Passion Fruit Pastilles By Madalene Bonvini-Hamel | www.britishlarder.co.uk Makes approximately 40 pieces 700g boiron passion fruit puree 240g glucose 30g apple pectin 400g caster sugar 15 citric acid Line a 32 cm x 23cm x 3.5cm deep metal tray with triple thick layer of clingfilm, set aside. Bring the passion fruit puree and glucose to the boil over medium heat in a medium size saucepan, stir continuously. In a separate mixing bowl mix the pectin and sugar, remove the pan from the heat and stir the pectin sugar mix into the boiling puree until dissolved. Return to the heat, increase the heat and boil until 104째C, stir continuously. Stir in the citric acid and immediately pour the mix into the lined tray. Work fast as the mix will set very quickly. Leave to set and cool for 2 hours. Cut into bite size squares and keep in an airtight container. When ready to serve toss in granulated sugar and serve.
