ON THE COVER: SEQUOIA GROVE WINERY Introducing the New Experience: A Taste For Cabernet A Taste For Cabernet Wine & Food Experience opens new horizons for pairing food with Cabernet Sauvignon. At Sequoia Grove Winery, they believe that Cabernet Sauvignon and other red wines work with a much wider variety of dishes than the typical red wine, red meat “rules” would permit. Their philosophy for wine and food pairings focuses on making small adjustments to prepared dishes in order to preserve or enhance the flavors of the wine. But don’t just take our word for it – come see for yourself!

Napa Valley Cabernet Season

On the heels of Napa Valley’s harvest is Cabernet Season, which stretches from November to April. During this time, visitors can get a taste of newly released Cabernet Sauvignons while taking advantage of the region’s slower pace, lower hotel rates, wider access to winemakers, and new tasting experiences. Not to mention, nabbing reservations at Michelin-starred restaurants has never been easier.

AWARDS AND ACCOLADES

A zest for life and a pioneering spirit helped Sequoia Grove earn early recognition. The 1985 Cabernet Sauvignon won “Best American Cabernet Sauvignon” in the 1987 American Wine Competition. More recently, the winery was awarded “Best of Wine Tourism” by Great Wine Capitals of the World and received OpenTable’s “Best of Wine Country” award for the Terroir Tasting. Finally, high-ranking awards go to Sequoia Grove’s Napa Valley Cabernet which was a 2018 “Wine Spectator” top 100 Wines Award Winner. In that same year, the proprietary Cabernet-based 2015 Cambium blend was awarded 94+ points by Robert Parker’s “Wine Advocate.”

SUSTAINABILITY

With a strong commitment to protecting the planet, the winery is certified sustainable by Napa Green Winery and Land, a third-party certifier with rigorous requirements. Additionally, Sequoia Grove has taken its environmental message beyond the winery by becoming a 1% for the Planet Member with proceeds going to Save the Redwoods League to protect and preserve the coastal redwood habitat. Located in the heart of the famed Rutherford, Napa Valley, and with more than 40 years in the making, Sequoia Grove Winery has come a long way from its humble beginnings in a rustic 115-year-old barn. The winery has established itself as one of the premiere venues for seasonal, chefinspired food paired with their world-class wines. Visit the website to book a private table for one of the incredibly inviting and Instagram-worthy tasting experiences. Sign up for our email newsletter at WineCountryThisWeek.com

CHEF-INSPIRED FOOD AND WINE PAIRINGS

Sequoia Grove has rapidly made its mark as a winery known for bold and innovative wine and food pairings. Winery Chef Britny Maureze consistently pushes the envelope, expertly pairing flagship red wines with less expected elements. Think fresh vegetables and fish rather than the typical red meat. “Britny’s goal is to give guests an ‘Aha’ moment that will demystify a wine and food pairing,” said Congress. “For instance, she’ll pair specific taste elements like salt and lemon to show which ingredients enhance a wine versus those that don’t.” Chef Britny has made a name for herself over the past few years, building an acclaimed five-star guest experience. With a focus on showcasing the winery’s world-class Cabernet, she creates both traditional and non-traditional pairings. For guests, there are plenty of choices that range from high-end tastings paired with food to more casual offerings that can include seasonal cheeses and charcuterie.

Napa Valley’s Cabernet Season: Why Visit Now?

California Wine Institute

On the heels of Napa Valley’s harvest is Cabernet Season, which stretches from November to April. During this time, visitors can get a taste of newly released Cabernet Sauvignons while taking advantage of the region’s slower pace, lower hotel rates, wider access to winemakers, and new tasting experiences. Not to mention, nabbing reservations at Michelin-starred restaurants has never been easier. Photo opps are also endless with brilliant swaths of mustard flowers popping up everywhere. Here’s a Napa Valley winter travel guide blending new and noteworthy. This year marks the 12th annual Winter in the Wineries Passport program. For $60 per person, guests receive complimentary wine tastings at 14 participating wineries in Calistoga, Lake Country, Pope Valley, and St. Helena. Other perks include complimentary corkage at participating restaurants and discounts at Calistoga hotels, spas, and shops. Visitors who are especially interested in St. Helena should consider the “Little Book of Big Experiences” wine passport, a $75 purchase with an $800 value. That gets you wine and food pairings, tastes of rare-batch wines, and private wine tastings at 14 of Napa Valley’s top wineries. While Napa Valley’s wineries are always a draw, keep in mind that the vines only account for nine percent of the county – in other words, there are plenty of other activities to do beyond wine tasting. With off-season temperatures hovering around the mid 60s, it’s an ideal time for getting outdoors, whether that means hiking the trails that crisscross the Mayacamas and the Vaca mountain ranges, biking the Napa Valley Vine Trail, or lacing up your sneakers for the Napa Valley Marathon on March 6, 2022. Don’t miss a walk through the Napa Rail Arts District. Inspired by Wynwood in Miami, the two-mile stretch of murals turned forgotten outdoor spaces into large-scale works of art. No cool-weather visit to Napa Valley is complete without a warming spa therapy. The town of Calistoga was originally built around abundant, natural hot springs. Detox at the new outdoor treatment rooms at Dr. Wilkinson’s Resort & Spa or opt for the signature mud bath treatment at Four Seasons Napa Valley, which recently opened in November 2021. America’s premier wine region not only lures visitors with its stunning vineyards and Michelin-starred cuisine, but also with its selection of accommodations – where the fireplace rivals the pool as the must-have amenity. The best rates can be found now through March enticing guests to stay longer and experience boundless activities. A selection of offers include third night free at Carneros Resort & Spa, Vista Collina Resort, Silverado Resort, and Solage, an Auberge Resort, while the Estate at Yountville, travelers can enjoy 30 percent off best available rates. by planted acreage, a sliver of land bounded by the Stags Leap Palisades to the east and the Napa River to the west. A valley within a valley at just a mile wide and three miles long, the region is defined by the distinctiveness of its soils. The climate, too, is unique. Warmed by the afternoon sun reflecting from the west facing towering rock facades, the vineyards are cooled in the evenings by breezes and marine air from the San Pablo Bay. This diurnal shift results in a long growing season – ideal for late-maturing varietals like Cabernet Sauvignon to develop phenolic complexity and deep intensity. Guests at Vineyard to Vintner weekend will have the chance to fully explore the region while tasting wines and meeting with vintners from 16 famed properties, including Baldacci Family Vineyards, Chimney Rock Winery, Cliff Lede Vineyards, Clos Du Val, Ilsley Vineyards, Lindstrom Wines, Malk Family Vineyards, Pine Ridge Vineyards, Quixote Winery, Regusci Winery, Shafer Vineyards, Silverado Vineyards, Stag's Leap Wine Cellars, Stags' Leap Winery, Steltzner Vineyards, and Taylor Family Vineyards. Tips on

Wine Tasting

Visiting a winery tasting room may sometimes be intimidating, especially if you are not used to wine tasting and aren’t quite sure what to expect. Additionally, Covid-19 has made it necessary for some changes and adaptations. Following the guidelines and etiquette tips below will help enhance your experience as you travel through wine country. Due to Covid-19, there have been changes to the wine tasting adventures. So please before you go:

• Plan in advance. Most wineries are now by appointment and in some cases “as space is available” (should you not have made reservations). Don’t be shy to ask at the last minute, but understand they may be full or be reserved. • Understand that there may be a time limit • Ask about the different tasting experiences and costs. • If you plan to “share” a tasting, ask if it is okay. You may still be charged per person. • If this applies, ask if the winery is dog/child friendly. • Be sure to adhere to individual, local and state guidelines in place at the time (i.e. mask wearing until seated, etc.)

VISIT NAPA VALLEY/DAVID COLLIER

• Be flexible • Don’t be self-conscious to share a tasting (*if appropriate) with your companion – it’s not looked on as being cheap, in fact, it’s smart.

• Don’t worry if you think you don’t know good wine. “Good wine” is what you like. Period. • You don’t have to finish the glass. You are tasting, not drinking – use the dump bucket. Those little sips add up fast. • You don’t have to like everything poured. The reason you are tasting is to see what you do and don’t like. • Take time to smell the roses, or wine! Swirl the wine in the bowl of the glass then take your time, put your nose into the bowl of the glass … and inhale to experience the bouquet. See what fragrances you can identify: Earthy? Lemon? Honeysuckle? Cherry? Tobacco? It’s okay if you don’t identify any of those things, with time and tasting you will!

• Remember the five “S’s” of wine tasting: See (the wine in the glass), Swirl, Smell, Sip and Savor. (Take a small sip. Let the liquid surround your taste buds, what flavors can you identify)? • Ask questions! Remember … there are no stupid questions. You are there to enjoy and learn, and your server is there to help. • Don’t feel pressured to buy a bottle or to join a wine club, (however, if the tasting is free, or if you have a private tasting with a winemaker, it is good form to purchase a bottle). • Leave a tip if you have had a nice experience ($5-$20 is a general rule, depending on the type of tasting).

• Don’t wear scents into a tasting room (cologne or perfume), and try not to wear white! • Ask your server to recommend their favorite wineries to visit. • Seek smaller, out-of-the-way, boutique wineries.

GOOD TO KNOW • Acidity: The level of natural acids in a wine that give it freshness and crispness on the palate. • American Viticultural Area (AVA): A government-approved winegrowing region whose geological and climatic conditions create wines of distinction. A specific appellation of origin. • Body: A term used to describe the weight of a wine on the palate. • Bouquet: A term for the fragrance of a wine developed after it has been aged. Sometimes used interchangeably with “aroma,” which is technically the fragrance of a wine before aging.

• Brix: A grape ripeness scale, used primarily in the U.S., that measures solids (sugars) inside the juice of a grape. • Cap: The top surface of the must, where solids accumulate and are then pushed back down (punched down) into the juice to increase skin contact. • Crush: Harvest season that starts with picking grapes and ends months later with the transfer of wine to barrel. • Cuvée: A Champagne house’s best offering, usually made from the first pressing of grapes; A • Estate-bottled: The wine was under the control of the producer, start to finish.

• Fermentation: The transformation of grape juice into wine as sugar plus yeast convert to alcohol and carbon dioxide (and heat).

WALT WINES, SONOMA

• Eat breakfast before you leave for the day and … hydrate – hydrate – hydrate! Hint: Drink one glass of water for each glass of wine.

• Bring something to snack on such as crackers, breadsticks or a baguette, (but inquire in advance if outside food is okay to bring in). Take time for lunch. When picnicking at a winery, never bring wine from another winery • Don’t try to do too much. In general, three to four wineries will fill your day.

• If possible have a designated driver (or use a driving service). If staff feels you have had enough to drink they may refuse service, it’s for your own well-being. • Trust your palate. Don’t worry if you don’t like what your friends or companions like. Not everyone likes the same things. This is about you – not them. • Enjoy yourself! Please be respectful of all conditions and procedures. Wineries have had challenges to adjust their normal procedures due to Covid-19. Everything they do is to insure your safety, pleasure and that you have a great time. Covid-19 has had many positive effects for wine tasting: More intimate, less crowded, more time to really talk to your winery host. With this is mind ... let’s go tasting and have fun! BY DONALD SONDERLING

(It’s prudent to double check your planned visit, if possible, the day of your visit.)

• Finish: The impression a wine leaves on the palate after swallowing or spitting. • Lees: Dead yeast cells from fermentation that settle at the bottom of a barrel or tank. When stirred in the wine, as done during the aging of Chardonnay, lees add body and creaminess. • Legs: Streams of wine that run down the inside wall of a wine glass. Narrow, fast-moving legs generally indicate low alcohol content and light body, while wide, slow legs usually mean richness and higher alcohol. • Maceration: A time period that allows grape skins to make contact with grape juice, usually before fermentation begins, in order to develop deeper color in the finished wine. • Meritage: The unique American term for a Bordeaux-style blended red wine made in the U.S. from two or more of the five classic red grapes of Bordeaux. Not more than 90% of a single grape can make up a wine labeled as Meritage. • Must: The mixture of unfermented grape juice with the solids from skins, stems and seeds of the grapes. • Nose: A term to describe how a wine smells, sometimes used in place of “aroma.”

• Reserve: Term used by a producer that usually indicates a wine ranked among their highest tier of quality. • Sediment: Residue accumulated during extended aging of a bottle of wine. Red wine sediment is formed by color pigments, tannin molecules and tartrates. White wine can sometimes show sediment of tartrates that appear as crystals. • Sulfites: Chemical compounds of sulfur that act as a preservative in wine.

• Tannin: A primary component in red wine, it is a chemical compound (phenolic) developed in wine when fermenting juice makes extended contact with skins, seeds and stems; also added to wine as it ages in contact with oak. At an elevated level, tannin gives wine a dryness on the palate and causes the mouth to pucker (astringency), but when balanced with other components it provides the necessary structure that gives texture and grip. • Terroir: The accumulation of all conditions surrounding a grape-growing site, including soil, sunlight, daytime an nighttime temperatures, rainfall, drainage, elevation, etc., all contributing to each wine’s uniqueness. opyright: “Nose, Legs, Body!” by Len Napolitano
