he Palm Springs Aerial Tramway will operate with extended hours on Monday, July 4. The first car up will be at 8 a.m., the last car up will be at 8 p.m. and the last car down will be at 9:30 p.m. And extended summer hours continue on Fridays and Saturdays with the last car up at 9 p.m. and the last car down at 10:30 p.m. Also, Guided Nature Walks by Mt. San Jacinto State Park Volunteers continue Saturdays and Sundays through September 4. These walks feature a choice of two easy trails–the Desert View Trail, a 1½-mile route beginning at 11:00 a.m. and the Long Valley Nature Trail, a ¾-mile loop beginning at 1:30 p.m. No advance

If you’ve been depending on grocery delivery or curbside pickup for the past two years, you might not know this: Many stores are continuing to have seniors-only hours. I’d tried going to seniors-only hours once two years ago ... but only once. The whole virus/pandemic was so new to us that we assumed that we must shop and stock up for all eventualities, leading to widespread shortages. The crowds that day were so massive that the line went across the front of the store, down the side and to the back. Store personnel were stationed at the door with counters in their hands, only allowing in a set number of shoppers. When I saw a friend coming out, I asked: “What’s it like in there?” The answer: “It’s a nightmare. People are grabbing 10

of everything. Do not go in.” And I didn’t. Recent queries among friends who use seniors-only hours indicate that things are much, much better now in terms of crowds. We know that many items are chronically out of stock. We acknowledge that COVID is still around, and we wear masks. We don’t expect much in the way of variety in our diets unless we luck onto a full shelf of food. Many of us, however, haven’t been to a seniors-only hour for a very long time, if ever. We depend on delivery and curbside pickup. If you’re ready to try seniors-only shopping, call your local grocery and retail stores. While fewer stores are now offering it, some still do. It might be every day before the regular opening, or it might be one or two very early days per week. Take your hand sanitizer and wipe down the cart handles. Wear a mask. The bonus, I’m told, is that’s when fresh vegetables and fruit are put out, and the overnight stock clerks have loaded the shelves. (c) 2022 King Features Synd., Inc.

Getting to know the Declaration of Independence The Declaration of Independence is a formal document that served as the signatory colonies’ statement that they were now “free and independent States.” It is a vital document in American history. On July 1, 1776, delegates from the original 13 colonies, making up the Second Continental Congress, met in Philadelphia to vote on Richard Henry Lee’s motion for independence. After some deliberation, ultimately 12 of the 13 delegates voted in favor. In recognition of those 12 delegates, here are 12 facts regarding the Declaration of Independence. 1. The drafted document was officially adopted on July 4, 1776, two days after freedom from Britain was approved. However, most delegates signed the document on August 2, 1776, while others signed on a later date. John Dickinson and Robert R. Livingston never signed the Declaration of Independence. 2. John Dunlap was the official printer of Congress at the time. He worked all night and into the morning of July 5 to produce the large, single-sided sheet, known as a broadside. About 200 copies of Dunlap’s broadside were made. 3. The University of Virginia owns two copies of a rare early printing of the Declaration. It is on display in the Albert and Shirley Small Special Collections Library. It is believed the copy once belonged to George Washington. 4. Benjamin Franklin, George Read, Roger Sherman, Robert

Morris, George Clymer, and James Wilson signed both the Declaration of Independence and the U.S. Constitution. 5. The Declaration of Independence and the Constitution were hidden at Fort Knox during World War II, two weeks after Pearl Harbor was attacked. 6. Despite what the movie “National Treasure” will have one believe, the message on the back of the document is visible and reads “Original Declaration of Independence dated 4th July 1776.” 7. Richard Stockton, a lawyer from New Jersey, was a signer of the Declaration who later recanted his support of the American revolution. He subsequently swore his allegiance to King George III after being captured by the British. 8. In 1989, an original Dunlap Broadside was found hidden behind a picture a Philadelphia man bought at a flea market for $4. It later sold for $8.1 million. Ultimately, 26 copies of the original prints have been found. 9. The United States celebrates Independence Day on July 4th, even though independence was

accepted on July 2nd. 10. Early on, not everyone in America was supportive of the Declaration of Independence. Partisan politics led to discord. Federalist John Adams was feuding with Republicans and Thomas Jefferson. The anniversary date of the signing was not widely celebrated until the Federalists were no longer involved in politics. 11. The one-year anniversary of Independence Day and the celebration of the adoption of the Declaration of Independence slipped the minds of Congress in 1777. When they remembered it was July 3rd, they planned a lastminute celebration on July 4th, and each year thereafter. 12. John Trumbull’s painting “Declaration of Independence,” which was made into a lithograph replica by Ralph Trembly, hangs in the Rotunda of the U.S. Capitol. It is a fictional depiction of the five-man drafting committee presenting their draft to Congress, and not the signing. The painting shows 42 of the 56 signees, since Trumbull couldn’t get likenesses of all involved. The men featured in the painting were never all in the room at the same time during the Declaration’s debate and signing. The Declaration of Independence is a key document in American history, and its words are celebrated each Independence Day.

Patio Cauliflower Pea Salad • 3 cups frozen peas, thawed • 1 1/2 cups chopped fresh cauliflower • 1/4 cup chopped green onion • 1/4 cup chopped cashews • 1/2 cup fat-free Thousand Island dressing • 1/4 cup no-fat sour cream • 2 tablespoons purchased real bacon bits 1. In a large bowl, combine peas, cauliflower, onion and cashews. In a small bowl, combine Thousand Island dressing and sour cream. Add dressing mixture to vegetable mixture. Mix well to combine. Sprinkle bacon bits over top. 2. Cover and refrigerate for at least 30 minutes. Gently stir again just before serving. Makes 6 (3/4 cup) servings. Each serving: About 139 calories, 3g fat, 6g protein, 33g carb., 385mg sodium, 5g fiber; Diabetic Exchanges: 1 1/2 Starch, 1/2 Vegetable, 1/2 Fat.

• To halve a lot of cherry tomatoes, try sandwiching them between two plastic lids. Press down lightly and slice through the opening to make short work of them. • Quinoa is becoming really popular as a grain alternative. It’s very small and requires rinsing before cooking to remove potentially bitter residue. Here’s a great trick to rinse your quinoa without losing half of it to the holes in your colander: Use a French press coffeemaker. The fine mesh and pouring spout make rinsing a breeze. — JoAnn

Don’t you love it when two seasonal treats collide and make the best summer dessert ever? If a s’more and an ice cream sandwich had a baby, it’d be this! A frozen s’more. No campfire required; this inexpensive frozen s’more recipe is perfect for your Independence Day celebration, but you’ll enjoy making them all summer long. Within this recipe, you’ll learn how to make chocolate ganache. With only two ingredients, simply chocolate and cream, this very versatile ganache can be a glaze, frosting, sauce, or filling for pastries simply by varying the ratio of chocolate to cream.

• Easily thread a needle with hairspray. Spritz the end of the thread with a little high-hold hairspray and pull taut. It will be much easier to thread.

• 15 whole graham crackers (rectangles, not squares) • 3 cups mini marshmallows • 1 1/2 cups semi-sweet chocolate chips • 1 1/2 cups heavy whipping cream • Sprinkles or jimmies (optional) 1. Line a 9- by 13-inch baking dish with parchment or wax paper, leaving extra on the sides to act as a handle later, cutting the corners so the edges lay flat. Make sure you have room in your freezer for this size pan. 2. Break graham crackers into squares and place in a single layer covering the bottom of the pan and set aside. (I found 15 squares fit nicely.) Let the ice cream soften while you attend to the marshmallows. 3. Preheat your broiler to high. Spray a rimmed baking sheet with cooking spray or line with parchment paper. Spread 3 cups mini marshmallows on the baking sheet and broil until deep brown, but not burned, about 30 seconds. Remove from the oven and set aside for 5 minutes to cool. 4. In a stand mixer with the paddle attachment (or a large bowl with a rubber spatula and elbow grease), beat the ice cream on medium-low speed until softened. Add the toasted marshmallows and mix until just combined.

5. Spread the ice cream mixture evenly over the graham crackers. Place in the freezer. While it’s freezing, make the ganache. 6. Place 1 1/2 cups chocolate chips in a mixing bowl. Heat 1 1/2 cups heavy cream in the microwave or stovetop until almost boiling. It’s ready when little bubbles appear on the sides of the cream. Pour the hot cream over the chocolate and let this stand, without touching, for 5 minutes. Then, gently stir the mixture with a spoon until it comes together in a smooth, glossy consistency. Keep stirring. It will come together, I promise. 7. When it comes together, ask the ganache where it’s been all your life and promise to make a batch later to eat with a spoon. Let ganache cool to room temperature. 8. When it’s cool, retrieve the ice cream, which has hopefully frozen again, and spread the ganache evenly over the ice cream layer. (Do this when alone in the kitchen so you can shamelessly lick the spoon.) Now carefully place the mates to your graham crackers on top of the ganache, press lightly and pop the whole thing in the freezer. Freeze for at least 4 hours, or better, overnight. 9. To serve: Remove from freezer. Using the parchment paper handles, lift your creation onto a cutting board. Cue angel choir. Using the graham crackers as a guide, cut into squares. Press into sprinkles if desired, wrap each serving in wax or parchment paper and freeze, or serve immediately. Expect to make this time and time again over the summer because it’s frugal, it’s fabulous, it’s frozen and you’re going to love every single, sticky, scrumptious bite. City of Coachella to host annual Independence Day celebration

The City of Coachella will be hosting their annual Independence Day celebration at Bagdouma Park this coming Friday, July 1st from 6 to 9 p.m. This free family event will feature a handful of carnival rides and games, live music with The Delgado Band, a variety of local food vendors and a fireworks grand finale. As in years past, this event will feature a variety of fun activities for guests of all ages including carnival games such as the balloon dart, ring toss and bushel basket toss, and rides will include Round Up, Swing and the Frog.

Yucca Valley Summer Music Festival kicks off at July 4th event

The Town of Yucca Valley Summer Music Festival is back, returning with six concert events. The concert series will kick off with a 4th of July concert and Fireworks Spectacular event at Brehm Park, then continue with five additional Saturday concerts on July 16, July 23, July 30, August 6 and August 13 to be held at the Yucca Valley Community Center Softball Field. All ages are welcome, and admission is free. The July 4th concert and Fireworks Spectacular will include patriotic-themed decorations and giveaways, live musical entertainment featuring “The Blue Breeze Band”, face painting by Miss Yuc-

The record breakers It seems that the folks at the Guinness Book of World Records are handing out awards for just about anything that anybody can think up, says the Association of Mature American Citizens. Interesting facts about Canada Each year on the first day of July, people across Canada celebrate Canada Day. Canada Day commemorates the anniversary of the Canadian Confederation. On July 1, 1867, the separate colonies of Upper Canada, Lower Canada, Nova Scotia, and New Brunswick were united, forming a single dominion within the British Empire. That dominion was named Canada, which is why Canada Day is often described as “Canada’s birthday.” Canada Day marks a great time to learn more about this beautiful, prosperous country. • Canada is the second largest country by total area in the world. Only Russia has more total area than Canada. • Despite its size, much of Canada is uninhabited. Specific estimates vary, but it’s widely accepted that more than 80 percent of Canada is uninhabited. Occupying the northern region of North America, Canada is, particularly in its northernmost regions, cold, rocky and snowy. That makes much of its northernmost regions unsuitable for human inhabitants. • Canada is often considered the northernmost part of North America, though that’s not necessarily accurate. Greenland lies on the eastern edge of the North American tectonic plate, which means it is technically part of North America, even though its cultural influences are decidedly European. OIG Finds Lax Security at VA Mail Pharmacies The Department of Veterans Affairs Office of Inspector General performed IT security inspections at two outpatient VA mail-order pharmacies to see if they were meeting federal security guidance. Being mail pharmacies (preparing and dispensing outpatient refills of drugs), they rely heavily on IT. The Texas facility computers were past their “sell by” dates, meaning they were no longer getting vendor updates and support. When it came to IT security, there

were 22 critical vulnerabilities on 62 computers and 34 high-risk vulnerabilities on 328 computers. Access controls were an eyeopener. The system was deficient in device lock (which prevents access to systems when users are away from their workstations), ID and authentication of users (knowing who is typing in what), multiple users sharing one high-level account, open computers with no one around in a warehouse, access logs that were overwritten (erased) in 20 minutes and not saved anywhere ... and more. Inspectors even found 98 more computers onsite than the facility thought it had. That Texas facility alone processed over 19 million prescriptions in one year, servicing VA medical sites in six states. It didn’t even get parking security right. VA rules say there can’t be parking right next to a facility in case of a vehicle attack. The VA

medical center police department had even issued a report about there being no physical barriers. When asked, facility managers told the OIG that parking wasn’t an IT issue. At an Arizona facility, the OIG found a similar set of deficiencies: an inaccurate inventory list of computers, multiple vulnerabilities on hundreds of computers, missing software update patches, use of default (fresh out of the package) passwords for security camera systems, with half of the systems not generating audit logs. The facility filled 24 million prescriptions in one year, servicing VA facilities in 12 states. At least the Arizona facility didn’t have vehicle barrier problems, with a hefty metal fence all around it -- although a check of the facility on Google maps showed the gates swinging wide open.8.
