Castoro Cellars Something for Everyone

It was 1983 when Niels and Bimmer Udsen started their journey of producing world-class wines from Paso Robles appellation grapes. An Emphasis on Sustainability One of the ways Castoro Cellars pursues environmentally friendly practices is by powering its facilities with solar arrays. There are 15 arrays throughout Castoro’s various properties, covering more than four acres. These arrays are custom tailored to completely offset the energy used to operate every aspect of the business from winemaking to tasting room events. Another way Castoro Cellars focuses on sustainability is by dedicating itself to organic and sustainable farming. Each of its 13 vineyards are farmed without the use of synthetic pesticides, herbicides, or chemical fertilizers. Along with being 100% organically grown, every vineyard is also 100% SIP Certified (Sustainability in Practice), and various locations are farmed biodynamically.

Headliners: Grace Potter | The Devil Makes Three | Allen Stone | Cory Wong The Udsen family of Castoro Cellars has announced the lineup for their 2022 Whale Rock Music & Arts Festival. Saturday, September 17th will be closed out by multi Grammy nominated Grace Potter and soul singer Allen Stone. Sunday, September 18th will feature California legends The Devil Makes Three with funk guitarist Cory Wong of Vulfpeck.

Grace Potter – Described by Spin as “one of the greatest living voices in rock today,” and by SF Weekly as “the whole package,” Grace Potter continues to impress both critics and audiences with her musical achievements and captivating live shows. Heralded as one of today’s best live performers, Grace Potter has played every major music festival from Coachella and Lollapalooza to Bonnaroo and Rock in Rio. Her latest album “Daylight” was nominated for two Grammies including Best Rock Album.

The Devil Makes Three – The power of words isn’t lost on longstanding Americana triumvirate The Devil Makes Three— Pete Bernhard, Lucia Turino, and Cooper McBean. For as much as they remain rooted in troubadour traditions of wandering folk, Delta blues, whiskey-soaked ragtime, and reckless rock ‘n’ roll, the band nods to the revolutionary unrest of author James Baldwin, the noholds barred disillusionment of Ernest Hemingway, and Southern Gothic malaise of Flannery O’Connor. In this ninth year, Whale Rock Music & Arts Festival will again deliver two stellar days of wine-loving, peace, and jammin’ in the vines. In addition to the headliners, the always eclectic lineup will include Allen Stone (soul/r&b), Cory Wong (Funk), Diggin’ Dirt (soul/funk), Circles Around the Sun (Instrumental Jam), Lindsay Lou (Folk/Singersongwriter), Niki J. Whale Rock Music and Arts Festival features back-toback band performances on two stages, a gallery of local artists, all-ages yoga, kid crafts and games, Castoro wines, Bethel Rd. spirits, craft beers, hard ciders, food trucks and more. The Udsen family has gifted event proceeds to local, education-based non-profit organizations each year. Total donated over the first seven years exceeds $120,000. The 2022 benefactor is again the Templeton Instrumental Music Boosters Association (TIMBA), a parent volunteer organization dedicated to enhancing the experiences of Templeton High School musicians. All required COVID-19 health & safety guidelines in place at the time of the festival will be followed to offer a safe festival experience.

Atascadero Lakeside Wine Fest Returns June 25 – Celebrating its 25th Anniversary – Imagine walking across plush, green grass with a wine glass in your hand. You reach the pavement and a flash of pink catches your eye. As you look over, you see a flock of flamingos intrigued by the crowd of people that have gathered at the Charles Paddock Zoo in late June. After watching the tall legged creatures for a moment, you begin meandering over to the wine glass painting station. Despite wanting to go try some of the amazing wineries that are present at the event, you want to decorate your glass first, and while you paint, you enjoy the live music echoing around the venue. After finishing your decorations, you begin your wine journey, all the while looking forward to trying some of the amazing birria tacos from the Birria Boyz food booth. Twenty-five years ago, a small group of people gathered to create something captivating in Atascadero. With the support of the Charles Paddock Zoo, the City of Atascadero, and the Atascadero Chamber of Commerce, the team moved forward to create one of the most beloved events in northern San Luis Obispo County. The Atascadero Lakeside Wine Fest is a premier event showcasing wineries from the Central Coast that includes nearly 250 wines from over 80 wineries. In addition, breweries, food purveyors, commercial vendors, and art exhibitors will be spaciously displayed under the majestic oaks at the relaxed and sun-kissed lakeside location. In 2018, the festival was awarded the New Times Best North County Outdoor Event. This is due to the genuine wine tasting experience, abundance of elbow room, inclusion of beer vendors, zoo admission, and the ability to bring your own lawn chair to relax, enjoy live music, and socialize with friends.

Rosé Three Ways by Anna Maria Giambanco DiPietro

There’s just something inherently relaxing about the idea of rosé. The word itself conjures images of seaside strolls, grilled seafood, and vacation vibes.

I

t’s easy to sip, easy to pair, and easy to shop for, as most domestic rosé is simply labeled “rosé.” It’s even become a grab-and-go item available in cans, boxes, and bottles with corks, pop-tops and screw-caps. The perfect libation for picnics, cookouts, lunch dates and beachfront sipping in jaunty hats, rosé is here to stay. Long gone are the days when sweet, sticky swill made from Zinfandel dominated the pink wine sector. These days, dry, elegant rosé is made across the globe using a myriad of varietals and winemaking techniques. From blending whites and reds to saignée, where a small portion of the wine is removed after a few hours of maceration, the sky’s the limit for vintners when it comes to producing rosé, and wine consumers are drinking it all up, literally. Recently, I was fortunate enough to catch up with Karen MacNeil, author of the awardwinning book, THE WINE BIBLE, about the world of rosé and how this magical pink-hued elixir has secured its footing at the forefront of the wine scene. Here’s how she weighed in:

AM: Do you have any suggestions for a starter rosé? I'm thinking of diehard, dry red wine drinkers who’d usually run the other way when offered a glass containing pink wine. KMN: The beauty of rosé is that it’s so easy. It’s a wine for drinking, not thinking. So wine lovers can “start” anywhere. That said, I am especially fond of Provençal rosé because Provence is the “mother ship” when it comes to rosé and also because Provençal rosé is bone-dry and crisp, and therefore terrific with just about every food. AM: Any basic advice for pairing rosé? KMN: Pairing with rosé is also easy. Just imagine any dish that has a southern French “spin,” and you are set. Also, a little-known fact: rosé is one of the few wines that goes really well with garlic, which is why the French drink it with aioli and bouillabaisse. AM: What was the first rosé that left an impression on you? KMN: The rosés that I first got to know were either from southern France or Spain. (Spain, in fact, makes loads of excellent rosé for a song). The other rosés I LOVE are rosé Champagnes. Expensive but sensational. Marc Hebrart is a favorite producer. Rosé Champagne with roast chicken (or any poultry) can’t be beat.

AM: Where might vintners in California look for inspiration when it comes to producing excellent rosé? KMN: California winemakers often want to make rosé out of grapes that, in my opinion, are too tannic. A rosé of Cabernet or Merlot can come off as too coarse. Rosés made from Mediterranean varieties — Grenache, Carignan, and Cinsaut, often work better. You can read more of MacNeil’s thoughts on rosé and other wines at WineSpeed.com. In the interim, here are three of my top picks for amazing rosé along with three recipes for a bit of fun in the kitchen. I hope you’ll enjoy tasting, pairing, and perhaps even learning a bit as you go. Whether you’re serving burrata, crabmeat, grilled sausages, poultry, or prosciutto, rosé loves food. As a matter of fact, Julia Child said, “Rosé can be served with anything.” I’ll not disagree. Put on some music, open a bottle or two, and enjoy the simple pleasures of sipping and prepping a palate-pleasing repast. Saluté

Weeknight Shrimp Scampi

Savory Summer Watermelon Salad

• 5 tbsp butter • 3 tbsp high-quality olive oil • 4 cloves garlic, finely chopped • 1/2 tsp crushed red pepper flakes • 1 pound shrimp • 1/2 cup dry white wine • 1/2 cup chopped parsley • Sea salt and freshly ground black pepper Heat the butter and olive oil in a large skillet over medium flame, then add the garlic and red pepper flakes. Cook for about 1 minute. Add the shrimp and toss to coat. Cook the shrimp until the shrimp turn pink (approximately 2-3 minutes.) Transfer the shrimp to a plate and cover, then add the wine to the pan and cook for 3 minutes. Turn off the heat and put the shrimp back into the pan. Toss to combine it all and add the parsley, salt, and black pepper, to taste. Serve immediately.

• 1/4 c. high-quality olive oil • 3 tbsp red wine vinegar • 4 c. cubed seedless watermelon • 2 medium cucumbers, chopped • 1 c. crumbled Cotija cheese • 1 small red onion, thinly sliced • 1/4 cup coarsely chopped basil • Pinch of sea salt Combine all ingredients in a large bowl. Cover and chill for at least 30 minutes. Garnish with more chopped basil

The nose is complemented with flavors of ruby red grapefruit, cherry and a hint of hazelnut. The balanced structure and richness in flavor create a beautifully refreshing wine. $50/750ml

Seagrape Cellars 2019 Pinot Gris Rosé Hibbits Ranch Vineyard, Sta. Rita Hills Also known as “orange wine” due to the skin contact with these beautiful russet-colored berries prior to fermentation, the soft salmon color beckons, inviting a swirl. Delicate aromas of wild strawberry and almond blossom lead to a crisp and zesty palate full of citrus peel, summer watermelon, and raspberry, overlaid with crisp minerally notes and a hint of garden herb. $28/750ml

Baked BBQ Tempeh • 2 tbsp high-quality olive oil • 2 cups BBQ sauce • 2 (8 oz.) packs of tempeh • Freshly chopped parsley Preheat oven to 375 degrees F. Remove the tempeh from packaging and cut crosswise into 1/4" slices. Coat the bottom of a baking dish with olive oil, then 1/2 of the BBQ sauce. Place tempeh in a single layer over it and top with remaining sauce. Bake for 20-25 minutes. Garnish with parsley and serve warm. Costa De Oro Winery 2020 Pinot Noir Rosé, Santa Maria Valley This lovely Provence-style rosé is made from 100% estategrown Pinot Noir grapes. Using both neutral oak and stainless steel, this rosé is light and bright with notes of honeydew, orange blossom, and a crisp, refreshing finish. Very food friendly or delicious on its own.

It’s a site that Daniel Daou selected for its chalky calcareous soils, matching that of Bordeaux’s soil composition, to craft the highest possible quality Bordeaux wines from California’s Central Coast. His dream as a young man, to become a winemaker, was fueled by motivation and passion. He avidly read wine books and collected wines, and made sure to seek the best possible location to carry out his dreams.

Unwavering Quality The quality of PATRIMONY Estate wines is testament to the extreme focus that co-proprietor and winemaker Daniel has on every detail at the estate. He has crafted proprietary systems for planting structure and phenolics, with high vine density planting on steep slopes and grapes harvested with perfectly ripe phenolics; this ensures that he is able to priduce the most elevated expressions of Bordeaux grape varieties, rivaling First Growth Bordeaux Chateaux and the most cult bottles from Napa Valley. He crafted two proprietary barrels: a five year bois rose barrel made from rare pink wood from pink trees and a Jupille forest barrel—both of which are now some of the rarest winemaking barrels in the world.

PATRIMONY Estate 2018 Cabernet Sauvignon The PATRIMONY Estate 2018 Cabernet Sauvignon is a highly aromatic wine with black cherry, cola, cedar, violet, and a touch of white pepper on the nose. The palate is luscious and balanced, full-bodied and unfolding in complex layers of plum, black cherry, hints of dried blueberry, and vanilla.
