DURING THE MONTHS OF November and December, we are often told to never forget the “reason for the season” or the “true meaning” of the holidays. It’s good advice, given our (very real) struggles during this time of year — it’s easy to grab a cart on Black Friday and get caught up in consumerism, and seasonal magic can be hard to find when your bank account is dwindling and your winter bod is getting a little too wintery. But, as you’ll read in this issue, the “reason for the season” is different for everybody. Page 22: For members of the Triangle Woodworkers Association, the holidays are about giving back to their community via the Toys for Tots program — and if you ask them, every single splinter is worth it! Page 28: Cary’s resident gingerbread queen, Ann Bailey, embraces the holiday spirit, using her talent to gift Ashworth Drugs (and our cover) with a present that breaks all the molds! SANTA’S WORKSHOP is said to be a magical place where Santa Claus and his team of elves work tirelessly to prepare toys and gifts for children around the world in time for Christmas Eve. As most of us understand it, this workshop exists in the North Pole — but after extensive investigation, it seems that Santa has his own workshop here in Cary ... and the elves really know their way around a table saw. As most of you know, every year the Marine Toys for Tots program collects new, unwrapped toys to distribute to children in need over the holidays. This can be done via toy drives, manufacturer donations, and other community efforts. What many of you don’t know about is the Triangle Woodworkers Association (TWA) — a group of wood-loving locals who have built over 75,000 handcrafted toys for our local Toys for Tots chapter over the last three decades.

From race cars to keepsake boxes, members of the Triangle Woodworkers Association pour a tremendous amount of love into their handmade creations.

“I joined in 2016, but Toys for Toys has been a part of TWA for many, many years,” said Joe Sabo, TWA’s committee chairman for Toys for Tots. “It all started with one guy who was a member of the club who made some toys, and a couple of other guys in the club joined him. Through some investigation, they discovered that they could turn these over to the Marines for the Toys for Tots program, so the whole thing within the club just grew from there.” Described on their website as a “nonprofit educational corporation,” TWA holds monthly meetings both online and at Klingspor’s Woodworking Shop in Cary, teaching woodworking techniques via seminars, classes, and workshops. TWA members share a love of woodworking, but you do NOT have to be a Master Carpenter to join. “Woodworkers is a pretty loose term,” said Roy Brookhart, club president. “We aren’t highly paid professionals, and you don’t have to feel intimidated. You might say, oh, I can’t make a toy like that, or I can’t make a table. Well, who cares? This is about teaching and a love for wood, and the same with the toys.” Both originally from Ohio, Sabo and Brookhart developed

a passion for woodworking during childhood — but neither pursued it professionally. Both men began working for the same company based out of Illinois, and their professional and personal lives would continue to coincide over the years. “Our paths crossed a number of times in our careers, but we never really worked in the same place — but we did work on the same product once. We retired on the same day, too, and the company ‘forced’ us to move here,” said Brookhart, laughing. Now leaders in the TWA, Brookhart and Sabo are fully committed to pouring their heart and soul (and tools) into educating locals about woodworking and helping kids within the community. “I got involved helping the past Toys for Tots chairman, who had been the chairman for 15 to 18 years — and he was ready to hang it up, so to speak,” said Sabo. “He asked me if I wanted to take over, and I said yes. It’s extra work, but it’s OK. I enjoy doing the work, and I enjoy knowing that our workshops are making toys for the people who need it in the community. That’s rewarding in itself.”

Last year, 40 TWA members built nearly 6,600 toys for Toys for Tots. The wooden toys were distributed throughout Wake, Durham, Johnston, Granville, Vance, and Franklin counties. This year, TWA has 14 individual workshops well underway — filled with men, women, doctors, lawyers, you name it — dedicated solely to toy production. “All different kinds of toys are made,” said Sabo. “We’ll make a thousand little race cars — we call them Volkswagens — during one Saturday workshop. Roy and his team last year made a Connect Four. I’ve made what I call keepsake boxes, and I’ll inlay a heart on it to make it a little bit more feminine for the girls. We’ve made trucks, helicopters, crayon holders, cribs for dolls, even American Girl-sized rocking chairs.” As for when toy production starts, it varies. While some workshops, or “teams,” start at the beginning of the year, the traditional kickoff for the program is in June. Workshops are often held at individual members’ home shops — the perfect opportunity to brainstorm, share tools, and simply have fun. “In the workshop I’m in, we make three different toys,” said Brookhart. “We have one that we make every year — we call it our namesake toy — and then we try to find two new ones. Our group tries to make toys that can be for either boys or girls, and we try to make toys that maybe are pointed towards the slightly older kids. We’re going to make a thousand little cars, perfect for a 2-year-old, but 10-year-olds have Christmas, too. So although we don’t know where they’re going, we give it our best.” The TWA gives members the opportunity to create new things and try out new techniques — but you don’t have to be a member of the club to earn the title “Santa’s little helper.” The Hardwood Store of NC is a significant sponsor and supporter of the Toys for Tots program, for example, and every year different community groups are invited to lend a helping hand. “There’s one group that’s making bookends this year, and they’ve asked everybody to donate children’s books so we can put the books in the bookends,” said Brookhart. “One of the groups I’m in, we’re making little baby cribs — and the ladies of a local church all got together and sewed little blankets.” This year, employees of a local business assembled the tires on 1,000 toy cars. Last year, residents at Atria Senior Living helped put wheels on trucks and rotors on helicopters, assisting with upwards of 150 toys. Local churches and senior living centers have also hosted TWA’s annual handover meetings in the past, a December event attended by TWA members, the Marines, and other special guests. “One year the staff sergeant got up and talked at our December meeting, where by tradition it’s the handover of the toys to the Marines,” said Sabo. “He talked about the history a little bit, but the thing that really struck home is that he told us that our toys have

a special category in their grand scheme of things: handmade toys. That was pretty nice to hear. They could very well be the only handcrafted gift these kids ever receive in their childhood.” In the past, the club would bring all of the toys to the handover meeting, inadvertently “overwhelming” the Marines. Now, TWA takes the toys down to the base starting around Nov. 1. “They’ve asked us to bring those toys as early in November as we possibly can,” said Brookhart. “It helps the Marines to get them earlier, and selfishly, it helps us too — because once those toys are out of the shop, we might have a couple hundred more that we want to make before their deadline.” When asked to name an all-time favorite toy, neither Sabo nor Brookhart could pick just one. Sabo enjoyed making something called the popper, a push toy for toddlers, created by filling a barrel with balls. One of Brookhart’s all-time favorites was the American Girl-sized rocking chair. “It is so technically difficult to make, but we loved doing it,” said Brookhart. “It’s fun to push yourself to make a toy that a kid is going to like. Honestly, they can be hard to part with sometimes.” Despite having never met a single child that has received their handcrafted gifts, both Sabo and Brookhart agree that giving back makes every splinter worth it. “I’ve been blessed with a lot of things: family, travel, health, and great parents. Just knowing that I’m helping a struggling child in the community have something for Christmas, even if I don’t know who they are, that means a lot,” said Sabo. For those who are interested in helping, but know next to nothing about woodworking, Brookhart encourages everyone to give it a good old college try. “You want to join our club? We have woodworkers in our club who I’ve never seen anything that they’ve made,” said Brookhart. “I don’t know what they do, and I don’t care.

If they just want to come and be a part of this gang, great!” As stated in a recent press release, one of the club’s greatest challenges is raising money to purchase needed wood and wooden parts such as wheels, dowels, wheel pins, and other toy components. In many cases, club members are using funds from their own pockets to purchase these supplies. If club membership is not

in the cards, consider visiting their website to donate money to the program. “If you’re willing to help us, we’re going to make sure that you are comfortable knowing that every single cent of your donation goes towards the creation of the toys,” said Brookhart. MOST OF US have tried our hand at building gingerbread houses — probably from holiday-themed box kits at the grocery store — but almost 20 years ago, Cary resident Ann Bailey moved from the world of cutouts to cutthroat competitions and has never looked back. For our longtime readers, Bailey’s name might ring a bell — she was featured in an article titled “Sweet Ambitions” almost a decade ago, commemorating her win at Grove Park Inn’s National Gingerbread Competition in 2014. Since then, Bailey has become a celebrity in the gingerbread world — collecting more national titles, teaching classes to people from across the country, and appearing on major network TV shows. “Following the win in 2014, I did not enter in 2015 or 2016. I usually take long breaks from it because it’s so time consuming,” said Bailey. “I wasn’t going to enter in 2017, but I was approached by the Food Network. They wanted to follow me and four other ladies in the competition for an episode called Gingerbread Giants, so I agreed to that. Fortunately, I won that year.” Being approached by the Food Network was truly a fullcircle moment for Bailey, who first discovered the competition when it was aired on the channel back in 2005. “The more I watched it, the more I thought, I can do that. So I decided to enter that year,” recalled Bailey, always up for a challenge. 28

One year later, Bailey signed up to compete in the 2006 National Competition — go big or go home! “I did not do very well,” admitted Bailey with a laugh. “I had never made gingerbread in my life. I didn't even like gingerbread. It was just a first for me, but then there was that thing of me having to master it. So I did it consecutively for seven years. I got into the top 10 in the second year, and stayed in the top 10 until 2009, when I took 2nd. My first win was not until 2012, and from that point on it seems like I just kept winning. It’s amazing to me; it really is. Very humbling.” Bailey won her first national title in 2012 with The Three Wise Men, followed by a win in 2014 with a chess set creation called Pawn Stars. In 2017 she won with The Three Ghosts, inspired by the Charles Dickens classic A Christmas Carol. Bailey edged out the competition just last year with a Peter Pan-themed piece titled When Dreams Have Wings. “It’s really funny — and I didn't realize this until shortly after — but I have won during the competition’s 20th, 25th, and 30th anniversaries,” said Bailey. “So I’ll just wait and go back for the 35th!” Although Bailey uses her kitchen for her creations, her design process is more akin to an architect than a baker. “Because I’m so meticulous, I start very early,” said Bailey. “I can’t enter until July when registration opens, but I actually start in January. I come up with the idea, and I build on the idea over time. I sketch it out on a piece of paper, and then I go on my computer, design it, and build a prototype. The prototype

gives me my dimensions, proportions, and my symmetry, so when I go to build the gingerbread piece, I have all my measurements right there. It’s at least two or three months before I start the gingerbread.” Every win comes with a $7,500 check, a trophy, and a prize package from The Omni Grove Park Inn that includes a two-night stay at the hotel — but that’s not why Bailey does it. “Gingerbread brings so many wonderful people together,” said Bailey. “I’ve made tons of friends. I have big classes that I teach with people from all over the country, and they all fly in or drive in, and we share techniques and recipes and secrets and just have fun.” Bailey’s classes are held at various locations throughout the year, and approximately 80% of her students are competing or planning to compete in the national competition. Information about classes and workshops can be found on Bailey’s Facebook group, The Art of Gingerbread. Locally, Bailey enjoys judging the Town of Cary’s Annual Gingerbread House Competition. This year, participants of all ages will display their eye candy in select downtown businesses from Dec. 2–9. For competitors looking for advice, Bailey has one word for you: perseverance. “Just stick with it,” said Bailey. “Quitting is something that a lot of people have done in gingerbread, because they think they can’t be that good. Hey, I wasn’t good either when

I first started! But you can be. You can build the skill. If you quit, you’re not going to win.” With so many wins under her belt, as well as appearances on HGTV, the Food Network, and the Travel Channel, we asked Bailey to name her most exciting venture to date. “An interview with Cary Magazine, of course,” said Bailey. “Seriously, I’m honored. We’ve been in Cary for about 26 years, and we love it. We would not live anywhere else.” Bailey’s love for the town is as deeply rooted as Ashworth Drugs in downtown Cary. DO YOU WANT TO BE AN ARTIST, but struggle to draw stick figures? Are you completely hopeless with a paintbrush and palette? Don’t worry, readers — art is allowed to be messy, and creative minds are rarely tidy. In the words of Pablo Picasso, “Learn the rules like a pro, so you can break them like an artist.” In case you haven’t seen it trending on social media, spin art is the perfect way to expose people of all ages to the process of art creation. This unique painting technique starts with a canvas strapped onto a spinning wheel. When spun, paint splatters out radially towards the sides of the canvas, creating signature works of art. IN DECEMBER 2015, Kris Miller was just another mom living in Bella Casa — a large, well-known neighborhood in Apex. With Christmas only a few days away, Miller did what many of us have been guilty of at one point or another. “I started wrapping presents and realized we had bought too much,” admitted Miller, whose children were 5 and 7 at the time. “Frankly, it felt gross. It was not how I wanted my kids to remember Christmas. I said to my husband, ‘There is a mother somewhere right around us that has nothing for their kids.’” With Christmas less than 72 hours away, Miller knew she had to do something — but the clock was ticking. “I got my computer and went on at like 11 p.m.,” said Miller. “We were supposed to leave town like 24 to 48 hours later. I started looking, knowing that there had to be some people who had slipped through the cracks.” Miller’s search took her to the free section on Craigslist, where she soon found desperate parents with nowhere else to turn. “I found a mom who was just trying to find Christmas dinner for her family,” recalled Miller. “Someone had a 6-year-old, and they were looking for a toy car. My husband mentioned that some of these people might be lying — but I said that if they are, that’s between them and God. I could not pretend that I hadn’t read that a mother needed Christmas dinner.” After identifying four families in need, Miller took to Bella Casa’s neighborhood Facebook page to ask for help. The response was overwhelming. “Well, my house was bananas the next day,” said Miller. “Let’s just say I did not leave town — people were dropping off things left and right. Someone had ordered a Christmas 70

dinner from Harris Teeter within 4 minutes of seeing the post. It was crazy. We ended up getting a family that was living in a car in a hotel for like three months that night. Everyone was over here wrapping presents — presents for the moms, presents for the kids, presents for everyone.” The following year, Miller was determined to reach more families in need. She posted on the neighborhood Facebook page in October, and with incredible support from her neighbors, they were able to assist 30 families with gifts and stockings for the children. This was the start of Bella Angels’ Christmas Gift Program, intended to be a one-time magical holiday experience for families who “are having the worst year ever.” In the past, the program has assisted those dealing with terminal illnesses, bankruptcies, job loss, injuries, and other catastrophic circumstances. Applications are posted online starting in October, but spots fill up quickly. These applications are not anonymous — Miller’s goal is to create a sense of community, so those who are in a position to help can actually get to know the families they are shopping for. ets, put together by Miller, provide pictures and stories that are shared only with matching families. “It inspires people to be more personal,” said Miller. “For me, it was all about the kids. They should open a present that feels like it’s for them — not for a ‘girl, 9 years old.’ There’s lots of details about the kids so they can feel like they got to know them.” In December, selected families come to a pickup event to collect their items. “They pick up wrapped presents and filled stockings,” said Miller. “People in this neighborhood are amazing — they sometimes have the stockings customized, so the family is getting embroidered stockings, filled to the brim.” Miller is particularly proud of the fact that their Christmas Gift Program does not have an age limit. “In so many programs you age out when you’re 12, but a 13-year-old needs Christmas,” said Miller. “And guess what, so do the 19-year-olds. These are the kids that I feel like we have the biggest impact on, because they are aware that the magic is gone and that their parents are having these issues.”

In 2017, neighbors began offering up gently used items, and the idea for the annual Christmas thrift store was born. “I felt really funny about wrapping gently used items, but I was sure that there were some people who would appreciate being able to shop,” said Miller. “The year that the store started, you couldn't walk up the stairs because of all the boxes. I set up a store in the middle of the night, because I didn’t have the neighborhood clubhouse reserved the day before. We set everything up for people to shop, and it worked out great, but I was exhausted.” Thankfully, two of Miller’s neighbors — Deborah Jenkins and Amy Riley — volunteered to take on the thrift store after that first year. “Selfishly, my favorite program is the store,” said Jenkins, now vice president and volunteer coordinator. “The moment a family enters the room and realizes that we can provide more than toys, but much-needed clothing, important bedding, a bike, dishes, and cookware — they have peace. The emotions they experience that day as they lay their trust in us to help them is an honor and a gift we do not take lightly.” As with every program within Bella Angels, the Christmas Thrift Store has grown leaps and bounds over the years. Gently used items are donated and stored in a small storage unit (paid for by a neighbor, of course), and a local church offers the use of their building for five days every year for preparation and takedown. Families can apply to shop at the store in late November and early December, when most other programs are full and parents find themselves needing last-minute help. “The store application is much less involved, but we still get more applications than we get spots,” said Miller. “It’s a one-day store, and we get through about 100 shoppers. They come and get a half hour shopping spree, and they have a personal shopper, who’s a neighbor in Bella Casa. The whole experience is meant to be fun, almost like a sip ’n’ shop. We have a person in the neighborhood who owns a car dealership, and they donate boxes of Christmas candy that parents can pick up for stockings. They can start by picking out wrapping paper, and then they can shop

for books, clothes, toys, and more. We have amazing volunteers who are really good at helping people have fun and not feel less than or any of that nonsense.” In addition to holiday programs, Bella Angels also provides year-round help with their Helping to Home and Everyone Needs to Read/Library Builder programs. Helping to Home works on a referral-only basis, assisting families with rent and bills in the hopes of preventing a housing crisis. “We help when we can with partial rent and partial utilities, because we don’t have unlimited funds,” said Miller. “We’ve paid for someone’s new tires; we’ve paid a car bill. We take it on a case-by-case basis.” The Everyone Needs to Read and Library Builder programs were created by Miller’s oldest son, Charlie, in an effort to share his love of reading with the community. Gently used and new books are collected in the neighborhood and then delivered to local shelters, programs, and preschools in need. The Library Builder provides families in need with a personalized bag of gently used books delivered directly to their doorstep. For those who are interested in helping with Bella Angels’ seasonal or year-round programs, there are many wonderful ways to be involved that DON’T involve a move

to Bella Casa! While monetary donations are always welcome, tangible opportunities include the following: • Interested volunteers are encouraged to take a look at Bella Angels’ Amazon Wish List, which identifies the top items needed most for families (particularly for teens and tweens). • Hold a drive in your community! Clean bedding, especially sleeping pillows, is always needed. This means no holes, tears, or stains. Packs of brand-new underwear and socks also make a huge impact, particularly to the children (including teens). • Bella Angels repairs gently used bikes for both kids and adults. Bikes are often the only means of transportation to school, work, or the grocery store. • Are you in a Rotary, Lions Club, or other organization? Invite Bella Angels to speak about the important work they are doing in our community! One of the best ways to help is to simply get to know your neighbors and identify any needs in your community. “We are just one small but mighty organization that every year has to turn away so many families,” said Jenkins. “We encourage other neighborhoods and communities to consider starting out their own version.” bellaangels.org

If I were daring enough to invite myself to another family’s Christmas celebration, it would undoubtedly be the Saleh family, the founders of the esteemed Lebanese and Mediterranean restaurant Sassool. Mounir, the visionary behind Sassool, and his daughters Simone and Noelle, who also play integral roles, gave me a glimpse of their Christmas traditions. They even generously spilled the beans on their time-honored recipes so you can add a dash of their Christmas magic to your own celebration! CARY MAGAZINE 75

2 pounds chicken, leg and breast 2 tablespoons vegetable oil, divided 3 cups chicken broth 1 ½ cups white rice 2 large carrots, cut into coins 1 yellow onion, diced 2 bay leaves 1 teaspoon salt 1 teaspoon each ground cinnamon, ground cardamom, and ground cumin 1/2 teaspoon black pepper toasted almonds and/or pine nuts for garnish, if desired

1. Coat chicken with 1 tablespoon vegetable oil and bake for 25 minutes at 375 degrees. 2. Coat carrots with 1 tablespoon vegetable oil and bake for 15 minutes at 375 degrees. 3. In a pot, saute onion until translucent. Add chicken broth, bring to a boil, and add rice and spices. Cover and reduce heat to a simmer. 4. Remove the chicken from the oven and break into 2-inch pieces (smaller if you prefer). Remove the carrots from the oven. 5. Place carrots and chicken over rice when it is about 70% done (about 12 minutes into its simmer). Cover and cook 5 minutes more, or until visible liquid has evaporated and rice is done. 6. Remove the bay leaves and garnish with toasted almonds and/or pine nuts.

Picture lavish spreads with courses upon courses of mouthwatering family recipes passed down from matriarch Cecille Saleh. And in the true spirit of Lebanese hospitality, holidays center more around sharing laughter and treasured moments with loved ones than giving gifts. “It is my favorite when new friends are invited to our house for Christmas or another holiday. You can see the shock in their eyes when they look at all the food displayed as they walk in. And then hours later, the food doubles. Most people look at each other and say, ‘I thought we already had dinner,’” said Sassool partner Simone. The celebration starts with every corner adorned with spreads of flavorful dishes. Cold mezza sets the tone for sharing and grazing, featuring an array of mixed nuts, pickled vegetables, cheeses and olives, and traditional stuffed grape leaves. Small stuffed pita appetizers called sambousik, and an array of salads and dips served with pita leave no appetite unsated. After hours of merry mingling, the showstoppers emerge: grand platters with baked fish, succulent lamb atop a bed of fragrant rice, and roasted or grilled chicken accompanied by grains. Toasted pine nuts and almonds crown the delectable rice dishes. Ready to invite yourself to the Saleh family Christmas celebration yet? “Lebanese families will prepare for Christmas gathering together to prepare the meals for their guests. Most of the time it will take a few days ahead of time to prepare everything, and every member of the family will have a role in making this happen,” Simone said.

1. Toss cubed pumpkin in vegetable oil and roast for 12 minutes at 365 degrees. 2. Allow to cool, then add to a mixing bowl with kale, mint, almonds, and pomegranate seeds.   3. Mix dressing ingredients and distribute evenly over the salad. Toss until everything is well coated.

The Sassool journey began when Mounir and his family emigrated from Lebanon when he was 19. They dove right into the restaurant scene in North Carolina, knowing it would be the easiest transition for starting a new business. Although their English was limited, they knew food very well. Two decades later, Mounir ventured forth from that first family restaurant. He opened Sassool in 2011, hand in hand with his daughters. Whether it’s a company holiday party, a wedding, or any sizable get-together, Chandelier Event Venue in Cary can deliver a memorable next-level experience. “We are a unique one-stop shop for any type of special event,” said Natasha Cupeles Ford, co-proprietor and creative director, who owns and operates the business with John Ford, her husband and the venue’s executive chef. “What sets us apart is that we provide modern elegance, and we have a full commercial kitchen onsite.” The Fords, who have been married for eight years, met in Cary and enjoyed their first date at Caribou Coffee. The couple owns two dogs, fittingly named Basil and Cannoli.

Back in 2017, the duo started Fluent N’ Food Catering Company, a boutique wedding and special events enterprise. Ultimately, the Fords decided to step out in faith and open a nearly 10,000-square-foot space in Preston Walk where they could provide catering and events all under the same roof. Just a few months after opening Chandelier in October 2019, the COVID-19 pandemic hit. Large gatherings in 2020 were either nonexistent or considerably limited due to government restrictions. “It was a miserable time for us, but miraculously we managed to get through it,” said Natasha, a California native with a background in marketing and communications. The Fords used the turbulent time to overhaul the property, which previously

operated as an Asian restaurant. Major revisions involved transformational changes like knocking down walls, adding new light fixtures throughout the building, and creating a vibrant outdoor garden area. Now that live events have fully resumed, the couple stays busy hosting everything from weddings and anniversary parties to graduation celebrations and other private functions. “We cater to all types of groups and nationalities,” Natasha said. “We do quinceañeras, bar mitzvahs, milestone birthday parties, you name it.” The venue accommodates approximately 150 guests for sit-down occasions. An exquisite indoor space features high ceilings, diamond chandelier fixtures, and striking Chiavari chairs. In addition, a

covered terrace and intimate garden courtyard provide enchanting possibilities for al fresco celebrations. John Ford’s extensive culinary training and experience in various restaurant kitchens gives Chandelier a considerable advantage when it comes to feeding guests. After earning an International Culinary Arts degree in 2008, John honed his skills at Pop’s Trattoria in Durham, the esteemed Print Works Bistro in Greensboro, and Cameron Bar and Grill in Raleigh. “Chandelier is not your typical venue because our menus are completely customizable,” the New Jersey-bred chef said. “Also, I personally get bored with traditional preparations of chicken and beef, so it’s great to use my creativity in the kitchen.” You’d be hard-pressed to find anywhere with more diverse menu options. Consider the tantalizing alternatives: Southern inspired, Caribbean, Latin fusion, Italian, Indo-Chinese and vegetarian/vegan. “Our approach involves tapping into different styles to be culturally and culinarily competent,” John said. In addition, Chandelier offers “Chef Action Stations” that feature crowdpleasing choices. “These are interactive and consist of us cooking in front of the guests,” John explained. “We create slider stations, pasta bars, omelet stations, and more. Our goal is to provide an elevated experience and for the presentation to shine through as much as the flavors of the food.” On the day the Cary Magazine team visited, chef John prepared a delectable fullcourse meal fit for royalty (see sidebar). Ingredients are sourced from local farms and other trusted purveyors.

Natasha said her personal menu favorites include the cabernet-simmered Southern short rib and grits and the basil-infused spinach lasagna with housemade pasta. “The garlic chicken is also phenomenal,” she said. “It features slowly braised chicken thighs that marinate in a scratchmade garlic sauce for 48 hours.” “We like to have fun and put our own spin on things,” John added.

DRINK IN STYLE at Neat & Sweet, a cocktail lounge in downtown Apex adjacent to Scratch Kitchen. Whether you’re on a date night or out with coworkers, this sipping spot — owned by the same team behind Scratch, TapStation, The Mason Jar Tavern, and Mason Jar Lager Company — is the perfect place to sink into a leather couch and let the evening be gin. “We have spent the last six years opening restaurants together and working on concepts within our local community,” said owner Jon Pierce. “We have found a passion for small downtowns and working to be a positive part of the entrepreneurial community. Simply put, we love building places for people to gather and enjoy a

great meal, and we are thrilled to have the support of our community.” Read on to learn more about how drinks and dreams are made at this swanky local treasure. When did Neat & Sweet first open, and what was the inspiration behind its opening?

Neat & Sweet opened in spring of 2023. After getting the opportunity to lease the space next to Scratch, we knew we had to come up with a concept Apex would love. We set out to create a gathering place for the community, a place to go for date night, and a place to enjoy a drink with friends.

Tell us more about the space!

We designed the layout and overall theme and hired an interior designer to help source some of the furniture. When designing the look and feel of the space, we focused on the natural character of the Tobacco Mule Exchange Building. The tall ceilings, original wood and brick supports, and original wood floors deserved to be our focal points. The colors we chose, furniture we sourced, lighting used, and even the glassware was all chosen with hopes of creating a relaxing, sophisticated venue. When designing our restaurants, we always hope to create something unique with small details you might not notice at first — but, as you enjoy the space, these details come more into focus. We are offering to rent our space on Mondays and Tuesdays for holiday parties through December. The space can hold about 50 people inside and another 30 or so on the patio (weather permitting). Our space will be decorated for the holidays beginning the week after Thanksgiving. For info on renting the space, please reach out on our website (neatandsweetapex.com). What kind of experience does Neat & Sweet hope to offer customers?

We have a mix of seating options that allow our guests to really decide their own experience. We have more traditional bistro tables with leather bar stools that lend themselves to an experience more like a restaurant setting. We also have several leather sofas and antique chairs that help foster a more relaxing environment for folks wanting to spend a little more time enjoying drinks and conversation. Lastly, we have a beautiful outdoor space with lounge furniture and Adirondacks to enjoy a drink al fresco. Regardless of where you choose to enjoy time at Neat & Sweet, we hope you will feel both relaxed and well taken care of with our tableside service.

drinks and smoked old fashioneds to chardonnay cheese fondue, Neat & Sweet feels like a place you might find in a large downtown city. Our drinks are all handcrafted with house made bitters, tinctures, mixes, and garnishes. In a lot of ways, our bar is a lot like a kitchen. We focus on unique combinations of fresh ingredients and elevated bar techniques that lead to an incredible finished product. On any given day, you can find our bar team adding teas, coffees, spices, and herbs to jars to be used in tomorrow’s new drink. Our space, food, and drinks are all carefully considered to provide our guests a truly unique experience. Describe the menu!

Our drink menu is incredibly unique, yet approachable. Our bartending team, led by Kaitlin Tandy, creates all their own bitters, mixtures, tinctures, and garnishes. This creativity is consistent throughout their entire drink program. From rum pecan old fashioneds with house made orgeat to a shareable cocktail experience with a glitter-filled pea flower tea concoction, our team will help anyone find something they will enjoy. Our food menu is meant for sharing. We offer meat and cheese charcuterie boards with unique items like our house made herb cheese spread or our Scratch pickled veggies. We are also handcrafting butter boards, which is really something you just have to try. We take a really nice, rich butter and spread it thinly over a cutting board and add toppings like pepper jelly, hot honey, pistachios, rosemary, and lemon. Grab a piece of fresh toasted bread and get the perfect scoop of butter and all of these ingredients. We also serve cheese and chocolate fondue, tuna nachos, and freshly prepared desserts.

Favorite drink?

This is an interesting question because my favorite is definitely changing because of Neat & Sweet. I love old fashioneds and bourbon cocktails. In the past, I have not enjoyed tequila drinks. However, Kaitlin’s Drastic Measures cocktail with mezcal, Tanqueray Sevilla, mango-chili shrub, lime, and salt has become my new favorite. It really is a true test of a bar’s creativity when the team can make something using ingredients people may not typically enjoy and it becomes a new favorite. This one has the perfect balance of spicy, sweet, and salty. Anything else you’d like to add?

We will be launching our Fill-A-Jar campaign at all of our restaurants beginning around Thanksgiving. Each year, we reach out to local guidance counselors and ask for their help in connecting us with families who might need a little help through the holidays. We have ornaments on our trees with items requested by the families, and we raise money throughout the season to buy things for the families. If you visit any of our restaurants and have the ability to help, please consider doing so. We donate 100% of proceeds back to these families each year.◀

Hellebores: Winter Wonders

LATE AUTUMN is a prime time to plant hardy perennials, and many gardeners will be getting downright giddy now over the possibilities. Some backyard growers, however, curb their enthusiasm because, quite frankly, they are impatient, meaning they don’t want to wait until spring to experience full-blooming glory from their planted newbies. So, why wait? Winter-flowering plants aren’t unusual, and one very pretty example is the hellebore. Often found full of blossoms in local garden centers by the end of the year, these shade-loving perennials shake off the shivers of cold weather by continuing to bloom in January, February, and even into the new spring. Heck, I have even had some with flowers in the early summer! There are several types of hellebores, but the Lenten rose (Helleborus x hybridus) is an easy-to-find favorite that catches many a gardener’s eye, and for good reason. This Perennial Plant Association’s 2005 Perennial Plant of the Year flaunts masses of bell-shaped blossoms in a wide range of colors such as white, cream, light green, pink, yellow, purple, and salmon, with various variegations merrily mixed in to make buying just a single one of these beauties a problem — but a nice problem to have. While hellebores will thrive in wellworked soil, once established, these tough plants even show off in dry, shady areas, such as under tall trees. They also do just fine basking in early morning sun. And since hellebores are low-growing plants,

December • The pleasures of the past summer garden can help brighten up holiday settings naturally with home-grown wreaths weaved from grapevines or evergreen foliage and dolled up with such dried material as hydrangea blooms, onion stalks, corn husks, and chilies. • Remember your feathered friends this winter by regularly cleaning and refilling the birdbath and feeder. The Christmas rose (H. niger) is another pretty hellebore that’s relatively easy to find and certainly worth the hunt. With white or pink blooms, it flowers slightly earlier than the Lenten rose. Hardy, vigorous ‘Nell Lewis’ was developed in North Carolina and is one of the more popular — and dependable — Christmas rose cultivars. And there’s the bear claw hellebore (H. foetidus), which flaunts masses of enchanting greenish blooms on plants with deeply cut palmate leaves that resemble, well, bear claws. It will usually begin flowering in January and continue to put on a show deep into the spring.

potting them up so you can have a better look at their blooms without dropping down on all fours is certainly an option. My hellebores have readily reseeded and formed ever-expanding clumps of handsome evergreen foliage. These flowing displays occasionally get singed by dry, cold winter winds, but I just prune out the damaged leaves in the early spring, and new ones readily sprout as temperatures start to rise. Speaking of damage, don’t worry about Bambi because hellebores are deer resistant. Many Lenten roses show up at garden centers simply labeled “Hellebore,” making any attempt at cultivar identification ooze with ambiguity. But to me, when it comes to plants, pretty is pretty, and I have lost little sleep enjoying my “mystery” hellebores. If you are an exacting gardener, however, e-garden shops such as Pine Knot Farms (pineknotfarms.com) and Plant Delights Nursery (plantdelights.com) offer not only a wide range of hellebores in many pretty colors, but ones with proper cultivar names, too.◀ L.A. Pleasant Park in Apex will celebrate its grand opening on Nov. 4. at 10 a.m. The park covers 92 acres and features six multipurpose fields, four tennis courts, six pickleball courts, two basketball courts, a cross-country course, restroom and concession facilities, and an Enchanted Village with multiple play areas for all ages and abilities. The Splashlantis water play area will open in spring of 2024. Future additions will include baseball/softball fields, batting cages, a sand volleyball court, a Grand Lawn, and more. The park is open from 6:30 a.m. to 10 p.m. year round. Volunteers collected 1,440 pounds of trash and 160 pounds of recycling during the FALL LITTER SWEEP in early October. 120 volunteers gathered to clean up Cary parks, streets, and trails as part of the Spruce program.
