The 2017 Château Cal-a-Vie Rosé of Merlot is specifically selected from one of the cooler situated blocks of Merlot, which allows us to produce wine with great natural acidity while obtaining aromatic ripeness. This dry Rosé shows a bouquet of papaya, citrus, melon and a hint of lavender. Its crispness lends itself well to pairings with ceviche, seafood, and fresh salads, but is also good by itself. Serve chilled 45F to 50F.

Beauty from the Inside Out! When we think about beauty and aging gracefully, we often go for hydrating creams and wrinkle-fighting facials to maintain radiant skin. While these treatments are an essential part of your beauty tool-box, we can’t forget about good nutrition. The cells and structural components of healthy skin are composed of protein, fat, and a wide array of vitamins from our food. So, there is truth in the phrase, “you are what you eat,� and your nutrition should be the first line of defense in anti-aging. The following are key nutrition strategies our dietitians recommend for healthy skin from the inside out. 1. Build a strong foundation. Collagen provides the matrix that gives our tendons, cartilage, and skin strength, firmness, and elasticity. To synthesize the helix structure of collagen, we need the amino acids hydroxyproline, glycine, and proline, along with vitamin C. Fitness If losing pounds is as easy as journaling about what you eat, can you use the same technique to help you stick to a fitness routine? SPICED POACHED PEAR WITH MIXED GREENS, GRAPES AND HAZELNUTS (SERVES 8)
The poached pear in this recipe elevates this salad to another level. We recommend you splurge on a bottle of Spanish Banyuls vinegar. It comes from a region in the south of France near the border of Spain, and its sweet and nutty flavor pairs well with the pear, grapes, and hazelnuts in our salad.

3 cups red wine 1 cup water 6 star anise pods 6 black peppercorns 2 cinnamon sticks 8 whole cloves 4 Bosc pears, peeled, halved and cored
½ cup Banyuls vinegar ¼ cup water 1 tablespoon honey 1 teaspoon Dijon mustard 1½ cups grapeseed oil 1 teaspoon kosher or sea salt

In a large saucepan, bring the wine, water, star anise pods, peppercorns, cinnamon sticks, and cloves to boil. Reduce the heat to a simmer and add the pears and simmer about five minutes or until the pears are soft but not mushy. Gently remove from the saucepan with a slotted spoon and let cool.
TO ASSEMBLE: 10 ounces mixed greens 1 cup red seedless grapes, sliced ½ cup hazelnuts, toasted and rough chopped ¼ cup crumbled feta cheese ¼ cup Banyuls Vinaigrette 4 Poached Bosc Pears, halved or thinly sliced
Combine the vinegar, water, honey and Dijon mustard in a blender. Slowly add the grapeseed oil until combined. Add the salt. Refrigerate until ready to use.
