The bustling lifestyles of modern consumers have prompted great demand for products that boost energy. In fact, the International Food Information Council (IFIC) Foundation’s 2018 Food and Health Survey found energy is the third most sought-after health benefit following cardiovascular health and weight loss. Grandview Market Research reported the global energy drink market was valued at US$43 billion in 2016 and predicted to reach $84.8 billion by 2025 with a compound annual growth rate (CAGR) of 7 percent.

While traditional energy drinks are still popular (retail sales for the top-selling energy drink brand in the United States reached $11.7 billion in 2017), warnings from doctors about excessive caffeine intake, bad press about hospitalizations and deaths from energy drink consumption, and the holistic health and wellness movement have led to a shift in the category. More brands are developing these types of beverages with organic and/or natural ingredients that are perceived as better-foryou. A substantial number of brands showcased natural and organic energy drinks at the 2018 Natural Products Expo West show, including Dark Dog Organic, Limitless, Guru and Zola.

There is enormous potential for the natural and organic energy drink category; Grandview Market Research expects natural and organic energy drinks sales will reach $32 billion by 2025, which accounts for nearly 40 percent of the market. If you’re considering developing a natural or organic energy drink, keep the following category trends top of mind when developing your product.

Naturally Energizing Ingredients

Some of the most common ingredients in natural and organic energy drinks are green coffee, green tea, guarana and ginseng. Depending on the goal of your product, you might want to consider one or a combination of these ingredients. Green coffee has less caffeine than roasted coffee (20 mg per serving compared to 100 mg) and has suggested benefits such as aiding with weight loss and disease prevention. It’s often combined with other energy-enhancing ingredients like B-vitamins and ginseng for a bigger boost. It can be found in products like Starbucks Refreshers, Zola Organic Hydrating Energy Drink and Rockstar Organic Energy Drink.

Green tea has approximately 30 to 50 mg of caffeine per serving and, like green coffee, is suggested to promote weight loss and reduce risk of cancer. There’s a huge health halo surrounding green tea, which makes it a very appealing to consumers looking for a natural means to increase energy. One of the downsides of green tea is its low caffeine content compared to other ingredients, so additional caffeine fortification may be desired. Green tea is in GURU Organic Energy, Dark Dog Organic Energy Drink and Steaz.

Guarana has about 70 to 200 mg of caffeine per serving which is almost as much as a cup of coffee. Despite its high caffeine content, guarana is rarely the only energizing ingredient and is often paired with green coffee, green tea or synthetic caffeine. Guarana is used in traditional energy drinks like Red Bull and Monster as well as those positioned as more natural like Scheckter’s Organic Energy, Arizona Fruit Punch Natural Energy and Yerbae.

Ginseng (and Panax ginseng) has no caffeine content, but it’s still a popular energy drink ingredient because of its functional properties. Ginseng is an adaptogen (a natural substance considered to help the body adapt to stress) and is also high in antioxidants; additionally, it’s suggested to have anti-inflammatory properties, improve brain function, and aid with weight loss. Panax ginseng is very similar but it comes from a different part of the plant and is suggested to have different types of ginsenosides (the active ingredient in ginseng), so some brands call it out specifically. Ginseng is in beverages like Hi Ball, Starbucks Doubleshot Energy and Feel Natural Energy.

Yet, soy sauce is the most favorite for Chinese consumers.

Although sauces and condiments are only used in small amounts and not very nutritious, it considers an important ingredient for food as the sauces and condiments help change the taste, smell and appearance of foods. Euromonitor reported that the sales volume of sauces and condiments on the Chinese market in 2018 was CNY 119,067 million, an increase of 9 percent over the previous year and are expected to increase continuously.

ปัจจุบนั ผูบ้ ริโภคจีนให้ความส�ำคัญกับการดูแลสุขภาพอย่างมากท�ำให้ตอ้ งการ บริโภคซอสและเครื่องปรุงรสถูกสุขอนามัยและไม่เป็นโทษต่อสุขภาพ เช่น Gluten-free ผลิตจากวัตถุดิบธรรมชาติ วัตถุดิบไม่ผ่านการตัดแต่งพันธุกรรม หรือใช้วัตถุดิบที่เป็นออแกนิกส์ ปราศจากสารปรุงแต่งสังเคราะห์ เป็นต้น จึงนับเป็นความท้าทายที่ส�ำคัญต่อธุรกิจซอสและเครื่องปรุงรสในตลาดจีน ซึ่งผู้ผลิตซอสและเครื่องปรุงรสในจีนบางรายได้ปรับตัวเพื่อสนองกับความต้องการของผู้บริโภค เช่น แบรนด์ Shinho (แบรนด์ระดับไฮเอนด์) ได้ผลิต ซอสถั่วเหลืองที่ท�ำมาจากถั่วเหลืองที่ไม่ตัดต่อพันธุกรรม แบรนด์ Jia Jia ได้ ผลิตซอสถั่วเหลืองที่มีลักษณะคล้ายคลึงกับซอสถั่วเหลืองแบรนด์ Shinho

The important factor that increases the demand for sauces and condiments in the Chinese market is the rapid expansion of fast food businesses in China. Therefore, the demand for the condiments, for both cooking and/or table sauces, has been increased accordingly.

Moreover, the expansion of foreign restaurants and an increase of income have made consumers more affordable to buy foreign foods.

Together, urban characteristics of Chinese consumers nowadays prefer the convenience of eating out or having it delivered, which results in an increase in demand for sauces and condiments.

Still, some people want to cook at home because they are concerned about the importance of nutritional value. Those consumers are also longing for ease and convenience in cooking, so they choose to buy ready-made ingredients (instead of buying several admixtures and dressing it themselves). Generally speaking, they just run the show with the ready-made ingredients in proportion stated on its label to get the favorite dish that tastes exactly as needed.

Chinese Consumer Behaviors

At present, Chinese consumers pay more attention to health and prefer to consume hygienic sauces and condiments that are not harmful to health such as Gluten-free. Those should be produced from natural raw materials, non-genetically modified or usage of organic ingredients with no synthetic additives, and etc. Therefore, it is a major challenge to the sauce and condiment business in Chinese markets, where some Chinese producers have already adapted themselves to meet the needs of consumers. For example, the Shinho brand (high-end brand) has produced soy sauce made from non-genetically modified soybeans. Jia Jia brand produces soy sauce similar to the Shinho brand.

Other than that, a survey conducted by HKTDC (Hong Kong Trade Development Council) found that Chinese consumers pay particularly attention to the appearance and taste, following by brands and word of mouth, raw materials, production and expiration date, organic/natural/additive free, health benefits (low in sugar, sodium, fat, but high fiber), packaging designs, certificate or certification

Sauce and Condiment Market Share in China

Based on Euromonitor, the data indicated that in the year 2018, retail sales of sauces and seasonings in China reached CNY 119,067 million. As classified by type, the condiments set on the table (or table sauces are the ingredients marinated in cooked food), occupied the highest market share (79% of retail sales of sauces and condiments), followed by cooking ingredients, and pickle products, respectively. In view of the market share of retail sales classified by the sauce and condiment manufacturer, Foshan Haitian Flavoring & Food Co., Ltd. (Haday brand) become largest in the Chinese market, accounting for 6.6%

ช่วงปี 2559 – 2561 จีนยังคงน�ำเข้าซอสและเครื่องปรุงรสเพิ่มอย่างต่อเนื่อง คิดเป็นมูลค่า 148, 157 และ 175 ล้านเหรียญสหรัฐ ตามล�ำดับ โดยในปี 2561 มูลค่าการน�ำเข้าเพิม่ ขึน้ จากปีกอ่ น คิดเป็นร้อยละ 11.26 และมีการน�ำเข้าจาก ประเทศเกาหลีใต้มากที่สุด คิดเป็นร้อยละ 14.79 ของมูลค่าการน�ำเข้าซอส และเครื่องปรุงรสของจีนทั้งหมด รองลงมาคือน�ำเข้าจากไต้หวัน ไทย ญี่ปุ่น สหรัฐอเมริกา ฮ่องกง มาเลเซีย อิตาลี เยอรมนี ตามล�ำดับ ทั้งนี้ พบว่าจีนน�ำเข้าซอสและเครื่องปรุงรสจากไทยเพิ่มขึ้นอย่างต่อเนื่อง โดยปี 2559 มูลค่าน�ำเข้า 15 ล้านเหรียญสหรัฐ ปี 2561 มูลค่าน�ำเข้า 21 ล้านเหรียญสหรัฐ เพิ่มขึ้นจากปีก่อนร้อยละ 16.6 ด่านศุลกากรที่น�ำเข้าซอส และเครื่องปรุงรสจากไทยมูลค่ามากที่สุด คือ ด่านศุลกากรเซี่ยงไฮ้ ฝูโจว (มณฑลฝูเจี้ยน) กวางโจว (มณฑลกวางตุ้ง) เซี่ยเหมิน (มณฑลฝูเจี้ยน) ตามล�ำดับ ส�ำหรับประเภทซอสและเครือ่ งปรุงรสทีจ่ นี น�ำเข้าจากไทยส่วนใหญ่ อยู่ในกลุ่ม HS Code 210390 ซึ่งเป็นซอสและเครื่องปรุงรสอื่นๆ (ไม่ใช่ซอส ถั่วเหลือง ไม่ใช่มัสตาร์ด และไม่ใช่ซอสมะเขือเทศ) โดยซอสและเครื่องปรุงรส ของไทยที่มีวางจ�ำหน่ายในตลาดจีน เช่น นํ้าจิ้มไก่ เครื่องแกงกะหรี่ ซอสพริกไทยด�ำ ซอสหอยนางรม นํา้ ปลา เครือ่ งแกงเขียวหวาน เครือ่ งต้มย�ำกุง้ นํา้ จิม้ สุกี้ นํ้าพริกเผา เป็นต้น จึงคาดการณ์ว่าตลาดจีนยังคงต้องการน�ำเข้าซอสและ เครือ่ งปรุงรสจากไทยเพิม่ ขึน้ อย่างต่อเนือ่ ง ประกอบกับผูบ้ ริโภคชาวจีนมีกำ� ลัง ซื้อเพิ่มขึ้นและส่วนใหญ่มีความเชื่อมั่นว่า สินค้าอาหารน�ำเข้ามีความสะอาด ปลอดภัยและถูกสุขอนามัย จึงมีความต้องการซื้อสินค้าน�ำเข้าเพิ่มขึ้นอย่าง ต่อเนื่องตามไปด้วย

(ChuBang brand), respectively. In so far as the competition in the sauce and seasoning market is relatively high, the market share of each major producer then is not joyful. Additionally, if considering the market share of retail sales by brand, it was found that the Haday brand holds 6.6 percent, the highest market share of all sauces and condiments in the Chinese market, running after by Lee Kum Kee, Laoganma, Chubang, Totole, Wujiang, Shinho, Master, respectively.

Opportunities to Import Sauces and Condiments in Chinese Market

During 2016 - 2018, China continued to import more sauces and condiments, worth USD 148, USD 157 and USD 175 million, in order.

Seeing that in the year 2018, the import value increased 11.26 percentage from the previous year. Sauces and condiments mostly imported from South Korea, accounted for 14.79 percent of Chinese import value of all condiments, followed by Taiwan, Thailand, Japan, the United States, Hong Kong, Malaysia, Italy, Germany, respectively.

It was found that China continuously increasing imports sauces and condiments from Thailand. The import value in 2016 reached USD 15 million compared with USD 21 million in 2018, which increased by 16.6 percent from the previous years. The customs houses that import the most value of sauces and condiments from Thailand are Shanghai, Fuzhou (Fujian province), Guangzhou (Guangdong province), and Xiamen (Fujian province), respectively.

Sauce and condiment products that China imports from Thailand, mostly in the HS Code 210390 group. Those sauces and other condiments (not soy sauce, not mustard, and not tomato sauce) are available in Chinese markets such as chicken sauce, curry paste, black pepper sauce, oyster sauce, fish sauce, green curry paste, Tom Yum Kung ingredients, Suki sauce, Chili sauce, etc. Anticipating that the Chinese markets need to import more sauces and condiments from Thailand, since Chinese consumers have more purchasing power and mostly have confidence that imported food products are clean, safe and hygienic. In consequence, the demand for imported products is expected to increase continuously.

The trend towards the use of “natural” ingredients, (colors, flavors or preservatives) although technically challenging, has created the need for research into milder and more energy efficient but equally effective processing technologies that are able to preserve the structure and thus, function and benefits of novel ingredients whilst at the same time maintaining the nutritional and other food product qualities.

Improvement of product quality has always been the main goal of food and beverage manufacturers. Novel processing technologies such as high-pressure processing (HPP), pulsed electric field (PEF) and cold plasma are thought to be among the most promising of novel technologies.

High Pressure Processing (HPP) HPP is a non-thermal pasteurization technique whereby products are held at pressures typically between 300 and 600 MPa for up to 10 minutes. The advantages of HPP over the conventional thermal processing techniques involve reduced process times and thus reduced heat damage, as well as retention of product flavor, texture, color and vitamins. However, microbial spore survival during processing requires this technique to be used in conjunction with another hurdle such as low pH or refrigeration.

HPP is shown to inactivate pathogenic and spoilage bacteria, yeasts, molds and viruses; however, its efficacy is limited against bacterial spores and enzymes. Factors such as the type of microorganism, food composition, pH and water activity are shown to affect its microbial

HPP has been employed in the processing of a number of liquid and semi-solid foods such as fruit juices, purees, smoothies, jellies and guacamole. High capital expenditure and limited throughput are its main current limitations.

Pulsed Electric Field (PEF) Recognized for its ability to inactivate bacteria present in liquid food products at low temperatures, PEF is a food preservation technique whereby the food to be processed is exposed to a pulsed high voltage field for less than 1 second.

Studies have shown that PEF processing results in better retention and storage stability of carotenoids, phenolic compounds and flavonols, in comparison to thermal processing. It can be industrially implemented to produce juices that better resemble the freshly squeezed, mainly with regards to their aroma profile.

PEF has the potential to replace thermal techniques for the pasteurization and sterilization of liquid foods due to the retention of the products’ nutritional value, sensory characteristics, safety and overall quality profile, yet at lower operational costs. Others believe that PEF could be a suitable technique for use with additional processes/hurdles such as mild thermal treatment or control via pH/water activity. Studies have shown that combining the PEF treatment at moderate temperatures with the presence of an antimicrobial, effective against both Gram-positive and -negative pathogenic bacteria, would significantly enhance process efficiency, reduce the number of pulses and outlet temperature and lead to significant energy cost savings.

PEF efficacy towards microbial inactivation mainly depends on the intensity of the electric field, the pulse width, treatment time (number of pulses times pulse duration), pulse waveshape, temperature (operational temperatures of 50-60 oC result in increased microbial inactivation) and product conductivity.

High conductivity foods are not thought to be suitable for treatment with PEF, neither are those with a high salt content or liquid products containing particulates. PEF lethality is also affected by the lifecycle stage of the target microorganisms with rapidly growing and dividing microbial populations being the most sensitive while those in stationary or lag phases showing some resistance.

Cold Plasma Plasma is defined as the fourth state of matter that is energetically distinguishable from solids, liquids and gases and can either be thermal or non-thermal, depending on the conditions in which they are created. Plasma is a source of different antimicrobial substances including UV photons, charged particles, and reactive species such as superoxide, hydroxyl radicals, nitric oxide and ozone.

factors affecting the efficacy of the different processes, mainly related to the properties of the food matrix to be processed, can lead to significant variability in their efficacy, it would be difficult to apply a one-for-all-rule on the application of these mild processing conditions. More research is required to establish and expand the industrial applications of the different technologies and overcome high capital costs that may delay industrial adoption.

Very high temperature and/or pressure conditions, thus a significant level of power, are required to obtain thermal plasmas, whereas non-thermal plasma use significantly less power as they may be generated by electric or magnetic discharges and can be obtained at lower pressures, thus generating significant industrial interest. Although a relatively unexplored decontamination technology, cold plasma has found applications in the sanitization of the surface of fresh produce, liquid products (e.g., juice), as well as equipment surfaces used in food processing and food packaging.

Cold plasma is thought to be an effective alternative to thermally based microbial inactivation methods having comparable microbial inactivation properties against major pathogens while having little or no effect on the product’s nutritional or other quality. However, cell density has been shown to affect the efficacy of cold plasma processing with upper cell layers acting as physical barriers to underlying cells in complex bacterial multilayer structures (e.g., bacterial biofilms), thus potentially affecting the practical application of the technique to the food industry.

The need for enhanced food safety and quality, without compromising the nutritional and sensory characteristics of foods, has created an increasing interest in low-temperature innovative food processes. These emerging technologies mainly rely on physical processes that use ambient or moderately elevated temperatures and short treatment times to inactivate microorganisms. Given that
