Q+A E
SLO Down with Stephen Ross Wine Cellars by Anna Maria Giambanco DiPietro
very now and then, a really good wine “happens” to you. By this, I mean that it stops you in your tracks; from the first sip to the last, you find yourself smiling ear to ear. This was my experience with a bottle of Stephen Ross 2021 Spanish Springs Vineyard Albariño. Wine Enthusiast awarded the 2020 vintage 92 points, and I’d give this one a solid 98. They also produce outstanding Pinot Noir, Zinfandel, Petite Sirah, Chardonnay, Grenache Blanc, and a Blanc de Noir that I cannot wait to try. If all that didn’t get your attention, I’ll share this: Stephen, his wife Paula, and their team are kind, cool folks who are making great wine in San Luis Obispo. They love educating others about the joys of food and wine, and I recently had the pleasure of chatting with them. AM: Could you tell our readers a bit about how making wine is all you ever wanted to do?
Stephen & Paula Dooley
“Turning sunlight into wine – I get to make it,
and yet it makes itself – all part of the science, artistry, agriculture, and magic of winemaking. Really, it is all I ever wanted to do.” – STEPHEN ROSS DOOLEY
Stephen: “Since I was a teenager, I have been curious about how grapes grow and how wine is made. At that time and now, I am fascinated by the process of fermentation and how it preserves a perishable agricultural product into a stable delicious beverage.”
Paula: “The wine business is a happy business; customers are in the hedonistic pursuit of wine and food, and winemaking is a fulfilling way to spend our time in that we work hard for tangible results. If we want something to happen, we can generally do it. We are constantly educating ourselves on wine, on small business ownership, agriculture and lots of other things.
AM: Paula, what’s your favorite part of being in the wine business, and do you have a favorite varietal?
I have lots of favorites, but the one variety that has my heart most often is Pinot Noir.”
8
Wine Country This Month: Central Coast
AM: You guys produce a lot of that varietal, and your wines have been awarded numerous accolades. Could you touch on your love of Pinot Noir and why you think SLO is a great region for this grape? Stephen: “When I moved to San Luis Obispo to make wine in 1987, I gained an appreciation for cool-climate grape growing. We started our winery in 1994, and the growers in the Edna Valley had just started planting the new Dijon clones of Pinot Noir, and this opened my eyes to the potential for high quality Pinot Noir. I’d like to think this potential has come to fruition in the wines we produce today.” AM: You ventured into the sparkling wine territory in 2019 with your Blanc de Noir. Do you have a favorite food pairing for that bottle, and do you plan to release sparkling wines moving forward? Stephen: “This is a fun project, and yes we have continued to make Blanc de Noir in 2020 and 2021. We are very happy with the results of our 2019. Going forward I hope to disgorge and release the wines with a bit more bottle age. Stand by, we only disgorged half of the 2019, the rest of the wine continues to age in the bottle en tirage. Rather than food pairing, I have two favorite times to enjoy the Blanc de Noir. It makes a terrific aperitif and then I like it again at the end of a meal. I am usually too full for dessert and am not a huge fan of sweet dessert wines, but sparkling wine is a great way to start and end a nice dinner. AM: Terroir is such an exciting topic. Perhaps you could talk a bit about your relationship/take on terroir. Stephen: Terroir is so important, and that is made up of the place, the soil, the climate and the people. The San Luis Obispo Coast is a somewhat unique growing region with cool air temperatures (as a result of being close to the Pacific Ocean) and our position on the planet (low latitude) puts our region almost directly under a very bright sun. The region is cool and very sunny, a wonderful combination.” AM: Anything else that you’d like our readers to know about your facility/wines, etc.? Stephen: “I’d say our winemaking approach is intensely hands-on when it comes to making our wines during harvest/fermentation season, this is in terms of transforming the grape into wine, but hands-off as far as adding things to the wine. High quality winemaking requires state-of-the-art winemaking equipment, and a cool spotless cellar in which to age wines. I believe we have both in our investment in our cellar, and our dedication to cleaning and sanitation.” Be sure to visit Stephen Ross in San Luis Obispo and also check out their Flying Cloud Wines collection. Named after a little airport in Stephen’s hometown of Eden Prairie, MN, they offer excellent value and varieties other than their main line of business. These wines are high-quality overachievers, and with a price tag of only $20. www.stephenrosswine.com
Mark your calendar! Vespara Resort on Pismo Beach Featured Winery and Winemaker Dinner Tuesday July 19, 2022 Stephen Ross will be the featured winery all month long at Vespara Resort on Pismo Beach for July. They will be hosting two onsite tastings at Vespara as well as a five-course meal paired alongside a variety of Stephen Ross wines. Visit www.stephenrosswine.com for details. International Pinot Noir Celebration Friday July 29-Sunday July 31, 2022 Stephen Ross Wine will be participating in the 36th annual International Pinot Noir Celebration (IPNC) Festival in McMinnville, Oregon. The event offers Pinot Noir lovers and wine industry members the chance to enjoy an amazing, global selection of Pinot Noir through a weekend of various seminars, walk around tastings, winery tours, and impeccable meals prepared by top Northwest chefs. OSO LIBRE WINERY BE A PART OF THEIR JOURNEY Oso Libre, which means “Free Bear” in Spanish, was founded by Chris and Linda Behr who purchased the 90-acres in the Adelaida District of West Side Paso Robles in 1996. Fifteen acres of grape vines were planted on the Estate in the year 2000 and three years later was the first harvest of Cabernet Sauvignon. That is when winegrowers Chris and Linda met their winemaking partner and his wife, Michael and Joey Barreto, creating a team that has created many highly awarded vintages for nearly 20 years. As a complement to the wines, the property is also a working cattle ranch that raises Angus cattle and sells the premium beef through its tasting room.

Visit Oso Libre to taste and experience their award-winning wines. They have consistently been recognized with high scores, ratings and awards by the most distinguished publications and competitions (SF Chronicle Wine Competition, SF International Wine Competition, Critics Challenge International, and The Wine Enthusiast, to name just a few). But there is so much more to this winery/ranch than “just” the wine - because there is no “just” about the wines. Vineyard Management: You can’t help but notice the Vineyard Management Team as you drive up to and arrive at the tasting room. The team, comprised of Dorper Sheep, Alpacas and Black Angus Cattle, are constantly at work throughout the vineyard and farm. Grazing continuously, they promote effective (and ecologically responsible) weed control, fertilization and soil management - helping keep the earth healthy and well balanced. Occasionally you will see humans in the vineyards, performing some of the tasks these four-legged workers are unable to. Oso Libre takes no shortcuts in wine production. The winemaking team of Behr, Barreto and Cellarmaster Luis Fernandez let the wines speak for themselves. Minimalizing manipulation, the wines age naturally in barrel. Famed director, Orson Wells, made the following phrase popular many years ago, “We will sell no wine before its time. “Following this proclamation, you will find that Oso Libre ages their wines an average of 36 months, allowing a depth and complexity that
Wine Country This Month: Central Coast
can only be developed with time and patience. Current releases are from the 2018 vintage. These are wines that can be enjoyed now without the need for any additional cellar time. “At Oso Libre, we age the wines, so that you don’t have to,” says Chris Behr. Today’s Practices Protecting Tomorrow’s Future: There has always been a firm commitment to the farming and winemaking practices. OSO LIBRE is a SIP Certified (Sustainability in Practice*) vineyard. Briefly described, this commitment is “a life choice, focusing on habitat conservation, energy efficiency, pest management, water conservation, economic stability and human resources.” As far as energy conservation is concerned, with their use of wind and solar power, OSO LIBRE WINERY has a 0% carbon footprint. This creates an eco-system that protects the future, while producing exquisite wines for you to enjoy. *For more information, go to www.sipcertified.org.
POR VIDA (FOR LIFE) Por Vida, their charitable foundation, is one of the most important components of OSO LIBRE WINERY. It inspires them to work even harder every day. Commitment to the community, both local and far reaching goes hand in hand with a commitment to the environment. Proceeds from Por Vida go to four main causes: Cancer research, Child abuse prevention, Veteran support groups, and Animal protection. Visit Oso Libre Winery for a memorable experience of sipping exquisite wines in a location that is surrounded by nature’s beauty. The hospitality staff includes Jeanine Madson Ellis, Wine Club Manager, Zuridia Garcia, Marketing Manager and Quintin Ruiz, the Tasting Room Manager along with the Behr and Barreto families. OSO LIBRE is a leader and role-model for respecting people and the planet. Be a part of their journey. Cheers!

Sta. Rita Hills Wine and Fire Weekend
Rick Longoria, 2022 Sta. Rita Hills Wine Alliance Vintner of the Year, founder of Longoria Wines.
The Sta. Rita Hills Wine Alliance is gearing up for their annual Wine and Fire Weekend. Four separate events will take place August 18th – the 21st at multiple venues throughout the Santa Rita Hills in Lompoc. Thursday night’s kick off Barn Party will be at The Hilt’s new winery on Santa Rosa Road. Library and large format wines will be poured by the winemakers at a casual walk-around tasting. A country-style BBQ will be served up by Central Coast Specialties along with an array of charcutiers. On Friday night, Rick Longoria, founder of Longoria Wines, will be honored as SRHWA Vintner of the Year as one of the true pioneers of Santa Barbara County. The La Paulee style dinner will take place at Babcock Winery. Wines will be hosted by member wineries and guests are encouraged to bring bottles to share at their table. The evening begins with a sparkling reception from 6 to 7 p.m. The BBQ buffet being prepared by High on the Hog Catering will be served following a short program. This will be an exciting evening as we toast Rick Longoria’s 40-year career. Saturday morning, we are off to Speed Tasting with a Winemaker. This event will take place at Margerum Winery in Buellton and is an opportunity to talk with the participating winemakers while tasting their wines. The winemakers rotate to a different table every ten minutes giving guests an opportunity to have focused conversations with eight local winemakers. A panini boxed lunch, prepared by Cups and Crumbs, will be served at the conclusion of the speed tasting. Participating winemakers include Rick Longoria, Vintner of the Year, Adam Tolmach, The Ojai Vineyard / Fe Ciega, Aaron Walker, Pali Wine Company, Doug Margerum, Barden Wines, Justin Charbonneau, Temperance Cellars, Kathy Joseph, Fiddlehead Cellars, Mireia Taribo, Camins 2 Dreams, Peter Work, Ampelos Cellars.
