Seared Furakaki Crusted Tuna with Vine Ripened Tomatoes and Arugula Serve with Rose, Sauvignon Blanc, Pinot Gris (dry), Riesling (dry) Serves 4
1 medium sized fillet of fresh tuna 50g wasabi paste 1 small bag furakaki mix 1 lime 1/3 cup sesame oil 1/4 cup rice wine vinegar 4-6 vine ripened tomatoes 60g arugula salt and pepper to taste Trim fillet of any sinew and cut in half. Cover tuna on all sides with thin smearing of wasabi paste. Roll in the furakaki mix. In a hot pan with as little oil as possible, sear the tuna on all sides (approximately 20 seconds each side). Allow to cool. Juice the lime and combine with sesame oil, rice wine vinegar and season to taste. With a sharp knife, thinly slice the tuna into strips. Finely slice the tomatoes and season. In a bowl, mix the arugula with some of the dressing. Arrange on a platter (or individual plates) the sliced tomato; top with the dressed arugula and lay over the slices of tuna. Kerner Ice Wine and Olive Oil Cake with Hazelnuts and Fresh Seasonal Fruit 5 eggs plus 2 whites 3/4 cup sugar 1 Tbsp lemon zest 1 cup sifted all purpose flour 1/2 tsp salt 1/2 cup ice wine 1/2 cup plus 2 Tbsp good quality extra virgin olive oil Preheat the oven to 375°F. Separate the five eggs and whisk the yolks with the sugar for five minutes until they are a light colour. Add the lemon zest. Combine the flour and salt and add it slowly to the egg mixture, mixing continually until it is all incorporated. Add the dessert wine and olive oil in the same manner. Whisk the seven egg whites until stiff peaks form and fold into the other mixture. Pour into an 8� springform pan with parchment on the bottom and the sides well buttered. A few hazelnuts may be added to bottom of pan if desired. Bake for 20 minutes, rotating once. Drop the oven temperature to 325°F and bake for another 20 minutes. Turn the oven off and leave the cake in, covered with a round of buttered parchment, for 10 minutes. Remove the cake from the oven, invert and remove from the pan. Allow to cool completely. Serve with fresh, ripe fruit, toasted hazelnuts and a glass of ice wine. Recipe donated by the restaurant Miradoro at Tinhorn Creek Winery, British Columbia

Candy Corn Martini 3/4 oz vanilla vodka 1/2 oz creme de cacao 1/2 oz butterscotch schnapps 2 oz orange juice 1 Tbsp dark cocoa powder Ring 6 oz Martini glass with orange juice then with Cocoa powder. Pour 1/2 cup of ice into shaker, then spirits and Orange Juice. Shake vigorously and pour into glass. Garnish with orange wedge and candy corn on a stick.
OKTOBERFEST Oktoberfest is the world’s largest beer festival held in Munich, Germany every fall for 16 days with the last day always held on the first Sunday of October. Six million people visit the event each year where they enjoy over six million litres of beer. Oktoberfest originally began October 12, 1810, when the city of Munich was asked to join in the wedding celebrations for the Bavarian Crown Prince Ludwig to Princess Therese. The original celebrations lasted five days and a horse race was the main event. Over the years the anniversary celebrations turned into a fair with rides and other amusement. Beer and food tents were added and the dates moved to the end of September to take advantage of the better weather.
Beer Tip: Serving beer at the correct temperature for its style is important so that you can experience it at its best. If a beer is served too cold, it will not be able to fully express all of its aromas and flavours, whereas if it is too warm, it will be flabby and not exciting in the glass. Here is a helpful guideline for you to use to ensure that you enjoy the beer in your glass at its best:

Judgement of Paris – Napa vs. France
The wine event of the year! Join us for this special evening as we recreate both the red and white wine flights from one of the world’s most famous wine tasting. The Judgement of Paris was done in 1976, and it changed the way people around the world looked at wines from the United States and turned wine collectors’ eyes to the Napa Valley. This tasting of twenty wines has never been recreated before in the city of Calgary and we are proud to bring this unique and rare experience to you. Old World vs. New World

Lamb Loin with Tomato Reduction
Serve with Shiraz, Syrah, Cabernet Sauvignon, Petit Syrah or Bordeaux Blends Serves 2
450g (1 lb) Lamb Loin 2 shallots, sliced 2 garlic cloves, sliced 6 sprigs fresh thyme 1 sprig fresh rosemary 1/2 cup extra virgin olive oil
Tomato Reduction Ingredients: 1/2 cup sugar 1/4 cup red wine – Syrah or Shiraz 2 Tbsp sherry vinegar 3/4 cup tomato juice 1/2 cup veal jus
Marinate the lamb in the aromatics and olive oil overnight in the fridge. Remove the lamb from the marinade and remove any excess oil and aromatics. Let the lamb temper on the table for one hour to bring up to room temperature. Preheat the oven to 450°F. Sear the lamb in a hot skillet and roast in the oven to approximately 135°F (medium rare/medium) or however you desire; remove from the pan. Let it rest on the table as you make the tomato reduction. Tomato Reduction: Please note, it is important that you are ready to make the sauce by having all of the ingredients close by as the caramel will easily overcook. Heat a medium sauce pan on a medium setting. Sprinkle half of the sugar on the bottom of the pan to begin the caramelizing process. Add the remaining sugar and cook to a rich golden colour. Deglaze with the Syrah and reduce by half. Add the vinegar and tomato juice and continue to reduce by half. Add the veal jus and cook to desired consistency. Remove from the heat and serve with the lamb. Recipe donated by Mission Hill Winery, British Columbia

Creamy Red Pepper and Butternut Squash Soup Serve with Pinot Gris, Pinot Blanc, Riesling, Chardonnay or Amber Beer
1 tsp canola oil 1 onion, chopped 4 cups chicken or vegetable stock 2 lbs butternut squash, peeled and cut into half-inch chunks 1 roasted red pepper 1 Tbsp brown sugar 1/4 tsp cinnamon (optional) pinch grated nutmeg salted green pumpkin seeds, to sprinkle on top Heat oil in pot for a few minutes, then add the onion and cook until softened (5-7 minutes). Add the squash and cook for 5-10 minutes, stirring frequently until softened and getting mushy around the edges. Once soft, add the broth, cover and simmer on low heat for about 20 minutes. Approximately 15 minutes in, add chopped roasted red pepper, spices and sugar. Remove from heat, using a hand blender, mix until creamy. Recipe donated by Julie Van Rosendaal

Entertaining with cheese today is a far cry from the cube-and-toothpick platters of family gatherings of old. When it comes to entertaining, cheese tasting is the perfect way to offer a wide variety of flavours and textures and let your guests explore delicious new combinations. Whether it is served as a snack with friends, a course before dessert or a traditional dégustation (wine tasting), cheese always fits the menu. Here are a few tips for serving cheese with success:
When planning a party, use the simple graph to help you figure out the amount of wine that you will need for your event:
• When selecting a variety of cheeses, pick different tastes, textures, colours, degrees of firmness and so on.
• Count on two to three glasses of wine for the first hour per person at a cocktail party and then one glass for each hour afterwards.
• Always serve cheese at room temperature so that the flavours have time to open up. • Hard cheeses like OKA and Britannia can share a cutting knife, while soft cheeses like Champfleury and Vaudreuil need their own knives. • Add variety and colour by serving cheese with olives, nuts, dried fruit, honey, preserves, and crackers or a sliced baguette. • Each bottle of wine will give you five - five ounce pours which is the size that fits comfortably in an average wine glass.
• For beer, count on three bottles of beer per person in the first two hours and then one bottle for each hour afterwards. • Cocktails – two cocktails for the first hour and one for every hour afterwards. • You will get 24 one ounce pours, 16 one and a half ounce pours or 12 double shots from a mL bottle of spirits (vodka, rum, gin, etc). • Be sure to offer pop, water and/or punch for non-alcoholic drink choices. Original Draught Cheese Fondue
Serve with your favourite draught, amber, dark beer, full-bodied Chardonnay, Merlot or sparkling wine.
1 cup Canadian Oka, in small dice 1 cup Canadian Emmental, grated 1 cup Canadian Vacherin, in small dice 4 tsp cornstarch 1 clove garlic, sliced in two 3/4 cup lager beer 2 Tbsp kirsch 1 tsp lemon juice Ground nutmeg and pepper to taste 2 to 3 baguettes, cubed 2 cups assorted raw vegetables (quartered mushrooms, broccoli and cauliflower florets, etc.) In a bowl, mix cheeses and cornstarch. Rub the inside of a fondue pot with sliced faces of garlic clove. Over medium heat, pour beer, kirsch and lemon juice in pot and bring close to the boiling point, then reduce heat to very low. Add cheeses gradually by handfuls, stirring until melted. Keep heat low; do not boil; as fondue should not be subjected to high temperatures. Stir in a figure eight motion with a wooden spoon until smooth and creamy. Blend in nutmeg and pepper to taste. Spear baguette cubes and vegetables with fork, dip in fondue and enjoy! Classic Sparkling Wine Holiday Punch 1 (12 oz) can frozen sweetened cranberry juice concentrate 1 (12 oz) can frozen pink lemonade concentrate 1 (6 oz) can frozen limeade concentrate 1 (750 mL) bottle dry white wine, chilled (Pinot Grigio is a good option here)
1L carbonated water, chilled
(7UP or Sprite can be used for a sweeter flavour)
2 (750 mL) bottles sparkling wine/champagne, chilled
(Cremant from France or Cava from Spain are great to use here)
1 large lemon - sliced, for garnish 1/2 cup fresh mint, garnish In large punch bowl, combine the cranberry juice, pink lemonade, limeade, white wine, club soda and champagne. Do not add sparkling wine until just before the punch is to be served. Garnish with lemon slices and fresh mint leaves. Freezing whole cranberries either on their own or with water in ice cube trays is a pretty way to keep this punch chilled.
Candy Cane Martini 1 ½ oz vodka 1tsp peppermint schnapps 1 crushed candy cane Mix all ingredients with ice in a shaker. Strain liquid into a chilled cocktail glass. Option: Wet rim of glass and dip into crushed candy cane pieces for a fun rim on this classic holiday cocktail.

Let’s Get Fortified!
What is a fortified wine? Why do they fortify wine? Who are ‘they’ and where are they made? Explore the wines of Madeira, Marsala, Vermouth, Sherry and Port in this class that explores the history, wine-making methods, and flavours behind these delicious, sticky nectars. Oakridge: December 3, 7pm - 9pm • $20 per person
Mulled Wine Serves 4-6
1 bottle (750 mL) of red wine
(Cabernet Sauvignon, Zinfandel, Merlot or red blend)
2 peeled oranges and sliced orange
(keep peel to add zest to taste into cooking pot)
1/4 cup of brandy 8-10 cloves 2/3 cup honey or sugar 3 cinnamon sticks 1 tsp fresh or 2 tsp ground ginger
Rum and Egg Nog 1 ½ oz amber rum Eggnog Pour rum into a glass. Top up with eggnog. Sprinkle with nutmeg. Option: Add cinnamon sticks and sprinkle with nutmeg for a boost of festive flavour.
(allspice can be substituted or added as well )
1 tsp pumpkin pie spice Combine all ingredients in either a large pot or a slow cooker. Place cloves in orange peel slices for easy removal later. Gently warm the ingredients on low to medium heat (avoid boiling), for 20-25 minutes. Stir occasionally to make sure that the honey or sugar has completely dissolved. Additional spices can be added if needed. When the wine is steaming and the ingredients have been well blended, it is ready to serve. Ladle the mulled wine into mugs (leave seasonings behind) and enjoy! Each mug can be served with a fresh cinnamon stick if desired.

Tips for Holiday Bubbles When looking for lighter styles of champagne or sparkling wine, look for Blanc de Blanc on the label. This means that the wine has only been made from white grapes (chardonnay) and will be lighter and more elegant in its profile. Cava, Cremant, Traditional Method and Methode Champenoise all denote that a wine was made in the same method of Champagne, meaning that the bubbles will be the smallest and the longest lasting. Cava is from Spain and Cremant is a sparkling wine made in any other region in France other than Champagne. Both of these wine styles offer great wines at great values. Prosecco from Italy makes a wonderful sparkling wine choice for the holidays. It is light, fresh and is perfect for light meals, tapas or appetizers served during a cocktail party. Demi-Sec on a label let’s you know that the wine is off-dry and will be slightly sweet. These are great choices for dessert courses or fun holiday sipping. Look for Moscato d’Asti when looking for a pairing for chocolate desserts or fondues. Don’t forget about sparkling ciders which can make a lovely pairing with apple pies or tarts and are delicious for sipping by the fireplace. Remember that sparkling wines are both people and food-friendly and come in a variety of styles and price ranges for everyone to enjoy.
