Brussels Sprouts with Pancetta and Horseradish

2 tbsp prepared horseradish 2 tbsp butter salt and pepper
Bring a large pot of salted water to a boil. Cut a small x in the stalk end of each Brussels. Add Brussels to pot and cook until just about fork tender. Drain Brussels and plunge into a bowl of cold water to stop the cooking process. In a large sautĂŠ pan over medium heat, add olive oil. When oil is hot, add pancetta and cook until just beginning to brown. While pancetta is cooking, drain the sprouts well and cut Brussels in half through the stalk end. Add to the pan and cook until heated through. Add the horseradish and butter and continue to cook until the butter is just melted. Season to taste with salt and pepper and serve immediately.

Discovery
Discover wine in a whole new way with our Discovery Wine Packs. Learn about a selection of six different wine styles and food pairing ideas selected monthly by our sommelier team.
Vanilla Parfait 6 egg whites 250g caster sugar 375mL double cream 2 vanilla pods de-seeded 1 tsp vanilla essence
To make the Vanilla Parfait Wipe around the inside of the mixing bowl with half a lemon and then discard it. This will ensure your bowl is free from grease. Put egg whites and sugar into the bowl and place over warm water, whisking until the sugar dissolves into the egg whites. Remove the bowl from above the water and whisk until firm peaks are made and the mixture is cool. The peaks should be smooth and shiny. Whip the cream into soft peaks and add the vanilla seeds and essence. With a metal spoon gently fold in the meringue. Do not over work. Place the mixture into moulds or ramekins and freeze. Remove 10 minutes before serving so the parfait will turn out easily onto a plate.
Tuiles 20g melted butter 60g caster sugar 35g pinhead or very fine oatmeal 20g plain flour 25mL whisky ½ zest one orange
To make the Tuiles Cream the melted butter and sugar together, stir in the sifted flour, orange zest and oatmeal then add the whisky. Lightly oil some parchment paper and place on a baking tray. Take spoonfuls of the mix and flatten into round discs onto the tray, making sure they are well spaced. Cook for 10-12 mins at 350°F. Remove and leave to cool.
Raspberry Coulis 250g fresh or frozen raspberries 50g icing sugar 50g water 50mL whisky juice of one lemon
To make the Raspberry Coulis Place the raspberries, whisky, water and icing sugar into a liquidiser and blend until smooth. Pass through a fine sieve and stir in lemon juice to taste.
Whisky Syrup 100g caster sugar 50mL water 50mL whisky
To make the Whisky Syrup Place the whisky, sugar and water into a pan and gently bring to a boil. Lower the temperature and let the syrup simmer for 5 minutes until thickened slightly; remove from the heat and let to cool.
To Assemble Raspberries, mint leaves and runny honey First soak the sponge rounds in the whisky syrup. Then drizzle the raspberries with clear runny honey. Place a sponge on a plate and turn 8 thin readymade sponge rounds out the vanilla parfait onto it. Tumble the raspberries over the parfait and top with a tuile. Decorate with the mint leaves. Finish the dish by drizzling some of the raspberry coulis and more whisky syrup around plate. 7
CreepyMartini Cocktails for Halloween Eyeball 1 large radish 1 pimiento stuffed green olive 2 oz vodka or gin ½ oz dry vermouth dash of bitters (if desired) Pour vodka or gin in an ice-filled cocktail shaker. Gently shake and pour through strainer into a martini glass.
For Eyeball Garnish Peel radish in crooked vein like pattern with spoon or vegetable peeler leaving thin stripes of red against white backdrop. Using a small knife or vegetable peeler, carefully hollow out inside of the radish to allow the olive to fit inside. Be sure to face the pimiento side of the olive looking out of the radish. Place eyeball radishes in ice cube tray and fill with water and freeze over night.
Place eyeball garnish in glass and serve.
Puffed Wheat Candy
Recipe by Executive Chef Wade Paterson, Boreal Cuisine 3 cups white sugar ž cup milk 2 tsp vanilla
a couple of drops festive food coloring. 16 cups puffed wheat
In a large heavy bottom pot, combine sugar and milk. Bring to a boil and continue to boil for 5 minutes. Remove from heat, add vanilla and beat with a wooden spoon until creamy, 1-2 minutes. Stir in food color. Put puffed wheat in a large bowl or a container large enough to hold it all. Pour milk mixture over and stir until coated. Allow to cool and serve. Store in an airtight container. 8
Draculaâ&#x20AC;&#x2122;s Kiss
Ghostbuster Cocktail
1 oz. black cherry vodka (or your favourite red fruit flavour) ½ oz grenadine cola Maraschino cherries for garnish
1.5 oz Irish cream liqueur 1.5 oz coffee liqueur 1.5 oz vodka ice cubes or crushed ice ghost shaped marshmallow
Pour enough grenadine into tall cocktail glass to coat the bottom of the glass. Add ice and vodka. Pour cola slowly into glass. Place cherries on stick or just float on top of ice in the glass for garnish.
Fill cocktail shaker with ice. Pour in ingredients and shake well. Pour into highball glass over ice. Garnish with ghost shaped marshmallow.

Empanadas
Recipe from Vino Argentino, An Insiders Guide to the Wines and Wine Country of Argentina by Laura Catena. 1 tbsp canola oil 1 Âź cups finely chopped white onions 1 bay leaf 1 small red bell pepper, seeded, deveined and cut into Âźâ&#x20AC;? dice ½ tsp salt 1 tsp red pepper flakes, or more to taste 1 small potato, peeled and cut into ½â&#x20AC;? dice
One 3â&#x20AC;? long piece of beef marrow bone ½ lb beef tenderloin cut into Âź â&#x20AC;&#x153; dice ½ cup chicken or beef stock 1 tsp ground cumin 1 tsp sweet paprika Âź cup golden raisins/sultanas Âź cup chopped pitted green olives 3 hard-cooked large eggs, coarsely chopped
2 tbsp dried bread crumbs Âź finely sliced green spring onions or chopped fresh chives

Dough: 3 cups all-purpose/plain flours ½ cup cold lard or vegetable shortening ž ice water 1 large egg beaten with 1 tsp milk
Preheat oven to 350°F For Filling: In medium sautĂŠ pan or frying pan, heat the canola oil over medium heat and sautĂŠ the onions with the bay leaf until well browned, 8 â&#x20AC;&#x201C; 10 minutes. Add bell pepper and sautĂŠ until soft, about 5 minutes. Add the salt and pepper flakes and sautĂŠ for 2 minutes. Remove and discard the bay leaf and set the onions aside. In a small saucepan of lightly salted water, simmer the potato until tender, about 15 minutes. Drain and set aside. 16

Empanadas continued
Place marrow bone upright on a small baking dish and cover loosely with aluminum foil. Bake for 12 minutes. Remove from oven and let cool to the touch, then scoop out the marrow, cut into Âź in dice and set aside. Put the tenderloin in a small saucepan. In a separate saucepan, bring the stock to a boil. Immediately pour the hot stock over the beef, stir in the diced marrow and bring the mixture to a boil. Cover the pan, remove it from heat, and let stand for 5 minutes. Add the onion mixture, cumin and paprika. Gently stir in the potato. Let cool, then cover and refrigerate for at least 10 hours or overnight. Fold in the raisins, olives, eggs, bread crumbs and the green onions or chives. Refrigerate until ready to form the empanadas. For the dough: In a food processer, combine the flour and lard or shortening. Pulse until the mixture resembles a course meal. With the machine running, add just enough of the ice water to form the dough â&#x20AC;&#x201C; it will come together in a clump. Transfer the dough to a lightly floured board and gently form into a 5â&#x20AC;? disk. Be careful not to overwork the dough, or it will become tough. Cover with a damp cloth and let rest for 30 minutes. To form and bake empanadas: Line two baking sheets/trays with parchment/baking paper. Break off walnut sized piece of dough and roll into a 1â&#x20AC;? ball. Gently flatten. Using a rolling pin on a lightly floured board, roll the dough into a 5â&#x20AC;? round. Repeat, using all the dough. Place 2 tbsp filling in centre of each dough round. Moisten the edges of each dough round with egg mixture (use a pastry brush or your finger), and gently fold the dough over, lining them with the tines of a fork to seal the empanada. Transfer the empanadas to a prepared pan, placing them about 1 ½â&#x20AC;? apart. (To bake later, cover the empanadas and refrigerate for several hours until ready to bake.) Brush the empanadas with the egg mixture. Bake for 12 â&#x20AC;&#x201C; 15 minutes, or until nicely browned. Remove from the oven and let cool on the baking sheets â&#x20AC;&#x201C; theyâ&#x20AC;&#x2122;re a little too fragile to move while hot. These empanadas are best when served warm. 16

Raw Beet and Apple Salad
Recipe by Jenny Mosbacher, Tasting Room Supervisor, Sokol Blossor Winery Serves 2 as Main Dish or 4 as a Side Dish 3 baseball-sized beets, scrubbed, peeled
6 tbsp extra-virgin olive oil
1 large, sweet eating apple (Fuji, Gala or Pink Lady)
1 tsp Dijon mustard large handful of herbs, leaves picked finely chopped
Small (3-4 oz) piece of soft goat cheese, broken into large crumbles
big pinch of sea salt and cracked pepper
juice of one small lemon Begin by slicing the beets and apple into matchsticks. Place in a large bowl. In separate bowl, whisk together Dijon mustard and lemon juice, then slowly add olive oil while whisking to emulsify the dressing. Add salt and pepper as you like. Pour half the dressing over the beet and apple pieces and toss, gradually adding more until all of the matchsticks are evenly coated to your taste. Finish by dividing among plates and topping with the chopped herbs and crumbled cheese. If serving family-style, toss herbs and cheese together with salad and serve. Pair with Pinot Noir.

Flemish Pot Roast Serves 8 Feast on this delicious pot roast - a favorite of Fred MacMurrayâ&#x20AC;&#x2122;s - topped with gravy and onions. â&#x20AC;&#x153;When the weather turned cool, this was often a welcome dish on the family dinner table!â&#x20AC;? Serve with your favourite Pinot noir. 4 to 5 lbs beef chuck roast or shoulder clod 1 tbsp vegetable oil 4 medium onions, sliced 1 tbsp brown sugar 1 tbsp vinegar
2 cloves garlic 2 tbsp parsley 2 tbsp butter 1 can (12 oz) of beer 1 bay leaf 1 ½ tsp salt
Using a heavy Dutch oven, brown both sides of the meat in oil. In a separate pan, sautĂŠ onions in butter until pale and golden. Sprinkle with flour and sautĂŠ for two more minutes. Pour beer over onions and bring to a boil while stirring. Pour onion mixture over meat. Add brown sugar, vinegar, bay leaf, garlic and salt. Cover and simmer for two hours, or until the meat is tender. Lift meat onto a hot platter, sprinkle with parsley and keep warm. Cook the pan juices with the onions until juice becomes slightly thickened, then strain into a sauce bowl. Spoon onions into a vegetable bowl. Carve the meat, and pass the gravy and onions at the table. 19

Sparkling wine cocktails for the Holidays
Cranberry Cardamom Shortbread
Recipe by Chef Rebekah Pearse from her book SWEET Sensational Desserts Makes about 3 dozen cookies Dried cranberries are almost always sweetened, usually with glucose. Try to find ones with a lower sugar content, or ones sweetened with maple syrup or fruit juice concentrate, they’ll deliver better flavour and nuance to these addictive cookies. ½ lb cold cubed unsalted butter (2 sticks) ¾ cups sifted icing sugar 1 2 3 cups all-purpose flour 2 cups rice flour 3 ½ tsp ground cardamom
1 ½ tsp fresh lemon zest 1 tsp vanilla extract 1 egg 250g, dried organic cranberries
The rice flour delivers a delicate crumbly texture to these cookies by reducing the amount of gluten in the recipe. Pre-heat the oven to 350°F. In the bowl of a food processor, combine the butter, icing sugar, flour, rice flour and cardamom and process until smooth and homogenous. Add the lemon zest, vanilla and egg and continue processing until smooth. Turn out of the food processor and knead in the cranberries until they are evenly distributed. Roll the dough between two pieces of parchment or on a lightly floured surface until it is about 1 3 cm thick. Chill in the refrigerator until firm (at least 1 hour). Cut the dough into whatever shapes you desire, placing the cookies on a baking sheet at least 2 cm apart. Chill the dough in the freezer for at least 10 minutes. Bake until the tops are firm and the edges are just turning golden brown (8-12 minutes). Allow the cookies to cool on a rack for 10 minutes before eating them!

Holiday Cookies Vanilla Bean Shortbread 2 cups all purpose flour ¼ cup cornstarch ¼ tsp salt ½ cup butter, softened
½ cup canola oil ½ cup sugar 1 vanilla bean, split lengthwise
Preheat oven to 350°F. Line bottom and sides of a 13” x 9” baking pan with foil; coat foil with cooking spray, and set aside. Combine flour, cornstarch and salt in a bowl and mix well. Place butter in a separate bowl and beat with mixer until light and fluffy. Slowly add sugar while mixing. Scrape seeds from vanilla bean and add to sugar/butter mixture. Discard vanilla bean. Add flour mixture slowly and beat slowly until fully mixed. Add mixture into prepared pan. Place piece of heavy plastic wrap over dough and press dough into pan so that it is evenly spread out and thickness throughout. Discard plastic wrap Bake at 350°F until edges are slightly golden (roughly 30 minutes). Cool in pan for 5 minutes and cut into squares. Carefully lift foil from pan and cool cookies.

Strawberry Champagne Cocktail
1 ounce vodka 1 ounce orange liqueur ½ oz peach nectar sparkling wine peach slices and raspberries for garnish
½ oz orange liqueur ¼ oz cherry brandy dash of bitters sparkling wine orange and pineapple slices
½ cup fresh strawberries ¼ tsp vanilla extract ¼ tsp freshly squeezed lemon juice 1 tsp sugar Champagne or sparkling wine
Fill cocktail shaker with ice. Pour all ingredients except sparkling wine over ice and shake until well mixed. Strain mixture and pour into champagne glass Top up with sparkling wine Garnish with fresh peaches and raspberries.
Fill tall cocktail glass with ice Pour all ingredients aside from sparkling wine into glass Fill with sparkling wine Garnish with orange and pineapple slices
Wash and hull the strawberries Puree all the strawberries (except one) in a blender. Add vanilla, sugar, lemon juice to strawberry puree. Pour mixture into champagne flute glass. Top up with sparkling wine, stir softly and place single strawberry on edge of glass. 25
