“It didn’t take much to create a look of ‘celebrity sport chic’ for model Mary Rubin, whom I adore working with. She has one of those doll-like faces that a makeup artist can bend the rules with. Using Glo-Skin Beauty products and some metallic freckles... the multiple looks created were sure to hit it “outta the park.” Jen is a Victoria-based makeup artist.

“The meals in our food features are typically made only to be photographed but for this feature on summer grilling, I photographed a huge meal prepared for a real family summer gathering at the lake house with a crowd of 18 people from kids to grandparents. Chef Heidi Fink grilled up a storm and the crowd hovered impatiently while I managed to quickly photograph the beautiful food before it was completely devoured by the satisfied group, myself included. Yum!” Lia is a stylist, creative director, photographer and writer with a long history of working in the fashion industry.

Giving back BY SUSAN LUNDY
Leafs fans so annoying?” Instead, I stuck with the task at hand.) Brendan Morrison and his wife, Erin, purchased a summer home in Tofino 12 years ago. With his connections to the NHL in a hockey-crazy town, he recognized he was “in a position to have an impact on the community.” Hoping to establish a legacy that would “live on because of the good it does,” he worked with others to create an annual fishing derby. In the nine years since, the Saltwater Classic Fishing Derby has raised more than $500,000 for various beneficiaries in Tofino. For Brendan, it was win-win, merging two of his passions — fishing and Tofino. But for this community, with a full-time population of about 2,000, the result is huge. One derby beneficiary was creation of a school hot lunch program that provides full, nutritional meals to students, about two thirds of whom are First Nations children. Immediately, the students’ attention spans and grades improved. I like to think that the spreading “ripples” will lead to higher graduation rates, and ultimately a generation of better educated people, with all the benefits that come with that — from employment right back to nutrition. The point is, philanthropy often has results far beyond what we can actually see and quantify, and everyone has the opportunity to make an impact. You can read more about local philanthropy in Tess van Straaten’s story The Heart of Giving. Also in these pages of Boulevard: tour a perfectly passive “house of the future;” find design tips for outdoor living and travel to the Château Frontenac in Old Quebec City. Fire up the grill with some sizzling recipe ideas; “talk dirty” with healthy mud. Meet Ballet Victoria’s Paul Destrooper, the Belfry’s Ivan Habel, chef Rob Cassels, and Shelby Donald — one of the faces behind the BC Cancer Foundation’s Jingle Mingle fundraising event. Talk style with Melodie Reynolds, and join the Boulevard fashion team at a HarbourCats game! I encourage everyone to take some time to consider what “giving back” might look like in your lives — whether it’s a large contribution or something small, you never know how wide the ripples might flow. I plan to do the same. But I’ll also be considering another type of “giving back,” keeping my eyes open for a flowery pink flannel shirt. Susan Lundy has been writing stories since she was six years old. She has a degree in creative writing from the University of Victoria, and after working for many years as an award-winning journalist is now a magazine editor, author and freelance writer. M
Y YOUNGER daughter and I have, over the last few years, embarked on a strange path of “giving.” It began when Sierra received a flowery, pink flannel shirt from a well-meaning but fashion-challenged friend. She immediately gave it to me; I gave it back. Then we started getting creative. I stuffed it into a boot for her to find in the winter. I found it in my closet hidden on a hanger under another shirt. I popped it into the glove box of her car. She had it delivered by a third party as a birthday gift. But I think my most recent prank will be hard to beat. I waited a full year, and then created an official-looking letter apparently from her modelling agency. I went online, downloaded the agency’s logo and placed it along the top of the letter document. In a few brief, authoritative-sounding paragraphs, I wrote that the agency would be entering into compliance with the “Government of Canada’s newly announced Strategic Model Management Plan, recently set out by the Ministry of Public Expression.” As of July 2018, I continued, each model and actor in the agency would be required to “include the contents of the attached package at all shoots and interviews.” I placed the shirt in a brown envelope, stapled the letter to it and dropped it into a larger, bubblewrapped envelope. I created a label with the agency logo and placed it and stamps on the white envelope, and then drew in a postmark before sneaking it into her mailbox. I really could hardly contain myself for the next few days — and she fell for it completely! Ahhh… the joys of “giving!” This issue of Boulevard has a focus on giving — but a type of giving that’s much more important. Loosely, this is our “philanthropy issue” and our feature story explores the new face of charitable giving. My good friend Merriam-Webster defines philanthropy as “goodwill to fellow members of the human race; especially: active effort to promote human welfare.” There are many, many charities and cultural institutions deserving attention in Victoria. But this summer, I was lucky enough to come face-to-face with philanthropy in Tofino, and I was struck by how this “goodwill” can have so many positive ripple effects. (I also got to interview an ex-Canucks player and for those who know me, this is a bit of big deal. But I resisted questions like “what’s the trick to telling the Sedin twins apart?” and more importantly — as I try to understand my own husband — “why are

Suburban Sanctuary

At the home of and designed by Janice Jefferson Sectionals maximize a small space For maximum seating in a small space, the best solution is a custom sectional. This sectional added a large amount of seating in an otherwise under-utilized corner of the deck. The seat is deeper, making it perfect for afternoon naps and laying in the sun. The weatherproof Sunbrella fabric is designed for the outdoors – although it looks like an interior fabric, it can still withstand the elements.
Continue your interior design style out I am all luxury razzle-dazzle, inside and out, so I matched my exterior living space to the interior feel of my home with an overall style nodding to Hollywood glam. The banana leaf pattern and pink piping on the cushions reference the motif of the Beverly Hills Hotel and make me feel like I have poolside living even though I lack a pool. Lastly, don’t underestimate the power of the invisible design element of fragrance. When planting pots for this area, I chose jasmine to further enhance the luxurious experience.
Alfresco bathing After a long day of gardening, there’s nothing better than cooling off in an outdoor bathtub. Alfresco bathing is easier than it may seem – find a cool, old bathtub, create a secluded spot, plumb in hot and cold water and you’re ready to dive in. A side benefit is that you can plan with the plumber to have the used bath water drain directly into your garden beds... just make sure to hold the bubbles!

Urban Oasis At the home of Trish Tacoma, owner of Smoking Lily, designed in collaboration with Janice Jefferson Screen printing To bring Trish’s design flavour to her outdoor space, she screen-printed a pattern directly to the wooden seating rather than using upholstered cushions, and softened the hardness of the wood with a selection of different throw cushions in the corners and a lamb skin on the seat.
Give your art a fresh perspective Just like an interior space, adding art to an outdoor living space is a sure way to bring personality and life. Just make sure it’s a piece of art that you’re okay with getting a little weathered.
Privacy equals sanctuary Because Trish lives in an urban neighbourhood, it was important to create maximum privacy. One way we achieved this was by choosing plants that are taller and grow quickly like bamboo.

Although this carpet has the look and feel of a luxurious Persian rug, it’s actually an outdoor carpet. It’s important to find a carpet large enough so that all of the furniture can be contained within it.
You can’t have too much colour If you’re in love with colour and textures then by all means, don’t hold back! Adding some weighty black to the palette will anchor any explosion of colour.
Covered Patio If you’re fortunate and have a covered patio, you can expand the texture options to the outdoors. We used Sunbrella for the cushion covers to allow for some weather proofing, but were able to add more indoor accessories such as blankets, baskets and furniture like this indoor bench. With the complementary Susani upholstered dining chairs inside, the indoor-to-outdoor feeling is seamless.

Rob Cassels Chef at Saveur BY ANGELA COWAN P H OTO S BY D O N D E N TO N
Where were you born and where did you grow up? I was born and raised in Victoria.
Where did you train? I started at age 12 in my godparents’ French restaurant, Antoine’s. I worked in small restaurants and bakeries throughout high school and was running a kitchen by age 18. After I graduated, I decided to visit Paris to stage and learn classic French styles. Back home I eventually worked my way up to sous chef at Feyes and Hobbs Catering under Chef David Feyes before branching out on my own.
How long at your current restaurant? I’ve had Saveur for five years. The first two were spent building it from an empty shell. This was a challenging time as the project—of course— came in over budget and almost plunked before it started! It was just me and a few small investors and partners, so we had to work hard to get the space done. Saveur recently celebrated three years of being open for business though, and each year we do a little more to improve our space. What are you best known for as a chef? Honestly, I think my vegetarian dishes receive the most recognition. I love working with our local farmers and making vegetables the centre stage in my Tasting Menus. I think a lot of vegetarians are used to their meals being fairly standardized and people are pleased to see some creative options presented.
What are the 10 or so most important ingredients in your pantry? There’s always the basics in the pantry, but I try to get out to the farms at least three times a week to see what’s fresh on the stands, and draw my inspiration from there.
What’s your favourite dish to cook and eat on a warm summer day? Chilled soups are one of my favourites. Summer desserts are always fun to play with as well. Last year we did a play on s’mores with loganberry marshmallows, house-made graham crackers and white chocolate “Aero bars.” What’s your go-to item when sampling other chefs’ fare? I definitely like to let the chef get creative if that’s an option and choose for me.
Morel mushrooms stuffed with chicken sausage.
Hobbies? It’s a high demand industry, especially balancing being both the chef and the owner. On my days off I spend time with my family, walk my dog, take my son to the beach. I love home projects and doing renovations. If possible, a glass of wine on the deck with a cookbook is nice!
Anything else we should know? Well, Saveur is a bit off the beaten track on Herald Street, so if you’re local and haven’t been in, we’d love to see you! We do specialize in Chef’s Tasting Menus in the evening, but also feature a more casual à la carte menu every night, and we recently opened for brunch. Can you share an easy, seasonal recipe for a quick bite this summer? My wife would say I’m not capable of doing anything simple for meals! Here’s a great sauce that can be used for anything from fish to beef to chicken, and even as a tomato salad dressing.
RECIPE
SALSA VERDE 2 cups fresh mint 1 cup fresh basil leaves 1 cup fresh parsley 2 ounces of canola oil Juice of 2 limes ½ clove microplaned garlic Sea salt Blend all ingredients except basil. Once blended, add basil and blend again until smooth. Salt to taste Use the same day, or freeze to use later. Delicious on fish, chicken, steak, on tacos, or as a salad dressing!

HERE’S a lot of “dirty talk” going on in the health and beauty world. In fact, it’s filthy. However, you needn’t cover the children’s eyes and ears — in this case, the dirt in question is a trio of earthy substances that can be used internally and externally to promote healing, rejuvenation and detoxification. That’s right, this trifecta of “smut” — activated charcoal, Moor mud and bentonite clay — doesn’t need an R rating and it’s garnering praise from celebrities, beauty bloggers and wellness gurus. Activated Charcoal It may not get your barbecue going, but activated charcoal is certainly lighting up the internet. The sooty substance is the health and beauty ingredient of the moment and it’s being added to cleansers, face-masks, toothpastes and even juices and baked goods for its ability to absorb toxins and remove impurities. When a photo of a charcoal-infused croissant from trendy London cafe Coco Di Mama recently went viral, it elicited comments from around the globe. While the vibe around activated charcoal may seem au courant, its use is not new. It’s been used in hospital emergency rooms

for years to treat alcohol poisoning and drug overdoses and in agriculture to remove toxins from animal feed. It’s important to note that activated charcoal is completely different from the stuff you throw on the grill — activated charcoal is basically food-grade carbon, sourced from natural ingredients like coconut shells, which has been treated to increase its absorbency. It works by attaching to toxins and removing them from the body. And that’s not all — recent research shows it can also help lower LDL (bad) cholesterol and reduce intestinal gas. As a beauty treatment it acts like a magnet to absorb dirt and oil from clogged pores and its topical use has been shown to relieve the discomfort of insect bites and rashes. So does all this mean we should regularly be downing charcoal-infused juices? “Taking activated charcoal internally can be an effective treatment if it is warranted — but its use should be therapeutic, not ongoing,” advises naturopathic physician Dr. Jane Reside. “If used for extended periods it can potentially cause gut issues.” If your curiosity is piqued, here are a few of my “charcoal favourites” to try. It may be the latest “must-try treatment” thanks to glowing endorsements from celebrities, and iconic cosmetic brands like Sephora, but Moor mud is hardly new. In fact, it has been utilized as a healing agent for millennia. The Romans and Celts both hailed it for its restorative healing properties. To clarify, Moor mud isn’t like the stuff you brush off your shoes after a rainy day. Moor mud is a unique, organic substance that has evolved over thousands of years. It’s found mostly in the lowland moor areas of Central Europe and also from areas near mineral springs. Over 1,000 kinds of herbs, flowers, plants and grasses have decomposed into its waters, transforming it into a nutritious “soup,” teeming with vitamins, minerals, plant-based hormones and other salubrious phytonutrients. “The mud is truly packed with substances that have myriad health-enhancing properties,” enthuses Courteney Osing, assistant spa manager at Victoria’s Ocean Pointe Resort. Research supports Osing’s enthusiasm. Studies have shown topical Moor mud treatments can help improve circulation, soothe aching muscles and joints and even alleviate the pain and inflammation associated with arthritis. However, its ability to ease pain isn’t what has the beauty business buzzing. It’s the plethora of anti-aging, hydrating essential oils, fatty-acids and soothing lipids the mud contains that has them gushing. Some beauty insiders are so smitten they’ve dubbed Moor mud “the facelift in a jar.” In addition to topical treatments, Moor mud can also be taken internally, an application that is popular in European clinics where it’s touted as an effective detox treatment and a natural way to heal inflamed guts. If you’re ready to roll in the mud, give one of the following options a try. For a variety of authentic Moor mud products visit international-rmj.com/austrianmoorspa.htm Spa Experiences: Excel Salon and Spa-Moor Mud Body Wrap or facial; Amora Day Spa-Detoxifying Mud Wrap.
Bentonite Clay Bentonite clay is the most popular of all the “healing clays” in use and, like other forms of therapeutic clay, it has been used worldwide for centuries to purify the body both internally and externally. “Bentonite clay has been around for quite a while,” says Peter Onyschuk, manager of Lifestyle Markets’ Cook Street Village store, “but its popularity has recently spiked thanks to the wellness icons on social media who include it in their detox protocols.” So what exactly is bentonite clay and how can it “purify the body?” It is actually composed of ash made from volcanoes. The largest source of the clay comes from Fort Benton, Wyoming, where numerous volcanoes are found — hence the name. Up until now, the reported benefits of bentonite clay have been largely anecdotal in nature. Enthusiasts have long claimed it rids the body of toxins and nurtures and cleanses the skin. Now science has legitimized some of this zeal. Preliminary animal studies have shown the clay, when mixed with water and taken internally, does indeed help remove toxins like heavy metals, pesticides and harmful bacteria from the body. In addition, one study showed the healing clay acts as a prebiotic in the gut — promoting the growth of “good-for-you bacteria” known as probiotics. And there’s more good news. Used topically, the clay has been shown to reduce blemishes, soothe irritated and inflamed skin and help heal wounds. Myriad beauty bloggers also claim a clay mask is a one-way-ticket to glowing skin, citing the clay’s rich mineral content as the reason. Thankfully, the clay is relatively inexpensive and easy to use at home. You can simply buy the powder and mix it with water to “activate” it and apply the resulting paste to your skin. Or mix one half to 1 tsp in a cup of juice or water and drink up — but only when you need it. As Dr. Reside notes, “If used internally, bentonite clay, like activated charcoal, is meant for therapeutic, not ongoing use.”

t’s Sunday morning, and behind the soaring brick walls of St. Andrew’s Presbyterian Church, up several flights of stairs and into the studios of Ballet Victoria, the resonant tones of the church’s organ come drifting through the walls, filling the space with music. “It’s like living with the phantom of the opera,” laughs Paul Destrooper as he pulls out a chair for me in his office. The music fades as the service next door gets underway, and I ask him about his time with Ballet Victoria. Paul has been executive and artistic director for the last 11 of the company’s 16 years, joining the ranks in 2007 when he was offered the position while dancing with Oregon Ballet Theatre in Portland. An award-winning graduate of the Royal Winnipeg Ballet, Paul was born in Montreal and grew up in Switzerland, but always had a soft spot for Victoria. He actually completed his BA in literature at UVic when he was younger before dance “distracted” him. After providing those few details about himself, he enthusiastically moves the direction of the conversation, spotlighting instead the community initiatives the company has undertaken since he took the reins. “We do a lot for the community,” he says. “We’re a not-for-profit and we’re also a charitable organization, and we try to make our art form accessible to everyone.” Producing shows in a proper theatre skyrockets the costs, which is in part necessarily passed on into ticket prices, he says. So to help get around that and give more people the opportunity to experience ballet, Ballet Victoria runs Tea for Tutu. A free, 45-minute ballet performance at the adjacent Kirk Hall, Tea for Tutu offers seniors, parents, kids and anyone else a preview at an upcoming performance, plus the opportunity to discuss it afterwards over complimentary tea and baked goods.

“They get to talk about the performance with each other and with the dancers. We bring seniors in from different residences. It’s also open to single parents and homeschooled kids, so there’s literally three generations in there,” says Paul. Ballet Victoria also runs several school outreach programs, with Paul and other dancers and instructors travelling to schools to share the benefits of dance with children from kindergarten all the way up to high school, offering it as an alternative to sport and a way to keep both mind and body healthy. “Dance is being used in therapy to slow down brain diseases,” adds Paul, which makes complete sense to me. To dance, no matter the style, you need spatial awareness, coordination in your limbs, the ability to move in space around other people, the ability to memorize the music and so much more. It’s a phenomenal mental and physical workout. (I can personally attest to this. Earlier in the spring I took a beginner’s ballet class, and I’ve never felt both so graceful and uncoordinated at the same time.) To that end, Paul is currently working with a friend in Toronto to create a class for people with Parkinson’s disease, in the hopes of using dance to help slow the progression of symptoms for participants. Hopefully, he says, it will be up and running by the next season. One of the new and important components of Ballet Victoria is the Conservatory, which offers a variety of classes taught by the company’s most seasoned professional dancers. Talented teachers with years of performing experience generously pass on their technique, skills and passion to their students, says Paul. Unique in British Columbia, Ballet Victoria’s main stage productions still focus on classical ballet technique and pointe work, he adds, which require an enormous amount of technical skill and strength for both female and male dancers. But it quickly becomes clear that Paul works to inject a little “21st-century flavour” into the company’s personality as well. Diving into the “artistic” portion of his direction in the upcoming October production of Frankenstein — the start of the new season — Paul has taken story strands from Mary Shelley’s masterpiece, the tragic love story ballet Giselle and Tim Burton’s Corpse Bride,

and woven them together into a show that’s heartbreaking, satirical and beautiful, and even includes a space-opera-inspired fight scene. (I won’t spill the details here, but for anyone who was watching movies in the ‘70s, it’ll be a fun surprise.) He also puts on Ballet Rocks, a production that pairs classical ballet with rock music, and mixes classical and modern music. “Like Mozart and Pink Floyd. They go great together,” he says with a grin. As much as possible (and as much as budgets allow), he strives to work with live musicians, whether it’s a full orchestra or a single musician. “It adds dimension to the performerance,” he says. “There has to be communication between the musician and the dancers, and you can get to a level when the music and dance are symbiotic.” “When it’s live, you have the added interpretation of the musician, and the audience gets caught in the middle of it,” he says, becoming more animated as he speaks. “Normally the orchestra is in the pit, but when we do Carmina Burana, they’re behind us on stage with the full choir, so the music, it physically comes through you. It’s incredible!” “There’s something primeval about dance,” he says, elaborating: men would dance to prepare for war, the rhythm and grace of it going hand in hand with horseback riding or fencing. Even going back thousands of years to our CroMagnon ancestors, they would dance around the fire to prepare themselves for the hunt. “You warm up your body, you meet in unison, then you go out to meet the challenge.” Today, to see a performance is to experience another person’s emotion, their soul that they’re giving to the dance. And dance as an art form has grown to include a wealth of cultures and perspectives. “I think we move people just as deeply with our movement and expression as a poet could do, or a playwright or a musician,” says Paul. “Everything we do is beautiful, and powerful. Ballet has a traditional, stereotypical flavour, and I think people have been slow to realize that even classical ballet has evolved, and that it truly can appeal to all. I think everything we do at Ballet Victoria — thanks to the immense talent and passion of the dancers — will surprise and inspire people.”
Today, to see a performance is to experience another person’s emotion, their soul that they’re giving to the dance.

RAVEL THE smaller side roads in Oak Bay, just a few blocks from the greens at the Victoria Golf Club, and you may find yourself on Byng Street where a municipal architectural milestone awaits. Here sits a modern, European-influenced two-storey structure built in midnight-blue rough-sawn cedar, its impressive roofline in the shadow of a mature Garry oak. Just opposite the front door is an attractive iron sculpture lending a bit of privacy to the front entrance. Peeking through, the backyard hints at the old-world charm that’s made the neighbourhood so lovely for so long, with old fruit trees and rhododendrons amid a gorgeous semi-circle of hedging that complements the geometrical nature of the house. The home belongs to Peter Johannknecht and his wife Sharon Stoose-Johannknecht, and is Oak Bay’s first passive house (pending a virtually guaranteed independent international certification), though it takes me until I’m inside chatting with the homeowners before I’m clear on exactly what that means. Originating in Germany in the late 1980s, passive

construction drastically reduces the energy consumption and footprint of the house (or larger building), resulting in significantly lower carbon emissions by eliminating the need for traditional heating and cooling systems. Instead, the interior is kept at a comfortable temperature from the ambient heat of appliances, lights, solar gain and even the people who live there. “It was developed primarily to fight climate change, but it also has the benefit of reducing operating costs dramatically,” says Peter, principal architect at his firm Cascadia Architects, and designer of the house. Integral to a successful passive build are triple-pane windows, an air-tight membrane surrounding the house, no thermal bridges that would allow heat to escape and an insulation envelope that surrounds the house from top to bottom, including below the foundation, says Andrew Chapman, project manager of NZ Builders, who built the house. “It’s like if you were to go barefoot in the winter,” he says of the foundational insulation. “You bundle up in your down coat, your scarf and hat, then you go out without shoes. You’re going to be cold.” Perhaps the most important aspect of the design is the inclusion of the heat recovery ventilation (HVR). Air intakes are installed in the rooms that generate the most heat and humidity, like the kitchen, bathrooms and laundry rooms. From there, the air is taken through the HRV where it’s stripped of its heat and sent outside. The heat is added back to fresh air coming in from the outside, and then distributed throughout the house. “The humidity’s controlled, and you get a continuous supply of fresh, filtered air to every room,” says Andrew. This is particularly valuable in a climate like Victoria, where the damp

can sneak in to even the smallest cracks and crevices. “It has an impact on health, absolutely,” adds Peter. “It’s the house of the future,” says Andrew, to nods of agreement from both Peter and Sharon. Hearing that, one might be forgiven for expecting something of a more futuristic design, but the house follows a classic, mid-century modern aesthetic that suits both Peter and Sharon wonderfully. “People are surprised by its normalcy,” says Sharon with a smile. At around 3,000 square feet, it’s roomy without being overbearing. Eight-foot doors throughout lend a luxurious sense of space and height, while the double height living room feels cathedral-esque and lets in an enormous amount of natural light. A mezzanine upstairs looking out over the great room further extends that feeling of openness, while keeping enough boundaries that you never get lost in the space. “Every room is flooded with natural light,” says Sharon as we pause in the living room. “Even on the greyest days, it’s still so bright in here. It’s just really essential to our quality of life.” The whole house feels clean, elegantly simple. What gradually becomes more clear as we walk around is the seamless continuity of the building materials. Walnut is the only wood used in the entire house, from the doors upstairs and down, to the accents in the kitchen and the bathrooms. The entire main floor is made up of six-inch slabs of concrete, which also acts as a temperature regulator.

All three bathrooms are the same design: recessed ceilings, wall-to-ceiling scratched ceramic tiles, hidden lighting, hanging toilets and cabinets. And whether you’re standing in the smaller three-piece on the main floor, or basking in the glow of the master en suite, each has a definite spa-like feeling that makes me relax down to my toes. Or that might be the electric in-floor heating they installed for that extra touch of comfort. Something else nags at me as we tour the home, and it isn’t until Peter points it out that I realize why I’ve felt so happy as I’ve been taking notes. Every light switch, every set of recessed lights, every hanging cabinet — they’ve all been precisely balanced in their positions. It’s especially noticeable in the bathrooms where the tile extends up to the ceiling. The light switches and outlets are either set in the middle of a tile, or balanced equally along a grout line. The top of the cabinet sits flush along a grout line, as does the back of the toilet. Out in the hallway, the pot lights in the ceiling have been grouped perfectly in sets of three, and balanced along the hallway. It appeases my slight case of OCD, and Peter laughs along with my exclamations. “There’s a lot of that level of detail in the house,” adds Andrew with a smile of his own. Downstairs in the kitchen, it’s a laundry list of all my favourite features: lovely big sink, induction cooktop, warming drawer beneath the wall oven, concealed fridge and freezer. The thing that catches my eye that I haven’t seen before though, is the porcelain countertop. Incredibly durable, you can cut on it, spill anything, put hot dishes directly on it, and it stays as pristine as ever. “It’s a practical, beautiful feature,” says Sharon. Taken together, all the features of this passive home add up to a low maintenance, highly satisfying design that’s comfortable to live in and so beautiful to look at. “We wanted to build something sustainable for the larger community,” says Peter. “But this was also for ourselves. Tidman Construction marks 70 years of building excellence
Roy Tidman
Tidman Construction Founder
Building quality is in everything the Tidman family does. Ever since Roy Tidman poured his first concrete footings in 1948, Tidman Construction has been building remarkable custom homes, giving new life to older homes and improving the lives of families by making larger spaces out of small ones. Roy’s sons, Ron and John, second-generation craftsmen, both completed their carpentry apprentices under the careful eye of their father and they expanded the company to encompass quality commercial developments throughout greater Victoria. When Tidman Construction created and built The Peninsula and Norgarden retirement communities in Sidney, Roy lent his perspective to the design—not only that of a carpenter but as a senior. In Roy’s later years, Norgarden became his very own retirement community.
Now the third generation of the Tidman family continues to oversee the level of excellence crafted by their grandfather and upheld by Ron and John; John’s son Andrew Tidman at the helm of Tidman Construction, overseeing new construction and renovations in Greater Victoria, and Ron’s daughter Denise Tidman, managing daily operations at The Peninsula and Norgarden in Sidney BC. Both are carrying on the family tradition of ensuring quality and unsurpassable service. Now celebrating 70 years, Tidman Construction carries on Roy’s lifetime legacy of building excellence, integrity and customer service: cornerstones of the Tidman Construction business.

FTER MORE than three decades in the performing arts sector with a career spanning top theatre troupes across the country, Ivan Habel’s passion for the theatre is infectious. “I love that it’s consistently relevant, that it makes people think, that it makes me think, that it brings out emotions in people, that it can be funny, it can be tragic and that it’s immediate — it’s right there in front of you and there’s something very real and tactile about it,” says Ivan, executive director of Victoria’s iconic Belfry Theatre for the last seven years. “When you watch it, you’re a part of it.”
Yet for Ivan, who’s worked at the prestigious Stratford Festival, the Shaw Festival and Vancouver’s Green Thumb Theatre, and staged productions at the National Arts Centre in Ottawa, theatre was never something he thought he’d pursue. “I kind of got into it by accident,” he explains. “I started university thinking I would go into psychology or sociology, but some friends encouraged me to apply to the National Theatre School. I had almost no experience in the theatre — I had no working experience in the theatre before I applied to the school — and miraculously, I somehow got in and fell in love with it.” Ivan, who grew up in Montreal, started out doing

lighting design work. He’s also worked as a technical director, production manager, tour company manager, producer and in executive management like his current role, which he describes as a balancing act. “The biggest challenge is trying to balance the expenses over the potential revenues,” Ivan says. “We need to keep audiences satisfied but we also have to watch how much we spend, because it’s not a cheap art form, and yet it’s not expensive for people to [buy tickets].” At a time when many smaller theatres are struggling, the Belfry is celebrating 42 years in Victoria. Ivan credits that success to producing plays people want to see and strong support for the arts in this community. “I think it’s survived largely because the Belfry has paid attention to its audiences,” he says. “It’s never just pandered to the lowest common denominator, but it also hasn’t ignored the desires and wishes of the audiences. The work has maintained an exceptionally high calibre and attracted top talent. We have a reputation across the country of being one of the best, if not the best theatre company, for how we treat our actors. And they love Belfry audiences because our audiences are so appreciative.” Ivan’s career has taken him to major theatre markets like Toronto, Montreal and Vancouver and he’s also toured extensively throughout North America and Europe, which he says sounds much more glamorous than it was.

“I’ve been very lucky because I’ve done it on a very largescale so we weren’t trying to pack things into a van or anything. But touring is really hard,” Ivan says. “Lots of people think it’s exciting because you get to go to all these cities, but you have very little time to see anything or get out. I was in Switzerland and I just saw the inside of my hotel. Anything I saw outside of that was in the bus on the way to the airport.” Throughout the years, and different cities, one thing has stayed the same — Ivan says he was never bitten by the acting bug. “No, I’d be terrible at it!” laughs the 62-year-old. “I’m fundamentally a bit of a shy introvert so I think I would probably spend a lot of time ‘umming’ and ‘ahhing’ and being afraid.” That’s not to say the theatre business behind the scenes is for the faint of heart. Mounting a good production takes time and talent and often, a lot of money. But until opening night, you have no idea if it will be a hit with audiences. “The biggest lesson I’ve learned is you can never anticipate an audience’s reaction, especially the kind of theatre we do at the Belfry because a lot of it is new work, world premieres or work that hasn’t been seen broadly, so there’s no market testing here,” he says. “You just commit to it, put it on stage, talk about it and then ensure you’ve done an excellent production and hope for the best!” Over the years, Ivan’s had lots of successful shows and critically acclaimed productions, but he’s the first to admit he’s also had some flops.

“Everybody’s had flops,” he says. “People don’t like to admit to them and they don’t like to call them flops, but we’ve certainly had shows that haven’t been well-received. I’ve been doing this a long time, and over my career I’ve also had shows I have not been proud of.” There have also been lots of humorous moments behind the scenes over the years. One that stands out was at the National Arts Centre many years ago. “It was a French show for a French theatre company and the studio stage had a large elevator in the middle that went down to the work level below. The set for this particular show was contained in the elevator and for whatever reason, the set was all the way down on the bottom level and we couldn’t get it up. So we did the entire dress rehearsal with all the directorial and technical staff laying on the floor and looking down what was essentially an elevator shaft to watch,” Ivan recounts. “That dress rehearsal was a bit awkward.” For Ivan, who loves to cook in his spare time and who friends describe as a “super foodie” and wine enthusiast, the most rewarding part of his career is mentoring the next generation. “It’s important to mentor them because they’re the next generation of what can make the theatre great, keep it going and make it relevant,” he says. “I have a daughter just starting out in the business and my best advice is to always be thoughtful but not too afraid of taking risks because success is often born out of the risks you take. You often have to just take that leap.”

ost organizations rely on community support, and engaging the next generation of philanthropists is one of the biggest challenges they’re facing. Philanthropy is not just about pulling out your cheque book once a year, and it is not just for the wealthy. Small acts, volunteering, leveraging what you have and hosting events are all ways of giving back and engaging in what you care about. Boulevard talks to three prominent Victorians about their different perspectives and their shared advice on the importance of passing on a culture of philanthropy to the next generation.
Charlotte Salomon LAWYER AND PHILANTHROPIST
“I also think there’s something to be said about taking your kids to a gala or philanthropic event. Bring your kids, lead by example, and have that dialogue about why you’re helping.”
FOR VICTORIA lawyer and philanthropist Charlotte Salomon, giving back is in her DNA. “I’ve basically been doing it as long as I can remember because it was something that was instilled in me from my parents, especially my dad,” explains Charlotte, a senior partner at McConnan Bion O’Connor and Peterson. “He came to Canada as an immigrant with absolutely nothing after surviving the holocaust in World War II and he gave back in so many different ways. It was part of my childhood to see him doing that.” Charlotte says her father, who worked hard to become a successful businessman, never forgot what it was like to have nothing. He also never forgot the community that took him in. “We live in this wonderful country and we’ve got great opportunities here. It’s always important to remember people who have less opportunity, and that’s what my father did,” Charlotte says. The mother of two is now trying to instill what she calls a “culture of philanthropy” into not only her own children, daughters aged 12 and 13, but to also inspire her peers and the next generation of philanthropists to give back. “When I do an event, I try to get younger people involved, even from a volunteer perspective, to be part of that culture of philanthropy and hopefully spread it to their age cohort,” says Charlotte, who recently hosted a big fundraiser for Pacific Opera Victoria in her Oak Bay home. “Now that I’m in my

mid-40s, my friends are starting to think about, it so I try to invite people in my age group to events.” Charlotte and her husband are so committed to fundraising they actually had their new home purpose-built for events. The flowing, open-concept indoor/outdoor space is designed to host large groups. They also made sure it was accessible, and enlisted the help of an acoustic engineer. The acoustics were put to the test at the Pacific Opera fundraiser in June, which was the first event hosted in their new home. “We had a concert in our house — we had opera singers come and violinists and pianists. It was amazing because they set up rows in our living room and people sat just like they would in a concert hall — and the acoustics were fabulous,” recounts Charlotte. “We had 50 people, and the next night we had 80 people at a cocktail reception.” boulevardmagazines.com |

“I often feel people think giving back is for the wealthy, but it’s not exclusively for them. Small acts matter and everybody has something that is of value.”
INDIGENOUS ARTIST Carey Newman gives back in a different way. Committed to philanthropy through his work and life, Carey volunteers his time as a board member for the Victoria Foundation and Pacific Opera Victoria as well as regularly donating his art to various organizations. “I’m an artist — I don’t have millions of dollars — but I have a skill set and if I can use that skill set to help the opera or another charity and leverage that, that’s a good way to go about it,” says Carey, who lives in Fernwood and works out of a studio on the Tsawout First Nation reserve. “I often feel people think giving back is for the wealthy, but it’s not exclusively for them. Small acts matter and everybody has something that is of value.” The 43-year-old father ties the importance of giving back to his traditional upbringing and his First Nations’ heritage. “We came from a shared economy where dispersing wealth through the community was important and key to our survival,” says Newman. “My wife also encouraged me to go outside my work and engage in a more direct way.” Carey and his wife, Elaine Ting, give small scholarships to Indigenous students in Victoria and Saanich, and they’re already teaching their seven-year-old daughter, Adelyn, the importance of giving back. “I hope that we teach her to be a compassionate person who considers her place in the world and is always cognizant of the need in the community,” says Newman.

CHILL “One of the things we do is involve her in handing out the scholarships. So she goes up on stage to give out the envelopes and it’s a gentle way to introduce her to the notion of giving back and the responsibility we have to give back.”
FOR MANY CHARITIES, engaging the next generation of philanthropists is one of the biggest challenges they’re facing. “There’s no question the donor pool is smaller and I think that’s the case in any community,” says Pacific Opera Victoria CEO Ian Rye. “The incoming generations have a different sense of service to the community. As organizations, we’re here to achieve the goals of the community, and part of the exciting thing is finding out what this new partnership is with new philanthropy.”

“It’s not about giving away something you don’t care about, it’s about giving to something that you do care about.”
Ian admits raising funds, even for one of Canada’s leading opera companies, is “very, very challenging”, but the stakes couldn’t be higher. “Forty per cent of our revenues come from individuals and businesses that support the arts and without that support, government support starts to deplete as well,” he explains. “Everything hinges on community support and without that, you don’t exist.” For Ian, who moved to Victoria from Toronto 25 years ago and has three teenagers, philanthropy is also a family affair. “I’ve made a big part of giving in my life to arts organizations and social service organizations. It means a lot to me and my family to do that,” says Ian. “For my children, it starts with volunteerism — giving their time to causes they care about. It’s not about giving away something you don’t care about, it’s about giving to something that you do care about. And there’s no end of worthy philanthropic causes for people who want to make a difference in their communities.” Ian believes there’s no better city in Canada for philanthropy for the arts, but Charlotte Salomon says that over all her years of giving back, she’s seen a disturbing trend. “The problem with Victoria is the same people are donating to everything and they’re getting tired,” Charlotte says. “We have the same people who’ve been donating most of their lives but more and more organizations are coming up needing money. As people age, the donor pool is dwindling and there aren’t enough people stepping up in the younger generation to take over.” As a wills and estate lawyer, Charlotte says she often has clients coming in who don’t have children or a spouse and don’t know what to do with their money.
Extend your family time
Extend your social time
Extend your quiet time
“They ask me where they should leave their money — and that happens more often than you might think — so I always ask them if there’s a specific cause or organization that’s important to them, and I’ll bring in the Victoria Foundation, which is great about developing a plan and a fund to support whatever they’d like to help.” Charlotte is also quick to point out the tax benefits of giving — both for estate planning and to reduce income tax — and who can argue with that? But her best advice for growing that culture of philanthropy is to show your children why you’re giving back. “I chair the Our Place Society fundraising gala every year and I took my daughters there to show them the huge service it provides for homeless people and the working poor in our community,” Charlotte says. “This is why we do it. I also think there’s something to be said about taking your kids to a gala or philanthropic event. Bring your kids, lead by example and have that dialogue about why you’re helping.”

I
N THE summer months, we often find ourselves entertaining a whole pile of friends. I love the company and the laughs, but I do not love slaving over a hot stove to keep everyone fed. With that in mind, I keep things easy by using my grill for all the cooking. And I really mean all: vegetable sides, proteins, fruits, even salads, benefit from a turn on the grill. Being out on the deck, drink in hand, chatting with friends, cooking on the grill feels relaxed, summery and fun. With goodquality ingredients (think seasonal vegetables, wild fish and nice cuts of meat) and a few simple seasonings, you can turn out a very tasty meal for anyone who happens to be home. I invite my guests to help me by plating, finishing with herbs, slicing crusty bread and serving. I often start with an easy grilled salad. It’s quick to make and holds your guests’ appetites while you finish the rest of the meal. While everyone is enjoying the salad, I’ll grill the protein, often seasoned simply with generous amounts of salt and pepper, or a favourite store-bought grilling spice mix from my pantry. Since most proteins benefit from resting for 10 minutes before service, I use this time to grill the vegetables, which usually cook very quickly over medium-high heat. My favourite flavours to pair with an easy summer grilling menu are ones that pack a lot of punch in a simple package. Citrus, fresh herbs, chili or spice rubs, garlic, butter or olive oil, balsamic vinegar: nothing complicated, and nothing requiring a trip to a specialty shop. I also like to keep a few homemade or store-bought sauces on hand to add flair. Great examples: basil pesto, olive tapenade, herbed chimichurri, spicy harissa or The Root Cellar’s Secret Green Sauce. With a few simple pantry ingredients, some fresh seasonal food and a grill, you can turn out a delicious meal in a relaxed summery fashion for any number of friends. Grab a drink, get grilling and have fun!
Any closer and you’d be in the water.

BASIC GUIDE TO GRILLING VEGETABLES All vegetables should tossed with a light coating of oil and seasoning (I prefer olive oil and salt) after cutting, but before being placed on the grill. Bell peppers: Cut out stems, seeds and membranes and cut peppers into four, lengthwise pieces. Place on a hot grill skin side down for several minutes. Flip pieces and press them flat with a metal spatula. Grill for several minutes more. Flip again and flatten again (if necessary). Grill until skins are blackened and peppers are tender, about 10 minutes.. Zucchini: Slice into half-inch-thick slices on the diagonal. Grill over medium high heat, 1 to 2 minutes per side, until grill marked but not mushy. Eggplant: Slice into 1-inch thick slices or wedges, grill over medium high heat,1 or 2 minutes per side, until grill marked and tender, but not disintegrating.

Wild salmon steaks.
Corn: Shuck corn and place directly over medium high heat, with the lid down. Turn the corn several times during cooking. They take about 8 minutes to cook through. Cauliflower: Cut into large florets, grill over medium high heat until char marks appear, transfer to cooler side of grill and cook with the lid down for 5 minutes, turning once. Broccoli/broccolini: Cut into large florets. Grill over medium high heat until char marks appear, flipping as necessary. Transfer to cooler side of grill and cook with the lid down for 1 or 2 minutes. Onion: Slice thick, grill over high heat until grill marks appear, flip and repeat. Cherry tomatoes: Place on a hot grill and cook, stirring/ flipping once, until the tomatoes have char marks and are just starting to burst. Okra: Grill over medium high heat, turning as necessary, until okra is bright green and crisp-tender, with nice grill marks.
Grilled Wild Salmon Steaks with Lemon and Herbs This is a simple preparation that relies on the freshness of ingredients. You can also serve this salmon with chimichurri sauce. Wild salmon steaks, cut 1- to 1½-inch thick (sockeye or coho) 80

Salt and pepper Oil Lemons, cut in half Fresh herbs, chopped (parsley and dill are my favourites) Butter Preheat a grill on high. Brush the cut sides of the salmon steaks with oil, and sprinkle generously with salt and pepper. Reduce heat on one half of the grill to medium high and the other half to low. Brush grill with oil (or rub with a paper towel dipped in oil). Place salmon steaks over direct heat on the hotter side and sear 1 or 2 minutes, until grill marks form and salmon can be moved without sticking. Flip salmon steaks and repeat on the second side. Move salmon to the low heat side of the grill, cover and cook for 5 to 7 minutes more, until salmon is just cooked, starting to flake, but still translucent and clinging to the bone in the very centre. Transfer salmon to a serving platter, dot salmon with butter, sprinkle with fresh herbs and squeeze fresh lemon juice all over the salmon. Sprinkle on more salt, if desired, and serve. For a beautiful garnish, you can grill some thick slices of lemon on the hot side of the grill at any point during the cooking, or even after the salmon has been removed. Arrange these grilled lemon slices on your platter of salmon, along with sprigs of fresh herbs.

Unique finishings‌ for unique projects
Grilled Tri-Tip Steak with Arugula and Chimichurri This inexpensive but flavourful cut of meat works well to feed a crowd. Marinate beforehand to help with tenderness. Serve cut thinly against the grain on a bed of peppery greens and a side of herbed chimichurri sauce. Approx 3 pounds tri tip steaks 5 Tbsp good quality soy sauce 2 Tbsp sugar 1 Tbsp cider vinegar 1 Tbsp water Salt and pepper 4 cups washed and dried arugula leaves 1 cup chimichurri sauce Optional — grilled cherry tomatoes for garnish In a wide, shallow container, mix together soy sauce, sugar, cider vinegar and water, until sugar is dissolved. Lay steaks in container, in a single layer if possible, turned to ensure both tops and bottoms are coated in marinade. Marinate 3 to 10 hours, flipping steaks several times. Remove steaks from marinade to a paper-towel lined tray and pat completely dry. Heat grill on high with the lid down. Sprinkle both sides of the steaks evenly with salt and pepper. Place on one side of the grill to sear; turn the other side of the grill down to low. Sear the steaks on both sides and transfer to cool side of the grill. Cook until steaks register 120 F to 124 F (for rare) or 125 F to 130 F (for medium rare). Put the lid down or the heat up, as necessary
depending on the grill you are using. Once steaks are cooked to your liking, transfer to a platter or baking sheet and let rest at least five minutes. Meanwhile, cover a serving platter with arugula. When the steaks have rested, transfer them to a cutting board and use a sharp knife to slice them thinly against the grain. Place sliced steak on the bed of arugula, drizzle with Chimichurri Sauce and scatter with the optional cherry tomatoes. Serve immediately.
Chimichurri Sauce This bright, herbaceous and flavourful sauce is a wonderful accompaniment to all kinds of food from the grill. It’s traditionally used with steak, but also matches well with our local salmon or an assortment of grilled vegetables. 1 cup well-packed parsley leaves ½ cup well-packed cilantro leaves 2 Tbsp fresh oregano leaves 5 large cloves garlic, peeled Finely grated zest of 1 lemon ¼ cup fresh lemon juice 1 tsp salt tsp chili flakes (more to taste) ½ cup extra virgin olive oil Combine all the ingredients in the work bowl of a food processor and process until puréed into a fine paste. Stop and scrape down the sides as necessary. Transfer to a bowl, cover and refrigerate until ready to use. Sauce lasts for five days in the fridge.

Grilled Broccolini and Cherry Tomatoes with Basil and Balsamic One of my favourite summer flavours! The combination of grilled green vegetables and burst cherry tomatoes with garlic, basil and balsamic vinegar is to die for! 3 bunches broccolini (or 500 grams green beans, topped and tailed) 1 cup cherry tomatoes, stems removed 5 tsp extra virgin olive oil ¾ tsp salt
vegetables at once, grill the cherry tomatoes first). Grill vegetables with lid down, flipping once or twice, until charred on both sides. Cherry tomatoes will be done first. You want them to have picked up some grill marks and they should be just starting to burst, but not collapsing in on themselves. Remove to bowl while the broccolini is finishing— it should be bright green and crisp-tender with beautiful charring. Place the broccolini in a wide, shallow serving dish, scatter cherry tomatoes over the top along with any accumulated tomato juices, and drizzle vegetables evenly with the basil mixture. Serve immediately, or allow to cool to room temperature.
Grilled Romaine and Radicchio Salad
2 cloves garlic, minced or grated 2 Tbsp extra virgin olive oil 2-3 Tbsp minced fresh basil 1-½ Tbsp quality balsamic vinegar ¼ tsp each salt and freshly ground pepper Toss the broccolini with 4 tsp of the olive oil and ½ tsp salt in a large bowl, and mix well until evenly coated. In a separate small bowl, toss the cherry tomatoes with the remaining teaspoon of olive oil and ¼ tsp salt. In another small bowl, mix together the garlic, olive oil, basil, balsamic vinegar and salt and pepper. Set aside. Preheat grill on high heat with lid closed until very hot. Turn burners down to three-quarters of max. Place broccolini directly on the grill, leaving room for the cherry tomatoes on one side. (If your grill is too small to do both
Grilling salad greens is a revelation for most people. The romaine retains juiciness and crispness, but picks up a beautiful flavour from its time on the grill; radicchio (or other bitter greens) lose some of their bitterness but retain a delicious complexity of flavour. Dressed simply with lemon, pepper and sharp cheese, this salad needs no other garnish. 2 small heads romaine lettuce, or 4 hearts of romaine 1 head radicchio 2 or 3 Tbsp extra virgin olive oil ½ tsp salt 2 or 3 Tbsp freshly squeezed lemon juice ½ tsp freshly ground pepper ½ cup grated sharp cheese (Pecorino Romano, Parmigiano-Reggiano, etc)

Preheat grill on high with lid closed. Cut romaine in half lengthwise, so the halves have some core attached and stay intact. Cut the radicchio into wedges with a part of the core attached on each one (quarters or sixths, depending on the size of the head). Pour the olive oil onto a baking sheet. Place the romaine cut side down on the oil and rub around to make sure the cut side is coated. Remove the romaine to another tray or a plate. Now place the cut radicchio on the oil-coated tray and rub around to coat with oil (drizzle on more oil if necessary). Sprinkle both the romaine and radicchio liberally with salt. Place the romaine, cut side down on the grill. Keep the heat on high. If your grill is big enough, cook the radicchio at the same time. Leave the lid open and really press on the lettuce to help it sear. After a minute or so, turn the lettuce and radicchio and grill the second side. This should take less than three minutes. You want the lettuce to have grill marks and some charring, but not be burnt. The radicchio will fade in colour and get slightly more charred. Remove romaine and radicchio from the grill and transfer to a cutting board. Cut the cores out and discard them. Chop the leaves into bite sized pieces. Scatter the grilled leaves on a serving platter, squeeze fresh lemon all over, grind fresh pepper all over and sprinkle with grated cheese. Serve immediately.
Grilled corn with smoked chili butter Sweet grilled corn is the essence of summer eating. This smoky, flavourful, buttery sauce takes it to a new level.
8 cobs of corn, husks removed 4 tsp oil ½ tsp salt 2 Tbsp soft butter 2 Tbsp Hellmann’s mayonnaise 2 tsp smoked paprika 1 tsp minced or puréed canned chipotle in adobo 1 clove garlic crushed to a paste Finely grated zest of 1 lime 1 tsp fresh lime juice ½ tsp salt, or more, to taste ½ tsp brown sugar, or more, to taste Preheat grill with all burners on high and lid closed. Toss shucked corn with oil and salt, making sure each cob is coated evenly. Turn burners down to medium. Place corn directly over grill and cook, lid closed, turning occasionally, until charred on all sides and fully tender, about 10 minutes. Meanwhile, combine all remaining ingredients in a small bowl and mix well until evenly blended. Remove corn from grill to a nice platter. Slather each piece on all sides in the butter mixture. Serve immediately. Special thanks to Hardy Fink and Cynthia Bonesky for hosting our photo shoot at their beautiful home.

Vive le château! History, charm and culture at the Château Frontenac BY HANS TAMMEMAGI

s the cruise ship docks in Québec City, I’m instantly overwhelmed by the fairytale castle with soaring turrets that looms high above us. Has some time warp transported me to Europe? Cobblestone streets lined with outdoor cafés, galleries and houses that exude history lead me up the hill. I stop at a bistro, sip an ale and ponder the vision of the castle-like Château Frontenac perched atop Cape Diamond. As a traveller who’s seen a few exotic locales, I wasn’t expecting to be so impressed by Québec City. Perhaps I have to reconsider? Crossing Dufferin Terrace with its imposing Champlain Monument, I arrive at the courtyard entrance to the château. A Canadian flag flaps alongside the blueand-white Fleur de Lis of Québec. As a valet parks a vintage, fire-enginered Bugatti, I bump my suitcase under an arch that bears the coat-of-arms of Louis de Buade, the flamboyant Count of Frontenac, who was the governor of New France in the late 1600s, and for whom the hotel is named. Even here in the lobby, history casts a long shadow for, looking upward, I notice a 300-year-old stone bearing the Cross of Malta emblem embedded in the vaulted ceiling. I’m impressed.

The “Grand Staircase” at Château Frontenac.
Not surprisingly, the lobby is bustling — after all, the Château Frontenac is the iconic heart of Old Québec and renowned for hosting prestigious events. In 1943 and 1944, for example, the Château held the Québec Conferences involving US president Franklin D. Roosevelt, British prime minister Winston Churchill and Canadian prime minister William Lyon Mackenzie King. In 1987, 42 heads of state assembled here for Le Sommet de la Francophonie. And, of course, this year, the hotel’s 125th birthday is attracting many visitors. Heading to my room, I get a feel for the immense size of the Château: it has 611 guest rooms on 18 floors and the total length of hallways is 12 kilometres. I wonder idly if any of the countless famous personalities who have graced the hotel have stayed in this room. However, it’s more likely that these people — to name a few, King George VI and Queen Elizabeth, Princess Grace of Monaco, Chiang-KaiShek, Charles de Gaulle, Ronald Reagan, François Mitterrand, Prince Andrew, Charles Lindberg, Céline Dion, Leonardo DiCaprio, Paul McCartney and Alfred Hitchcock — probably resided in more prestigious quarters than mine. We would all, however, have had the same breathtaking views of the hotel’s turrets, copper rooftops, the fortified city and, far below, the St. Lawrence River. Tour guide Yvette, with raven hair and a delightful French accent, meets me at 1608, the hotel’s wine and cheese bar named for Québec’s founding year. 112

“In 2014, a $75 million renovation brought the Château to the forefront of the world’s best hotels, while preserving heritage,” says Yvette. We visit the spa, banquet rooms, three restaurants and more. Silently, I vow to return to Champlain, the anchor restaurant. Yvette leads the way outside, explaining, “The Château stands on the Saint-Louis Forts and Châteaux archaeological site, which was for over 200 years the official residence and seat of the French and British governors.” On the plaza, “windows” in the pavement show the archaeological diggings and displays directly below, offering unexpected views. We stroll along streets with colourful shop signs hanging overhead. Horse-drawn buggies filled with tourists clip-clop past. Buskers perform. The fortified wall, which encircles the entire Old Town, bristles with long black cannons, and I can only imagine the fear they brought to ships passing below. At the spires of the Basilica of Sainte-Anne-deBeaupré, Yvette says, “Many miracles have happened here.” We stroll the walls of the Citadelle, a fortress first built in 1690, and now a home for the Governor General. “This city is more than 400 years old,” says Yvette, “and is the cradle of French America. Little wonder it’s a UNESCO World Heritage Site. The Château Frontenac is as iconic to Québec City as the Eiffel Tower is to Paris. It is more than a hotel; it is a symbol of Canada.”
SAM Bistro is one of several restaurants at Château Frontenac.

View from Champlain restaurant.
I can only nod in agreement. We part ways and I head for the Champlain restaurant. The waiter hands me a wine list whose length (16 pages!) is daunting. Selecting a Rhône Valley Viognier I peruse the menu. Chef, Stéphane Modat, who formerly worked at a three-star Michelin restaurant, puts intriguing twists on traditional Québécois fare. I choose the Lièvre Sauvage de Saint-Jules (shredded hare from St. Jules) followed by the Gros Pétoncles du Golfe St-Laurent (scallops from the St. Lawrence Gulf). Ahh, French cuisine is unbeatable! After a short walk outside to see the fairy-tale castle in dramatic night-time lighting, I retire — rather nervously, for two ghosts reside in residence. One is the 17th-century governor Louis de Buade. He is said to be looking for his fiancée, who was away in Europe when he passed away. I’m more concerned about the other ghost, a long-haired woman in a white nightgown, who is reputed to climb into bed with guests. Nevertheless, I sleep blissfully. The next morning, while savouring an espresso at an outdoor café overlooking the Old Port and river, I contemplate the Château Frontenac and Yvette and her historic city. I’ve been seduced by its history, charm and culture. 114

GUITAR TSAR
ARTYOM DERVOED (RUSSIAN GUITARIST) CLASSIC GUITAR RECITAL OCTOBER 10
F
OR NEARLY 30 years Alexander Dunn has been a music performance instructor at UVic and has long been head of guitar at the Victoria Conservatory of Music. This prize-winning master of classical guitar has also been very active as a concert promoter through the Victoria Guitar Society and has an impressively international season coming up, starting with Russian virtuoso Artyom Dervoed. Often referred to as the “Tsar of the guitar,” Dervoed has played on many of the world’s most prestigious stages and has won an impressive 16 first-place finishes in various international competitions. Although people tend to think of classical guitarists as being introverted, the Moscow-born Dervoed combines musicianship with a larger-than-life personality. “Artyom is a brilliant technician but he’s also a great communicator,” says Dunn. “He’s in that rare class of artists, like Horowitz or Joshua Bell, who command the stage. He has a very large persona and a big sound … he really projects.” Although Dervoed has lately been focussing a lot on concertos for guitar and orchestra, he will be giving a solo recital here, the last stop on his Canadian tour. According to Dunn, the repertoire will be a mix of 19th and 20th century pieces, including some Russian works. Subsequent shows planned by Dunn include a recital by China’s Tengyue Zhang, who just won the ultra-prestigious Guitar Foundation of America competition, and Cuba’s electrifying Iliana Matos. “These are super-expressive, top-notch players,” says Dunn. “It’s a chance to experience the state of the guitar.” Performing October 10 at UVic’s Phillip T. Young auditorium. For tickets, see Victoria Guitar Society.

BLITHE SPIRIT CLASSIC COMEDY PRESENTED BY LANGHAM COURT SEPTEMBER 26 TO OCTOBER 13 When Langham Court Theatre launches its 90th season this fall, Blithe Spirit won’t be the only classic at work. The legendary farce by Noël Coward is being directed by Toshik Bukowiecki, who first volunteered for Langham Court way back in 1971. “I’ve directed, painted sets, run props and acted … that’s about 70 shows over the years,” says Bukowiecki with a chuckle. A big Coward fan, Bukowiecki rates Blithe right up there with Private Lives and Hay Fever. “It was first performed in 1941 and provided comic relief all through the Second World War,” he notes. The plot concerns a mystery writer named Charles who wants to create a character based on a phoney spiritualist. To that end, he invites an eccentric clairvoyant, Madame Arcati, to conduct a séance. His sneaky research plan goes awry when Arcati somehow manages to summon the ghost of Charles’s irritating first wife, Elvira. This very unwelcome guest, whom only Charles

— and the audience — can see, then proceeds to undermine the poor man’s marriage to his second wife. “There’s no real message, it’s just two hours of escapist fun,” says Bukowiecki. The costumes and set design take their cue from the heyday of Art Deco, while the actors will step back in time to adopt the urbanely sophisticated style of wit and mild sarcasm for which Coward is celebrated. “The tone of the play will be very honest to the original,” adds Bukowiecki. “The only difference is that we’ll be using modern special effects to move things around and make the doors open and close by themselves.”

performed as one of his Craigdarroch Castle shows,” says the English-raised Elendune. But when Case stepped away from doing more productions, Elendune kept going with his half-finished manuscript — which went on to win a national award last year in Ontario. Fittingly, Case will now be directing the sophomore production of Frankenstein as the “Halloween” show at Theatre Inconnu. “I’ve kept fairly faithful to the original story, but there are hints of H.P. Lovecraft and Blade Runner in themes such as the nature of memory and the acceleration of life,” Elendune explains. He was also inspired by a documentary on Leonardo Da Vinci, where he saw parallels between the famed inventor and fictional scientist Victor Frankenstein in their shared desire for power and influence and money. “Da Vinci, too, was dissecting bodies,” he adds with gruesome relish. Now semi-retired, Elendune worked on high-powered TV dramas back in England and aspires to write what he calls intelligent entertainment. “I want to give people an enjoyable surface — a few funny moments and a few scares,” he says. “But although I think the message shouldn’t get in the way of the entertainment, there is a lot there for the audience to think about if it wants to.”

BARGE PARTY!
BREAKWATER BARGE CASUAL MUSIC AND SUDS SCENE ON FRIDAY NIGHT EVERY FRIDAY, 5 TO 9, UNTIL SEPT. 28 Now into its third season, the Breakwater Barge has become one of the hottest tickets in town for music fans who want to have a drink while drinking in those gorgeous views across the Strait of Juan de Fuca. Located on the Greater Victoria Harbour Authority barge situated between the Breakwater and where the cruise ships dock, this unique venue can hold 375 people and runs every Friday night from 5:00 to 9:00 pm. “Even though we’re licensed, this is a real family-friendly evening and a lot of people bring their kids instead of hiring a babysitter,” says event founder Deanna Young. Rated by some as the city’s finest venue for live music, the Barge has a rollicking, friendly vibe that is goosed along by an opening act and then a headliner (and with different local bands each and every Friday). A variety of food trucks provides tasty dinner options, while Phillips, Hoyne, Driftwood, Sea Cider and Artisan Wine provide premium beer and wine. “The bands really play to the audience by generating singalongs and clapping, and probably 30 per cent of the audience are dancing,” Young notes. “Some passersby even start dancing on the breakwater,” she adds with a laugh. With admission pegged at a mere $5, the Barge has no trouble running at capacity. And thanks to windbreaks and heaters, this covered facility is comfortable even when the weather doesn’t cooperate. “The whole feel of the Barge is original and delightful,” adds Young. “I’ve never before been a part of something so special.”
Running every Friday night at 201 Dallas Road until September 28. For information, see Breakwater Barge.
A SEAT AT THE TABLE
“MAKING IT” AT LEGACY GALLERY RETROSPECTIVE OF CAMOSUN’S FINE FURNITURE PROGRAM JULY 14 TO SEPTEMBER 22. Anyone for whom the term “Chippendale” evokes elegant furniture rather than a male dancer’s sculpted physique would likely be interested in the 30-year retrospective of Camosun College’s Fine Furniture program that’s being mounted at Legacy Gallery. Program founder-instructors Cam Russell and Ken Guenter both retired last year, and their more than 500 graduates have had a real impact on Vancouver Island over the decades. “About two-thirds of our students ended up pursuing woodworking professionally, whether as a specialist doormaker or somebody who started their own custom cabinetry business,” says Russell. “A lot of the local furniture-making industry is down to our grads.” In keeping with the program’s longtime expectation that students’ final project should be a chair, the exhibition will feature an artful array of this supposedly utilitarian object by 33 of the top students over the years. Pieces by Russell and Guenter will also be included. According to Russell, the appeal of handmade furniture is powerful. “The quality is superb, the client is encouraged to give input into the project, and the object will last for centuries,” he declares. “It’s the absolute opposite to IKEA.” He includes custom furniture in our culture’s widening
enthusiasm for artisanal things in a world gone increasingly digital. “Whether it’s craft beer, older cameras that use film, or a return to vinyl records, there’s a real buy-in to hands-on retro,” notes Russell. “And the sensuous, smooth tactility and visual appeal of handmade furniture is very much a part of that movement.”
Runs until September 22 at the Legacy Gallery, 630 Yates Street.

from all across Canada and even international participants,” explains tour director Seamus McGrath, himself a crosscountry mountain bike racer. A two-time Olympian who twice medaled at the Commonwealth Games, McGrath readily calls Victoria the cycling capital of Canada. “There are about 20 tours like this across the country, but nobody can match us for incredible landscapes, quality of roads and the climate,” McGrath says. Participants are fully supported with a number of rest stops offering great food and drink, as well as medical and mechanical help as required. Courses are also rigorously monitored by police and ride marshals, guaranteeing riders get a car-free lane and traffic-controlled intersections. “It’s like a Tour de France-level cycling experience … complete with varied and stunning terrain to ride through,” says McGrath, who expects 10,000 cheering spectators on the roadsides. This is a non-competitive and very social event, with lots of on-the-road camaraderie that culminates with post-ride revelries at the Spinnakers beer garden. “You’ve earned that pint after you’ve been out there riding your miles,” grins McGrath.

“I’ve always enjoyed the serviceto-people aspect of the business. I think that because I’ve been so community-minded, and having the family history here as well, the connection to people has been really important to me.”

HETHER DISCUSSING her work, family life or philanthropic efforts, Victoria realtor Shelby Donald is always quick to bring the discussion back to the strong sense of connection she feels for her
beloved hometown. “This community has been fantastic to me over my life,” says the married mother of two, during a recent conversation in her bright, Oak Bay home. With her feet firmly planted in the city her family has resided in for the last three generations, Shelby makes a concerted effort to extend her roots, immersing herself ever deeper into the social and cultural fabric of the place that continues to give her much to be grateful for — including, most recently, a passion for helping others. Shelby, 52, has made fundraising for BC Cancer — which works to reduce the burden of cancer in BC — a priority in her life, and she’s a proud member of the agency’s Victoria regional advisory council. Her responsibilities include lending a hand with muchneeded equipment, cancer care and research campaigns, as well as helping with the planning of BC Cancer Foundation’s annual holiday Jingle Mingle, described by organizers as Vancouver Island’s largest annual charity event. “It was a way to give back in a meaningful way,” says Shelby. “There have just been a lot of people in my life that I’ve known that have been affected by cancer. In Canada, it’s one in two people in their lifetime. Fifty per cent of people will be diagnosed with it. It’s very prevalent.” Shelby’s interest in community service began when she was young, growing up in Gordon Head. As a teenager, she started working with her father, Bud Dovey, a commercial realtor, doing landscape work at his properties. “I started young and I started from the ground up,” says Shelby, adding that when it came to real estate, “we were just immersed in it in our family life from the time I was born. I was always really passionate about it.” After completing a bachelor of commerce degree at the University of British Columbia (the only period of time she lived outside of Victoria, with the exception of a year-long nannying stint in Switzerland after graduating from Mount Douglas Secondary School), Shelby decided to return home to officially join the family business.

While she worked with her father, who is still active in the profession, for a number of years, Shelby is currently a member of the local Newport Realty – Christie’s International Real Estate team, having recently made the shift from commercial to residential property sales. “I’ve always enjoyed the service-to-people aspect of the business. I think that because I’ve been so community-minded, and having the family history here as well, the connection to people has been really important to me. I think that’s probably what draws me to real estate. It’s that type of business. We do have a lot of connections, the network is very vast,” she says. While she has known some of her clients forever, others she welcomes the opportunity to meet for the first time. She also enjoys the chance to work with people at various stages of their lives, from first-time homebuyers who are newly married or expecting their first child, to seniors who are downsizing. “That’s the rewarding part — finding just the right thing for that particular buyer or seller,” she says. Shelby was pleased to find a partner who shares her passion for the community they have both long called home. “We actually met when we were eight-years old, oddly enough,” she says of her husband, Jon, a management consultant. “It’s a funny story because our parents were friends and his family came over to visit. I rode a minibike when I was eight, and he asked if he could take a ride. He promptly jumped on it and crashed into my neighbour’s fence.” She and Jon didn’t meet again until their mid-20s, once again the result of their family connection. Married for 22 years, they’re proud of their two daughters, Emma, 22, and Olivia, 20, who are in various stages of their
respective post-secondary studies. Their children still live in Victoria, enabling the family to continue to spend a lot of time together, mainly on the ski hill or out on the water on their 22foot runabout, circumnavigating the Gulf Islands. A family trip to South Africa for the holidays is currently in the works. But before they head off, Shelby is looking forward to contributing to the 2018 edition of the Jingle Mingle, set for December 6 at The Fairmont Empress. “I think it’s one of the best charity events in the city,” says Shelby. “It’s such a great, local-focussed cause. It’s a great group of people. It’s a stand-up event where donors are all mingling together and you get a lot of opportunity to chat and socialize.” Since its inception 11 years ago, the Jingle Mingle has raised more than $7 million to improve cancer care for local patients. At last year’s Jingle Mingle, guests celebrated the completion of a BC Cancer Foundation fundraising campaign that saw more than 1,800 Vancouver Island donors raise a collective $5 million to bring the first PET/CT scanner to Victoria, saving thousands of patients from having to travel to Vancouver every year. As a member of the agency’s regional advisory council, this marks Shelby’s proudest accomplishment to date and has cemented her interest in continuing to do her part to attract more donor dollars to further help improve the outcomes for local cancer patients and their families. “I just feel passionate about helping even a small, small way toward those advancements,” she says. For more information or to buy tickets to this year’s Jingle Mingle, visit bccancerfoundation.com/signature-event/jinglemingle.
