hether you have recently relocated to the region or are a longtime resident, welcome to Western Wake! Having moved within the past year myself, I know all too well how much our area has to offer. My relocation to Apex — from townhouse life in Morrisville — has allowed me to own a rural house that truly feels like home.

And that’s the beauty of Western Wake: You can live a quieter, small-town life but remain close enough to the alluring hustle and bustle of the city.

So, much like the area itself, in these pages we hope to bring you the wideranging best of Western Wake.

“Our celebration was based on the concept of building understanding, creating unity, and challenging our

community to go all in with Apex,” says Kerrin Cox, communications coordinator with the Town of Apex.

During the year, 170 volunteers worked to plan events and activities to showcase the town.

An interactive booklet, oral history project featuring videos of residents describing their love of Apex, and series of banners to describe different historical aspects were created — and continue to be displayed.

Today, Apex is home to more than 75,000 people and growing. Yet the town continues to build on the small-town values from when it was first chartered.

The Subtle Technology of the Downtown Cary Park

The well-earned hysteria surrounding the opening of the Downtown Cary Park — which cut its ribbon in November 2023 — has begun to die down. Many Cary residents are only just beginning to appreciate this amazing gift in the middle of our town. The 7-acre park offers delightful perks including a dog park, shops and a bar, the pavilion and fountain, and a multitude of games and activities. Oh, and you might notice a little playground.

More than 20 years in the making, the Downtown Cary Park is a marvel of sustainable development, a haven for public art, and a hub for community events. What you may overlook on your visits is the incredible and cutting-edge technology that keeps the park clean, safe, and comfortable.

The park uses a central hub for data collection from a range of devices across

the area. These devices collect information on everything from park temperatures to the amount of paper towels in the restrooms. Door opens, trash and recycling quantities, air quality, and weather data are all collected and used to manage the park experience. These insights also help inform efficiency and cost-saving measures available to the town.

One of the key tools in place is the eight temperature sensors that delineate zones throughout the park. These zones represent distinct microclimates across the park created by the elevation, amount of tree coverage, nearby water features, and the position of buildings, among other factors. The temperature sensors provide insights into how the various parts of the park feel at different times of day, in all seasons, and in various weather conditions, which can be used to make future decisions about the evolution of the park’s features. Additional weather data collected from a nearby roof can also inform critical weather for park alerts. Eventually, the hope is to use this data for dynamic smart solutions, such as turning off the splash pad when lightning is detected nearby.

In deploying all these tools, the Downtown Cary Park stands as a testbed for functionality and services that may benefit other parts of the town. One example is the sensors that have been added to trees in the park to monitor their movement. These sensors collect data over time and can provide early insights if a tree is leaning dangerously or at risk of falling in a storm. They might later be used in additional local parks, or even for building safety and other applications within different departments of the Town of Cary.

Other technology features are more noticeable, such as the four large information kiosks spread throughout the park. These giant displays provide maps and other information, previews for upcoming events, and can be used to display

Despite the widespread automation, the Downtown Cary Park is still run by a dedicated team, directed by General Manager Joy Ennis. Park ambassadors wander the grounds throughout the day, providing human insights and checking on things like the temperature of the shiny, reflective playground slides. For this, ambassadors use a heat gun — comparatively old-fashioned tech — to determine if the slides need to be closed during high temperatures.

For Ennis and the other town employees who have brought this park to life, the project generates enormous pride, but in many ways, it’s just getting started. The tech embedded throughout the park provides insights and value for the town but also contributes to its continued evolution and success. As a cutting-edge example of what data can do for a park, the Downtown Cary Park will serve as an example not only for the Triangle but nationally as well, demonstrating the future of urban and economic development. t

E-Bike Adventures

EMBARKING on a Triangle Adventures e-bike tour makes uncovering hidden gems and local charm an absolute breeze.

Owners David and Marlo Harrington kick-started the new business — which opened in the spring of 2024 — to “highlight some of the lesser-known hotspots” in town and “share our passion of biking, nature, local history, local food, and local drinks with everyone.”

The duo “had very different backgrounds,” according to David — him from New York, her from Southern California — but soon found common ground. “We met in Raleigh through a mutual friend and bonded through a passion for biking and hiking out in nature.”

They now share that passion with the local community through a range of guided e-bike tours departing from Deep River Brewing in Clayton and other areas of the Triangle. What is an e-bike , you

ask? I strapped on a helmet to give you the scoop.

Options Abound

Having never ridden an e-bike before, I wasn’t sure what to expect. I was pleasantly surprised at the flexibility they offer in choosing your own exertion level.

“We have state-of-the-art e-bikes, and they make it easy. You don’t even have to pedal if you choose not to,” David says. “These bikes have a throttle, like an electric moped, so you can choose to pedal and get some exercise, or you can let the battery do all the work. It makes it effortless for anyone at any fitness level. Sit back and enjoy the ride!”

I loved turbo mode — the highest level of pedal assist — which allowed me to enjoy the views without breaking a sweat.

As for the tour selection, I had a tough time choosing between Burgers, Brews,

and History Too; Tacos, Taps, and Local Facts; and the Scenery Tour. Their newest tour, Ghosts, Mystery, and Raleigh History, debuted in late June. It begins and ends at the NC Museum of Art and takes riders through Dorothea Dix Park, the NC State Campus, and beyond — learning mysterious and creepy facts along the way.

Ultimately, my love for tacos and margaritas guided my choice: Tacos, Taps, and Local Facts. I met David and Marlo, who served as my fearless guides, in Clayton and set off on a journey filled with stunning views and delicious Mexican cuisine, all while sharpening my street smarts.

Hitting the Trail

by the soothing sounds of chirping birds and the invigorating scent of fresh air. The expedition left me feeling one with nature and piqued my interest in local history.

David and Marlo are walking (and pedaling) encyclopedias of historical knowledge, providing fascinating tidbits throughout the approximately 13-mile tour.

For example, we learned that North Carolina became a dry state years before the Prohibition era started in 1920, making it the state with the longest absence from alcohol. But fear not! After your enlightening journey, you’ll receive a ticket to enjoy a refreshing beer at Deep River. Cheers to history and hops!

“Clayton has some fascinating history, and few people know about it,” David says. “Some key moments of the Civil War happened right here in our backyard, among

many other things, and we thought it would be fun to throw some fun facts in with the food and drinks.”

In addition to historical facts, the tour highlights signs of growth and development, hinting at Clayton’s exciting future.

“Although Clayton is growing, it often gets overshadowed by Raleigh, and people overlook it,” David says. “Clayton has a lot of new elements to it, but you can feel it is a bit of an ‘old soul,’ and we love that — gives it a unique charm that you can only appreciate by visiting and immersing yourself in the local hot spots.”

Taco Time

Halfway through our ride, it was time to refuel with a stop at El Patron 323. Manager Simon Sanchez served up a fun atmosphere and excellent service!

“We include a margarita and a big fat taco of their choice,” David explains. “Substitutions can always be made if needed (especially for vegetarians and nondrinkers).” Want more? You’re welcome to purchase additonal food and beverages during your stop.

I opted for a delicious tinga taco. Paired with a refreshing margarita, it provided the perfect combination that energized me for the rest of the journey.

Incorporating food and drink stops into the tours came naturally to the Harringtons. They have an impeccable knack for selecting delicious and fun spots, and of course they know all the best restaurants in town like the backs of their hands!

“To be honest, we love burgers and tacos, so we wanted to do something we love,” David says. “We knew of some really great

restaurants we wanted to highlight and partner with, so we began building the tours around those partnerships.”

As Johnston County’s oldest legal brewery. Deep River Brewing “was a natural stop as well,” according to David. “They have been an amazing partner, and we can’t thank them enough for their support.”

Craving an art experience with a side of rule-breaking? Then the splatter rooms at Mad Splatter studio in Apex are calling your name.

“More often than not, the people are splattering the walls; they’re painting the trash can; they’re painting each other; they’re painting our doors; they’re tagging everything. It’s just all around a fun experience,” says Kayleigh Daniels, manager at Mad Splatter.

“Everybody goes in with a canvas. … Then you pick out the music you want to listen to, and you just jam out while you splatter your canvases,” Daniels continues.

Apply paint with squeeze bottles, spray guns, and by flicking paint brushes — the staff at Mad Splatter will explain the details and techniques before your session begins. Splatter rooms must be reserved in advance. The experience is recommended for ages 3 and up, but the sweet spot may be tweens and teens who are ready to get messy and make memories.

“Adults go in wearing these giant white marshmallow suits and goggles. Kids go in these super cute ponchos and shoe covers and goggles,” says Daniels.

Owner Meredith Harrington, along with her husband Cody, came up with the idea of the splatter rooms to add to Mad Splatter’s other art opportunities: canvas and pottery painting.

“Most people are surprised by how fun it is. You have a memory and a canvas to take home. And you get totally messy,” Harrington says.

Canvas and pottery painting — for the less messy days — are available without an appointment and are mostly self guided. Flour Power Cooking Studios

You might expect knife skills or dough handling to be the most important skills learned at a cooking class, but Morgan Lehman, manager and instructor at Flour Power Holly Springs, says it’s independence.

“Participants do (the tasks) on their own, and they’re proud of themselves when they’re done,” Lehman says. “That’s fun to watch, because we see little lights come on and they’re like, ‘I did that, and I loved it.’”

From-scratch personal pizzas, teriyaki chicken, and even Moroccan potato salad are all recipes included in programs that Flour Power offers to young children and teens.

“We try to be as hands on as we can be, because we want (the kids) to be the creators. We have found that when they create, even if it’s different, they’re more willing to try the food because they made it,” Lehman says.

Weeklong camps and evening or weekend classes give young chefs practical experience and food knowledge.

Daniel Dhers Action Sports Complex

Wheels of all kinds — bikes, scooters, skateboards, and skates — are welcome at the Daniel Dhers Action Sports Complex, as are all ability levels.

The facility, opened by international BMX star Daniel Dhers and Abel Zalcberg, was created to appeal to young riders through professional-level athletes.

Riders can begin on the low ramps and work up to more challenging obstacles. There’s even a ramp leading into a foam pit for practicing tricks with a soft landing.

Explore indoor and outdoor sections; the entire complex totals 37,000 square feet. All riders must wear helmets; knee pads and elbow pads are required for riders under 18.

If there’s a more approachable head chef than Greene, we’d sure like to meet them. Spend just five minutes with the guy, and you’ll be enriched by his refreshing humility and authenticity. A consummate Southern gentleman, his laid-back demeanor resembles actor Matthew McConaughey.

Greene has come a long way since his younger years when he was raised by a single mother in the small town of Ninety Six, South Carolina. He vividly

recalls making $6.25 an hour at his first job, struggling to make ends meet and even getting evicted from a roachinfested apartment. But through years of perseverance and hard work, he ultimately honed his skills at a resort and inn in the Palmetto State, then opened a namesake restaurant called Devereaux’s.

After moving to North Carolina, Greene’s tenure at Herons began in 2009 as chef de cuisine. Under the tutelage of acclaimed chef Scott Crawford, he helped guide the restaurant

to its first Forbes Five-Star rating. A brief stint as executive chef at Ăn New World Cuisine in Cary led to him returning to Herons in 2014 to helm the kitchen.

“I learned early on the importance of a strong worth ethic, and I don’t take anything for granted,” Greene says, adding that he also is blessed to have a loving wife and a charming young son.

When it comes to the plaudits he’s received in recent years, Greene quickly redirects.

“It’s really not about me,” the chef says modestly. “My 4-foot-11-inch Southern belle grandmother used to tell me to stay humble and never forget where I came from. I always try to remember that.”

Greene also is quick to credit his capable team, especially his right-hand man, Chef de Cuisine Spencer Thomson, who has worked closely with him for more than 25 years.

“Spencer and I worked together in South Carolina, so he’s a loyal friend who has helped me so much along the way,” he

says. “He sources the ingredients and works closely with the farmers. He’s so talented that he could be the chef at any fine-dining restaurant, so we’re extremely fortunate to have him here at Herons.”

Nowadays Greene and a cadre of talented team members provide upscale dining in serene environs with impeccable service. Menus change with the seasons, but one thing remains constant: The cuisine consistently exceeds diners’ expectations.

“People don’t just come here for particular dishes,” Greene says. “They come here for an experience. They trust us to provide something special and memorable.”

Greene’s personal mantra entails creating memories.

One way he brings forth long-lasting

recollections at Herons is The Art Tour, a multicourse tasting menu that showcases The Umstead’s nearby sustainable culinary farm and draws from art and nature themes found around the property.

“The menu is based on curated pieces of art seen throughout the hotel,” Greene says. “I gain inspiration from the art and transform that onto the plate. Whenever a dish is served, it’s accompanied by a small easel along with a print. The server then explains what inspired me to create each dish.”

Also popular among guests is a fourcourse dinner that features well-balanced dishes that are visually stunning and pleasing to the palate. Be advised: Menu offerings rotate seasonally, so some of the items mentioned and photographed in this article may no longer be available. But no matter what you order, you won’t be disappointed.

Many of the food selections feature finishing touches like freshly harvested microgreens and blossoming herbs that come from One Oak Farm, Umstead’s nearby sustainable acreage with three full-time growers.

“Having the farm so close by also allows us to access fresh fruit like strawberries and plums and pawpaws to vegetables like beets, kohlrabi, and John Haulk corn, an heirloom variety we grind in-house to make our grits,” Greene shares.

and crispy sweet potato noodle and a signature poached oyster dish served on a floating glass plate.

“Our relationship with Ryan Bethea at Oysters Carolina on Harkers Island has been a game-changer for us,” Greene reveals. “He harvests oysters at 9:30 in the morning and then delivers them to us the same day three or four times a week.”

Second-course offerings include a 62-degree egg with grits, shrimp, mushroom, and Iberico ham and a seared diver scallop with cured radish, white and red seaweed, and poached wheatberries.

Exquisite entrées range from bluefin tuna and truffle-enrobed halibut to pistachio-tinged duck, lamb with curry, and Japanese wagyu beef. Attention to detail is paramount, as each main course reveals the culinary team’s passion, precision, and creativity. And this probably goes without saying, but the stunning food photos you see throughout this profile far exceed what mere words can express here.

To further enhance the dining experience, you can complement your meal with the perfect match from Herons’ extensive wine library. The studious collection contains the classic varietals and appellations you would expect along with some nouveau eclectic gems that will delight the novice, enthusiast, and connoisseur alike. If you appreciate a little direction, consider the set pairings or just ask the adept staff for assistance.

“We have about 1,300 selections of wine and more than 5,000 bottles in our wine cellar,” says Hannah Barton, wine director and dinner manager at Herons. “We’re here to guide our guests to the perfect choice.”

Top off the evening meal with a nextlevel dessert. Consider the orange blossom honey panna cotta showcasing kataifi (shredded phyllo dough) that’s fashioned into a nest and then finished with frozen

yogurt rocks made with liquid nitrogen. Prefer chocolate instead? Choose the bliss-inducing concoction with a 64% dark chocolate ganache base and a cocoa veil prepared with a cocoa nib stock. This item comprises multiple raspberry components, including a sorbet, purée, and fresh golden raspberries from One Oak Farm.

Herons also serves breakfast and lunch on weekdays plus a superb weekend brunch. Service at the restaurant is refined but not stuffy. Knowledgeable, friendly waitstaff are keen to make recommendations and

IT DIDN’T TAKE LONG FOR LOCALS TO wholeheartedly embrace SAAP, Chef Lon Bounsanga’s bustling new Laotian restaurant in downtown Cary. Perhaps to no one’s surprise, the readers of our sister publication, Cary Magazine, voted it Best New Restaurant in Western Wake for 2024.

“We’re so grateful and honored to be selected to receive this award,” said Bounsanga recently during an afternoon conversation at SAAP, which means “delicious” or “yummy” in Laotian.

Located on the ground floor of The Walker upscale apartment community near the Downtown Cary Park, the 70-seat eatery has quickly become a sought-out dining destination. Bounsanga, a native of Laos and the erstwhile executive chef at Raleigh’s popular Bida Manda and Brewery Bhavana, opened SAAP in November 2023.

For his latest venture, Bounsanga encouraged immediate family members to join him — from his wife and co-owner Annmarie Bounsanga to the couple’s four adult daughters, several of whom work as servers while one helps bartend and another handles general manager duties.

“The reason my family is here is because they want to be here,” the chef-owner says. “We are all family oriented, and we love being together.”

Annmarie agrees but adds that her husband isn’t the only family member with extensive experience in professional food service.

“All the girls grew up in the restaurant industry, so it comes second nature to them,” she says. “I work in the medical field, so this is new to me.”

Inside SAAP, a modern 2,600-square-foot space features sagecolored walls, natural wooden tables, stylish light fixtures, and copious windows that span from floor to ceiling.

Chef Bounsanga indicates that Laotian cuisine is influenced by Chinese, Indian, Vietnamese, and Thai cultures.

“It’s all about using fresh ingredients and spices,” he explains. “Laotian food is very savory, and we’re serving a lot of street food like I grew up eating.”

Elements like fish sauce, Thai chilis, and galanga — a root similar to ginger — are primary components in many of the eatery’s dishes.

While SAAP sources its provisions from various Asian markets, the restaurant also will receive some donated produce from sustainability-minded Burkett Farm in Cary and will in turn give back to a local charity.

The menu at SAAP features an equally tempting assortment of small and large plates. Chef Bounsanga suggests ordering a variety of dishes to share with others at the table.

Popular lunchtime options include Green Papaya Salad with charred pork chop or the Crying Tiger version involving grilled beef steak. SAAP’s Banh Mi sandwich comes piled with pickled daikon

and carrot, pate, cilantro, cucumbers, jalapenos, and either lemongrass chicken, grilled pork belly, or tofu.

When it comes to small plates, order the irresistible Ginger Chicken Satay served with sweet peanut chili sauce or the perfectly chargrilled BBQ Pork Skewers. Or, for a decidedly different umami experience, try the lemongrass-infused Lao Herb Sausage accompanied with an earthy Jeow Bong chili paste sauce and staple side item sticky rice.

Best-selling large plate selection Pad Lao features caramelized fried noodles brimming with shallots, bean sprouts, peanuts, cilantro, egg crepe, garlic, and soy sauce. Protein options for the dish include pork belly, tofu, chicken, and plump tiger shrimp.

Don’t ignore the onion-tinged Basil and Garlic Stir Fry with sweet Thai basil sauce and diner’s choice of shrimp, pork loin, tofu, or crispy chicken breast.

“This dish is my absolute favorite,” Philadelphia native Annmarie reveals.

The superb Green Curry Seafood entrée encompasses purple eggplant, sweet bell peppers, basil, and coconut along with scallops, shrimp, and mussels sourced from Locals Seafood.

When asked if off-menu specials are available, the chef quips, “Right now every dish is special, as we’re still trying to introduce our guests to Laotian cuisine.”

Save room for dessert. Choose between a decadent dark chocolate mousse, matcha cream puffs, or a coffee cream caramel concoction.

We highly recommend the distinctive baked kabocha squash with ginger- and coconut-imbued custard.

“This dessert is like an Asian version of pumpkin pie,” Chef Bounsanga says with a winsome smile. “Every part of it is edible, even the skin of the kabocha squash.”

Consider pairing your meal with a Southeast Asian-inspired specialty cocktail like the rum-based Ube Colada, the Mekong River Rush with habanero-pervaded mezcal, or The Mantra with vodka, lychee, elderberry liqueur, and lemon juice. Zero-proof offerings include Hibiscus Spritz, Sparkling Rose Tea, and Laos in Chai, which comprises chai with fresh pineapple, coconut cream, and lime.

White and red wine is offered by the glass or bottle. The restaurant’s bar also dispenses local craft beer on draft or from cans.

GOOD NEWS, FRIEND:

You don’t have to leave Cary to find first-rate beef brisket and other delectable smoked goodness. That’s because three days each week, brothers Nick and Bryce Dampf sling Texas-style provisions from a 32-foot trailer situated in family-friendly Phillips Farms. They’re cooking onsite the proper way: low and slow at 250 degrees for 14 hours.

You’d be hard-pressed to find two guys more down to earth than the Dampf brothers, who grew up in Missouri but also lived in Texas for several years. Although they were young at the time, Bryce and Nick developed an affinity for brisket and other beloved fare from the Lone Star State.

Years later, once Nick was married, his wife bought him an inexpensive offset cooker at Home Depot.

“Bryce and I started experimenting in the backyard,” Nick says. “After smoking our first brisket and having it turn out well, we caught the barbecue bug.”

Eventually both brothers moved to North Carolina and started doing “random pop-ups” in 2021 to develop a following. Word spread quickly about their slow-smoking prowess, ultimately landing their cleverly named outpost long-term residency at Phillips Farm.

“Barbecue brings people together and makes them happy,” Bryce says with a smile following a recent Friday afternoon lunch service. “Our mission involves glorifying God and giving people the best experience possible.”

“We want to be sure we treat people right and make them feel at home here,” Nick added. “We also want to share our faith with people in the community.”

The best-selling brisket is as flavorful as you’ll find anywhere. Need proof? Just ask barbecue enthusiast Heath Clayton, a Cary native who visited Dampf Good BBQ for lunch with longtime friend Mark Zimmerman. The two men travel around the state enjoying all the best haunts.

“The brisket is tender and juicy, and the dry rub they pre-season with is spot-on,” Clayton says with authority.

“Whenever I come somewhere like this, I don’t get any sides because that’s just filler to me,” Zimmerman added while noshing on a mound of mixed proteins.

In addition to brisket, the Dampf brothers and their hardworking crew serve up succulent beef and pork spareribs, pulled pork, turkey breast, house-made sausage, and bacon brisket, which is essentially sliced pork belly.

“The turkey is a sleeper on the menu,” Bryce revealed. “It’s subtle and juicy.”

A zesty, all-beef Texas Jack sausage contains ghost pepper and habanero cheese, while a jalapeño-imbued version involves a pork and beef blend filled with Muenster cheese.

According to Nick and Bryce, the secret to the flavor and moistness of the meats is simply salt, pepper, and smoke. Of course, the high-capacity Primitive Pit and CenTex offset smokers fueled by mostly white (and some red) oak add to the eatery’s bona fide credentials.

“Attention to detail is important to us, and we work hard to put out consistently good food,” says Nick, who formerly worked in the tech sector with Cisco. “Everything we do has intentionality behind it.”

In the mood for a sandwich that veers off the path from the rest of the menu? Try the extraordinary Chicago Italian beef served au jus on an Italian roll. Nick explained that he spent much of his life in the Windy City, so this sandwich is a nod to the classic delicacy found there.

All the scratch-made side items are worthy of consideration. Choose from loaded mashed potato salad and smoked bacon Brussels sprouts to butcher block beans and creamy coleslaw. Fire-roasted vegetables and smoked mac & cheese also are on point.

“All the sides are popular, but the two that are taking the lead nowadays are the Brussels and the mashed potato salad,” says Bryce, a commercial electrician in his previous vocation. “We recently added elote (Mexican street corn), which has a sweet tanginess and crisp freshness.”

Even ancillary items like pickled onions and bread-and-butter pickles don’t disappoint. And don’t miss the perfectly sweet and tangy specialty sauce served with your meal.

Daily specials include a pastrami Reuben on Thursdays, a halfpound brisket burger on Fridays, and brisket tacos on scratch-made tortillas on Saturdays.

A family-style feast comprises all meats plus four pints of sides and feeds six to eight people.

Be sure to wash everything down with a fire-brewed Sprecher root beer infused with raw Wisconsin honey.

“We believe craft sodas pair well with our food,” Bryce says. “We also have cream soda, cherry cola, and sweet tea.”

Dampf Good BBQ is open Thursday through Saturday for lunch and dinner (or until the food runs out). Service is fast-casual (just line up and order at the left window), and al fresco seating takes place on wooden picnic tables. Online ordering and catering services are available.

“We’re trying to provide a unique experience people can’t find elsewhere in town by offering shareable small-plate dining and modern cocktails,” says Chris Harol, co-owner of Nightingale as well as The Block on Main, where the spot is situated. “We look forward to long summer nights where people are enjoying themselves. Our goal is to bring more vibrant nightlife to Holly Springs.”

Chris joined forces with Matt and Christy

Griffith, husband-and-wife proprietors of nearby eatery Pimiento Tea Room, to open Nightingale in November 2023.

“When I decided to open a restaurant in this space, Matt and Christy were at the top of my list,” Chris reveals. “They both bring a lot of creativity, knowledge, and personality.”

When it came to Nightingale’s décor, the owners tapped award-winning architectural and interior design firm West Workshop to help develop the layout. Half a dozen different seating areas ranging from a main dining room and private event space to a bar and patio provide plenty of leeway for guests to relax and savor their food and drinks.

Funky wallpaper, modern light fixtures, and live greenery help deliver classy-casual ambience with loads of personality. Local artist Lacey Crime painted a striking nightingale bird at the entrance and the restaurant’s name on the back wall of the patio.

“The décor inside is maximalist, and there’s a lot to entertain the eyes,” Matt explains. “We deliberately tried to create an atmosphere that can’t be tied to one specific era, so there are elements that evoke nostalgia and create a storybook escape.”

“It definitely has a top-floor speakeasy vibe,” Christy adds. “It’s not as obvious as you would think to get up here, but if people seek us out, they will find us.”

Guests who manage to find Nightingale will be pleased to see Christy’s ever-inventive culinary creations deftly executed by Chef de Cuisine Josiah Halbohm. Popular dishes

include a hearty smoked chicken risotto, ostrich sliders on scratch-made yeast rolls, and sweet potato gnocchi.

A seasonally rotating menu features small plates designed for sharing. Prefer vegetarian? Pick the splendid whipped feta or the croquettes crowned with green goddess dressing. Vegan? Try the black bean-imbued fried grit cake. Gluten free? Order the pork belly with apricot chutney.

“Some ingredients will change depending on the season,” Christy says, “but there’s something on the menu for everyone.”

Matt agrees, adding, “If you come here on a date or with some friends, this is the perfect place to have a communal experience.”

In fact, an entire segment of the menu — Things With Crackers — offers tempting appetizer selections to order for the table: charcuterie spreads, port wine cheese, or

Boursin, each served with house-made crackers and fried saltines.

We highly recommend the rave-worthy crab cakes made from lump crab meat and served with remoulade. Christy hails from Maryland, after all, famously known for its crab cakes.

“When it’s available, we source the crab from Quality Seafood in Elizabeth City,” Christy says.

Nightingale utilizes other North Carolina purveyors like Misty Morning Ranch in Moore County for ostrich, Goat Lady Dairy in Climax for cheese, and Visionary Microgreens in Fuquay-Varina. Christy also makes frequent visits to the local farmers market.

Don’t skip the after-dinner options. Whether you choose the dessert cheese plate with chocolate olive oil crackers or the sublime olive oil cake with orange blossom and almond, you won’t misstep.

“The cake isn’t super sweet,” says Matt. “Christy infuses it with some Southern flair. That’s why she included cornmeal in the recipe to give it a unique flavor.”

Nightingale is open Wednesday through Sunday.

Nightingale’s robust beverage program includes well-balanced cocktails and other evolving libations that pair well with the food. It’s all masterminded by Zack Thomas, beverage and service director.

“We have 14 cocktails on our menu,” Matt says. “Six are standards, six are seasonal, and two are zero-proof offerings. We also have an outstanding spirits list with lots of whiskeys, cordials, aperitifs, and brandies, so we’re building a bottle collection that’s unrivaled in the area.”

Imaginative craft cocktails include Queen’s Park Swizzle, a rum-based sipper with lime, mint, and house-made bitters; the cachaça- and vermouth-charged Green Door; and the West Side Garden featuring a blend of scotch, apricot, sesame, and cucumbers.

Even standard offerings are elevated, such as the refreshing Aperol Spritz made with Nightingale’s trademark clarified citrus soda.

“Our Gimlet is killer,” Matt says. “We use our optimized house gin blend, and we make our own lime cordial.”

Looking for a good reason to venture out midweek? Consider Nightingale’s Breakeven Bottle Wednesday, which allows guests a sample from a pricey bottle of interesting spirits at cost.

Future plans call for starting a cocktail club and providing a chef’s table experience.

“We haven’t completely landed on these ideas, but we’re giving them a lot of consideration,” Chris says.

A private event space seats about 40 people and is available for a fee.

“It’s a great space for all types of gatherings and special occasions,” Christy says.

If you’re in the mood for a burger and fries, order the next-level-good My Big Fat Lamb burger with feta cheese. Or choose Neli’s burger — a beef patty crowned with melted Bulgarian cheese and scratch-made lutenica, a Bulgarian spread containing red peppers, tomatoes, and eggplant.

Among the tempting Old World entrees, consider trying the Slavonian stew encompassing Croatian-style chicken, potatoes, and vegetables served in a clay pot; the grilled Serbian pork sausage seasoned with traditional spices; or cabbage rolls stuffed with ground beef, pork, and rice topped with Hungarian paprika sauce.

For a special treat, call in advance and request the incomparable Kapama stew brimming with pork, chicken, beef, Bulgarian pork sausage, cabbage, tomatoes, and rice.

Reserved events take place in a charming private room with seating for 16 or at several community tables in the main dining area. Offsite catering also is available.

Dr. Jean holds bachelor’s degrees in Psychology and Biology, concentrating on human and child development. She earned her Doctor of Dental Surgery from the University at Buffalo, where she also met her husband, a gastroenterologist. Her training continued for an additional two years at Columbia University in New York City, specializing in pediatric dentistry. For Dr. Jean, Little Tooth Co is not just a practice, but a passion akin to nurturing her eldest child.

Dr. Cyelee’s educational journey includes a Doctor of Dental Medicine from the University of Pennsylvania, a General Practice Residency at Harvard University, a fellowship in Dental Oncology at Memorial Sloan Kettering Cancer Center, and a specialization in pediatric dentistry from Montefiore Medical Center. In 2022, she joined Dr.

Jean at Little Tooth Co, bringing her extensive expertise to the practice.

The Cary-based practice owners are parents of four and proud partners of Stanley Dentistry, a comprehensive practice near Preston.
