Fall into Fitness PUT THE WIN IN TRANSFORMING YOUR WINTER SELF With the long, hot summer days transforming into shorter, colder fall days, the end of the summer can be traumatic. And it can make staying fitness motivated challenging. However, the clean, crisp, cooler weather can make for some of the best outdoor workouts all year long. The fall brings the challenges of busy school schedules and holidays and it can be hard to find time to exercise. But the challenge is at the heart of staying fit, and getting started now will help you keep the momentum to make it through the winter months.

HELPFUL TIPS TO STAY MOTIVATED: Start or end your day by enjoying the fall colors. Get outside - go for a bike ride, walk your dog, or pick a new hike (speaking of, Cal-a-Vie Health Spa has several new hikes). If it’s too dark or cold out, then go mid-day. It will help prevent that afternoon energy slump and boost your vitamin D levels. Participate in a turkey trot. This can be a fun family event! And, moving faster is the best way to stay warm on a cold day! Not sold on embracing the great outdoors? Move those outdoor workouts inside. To eliminate burnout, try a new class such as Zumba, spin, HIIT or have our Cal-a-Vie fitness specialists create an at-home fitness program for you. While the skating motion challenges your lower body, using the poles works your back, chest, shoulders and arms. To strengthen your upper body, add cable/resistance band pushdowns.

85 percent of all ski-related injuries are due to falls. Topping the charts are knee-ligament sprains and tears. Improving balance and strengthening the quads (which helps to support your knees) can help decrease your risk of both. Performing single-leg squats twice a week will help reduce the risk of injury.

Snowboarding requires a lot of coordination which challenges your entire body. In order to balance and have control, a strong core is key. Performing your usual strength moves on a stability ball can really engage your core, but to take it to the next level, add an unstable surface like a Bosu to your routine 3-5 times a work.

Stand with feet hip-width apart and place hands on hips. Bend right knee, shifting weight to left leg, and squat. Rise up to starting position. Do 8-12 reps, then switch sides to complete set. Do 4 sets.

Get in push-up position with your feet on a Bosu or unstable surface, wrists aligned under the shoulder. Hold for 20-60 seconds, then rest for a few seconds. Do 3 reps.

Set the arms of a cable machine to the highest position (at home, use a resistance tube) and stand facing it with feet shoulder-width apart. Grab both handles at head height, with elbows bent at 90-degree angle and palms facing each other. Pull arms down to sides, driving elbows back. Return to starting position. Do 3 sets of 10-12 reps.

From the Culinary Gardener…. Ellyse Briand “I broadcast a cover crop on my rows/ raised beds/growing areas while I start my seeds indoors for the coming fall. It reduces erosion, adds nutrients to the soil and suppresses weeds. Use a fast-growing cover like buckwheat.” »» Harvest all you can from summer fruiting plants, then cut them out at soil level leaving roots to decompose. This “no-till” practice gives nutrients to the soil. »» Aerate planting area with a garden fork, throw seed and put 1-2 inch layer of compost on top. Buckwheat takes about 50 days. Cut it down, then turn it into the soil or leave on top as a mulch. If turning into soil, wait three weeks to plant as it will bind up the nitrogen when breaking down. Plant right into cover if left as mulch. Greenhouse plantings in fall include brassica family crops (broccoli, kale, kohlrabi, cabbage, cauliflower) and spinach, lettuce, any type of greens (parsley, celeriac, swiss chard). In the garden, plant root crops such as carrots, beets, parsnips and radish.


CUISINE NEWS AND RECIPE

Roasted Beet Salad. Citrus Vinaigrette. Hazelnuts. Goat Cheese. FOR THE SALAD:

FOR THE BEETS:

4 cups mixed greens

3 each baby golden beets

FOR THE CITRUS VINAIGRETTE:

9 each roasted beets (recipe below)

3 each baby red beets

¾ cup orange juice

3 each candy stripe beets

2 tablespoons lemon juice

3 cloves garlic

2 tablespoons white balsamic vinegar

½ cup toasted hazelnuts ¼ cup goat cheese, crumbled In a large bowl, toss the greens with the citrus vinaigrette. Divide greens between four plates and garnish with the beets, hazelnuts and goat cheese.

FOR THE HAZELNUTS: ½ cup hazelnuts, raw Pre-heat oven to 350 degrees. Place the hazelnuts on a baking sheet and roast for approximately 7 minutes or until golden brown.

9 sprigs of thyme 2 tablespoons olive oil Pre-heat oven to 350 degrees. Cut the tops (leaves) off of the beets. Keeping all of the colors separate, toss the beets in the olive oil, then wrap them loosely in aluminum foil with a clove of garlic and a few sprigs of thyme in each. Place on a baking sheet and roast for approximately 45 minutes, depending on the size of the beets. The best way to tell if they are done is to pierce the beet with a small knife. If the tip of the knife easily makes it to the center of the beet with no resistance, it’s done.

¼ cup honey 2 tablespoons Dijon mustard ½ cup water 1 ½ cups grape seed oil In a high-speed blender, combine the vinegar, honey, mustard, salt and water. Blend on high. While blending, slowly add the oil until completely emulsified.
