1kg damsons 450ml water 400g caster sugar 50g trimoline
Place washed whole stone in damsons in Thermomix jug with 100ml water, set timer to 20 minutes, revese blade stirring speed. Pass the damson puree through a sieve, discard of sones and retrun the puree to clean jug. Add rest of the water, sugar and trimolne, set for 10 minutes, 90째C, speed 2. Pass the sorbet mixture directly into pacojet beakers and chill over ice. Freeze 24 hours to -22째C. Churn required portions at a time.
