Dee’s Wood Fired Pizza & Kitchen look at their 12-inch pies, you can see what he means and how evenly cooked the pies are. There is another unique thing they do— however, Dee said it was a secret! Dee’s only uses quality ingredients. Their mozzarella is sourced locally in Brooklyn. They use San Marzano tomatoes, handmilled olive oil, and salt. They do not use sugar or any kind of tomato paste. I arrived at Dee’s on a Tuesday night just before their 5 p.m. opening. Immediately, I was greeted by Andrew Arabian, the manager, and Dee’s son. Andrew is following in his father’s footsteps as he too worked his way up to manager in the family business. He was also a Division I golfer with the University of Delaware golf team. I chose to sit in the back of the restaurant, closest to their new oven. A beautiful oven, it is a hybrid of wood-fired and gas. One of the advantages of this type of oven is that it automatically rotates the pies, which helps them cook more evenly. Also, they ignite by gas and burn less wood, which creates tasty

flavors and is better for the environment. Rachel and Mark arrived a few minutes later and it was game on. As you can see, we tried four delicious pies. First was the “truffle delight,” a heavenly white pie with mushrooms, and bechamel (a butter and flour mixture also known as “Roux”) mixed with milk and seasoning. Dee’s French culinary influence came shining through on this pie. Secondly, we tried the “Forest Hills,” consisting of burrata, prosciutto de Parma, and arugula with a balsamic reduction. This unique pie was Mark’s and my favorite. We then had their “Classico Original” and a concept pie fourth, which was not on the menu called, “The Pesto.” This delicious pie included pesto, burrata, bacon, onions, and butternut squash. They rotate their menu seasonally, so hopefully “The Pesto” will be served in the fall. Nestled on Metropolitan Avenue and 74th Avenue, the recently remodeled Dee’s seats 75 in a spacious setting with a Manhattan feel. They offer six cocktail options,

11 wines, and six beer choices. There is free neighborhood parking and 2-hour metered parking from 9 a.m. - 7 p.m. right in front of the restaurant, about 100 feet east of Ascan Avenue.
