HAPPY ANNIVERSARY to Cary Magazine, and welcome to 2024! It’s hard to believe that we have been bringing you stories from Western Wake (and beyond) for the past 20 years. I have been honored to be a part of this magazine’s journey since 2017, and in that time I’ve seen a lot of change in both our publication and our coverage area. We have been blessed to work with the diverse group of talented people who have contributed to Cary Magazine over the past two decades. They have made the magazine into what it is today — and for that, I cannot thank them enough! Did you know that the word for a period of 20 years is “vicennium”? It’s OK, I didn’t either — but Google did! To celebrate our vicennial accomplishment, we are debuting a new look for Cary Magazine, making it cleaner and easier to read (I hope)! Don’t worry, we have retained all the sections you know, love, and look forward to each month. We hope you like it as much as we do! In this extra-special issue, we also explore the new Downtown Cary Park and enjoy a meal at Maximillians — a delicious Cary staple that has sustained us for 20 years. In a fit of nostalgia, we also look back on 20 years of memorable moments and stunning photography. In summary, what a ride it has been! We are grateful for each and every one of you, loyal readers. PFEIFFER'S DAUGHTER, ANNA, HAS BENEFITED GREATLY SINCE GIGI'S PLAYHOUSE OPENED ITS DOORS TO THE COMMUNITY IN 2016.

Taking a position in outreach, Pfeiffer used her intrinsic love for the community to help spread the word about what GiGi’s was all about. “When we did our grand opening, we had like 300 people come, because it’s really something that this community has needed — they’ve needed a place to go,” said Pfeiffer. “There’s so much free programming that’s offered here, from literacy, math, and speech. Usually families have to pay for all that, but when they come to GiGi’s, they don’t. We have over a thousand families in our database.” While Pfeiffer tends to downplay her role, Michelle Schwab — vice president of GiGi’s Playhouse, and former member of its startup team — has seen the impact that

Pfeiffer has made firsthand. “Honestly, Michelle is grace personified,” said Schwab. “She never takes credit for any of the amazing things she does. She always gives credit to the team or to someone else. Michelle works hard and gives so much of her time and energy to GiGi's and the IDD community. She is willing to do anything for anyone, and she is always thinking of how to improve and grow the playhouse.” Pfeiffer and her husband, Andy, recently celebrated 30 years of marriage in Bermuda alongside all three of their children. “Our oldest, he’s graduated from college and is now in investment banking in Charlotte,” said Pfeiffer. “Anna, who has Down syndrome, is a very busy gal. She has three jobs — she works at Howdy Homemade Ice

We have a third, and she is a junior at UNCChapel Hill studying biology and chemistry. It’s fun as a mom watching them grow up and find their passions.” The biggest thing that Pfeiffer has learned, she says, as both a mom and in her role at GiGi’s, is to not set limits on anyone. “Whenever you meet someone, it’s very easy for us to come up with some preexisting thought as to what they can or cannot do,” said Pfeiffer. “Just don’t. At GiGi’s, we celebrate every accomplishment, and we call it the ‘best of all.’ It’s different for everybody, what their ‘best of all’ is, but I have learned not to put limits on anybody — not just with Down syndrome, but in life.” In 2013, Pfeiffer was recognized as a Woman of Western Wake for her work with Anna’s Angels. In 2023, Pfeiffer was presented with the Lifetime Achievement Award at Cary Magazine’s Women of Western Wake Forum, honoring her years of service to the community. “Michelle is deserving of this award because she truly has dedicated her life to this cause,” said Aimée McIntyre, who met Pfeiffer at the first-ever gala for Anna’s Angels. “She's innovative and progressive, always seeking to bring awareness, fresh ideas, and new partners to the table.” Pfeiffer, who says she was “surprised and honored” to receive the award, credits much of GiGi’s success to the Town of

Cary and their tremendous and ongoing support. To Pfeiffer, community is key — especially for the parents of a child with Down syndrome. “My advice to parents is to get connected to a support group, to a GiGi’s that’s around you,” advised Pfeiffer. “If

CARY: THEN & NOW In light of Cary Magazine’s 20th anniversary, we thought we’d take a trip down memory lane with three prominent longtime citizens to see just how far we’ve come as a community. From long-forgotten tobacco barns to solar farms and electric fleet cars, a lot has changed over the years — but in the words of L.M. Montogomery, “Nothing is ever lost to us as long as we remember it.”

Harold Weinbrecht, Cary Mayor How long have you lived and worked in Cary?

What are some of the biggest changes that you’ve seen in Cary over the years?

The revitalization of downtown is one of the biggest changes. Twenty years ago, there were very few businesses locating here, and even though it was and is a very safe area, some were beginning to leave. Downtown was not a desirable place to live, and some houses were not being maintained. It had become a place you drove through, not to be. Now it is one of the premier places in the Triangle, with businesses and people wanting to locate there. Our public parks and greenways have also seen drastic change. Cary now has more than 30 public parks and natural areas, and that number will continue to grow. Our greenway system is now more than 80 miles. If you add trails, that number is over 100 miles, which is farther than the drive from Cary to Winston28

What are some common misconceptions about town growth?

There is a perception by some that Cary is growing rapidly because the change is occurring in one or two areas. But when it comes to an actual rate of population growth, data shows that Cary has been growing at a rate of 2.5 to 3% for the last 15 years, which has long been considered by Town Council as a healthy growth target. Many people are misinformed about the rate of growth, and are upset about the infrastructure challenges related to growth. One common complaint is roads. Those complaints usually are about NCDOT-maintained state roads, which have much lower standards than Cary. What was your favorite place to shop/eat years ago, and are these places still around?

When my girls were little, we used to go to the Cary Towne mall on Friday nights and eat at the food court. That was a family outing. That property was purchased by Epic Games, and they have removed those buildings. What is the one business in Cary that you hope we never lose?

47 years! I lived in Cary from 1958 to 1969, moved back to the area in 1981, and in Cary from 1987 to present. Cary was so small when I was a child that you had to go to Raleigh to buy a pair of shoes! I remember when 7-Eleven decided to locate in Cary, and how that was a huge deal. But even though Cary has grown to over 60 square miles and 185,000 people, it still has a small-town feel.

Salem. We also have seven special-use facilities, four sports venues, and nine staffed facilities that provide a variety of programs and services for all ages. In 2019 Cary was ranked as the #1 park system in the nation.

What recent changes are you the most excited about?

The Downtown Cary Park spurred economic growth before it was finished and was one of the catalysts for downtown revitalization. It will be recognized as one of the best urban parks in the nation. If you could bring back one thing from Cary’s past, what would it be?

The Kildaire Farms. I visited it in elementary school, and my childhood impression was that it was enormous. I still remember bits of it today. Needless to say, it had an impact on me. Anything else you’d like to add?

I am honored to have been re-elected for a fifth term as mayor. I am humbled by the citizens’ trust and belief in me as our community moves forward.

Cary Towne Center — a million-squarefoot facility offering retail at its best. Epic Games has since purchased the site, but now, Fenton is a great mixed-use area offering retail at its best! I also enjoy Ashworth Drugs, a landmark business in downtown Cary — never want to lose it. We enjoy Rey’s for fine dining. What are some recent changes in Cary that you’re particularly excited about? Although we have become a large town in growth, there’s still a hometown feel for those of us that have lived here for many years. I love that we don’t need to go to Raleigh to shop, go to the doctor, find great entertainment, or go to great restaurants anymore. We have it in our own backyard.

There will always be challenges as they manage traffic, infrastructure, crime, etc., especially as we move forward with the opening of the new park, new commercial buildings, and residential growth. There will be additional responsibilities for our police and firefighters, and we must be certain they are compensated appropriately and appreciated for their service. I truly love our Town of Cary and am proud to call it home. The new park will have and has had a tremendous impact on the revitalization of the downtown area. It is now a place of gathering, offering mixed-use development in combination with a world-renowned city park. And we finally have a water feature in Cary! Thoughts on town growth?

Cary’s business leadership working with the Town of Cary leadership has been a WINWIN for its growth. Communities need a vision and services to move forward. We have a great team in Cary that has provided what cities and businesses universally need. The town’s vision on infrastructure has been key. Anything else you’d like to add?

DOWNTOWN CARY PARK officially opened to the public on Nov. 19, 2023 — and in doing so, fulfilled its centurylong destiny. According to an old map, dated from the late 1800s, the park’s land was once owned by a gentleman named Ben Savage. “He was a horticulturalist, and he had fruit trees on this property,” said Joy Ennis, the park’s general manager. “There was a map that he drew, and it said ‘park’ on it, so we like to think that this has always wanted to be a park, even 120 years ago. There are a few pecan trees still on the site that I like to think are still some of Mr. Ben’s pecan trees.” Savage’s dream has certainly come true, and in a big way. After more than 20 years of dreaming and planning, the new urban park spans 7 acres between Academy, Walker, Park, and Walnut Streets in Downtown Cary. “I love the excitement and wonder that I see on people’s faces when they can actually get into the park and see it in its entirety,” said Ennis. “We want this park to be a place where families can come and make memories, and we are honored to be a part of that.” The park, Ennis says, has been thoughtfully and intentionally designed to ensure that everyone can enjoy all the amenities and robust programming. 40

Towne Square, a major entrance point to the park, includes Cary’s iconic fountain and multipurpose lawn for future pop-up markets and fitness classes. The square also houses rotating public art and the permanent Sense of Place art installation — featuring four steel columns and a glass top that map out the entire town of Cary. Locals are encouraged to find the street they live on by exploring all 80 panels! Visitors who wander over to Academy Pavilion will discover Market 317, a grab-and-go style café that will serve locally sourced, healthy food options such as wraps, sandwiches, and charcuterie boards. A rentable event space, the pavilion is adorned with beautiful western red cedar along the walls and ceiling and curved glass doors that open and spill out onto Academy Plaza. The Nest Play Area is the perfect spot for children to partake in imaginative play. Inspired by the natural elements of the park, this play area features two iconic 20-foot-tall cardinals. These cardinals are surrounded by a tangle of scrambles and logs for climbing, and visitors can even venture inside to get a bird’s-eye view of the park. The Nest also encompasses a toddler play area nestled amongst towering pine trees, multiple slides, and a splash pad for cooling off on hot days.

Lining Park Street is the park’s active recreation area, which includes table tennis, foosball tables, a putting green, and a turf-clad arena surrounded by breathtaking river birch trees — perfect for volleyball, bocce ball, cornhole, theater-in-the-round, and much more. Dorothy Wysocki 100 Years Loved

CARY RESIDENT AND IRISH EXPAT Dorothea “Dorothy” Wysocki turned 100 years old on Dec. 5 — but in her mind, she’s simply 18 with 82 years of experience. “I asked what turning 100 means to her, and she said, ‘I’m not going to be 100; I’m only 96,’” laughed Brenda Schwab, Wysocki’s friend and power of attorney. “She doesn’t like a big splash, never likes to be the center of attention.” Schwab, who first met Dorothy in 2003, describes Dorothy as “reserved and conservative” — but when surrounded by family and friends, Wysocki’s quick wit and Irish charm soon rise to the surface. “Do you remember your dog Sandy?” Asked a family member on Zoom, having called in from Ireland for her centennial celebration. “What was Sandy?” “Sandy was a dog, of course,” Wysocki answered, a cheeky little smile on her face. Well, you can’t argue with that! Wysocki’s birthday was celebrated with high tea at Woodland Terrace Retirement Community in Cary — a first rate affair with three-tiered silver platters, scones and clotted cream, a harpist, and fascinators perched on the heads of many attendees. Only the best for the lady of the hour! The theme was inspired by a past visit to The Umstead for High Tea — a tradition that can be hard to find on this side of the pond. “That’s one of my favorite memories with Dorothy,” said Schwab of her visit to the Umstead. “They had a harpist there, and while we were having tea she told me that if we were in Ireland, there would be a threetiered silver platter. No sooner than those words left her lips, and someone was coming around with a three-tiered tray with all the sandwiches and desserts on it. Her smile was huge. She was so excited to see that. ‘Oh good, they know how to do tea,’ she said.”

Despite having lived in the States since 1957, tea time remained a staple in Wysocki’s life. Her preferred brand? Red Rose. “We would have tea at 3:30, and she would bake a yummy dessert to go with it,” recalled Schwab. “I would try to move it to 2:30 p.m., but she wasn’t having it — tea always happened at 3:30 p.m.” Born into an affluent area of Belfast, Ireland, Wysocki met her late husband, Bill Wysocki, when he visited Ireland in the late 1940s. In 1957, Wysocki got married and moved to the United States, working as a secretary at the American Enterprise Institute for Public Policy Research in Washington, DC.

“Her typing skills, learned at Belfast College of Technology, stood her in good stead, and they were second to none,” recalled her niece, Catherine Hammond. “Her letters were full of news about her life in America, her garden, her exercise regime and recipes (all typed), and maybe a newspaper cutting or two about the weather.” During her time in the country’s capital, Wysocki met and shook hands with President Ford, who she described as “a very nice man, much nicer than his predecessor.” In 1992, Wysocki and her husband retired to Cary. “They chose Cary because it was quiet and not as hectic as DC,” said Schwab.

“She used to enjoy going to the Cary Library every week on Academy Street, and she liked Cary’s proximity to Raleigh so she could enjoy the symphony and other special events. Another area she took advantage of was travel; she used RDU to travel to Ireland every other year up until 10 years ago. Cary — enjoying the diversity of restaurants, tending her garden, and spreading her money around to seven different banks around town! She continued to live on her own until 2014. After a stint at Jordan Oaks, she made the final move to Woodland Terrace in 2022. It’s only a select few who live to the ripe old age of 100, so when this petite Irish woman in our community hit this milestone, we had to know more.

What are you most proud of?

“The thing that she’s most proud of is the fact that she has had a long, calm, and pleasant life with no major crisis,” said Schwab. “She feels fortunate to have made it this far in good health.” Congratulations, Dorothy! May your 100th year be as extraordinary as you are. t

Does longevity run in the family?

According to her family in Ireland, it doesn’t seem to. Her mother and father both passed away young, but her sister, Eileen, passed in 2020 at the age of 92. What’s the secret to long life?

Wysocki has one word for all of us youngsters: moderation. According to Schwab, Wysocki says she didn’t take risks, didn’t go to extremes, and has no regrets (in other words, Dorothy doesn’t condone your plans to skydive or swim with sharks). PRACTICE MINDFULNESS: Mindfulness is being fully present in the moment and paying attention to your thoughts and feelings without judgment. I know it may sound silly, but being truly aware of your thoughts is key. Engaging in mindfulness meditation or simply taking a few moments each day to focus on your breath can help calm your mind and reduce stress and anxiety. Many experts suggest counting backward in a moment of stress. 5...4…3…2…1…repeat. It takes your mind off the current situation and helps you step out of the stress spiral. WORK WITH YOUR BREATH: Deep breathing exercises can calm the nervous system and reduce stress. Incorporate simple breathing techniques, like diaphragmatic breathing or box breathing, to promote relaxation and mental clarity. I used to think this was weird, but it works in a moment of difficulty. UNPLUG FROM TECHNOLOGY: This is hard! All of us are addicted to our phones, but the constant exposure to screens and digital devices overwhelms our minds. Hence the reason it takes forever to fall asleep because we’re scrolling TikTok. time to unplug, whether it’s setting aside an hour each day for phone-free time or doing a full digital detox over the weekend. Again, breaking the tech addiction is HARD, but eventually you will get used to it. Many of us reach for our phones first thing in the morning. Try to get in the routine of enjoying your coffee in silence, journaling, or using this time to pray or meditate. This helps set the intention for your day!

PRIORITIZE SLEEP: Quality sleep is crucial for mental clarity and overall well-being. Give your brain a boost by establishing a healthy sleep routine, ensuring you get the recommended 7-9 hours of sleep each night. Does that much shut-eye seem like a distant dream? Move healthy sleep habits to the top of your todo list and see how much better you feel. When I improved my sleep habits, everything changed. I lost weight, I wasn’t as irritable, and my skin got better. I didn’t real-

ize the wear and tear on my body from only sleeping a few hours a night for many years. GET ACTIVE: Engaging in regular physical activity releases endorphins, which are natural mood lifters. OBSERVE GRATITUDE: Reflecting on the things you are grateful for can shift your mindset from a state of lack to abundance. I’m a firm believer in expressing gratitude and putting out positivity because it comes back to you. And yes, life is hard and filled with struggles of all types — but it’s also full of things to be grateful for. Start a gratitude journal and write down three things you are grateful for each day. Small things matter! This simple practice can help train your mind to focus on the positive aspects of your life. It works! CONNECT WITH NATURE: Spending time in nature has been shown to have a calming effect on the mind. Whether it’s a hike in the mountains, a day at the beach, or simply sitting in a park, make time to connect with the natural world. It provides a sense of peace and tranquility. A change of scenery is big for me. Sometimes I’ll book a night at the Grandover Resort in Greensboro or a day trip to Wilmington to just sit by the ocean waves. It’s calming! We like to throw a dart and randomly select a new zip code and try a new restaurant or activity. SEEK NEW LEARNING OPPORTUNITIES: Engaging in lifelong learning and exploring new interests can stimulate the mind and ignite a sense of curiosity and passion. Whether it’s learning a new language, taking up a creative hobby, or enrolling in a course, new learning opportunities can inspire personal growth. LEAN ON PROFESSIONALS: If you find yourself struggling to reset your mind on your own, don’t hesitate to seek professional support. A therapist or counselor can provide invaluable guidance and support as you

work to reframe your mindset. There are also wonderful life coaches like my girlfriend Laura Reichert, founder of Triangle Life Coaching Academy. She worked with me for years to recognize things I kept getting stuck on. CLEAR THE CLUTTER: A cluttered environment can contribute to feelings of overwhelm and unease. Take the time to organize your belongings and streamline your living and work spaces. Make sure everything has a place. That way when the kids throw their shoes and backpacks down in the middle of the kitchen floor, you can remind them, there’s a place for that. My husband is rolling his eyes reading this because I have a long way to go to clear out the closets in our house. It’s OK to be a work in progress! PRACTICE SELF-COMPASSION: Be kind to yourself as you work to reset your mind. Self-compassion involves treating yourself with the same kindness and understanding that you would offer to a friend. Practice self-care, self-acceptance, and self-forgiveness. I often would speak negatively in a joking manner about myself. I still do on occasion because it’s my personality, but I’ve cut back a lot because my subconscious absorbs that negativity. Remind yourself: You are amazing! SET INTENTIONS AND GOALS: Having a sense of purpose and direction can help provide motivation and clarity. Start by reflecting on what you hope to achieve and how you want to grow personally and professionally in the coming year. Make a vision board! Put your goals on paper and think about them as if they’ve already happened. BUILD POSITIVE RELATIONSHIPS: Supportive relationships are crucial for mental well-being. Take the time to nurture healthy connections with friends, family, or others in your support network. And know it is OK to chop those who are sucking the life

out of you. Sometimes you must take a pause from people so you can be your best self. Luiza Barteldes Farinha, owner of Pilates by Luiza in Cary, has a different story than most. “I am originally from Brazil,” said Farinha. “I moved to NYC in 2003 to pursue a dance career. At that time, I knew nothing about Pilates, but I thought I should work on something that was related to the body. I knew this lady from ballet class who was a Pilates instructor. Her name was Pam Pardi. I asked her about the process to get certified. Little did I know, she was a very respected and experienced instructor who worked under Romana Kryzanowska, Joseph Pilates’ only protégée.” In 2009, Farinha was accepted to the certification program at True Pilates New York — Joseph Pilates’ original studio, complete with some of the original equipment that he had built.

“I thought, ‘Wow, this is the real deal,’” said Farinha, who graduated after over 600 hours of practice and observation. Since gaining her certification, Farinha has worked with athletes from the Chicago Bears and Cleveland Cavaliers, Olympic contenders, horseback riders, and professional dancers and gymnasts. Today, Farinha teaches one-on-one Pilates classes in her private, home-based studio in Cary — fully equipped with an original Pilates Designs by Basil Reformer, Cadillac, Wunda chair, spine corrector, and much more. We recently spoke at length with Farinha to get to the core of her business and what “authentic Pilates” is all about. When did Pilates by Luiza first open, and what did you do prior to its opening?

After teaching in NYC, I moved to Chicago and later opened my own studio, The Pilates Loft of Chicago. Two years after having our son in 2017, my husband and I decided to move to a quieter and warmer place, and NC seemed ideal. We love this mild weather, green forest areas, and so many outdoor activities. I also wanted to downsize a bit and work from home. We packed our belongings in a truck and moved blindly to Cary after the summer of 2019, without ever stepping foot here! After a lot of looking, we found a beautiful house with a big yard surrounded by trees and the perfect layout for a cozy little Pilates studio. How did you fall in love with Pilates?

It’s unique how I found Pilates. I wanted a job in fitness, and I happened to know Pam, so I dove into the full certification program without ever taking a Pilates class before! Within a few months of training, I

started feeling the amazing results from it and began to love it! It was almost like an arranged marriage where you grow to love each other! I was still dancing, and I noticed how I could turn more easily and jump higher. I even started to get more dance gigs! I just wish I had found Pilates much earlier! I firmly believe that Pilates can help improve everything you do. After retiring from ballet, I found running. I have run several marathons and ultramarathons. I qualified for 2024’s Boston Marathon. 1. Proper warmup is key in order to increase core body temperature and get blood flow to the working muscles. By gradually preparing your body to work, you will in turn decrease your risk of injury. The warmup is also a great time to work on dynamic flexibility and mobility (stretches with movement with the intent of increasing range of motion). 2. Focus on proper technique to maximize working the intended muscle groups and decrease risk of injury. 3. Make sure you’re always keeping progression in mind. The goal is to get stronger, so if an exercise begins to get easier, increase the load. 4. Slow and controlled is the best way to keep the muscles under tension, which results in maximum adaptations and gains. 5. Focus on the muscle groups you are intending to train. The body is smart and will constantly try to compensate, especially when working weaker muscles. The strong muscles try to take over and do the work. Being mindful creates a mind-body connection and helps stimulate the targeted muscles.

THE REYNOLDS FAMILY IS THE POT OF GOLD WAITING AT THE END OF THE RAINBOW FOR FAMILIES WHO ARE ENDURING PEDIATRIC CANCER.

BE THE RAINBOW FOUNDATION WHEN YOU MEET Charlotte Reynolds, you are greeted with a delightful blend of sweetness and enthusiasm, with just a hint of spunk. One would never know that this craft loving 10-year-old is a TWO-TIME stage IV neuroblastoma pediatric cancer survivor! In 2016, the Reynolds family received the news no parent ever wants to hear: Your child has cancer. Incredible organizations, families, and friends embraced the family with compassion, providing hope when they needed it most. Throughout Charlotte’s treatment, the Reynoldses observed that other patients’ families often had unmet needs. They dreamed that one day they could provide others with

things they were blessed to have, from basics like caregiver meals, bill assistance, and childcare, to wagons, air mattresses (in lieu of sleeping in a hospital chair), or funds toward an Uber for treatment-related travel. As they navigated through the difficult experience with Charlotte, they focused on their goal: One day, Charlotte would recover completely, and the family could be a rainbow in another family’s darkest time. After a year and a half of treatment plus a year of clinical trial, Charlotte kicked cancer to the curb. Family, friends, nurses, and doctors cheered her down the hallways of Duke Hospital when she celebrated her big win. Just nine months later, a routine scan led to the tragic news that Charlotte had

relapsed only weeks before she started kindergarten. The family’s focus shifted back to Charlotte’s treatment, although giving others hope was still on their minds. Once again, Charlotte took cancer by storm and showed she is not to be reckoned with! She finished treatment in 2021, and her scans have been clear since. “After Charlotte conquered cancer a second time, we knew the time was right to start the nonprofit. After much thought on what to call it, we decided upon Be The Rainbow. Rainbows kept resounding in my mind primarily because rainbows were a huge sign of hope and love, and comfort to our family throughout all the treatment. We would get rainbows at the most miraculous moments

where we felt the presence of God; we would get rainbows sent to us from friends and family from all over when we needed them. And then it came to us: Be The Rainbow Foundation was formed,” said Jennifer Reynolds, Charlotte’s mother. Be The Rainbow set out to aid those in need in 2022 and has been spreading love and hope ever since. Their vision changes based on the needs of the families they work with, but the overarching mission is to refocus partnerships with families and support organizations to individualize support, filling in gaps of assistance during treatment, recovery, and beyond. “From the start of operation in 2022, every assistance we have given has felt like a gigantic achievement — whether it’s collaborating with hospital social services, family support organizations, and directly with many families to help provide financial assistance, specialty gifts, and hope. It brings so much meaning to the hardships they’ve gone through, and we get to do something special for another family.” Charlotte, now in fourth grade, is thriving — enjoying time with friends and trying out new activities like ninja courses. She is still being monitored by scans and will then transition to annual checkups for survivorship care to monitor any potential long-term side effects from her treatment. ON ANY GIVEN AFTERNOON at Maximillians Grill & Wine Bar in Cary, proprietors Will and Margie Hennessee can be found prepping for the evening dinner service. It’s something they’ve done for many years, but especially since 2016 when they bought the restaurant from original owners Michael and Gayle Schiffer. “I handle the front of the house, and Margie runs the kitchen,” explained Will, an unpretentious man who stands at ease behind the bar. He appears entirely comfortable with the total stranger he met a mere three minutes earlier. Just then, Margie, a self-taught chef, emerges from the kitchen with several plates of food she whipped up seemingly in less time than it takes to get a cup of coffee at Starbucks. It doesn’t take long to figure out that this husband-and-wife team has a good thing going. In an age when numerous longtime restaurants have shuttered, somehow Maximillians continues to serve local diners just as exceptionally as the day it began. No doubt the Hennessees have been instrumental in

contributing toward its longevity, and in recent years they’ve successfully put their own stamp on the business. “We have a longstanding reputation of offering really good food and great service,” said Will, a Kentucky native who has worked on and off at Maximillians since its genesis. The same goes for Margie, who previously served a stint as the restaurant’s bar manager. “We’ve worked really hard to maintain consistency,” she said. Among the eatery’s most steadfast patrons is Greg Cox, retired food critic for The News & Observer. “I’ve been a fan of Maximillians since 1991, when the restaurant first opened its doors in a tiny former fast-food joint on Buck Jones Road,” wrote Cox when we reached out to him by email. “The Hennessees pledged to preserve Maximillians’ original spirit, and they’ve remained true to that promise. After three decades, a relocation, and a change in ownership, one thing remains the same: I’m still a big fan. And I can count on one hand the number of restaurants I can say that about.”

Consider the grilled Caesar salad, which features shaved parmesan cheese, roasted garlic Caesar dressing, and colossal croutons fashioned from day-old house-made focaccia. “The grilled Caesar and the Voodoo tuna are signature items that have been on the menu since the restaurant opened,” Margie said. Another solid main dish, the confit duck leg quarter, arrives tableside with ovenroasted potatoes, caramelized onions, carrot dill puree, and goat cheese.

Do you want Mediterranean style? Thai? Gluten free? There really is something for everyone.” Among the tempting dessert options, we highly recommend the coconut cake, the perfectly tart key lime pie, and the flourless chocolate torte made with just three ingredients: Belgian chocolate, eggs, and butter. If none of the previous possibilities entice you, try the decadent peanut butter pie topped with drizzled chocolate. Just be prepared to experience gustatory bliss. Décor at Maximillians is tranquil and understated. Will’s mother’s striking antique china dishes hang on one of the sage-hued walls. Four-top tables fill the cozy main dining room, while a mezzanine area provides seating for approximately 20 guests. “The upstairs space is perfect for special occasions like family celebrations, business gatherings, and wine dinners,” Will said. When asked how Maximillians has managed to remain relevant in the Cary dining scene, Margie said she and Will have developed close relationships with their longtime customers.

“Many of our original regulars are now retiring, and now we’re seeing their adult kids coming in for dinner,” she said. “I also love that downtown Cary has become a destination spot for dining, and that has helped us see more walk-in traffic.” It’s also worth mentioning that Maximillians recently received its 11th consecutive 100% sanitation score from the Wake County Health Department. “We want our guests to feel like they are coming to our house for dinner, and part of that involves keeping the house clean,” Margie said. Make no mistake: The Hennessees are enduringly grateful for the opportunity to serve people in the town of Cary for so many years. “We’re fortunate to get to come to work and do what we love every day,” Margie said. “The people of Cary have treated us so well since the beginning, and we wouldn’t want to be doing anything else. Their Ube Colada is a tropical retreat for the taste buds that has me daydreaming of palm trees, warm weather, and sunshine! Think vanilla and coconut flavors with fruity hints and traces of nuttiness. This Pina Colada with a twist is a perfect complement to SAAP’s spicy and curry dishes. Bar Manager Jon Licud favors pairing it with their Seafood Green Curry and Lao Spicy Duck Larb. SAAP’s beverage offerings heavily feature Southeast Asian elements, leaning into ingredients like lychee, pandan, ube, ginger, lemongrass, and jasmine tea. “Pina Coladas are a delicacy in Luang Prabang, Laos. I wanted to touch on this recipe and add my own twist by incorporating ube, which is purple yam. Ube originated in Philippines and is now used in many pastries and desserts. THE IMPATIENT FLOWERS OF A SAUCER MAGNOLIA 124 JANAURY/FEBRUARY 2024

A SOUTHERN MAGNOLIA (Magnolia grandiflora) in full bloom on a hot, sultry summer day is quite a pleasant sight to see. But why wait until it gets steamy and sticky to see such a pretty display? There is a maverick band of magnolias that can’t even wait for the chilly air of a waning winter to exit the garden before they start flaunting their flowers. Heck, many can’t even wait for their foliage to form before they begin bursting with blooms! These impatient showoffs are collectively known as deciduous magnolias. Unlike the iconic evergreen southern magnolia, they drop their leaves in the fall, but come bouncing back visually in the late winter to early spring with their blooms leading the way. One popular form of these raring-to-go pretties is the saucer magnolia (Magnolia x soulangiana), which has large early bird flowers that commonly glow in the familiar magnolia white hue — though various cultivars can be found tinged in pink, light purple, or, with a little help from similar deciduous magnolia species, even yellow. A saucer magnolia will usually stretch up to 20 feet high and about as wide. For a slightly smaller profile, try a selection from the star magnolia (Magnolia stellata) clan, which typically reach about 15 feet high and wide. As advertised, light-colored, strap-like, centrally radiating petals put on a pleasant, star-like show from bare branches yet to be adorned with mid-green leaves. Deciduous magnolias should be planted in rich, well-draining soil. Once established, they can stand moderate bouts of drought, but renewing mulch around their bases yearly makes for happier trees. These special magnolias perform well in full sunlight, but, if possible, don’t site them in a protected chilly-weather setting such as

Don’t like writing? Set up an image diary instead. • Have any large garden pots that you just didn’t feel like muscling inside for the winter? Leave the big boys outdoors, but turn them over to prevent water from collecting inside and freezing, which could crack your planting crockery.

FEBRUARY • Apply 1 pound of nitrogen fertilizer for every 1,000 square feet of fescue lawn to wake up your living carpet. Also, if bothersome winter weeds such as wild garlic, henbit, wild onion, or chickweed have been trying to get a grip in your grass, crash their party with a broadleaf herbicide. • Green thumb itching to get growing in the veggie patch? Turnips, arugula, cabbage, broccoli, spinach, carrots, kale, radishes, leek, lettuce, onions, and Irish potatoes can all go in the garden by the middle of this month.

While the Christmas baubles and bangles have been put away for another year, indoor plants that also helped brighten up the Yuletide season probably remain. If kept healthy, these leftover pretties can be useful for brightening up blah winter days indoors. So, for plants such as poinsettia, amaryllis, Christmas cactus and Jerusalem cherry, only water when the upper half-inch of soil in the pots is dry. In addition, these plants will show off longer if placed in areas of strong, indirect sunlight. Jerusalem cherry is the exception because it will do better in a window that receives at least a few hours of sun each day.

close to the southern side of a house where the low winter sun can create a cozy environment during the coldest months. The reason for this odd avoidance is because deciduous magnolias in such a comfy microclimate might be nudged to bloom much sooner than they should, leaving the opening flowers exposed to possible damage from hard frosts or prolonged freezes that are typical in midwinter. Deciduous magnolias aren’t as common in area landscapes as southern magnolias, but, at this time of year, they should still be easy finds at local nurseries. The event raised $1.4 million, including a $500,000 match from Bristol Myers Squibb, for cancer research funded by the V Foundation.
