‘Tis the season to be Jolly, fa la la la la, la la la la…..Not only because that cheery chubby chap with the big sack will soon be giving out gifts galore but because we’ve survived another year where economic meltdowns, bloody demonstrations, natural disasters and impending doom scenarios have hogged the headlines but not pooped on the party. In 2009, Bed put on some pumpin’ events and brought you amazing international acts like Layo & Bushwaka!, Buddha Bar’s DJ Ravin, Benny Benassi and Anthony Nero. While we had superstars like Ananda, Woody and Tata adorn our covers.

Bananarama were one of the biggest acts of the 80’s so when Bed revealed plans for a new 80’s night we asked Jacquie from Bananarama to give us her top ten tunes. The icing on the cake came when Bed’s Master Chef Cameron agreed to answer your cuisine queries in our new ‘Grill the Chef’ feature. HOUSE MUSIC ALL NIGHT LONG! A true pioneer of Chicago's house scene, Johnny Fiasco AKA Juan Lopez grew up in a predominately Hispanic neighbourhood and was influenced by music at an early age. He perfected his skills at some of Chicago’s first underground "house" parties and in '88 he landed a residency at Smart Bar with Mark Farina. Over the past 20 years, Johnny has become a legend producing a string of Billboard hits and remixing big names like Justin Timberlake, Gloria Estefan, K.d. Lang, Bob Sinclair and Donna Blakely. BIG BEATS FROM LITTLE MARTINEZ Little Martinez seems destined for big things! Born in Basel, Switzerland on Valentine's Day, he was a fresh-faced kid of 16 when he landed his first TV job and shortly after started work at a hip radio station. Inspired by his elder brothers, who were both involved in the hip hop scene, he started spinning electronic music at parties and progressed to play residencies at several Basel clubs. Little Martinez was nominated ‘Best National Newcomer DJ’ in 2005. Since then he’s played alongside notable names like Little Louie Vega and currently holds a residency at Basel’s Red Sessions Club.

How did it feel when your 'Satisfaction' track went massive and high-profile DJs like Carl Cox, Darren Emerson, and Roger Sanchez started singing your praises? It was amazing. It’s a crazy feeling when you have been an Italian resident DJ for years and suddenly all your heroes know your name. It was also unexpected. We all thought 'Satisfaction' was a good club track but we never imagined it would explode to the degree it did. The real credit goes to my cousin, studio partner and producer, Alle Benassi. He wrote the riff! What music influenced you when you were growing up? 80’s electropop and dance. Everything from Depeche Mode to Giorgio Moroder. Did you start as a DJ or a producer? I started DJ-ing when I was a teenager. It’s all I’ve ever done, really. My cousin Alle got involved about 10 years ago. He’s a great musician and he quickly learned everything there is to know about hard-disk recording. We’ve been working together on production since then. What prompted the move from eurohouse to electro? It felt like a natural evolution. I’ve always liked electronic music. Your 'Two Men' mixes of 'Ride on Time' by Black Box were done over 15 years ago. How does it feel when you hear them today? Early days! I was still finding my way. I come from the same town in Italy as Black Box. They were friends, and still are. You’ve remixed everyone from Britney and Madonna to Public Enemy and the Red Hot Chili Peppers. Is there anyone left that you would like to remix? Ummm..The Red Hot Chili Peppers isn’t an official re-mix. Yes, there are some indie artists I really like such as MGMT and some big rock acts, like U2. Which remix was the most difficult to do ? Probably the last one! Shakira’s new single. But luckily I have Alle... How was the crowd in Thailand the last time you played? Great. Actually it was a crazy experience because I sprained my ankle really badly only a few hours before. So I arrived at the club on crutches and sat on a bar-stool when I played. Is there anything you can't eat? I eat everything and really like oriental cuisine. I am careful about my diet, though. I try not to eat too much and tend to avoid yeasts and anything that bloats you. So I rarely eat bread and pasta, despite being Italian! THE ‘MINISTER OF SOUND’ SPINS HEAVENLY BEATS IN BED Chicago vocalist, song writer, DJ and producer, Ron Carroll kicked off his career in the early 1980’s spinning at his dance club The Bangin’ Enterprize on the South Side of Chicago. Just two years into the game, he was opening for Lil’ Louis, Mike Dunn, and the legendary Ron Hardy. Ron used his singing experience in the church choir and sang gospel lyrics over his early house tracks, this unique style led to him being dubbed ‘The Minister of Sound’. He went on to work with the cream of the house scene and laid down tracks with legends like Bob Sinclair, Ce Ce Peniston, Maurice Joshua and Louie Vega.

Tripmain AKA Lucardo Parena’s passion for electronic music was ignited when he left his Zimbabwean home and discovered Europe’s cuttingedge club scene. Bitten by the DJ bug he returned home and perfected his spinning skills in Zimbabwe. Since his magnificent performances in Bed last year, Jesse received recognition at the prestigious Beatport Awards for his infectious ‘Off Da Hook’ track. Actually, I sometimes get the urge to play it when I’m spinning at Bed but have so far been able to resist the temptation. What’s the best concert you have ever seen? Moderndog’s ‘Love Me Love My Life’ acoustic show at Thammasart University five years ago. Everything was perfect the sound, the lights, the songs. What music did you grow up loving? My dad’s old jazz songs. I can’t remember the song names but I can remember the feelings they provoked in me. What’s the strangest request you’ve ever when playing at Bed? It wasn’t a song request, it was the time that someone asked if they could touch the vinyl while the record was spinning. Weird! What nights do you spin at Bed and what style do you play? Wednesdays and Sundays. I spin soul, nu jazz, broken beats and good house music. Finish this sentence – Bed Supperclub is…….. a superb club.

How’s life in Bed? Very comfortable. Things have been going so smooth since my very first day on the job that I started to wonder if I was missing something. Then it dawned on me that I am where I am supposed to be and doing what I was meant to do. It also helps that my staff have been so well trained by the previous chefs.

When she walked in she was full of praise saying how beautiful the cake looked and what a great job we had done. She was very understanding when we warned her not to cut too deep into the cake for the photo because the polystyrene would make squeaking sounds and not to let it burn too long or the room might fill up with poisonous fumes!

Where were you before you came to Bed What inspires you? Good people, good energy and a happy environment Supperclub? I’ve been in Thailand for about two and a half years now. I spent 18 months as the executive chef at Da Maurizio's in Phuket and prior to my position at Bed I was a consultant at Eat Me in Bangkok.

Best piece of advice you would give a home enthusiast?

Is there anything you can't eat? I try everything once. One time in Taiwan I sampled that famous stinky tofu and really, there is just no need for that.

Befriend a chef and spoil them rotten. Cook the food that you enjoy eating and cook to please yourself. Also, remember recipes are only a guideline.

Funniest kitchen incident? You could ask this question once a week and I would never run out of stories. When I was working at the Museum of Contemporary Art in Sydney we catered for large high-end functions. One time this posh lady was arranging her plush wedding reception and wanted the wedding cake to be an enormous bombe Alaska – that’s a variation of baked Alaska which calls for dark rum to be splashed over it Lights are then turned down and the whole dessert is flambéd while being served. We were told the guests would receive individual single portions that would be made separately. Come the night of the wedding we had the individual ones in one freezer and the huge three tier wedding cake in another freezer. The main cake just needed to be assembled, covered in a meringue and set alight with alcohol. About five minutes before we were due to assemble it we discovered to our horror that the freezer had broken down and the cake had melted into a sticky gooey mess. Panicked, flustered and desperate we quickly covered some polystyrene boxes in meringue and sent word to the bride to come to the kitchen immediately.

THAILAND’S SEXIEST ROCK GODDESS OH+ RETURNS

Hi, how’s it going? Frantic but fantastic! I’m in the middle of a tour of the provinces to promote my solo single. I’ve been everywhere from Phuket to Udon! I decided not to tone things down for audiences in the sticks so my outfits have been causing quite a stir upcountry. Tell us more about your solo project. Its part of the GMM’s ‘Green Light Project’. I’m doing two tracks for them. The first is a song called 'Suicide'. I wrote the words about five years ago. It was inspired by a friend who was constantly getting suicide threats from his ex-girlfriend and every time he ran back to her. You played all over the world with Futon, which place was most fun? Actually it was here in Bangkok when we played the Fat Festival a few years back at the ‘Dan-ne-ramid’ funfair park. We were the last band on and seconds before we walked on stage the heavens opened and sent down the heaviest storm of the year. It was so fierce that we were hammered with rain that was swept sideways by the torrential winds. Instead of running for cover the crowd of around 10,000 people went mental and started jumping around like crazy. Have you stopped painting now? No way! I could never stop. At the moment I’m incorporating my drawings into a pocket book called ‘Travelogue by OH+’. I write about the places I visit with the band and do illustrations to accompany the narrative. 'Lips' magazine has been serialising the stories. What do you do with your free time? I read, paint, play with my nieces and grow plants. My favourite flower is the lipstick flower but I call it monkey juju because it looks like a monkey’s penis. What about your new band, Goo? We’ve just done our debut show in Vietnam. It was pretty scary doing the first show with a new line-up but the minute we walked on stage it felt so right that my fears faded and the show was awesome. The sound is a lot darker and deeper than Futon. It's like a different band completely. What’s it like being in a band with our editor? Any dirt to dish? Hahaha.. You wouldn’t be able to print it even if I told you! But seriously, he’s like my big brother. If ever I have a problem I always talk to with him about it. He knows a million things that I don’t but we still think the same way. We were even born on the same day – not the same year though!! Hehe. What was the highlight of the last decade for you? Playing at the CSD Festival in Berlin last year. We played live in front of 350,000 people. It was definitely the high point of the last 10 years. Is there anything you can't eat? Yes those medium-sized red chili peppers.

How’s the restaurant? Excellent!! Reuben Kimber (Dorchester, Babington House) and the two Thai chefs that reside in the restaurant claim they can prepare anything that your heart desires. Dine under the sun or stars on the teak beachfront terrace that has a purpose-built barbeque. The terrace can accommodate an intimate gathering with a few friends or a large party depending on your needs.

Sea Bass 160 g per person Herb Crust Broad Bean puree Mashed Potato Prosciutto julienne Lemon wedge Olive Oil Micro herb Place a portion of fish onto baking paper that has been smeared with butter. Cut out a piece of the bread crumb mix so that it fits perfectly onto the fish (you might have to re-press on the bench so that it is compressed and won’t fall apart). Place it in the oven 170 degrees celsius to cook making sure the fish is cooked correctly and that the bread mix is a nice golden brown. (The time varies depending on the size of the fish, for us it takes about 17 min.) Add a pinch of prosciutto to a small amount of broad bean puree, place in the centre of the plate and add some mashed potato. Place the fish on top. Drizzle with extra virgin olive oil. Garnish with lemon wedge and micro herb. Herb crust 1 med 2 clove 1 Tblspn 1 Tblspn 1/2 Tblspn 1 Tblspn 1 Tblspn 2 pc 1/2 loaf

Spanish Onion / finely chopped Garlic / finely chopped Basil / finely chopped Parsley / finely chopped Sage / finely chopped Semi-dried Tomatoes / julienned Capers /chopped Anchovies / finely chopped Fresh Breadcrumbs (not dry)

Herb Crusted Sea Bass, Broad Bean and Prosciutto Puree, Boundary Extra Virgin Olive Oil

50 ml Olive Oil 75 g Butter 3-4 tblspn Parmesan Cheese / grated In a large pan heat oil and butter. Add onion and garlic and some salt and cook slowly on a medium heat until soft ..but do not brown. Add anchovies and capers and cook a further 5 min. Add the semi-dried tomatoes and cook 5 min. Add the herbs and cook 5min. Add the breadcrumbs( the mixture should hold together‌ not too wet or too dry). Turn off heat and add the parmesan. Taste and check for seasoning salt and pepper. Flatten on a tray and allow to cool. Broad bean puree 200g Broad Beans 1 clove Garlic 2 pc Shallots 100 ml Chicken Stock 25 ml Olive Oil 1/2 Tblspn Butter 40 ml Cream Slowly sweat shallots and garlic in the butter and olive oil with some sea salt ..do not brown. Add the peeled broad beans cook 2 min. Add the chicken stock so that it just covers the cream. Simmer until the broad beans are cooked and the liquid reduces a little. CHEF CAMERON SOLVES YOUR CUISINE QUESTIONS.

I’m thinking of buying a Kenwood Chef Food Mixer with all the attachments is it a good investment? Well they look great and are perfect for making meringue but more often than not I prefer to whisk by hand, especially foods like mayonnaise where a hand whisk gives a much softer result because the fats in the emulsion are not over worked.

I want to make some new meals. How can I get out of my cooking rut? Get inspired and dine out at restaurants that you don’t normally eat at. That way you’ll get a taste for new dishes and innovative recipes. Another idea is to have friends over and get everyone to bring over a dish based on a particular theme. You can then compare notes and discuss the dishes.

Is stock easy to make?

What’s the best method to make scrambled eggs? Knowing how to make good stock is a useful kitchen skill. As well as flavour and depth, stock also adds an extra bit of nutrition to a dish. Chicken and fish stock are very simple to make. A good beef stock takes a lot longer because to get that deep flavour you have to roast the bones and veg first. The golden rule for stocks is that you must stick around while they are cooking to keep skimming the impurities off the top

Top of the Stocks ! Here’s the best five veggies to add to your stock Carrots – peel and trim ends. Celery – trim ends, heart (if not eaten), and leaves (do not use the dark leaves or ends as they are more bitter). Fennel – tough outer leaves, heart, and trim ends. Will add a very strong licorice flavor. The feathery leaves can be finely chopped for green salad or potato dishes but don’t add too much as it has a strong flavour. Garlic – clean skins and trim ends.

Nothing beats a good scrambled egg. In a bowl add your eggs, cream, sea salt and cracked black pepper. Don’t whisk the eggs to much, just break them up with a folk. Put a pan on a medium heat with some butter (butter makes the final consistency soft and oil will make it harder). Pour in your mix and using a wooden spoon just slowly scrape the bottom of the pan - don’t break it up or scramble it. Remove from heat when its 3/4 cooked and still a bit wet by the time you get it on the toast and at the table the texture will be perfect!

Help! I keep getting ants in my kitchen. If you have ants in your pantry and cupboards they are probably coming up through the cracks so sprinkle a good amount of talcum powder and as they crawl up the fine powder it will suffocate them.

Onion (includes other alliums like leeks & shallots) – clean skins. Don’t use any with black mold and don’t use the dark green part of the leeks. + I do like to add tomato in some veg stock as well, depending on what you are using the stock for.

‘Sor’ point. It’s not just that banning and cutting of a film are still possible that makes the announcement of the new Thai motion-picture industry’s ratings system worrying – but more the formulation of the new สงเสรมิ (promote) category. The existence of such an official endorsement allows (and will possibly even encourage) censors to act corruptly, pocketing bribes for an official stamp of approval, and will mean some films may undeservedly find a blessing that could easily turn on the masses helplessly to didactic, preachy poppycock and pointless, saccharine fluff.

Thai architect Duangrit Bunnag's Magic Mirror, housed on the third floor of True’s Siam Square boutique store, is a cleverly understated piece of function-led design that ensures that you never have to leave the fitting room to show off what you’re trying on – as the electrical current that charges the crystaline film that renders the walls opaque (for while you’re getting changed) is disengaged when the door is pulled ajar, allowing the glass to return to its transparent state when you’re ready to parade whatever you’ve picked from off the rail. With either malfunctioning units or unverifiable footage, CCTV has come under some scrutiny in Thailand of late. Reason enough for suburban hi-so shopper oasis The Crystal to stick its neck out and offer customers that little extra bit of personalised car park care in the shape of security guards strategically sat aloft in Baywatch high-seat beach chairs? Clearly a deftly simple, wholly innovative design move/product context switch, but only time will tell how effective it is. While we were there the guards we saw appeared upright and hawk-like exposed by the bright midday sun – even though the car lot was empty. What’s the story? Vincent Price breathes life into his camp horror hero, the eminent Dr. Phibes. Price awakens from a decade of suspended animation and heads to Egypt with the corpse of his dead wife… which he intends to resurrect by murdering people in strange and heinous ways to invoke a magical incantation. The dreadful deaths include someone being stung to death by scorpions, being eaten by an eagle and a golden snake piercing someone's skull, all of course are peppered with camp panache.

Quote Dr. Phibes: Sleep on, my sweet Victoria, for regal claws of noble birds guard well your place of rest. For those poor fools that dare intrude, the penalty is death. In his last lines in the movie Phibes sings: Somewhere over the rainbow, blue birds fly / Birds fly over the rainbow, why, oh, why can't I?

Film Facts Moments before being crushed in a giant press-screw, one of the actors can be seen reading the book "The Turn of the Screw". Actor Peter Cushing was originally scheduled to play a much bigger role but due to his wife's ailing health had to take a much smaller part. The film was to be followed by a third Phibes movie, The Brides of Phibes or Phibes Resurrectus. It would have had Phibes protecting his secret of eternal life from a group of Nazis, whom he would kill off one by one. Phibes star Vincent Price is the creepy voice on the beginning of Michael Jackson’s ‘Thriller’. For his payment he was given the choice What’s on Dr. Phibes’ iPod: between taking a percentage of the album sales or $20,000. Poor Zombie -The Cranberries Price opted for the cash and lost out on the millions he would have Walk like an Egyptian – The made in royalties. Bangles Movie Goof We are the Dead – David Bowie Be Stiff - Devo As the movie reaches the climactic scene Dr. Phibes is waiting to Don’t Fear the Reaper – Blue board the boat. Is there anything that you regret writing? I once wrote to a magazine editor, having heard a rumour that I’d been sacked as a columnist, to say that I wasn’t sorry as the title was going downhill. The editor replied to say that nobody had sacked me, but that perhaps I should resign anyhow. Kinda regret that email.

Which book do you wish you had written? 'Crime and Punishment' by Fyodor Dostoevski. It’s a masterclass in thriller writing, though I don’t fancy being exiled to Siberia as he was.

What are your thoughts on censorship in literature? In the UK, there are moves to print age guidance on the back of books for teenagers. I am totally I was a late starter with books. I just didn’t engage opposed to this. Books should be available to with words. Then I read 'Lord of the Flies' by William everyone. Golding, and it blew me away. Kids going feral – a heady cocktail of cruelty, nobility, ambition, fear What’s the most important message a child and innocence.

What was the first novel you read?

Which book have you read the most times? 'And the Ass Saw the Angel' by Nick Cave. The life story of a mute outcast, recounted in his last moments on this earth. It’s lyrical and potent from start to finish, and populated with drunks, preachers, perverts and deviants. The story is weirdly uplifting, as if delivered from an unsteady pulpit.

I’m from a new generation of writers for children who don’t aim to push messages or moral guidance. Regarding the social issues within my books, I just hope to raise questions rather than provide answers. If they provide a springboard for conversation, that’s fine by me.

Pitch us your latest book in less than 30 words. What’s your favoured distraction when Die Hard for geeks. That’s it! you’re procrastinating? What prompted you to write young adult fiction? My books are written from the point of view of individuals getting to grips with their identities, living in harsh environments where death looms large, but they can be read by people of any age. We’ve all been 10, 12, 13 … after all.

Back in the days when we rolled our ripped jeans up to our ankles, went bug-eyed playing Centipede, Ronald Reagan was technically still alive and the Atkins Diet was a glimmer on the low-carb horizon, the hip drink to sip through curly straws was the mid-1980’s classic cocktail ‘The Grasshopper.’ Put on your pumps and trench coats, backcomb and big up your hair, get heavy with the blusher (yes, you too guys – it’s the 80’s) and moonwalk down memory lane with a Grasshopper. The Classic Grasshopper 3/4 oz Green Crème de Menthe 3/4 oz Crème de Cacao 1 oz Cream Garnish with grated Chocolate Pour all ingredients except grated chocolate into a cocktail shaker. How often do you publish this magazine? Bed Sheets Magazine is published every two months. Although Thai law states IDs are supposed to be checked at all clubs/ bars, this is rarely enforced. Unless of course, you are a very high profile venue like Bed. So, although we know it can be a pain, the Thai police have specifically asked us very nicely to check all IDs. In addition, we also must ensure that all guests are over the age of 20. Why is the wine so expensive? Yeah, we know this sucks but Thailand is subject to an outrageous 400% tax on most wines, which bumps up the price tremendously. Even locally produced Thai wines are cheaper to buy in Paris. May we book a corporate event / private group dinner at Bed? Yes, of course. Where is your chef from? His name sounds Scottish but our Executive Chef, Cameron Stuart is actually Australian. He grew up in the Hunter Valley region. Cameron started cooking in 1989 and spent most of his 'chefing' time in Sydney and Canberra. Prior to Bed Supperclub, Chef Cameron was the Executive Chef at Da Maurizio’s in Phuket. Are Bed Supperclub and Supperclub, Amsterdam run by the same people? What’s the difference? Although both venues have a deep mutual respect for each other, we have different owners. Spot the difference: Bed Supperclub, Bangkok opened in September, 2002 – Supperclub, Amsterdam in 1991. Bed Supperclub, Bangkok’s restrooms are split “Male / Female.” – Supperclub, Amsterdam’s restrooms are split ‘Gay / Straight.” Bed Supperclub’s architectural design company is Orbit – Supperclub, Amsterdam’s architectural design company is Concrete. This dates back to an ancient tradition. In the old days when water buffalos were used as the primary mode of transportation, stopping for anything or anyone meant the possibility that night would fall before you reached home. After nightfall, if you were still on the road and not tucked up in bed then the demons of the night – mostly mosquitoes and ghosts – would see to it that you would not be returning home anytime soon. Hence, to this day, we see heavy speed on the streets and no one stops for no one. It’s crazy – be careful out there.

NICK ANTHONY Founder of Indigo Real Estate and writer of children’s books, Nick Anthony is also the man behind the plan to bring an endless summer season to Phuket.

Why did you suggest rebranding Phuket’s ‘low season’ as a ‘summer season’? Phuket boasts a myriad of cool things to do all year round. During the December / March period attention focuses on the island’s white sand beaches and crystal blue waters. The April / August period is more action orientated with people surfing, mountain biking, east coast boating etc. The October /November period is traditionally our wettest period but between the storms we are spoiled with weeks of unbelievable beauty and calm and NO tourists! So we decided to cancel the low season and replace it with an endless summer. How come you settled in Phuket? I was HK based for 10 years living what I thought was the good life; a great apartment, an excellent business and a busy social life. However, one morning after returning from a trip to Phuket I awoke to find a haze obscuring my stunning harbour view. When I realized it was pollution from China I called a moving company and said “come pack up my apartment, I am moving to the beach”. Has being in Phuket influenced the way you view the world? Is there a world outside of Phuket?

What’s Phuket’s best kept secret? I have two that are close to each other. One is the Reggae Bar on Bangtao beach (can’t give the exact location because it wouldn’t be a secret anymore). The other is Koh Weaw island, opposite Trisara, a tiny island with sensational snorkeling only 10 mins by longtail boat. Weaw means Bling Bling. Tell us about Indigo Real Estate. We set up the luxury real estate specialist seven years ago with Tom Travers. Our team plays a strong hand in the early design process and promotes low density projects. Phuket is a hotspot for the private jet crowd so we are kept busy for much of the year. Tom, who used to DJ in Ibiza, will soon be spinning at SOUND PHUKET. What inspired you to write the children’s book, ‘Princess Sausage, an island life’? Our dog, Sausage (named after her hearty appetite for breakfast sausages). She’s a Surin Beach dog who adopted us and then turned out to be a perfect princess.
