Founded by the family behind Champagne Taittinger, the méthode traditionnelle sparkling wine house of Domaine Carneros was inspired by the 18th century Château de la Marquetterie in Champagne, France. Located in the Carneros District, the Château was completed in 1989 with no detail spared to showcase its magnificent architecture and grounds. From the grand staircase guiding you through the formal gardens, to the spacious outdoor terrace and conservatory-style salon for tableside service of their estate wines, Domaine Carneros captures the elegance of French wine country in Napa Valley. Maintaining the tradition of visionary female leadership, the now-retired Eileen Crane recently passed the CEO torch to Remi Cohen in 2020 after 30-plus years of winemaking excellence. Remi brings with her more than two decades of wine industry experience and will continue to oversee their iconic collection of vintage-dated cuvees, luxury-tiered Le Rêve Blanc de Blancs and estate pinot noir program. Furthering the winery’s ethos of living light on the land, Remi and team continue sustainable farming practices on their 400 acres of estate fruit to support their on-going commitment to “quality first” every step of the way. Domaine Carneros focuses on water and energy conservation, recycling and composting programs, and a solar collection system thereby reducing their overall waste and minimizing their carbon footprint. They are California Certified Sustainable and hold Napa Green Land and Napa Green Winery certifications as well.

A bit of sparkle for the New Year! New Wine Release Recommendations

Brendel 2019 Young Leon Frizzante Rosé, $38 The Brendel Young Leon is a fun and fruity sparkling made from 100% Grignolino grapes — likely the only sparkling in Napa Valley made with this very limited variety. It’s juicy and full of watermelon and candied red fruit, but never sweet. It’s made in a light, fresh, and flavorful style. It’s lovely for culinary pairing or sipping solo.

Dutcher Crossing Posterity Reserve Sparkling - Blanc de Blancs, $56 A serious sparkling, this offering from Dutcher Crossing hits all the classic notes with aromas of golden apple and brioche. It offers a tantalizing palate with flavors of lemon, golden apple, and minerality. It’s an effervescent and beautiful bubbly with less than one gram of residual sugar.

Frank Family Vineyards 2015 Blanc de Blancs, $55 The Frank Family Vineyards Blanc de Blancs offers up a classic sparkling with playful texture, vibrant acidity, and a balance of citrus and brioche-like notes. Candied green apple, lemon, and hazelnut come together beautifully on the palate. This is a sophisticated bubbly for the holiday season.

Joseph Jewell Wines 2021 Pétillant Naturel, $49 This is a highly aromatic Pet Nat with light bubbles made from Dry Creek Valley Vermentino grapes. It’s fruit-forward with playful notes of citrus and nuts — lemon and lime, crushed almonds, and a hint of white flowers. It’s ideal for pairing with bountiful cheese plates.

Medlock Ames 2019 Sparkling Wine, $75 This is a brand new bottling from Medlock Ames. This sparkler leads with stone fruit aromas of white peach and sweet lemon. The palate is complex with flavors of peaches and orange combined with white flowers and crushed nuts. It’s a well-structured and balanced sparkling fit for holiday celebrations.

Peju Sparkling Trio, $185 The Sparkling Trio from Peju includes one bottle of Blanc de Blancs and two bottles of the Brut Rosé. This is ideal for bringing along to holiday parties or NYE celebrations — or a thoughtful hostess gift for those who’ve invited you into their homes. The Blanc de Blanc shows off crisp green apple and lemon notes, while the Brut Rosé offers pleasant flavors of white peach and flowers.

Pine Ridge Vineyards Sparkling, $18 For those looking for a sweeter option, the touch of residual sugar in the Pine Ridge Sparkling is a good choice. This is a fruit-filled and slightly sweet sparkling made of 96% Chenin Blanc with 4% Viognier — giving it a floral, aromatic lift. This is a crowd-pleaser for a variety of wine lovers, and super affordable for mixed gatherings of family and friends.

Prisoner Wine Company 2018 Unshackled Sparkling, $26 Green apple, flowers, and a touch of minerality abound on the nose of the Unshackled Sparkling. This is a great price for a bottle that is aged 26 months en tirage. It’s full of fruit-forward notes of green apples and lemon and boasts bright acidity. This is a nice choice for pairing with a variety of holiday cuisines.

Sonoma Cutrer 2019 Winemaker’s Release Grand Brut Rosé, $55 Aromas of underripe watermelon, sweet citrus, and flowers lead the way in this enjoyable Brut Rosé. On the palate, this sparkling full of body and bright acidity, with flavors of candied lemon, red cherry, dried strawberries, and brioche. This is well-made and deserves to be sipped with appreciation.

The Importance of Wind and Fog

hink of Petaluma Gap as a giant wind tunnel, fed by cool maritime breezes off the Pacific Ocean at Tomales Bay. Officially established as the 17th subAVA of Sonoma in 2017, more than two-dozen wineries are part of the “Wind to Wine” alliance that promotes this windy fog-driven region that straddles northern Marin and southern Sonoma counties. “The Gap” encompasses 200,000 acres, stretching from Bodega Bay, southeast to Highway 37 at Sears Point on San Pablo Bay, then to the base of Sonoma Mountain on the north side. Here, 4,000 acres are planted to vines: 75% are pinot noir, 13% chardonnay and syrah, 12%. The wines are defined by wind: perky, acid-driven whites, athletic dancer pinot noirs and muscular syrahs. There are scattered plantings of albarino, riesling and viognier, too. Kimberly Pfendler of Pfendler Vineyards says her late husband Peter, who passed away in 2007, began planting vines in 1992. “Some of his early plantings were the first grown in the windiest portion of Petaluma’s ‘Wind Gap,’ including the site now known as Gap’s Crown. The region is like a wind tunnel, with the gaps in the coastal hillsides funneling in cool Pacific breezes and ocean fog from the Pacific through the city of Petaluma and then south to San Pablo Bay.” Although many were involved in establishing the AVA, Pfendler particular credits board president and vintner, Rickey Trombetta Stancliff, vintner Ana Keller, and grower Doug Cover, for being instrumental in making it happen. Ana Keller, Estate Director of Keller Estate, says her family has been farming in Petaluma Gap for 30 years, and has 90 acres of vines. “When we first planted in 1989, we were advised by UC Davis that chardonnay would work, but pinot noir might not ripen, because it’s too cold. We were surprised at how ripe the chard got! Rombauer was looking for grapes and we sold to them

until their own vineyards came online. We were the acid in their wine! We planted pinot noir in 1994, on an east/ west orientation, like in Burgundy. In 2018, we replanted with a NW/SE orientation.” She says that like clockwork, the wind comes up every day at 2pm, from March through October. “This means less mildew pressure and less frost.” Hilary Cline of GUST sources from two distinct sides of The Gap, which she considers “the most exciting new AVA in California.” She explains, “Diamond Pile is on the valley floor, and while that typically means a site will be warmer, in the Gap this is actually our cooler site, as the fog settles in and lingers, and it is more exposed to afternoon winds.” Skins thicken, and blocks here are last to ripen, amping up tannin and savory elements. “Catapult Vineyard sits at higher elevation, so it’s more protected from the wind, and contributes more of the high toned red fruits in our pinots and the lush fruit character in our chardonnay.” Legendary Sangiacomo Roberts Road Vineyard comprises 130 acres at the base of Sonoma Mountain, at the far northern edge of the Petaluma Gap, where the fog settles first and leaves last. Says Steve Sangiacomo, “It sees more wind, fog and coolness than any of our other chardonnay vineyards. This, leads to slower ripening, smaller berries and more intensity in the fruit.” Joe Nielsen of Ram’s Gate works with Roberts Road Vineyard and Gap’s Crown Vineyard, among others, noting the conditions are similar to his estate vineyard on the San Pablo Bay. “We embrace the Petaluma Gap’s maritime influences,” he says.“ The fruit from Gap’s Crown is extremely flavorful and dynamic, without high levels of alcohol.”

Garry Brooks of Brooks Note (est. 2012), makes wines from three different areas of the Gap. Azaya Ranch, on the far west side, lies in Marin County, and is one of the region’s coldest sites. “We usually pick Azaya a full month after most of our other pinot vineyards. It makes elegant, floral wines with great length and a lovely herbal finish.” The Brooks Note Petaluma Gap pinot noir comes from Paradise Vineyard, across from Sonoma Raceway, and Panther Ridge Vineyard, on Sonoma Mountain, east of Penngrove. “The vines at Paradise get blasted by wind from both San Pablo Bay and the Petaluma Gap,” says Brooks. “It’s a cold, beautiful, inhospitable site for growing grapes, which makes amazing wines.” Panther Ridge has volcanic soil, with pumice and basalt, and delivers dark character. Asked which varietal best showcases this unique climate, Ana Keller says chardonnay. “The acid and the minerality make it 100% unique, and very spicy. We get a lot of tamarind in barrel-fermented chards.” Joe Nielsen of Ram’s Gate votes for pinot noir, admitting he has far more experience with it than chardonnay from The Gap. “Pinot noir grapes are often extremely concentrated and fully develop over a longer period of time, creating extremely well-balanced fruit.” Hilary Cline of Gust gives the nod to syrah: “It’s the unsung hero, expressing a complex mix of bright florals and peppery, strong tannins.” Gary Brooks says, “I drink a lot more pinot than chardonnay, so my answer is biased, but I think it’s definitely pinot noir. Higher wind speeds in the gap cause a little thicker skins on the grapes. Because pinot noir is fermented on the skins, I think we see more impact in the finished wines.” Steve Sangiacomo told us, “Both Burgundy varieties are so transparent in their terroir, however pinot noir expresses the trademark Petaluma Gap lushness the region has become known for. The pinot noir grapes in this AVA need a longer time to ripen, allowing them to develop deep, rich flavors with layered complexity.” Russell Bevan of ADDAX, who has sourced from Petaluma Gap vineyards (Pfendler, Sunchase, Five Wells) since 2013, had this observation: “To date, pinot noir has been the pivotal varietal in the Petaluma Gap. Moving forward, I believe chardonnay has a special home in the AVA. They have an incredible freshness and density that make them very unique.”

TASTE THE GAP GUST 2018 Syrah – Smoky aromatics, with dark soy sauce, tamari, barbecued pork and baked plum: intense. Keller Estate 2019 La Cruz Vineyard Pinot Noir – Gorgeous color, aromas of mulled strawberries and ripe cherries, and a beam of cedar running through this high acid, complex wine make it compelling. Fleshy without being the least bit heavy. Keller Estate 2019 Rotie Syrah and Viognier – Sun-baked fennel, seaweed, pine and Australian licorice grace the nose, with meaty flavors of chorizo, boar sausage, basil and oregano on the surprisingly supple, smooth palate. Tannins so well tamed. Ram’s Gate 2018 Gap’s Crown Pinot Noir – A superb example of cool climate Petaluma Gap, with its breeze-driven floral and cedar notes, and its tangy cran-raspberry core, that evanasces on your tongue. Engaging to the max. Sangiacomo Vineyards 2019 Sangiacomo Chardonnay – Divine wildflower, pineapple, lemongrass and guava aromas and flavors are tightly wound around crisp acid; finishes with lemon pudding pie with graham cracker crust. athleen Thompson Hill Kitchen Memories Collection is a new, permanent exhibition of culinary relics, some dating as far back as the 1800s, that is among the largest collections of historical kitchen utensils on exhibit in the United States and the first of its kind at a California winery. Kitchen Memories Collection perfectly intertwines themes of nostalgia, innovation, and culture seamlessly. The exhibit is now open to guests by appointment; reservations can be booked in advance on the Elizabeth Spencer website. Guests will experience the exhibit on a hosted progressive tour and wine tasting that begins at Elizabeth Spencer in the historic 1872 brick Post Office. The interactive multi-dimensional exhibit comes alive on a deeper level by linking each kitchen tool display to video interviews with Hill describing the origin, use and historical relevance of each tool. “We are honored to be the stewards of this unprecedented collection of historical cooking tools,” said Jean-Charles Boisset, Proprietor of Boisset Collection. “Cooking tools are essential to the kitchen, and the kitchen is not only where we gather to create the food that nourishes our bodies; we also feed our souls through the memories we make when we prepare a meal. Everyone has a kitchen memory.” Kathleen Thompson Hill has been collecting culinary tools for four decades. Many are from California, when she traveled inexpensively throughout the state with her husband Gerald Hill, and many others come from around the world, including France, England, Canada, Japan, the Philippines and more. Some pieces date as far back as the 1800s. Kathleen purchased each piece on a budget of $3, until the amount was increased to $8. Since then, Kathleen has amassed the largest collection of historical kitchen utensils on exhibit in the United States. “I am excited to share my Kitchen Memories Collection, its history and the cooking culture it represents, and I thank Jean-Charles Boisset for making this possible,” stated Kathleen Thompson Hill. “Join us to explore your kitchen memories and possibly share them as well. The Sangiacomo Family’s Heart and Soul BY TANYA SEIBOLD

C

elebrating a milestone anniversary this year, the Sangiacomo family has been farming for nearly a century on the most desirable (and oldest) farmlands in Sonoma. On encouragement of his father, founder Vittorio Sangiacomo, a Genovese Italian, came to America in 1913. After working at an Alameda produce farm and later in San Francisco in the garbage industry, fourteen years after arriving in America, Vittorio was able to purchase Eden Dale in 1927, an 1800s ranch with 55 acres of established apple, pear, peach, prune, and cherry trees. Being a farmer at heart, Vittorio developed the orchard over the years using sustainable farming practices to become one of California’s largest pear producers by the 1960s. It wasn’t until 1969 that he and his family decided to shift into grape-growing. At the time, Sonoma and Napa Valley were in their early days of being known for high quality wine grapes. It was Vittorio’s and his children’s visionary thinking which prompted them to take the calculated risk and replant fruit crops to vineyards. It paid off in spades and the family hasn’t looked back since.

Looking Forward Today, only a handful of heritage pear trees stand on the property – a reminder of the family’s humble beginnings and longstanding roots in Sonoma. Their 50 years of farming vineyards, now as a Certified California Sustainable Winegrower, has made the Sangiacomo family’s prized fruit highly sought after. The original Eden Dale property, affectionately called “Home Ranch”, has expanded to 100-acres, which is part of their 1,600 planted acres across Sonoma and Napa Valley producing ultra-premium, cool-climate grapes for more than 85 clients including many of wine’s top cult producers. Vittorio’s grandchildren, Steven Sangiacomo, Mia Pucci, and Mike Sangiacomo, work side-by-side every day running their grape-growing operations and focusing on their own ultra-premium bottlings of Sangiacomo Family Wines, crafted by expert Chardonnay and Pinot winemaker James MacPhail. With open arms for learning and a goal of always producing the highest quality fruit with the lowest environmental impact possible, the Sangiacomo family has perfected the art of grape growing. Through timely and meticulous farming practices including canopy management,

proper varietal and clone focus, and site management, they achieve extraordinary flavor development in their Chardonnay, Pinot Noir, and Cabernet Sauvignon grapes grown in Carneros, Petaluma Gap, Sonoma Coast, and Napa Valley’s famed Oakville district.

Gorgeous Vineyard Views The newer tasting room at the Home Ranch is located just two miles from Sonoma Plaza overlooking the vineyards with panoramic views of their estate and the Sonoma Mountain range. Shaded by old-growth olive trees and umbrellas, the expansive terrace is sectioned into tasting vignettes allowing each group to experience an intimate, semi-private guided tasting with one the winery’s knowledgeable and friendly hosts. The late afternoon breeze off San Pablo Bay keeps the area comfortable allowing guests to relax and enjoy the winery’s offerings at a leisurely pace. Signature Terrace Tasting & Vineyard Experience: A guided wine flight of five current release wines features their Sonoma Coast Chardonnay and Pinot Noir and a selection of single-vineyard wines. The tasting begins with a gentle stroll through the vineyard to learn the rich history of the family’s farming roots, sustainability practices, and commitment to carrying on the family’s traditions in Sonoma as world-class grape growers. Tastings are by appointment Thursday through Monday. Wine tasting is $45 per person, complimentary for Club Famiglia members. The Wine and Food Pairing which includes a personal gourmet cheese & charcuterie box created by a local favorite, Sausage Emporium, is $70 per person, $25 for Club Famiglia members. ENTRECOT For a Taste of Argentina The architect of Entrecot is from Cordoba, Argentina and thus the wine list and menu are highly influenced by the cuisine of central Argentina. For instance, the chimichurri is red as opposed to typical chimichurri. We asked for a side of it out of curiosity and ended up enjoying it immensely with the beef empanadas – which were excellent, by the way. And just wait until you see an order of the 35oz Argentina Short Ribs to Share goes by! Chefs Mercedes Solis and Luciana Arjol’s authenticity along with the dining room’s design will take you on an epicurean journey to remember. The deep blue walls, various decorative baskets hanging from the ceiling, and the plant covered back wall of the bar create a relaxing atmosphere in which to explore new flavors. MORIMOTO ASIA NAPA Iron Chef offers Far East Tastes and Textures Iron Chef Masaharu Morimoto officially opened Morimoto Asia Napa last month, offering Far East tastes and textures to the Napa region. Located at 790 Main Street in Napa, guests can experience an eclectic take on some of Chef Morimoto’s favorite Asian flavors, plus a diverse selection of beer, wine, whiskey, and sake. The menu showcases a vast variety of hot and cold appetizers, salads, soups, dim sum, and signature dishes, including Szechuan mapo tofu, orange chicken, and black pepper steak. The beverage menu offers signature cocktails, sake flights, wine, and draft beer. The 170-seat restaurant provides an intimate dining experience, with Chinese flavors highlighted throughout the location. Upon arrival, guests will be immersed in an upscale ambiance and cultural tastes throughout their dining experience. The restaurant features elaborate designs by BLANK Design, boasting two nine-foot terracotta warriors, dragons wrapped around the dining room pillars, tea drawer cabinets, and hints of Asian gate accents. Morimoto Asia Napa is open for dinner service nightly from 5 to 9 p.m., Monday through Thursday, and 5 to 10 p.m., Fridays and Saturdays. Los Agave’s owner, Ricky Gonzalez spent 20 years gaining valuable experience working in some of Napa’s most popular restaurants. His plan to open a restaurant on the Napa River Walk in 2020 was thwarted by the pandemic so like everyone else in hospitality he had to pivot – and for Ricky that meant starting off with a food truck, which quickly proved to be a crowd favorite at parties and events. In January of 2021 his dream finally came to fruition. Ricky’s goal to share the flavors and personality of Mexico City and Oaxaca are apparent as Los Agave is a treat for your eyes as well as your palate. Tips on Wine Tasting Guidelines and Etiquette to Enhance Your Experience Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go: • Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • A sk about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.) • Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.

• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will! • Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • A sk questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting). • Don’t wear scents into a tasting room (cologne or perfume), and best not to wear white! • A sk your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries. • Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine.

A specific appellation of origin. •B ody: A term used to describe the weight of a wine on the palate. •B ouquet: A term for the fragrance of a wine developed after it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.

•B rix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape.

• Don’t try to do too much. In general, three to four wineries will fill your day. • If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. •M aceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. •M eritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. •M ust: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. •N ose: A term to describe how a wine smells, sometimes used in place of “aroma.”

• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. •S ediment: Residue accumulated during extended aging of a bottle of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. •S ulfites: Chemical compounds of sulfur that act as a preservative in wine.

•T annin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip.
