Easy Appetizers for a New Years’ Eve or Holiday Celebration Easy Salmon Canapés

½ (17 oz.) package frozen puff pastry, thawed 1 (8 oz.) package brie cheese, round 1/8 cup toasted almond, slices (optional) 1/4 cup apricot, raspberry or your favourite preserves

One hour before serving, cut 32 crosswise slices of cucumber and arrange on a serving plate. Mix cheese and sour cream in a bowl until smooth; spoon into a pastry bag fitted with a large star tip and pipe onto cucumber slices.

Preheat oven to 425°F. Lightly grease cookie sheet. Roll puff pastry out slightly. Place cheese wheel on top (leave rind on), place preserves on top of cheese, then almonds on top of preserves. Bundle puff pastry up and around the cheese. Cut out shapes in extra pasty to place on top for a fancy touch. Bake for 20-25 minutes. Let cool for five minutes and serve with your favourite crackers or baguette.

Baked Brie with Apricot or Raspberry preserves with Almonds

1 (12-inch) seedless cucumber 1 (5.2 oz.) package spreadable herb-garlic cheese (2/3 cup) 3 Tbsp. sour cream 4 oz. thinly sliced smoked salmon

Cut salmon into 32 pieces; shape each into a roll and place on cheese mixture. Garnish with parsley or dill, if desired, and serve.

What you need: Ice bucket Water Ice Salt

Fill the ice bucket with ice and water around a bottle of sparkling wine. Pour salt into the water to speed up the ice melting. Submerge the bottle as much as possible. Spin the bottle a few times while in the water and in 20 minutes your bottle will be ready to serve.

C e l e b r at e R ob b i e B u r n s D ay Robbie, also known as Rabbie Burns, is regarded as The Bard, Scotland’s National Poet. He was born on January 25, 1759 in Allowy, on the River Doon, Scotland. His birthday is celebrated around the world every year on what has become known as Robbie Burns Day. Robbie was a farmer for most of his life is best known for his collection of over 550 songs and poems. One of the most renowned being Old Lang Syne, which of course is recognized as the traditional song of New Years Eve. Passing away at the young age of 37 after complications from a tooth extraction. His life is celebrated the world over by lovers of his lyrics and prose and is recognized as one of the leaders of romantic writings.

During his life, Robbie Burns was recognized as the father to 16 children, which today can be traced to over 600 living descedants in 2012. Robbie Burns is considered such an important literary and cultural figure for Scotland that there is even a Robbie Burns App available for smart phones that gives users access to his famous works and explanations of traditional Scottish celebrations. 8

Aromatic Winter Whites

Cook macaroni according to the package directions. Drain. In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well. Melt butter in a skillet over medium heat. Add bread crumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.

Butter four 6oz. custard cups. In a medium bowl combine the chocolate and the butter. Melt in microwave. Blend in wine, vanilla and sugar. Whisk eggs and egg yolks and add to the chocolate mixture. Stir in the flour, cinnamon and ginger. Spoon mixture into dishes. Bake at 425°F for 15 minutes. The sides should be firm but centres soft. Cool slightly for a few minutes. Gently remove cakes from dishes. Set on serving plates. Sprinkle with powdered sugar and drizzle with thin lines of chocolate syrup. (syrup can be slightly warmed) Serve with cabernet franc ice wine, demi-sec sparkling wine or cabernet sauvignon. 15

Wine in the Movies

Grilled Trout with Cucumber Salad

This year Hollywood will celebrate the 85th anniversary of its most glamorous award show; the Oscars. Since the end of prohibition in 1933, wine, spirits and beer have been filling glasses of movie stars in famous movie scenes, and so in honour of this special evening, we thought we would share some of our favourite movie moments. Casablanca (1942) Who can forget Humphrey Bogart, as Rick Blaine, in his Gin bar ? The champagne, cognac and brandy seemed to always be flowing and Rick’s famous quote of “Here’s looking at you kid”, was set in a flash back of sipping wine in Paris during happier times. Arsenic and Old Lace (1944) Cary Grant’s character, Aunt Martha’s recipe of arsenic mixed into elderberry wine is definitely a drink not to be tried at home.

An Affair to Remember (1957) A movie that is enjoyed by romantics everywhere, It’s one that will be sure to have you dreaming about sipping pink champagne and living life to the fullest. As Cary Grant says to Deborah Kerr, “time together should be like pink champagne – bubbly, gay and bright” We will have the pink champagne and a Kleenex box handy for this tear jerker.

The Muppet Movie (1979) Steve Martin plays a snotty waiter who opens a bottle of sparkling wine from Idaho with a beer opener for Kermit the Frog and Miss Piggy while they are out for dinner. A classic and hilarious scene of a haughty waiter. Silence of the Lambs (1991) Who can forget Anthony Hopkins as Hannibal Lector and his famous pairing of liver, fava beans and Chianti? It is sure to send chills down your spine every time you watch the scene. Sideways (2004) A must see movie for any wine enthusiast . With beautiful landscapes, a great story and love-fest with the pinot noir grape, this movie will have you falling in love with the wines and vineyards as the movie plays on.

Recipe by St Urbans-Hof Winery, Germany Bottleshock (2008) Based on the true story of Napa’s transformation into one of the worlds leading fine wine producing region, this movie is one that will have you routing for the little guy and cheering for the wines of California. Don’t miss the fun scene with the old style bucket of Kentucky Fried Chicken memory from the past. James Bond (1962 – 2013) How could we do this list without including James Bond? He first ordered his “shaken, not stirred” martini in 1962 and the drink has been synonymous with the character ever since, and honestly who doesn’t want to be like James Bond? Bond also has a wonderful affection for champagne with Bollinger Champagne being one of the longest running partnerships of a wine in movies since it was first shown in Live and Let Die in 1973. It is known as the official Champagne of the Bond Movie Series.

Serves 4 4 rainbow or creek trout 2 red onions 3 garlic cloves 1 lemon 1 bunch of parsley 1 bunch of dill 2 cucumbers

1 Tbsp of grainy mustard 1 cup of sour cream olive oil white wine vinegar sugar salt, pepper aluminum foil

Wash each trout inside and out. Dry off with a towel. Salt and pepper inside and outside of trout then stuff with one chopped onion, some parsley, lemon and two garlic cloves. Roll out four sheets of aluminum foil, drizzle lots of olive oil on them and wrap each trout separately in foil. Cut cucumber into slices and put in a large bowl. Mix oil, vinegar, salt, pepper, a bit of sugar and mustard. Chop onion and garlic and add it. Add sour cream. Mix again. Chop dill and some parsley and add. Mix again and pour over the cucumber slices. Toss the salad and let it sit for 15 minutes. Put trout on grill for 10 minutes turning often. After 10 minutes, poke a few holes in the foil with a fork, so the juice drips off and the smoke flavors get to the trout. After 2 minutes, remove the trout from the grill and unwrap. Put each trout on a separate plate and add cucumber salad. Garnish with lemon and parsley. Serve with a nice and chilled glass Riesling for a wonderful pairing. 19


Mardi Gras

Mardi Gras in New Orleans is a festival that dates back in the city to 1699. It is celebrated for the 46 days prior to Easter. With the last day celebrated on Fat Tuesday, or Pancake Tuesday to some, followed by Ash Wednesday, which is the beginning of Lent, a time of prayer and fasting. The first Mardi Gras parade was held in New Orleans in 1837, and today the festival is visited by nearly one million people each year.

This class will transport you to one of Italy’s most romantic cities as we explore it’s fascinating history and wonderful wines, such as prosecco and amorone. Beddington: February 23, 7pm - 9pm • $25 per person

Jambalaya

from The New Orleans School of Cooking Serves 12 people (can be cut in half) 1 1/2 lbs. hot, medium or mild sausage 3 lbs. large, shrimp or chicken (or a mixture of shrimp and chicken) 4 cups chopped onions 2 cups chopped celery 2 cups chopped green pepper 1 Tbsp. chopped garlic or to taste

4 cups long grain rice (do not use a quick cooking rice style) 5 cups stock (1/2 chicken and 1/2 tomato juice recommended) 2 tsp. of any good cajun seasoning 1 cup chopped green onion 1/4 cup paprika

Brown sausage in large roaster over medium heat. (if using any chicken, it can be browned along with sausage). Remove from pot leaving drippings. Sauté onions, celery, green pepper and garlic to tenderness you desire. Return sausage mixture to pot. Add stock and seasonings and bring to a boil. Add rice and return to a boil. Cover and reduce to simmer. Cook for at least 25 minutes. After 10 minutes of cooking, remove cover and quickly turn mixture from top to bottom completely. Add green onions and cooked shrimp for the last five minutes. Chopped tomatoes can also be added if desired.

America’s first Cocktail

Legend has it, that the Hurricane drink was originally created in 1939 for the World’s Fair in New York, city by New Orleans bar owner, Pat O’Brien. The drink was named after the tall glass that it was served in resembling a hurricane lamp. Pat O’Brien’s Bar is still a New Orleans landmark where his famous cocktail is still enjoyed by millions each year.

Created in 1888, by Henry C. Ramos as a breakfast eye-opener, at the Imperial Cabinet Saloon, New Orleans. The original recipe called for 12 minutes of shaking to emulsify all the ingredients correctly. At one time in history the hotel employed 35 “shakers” to keep up with demand for the drink.

Legend has it that Creole apothecary; Antoine Peychaud created this drink in New Orleans. It was known as America’s first official cocktail in 1838, when he would make it for friends using his secret recipe. In 2008, it was made the official cocktail of the city of New Orleans by the State Legislature.

¾ cups 1 oz. vodka 1/4 oz. grenadine 1 oz. gin 1 oz. light rum

1 1/2 oz. gin 1/2 oz. lime juice 1/2 oz. lemon juice 1 1/4 oz. simple syrup 2 oz. milk, half & half or cream

2 oz. rye or whisky 1/2 oz. simple syrup 2 dashes bitters

1/2 oz. dark rum 1 oz. amaretto almond liqueur 1 oz. triple sec grapefruit juice pineapple juice

Fill a hurricane (or any other tall glass) 3/4 full with ice. Pour all the alcohol in first, then follow with equal parts of grapefruit and pineapple juice. Serve and enjoy! (For those not drinking alcohol, you can use sprite and orange pop). 28

Place all of the ingredients except the club soda into a cocktail shaker with ice cubes not crushed ice. Shake vigorously (more than normal to ensure the egg and cream are well mixed). Strain into a high ball filled with ice. Top with club soda.

Absinthe or Herbsaint Ice cubes Lemon twist for garnish Give chilled highball glass an absinthe or Herbsaint rinse and set aside. Stir other ingredients in a mixing glass/cocktail shaker, strain into the chilled glass and garnish.

Filling: 4 apples peeled, diced and tossed well with cinnamon sugar 3/4 cup raw cranberries Batter: 4 cups all purpose flour, sifted 2 1/2 tsp. baking powder, sifted with flour Custard Sauce: 8-10 egg yolks 1 cup sugar

4 cups sugar 8 whole eggs 3 cups whole milk

For the Custard Sauce: In a double boiler, over boiling water, whip eggs and sugar until very thick. Stir in whisky and chill. When cold, fold in whipped cream. Serve on side of hot cobbler.

1 1/2 Tbsp. vanilla 1 1/2 Tbsp. lemon or orange zest

Mix apples and cranberries together. Put an even layer of fruit in six greased crocks. Blend ingredients for batter like you are making pancakes. Ladle batter over fruit and bake at 350 °F until golden, about 30-40 minutes.

These events will be held at our Tasting centres and will be presented in a fun and fresh way that will ensure you have a fabulous time, try some great products and learn something new. Topics will vary between centres so be sure to check the calendar for class times and locations. See location calendars in this booklet for events and dates.
