Hello, I’ve been a Brakes customer for over 20 years and I love that Brakes are working with small/medium artisan producers offering a fantastic range of local produce to an already extensive range.

Throughout the brochure, I’ve prepared recipes and used ingredients that I love to cook.

As Scotland is renowned for the quality of its meat, I felt it was important to highlight the Scotch Beef PGI (see p 5-7) in particular - its flavour, consistency and quality is incredible.

On page 8 and 9, like on MasterChef, I’ve showcased wild venison as it’s such a versatile and iconic Scottish ingredient.

Over the last year with Brakes Scotland I’ve had the opportunity to meet so many amazing Scottish suppliers. I’ve harvested mussels in Shetland (see the video p 17), met the farmers who rear the Scotch Beef PGI, visited fishing boats at midnight to help bring in the catch and picked Scottish asparagus (see the video p 39). All this truly makes you understand the supply chain and see the hard work and passion that the Brakes team put into sourcing it - it’s inspirational.

The direction Brakes Scotland is taking is really exciting but let’s face, it we’re all feeling the pinch and there’s not enough chefs in the industry.

Products such as Rannoch smoked duck (p 13) is exceptional quality and offers the chef a ready-touse ingredient that saves you time and money. I urge chefs to buy the best and let the food do the talking and hopefully you’ll take some inspiration from my recipes throughout the brochure.

Scotland’s larder is extraordinary and it is something we should all be very proud of - tuck in and enjoy!

Mix the pomegranate seeds with the sliced onion, oil and vinegar and season to taste 2. Break the Strathdon blue into bite-size pieces and add to the pomegranate.

3. Add the blanched French beans, red chard and pea shoots to the bowl, combine and transfer to a serving dish.

M E T H O D (for the steak) 1. Pre-heat a griddle pan and once the pan is hot, the oil will start to haze slightly. Season the steak with flaked sea salt.

1. Add the steak and “seal” the meat to create colour and flavour and cook to desired taste. Resist the need to shake the pan - shaking the pan will only cool it down.

1. Allow the steak to rest giving you a much more flavoursome meat and giving it a beautiful blush and even colour.

Diced lean and trimmed venison cubes ready to cook, reducing preparation time and minimising wastage. The diced meat is cut from the shoulder and haunch, is lean and requires slow cooking for maximum tenderness i.e. stews, casseroles, pie fillings and terrines.

METHOD 1. In a warm sauté pan, add knob of butter and sweat half of the shallot and garlic for 2-3 mins.

2. Add wine, bring to boil, add mussels place lid on and steam shellfish for 3-4 mins (discard any unopened mussels).

3. Strain through a sieve keeping the liquid as this forms a base to the broth. Remove mussel meat from shells 4. Wipe out pan, add butter, the other half of the shallot and sweat for 2-3 mins add the cooking liquor and reduce by half.

5. Add veg stock and reduce by 2/3 then add cream and again reduce by a 1/3.

6. Add the diced potatoes, saffron and boil for a few minutes.

7. Add peas, courgettes, spinach and tomato and warm through.

8. In a non stick pan heat a teaspoon of veg oil then add fish skin side down. Cook for 2-3 minutes until skin is crispy. Turn fish over add 10g butter, take pan off heat and allow residual heat of pan to finish the cooking.

9. Blanch the langoustine for a few seconds in boiling water, then remove the meat from the shells. To poach the tails bring the butter up to 65°C remove from the heat, add the tails and allow them slowly to heat through.

10. Finally add mussels and parsley and serve in a large bowl with the fish on top and garnish with your butter poached langoustine.

Steamed Mussels with Cider Cream

Melt butter in heavy saucepan and sauté the spring onions and garlic over a high heat for 1 minute before adding the “Whisky Cask” Cider.

Add the mussels and thyme sprigs, cover with lid and cook for 3 – 4 minutes till mussels have opened. Add the cream, season to taste and stir in the parsley. Bring back to the boil.

2. Divide the mussels between bowls. Pour over the sauce and spring onions from the pan and serve with crusty white bread to mop up that delightful “Whisky Cask” Cider Cream.

METHOD 1. Soak 6 tablespoons of orange juice into the sponge and spread the base with some raspberry jam.

2. Scoop about 1 litre of Mackie’s Traditional ice cream onto the base and put in the freezer for at least half an hour.

3. Make your meringue mix - whisk 3 egg whites with 175g of caster sugar - until light, white smooth and creamy.

4. Paste the meringue mix over the ice cream and make sure the ice cream is all covered. Put back in the freezer for an hour or until you are ready to cook.

5. Pre-heat oven to about 200c and bake your creation for 8 minutes - the meringue should set/ go golden and your ice cream is still cold.
