ach year the Air Museum pays special tribute to our country’s fallen comrades who valiantly represented our country throughout various wars, paying the ultimate price for our freedoms. The dedication ceremony highlights their military service with a fly-by and flower drop of over 3,000 red and white carnations from a B-25 Mitchell bomber. Visitors will be able to pick up a flower to take home. The Air Museum has been staging the flower drop since the museum was founded in 1996. The white carnations are intended to honor veterans who died in World War I, World War II, and the Korea and Vietnam Wars, and the red carnations honor those who died in more recent conflicts such as Desert Storm, Iraq and Afghanistan. One of the special aircraft on display will be the PB4Y Privateer, similar in size to a B-29 Liberator. In addition to the air show, which gives visitors the rare opportunity to see real vintage aircraft in action, the event will showcase a Lincoln custom armored limousine which was used to transport President Franklin Roosevelt and President Harry Truman from 1942 to 1946. More details will be announced closer to the day of the event. The Palm Springs Air Museum features over 70 flyable and static aircraft on display in four hangars including: the Pacific (Navy) Hangar with exhibits and aircraft used by the Navy in the Pacific Theater during World War II; the European (Army) Hangar which features exhibits and aircraft used by the Army in the Europe during World War II; the smallest hangar which contains the B-17 Flying Fortress, the Berger Youth
Exploration Center (including a F-16 Flight Simulator), the General Kenneth P. Miles Aviation Science Center and Freedom Fighters’ Café; and the Major General Kenneth P. Miles Hangar, which houses the Cold War, Korea and Vietnam War aircraft exhibits.

We’ve known for years that walking is a good form of exercise for seniors...we just didn’t know why. Now a new study not only explains how it works, but why brisk walking is even more effective. Ten years ago, researchers at Leicester University Biomedical Research Centre started looking at genetic data in the biobanks in the U.K. for clues about why seniors who walk seemed to live longer. They didn’t fool around with a dozen or so participants. No, they analyzed the information of over 405,000 people. And now we know: It’s the telomere length. Telomeres (aka leucocyte telomere length, or LTLs) are the “end caps” on strands of DNA, the building blocks of our bodies and an indicator of our biological age. Fast walkers have longer LTLs, and therefore better health ... and longer lives. That same study showed that as little as 10 minutes per day of brisk walking can equate to longer lives. (The Mayo Clinic prefers 30 minutes of activity per
day, possibly broken into three 10-minute sessions.) The best walking pace appears to be 3 mph, although the research data was from wearable tracking devices like those we use to measure steps per day. But there’s more. A study at the National Institutes of Health concluded that the length of the telomeres is positively associated with consuming fruits, dairy, 100% fruit juice and coffee. On the other hand, food and drinks with high amounts of sugar and red meat can negatively affect the telomere length. The study gave a big thumbs up to the Mediterranean diet, with loads of nuts, fruits, vegetables, unrefined cereals, fish and olive oil. If you invest in a pedometer to measure your steps, be sure to look for one that tracks your speed. Ask your doctor about any recommendations they have for the trackers. Foster caregivers for kitten season With the arrival of warmer temperatures comes the anticipated annual explosion of newborn kittens, and this year’s Kitten Season is shaping up to be a busy one for Palm Springs Animal Shelter! While we have seen a good deal of interest in adopting kittens, we continue to struggle to meet the demand for supplies and volunteer foster caregivers. The next installment of our 2022 Kitten Season Foster Classes will take place at the shelter on Sunday, June 5 at 11 a.m. Before kittens are ready for adoption, we rely on volunteer foster caregivers to help these del-

Start Grilling Season With Twist on Burnt Ends
The Memorial Day weekend is a time for recognition and gratitude as we honor the veterans who have given their lives for our country. For many families, this remembrance weekend also signals the official beginning of grilling season. My social circle is swarming with barbeque fanatics. When we get together, we usually slow smoke a whole brisket, and the most coveted of all pieces are the “burnt ends.” I’ll explain: Burnt ends are the smokey, chewy, crispy edges cut from a slow smoked brisket. They’re from the fattiest, juiciest part of the brisket, coated with BBQ sauce then caramelized. It’s truly meat candy. Back in the day, BBQ joints would collect burnt end trimmings from briskets during the week and serve them as a Friday night special. Well, it became such a hit many restaurants started featuring them on their regular menus. What started as scraps became the star of the show! There are two problems with traditional brisket burnt ends: time and cost. So, we’re going to use chuck roast instead of brisket. Brisket can take up to 18 hours to cook, while chuck roast takes about five hours. Chuck roast and brisket usually cost about the same per pound, but a brisket will weigh between 10 and 16 pounds, and our recipe uses a 4-pound chuck roast. We’re going to satisfy our barbeque craving at a frac-

Remove from the oven, add the remaining 2 tablespoons sauce, gently toss again, and return to the oven uncovered for 20 to 30 minutes to caramelize the sauce. 6. Serve on toasted buns with bread-and-butter pickles and pickled onions. Grill some corn on the cob, make coleslaw, and call it good!

To make every bite into burnt ends we cut the cooked roast into small pieces, add barbeque sauce and return to the oven until everything is caramelized, chewy and falling-apart tender.
POOR MAN’S BURNT ENDS • 1 (3 to 4 pound) chuck roast • Dry rub, your favorite or recipe below • 2 tablespoons brown sugar • 1/2 cup, plus 2 tablespoons BBQ sauce 1. Season your chuck roast on all sides with dry rub. 2. Preheat your smoker or BBQ grill within the range of 200 F to 225 F. If smoking, use hickory, oak or mesquite wood. Place the roast in the smoker or grill over indirect heat until it reaches a temperature of 165 F, approximately 2 hours. 3. At this time, preheat your oven to 250 F. Remove the roast
and place in a disposable aluminum baking pan and cover with foil. Bake in the oven until it reaches 195 F to 203 F, approximately 2 hours. Remove from oven and let rest for 20 minutes. 4. Raise the oven temperature to 300 F. Cut the roast into 1-inch chunks. Put it back in the baking pan and sprinkle with brown sugar. Drizzle 1/2 cup BBQ sauce over the meat and toss gently to coat.

Annual Palm Springs Fire Association fish fry returns The Palm Springs Firefighters Association invites the entire community to join them for their 89th Annual Fish Fry on Saturday, June 4 at Ruth Hardy Park, 700 Tamarisk Road. The much loved event, back again after a two year pause due to the COVID-19 pandemic, is slated from 6 pm to 10 pm – and features delicious rainbow trout, corn on the cob, coleslaw, beverages along with live music and dancing through the night. A Jumble of Wait Times for VA Medical Care A recent audit by the Department of Veterans Affairs Office of the Inspector General outlined what so many of us already knew -- that it’s difficult to understand the wait times for appointments and medical care at the VA. It seemed to some of us that the rules changed day by day, that our appointments were at the whim of whatever program was being followed at the time and that there was no transparency about how
those dates were calculated. Turns out that we were right all along. In a perfect world, wait times at the VA always begin with an accurate starting point. If, for example, a veteran wants to seek civilian care because the wait is too long at the VA, he doesn’t qualify for that outside care until he’s waited a certain amount of time. Precisely when that period of time begins is at the heart of the problem. Since 2014, the OIG discovered, the VA has used various methods of calculating wait time and figuring out when the criteria is met to seek civilian care. The rules for those calculations were in writing back to 2014. But without following those rules consistently, wait times varied and wandered all over the place. It didn’t help that the website gave misleading information about how dates were
to be calculated, with differences between wait times for new patients and what was written in the scheduling directive. Enter the OIG, with its excellent investigators who always leave no stone unturned. Interesting facts about Memorial Day Each year on the last Monday of May, Americans celebrate Memorial Day. Memorial Day is a federal holiday that honors and mourns American military personnel who died while performing their duties in service to the United States Armed Forces. Memorial Day has a rich history and one that’s worth revisiting as the nation prepares to honor the sacrifices made by its military personnel over the centuries. • Freed slaves played a role in the establishment of Memorial Day. The American Civil War is the deadliest military conflict in American history, as the Union and the Confederacy each suffered more than 800,000 casualties by the time the war ended in 1865. According to History.com, as the war drew to a close, hundreds of Union soldiers who were being held as prisoners of war died and were buried in a mass grave in a Confederate prison camp in South Carolina. After the Confederate surrender, more than 1,000 now-freed slaves honored those recently deceased Union soldiers during a ceremony in which they sang hymns and distributed flowers. The ceremony was dedicated to the fallen soldiers and served as a precursor to what is now cel-
ebrated as Memorial Day. • Confederate soldiers were honored, too. Confederate losses during the Civil War outnumbered Union losses, and those losses were not forgotten by southerners who survived the war. History.com notes that, in 1866, the Georgia-based Ladies Memorial Association, one of many similar organizations to arise in the aftermath of the war, pushed for a day to honor fallen Confederate soldiers. In fact, these efforts are believed to have influenced General John A. Logan. In 1868, General Logan, a Civil War veteran who was then serving as commander-in-chief of a group of Union veterans, ordered the decoration of Union graves with flowers on May 30. The day would ultimately be known as “Memorial Day.” • It took a long time for Memorial Day to become a federal holiday. Despite tracing its origins to the immediate aftermath
