernet Sauvignon and limited-edition plush dog toys will be contributed to support K9s For Warriors.

FRANK FOR A CAUSE During their respective careers, Leslie and Rich Frank were constantly engaged in “community.” Leslie first started serving the community through her poignant reporting of the news and major events (such as Hurricane Katrina and 9/11), where she reported firsthand, and Rich was a steward for bringing laughter and tears on both the big and home screen with shows and films such as Happy Days, the Little Mermaid, The Lion King, and many others. Today, Frank Family Vineyards continues to honor its founders’ philanthropic ethos by raising funds to support local and national charities covering a variety of causes, from health research to hunger relief and animal welfare. The Frank for a Cause charitable giving campaign was founded in 2018. Annually, a different charity is chosen to partner with, and this year it is K9s FOR WARRIORS. Providing trained service dogs for military veterans suffering from service-related trauma (such as PTSD), this organization not only saves dogs at risk of being abandoned or euthanized but helps improve the lives of our American heroes. This is a project dear to Rich Frank’s heart, in honoring his own father, Hy Frank, a World War II veteran. “Rich and I have cared for and loved many dogs over the years, from Winston, his English Springer Spaniel who was the namesake of our original vineyard estate, to Magnum, our beloved German Shephard rescue and official winery greeter,” says Leslie Frank. 16

During the month of November, 20% of proceeds from Frank Family’s 2019 Napa Valley Cabernet Sauvignon and limited-edition plush dog toys will be contributed to support this philanthropic organization. Not only will proceeds from winery sales be donated, but additionally there will be a nationwide program with Frank Family’s retail and restaurant partners throughout the United States. So, look for restaurants and retailers featuring Frank Family Napa Cabernet and Carneros Chardonnay and be a part of this communal effort to help veterans who have been such an integral part of our country’s heritage. FRANK FAMILY FUN FACTS • The property was originally purchased in 1892 by Lillie Hitchcock Coit (of Coit Tower fame). • The gazebo and bell at the entrance of Frank Family remain from Ms. Coit’s private train station on the property. • The Historic Stone Building on property was built in 1884 and appears on the National Register of Historical Places and listed as a Point of Historical Interest in the state of California. • Frank Family Vineyards opened in 1993, and will celebrate its 30th anniversary in 2023 • Award-winning BUBBLES! Mushroom Madness in Mendocino Countywide Events: November 4-13

From Pinot to Porcinis, Harvest Mendocino kicks off with new fungi trek aboard the mushroom train, wine events, seasonal ’shroom menus and hotel deals

he annual Harvest Mendocino kicks into gear November 4-13, with a focus on the region’s top seasonal gem: mushrooms. An ideal time to savor a taste of place and cash in on a variety of hotel deals, take to the trails, belly up for mushroom-laced menus or tie into a beer or winemaker dinner focused on Mr. Fungi. New Wine Release Recommendations

Local favorites for your Thanksgiving table. Cheers! Seghesio Family Vineyards 2021 Rosato, $30 This is a gorgeous rosé blend of two Italian icons: Barbera and Aglianico. The varietal duo offers a lovely juxtaposition of flavors in a very balanced wine: the Barbera brings fresh acidity and bright fruit, and the Aglianico offers darker fruit, complexity, and weight in texture — it’s a perfect blend. Aromas of strawberry, peach, and jasmine give way to flavors of watermelon and red cherry on the palate. It has a full-bodied mouthfeel with crisp acidity and lots of juiciness. This is a wonderful addition to any Thanksgiving table.

Gundlach Bundschu Winery 2020 Rosé of Tempranillo, $32 It’s not o en you see a Rosé of Tempranillo but Gundlach Bundschu has cra ed a beautiful expression from their cooler microclimate in their estate vineyards. It’s bright in color and zippy on the palate with Thanksgiving-centric fruitiness; dried cranberry and pomegranate dance on a crisp, mineral-driven palate. This rosé is nicely paired with a spread of local cheese and charcuterie.

Lang & Reed Napa Valley 2020 Chenin Blanc, $60 Chenin Blanc is an underrated varietal that should not be overlooked this holiday season. It’s food-friendly and textured and offers lots of fruitiness. Fourteen months of aging in barrel gives this wine noticeable texture, making it a bit more hearty than typical white wines and ideal food pairing with traditional Thanksgiving dishes like roasted turkey covered in gravy. The bouquet showcases a lot of floral notes, while the palate bring together pear, white peach, and a salty minerality.

Flowers Vineyards & Winery 2021 Sonoma Coast Pinot Noir, $55 Pinot Noir from the Sonoma Coast always has a characteristic and pleasant aroma of forest floor and this bo ling from Flowers is no exception—it has that iconic scent that entices from the beginning. It unfolds with additional aromas of blueberry and violet, while the palate leans into more red fruit like cherry and strawberry. Never overripe, this is a balanced expression of this cool-climate varietal. It has juicy acidity and a medium body and is a perfect match for roasted turkey smothered in cranberry sauce.

he countryside near the town of Sebastopol has, for well over a century, been known as “apple country”. Many of the original apple orchards were planted in the 1800s during the Russian fur traders’ journey down the coast, long before commercial vineyards were even a thought. Our beloved heirloom apple, Gravenstein, is a treasured gift of that period and just so happens to be one of the preferred apples of cidermakers for creating small-batch craft ciders. Today, many of those old orchards have been replaced by grape vines, but the mighty apple is still alive and kicking, making Sonoma County a top destination for cider tasting and expanding our definition of “wine country” as we know it. Each of the producers highlighted make varying styles of cider but at the core of each cider house is an undeniable commitment to natural, holistic farming. Using the least invasive methods possible for tilling, irrigation, fertilizing, and pruning has resulted in a deepened connection to the land and strengthened the biodiversity across each orchard.

Ethic Cider

Located north of Sebastopol on Occidental Road, Ethic Cider produces single-varietal and blended ciders using fruit from their USDA certified organic Apple Bottom farm and local organic growers. Owner Ned Lawton believes the key to their pure, flavor-forward ciders is a commitment to and practice of regenerative agriculture. The six-acre, tiered orchard is dryfarmed in sandy loam soils which are ideal conditions for apple growing. The orchard’s proximity to the ocean clocks in at under a 12-minute drive, allowing for an extended ripening season with cool, foggy mornings giving way to long, warm afternoons. The airborne salinity also plays a minor role in the fruit’s coastal nuance, offering layered complexity, lively acidity, and structure. Each apple variety is harvested, pressed, and fermented separately, often on multiple yeasts in either stainless steel tank or neutral oak barrels, to reveal its unique expression. This gives Cidermaker Dwight Harrington a large palette from which to create award-winning, single-apple bottlings and blends. The components are either individually bottled or used to create a blended cider, with one variety as the focal point, to achieve balance and depth. Their tireless approach of respecting the fruit and orchards results in the ultimate expression of the season’s best each year. The Golden Rule Cider was a 2018 Good Food Winner and is comprised of 85% Golden Delicious with 15% each of Jonathan, Rhode Island Greening, and Gravenstein. Floral and robust, this truly dry sparkling cider show notes of melon, vanilla, and honeysuckle [8.4% ABV, $12/500ml] balanced with a hint of nutmeg and citrus acidity.

Eye Cyder

Wearing dual hats during harvest, heralded winegrower Eric Sussman is not only the producer of cult-status Radio-Coteau and County Line Vineyard wines but also the expert cidermaker behind Eye Cyder, a small-batch artisanal cidery located in the heart of apple country. Created as a passion project to preserve local heritage fruits while honoring the agricultural biodiversity of western Sonoma County, his cider apples come from their Biodynamic farm and others from their organically farmed orchard on Barlow Lane. Each cider is made with an intentional focus on regenerative farming, native yeast fermentation, and purity (unfined, unfiltered, no added sulfites). Everything happens within a hyper-local radius–from foraging the fruit and botanicals to where they produce and sell the ciders in and around Sebastopol. What sets Eye Cyder apart from other cideries is their solera barrel-aged method whereby a portion of the previous year’s cider is added to the current blend for enhanced texture and apple flavor. Their “OG,” or Original Gravenstein cider bursts with bold Grav aromas and flavors in every sip as result of the this extra step. For their seasonal ciders, fresh apple juice is co-fermented with whole fruits for maximum infusion like “Bramble Eye” made with Gravenstein apples and wild blackberries and “Skins & Stones” made with Gravenstein apples and Satsuma plums. And the name? The “Eye” is a playful nod to their first farm feline, a one-eyed cat inherited upon purchasing the estate, and the old English spelling of “Cyder” which adds a nice visual complement to the entire name.

Tilted Shed CIDERWORKS

Husband-and-wife owners of Tilted Shed Ciderworks, Scott Heath and Ellen Cavalli, landed in the cider business via a circular route which took them from Alameda to New York to New Mexico then back to Northern California. The cider duo is now firmly rooted, tending their 5.4-acre orchard in Sebastopol which is home to over 120 varieties of heirloom apples and fruits. Using low-input, no-till organic practices, their seedling nursery, fondly called their “pomological research station”, cultivates trees from apple seeds as way to protect vintage fruits which are quickly disappearing off the landscape. This mission to preserve threatened apple varieties and revive lost orchards is accomplished through a delicious crusade of top-notch cider and perry making. Farm fresh apples are pressed on-site at their Windsor-based production facility and tasting room in the Beverage District on Bell Road. Sourcing a wide variety from neighboring apples growers no further than a 15-mile radius, they often experiment with different fruit combinations that when coupled with wild yeast fermentation yield beautifully crafted co-ferment ciders. Aged a minimum of one year in neutral oak barrels, their cider making process is slow and steady yet very much worth the wait. Their Pommeau is aged a minimum of two years and is aromatic, unctuous, and tastes like caramel apple in a glass. Founded in 2012, and the second oldest cidery in Sonoma County, Scott and Ellen take cider making seriously, but their esoteric and vividly colored labels show off their playful side. There’s a fun story behind each one so ask away while you enjoy a flight of five ciders, [$15 per person] freshly poured from-tap. Their ‘2021 We Are All Stardust’ uses local, organically grown Sonoma County apples, feral blackberries from the farm, foraged elderberries from near the Russian River, and a winery neighbor’s Carignan grapes fermented with native yeasts. This stellar cider offers notes of black currant and baking spice, a plush tannic structure, and a coral-hued sparkle.

Far Cider

Growing up in a well-known family of winemakers in Napa Valley has given Far Cider Cidermaker Kylor Williams a unique approach to creating fresh, bone-dry ciders. Made very much like fine wine, Kylor uses neutral oak barrels for both fermenting and aging his small-batch ciders. Only a handful of barrels are made every year and each bottling is done by hand at the family winery facility. He aspires to a Basque-style cider as the prize, noted for its crispness, farmhouse funk, and tangy finish. This Old-World style perfectly reflects his personal taste preference for dry ciders which also happens to be very food friendly. Far Cider is all-natural, made using only native yeast and free of sweeteners, giving even the experienced cider drinker something new to explore. The small but mighty collection is comprised of two ciders – “California Dry” and a three-year, barrel-aged “Vintage Release” cider released every few years. Both are pure expressions of organic apples and are buzz-worthy within the cider community. What started in 2011 as gleaning from trees on the family estate has now grown to sourcing fresh presses out of Sonoma, Napa, and even as far as the Sierra Foothills in search of obscure cider varieties like Ashmead’s Kernel, Black Twig, and Mutzu along with the more common Braeburn, Jonathan, and Arkansas Black. The name? The Far Side cartoons resonated with Kylor growing up, and it’s also a wink to some inside familial humor based on the R.W. Emerson expression “an apple doesn’t fall far from the tree”. If you want the whole story, well, you’ll just have to coax it out of him over a glass of cider.

Serving Most ciders are best enjoyed at cellar temperature which ranges between 50-55°F. Too cold and the beautiful aromatics of a cider are lost. Best to keep the bottle or can chilled then bring it out 15-20 minutes prior to pouring for optimum sensory enjoyment. For very dry, tannic ciders, closer to room temperature is even better.

From crisp and bone-dry, to funky Basque and farmhouse ciders, to elegant, finely carbonated fresh styles more akin to a fine white wine, there’s a wide range in cidermaking… and Pomme has them all. Rick and Jessica pride themselves on featuring many local producers like Bardos, Olde World Winery, Gowan, Dutton Cider to support these small producers that large distributors can’t pick up. Cole’s Chop House has been a mainstay of the Napa restaurant scene for the past 20-plus years. Beloved by visitors and locals alike, the restaurant is rated one of the “Top 100 Best Steakhouses in America” by OpenTable and serves epic steaks and other delectable dishes, seven nights a week. Located in the historic Williams-Kyser building in downtown Napa, the restaurant is owned by the husband-and-wife team of Eric and Heather Keffer, who’ve built an incredible reputation for great food, a fun bar, and impeccable service. LIVELY BAR SCENE In addition to a large and welcoming dining room, Cole’s accommodates guests in its inviting and upscale bar. Featuring signature cocktails, an impressive whiskey collection – the restaurant is also recognized as a “Great Bourbon Bar of America” – a renowned wine list as well as an extensive beer selection, Cole’s bar scene is about as lively as it gets. We asked Cole’s trio of bartenders to tell us what interested them in working for the restaurant, what they like best about their job, and of course, their favorite cocktail to make and to drink.

“Top 100 Best Steakhouses in America” THE TRIO OF BARTENDERS Adrian Chavez – Bartender Being a bourbon enthusiast is what brought me to the legendary Cole’s Chop House but what keeps me here is meeting and getting to know all the local and regular patrons. Along with the traveling guests, it’s always nice to hear the backstories of how people heard about the restaurant. As far as my favorite drink to make, I joke that it’s the one I can drink myself. But in all seriousness, I don’t really have a favorite drink to make. They are all part of the craft and each bartender has their own personal touch. And for me to drink, I enjoy a nice pour of bourbon or, for a cocktail, an Old Fashioned.

The first time I walked into the Williams-Kyser building I was blown away. Then seeing the food, wine, and spirit selection, I knew it was a place I needed to be. What I enjoy about working at Cole’s is meeting people from all over the world. So many people come into Cole’s either for business or pleasure. You can see that they are enjoying their time in Napa and it’s fun to contribute to that experience even further. Saying what my favorite cocktail to make is like picking a favorite child. I enjoy making a cocktail that others enjoy. The ones that are enjoyed will always be my favorite. Following the theme here, my favorite drink is whiskey, I prefer it neat or with a little ice, but if I were to have a cocktail, a good Old Fashioned is my normal cocktail of choice. Jamin Hollabaugh - Bar Manager The food and atmosphere made this my favorite restaurant 20 years ago and I always said I should get behind the bar one day. What I like most about working at Cole’s is learning something new every day. My favorite cocktail to make is the Boulevardier, which employs whiskey, sweet vermouth and Campari, in a variation on the classic Negroni and is adored for its deft balance of bitter, boozy and sweet. As for me, my favorite spirits to try are barrel proof bourbons and rye. As the sole female monarch in China’s 3,000-year-old history, the Tang Dynasty leader was known for her patronage of the arts along with a keen intelligence, strength, and charisma. The second inspiration is Empress M proprietor Margaret Wong: a selfdetermined visionary, entrepreneur, philanthropist and nowrestauranter who built her empire from the ground up, despite childhood hardships in native Hong Kong to become a global business leader and mentor to females across the world. Affectionately called “Empress” amongst her colleagues, the success of Empress M’s innovative menu and storytelling through its décor reinforces her virtues of quality, hard work, and perseverance. The parallel stories of both women are interpreted throughout the eight-room interior and exterior dining spaces using original wall art, Chinese artifacts, and gracious service to showcase China’s eight greatest regional culinary traditions. The menu includes traditional Dim Sum, meat, and seafood-based dishes but easily can accommodate vegetarians and is vegan-friendly too. Their spacious full bar includes all the traditional cocktails and local brews along with one of the largest selections of Baijiu (sorghum-based spirit) on the West Coast. It’s also your new NFL hangout to catch all the games and weekend sports on the largest screen in Napa while enjoying a special fall sports menu.

CHEF’S MENU Each Sunday starting at 5:30 p.m, Executive Chef Peter Huang and his expert culinary team create a stunningly elaborate eight-course tasting menu meant to excite all the senses. TEA CEREMONY Spend your Sunday afternoon at a traditional tea ceremony held at the Empress M. Helpful Tips

Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etique e tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go: • Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.) • Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.

• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those li le sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will! • Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bo le or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bo le). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting). • Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white! • Ask your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries. • Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine. • Bring something to snack on such as crackers, breadsticks or a bague e, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery

GOODªTOªKNOW • Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved wine-growing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed a er it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.

• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape.

• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them. • Enjoy yourself! Be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time. Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind ... let’s go tasting and have fun! • Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bo led: The wine was under the control of the producer, start to finish.

• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat). • Finish: The impression a wine leaves on the palate a er swallowing or spi ing. • Lees: Dead yeast cells from fermentation that se le at the bo om of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”

• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. • Sediment: Residue accumulated during extended aging of a bo le of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.

• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak.
