Hertelendy Vineyards Always Striving for Perfection ... and a Little Unconventionality A self-described nerd, Ralph Hertelendy is definitely not your average winemaker. Passionate about a lot of things – Hertelendy offhandedly mentioned that he speaks five languages – he makes it his mission to try and learn something new almost every day. This lust for knowledge and a bent toward perfectionism has helped Hertelendy hone his winemaking skills over the years. The results have been dozens of awards for his wines as well as repeated high scores from the usual round of suspects like “Wine Spectator,” “Wine Enthusiast,” and Robert Parker’s “Wine Advocate.” Accolades firmly in hand, Hertelendy has devoted himself to creating elegant, small production wines. “It’s my profound passion striving towards excellence,” says Hertelendy adding that there are, “just not enough mind-bending wines in the world.” Quirky and interesting, Hertelendy is also a bit of a zealot when it comes to upending people’s preconceived notions about wine. He likes to throw curveballs about certain varietals, and tease people with interesting labels and tasting notes that turn conventional wisdom on its head. Take, for instance, his Chardonnay. Most people have

come to equate Chardonnay with a light yet buttery flavor profile thanks to early harvesting and relatively short barrel time – eight to ten months on average for a wine that’s on the shelves in under a year. Hertelendy’s Chardonnay is an anomaly using riper fruit that showcases the voluptuous, unctuous nature of the grape at its best. Aged 17-19 months, his is a big, “Hawaiian” style Chardonnay with bold, tropical notes of guava and pineapple. Conversely, his Cabernet is more delicate and Hertelendy describes it as, “elegant and well balanced, not an overly tannic powerhouse.” “I like to make wines that people don’t expect. To do the opposite of what something should be,” said Hertelendy. To make his case, he points to Merlot, an unappreciated grape that has suffered greatly from its portrayal in the film “Sideways.” Hertelendy feels that the disparaging reputation is undeserved. “Merlot can be phenomenally good and complex. Unfortunately, people no longer have an affinity for it. I’m hoping to change that mindset one bottle at a time.” Benefitting from an early nomadic life – living in interesting places like Brazil, and all over Europe with parents of WINE COUNTRY THIS WEEK


international origins – Hertelendy has a strong appreciation for cultural differences. He traces his winemaking roots back some 300 years when ancestors from Hungary brought the family tradition with them to the new world. Growing up, he was allowed child-size sips of wine in the European tradition and soon, was making beer at age 15 and wine ten years later in his parents’ basement. All of this combines in the reverence he brings to winemaking. In addition to the beautiful, highquality wines in the bottle, Hertelendy works hard to capture consumers’ attention with what he calls “Easter Eggs.” Using thermochromic ink, his Chardonnay label changes color when it reaches optimal drinking temperature. There is also a red blend with a glow-inthe-dark label and another that comes to life using augmented reality on a tablet or smartphone. “I like to put a different angle or perspective on things. A fresh spin, as it were,” said Hertelendy. For him, this not only includes what’s on the bottle, but what’s in it as well. >> BY JODY PURDOM

The one constant you may notice from Rombauer Vineyards is the message of joy. Joy of good wines, good company, and good food. In fact, Irma Rombauer, the proprietor’s great aunt, was the author of the renowned cookbook The Joy of Cooking. Rombauer’s Napa Valley tasting room is nestled on a treecovered hill in St. Helena, just off the Silverado Trail. The outside tasting area offers stunning views of the Mayacamas Mountains and landscaped gardens with more than 100 varieties of plants and flowers. During your visit, you can choose from a traditional tasting flight or a “wines by the glass” experience. The tasting flight is a one-hour offering of a selection of wines for up to four guests. Corn Chowder

Servings 6 cups

• 4 slices of bacon, chopped • 1 small onion, diced • 2 small celery ribs, diced • 6 small ears of corn • 4 1/2 cups milk • 2 medium potatoes, diced • 1 1/2 teaspoons salt • 1/2 teaspoon white or black pepper • 1 tablespoon butter Instructions Cook, stirring, in a soup pot over medium-low heat until beginning to crisp, 10 to 15 minutes: 4 slices bacon, chopped Leaving the bacon in the pan, spoon off all but 2 tablespoons of fat. Add and cook, stirring, until tender and slightly browned, 10 to 15 minutes: 1 small onion chopped 2 medium celery ribs, diced Meanwhile remove the kernels from: 6 small ears of corn Set the kernels aside and the cobs to the pot, along with: 4 1/2 cups milk 2 medium potatoes, diced Submerge the corncobs in the milk. Bring the milk almost to a boil, reduce the heat and simmer, covered, until the potatoes are tender, 10 to 15 minutes. Remove the cobs. Stir in the reserved corn kernels, with: 1 1/2 teaspoons salt 1/2 teaspoon white or black pepper Simmer gently until the corn is tender, about 5 minutes. Remove from the heat. With a slotted spoon, remove 11/2 cups solids from the soup and puree until smooth. Return to the soup and add: 1 tablespoon butter Let stand until the butter is melted, then stir and serve.

Wine Tasting

Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go:

• Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • A sk about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.)

• Be flexible Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind-LET’S GO TASTING AND HAVE FUN! • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.

• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!

• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • A sk questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting).

GOOD TO KNOW • Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved winegrowing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed after it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.

• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape. • Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bottled: The wine was under the control of the producer, start to finish.

• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat).

• Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white!

• A sk your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries.

•E at breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine.

• Bring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery • Don’t try to do too much. In general, three to four wineries will fill your day.

• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being.

• Finish: The impression a wine leaves on the palate after swallowing or spitting. • Lees: Dead yeast cells from fermentation that settle at the bottom of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”

• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. • Sediment: Residue accumulated during extended aging of a bottle of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.

• Enjoy yourself!

• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip.

Please be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time.

• Terroir: The accumulation of all conditions surrounding a grape-growing site, including soil, sunlight, daytime an nighttime temperatures, rainfall, drainage, elevation, etc., all contributing to each wine’s uniqueness.

• Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them.
