Exceptional Women in Wine Meet several women helping to bring Paso Robles’ liquid gold to your lips. BY DON SONDERLING

Paso Robles, fairly “new” in the history of California wine regions, has a distinctive communal lure. Paso offers an opportunity to be involved in a craft that brings pleasure, and be able to creatively ply your trade. Women are important in all aspects of the winemaking process, whether working in the vineyard, lab, tasting room or as winemakers. Hillary Yount, vineyard manager for Sixmilebridge Vineyards is a fourth-generation California wine-grape grower, saying great wine starts in the vineyard. Hillary has worked for several preeminent vineyard management companies on the Central Coast prior to her present position. In growing terroir-expressive grapes, Hillary describes her philosophy saying: “I want to see how the vines respond without too much manipulation. It’s an ongoing conversation between the growing team and the land. I listen first, and let the vineyard express itself.” This carries over to how Hillary and Anthony raise their two young daughters: To guide and listen to them, letting them express who they are, while forming their own individual personality. Jordan Fiorentini, winemaker for Epoch Estate Wines, grew up with wine in her veins, as her parents started collecting wine when Jordan was six years old. In the fall of 1999, while in her early 20s, Jordan experienced her first California harvest (in Napa Valley), and what a ride she has had since, especially the last 11 years as head winemaker for Epoch Estate Wines. In her own words, Jordan told me: “What drew me to winemaking was the combination of science and art. What’s kept me are the people and places, the ties that bind us all together with mutual love and respect for the product.” Specifically, as a woman winemaker, Jordan reflected: “We are forming groups where we can get together and discuss what it’s like to be a winemaker, wife, mother, etc. This, to me, is really exciting.” One thing (among many) that drives Jordan is being a mentor and positive role model: “I love inspiring all up-andcoming winemakers. Many of those tend to be women, which

is awesome and fitting.” Jordan’s comments about Paso Robles reflect the overall feeling about the people who live, play, and work there: “Paso Robles was the gift that I didn’t know I was going to receive when I moved here, and I am grateful every day for choosing this place.” And Paso Robles is grateful for Jordan and the magic she weaves. Molly Lonborg, since graduating Cal Poly San Luis Obispo with a degree in Earth Science and a concentration in wine and viticulture, has been constantly on the move – learning, exploring and gaining hands-on experience. From working harvest to being a cellar rat, lab manager, cellar assistant, enologist, assistant winemaker, Molly has consistently moved up the ladder, being named head winemaker in 2020 at Alta Colina Vineyard and Winery. As a testament to her passion and success, Molly was recognized as Winemaker of the Month by Wine Business Monthly in 2019. Originally focusing on the science of wine, once Molly really got involved in blending art and science to craft wine, she stated: “The intricacies of the vineyard and the winery completely grabbed my attention and created a passion that I didn’t know existed. Wine has encompassed all things for me with a perfect harmony of art and science.” Molly feels fortunate for the opportunity to be able to craft wines from grapes…and we are fortunate to share in, and taste along her journey. Nancy Ulloa, winemaker/owner of Ulloa Cellars, is a millennial go-getter possessing vision, determination, and unbridled passion. At the age of 12, Nancy migrated from Guadalajara, Mexico. In 2015, she decided to pursue a winemaking career, moving to Paso Robles in 2017. With no previous formal winemaking experience, armed with only her drive and dream, Nancy has become the first (and only) Latina winemaker with her own brand, Ulloa Cellars, in Paso Robles. Nancy relates: “In the beginning it was hard. I had no

formal wine experience, and I couldn’t find other women in the industry who looked like me. However, I have found the Paso Robles community to be helpful, friendly, and uplifting. I have met many beautiful people who have helped me to succeed. People in the community have opened doors without asking anything in return. Dedication and passion are all that is required to be embraced in this community.” The winery name, Ulloa, is a tribute to her mother’s maiden name. With wooden planks over barrels and a notion that this celebration could attract visitors to the fledgling wine region, this annual event has lasted the years as Paso’s marquee showcase of the Paso Robles wine region. Due to the pandemic, the last two years have gone without the annual jubilee which gave the Paso Robles Wine Country Alliance time to reimagine how the festival could be elevated into a whole new experience. Much is new for 2022. There is a new location and a new moniker. Paso Wine Fest will take place at the Paso Robles Event Center which offers many built-in amenities which includes dedicated parking, concessions, restrooms and shade. What continues is the themed weekend which offers visitors the chance to explore Paso Robles Wine Country with four days of wine tastings, winemaker dinners, live music and more. Paso Wine Fest kicks off Thursday, May 19, with two Winemaker Dinners at Thomas Hill Organics and The Hatch. Winemakers cruise the floor sharing their wines and stories behind the label, all with locally sourced and harvested cuisine from these two restaurants. On Friday, May 20, the new Paso Starry Night Dinner takes place at the Paso Robles Event Center. This unique dining experience brings the delicious styling of the KelleCo Project together with some of the region’s most iconic wine brands, including Austin Hope, PaperStreet, McPrice Myers, Thibido, Peachy Canyon Winery, and TOP Winery. This winemaker dinner showcases wine country cuisine and the true stars of Paso Robles Wine Country, the chef, and winemakers! This sure-to-sell-out event seats up to 100, spread outdoors under a warm Paso night sky. Two educational Winemaker Seminars start off the day of the marquee Paso Wine Fest, Saturday, May 21. Winemakers geek out and present wines that are emblematic of the region, with plenty of detail on what makes the soil, climate, and geography so impactful of the wine in glass. Just announced, one seminar will

focus on the icons of Cabernet Sauvignon in Paso Robles and the other will be about organic, biodynamic, and Regenerative Organic Certification vineyards. Audience members will nerd out then head into the Paso Wine Fest Grand Tasting event which brings more than 90 wineries together to share their wines. New and refreshed elements will make the 2022 fest exceptionally fun. Artisan vendors will showcase their wares at a Maker’s Market. Multiple food vendors are serving up delicious wine festival-friendly food, for purchase and tickets include a $10 voucher. Two stages bring on the tunes: three bands are set to perform all day providing a playlist for the people. Guests are welcome to bring in their own picnics, blankets, and chairs to post up in the shade and enjoy the festivities. The new location offers an elevated guest experience with venues within the venue. A VIP Pass offers exclusive parking, a separate entrance, private bathrooms, the DJ Lounge, delectable bites from local chefs, and tastes of Paso’s most allocated wines. After sleeping in on Sunday, May 22, explore the more than 150 weekend activities at the area wineries. This includes barrel tastings, artisanal food pairings, live music, and so much more. Locals and visitors alike are encouraged to head out into wine country to discover a new favorite winery and go case collecting to carry on the Paso Wine Fest experience throughout the rest of 2022. MALBEC Celebrate World Malbec Day, April 17

O

nce referred to as “the black wine of Cahors” in France, Malbec is one of the five Bordeaux varieties that include Cabernet Sauvignon, Merlot, Cabernet Franc and Petit Verdot. Primarily used as a blending grape in Bordeaux blends, it never surfaced as a top French wine due to the grape’s poor resistance to French weather and pests and found it’s main home in Mendoza, Argentina where it was planted by order of the mayor in 1868 by a French botanist. Though presently very popular in Argentina, Malbec also makes its home as a top-rate California varietal. Prior to Prohibition in the United States, Malbec was a significant varietal in California and was used mainly for bulk wine production. After Prohibition, and much later in the mid-1990s, the grape gained more popularity as a component of the American “Meritage” Bordeaux-style blends. Though there are many producers that make single varietal Malbec wines, the grape is still mostly used for blending. In California, the American Viticultural Areas (AVA) with the most plantings of Malbec include Sonoma Valley, Napa Valley, Alexander Valley and the Central Coast. These regions have pockets of hot climates with high elevations where the Malbec grape flourishes the best. Other regions in California with some planting of Malbec include Lodi, El Dorado and Fair Play in the Sierra Foothills, many areas in the Central Coast and Yorkville Highlands in Mendocino to name a few. The best Malbecs have a lifted acidity and smooth tannins and yet, some Malbec can be a bit rough around the edges with it’s added spice and smokey notes which makes it a different wine from it’s elegant and polished Bordeaux brother, Merlot. That being said, Malbec takes a strong position as an excellent wine choice that complements many occasions and food pairings.

The five Bordeaux varieties include: • Cabernet Sauvignon • Merlot • Malbec • Cabernet Franc • Petit Verdot Characteristics of California Malbec Malbec from California offers fruit flavors of blackberry, plum and black cherry. The more subtle flavors of milk chocolate, violet flowers, leather and cocoa are o en present. A sweet tobacco finish will depend on the amount of oak aging. Typically Malbec is aged in oak anywhere from six months to a year. The distinguishing quality of Malbec that sets it apart from all other wines is its color. Malbec has a purple color with a magenta-tinged rim. It’s the tell-tale sign that the wine is Malbec. Because of this inky violet color it is o en blended with Merlot and Cabernet Sauvignon to create the a lovely Claret.

Malbec is an excellent wine choice that complements many occasions and food pairings.

Malbec is a big, bold red wine that tips toward the higher end of the scale for alcohol, acidity and tannin content which makes it a very food-friendly pairing partner. The flavor elements of black cherry and blackberry fruits along with fig-like chocolate and a unique smoke, pepper and tobacco spice allows for this varietal wine to pair well with gamey dishes like roasted and stewed beef, braised lamb, mushrooms, herbs and sausage. Malbec holds up well with meats and a recurring theme for pairing Malbec and food absolutely includes meat, as well as spice. For example, an herbed roasted beef tenderloin with black pepper and marjoram spice is a happy marriage of protein, fat and tannin with a strong round and full finish. The fruitiness in Malbec also complements more earthy meat cuts such as buffalo burgers and venison. Malbec is a particularly nice wine to pair with spicy ethnic cuisines and spice-laden sauces. Some tasty examples include the sweet and tangy combination of a South Carolina barbecued pork or a cumin, paprika and chili pepper paste based beef stew or Thai barbecue chicken skewers. Malbec’s acidity offers enough juice to cut the fat of big meats and put a spotlight on the flavors of the spice without overpowering the dish. For vegetable lovers, Malbec also has a place. The umami characteristics noted in the wine will favor medleys of mushrooms like porcini and portobello and sweet herbs like oregano, basil and thyme. Malbec is also one of the few big red wines that can pair well with pungent cheeses like blue cheese and gorgonzola. Since Malbec has a shorter finish than most bold red wines, cheeses that do not have a long finish will go well with it. For the vegetarian foodie in your life, Malbec is a nice option for cashew creams and cashew-based cheeses and, as mentioned, anything with herbdriven flavors.

Notable Malbec Producers • Castoro Cellars 2019 Malbec, $30/750ml This Malbec comes from Castoro’s own Hog Canyon and Stones Throw Estate Vineyards, with in the Estrel la District sub-AVA, where it does exceptional ly well! It gets color depth, a richness in the mid-palate, and a ton of fruit aromas and flavors. Enjoy it now but the wine will age superbly for five to ten years too. • Calcareous Vineyard 2018 Messer, $65/750ml Darkly colored Malbec dominates the appearance of this wine. The nose is a more balanced mix of blueberry along with Cab Francs' cherry and slight herbal mint. The contrasting nature of the blend shows in the mix of rich and structural tannins that frame black currants and rhubarb. Brightly integrated acid leads to a wonderful fi nish begging for mushroom lasagna or spare ribs.

Beef Crostini with Orange Zest and Toasted Pumpkin Seeds INGREDIENTS:

1 sourdough baguette – thinly sliced Olive oil 1 Valencia orange – zested 1 lb beef tenderloin – trimmed 1 oz blackened spice 1/2 cup pumpkin seeds – toasted CABERNET REDUCTION

2 T shallots – chopped 1 T butter 1 bay leaf 10 black peppercorns 2 sprigs Italian parsley 3/4 cup Cabernet Sauvignon 1 cup beef broth Salt and pepper PREPARATION:

Preheat oven to 425 degrees. Place sliced sourdough on a foil covered baking sheet and brush the bread with a small amount of olive oil. Bake 8-10 minutes until lightly toasted. Remove from oven and cool. Finely zest the Valencia orange and dry in the oven at 350 degrees for 2-3 minutes. Set aside. Rub the tenderloin with blackened spice. Sear first and then roast in a 350 degree oven for approximately 7-10 minutes or until meat thermometer reaches 120 degrees. Remove from oven, cover and let rest. To prepare the Cabernet reduction sauce, sweat the shallots with butter until golden. Add bay leaf, peppercorns, parsley, Cabernet Sauvignon and reduce 60%. Add beef broth and cook until reduced by half. Season sauce with salt and pepper to taste. To serve, slice tenderloin thinly, approximately same size as crostini. Top each crostini with a piece of tenderloin, a drizzle of Cabernet reduction sauce, dried orange zest and toasted pumpkin seeds. Serves 8-10. Riboli Family Wines Continuing The Dream

Looking to the Future In 1917, when Italian immigrant Santo Cambianca founded a winery in Los Angeles, he could not have imagined that San Antonio Winery (named after his patron saint, Saint Anthony) would grow to be a mainstay of the then infant, California wine industry. Twenty years later, Santo brought his nephew Stefano Riboli, from Italy to become a part of, and eventually the head of, San Antonio Winery. Growth through the decades re-formed the company, which today is known as Riboli Family Wines, the emphasis being on the word “family;” and how they have grown! One Step At A Time Dedicated to wine, community, and family, Riboli Family Wines, slowly and methodically grew their business, with each generation of family becoming involved. Today, the Riboli Family locations include the original Los Angeles winery, tasting room and restaurant; the Ontario, California tasting room; a high-tech, state-of-the-art winery and event center in Paso Robles; and the inviting Paso Robles tasting room and bistro. As Papa Steve (as Stefano was affectionately called) said: “It was always about working harder, to leave something for the next generation.” What Papa left was a love of the grape, family, and heritage. Today, headed by Anthony Riboli, (Papa Steve’s grandson), Riboli Family Wines has been taken to new heights – and an expanded purpose. Over the years, vineyards in Napa, Monterey and Paso Robles have been acquired, adding to the overall footprint and presence of this family company. But it is Paso Robles where the Riboli Family has recently made a significant impact. Paso Robles In the past twenty years, Paso Robles has become recognized as a premier grape-growing and wine-producing area of California. With more than 200 wineries in this Central Coast area, Riboli has made a statement about their presence going forward. Always, with an eye to the future, Riboli purchased premium wine producer Jada Vineyard and

Winery less than six months ago. Over the last twenty years Jada has established a reputation as one of the elite producers in California’s Central Coast, and in 2021, their Passing By (Cabernet Sauvignon) was named a top 100 wine by wine critic Jeb Dunnuck. This purchase put Riboli squarely into the mix of ultra-premium Paso Robles wine producers. From one family (Jada) to another (Riboli), the same love, commitment, and quality that Jada established, was seamlessly passed to another family, with a proven dedication to the same principals. Continuing to cement their footprint in the Central Coast, Riboli also recently announced the purchase of their seventh vineyard in Paso Robles. This hundred-acre property, in the El Pomar AVA, specializes in growing Cabernet Sauvignon, Petit Verdot and Petite Sirah. Recognizing the uniqueness of this Central Coast area and terroir, Riboli Family Wines has made a commitment to grow and produce quality fruit, highly regarded wines, and doing so in a sustainable and ecologically responsible manner. The Future As Anthony Riboli looks to his past roots, back to Santo and Stefano, he envisions blending the past vision of Stefano to future generations. “My family has always taken pride in being stewards of the land. We were once farmers from Northern Italy. Today, we farm estate vineyards in Paso Robles that are certified sustainable. Wine 4 Paws Weekend Supporting Woods Humane Society Enjoy the Central Coast’s robust wine region while helping homeless animals cared for by Woods Humane Society at the 14th Annual Wine 4 Paws Weekend, April 9-10 Wine 4 Paws Weekend is unmatched fun for people who love wine and who love animals. It’s very easy to participate, with no registration required. Go wine tasting and buy some wine, or maybe some olive oil. Grab some food. When you make a purchase, a percent of the sale is donated to Woods. Did we say easy? The humans get to go out and support local businesses in SLO County and the animals at Woods continue to get the care and nurturing they need while awaiting a loving home. Pick your option for support – visit in person, or order online. Whether near or far, you can still take part – and make a difference! The wineries are open, with safety-protocols in place, and many require appointments. Supporters who don’t feel comfortable going out or traveling to the Central Coast can participate in Wine 4 Paws by ordering online, by phone, or by email from the participating wineries April 9-10. A variety of shipping deals will be offered, or swing by the tasting rooms to pick up your orders. With limited staff Woods has continued to work tirelessly for dogs, cats, and other fourlegged friends. “I was quite worried about what would happen in March of 2020, and again in 2021 as impacts from the pandemic kept people home and a part. It was amazing to see the wineries and supporters rally to creatively find ways to raise needed funds,” said Wine 4 Paws founder and director Sarah Tomasetti. “In 2020, $43,000 was raised, and last year, a record-breaking $60,000 was raised.
