Did you know that Bruschetta is a traditional Italian appetizer that originated from Central Italy, and can track its origins back to the 15th century, or before? Its name is derived from the Latin word Bruscare, which means to toast or burn and was traditionally used to test olive oil. As the olives were being pressed, growers would place stale bread over the fireplace to warm and then drizzle with oil and rub with garlic. They then had a tasty toasted bread to use as a base for tomatoes and herbs. This classic recipe became very popular with North American dining habits in the early 1900’s. The appetizer is such a popular part of Roman life that in 1997, the bread pane casereccio di Genzano which it is classically served on, was given IGP status (protected geographic indication) which means the recipe is protected and enforced by law.

Classic Roman Bruschetta Loaf of firm bread Several cloves of garlic, peeled Extra virgin olive oil 3 - 4 ripe Roma tomatoes Fresh basil Dried oregano Slice bread into 3/4” slices. Grill, toast or broil until bread is a deep golden brown. Rub toasts with whole garlic clove and drizzle with oil.

Serves 6 - 8 2 lbs creamer potatoes 3/4 cup shelled spring peas 1 lb cooked shrimp 2 tsp sweet onion, minced

1/2 cup green or red pepper, chopped 1/3 cup sour cream 2/3 cup mayonnaise

Salt and pepper 6 - 8 whole bib lettuce leaves, washed and dried

Steam the potatoes in a large size covered pot. Cook them until tender, cooking times will vary depending on the size of the potatoes. Remove the potatoes from the pot and allow to cool. When cool enough to handle, peel and cut into bite size pieces. If the peas are fresh, steam them for 4-6 minutes. If the peas are frozen, defrost and dry them. In a large bowl combine the potatoes, shrimp, green/red pepper and onion. Season with salt and pepper. In a small bowl, lightly whisk the heavy cream until frothy. Add the sour cream to the whipping cream and whisk them together.

Strawberry Shortcake Cake 1 cup all purpose flour 1 Tbsp sugar 1 tsp baking powder 1 tsp vanilla 1/4 tsp salt

1/4 cup butter 1 egg 1/3 cup half and half 1/2 cup whipping cream 2 - 4 cups sliced strawberries

Vanilla ice cream if desired Chocolate syrup

In a small bowl, combine flour, sugar, baking powder, vanilla and salt. Cut in 1/4 of the sugar until mixture looks like large crumbs. In a separate bowl, mix the egg and half and half. Combine the ingredients of both dishes together slowly. Spread mixture into 6” round baking pan that has been sprayed or buttered. Bake at 450°C for 13 - 15 minutes until nicely golden and pulling away slightly from edges. Let cool for 15 minutes before removing to cooling rack. Mix whipping cream and add sugar and a touch of vanilla, if desired. Cut cake into two, slicing through the middle horizontally. Place bottom layer on serving plate and then spread with a light layer of butter (this will keep the berries from seeping through too quickly). Top with 1/2 strawberries and whipped cream. Place the other cake layer on top of mixture and repeat layering berries and whipped cream. Variations – for fun, try mixing in some orange peels into the sliced strawberries, drizzling a 1/4 cup of orange liqueur over the berries or sprinkling the finished cake with dark and white chocolate.

2 ounces tequila 1 ounce Cointreau (orange flavoured liqueur) Fresh lime juice to taste Kosher salt and 2 lime wedges.

4 cups watermelon cut into small chunks

1 ounce tequila

2 Tbsp sugar

1 ounce peach schnapps

3 medium sized limes, 2 squeezed for juice and one for garnish

2 ounces sweet and sour mix or fresh lime juice

8 ounces tequila

1 cup frozen fresh peaches – slices or chunks

Run lime wedge around the edge of glass and rim glass with salt. Place ice cubes in glass. Shake ingredients over crushed ice, strain and pour into glass with ice cubes. Garnish with lime wedge.

5 ounces Triple Sec Kosher salt In a blender, purée watermelon and sugar until smooth. Strain mixture through mesh strainer. Put liquid into pitcher and add fresh lime juice, tequila and 4 ounces of the Triple Sec. Stir to fully combine. For a thicker drink you can serve watermelon purée without straining.

1 tsp sugar or to taste 1 cup crushed ice 1/4 cup maraschino cherry juice (to taste, will make the drink sweeter) Put all ingredients into a blender and purée until smooth. Rim glass with sugar if desired and garnish with a peach slice and cherry.

In a small dish or plate pour 1 ounce Triple Sec. Dip glass rim into it and then dip into Kosher salt to coat the edge. Let sit a minute to set before pouring in margarita mixture. Garnish with slice of lime and enjoy. 17

Tea Cocktails

Granita

While tea can trace it roots back over 5,000 years, iced tea did not come onto the drink scene until the late 1800’s when loose green tea was used as an ingredient in popular tea punches. In 1904, sweet iced tea was shown at the World’s Fair in St. Louis and from there grew in popularity.

A semi-frozen dessert made from water, sugar and various flavourings. Granita’s have a shaved ice texture and originally were made in Sicily, Italy.

These tea cocktails are perfect for quenching your thirst on a warm day . Enjoy!

2 ounces gin 2 ounces brewed and chilled Earl Grey Tea Squeeze of lemon to taste Lime slice as garnish

1/2 cup loose packed fresh mint leaves 1 medium lemon thinly sliced 2 Tbsp sugar 3 cups brewed and chilled black tea 1 cup bourbon Crushed or cubed ice Mint sprigs and lemon slices for garnish

1 cup water 1/2 cup sugar 3 cups brewed coffee (strong) 1/3 cup amaretto

4 cups cubed watermelon 8 fresh finely chopped basil leaves 1/3 cup vodka 1/2 cup lime juice 1/2 cup sugar 1/2 cup water

Put mint leaves, sugar and lemon slices into pitcher. Muddle fruit with muddler or push fruit into the sides of pitcher to bring out fresh flavours and combine. Work until sugar is fully dissolved.

Remove from heat. Stir in coffee and amaretto. Pour into shallow pan or dish. Cool, cover and place in freezer. Freeze for 2 - 4 hours fluffing mixture with a fork often to create rough texture. Serve in dishes or glasses with cookie on the side.

Pour all ingredients over ice filled old-fashioned glass. Stir gently. Garnish with lime wheel.

Pour tea and bourbon over fruit mixture and stir. Fill glasses with crushed or cubed ice, garnish with fresh mint sprig and lemon wedge, and serve immediately. 24

Combine water and sugar together in saucepan or microwaveable dish. Heat and stir until sugar is fully dissolved. This makes your base syrup.

Make simple syrup as instructed in above recipe. Let cool. Mix all ingredients together in blender until fully blended. Pour into shallow dish or pan. Freeze for 2 - 4 hours using fork often to create rough texture. Spoon into martini glasses and garnish with basil leaf. Serve immediately.

Ways to Taste Tasting Events

Our in-house professionally created series of wine, spirits and beer events will inspire enthusiasts of all levels. These events will be held at our Tasting Centres and will be presented in a fun and fresh way that will ensure you have a fabulous time, try some great products and learn something new. Topics will vary between centres so be sure to check the calendar for class times and locations. See location calendars in this booklet for events and dates.

Tasting Thursdays

Visit one of our Tasting Centres on Thursdays from 4pm to 7pm to see which wine, spirits or beer we are highlighting for the week.

Private Wine Locker Program

Co-op Wine Spirits Beer Tasting Event Rules and Regulations All event participants at our Tasting Centres will receive a 10% shopping discount to be used after their event. All participants of Co-op Wine Spirits Beer events must be 18 years of age or older and may be required to show identification. Due to unforeseen circumstances, we reserve the right to postpone or cancel events. Customers will be notified as quickly as possible and given the option of being reimbursed for their tickets or rebooking into another event. We regret that we do not offer refunds for missed classes. Refunds or alternate events may be offered if notified 48 hours prior to the event.

The Private Wine Locker Program is a fully-personalized wine experience that allows each locker member to choose wine varietals, vintages, countries and styles. You can then enjoy having new bottles selected for you and placed directly in your locker based on your own personal wish list.

As all events involve the consumption of alcohol, we remind you that your well-being is of the utmost concern to us and ask that you arrange for transportation to and from the event should you require it.

The Grape Escape
