Fall as Inspiration for Poets and Cooks Fall is probably the most picturesque season worshipped in poetry. The sun still gives us its soft warmth, trees please the eyes with their bright colors, while fields and gardens share with us their bountiful harvest. This is a perfect time to store up on vitamins alongside with health for the long winter ahead. Fruits and vegetables from a new harvest are especially rich in vitamins, minerals, and valuable dietary fibers. They are good for you if eaten raw, but also boiled, stewed, and roasted. Vegetable dishes combine a lot of beautiful, tasty, and healthy components that together result in a cooking masterpiece. Onions and garlic are indispensable in the fall diet. They are known for their anti-viral and antiseptic properties and prevent you from catching colds in the rain season. The real autumn queen is the pumpkin. Its bright orange color improves you mood, and can be used harmoniously in both main courses and desserts. It can be boiled, baked, roasted, and grilled. Pumpkin can produce excellent soups, porridges, and jams. It can be roasted with meat, stewed with vegetables, used as an ingredient in pancakes, cakes, pies, or it may be combined with cottage cheese and honey in casseroles. The benefits of pumpkin are astonishing, especially taking into account its very low calorie value: only 28 calories per 100 gram. Pumpkin is rich in beta-carotene, vitamins C, PP, E, B1, B2, as well as minerals: potassium, calcium, magnesium, ferrum, and others. It also contains the rare vitamin T, which acceler-
ates metabolism, helps blood clotting, and produces blood plates. Thanks to such a composition, pumpkin is very good for your eyesight, heart, and vessels, for your stomach and intestines. Pumpkin dishes are part of many weight-loss diets, and they are recommended for gastritis. It also protects your skin from aging. Another symbol of the fall is mushrooms. Their taste and flavor will embellish any dish. You can easily add them to soups, salads, cutlets, and casseroles. You can fry them with potato and stuff pies with them, dry and pickle them. The taste of mushrooms is supported by their healthy effects. By their content of minerals they can be compared to fruits, by the content of carbohydrates to vegetables. By the content of protein, mushrooms are on a par with meat and they even have a second name “forest meat.” For vegetar-
ians
or the faithful keeping the fast, mushrooms is one of the main sources of protein. Besides, mushrooms contain fats, vitamins (А, group В, D, Е, РР), and minerals (potassium, calcium, zinc, copper, phosphorus, sulfur, manganese). This set of elements produces a positive effect on your nervous system, blood production, heart, blood vessels, and also your hair, skin, and nails. The beta-glucans contained in mushrooms support the immune system and have an anti-cancer effect. All the gifts of autumn have their own benefits, but our special attention goes to those that allow you to store up on vitamins С, Е, А, D and of the B group. They keep your body going in the off-season period and help you adjust to the tricky autumn weather. Let’s see which produce contain these vitamins. Vitamin С It’s a main guardian of our immune system from various infections. Vitamin C is required for numerous metabolic processes in the human body. According to recent research, the deficit of ascorbic acid may lead to tumor development, especially breast cancer. Vitamin C is contained in all citrus fruits, black current, apples, cabbage (especially in the form of sauerkraut), bell pepper, garlic, pumpkin, ramsons, parsley, docks, rose hip. Vitamin Е It is often called the youth vitamin because it protects the cells from premature aging–it maintains the elastic-

ity and structure of skin. Vitamin E is also indispensable for hormonal metabolisms, maintaining women’s health. It is found in vegetable oils: olive, sunflower, flax, soy, corn, and pumpkin oil. Other products rich in vitamin E are sprouts, buckwheat, and veal liver. Vitamin А It is responsible for your skin and eyesight, it protects mucous membranes, and it stabilizes a hormonal state. Vitamin A is abundant in cranberries and carrots, as well as in liver, egg yolk, radishes, tomatoes, red bell pepper, pumpkin, and dairy products. Vitamin A is well-preserved after conservation, for example, in pickled tomatoes. Vitamin D It is required for good digestion of calcium so needed for healthy teeth and bones. Vitamin D also helps maintain the function of thyroid, heart, and blood vessels. This element is found in fatty sea fish (salmon, keta salmon, beluga sturgeon, etc.), cod liver, and tuna liver. Vitamin D is produced in our bodies under the sunlight. The B group vitamins Vitamin В6 is responsible for memory, and maintains immunity and intellect. B12 is good for blood creation. B9 strengthens the nervous system. B6 is contained in beans, nuts, pomegranate, bananas, sea buckthorn, and sea fish. B9 is contained in greens. B12 is part of buckwheat, eggs, veal liver and meat. All the above vitamins will help maintain your body healthy and strengthen your immune system to fight colds and other diseases, which is especially valuable in the fall and on the eve of winter. What else should be included in the fall diet, besides vitamins? All products that help your intestinal activity. To avoid disbacteriosis which destroys your immune system from the inside, it is recommended to consume one fermented milk product a day: kefir, cottage cheese, yoghurt, etc. If you choose medium-fat products, you can maintain your health without damage to your figure. Fall is not the time to reject all fats. They will keep you warm and energetic. Especially because there are so many healthy fats. You can consume them with fish, avocado, olive oil, nuts. Even pork lard, if consumed responsibly, may bring you only the benefits. Autumn colds bring along cravings for something hot. To keep yourself warm, try soups. Vegetable, mushroom, herbal, and spicy soups will satiate your appetite and recharge your batteries. Cloudy autumn days cannot go without hot tea and a dessert. You can add your summer herbs to your tea and drink it with home-made jam, honey, and dried fruits. They will improve your mood and bring benefit to your body. Alexader Petrov: “it’s a roller coaster with free-falling into Gogol’s character” Mysticism, adventure, detective, and love story. One of the long-awaited summer premieres Egor Barnov’s Gogol: the Beginning was released on the 31st of August. It tells the story of a young writer Nikolai Gogol who tries to help investigator Yakov Guro solve a series of mysterious murders. After the premiere, viewers can expect three more films, and the filmmakers are sure that fans will impatiently look forward to the sequels. Alexander Petrov who played the lead in the film gave an exclusive interview to our newspaper and shared some of the most interesting facts about the project. – Alexander, did you grow your own moustache for this part? – That’s my biggest pain. I hated that moustache. Initially we planned to attach one before each shooting. But when I arrived for the first shooting, I had an impressive beard, so we decided to leave my moustache simply to see how it would all look like. We shaved off the beard, left the moustache, and dyed it. It made it possible to film very detailed close-ups, which lead us into Gogol’s inner world. When I took off all the makeup after the first day of shooting, I knew that my moustache was bound to stay until the end of the entire project, even though I hated it. – And how did you deal with your wig? – A wig and a moustache are capable of completely changing your facial geometry. When you don that wig (which was very good, it’s important to say!) your features change dramatically. Besides, our very experienced makeup artist Tamara Frid put on special shadows so that my face would transform completely and everything fell into place.
– Still some people say you don’t look like Gogol… – We weren’t trying to imitate him. Our first and foremost goal was to discover his inner world. Of course, Gogol is immediately associated with this hairstyle, moustache, and big nose, so at the very beginning we tried to put on a prosthetic nose. But, on the one hand, it looked terrible, and on the other hand, it was unnecessary because we were making a stylized movie, which relied on some facts from Gogol’s biography but it was far from being a biopic. The task that Gogol set before itself was to use a modern approach to show his inner world, something that still excites all his readers. – What genre is it? – It’s a mixed genre: mysticism, adventure, detective story. Egor Baranov called it a gothic film. For me, it was a real roller-coaster with free-falling into Gogol’s human nature. What kind of person was he in real life? What was going on in his head? How did he live? Who did he love? What was he like? Even when you just start talking about it, you already feel your skin crawling. He was an incredible person.
– Is Gogol a project about Nikolai’s inner world? – It is. Of course, there is so much else going on there. It is not a dream made up by Gogol. This story could just as well have happened in his world, in Nikolai Gogol’s world where he suddenly found himself. How did he become Gogol? How do people rise to such greatness? What do they need to live through? What pain do they have to suffer and what is the price of a genius? I don’t know a single person from that unique list whose life story was simple and easy. – How did your journey with Gogol Begin? Parts such as this one don’t just happen – Nobody even considered me for this part, they auditioned other actors. But once in St. Petersburg, when we were shooting Sparta, I was approached by Alexander Tsekalo who asked: “Do you want to play Gogol? You have 15 minutes to decide.” I immediately answered: “Of course, I do.” – Can Gogol be called Baranov’s artistic film? – Sure, it is both artistic and spectator cinema. It’s Egor Baranov’s artistic view of Gogol. Egor

knows everything, he is ready to answer any question. His brain in like a super-duper computer, he can see a finished film, already edited, color-corrected, and sound mixed. I am impressed by how fast he can make a decision, and a very important decision at that. – Is Egor Baranov a leader who is very sure about what he wants? – Absolutely. He is an example of a modern leader. I am sure that a few years from now Egor will leave to make films in Hollywood. I can see it even now. The world film industry is looking for people like him, people who are ready for water or fire, but also people who have their own vision and opinion – because Alexander Petrov looks nothing like Gogol, and Evgeny Stychkin’s character wears a weird tricorn hat… This is our view of Gogol, we don’t imitate anything: Why? What for? Gogol keeps to the stylistic effect – in the biography, in the text, in his silhouette, even the angles of his nose that we found together with Egor and our director of photography Sergey Trofimov. – How did you find working on the same set with Oleg Menshikov? – It was pure joy. He has a unique intuition, he knows exactly what is going to work out, and what is not. I learned simple things from him, things that are very complicated really. When you start understanding all the nuances that he sees, you start growing yourself. Oleg brought a lot of important details into the Gogol movies. I hope I can work with him on sets of other movie projects and hopefully on a theater stage. – So who is Gogol? – He is a very complicated and not an ordinary person at all. He could not have been ordinary. Like all geniuses, they are all a bit unconventional. – What actions make Gogol accessible for understanding?
– Imagine a person burning something of his… I was so shocked and still am. How does it feel – to burn something very dear to you? For example, you take something valuable, like a letter, a photograph, or a script that you wrote, with all your notes, and you burn it. I don’t understand how anyone could do that. It was something extremely important to him: his dreams, his fantasies, his thoughts, it was himself. But he simply burned himself. That is the true Gogol, I think he was burning himself because of his own insecurity and fears. At some point, he managed to overcome that, and due to that we all now know the great writer Nikolai Gogol. But it is simply beyond any understanding. We rarely come across a thought of tearing something up or throwing it away, but he was ultimately destroying his personal things. Of course, it defines so many of his character features: his intelligence, pain and love, his inner world which was tormenting him. A stupid and not so talented person would not do such things. – You said you find it interesting to play people on the edge of sanity – being an actor who keeps his state of mind under control – And this is exactly the case. It is an interesting degree of such weakness. When we see a weak person in front of us who does these things for the sake of some universal mission, for honor. Gogol has moments like that, especially at the end – I don’t want to spoil anything – when you understand what human traits are being revealed. It’s all very confused – he seems like a weak person, but there is something strange in him, something psychotic, he has a permanent “nervous eye,” and yet all his actions
are logical and reasonable. He is honest with viewers, with us. and with himself. He is boiling in his own fears and tries to overcome them. He is not just a protagonist, he propels both himself and the whole story forward. – Can Nikolai himself be the heartless and ruthless murderer from Gogol?
– C e r t a i n l y. After the first film you would suspect everyone, even Gogol himself. No one knows what is going to happen next and what direction the plot is going to take. Gogol is a detective story with a touch of mysticism and adventure, but viewers need to first understand what is going on, what happened. This is terribly exciting. I don’t envy Gogol fans (I would have become a fan myself!) waiting for the next films to be released.

The White-Stoned Moscow to celebrate its Birthday in September!
One of top ten metropolises in the world, the largest library in Europe, hundreds of museums and thousands of artifacts–this is just a short list of the city’s proudest achievements. Every year, the first weekend of September Moscow celebrates it City Day. This year, it is a jubilee – 870 years. Apparently, the White-Stoned City is much older but no one can say for sure when exactly it was founded. The starting date was chosen to be 1147 when Moscow was first mentioned in the Hypatian Chronicle.

It’s interesting to know that for a long time there was no tradition of celebrating the city’s birthday. It was first celebrated only in 1947 when Moscow turned eight centuries old! There is so much to be said about Moscow and we are convinced that even multiple books wouldn’t suffice to reveal all of
its mysteries. That is why Bulba News presents you with only the most interesting facts. The river, the Finns, and the bears Researchers are still arguing about the origin of the city’s name. There are two widely accepted theories. According to the
first, Moscow is closely connected to the river on which it was built. A long time ago, its banks were inhabited by Finnish tribes. In their language, “mosk” means “bear,” and “va” “water.” The proponents of the second variant insist that the name is Slavic, because “moskva” in Old Slavic meant “wetlands,” “humidity.”

Come to me, brother, to Moscow It is commonly accepted that the capital of Russia was founded in 1147 by Yuri Dolgoruky. But back then it was called in an Anglophone style – Moskau. At least that’s what Dolgoruky wrote to his cousin from Chernihiv – Prince Sviatoslav Olgovich: “Come to me, brother, to Moskau.” It gives reason to think that the White-Stoned City existed long before 1147. The unofficial nickname for the city is quite easily explained. Up till the 20th century, the Kremlin walls were whitewashed, and that’s why Moscow was called the White-Stoned. The spikes on its towers were decorated not with stars as they are today, but with eagles– emblems of the Russian Empire. After the Revolution, Lenin demanded that they should be taken down, but this did not happen until the 1930s. We are twelve million! Moscow is the biggest city by its population in Russia and in Europe. It accommodates over twelve million people! With this number, the capital of Russia has long been one of the top ten metropolises of the world. Conventionally, the true Muscovites are those who have been living in the capital for four generations. There is less than 2 percent of such residents in Moscow! At the same time, the number of ethnic Russians is constantly getting lower. The Moss Street and the Grove Gates The names of streets and squares of the city have historical meanings. For example, Borovitskie Gates in Kremlin – the Grove Gates – were called so because outside them grew a pine grove. In the place of a river bank covered with moss, arose the Moss Street – Mokhovaya Street, and next to a small bog – Bog Street – Bolotnaya. Today, the overall length of all streets of Moscow is 4,350 km. In order to walk this distance, a human being needs to walk non-stop for over a month! Fan of books? Come over and stop by! The Russian State Library located in Moscow can boast the richest book collection in Russia and Europe, and one of the largest in the world. It stores over forty million books! It is superseded only by the National
Library of Congress in Washington, DC. It is a real paradise for bookworms and researchers! A mysterious river In the very center of Moscow runs a river which has not been seen for many generations of Muscovites. The river is called the Neglinka. It used to be quite big, but was later covered by a concrete collector and hidden underground. The street bearing its name runs above the stream of the very river. Regular passers-by who walk on that street have no idea that only a metal hatch and a few meters of earth separate them from the river. The height record The highest TV tower in Europe is the Ostankino Tower. It is 540 meters high! We are among the richest! Last year the Forbes Magazine calculated that by the number of billionaires who live in the city, Moscow is ranked third globally, and the previous year it was number two! According to the magazine, in 2016, there were 60 billionaires in Russia’s capital whose total capital comprised over 217 billion! Only New York City and Hong Kong were before Moscow in the ranking. The biggest fortress The Kremlin of Moscow is the biggest surviving and functioning fortress in Europe. Its area is over 27 hectares. It is interesting to know that in times of war and enemy sieges there were several attempts to destroy the fortification, but nobody succeeded. For example, in 1941, when the White-Stoned City was bombed by the Germans, the Kremlin was disguised so that no one could see it. That is why only 15 bombs fell on the fortress for the entire duration of the war! Eight million passengers a day! Moscow metro is one of the deepest and most beautiful in the world. According to the statistics, it carries over eight million passengers daily, and it’s a record number in the world. Incidentally, on all inbound trains the stops are announced in a male voice, while on the outbound trains in a female voice. It is meant to help visually impaired passengers get around in the metro. The underground train could have appeared in Moscow as early as in 1875, but the clergy then said: “How could we allow for this sinful dream to come true? How can a human being, made in the image and likeness of God, lower himself to descending into the netherworld?” Text by Maria Krasna
Brave, Honest, and Straightforward, or Why Does Korchma Celebrate Cossack’s Day? Almost each and every one of them wore a famous oseledets hairstyle, they could stop a horse on the fly or single-handedly engage in a combat with several infidels. The Cossacks are also known for being courageous bon vivants, good cooks, and magicians – kharakterniks who could do numerous supernatural things. Today it is hard to say whether they were true or imagined. But a multitude of historical sources state that “the free f o l k , ” as the Ukrainian knights used to call themselves, had all the reasons to be feared and respected. As evidence of that are numerous wars and military conflicts where Cossacks had a prevailing victory over the enemy. The restaurants of our chain traditionally celebrate Cossack’s day and so we decided to gather the most interesting facts about them. For example, the famous long oseledets hairstyle could only be worn by seasoned men, hardened in battles. It is curious that it had a sacral meaning. Because of the ongoing fights and battles, Cossacks considered themselves sinners and they knew they couldn’t get away from Hell. That is why, according to the legends circulating in their midst, only the merciful God could pull out a warrior by his hair from Hell’s cauldron. For the murder of one Cossack by another, the punishment was fierce – he was buried together with the victim. An old Cossacks’ legend said that underground the victim would be forever strangling his offender. Another grave crime was stealing. If a Cossack stole someone’s personal belongings or the community’s property, he was chained to the gun carriage and the gun was fired… Only voluntary return of the stolen things could save from such punishment. That is why when someone found a lost item at the Sich, he would be tied to a post for three days before the owner got his belongings back. There were also special men among the Cossacks called the Kharakterniks – they were magicians, sorcerers. They were thought to originate from ancient pagan magi who possessed secret knowledge and could predict the future. People said that “neither fire, nor water, nor saber nor a regular bullet – only a silver one – could kill them” and they could “open locks without keys, sail in a boat on the floor like on sea waves, take red-hot cannon balls with bare hands and see for several miles around them.” Since at the Sich and in military campaigns Cossacks lived without women, they had to do all their work, and so they developed an unrivalled cooking talent. One of the most popular dishes was solomakha made of buckwheat flour. Cossacks also cooked a teteria. It was a meal similar to porridge, cooked with millet and stuffed with liquid rye dough. Teteria was seasoned with pork lard mixed with garlic and onion. On feast days, the porridge was prepared on a meat or fish broth. During the fast, teteria was seasoned with horseradish and kvass. But of course, the most famous meal was kulish prepared of millet and seasoned with pork lard, meat, and onions. There is a very accurate saying about Cossacks and their attitude toward food: “Cossacks are like children – if you serve them a lot – they will eat everything, if your serve them little – they will still be happy.”

Maksym Balandiukh: Nepalese Villages Remind Me of Taras Shevchenko’ Plots With his camera over his shoulder, Ukrainian photographer Maksym Balandiukh has traveled around half the world. He’s been to the world’s conflict areas, he’s climbed the highest summits, and he’s showed to the world the life of people in the remote corners of civilization. A few years ago, he opened a photography school, which he named after the Argentinian football player Diego Maradona. In addition to teaching his profession to students, he also takes them on trips because he believes that it is only on the road that a person’s outlook can change radically. Maksym talked about what he saw and experienced in an interview for Bulba NEWS. ems: imagine a straw-roofed hut and people in the field harvesting wheat with their sickles. When was the last time we had anything like that? A century or even two centuries ago! I think we should take there everyone who’s so fond of complaining about their lives. As a little boy, Diego Maradona dreamed of becoming a photographer but he did not have enough money to buy a camera. He became a footballer to earn money and stayed in sports. His dream was never realized. I thought that his place remained vacant and there should be a person willing to occupy it. That is why I decided to name my photography school after Diego Maradona. On Babel in miniature We are so used when traveling or watching movies that the world is mostly associated with the US or
Europe, but it’s far from that. The world is much bigger and brighter. I once flew to Nepal with a layover in the Arabian airport of Sharjah. It’s a meeting hub for people from Sudan, Kenya, Oman, Yemen, Pakistan, India. They all come in their national clothing, they speak their own language. Men take showers right in the bathroom sinks, while their women, wrapped in national clothing, wait for them outside. It is like Babel in miniature. You come to realize that we are so numerous and we are so different.
Ushba. We only took lightweight and portable equipment with us and we moved all the time. We did not follow traditional routes, we selected the hardest ones. This is how we decided to climb an ice wall of Orzveri with a steep climb of 60-70 degrees. When you look at it from the side it seems almost vertical. It took us five hours to get to the top, but we did it. The climbers who watched us greeted us with a round of applause. It was quite a “sprint” trip. On dreams on the edge of a cliff
Five summits in two weeks I often guide people on trekking trips. When we hike in the mountains I always look up to the summits and I get the impression I am being mocked by them. I feel like abandoning everything this very moment and climbing one of them. This summer, I decided to go to the Caucasus. In two weeks’ time my friends and I climbed the highest peaks in Georgia: Tikanadze, Orzveri, Kazbegi, Tetnuldi and the legendary
On our last trip we spent a couple of nights on the edges of cliffs – on very steep mountains. We had to tie ourselves with ropes to the mountain not to slide down. It’s an unforgettable feeling when you wake up at night and feel that your sleeping bag is slowly moving down. But we weren’t afraid. On the contrary, we were curious. When you wake in the morning you can see mountain tops, clouds and fresh crisp air around you. What could be more beautiful?

Caucasian hospitality and wine in canisters People in the Caucasus are so warm and welcoming that we couldn’t stop wondering. Once, our trip took us unexpectedly long and we were in a hurry to get to the airport. The guy who agreed to give us a ride was driving past his house and invited us to come over. We thanked him and refused saying that we were in a hurry. But he wouldn’t listen! He asked us to stop for at least five minutes… And so we were treated to a delicious lunch. Most of all I liked the matsoni – a home-made yogurt – it’s so yummy! Wine culture is also very popular there. It’s low in alcohol and so can be enjoyed for a very long time. When Georgians are having a cook-out, they bring wine in canisters so that each person gets at least a few liters of it. Glaciers a nd a hot summer This year’s hot summer could be felt even in the Caucasus. There have probably never been so many cracks in the glaciers as this year. When I went to Kazbegi Mountain a few years ago in the summer I remember that we were walking in deep snow with no cracks visible. When we were hiking down from the same mountain this year, we had to bypass about half a hundred of ice cracks. All the yellow rocks surfaced from under the snow and it looked like we were hiking in Texas. These rocks would again and again fall down with a deafening noise because the sun was melt-
ing the glacier and the rocks were detaching. We had to hide behind other rocks not to be hit by them. It’s very dangerous, because a small stone half a finger in size, after flying down fifty meters accumulates the same speed as a bullet.
On a dream country I dream to find a country where I would feel most comfortable. I feel quite good in Nepal and in Georgia. But if you take Peru, for example, it was interesting but I felt it wasn’t

Eat Well and Drink Your Wine – Have a Long Life! A wine grape harvest is the main event for winemakers, the conclusion of summer. Different nations have different traditions and rituals connected with wine. They have to do both with making wine and drinking it. This drink is a perfect companion both during weekdays and holidays. It warms you up in the cold and cools you off in heat. Hippocrates used to prescribe wine as a treatment for headache. But scientific debates on the benefit and harm of this drink are still going on in our days. Naturally, wine contains alcohol, which can be harmful if consumed often and in big amounts. Besides, some people may develop an allergy to it. But at the same time researchers proved some beneficial properties of wine: It protects cells from the harmful effect of xrays and ultraviolet rays, which is goof for preventing and treating cancer. It contains catechins, which have an anti-bacterial effect and boost your immunity. It is rich in vitamins В1, В2, С, Р (flavonoids), ferrum, potassium, magnesium, iodine. Resveratrol contained in wine has an antitumor effect, it’s a natural bio-stimulant with an effect similar to estrogens that can prevent osteoporosis. Drinking wine increases the level of high-molecular lipoproteins in blood, which are able to cleanse the body of low-molecular cholesterol. This means that wine can prevent atherosclerosis, thrombosis, it decreases the number of fat cells in the body, improves metabolism and prevents obesity. Mulled diluted wine with spices and honey is especially good in treating colds and bronchitis. It helps against insomnia due to its high content of melatonin – the sleep hormone. It boosts your appetite and stimulates secretion of the gall bladder, it helps digest heavy fatand protein-containing food. That is why wine is normally served with meat, fish, and cheese. It stimulates carbohydrate, nitrogenous and mineral metabolism in the body. Polyphen o l s
contained in wine regulate blood sugar level and prevent Type 2 diabetes. High content of ferrum in wine is the reason it is often prescribed for blood loss, anemia and vitamin deficiency. Thanks to these wonderful and beneficial properties of wine, many nutritionists recommend to include it into a balanced healthy diet. At the same time, you shouldn’t forget that it should be a natural, high-quality drink, and its amount should not be more than one glass per day (about 200 ml). Wine goes perfectly together with meat, poultry, fish, fruits, and of course, cheese. Not only does it help digest these different products, it also develops a new shade of its rich flavor when combined with each of those foods. The Sommelier: Professionals Who Know All About Wine
They don’t smoke, they don’t drink coffee, they don’t even use perfumes. They make tens of thousands dollars a month and are at risk of becoming drunks because they have to drink alcohol on a daily basis. They pass on their skills from generation to generation and are often ready to pay everything they have for a bottle of wine. We are talking about the sommelier – an ancient profession which is still quite rare even in our days. And the reason for that is quite simple – not everyone is gifted enough to distinguish wines. Of course, even this exotic trade can be learned; however, it’s the inherited not the learned skills that matter. It is difficult to say when and in what country this profession was first born. All we know is that it has existed for a long time. The emperors of Rome, before tasting the nectar, gave a chance to taste it to their cupbearers. And this whim did not appear solely out of a fear of being poisoned–they also wanted to drink only the best wine. Centuries passed, but the sommelier profession did not change much. They still need to know a
lot about wine, they are responsible for its procurement, storage, and exquisite presentation to the client. They need to know the history of the origin of different wines and interesting facts related to them. As a result, just by its scent and a small gulp of wine, experienced sommeliers are capable of determining its quality, grape variety, and sometimes even its provenance region and age. Naturally, there is a limited amount of people in the world who comply with all the above requirements. This explains their high fees, and not every restaurant can afford to hire a sommelier. Even though the French have proved that a sommelier on staff can increase a restaurant’s revenue by 40 percent! Of course, only if the country has a developed wine culture. The profession of sommelier has many varieties and is not
only connected with wine. There are connoisseurs of beer, cigars, sorts of tea, coffee, and even drinking water! The most famous “water sommelier” is an American Martin Riese. He was born in Germany and became fascinated with the taste of water when he was four years old. His family used to travel a lot, and the first thing the little boy would do when they arrived at a new place was to taste the water – from the tap, a well, or a spring. He could not understand why – while it tasted differently – it was everywhere called the same – “water.” Only later did he understand that he had a rare gift – to distinguish the slightest taste nuances of all mineral additives in the water. Luckily, this capacity of his was in high demand in the world. Several documentaries were shot about Martin Riese. His talents were carefully tested and certified by the German Association of Mineral Waters, which brought him not only fame but also good earnings. World-known mineral water producers are now sending him samples of their products, which he tastes and provides them with his qualified opinion.

Friends of our restaurants know that this fall four of the Korchma Taras Bulba restaurants will be celebrating their birthdays. On September 19, the first one to celebrate will be the Smolenskiy Boulevard restaurant. Then the feast will move to Maryino where they expect guests on the 25th of September. From there, all the dances,
songs and special menu offers will go to the Korchma on Profsoyuznaya Street on November 1. The holiday season will close on the 28th of November in our restaurant on Mokhovaya Street. In the footsteps of the Good Soldier Schweik: Korchma employees visit Europe’s beer capital The organizer of the trip was the beer distributor
Do you happen to remember the delight of traveling from one of Prague’s beer pubs to another undertaken by the literary hero of Jaroslav Hasek – the good soldier Schweik? How he would meet his old friends and new, toast with a glass or two of the heady drink, and narrate incredible stories of his life? If you read this novel, you will know that such a witty and wonderful literature is a rare deal! But is Prague’s beer really so delicious and is Prague itself really so beautiful? Our employees got a chance to find out this summer. Winners of our corporate competition in beer sales were awarded with a trip to Prague. They faced a fierce competition which lasted for two months, but the result was worth
