DRINKS LIST

Here we are all about being local Our aim is to remain as British as possible without restricting our culinary boundaries. Here, we source a vast percentage of our produce from local farms and producers in the Suffolk region, and if it’s not available on our doorstep or in the natural surroundings, we go a touch further. Locally-sourced, fresh ingredients are key to our recipes, and because of this, our food menu changes every day to reflect what is fresh, available and in season. Our recipes are all about the quality of the ingredients, and we are passionate about food and local British sustainability going hand in hand to deliver something different. We are so committed to local produce that we encourage you to bring in your own home-grown or locally-sourced produce for us to create wonderful food or drink from. If for example you have apples growing in your back garden, we will turn them into delicious fresh apple juice or cider, simply come and weigh them on the scales on our bar. Similarly, if you are a local food producer or supplier, we would love to hear from you.

We believe in keeping things local. We support local producers and we source the vast majority of our produce from them. We like to use food in season, when it’s at its very best. Founded in 1994 by Mike and Chris Roberts, Ridgeview is situated in Ditchling and is dedicated to producing world class sparkling wines in the South Downs of England. The winery is now run by the 2nd generation of the family and it is the passion shared by the whole family which has helped Ridgeview receive over 100 medals and trophies for their wines.

Ridgeview’s trade mark Merret™ is in honour of Englishman Christopher Merret. In 1662 he presented a paper to the Royal Society in London which documented the process of making traditional method sparkling wines. This was 30 years before the technique was documented in Champagne.

Aromatic & very fruity Hungary has always been best known for the sweet wines created in the region of Tokaj in the North East of the country. Nowadays, they are making incredible whites, such as the Dry Furmint.

I just love the San Vincenzo & the Hawkes Bay Sauvignon Blanc. The San Vincenzo is so fruity, yet dry and I feel really is the way that Soave should be. The Sauvignon Blanc from Trinity Hill shows incredible restraint for a Kiwi Sauvignon and I think its a lot more suitable for food pairing due to this fact.

One of the New World’s oldest wine producers, South Africa now produces wine from approx. 100,000ha; 40% less than Bordeaux’s total vineyard area.

In the search for something unique, the ancient Italian grape variety Lacrima di Morro d’Alba, produces a fruity, herbal & aromatic wine that’s like nothing I have ever tried before. Marco Parusso has been practising biodynamism for years but he’s not interested in official certification, he seeks to make elegant wines and I just love his Barolo.
