EGGPLANT PARMESAN Recipe donated from the Seghesio family vineyards, California

Tomato sauce

Eggplant preparation

1lb Italian sausage

3 eggplant, peeled and sliced to 3/8” thickness

3 cloves Garlic, pureed

2 medium Mozzarella balls, sliced to I/4” thickness

1 medium onion, chopped

3 cups shredded parmesan cheese

1/2 cup fresh parsley, chopped

flour

1 sprig fresh rosemary, minced

vegetable oil

1/2 cup red wine 2 large cans of crushed or chopped tomatoes with juice Using medium high heat, sauté the sausage until almost cooked. Drain off almost all the fat leaving some residual for flavour. Reduce to medium heat, add the fresh herbs and red wine to the sausage and continue cooking for about five minutes. Slowly stir in the pureed garlic and onion and sauté. About five minutes. Add the crushed tomatoes and continue cooking until sauce reaches a slow boil. Reduce heat to simmer and continue to cook, adding salt and adjusting seasonings as needed.

Preheat oven to 350˚F. Salt both sides of the eggplant and place on paper towels for about a half hour to release excess water and bitterness. Lightly flour both sides of eggplant and fry in vegetable oil until golden brown. In a baking dish, layer the ingredients starting with the tomato sauce, then eggplant and topping with cheese. Repeat to make three layers, topping last layer with remaining cheese. Cover with foil and bake in oven for about 30 minutes or until bubbling.

Chocolate Lasagna

Stuffed Marinated Veal Chop 4 veal chops, 2 inches thick with pocket 4 slices fresh Mozzarella, 1/4 inch thick 4 thin slices prosciutto, chopped 4 sage leaves, chiffonade 1 tbsp olive oil 3 tbsp balsamic vinegar Salt and Pepper Stuff each chop pocket with 1 slice mozzarella, 1/4 of the proscuitto and sage. Place in medium shallow baking dish.

1 package cream centre cookies, such as Fudgee-o or Oreos 6 tbsp butter, melted 8 oz package regular or reduced-fat cream cheese, softened 1/4 cup granulated sugar

2 tbsp cold milk 12 oz whipped topping, divided 2 – 3.9 oz pkg instant chocolate pudding 3 1/4 cups cold milk (not skim) 1 1/2 cups mini chocolate chips (or additional crushed cookies)

Place cookies in a zip bag and use a rolling pin to crush the cookies into fine crumbs. Place the cookie crumbs in a large bowl and add the melted butter. Use a fork to stir until butter is evenly distributed. Press the crumb mixture into the bottom of a 9 x 13 baking dish. Put in the refrigerator while you work on the additional layers. Mix the cream cheese with a mixer until light and fluffy. Add in 2 tablespoons milk and the sugar, and mix well. Stir in 1 1/4 cups whipped topping. Spread mixture over the cookie crust.

In a separate bowl, combine pudding mix with 3 1/4 cups milk. Whisk until pudding starts to thicken. Spread pudding over the previous cream cheese layer. Wait about 5 minutes to allow pudding layer to firm up further. Spread the remaining whipped topping on top. Sprinkle mini chocolate chips (or crushed cookies) on whipped topping. Refrigerate for at least 4 hours or place in freezer for 2 hours before serving. Layers of caramel sauce or cherry pie filling can also be added for a more decadent treat. Whisk the olive oil and vinegar together and pour over the chops. Cover and let marinate in fridge 2 hours. Turn chops after 1 hour. Preheat grill. Remove from marinade and season with salt and pepper. Grill veal until desire doneness. Do not overcook. Recipe donated from Bogle Vineyards 9

Ghost Stories of Spirits Who A Spirit Who Still Would Like to Enjoy the Good Life Camden, South Carolina – Dixie Boykin loved a good party, and even though he has been dead for years, he is still enjoying the high life at his beautiful 30-room mansion called Cool Springs. Dixie was murdered by his wife at their plantation home, but that doesn’t stop him from joining in the fun whenever someone throws a party. He has been seen drinking wine, and it has been said that he likes to listen to music and can be heard humming songs.

Ghost Chef and Wine Steward Still Working Brennan’s Restaurant in New Orleans, is reportedly still home to a number of spirits and ghosts, including a former chef and wine master. Employees and guests have reported seeing a misty apparition lurking in the dining room upstairs, while waiters are weary of the wine cellar because of bottles that clink when no one is around. Staff members attribute the clinking to former wine master Herman Funk who is said to make recommendations from beyond the grave.

Ghost Martini 2 oz Whipped Vodka 1 oz Vanilla Vodka 1 oz White Chocolate Liqueur (you can substitute with white crème de cacao) 2 scoops of very soft (almost liquid) vanilla ice cream

Place all ingredients into a cocktail shaker with crushed ice and shake vigorously for 10 to 20 seconds, or until well combined. Pour into martini glass and garnish with a marshmallow ghost or dollop of whipped cream using black sprinkles to make eyes and a mouth.


Ghost Martini Enjoy a Good Drink Still Wine Snob Ghost A ghost, named Corky by regulars at the Court Oak pub in Harborne, Birmingham, seems to have strong opinions about the wine list. The pub is built on the site of a 17th century hanging ground, sparking speculation that Corky may be the ghost of someone who died there years ago. Many people have seen a vision of man around 60 years old behind the bar, and many more have felt his presence close by. The ghost is said to give its opinion about the wine on offer every Halloween for the last few years. If the pub has a 8 house wine that is not to his liking, he makes his feelings known by smashing bottle after bottle of it in the cellar until it is changed for a wine he approves of. “He’s a bit of a wine snob,” says the pub manager.

1 oz vodka

Pineapple slice cut as stars or snowflakes

2 oz milk or cream

1 oz Crème de Cacao white

2 oz Hpnotiq

1 oz dark rum

1 oz Frangelico

1/2 oz vodka

pinch of allspice to taste

2 oz cream or milk

1 oz pineapple juice

1/2 oz spiced whisky

Pour all ingredients into shaker with crushed ice.

Pour ingredients into a cocktail shaker with ice.

2 tsp maple syrup

Shake vigorously for 10 to 20 seconds.

Strain into a cocktail glass and garnish with snowflake or star shaped fruit slice.

Pomegranate Mimosa 3 cups chilled pomegranate juice 1/2 cup orange-flavoured liqueur 1 750mL bottle well-chilled sparkling wine 1 orange thinly sliced for garnish Mix pomegranate juice and orange-flavoured liqueur together in pitcher. Recipe donated by Angela Dionigia Seghesio, from the Seghesio Family Vineyards Angela’s Bunet – A Piedmontese Dessert Terrine For the caramel:

For the custard:

9 tbsp granulated sugar

3/4 cup brown sugar

4 cups milk

2 tsp water

9 extra-large eggs

1 tbsp rum, vanilla, brandy or Kahlua

Preheat oven to 350˚F. To make the caramel, crumble the brown sugar into a sauce pan and drizzle with water. Allow the water to soak into the sugar for 10 minutes, then heat the sugar over medium-high heat. Watch for the sugar to begin melting while swirling the pan gently over the heat. When the sugar is melted and the liquid turns a shade darker, pour the caramel into a 10-inch pan or casserole dish and quickly tilt it to evenly distribute the caramel before it sets. Heat the milk in a sauce pan over low heat just to simmering. While the milk is heating, beat the eggs and sugar together until frothy. Add the flavouring – vanilla, rum, brandy or Kahlua – then pour the milk into the egg mixture and stir to mix thoroughly. Pour the mixture into the caramel-lined pan, and set the pan into a larger baking pan. Place pans into the oven, and pour water into the larger pan so that the water comes halfway up the sides of the smaller pan. Bake for 1 hour at 350˚F, and test for doneness by inserting a knife into the custard: It’s done if the knife comes out clean. Allow to cool at least 2 hours. Turn over onto a serving dish, and serve at room temperature or chilled. 34

An easy, delicious and beautiful dish to serve for dessert or a special breakfast. Pair with your favourite sparkling wine with a splash of Limoncello for a perfect pairing. Limoncello Crepes 2 cups sifted plain flour

1 tbsp lemon juice (fresh if available)

1 tsp salt

2 tbsp Limoncello

3 eggs

1/3 cup table sugar or caster sugar

2 cups milk

Icing sugar to dust with and serve

2 oz butter, melted

Lemon slices

Add the flour and salt to a bowl and make a well in the centre. Add the eggs and stir with a wooden spoon until smooth. Gradually add milk, melted butter, lemon juice and lemon liqueur. Mix well. Adjust mixture so that it will pour into pan easily and cover it in a thin layer of batter. Set finished batter aside for an hour before use. Make more batter than you think you will need. These freeze very well and are very handy to have on hand. Grease a crepe pan or griddle and heat to medium heat. When hot, add a ladleful of batter and tip to evenly coat the pan with the batter. Cook the crepe for 2 minutes, flip over and cook for 30 seconds. This may take a couple of tries to perfect the motion. Repeat until batter is all gone. Serve rolled or folded into quarters and sprinkle with icing sugar. Serve with a slice of lemon.

Our in-house professionally created series of wine, spirits and beer events will inspire enthusiasts of all levels. These events will be held at our Tasting Centres and will be presented in a fun and fresh way that will ensure you have a fabulous time, try some great products and learn something new. Topics will vary between centres so be sure to check the calendar for class times and locations. See location calendars in this booklet for events and dates.

Private Wine Locker Program

The Private Wine Locker Program is a fully-personalized wine experience that allows each locker member to choose wine varietals, vintages, countries and styles. You can then enjoy having new bottles selected for you and placed directly in your locker based on your own personal wish list.

Co-op Wine Spirits Beer Tasting Event Rules and Regulations All event participants at our Tasting Centres will receive a 10% shopping discount to be used after their event. All participants of Co-op Wine Spirits Beer events must be 18 years of age or older and may be required to show identification. Due to unforeseen circumstances, we reserve the right to postpone or cancel events. Customers will be notified as quickly as possible and given the option of being reimbursed for their tickets or rebooking into another event. We regret that we do not offer refunds for missed classes. Refunds or alternate events may be offered if notified 48 hours prior to the event. As all events involve the consumption of alcohol, we remind you that your well-being is of the utmost concern to us and ask that you arrange for transportation to and from the event should you require it. All tasting events begin at 7pm unless otherwise stated. We ask that you please arrive promptly, so you and others can fully appreciate the event. We also ask that you refrain from wearing heavily scented perfumes or colognes. Thank you in advance for your cooperation. Class and event prices do not include GST.
