e d i t o r ’s l e t t e r NORMALLY I WOULDN’T MAKE A FUSS, but I have to point out something special about this issue. After more than a year of absence, Things to Do are back in the pages of Cary Magazine. The feature, which highlights the festivals, concerts and activities in western Wake, is a tiny part of what we publish. But as we were planning our Family Fun issue, I couldn’t help doing a (virtual) happy dance. We had in-person events to write about, and we were confident that it would be safe to gather in groups! How fun is that? In fact, this issue is packed with all sorts of entertaining ideas. How about grabbing a Monster Shake from Andia’s Homemade Ice Cream with a friend or strolling downtown Apex to look at outdoor sculptures? You could hunt for buried treasure at Blue Diamond Gemstone Panning, or savor dinner with friends at a Korean barbecue restaurant? Why not sing and dance with a princess, or cheer on a hometown athlete as she competes at the Olympics? And speaking of fun things to do, I’d like to invite you to meet our 2021 Movers & Shakers in person on July 22 at Chatham Station in downtown Cary. I always enjoy getting to know these talented and hard-working folks, and this year, I can share that experience with you. You can get a glimpse of the diverse talents and accomplishments of this year’s honorees, starting on page 21. These events and gatherings are a welcome milestone on our journey back to normal. Much has changed in our lives, and many of us will never be the same, but this summer, I’m looking forward to a bit of fun and more (in-person) happy dances.

Thanks for reading,

WHAT IS SUCCESS? The answer is different for every leader: a trusted team, a client’s smile, a challenge met or a student’s achievement. We know, because we asked 24 young professionals about their challenges, their accomplishments and their inspiration. These Movers &

Shakers are shaping the future of our community in many different ways. They are entrepreneurs and educators, bloggers and authors — even a veteran and a veterinarian. And while we applaud their successes so far, we may be even more excited about what is to come.

CARY MAGAZINE 21

Shane Barry teacher, Athens Drive Magnet High School AN INTRODUCTION: I am a science teacher at Athens Drive Magnet High School, the STEM energy and Sustainability Academy coordinator, and the varsity swim coach. ORIGIN STORY: Tutoring fellow students while in college helped me realize that education was my passion and where I wanted to devote my efforts. Inspiration: Seeing growth in my students, whether it’s in the classroom or in the pool.

Matthew Bettinger co-owner, SideBar & Hank’s Downtown Dive ORIGIN STORY: Like a lot of people, I got into hospitality because I needed a job and I enjoy people. I like didn’t have anything else to hang out. It’s an going on. A opportunity to throw a buddy of mine party every day, and to was working at me that sounds like a a restaurant and good time. said, “We need some servers.” … It was a good fit from the get go.

A PROUD MOMENT: In spring 2020, 12 solar panels were installed at Athens Drive, through a grant from NC GreenPower Solar+ Schools. Our focus is on energy and sustainability, and solar panels fit both those. We had a student (Rocco Nociti) interested in a grant that he saw, and we supported him through the writing of the grant, through the fundraising process, and through the installation of the solar array. It was quite the process, to get all that done and installed. But when you see a student who’s that I try to have the model interested of ‘Be the person that I in the things needed at that age.’ that you’re teaching them, to go above and beyond outside of the classroom, then you put in the extra effort.

JUNE/JULY 2021

INSPIRATION: Being able to be part of a community is the part that I enjoy the most. …Seeing people leave really, really happy is great. A PROUD MOMENT: The moment that we realized SideBar was really going to take, and we decided to start exploring something else… It was about a year after SideBar was open. It wasn’t necessarily an aha moment, but it was over a couple of weeks. With Hank’s, we wanted to offer a full service restaurant, and that’s something I really wanted to get back into. I’ve been doing spirits and bars for a decade plus, which is wonderful, but there’s also something to be said for providing the full experience, a place where people can bring their family and sit down and eat.

Evan Bost Erin Bircher

director of marketing and client relations, Bost Custom Homes

owner, Foundations 4 Change AN INTRODUCTION: I am a dually licensed psychotherapist and a certified personal and professional development Watching my clients coach. My expertise is uncover their own in helping individuals capacity to ultimately break through barriers, build a solid, healthy work through difficult situations, set boundaries foundation for the and work to explore any successful life they limiting belief systems desire, is the most that may be preventing rewarding part of my job. them from leading the life they truly desire. ORIGIN STORY: I really didn’t know what I wanted to do after high school. I decided to take one class at a community college, and it was a psychology course. I can remember sitting in the middle of the class and thinking, “I know what I want now. I want to be a therapist.” RECENT CHALLENGE: In a profession that typically relies on subtle body language cues, or even simply offering a safe space for someone to come and cry without family members in the next room, it was an uncomfortable adjustment to completely transition to a virtual platform. ... It was refreshing to see how even in non-ideal settings, the value of a therapist’s session can still be life-changing.

AN INTRODUCTION: I’m a jack-of-all-trades peopleperson with a diverse background of experiences that has helped me connect with people of different perspectives and cultures. Some of my friends have given me the nickname Evan “45 minutes” Bost, because I often end up connecting with strangers for extended periods of time, inadvertently holding my friends up in the process. ORIGIN STORY: I joined the family custom home building business after an interesting stint growing and selling produce for an urban farm. At Bost Homes, I’ve found passion in home design, client management and land planning. INSPIRATION: It’s hard not to be excited about home building and development when our market is a Top 10 growth area of the country! In addition to the excitement from the influx of new clients, I enjoy learning about construction, land planning and how to make our cities (and homes) more pleasing to inhabitants, flora and fauna.

I hope to be a reflection of truth and an instrument of encouragement for others.

TRUE FACTS: I married my high school sweetheart, and we recently went skydiving for my 30th birthday in Key West. What a surreal experience!

Jasmine Brown Mycal Brickhouse executive pastor, Cary First Christian Church AN INTRODUCTION: I am a pastor, educator and community builder, dedicated to spreading the gospel to empower others to see God’s call for humanity to have an intimate relationship with God and to love all of creation. … (M)y ministry has been to cultivate and nurture the spiritual empowerment, social development and economic equality of the community that I am called to serve. INSPIRATION: Being a part of change in my community. I’m excited about developing and implementing opportunities for families to have access to nutritious food. I’m excited about advocating for affording housing and seeing those plans approved and developed. I’m excited about sponsoring job development programs and seeing participants increase their earning potential. RECENT CHALLENGE: My biggest recent challenge has been continuing to serve while journeying through my own grief. We never know what people carry, but we should be aware that we all carry something. No opportunity to Since November 2019, make a difference is I have carried the tragic too small, and each loss of my sister. In July one gives me joy. 2020, added to that burden was the loss of my grandmother to COVID-19. Grief is not a momentary experience; it is a reorienting of life.

JUNE/JULY 2021

author and founder, FACTS for Youth nonprofit AN INTRODUCTION: As the head swim coach at Holly Springs High, I interact with a number of high-schoolers and to be honest, many students are worried about their finances. …These kids had a deep desire to learn but limited resources and no place to gather the information. In 2018, I founded FACTS for Youth, a I hope that my book nonprofit to provide inspires people to not financial literacy to teens, only be financially athletes and young adults savvy, but to follow through workshops and their dreams and partnerships with schools. INSPIRATION: I am seeing teens and young adults grow in their confidence surrounding money, which is incredibly rewarding. A PROUD MOMENT: My proudest accomplishment is writing my first book. I have always wanted to become an author, but after my mom was diagnosed with breast cancer, I used my anger as fuel to write. Some days it was so hard for me to keep working on it. … When I had those tough days, I thought about my mom. I thought about making her proud. “The Money Club: A Teenage Guide to Literacy” was published Jan. 1, 2020.

passions. If I can do it, you can too.

Amy Davenport certified nurse-midwife, UNC-CH OBGYN

Nicole Case founder, Nicole Case Consulting AN INTRODUCTION: I am a career and leadership coach, personalbrand and job-search strategist, and recovering HR professional. After a decade in corporate human resources roles, partnering with top executives in tech and pharma companies, I launched my coaching business. I saw too many women struggling to break through to meaningful leadership roles or staying in toxic environments because they were afraid to start over. ORIGIN STORY: This pandemic has really opened up people’s hearts and minds on what is most important to them. Women were coming to me a lot, wanting help, saying, “I don’t like my job, and I want to do something different,” or “I want to do something better, It’s really important something that supports to have — even if my skills, and I can you can’t have them support my family better.”

physically around you — a really strong support system. A group of cheerleaders around you is really important.

INSPIRATION: Just knowing that I’m helping women, not only elevate their career, but upgrade their lives. What could the world be like, if everyone went to work and loved work and felt incredibly fulfilled, and then could shut it off and come home to their families?

AN INTRODUCTION: Davenport is a midwife at UNC who catches babies and takes care of women throughout their lives. She works at the new UNC OBGYN clinic at Panther Creek and is the postpartum Medical Director at UNC Hospitals.

I joke that my job has made small talk really hard. … I have really intimate conversations 10 to 20 times a day.

INSPIRATION: The U.S. healthcare system is in crisis, and so being a provider in that system is hard sometimes. But the thing that brings me back is I just love what I do. I love the families I take care of. ...To be able to be there and get to do this every day is hard, but it’s so wonderful and so rewarding.

RECENT CHALLENGE: We’ve seen more postpartum depression and more anxiety and depression in pregnancy, just because the whole population is experiencing that. For some people, at the beginning (of the pandemic), coming to their visits was the only time they had human contact. TRUE FACT: I worked in food service for a long time, and I loved it. ...My retirement plan is to have a cafe-bookstore.

Victoria Ford style influencer and blogger, The Prepford Wife AN INTRODUCTION: I’m a strategist by day and a blogger by night. The Prepford Wife is a North Carolina blog that focuses on all things home, travel, fashion and the magic of doing it yourself.

People online have become our community. They welcomed us into their lives and their homes by way of a little set of nine pictures on Instagram.

ORIGIN STORY: My husband, Marcus, and I wanted to document our lives and experiences as a way of saying, “We were here.” That turned into a blog when Marcus peer-pressured me into creating one years ago — when there was no money to be made and no one was watching — because we weren’t seeing and hearing anyone quite like us. A PROUD MOMENT: I recently received a call from “Country Living Magazine asking if I wanted to renovate our second home with them in a series called Makeover Takeover. So for the last six months, we’ve been doing just that. It’s been an incredible partnership and a whirlwind adventure. TRUE FACT: I’m a huge Harry Potter fan: Harry Potter wedding, dogs named after Harry Potter, wedding bands engraved with Harry Potter quotes.

Dr. April Gessner Deddens , founder, DEGA Mobile Veterinary Care nonprofit AN INTRODUCTION: Recently I started a nonprofit called DEGA Mobile Veterinary Care (Determined for Everyone to Gain Access to Veterinary Care). I provide free basic veterinary care to low/ no income and homeless pet owners. INSPIRATION: Being able to provide care to pets who otherwise would not receive it... Not only does this help reduce the number of unwanted pets in shelters, but it gives owners a sense of fulfillment and happiness that they are able to take care of their loved ones. For homeless pet owners, their pet may be the only aspect of their lives that keeps them going. RECENT CHALLENGE: Our biggest challenge I have with DEGA is identifying been interested pet owners who are truly in animals and in need. This is why we how I could save work with other charitable them since I organizations to identify pet was a little girl. owners who could use our free services. We need to advertise our free clinics, so we can help as many pets as possible. At the same time, we cannot make it public, since we are reaching out to a select group.

Sylvia Inks founder, SMI Financial Coaching AN INTRODUCTION: I’m a business coach, finance expert, author and speaker who helps small business owners grow profitable businesses by focusing on systems, cash flow, and building multiple income streams. ORIGIN STORY: My father was a hospital pharmacist and owned several Chinese restaurants in the Triangle, and my mother was an accountant. I saw the best of both worlds — a steady paycheck working as an employee for someone else’s company, as well as the benefits of passive income from owning a small business. My love of the mental health field keeps me excited about continuing to help people (find) new ways to deal with stress and anxiety.

I help them be successful.

ORIGIN STORY: I noticed that I had a knack for speaking in church. I was the church announcer and noticed I would get a positive reaction from the congregation when I read the announcements. Our family made the extremely difficult decision in July 2015 of placing Marcus in assisted living, due to his severe and dangerous aggression. I had always planned on owning a dance studio, but I didn’t think I could pull it off at only 21 years old. Luckily, I have extremely supportive parents, and I dove in headfirst. IN TODAY’S COMPLICATED, CHAOTIC WORLD, Krystal Ayling wants to give kids a chance to focus on the princess, rather than the evil queen. “When I was a child, I was a tomboy – I didn’t care for fairy tales and was into sports,” Ayling said. “As I became an adult, I learned how scary the world is, and seeing the pure innocence of my daughter now and how she loves fairy tales, that inspired me.” Ayling founded Apex-based Party Like a Princess in September 2019. While the pandemic changed her business model – princesses had to float in on Zoom, rather than via pumpkin carriage or magic carpet – Ayling says it also opened new castle doors and gave her exposure she Krystal Ayling, the owner of Party Like a might not have had other- Princess, makes sure everything goes smoothly wise thanks to her ability at the company's Spring Fling, held at Paramount Event Venue in Morrisville. to offer virtual events. continued on page 38

Party Like a Princess offers virtual and in-person birthday parties and events with a live princess, where Ayling notes, all COVID protections are in place. All of the Party Like a Princess packages include a musical entrance, live performance, photo and story time with the princess, and add-ons are available ranging from games and crafts to etiquette lessons. Events are always customizable, she says. The idea came to Ayling after she attended other local events with her daughter, where she found herself waiting in line for hours for something as simple as face painting from someone in costume. She thought about how she’d do it better and decided to turn those ideas into a business. Ayling prides herself on the magic of the experience. This isn’t just a girl in a costume; this is a performer who brings a true fairy tale experience to children. “I scout people who have a passion for theater and music,” she said. “It’s not just anybody putting on a dress. It’s people who want to be a princess and have that bubbly personality.” While copyright protections mean Ayling must use original princesses, rather than re-creating big-name princesses at her events, there will be something familiar to children about the princesses who, to name a few, include the mermaid princess, the snow sisters, and the latest addition, the Jedi princess.

Performing the "royal wave" while on parade is an essential skill for princesses of all ages.

Though she promotes wonder and mirth, Ayling herself is clearly the business mind behind the organization – something she will happily admit herself. “I am not a performer,” she said with a laugh. “I came into this as a former business owner and as a parent.” Ayling, who owned a field hockey league in New York prior to moving to North Carolina, works behind the scenes to make sure everything is perfect from when a princess appears at a party or event to the time she leaves. “For me, quality is everything,” Ayling said. “I never want someone to walk away and wonder why it cost what it did.” When the children gather and the lights come up, it’s up to the princess to ensure that the children believe. That’s where Grace Gibbons comes in. Gibbons has experience as an actual Disney performer on cruise ships and in New York City. continued on page 40

The pandemic impacted her as well, and she is currently living in Raleigh while on furlough. Disney’s loss was Ayling’s gain, however, as Gibbons now brings her charm and performance skills to children here in the Triangle. It was Gibbons’ mom who saw one of Ayling’s advertisements in a local performers group. She knew how much Gibbons missed performing during the pandemic and encouraged her to apply. Gibbons currently works not only as a princess, but also as part of Ayling’s support team. She’s sewn masks to match the princess’s costumes, since masks are necessary for princesses in pandemic times. She cares for the wigs, which she says takes a certain know-how, since wigs do endure wear and tear and won’t grow back like real hair. She’s also done some costume tailoring, all of which she says adds to her own professional skill-set.

DeAnna Giovacchini is the Jedi Princess.

Gibbons prepares in earnest for her roles. She says she grew up on princess movies, and so many are available today on television and through streaming services. Before she becomes a character for a Party Like a Princess event, Gibbons says she watches those movies. She listens to the princesses and watches how they move and interact, so she can bring similar inflections and actions to her character. She credits Ayling with ensuring everything runs smoothly so that she can simply be that princess to the children in front of her. “In theater, there’s performers and stage managers,” Gibbons said. “Krystal’s really the stage manager of the show that we’re putting on.” “I feel like everything is going to flow smoothly when she is there. As a performer, it’s really comforting to know that my boss and my stage manager has my back.” t

Kyle and Melissa Hathcock took over the operation four years ago, and it remains an educational, fun and safe way to explore the earth and the treasures it holds. Melissa Hathcock recently unearthed some gems about the business and the benefits of working with family. How has the business changed over the years?

Blue Diamond actually has a long history in Cary. This small business started as Panner’s Creek by my husband’s dad and grandpa over 30 years ago. The biggest challenge has probably been COVID. Although I will say, our customers have been so supportive and we are really thankful for them. We’ve been able to space people out and rent out time slots for the weekends. This has allowed adequate space for panning and time to clean. It’s been a learning curve for sure, but we are grateful to still be in business and overcome this challenge as a family.

I wouldn’t say there is a secret to long-term success, but I would say if your customers have a good time, you treat them right, and you enjoy what you do, then your business will last as long as you remember what’s important. t

STROLL THROUGH DOWNTOWN APEX these days, and you’ll likely notice something different. Nine sculptures are on display from Hunter Street Park to downtown Apex in the town’s first public outdoor art walk. The pieces were installed in April and will remain in place until March 2022. “A temporary exhibit was something that was kind of new to me,” said Tom Colwell, chair of the Apex Public Art Committee. “It seemed like a really good way to put a lot of art in public space for a smaller commitment and give people an opportunity to get used to seeing different pieces of artwork in the community.” The committee received over 35 submissions from all over the United States, but the nine selected works were all created by North Carolina artists — from Phil Hathcock of Cary to Harry McDaniel of Asheville. “It wasn’t necessarily by design, but it worked out that way,” Colwell said. “We’re pretty excited about that too, just thinking that it’s a cool way to support more local and regional people as well.” When putting together the show, the selection team considered artistic merit as well as variety of styles and materials, says Jeffrey York, the juror for the exhibition. “There are pieces that deal with the natural world. There are some pieces that are just geometric, and the artist is interested only in those sort of formal qualities. There are other pieces that try to make some kind of a statement; they’re pieces that connect to other cultures,” he said. “As a juror, that’s one of the things that these kinds of shows should be — more varied than perhaps a thematic kind of exhibition.”

The idea for the Sculpture Walk was first floated about five years ago, even before there was a public art committee, to illustrate the kinds of projects that might be possible. In November 2017, the committee came together and began working on several projects. Residents were surveyed at festivals and other public events, revealing a tremendous interest in public art. It was seen as a way to boost community pride, says Renee Anderson, cultural arts program specialist with the town. “One of the goals of the whole public art program is to enhance the quality of life in Apex and to show that the town is willing to invest in the community,” she said. “It also shows that we’re a destination.” continued on page 49

The Apex Sculpture Walk is seen as a way to attract outof-town visitors and to encourage residents to stroll from Hunter Street Park, through the town campus, to the historic downtown, says Colwell, who has served on the Parks, Recreation and Cultural Resources Advisory Commission for more than a decade. “The idea was to encourage that fit and active lifestyle, to be outdoors, enjoy some interesting and beautiful pieces of artwork, and then also to help stitch together a couple of areas that are really close by each other,” Colwell said. inside the angles is faced with mirrors, reflecting some space outside, but mostly the space inside. The path through the

sculpture becomes an intertwined comingling of lines. Trajectory is about interconnectivity and progression along a curvilinear route. CARY MAGAZINE 49

Olympic triathlete now calls Cary home

JUNE/JULY 2021

World-class triathlete Katie Zaferes runs the Cary greenways in February. She has also trained at the Triangle Aquatic Center and ridden on area roads as she prepared for the Summer Olympics.

Katie Zaferes and her husband, Tommy, who is also a triathlete, say Cary's parks, greenways and athletic facilities were a big draw when they were looking for a place to make their home.

IF YOU HAVEN’T RUN INTO Katie Zaferes around town yet, the odds are you might soon. A decorated triathlete and Olympian, Zaferes recently tacked on another title to her impressive resume — Cary resident. Despite no prior connection to North Carolina, Cary felt like home to the world-class female triathlete when she and her husband, Tommy, visited last summer. The couple had been looking to relocate from California to be closer to family in Maryland, and Cary checked all the boxes. “We’ve traveled so much that we know what we like, and what we want in places, so it didn’t take us long to figure out that the area was for us,” Zaferes said. “It never seemed scary. We bought our house without even seeing it, because we knew what we wanted.” In particular, Katie and Tommy Zaferes — who both have a background in competitive triathlon — were impressed by the town’s parks and greenways. The couple plans to make Cary their permanent home, eventually settling here after spending most of the previous seven years living out of a suitcase. 52

“I love the adventures now I’m having on the road,” Zaferes said. “But I’m so excited for when we are really settled down and get to explore more of Cary in a different way, and see it through different phases of our life.” Zaferes, whose favorite post-triathlon food is a egg-topped burger and cookie dough ice cream, looks forward to exploring more restaurants in Cary, too. For now, the town has served as a suitable training ground during the pandemic for the 32-year-old, who is a gold-medal favorite expected to represent Team USA in the Tokyo Olympics this summer. The change of scenery has helped Zaferes remain focused on her ultimate goal, even after the Olympics were postponed due to COVID. “It was hard because, for a bit of time, we just didn’t know what was happening with the Olympics,” she said. “Once we found out it was postponed, it was a little bit easier to handle. But then the

“I feel like every year has built up to this point, that I feel ready to handle myself in the Olympics and really enjoy the experience and really do well.” — Katie Zaferes uncertainty of whether we’re going to race and living with my parents, which is very comfortable, but not necessarily high-performance, that was challenging.” Zaferes has enjoyed running, biking and swimming all over the Triangle, but some of her favorite spots are running through Umstead State Park, Bond Park, White Oak Greenway and American Tobacco Trail. She has also been swimming at the Triangle Aquatic Center and biking along quieter roads, where she can push the intensity.

Katie Zaferes trains in Girona, Spain, with her coach, Joel Filliol, and several other Olympic triathletes.

Attracting the top female triathlete in the world is a huge endorsement for the Town of Cary’s investment in parks, greenways and other athletic facilities. “It’s incredible,” said Doug McRainey, director of Parks, Recreation and Cultural Resources. “And it makes you proud, because you’re looking at 20 to 25 years’ worth of investment the town has put in.” With Cary now part of her story, Zaferes aims to take the next step in her career this summer after reaching new professional heights in recent years. She ran in her first triathlon with her dad in 2007, but began competing professionally in 2013, after a fouryear career running long distance on the Syracuse cross country and track and field teams. By 2016, she was selected to

represent Team USA at the Rio Olympics, where she finished 18th — a disappointing performance she hasn’t forgotten. Since then, Zaferes has honed her physical and mental training, setting a path to winning the International Triathlon Union World Championship in 2019, a career highlight up to this point. “Katie’s progression since the 2016 Games has been a process of refinement across the three sports and how she approaches the races from a psychological point of view, as well as managing the ups and downs of the daily training more effectively,” said Joel Filliol, Zaferes’ coach. “Through these evolutions, she has been able to reach the top of the podium and contributed to her overall win in the 2019 World Championships.”

Zaferes left Cary for Spain in April to begin fine tuning her training with Filliol, alongside a collection of other international triathletes ahead of the Olympics. This time around, armed with experience and a host of accomplishments, Zaferes is confident she is ready to handle the world’s brightest spotlight on her. “I feel like every year has built up to this point, that I feel ready to handle myself in the Olympics and really enjoy the experience and really do well,” she said. “I think it’s just been really maturing, and having that first experience to learn a lot from.” Zaferes is expected to compete in the Olympic women’s triathlon on July 27. She is also looking to compete in the mixed-relay on July 31, an event new to the Olympics this year. t CARY MAGAZINE 53

Riding to Victory V Foundation event raises money for cancer research WRITTEN BY JACK FREDERICK | CONTRIBUTED PHOTOS FROM THE V FOUNDATION

FRAN POWELL had been searching for her purpose in living with cancer since she was diagnosed with the disease in 2010. When she discovered the V Foundation’s Victory Ride last year, getting back on her bicycle became the answer. “I’m very excited and very passionate about wanting to help the V Foundation, because I just feel like I finally figured out what I was supposed to do with this, like what I am supposed to do with what was given to me,” said Powell, who lives in Raleigh. “If it can inspire others and motivate others, then that’s definitely what I want to do.” Powell, 65, has endometrial cancer that has spread to her lungs, but that hasn’t stopped her plan to participate in her second Victory Ride this summer as a rider. The annual V Foundation event raises awareness and funding for research into cancer, a disease that 1 in 2 men and 1 in 3 women will be diagnosed with in their lifetime. All of the funds raised by riders like Powell will benefit cancer research — including locally at Duke Cancer Institute, UNC Lineberger Comprehensive Cancer Center and the Wake Forest Baptist Health Comprehensive Cancer Center. Entering its fourth year, the event presented by Braswell Family Farms has raised over $650,000. This year, the Victory Ride will begin July 28 with “My Victory Month,” a virtual experience where riders can cover miles on their own, leading into an inperson race day that starts at N.C. State’s Centennial Campus Aug. 28. On the day of the Victory Ride, riders can choose how to participate, with a variety of distances to accommodate cyclists of all skill levels, from 10 to 100 miles.

With in-person and virtual components, the event prioritizes the health and safety of cyclists during the COVID-19 pandemic. “Holding a safe and responsible event continues to be our first priority,” said Evan Morris, director of community events at the V Foundation, in a written statement. “In addition, our late summer event date allows more time for riders to train safely.” Last year’s event spurred Powell to complete 400 miles, completing 10 miles per day. This summer, she aims to outdo her previous total, tallying as many as 500 miles. Spending time on the bike has been an engaging activity that has kept her active, especially during the pandemic. “It was like it lit a fire under me,” Powell said. “Once I got started, who would have thought that at my age bike riding was so much fun again.” Participating in the Victory Ride has also given her a connection to meet other

cancer survivors and fighters, and also provided an avenue for friends and family to help. During last year’s ride, Powell raised $1,275. “When you give, you get so much back,” she said. “All I did was say I was riding, and all of these people gave me so much encouragement.” The V Foundation was started by ESPN and longtime N.C. State basketball coach Jim Valvano in 1993. That same year, Valvano died of metastatic cancer. In the time since then, the V Foundation has funded more than $250 million in cancer research grants. In 2016, Mike Schoor, Laura Meshwork and four other co-founders launched The Spirit League with 12 players. The nonprofit now serves serves more than 100 teens and young adults with special needs, enabling them to exercise together, have fun and make friends.

Spirit League of North Carolina MIKE SCHOOR is passionate about basketball. Before moving to the Triangle in 2014, he spent seven seasons as an assistant high school basketball coach and four years as a travel team coach. This experience con-

vinced him that a basketball league would be the perfect place for his fiancee Laura Meshwork’s special needs daughter, Chandler, to develop friendships and stay active. There were a few sports leagues and programs for teens with special needs and disabilities, but most of them had limitations. They didn’t operate year-round, and often only allowed participation up to a certain age. Schoor and Meshwork decided to try something different. With the help of family friend Cal Maxwell, a YMCA youth director, they launched Spirit League of North Carolina, a basketball league for athletes with special needs and disabilities, in early 2016. Spirit League operates year-round, offering athletes a consistent opportunity for socialization and exercise. “For us to have a continual program that goes throughout the year, that makes

it easier for the kids and the adults to make friends,” Meshwork said. Additionally, Spirit League doesn’t have an age limit, creating a place where participants always have a community, no matter their age. When creating the Spirit League, Schoor and his team went into it knowing that it would have to be year-round, it would have to be in a fixed place, in a safe enclosed environment, and it would have to continue forever. The nonprofit got its start in Apex and has since expanded to an additional league in Wake Forest. There are around 90 athletes in the league at any given time, from teens to young adults. “I have been surprised at the level of love and warmth that has permeated the entire program,” said Schoor. “The number one thing you see when you come to one of our practices is joy.”

The teams meet weekly to practice and hang out together, over three eight-week sessions held throughout the year. Their practices entail warm-ups, icebreakers, socialization and basketball skills and drills. The league also travels regularly to play at college and high school games in the area, and those games are some of the players’ and coaches’ favorite memories. “The most unforgettable experience was when our athletes were the halftime show of the 2019 N.C. State vs. Duke men’s basketball game in Cameron Indoor Stadium,” Maxwell said. “I am a huge N.C. State fan, so to see them get to play Duke and Zion Williamson in Cameron was incredibly special. Our athletes put on an absolute show for the Cameron Crazies.” “My favorite memory from Spirit League was when I made a half court shot at Panther Creek High School and at N.C. State,” said player Connor Fullem. Though COVID has paused any travel games for the near future, Spirit League hasn’t stopped. Volunteers have been holding Zoom and outdoor inperson practices and have tried to keep in touch with as many of the athletes as they can. They’ve been keeping busy with other activities too, like socially-distant walks, bike rides and car bingo.

“Our volunteers are really invested in [Spirit League],” Schoor said. “They know the athletes’ names; the athletes know them. They are all friends on Facebook, and it becomes a little bit of a family as well.” Spirit League’s volunteers are often high school and college students, so they are closer in age to the athletes, Meshwork says. There are few programs like Spirit League in Apex and Wake Forest, so it has been a much-needed resource for teens with disabilities and their families. “It has helped the community fill the void of needing some more programming for [athletes with] special needs,” said Meshwork. “It is all about building bridges between the special needs community and the community at large,” Schoor said. “Basketball is a great conduit and resource for that, and it enables so many people to see our athletes succeed, be happy and achieve and build the same type of relationships that I think those not in the special needs community take for granted.”

Spirit League’s emphasis on community and relationship-building means that it’s “not just for kids that love basketball. it is for kids that just want to be around other kids,” said Meshwork. It’s also provided a space for their parents and caregivers to find community, resources and help through one another. “There is so much uncharted territory with special needs young adults,” Schoor said. The founders of Spirit League have been surprised at how influential it has been in their own lives and the lives of their athletes. “Spirit League has been one of the biggest blessings in my life,” said Maxwell, “and I am so excited to see the continued impact it has on so many incredible people and athletes.” To get involved with Spirit League of North Carolina, either as a volunteer or participant, visit www.spiritleague.online. t

To create our 2021 list, Cary Magazine partnered with national survey company topDentists LLC, which sent ballots to dentists listed online with the American Dental Association and other local dental societies in Wake County, asking, “If you had a patient in need of a dentist, which dentist would you refer them to?” Dentists and specialists are asked to take into consideration years of experience, continuing education, manner with patients, use of new techniques and technologies, and physical results. Respondents are asked QUESTIONS? to put aside any personal bias, to use only their knowledge of their peers’ More information about work when evaluating the other nominees. Dentists are also given the topDentists’ survey process opportunity to nominate other dentists who they feel should be included can be found at usatopdentists.com. in this list. Once the decisions have been finalized, the included dentists are vetted with the North Carolina State Board of Dental Examiners to make sure they have an active license and are in good standing with the board. Of course, there are many fine dentists who are not included in this representative list. It is intended as a sampling of the great body of talent in the field of dentistry in North Carolina. A dentist’s inclusion on our list is based on the subjective judgements of his or her fellow dentists.

Keen on Korean WRITTEN BY DAVID MCCREARY | PHOTOGRAPHED BY JONATHAN FREDIN

WHEN IT COMES TO notable food trends, Korean cuisine has steadily gained favor with people seeking bold flavors, fresh ingredients, and an exciting dining experience. As it turns out, Cary has no shortage of quality Korean restaurants. Here’s our exclusive roundup of local places to check out and enjoy time and again.

SEOUL GARDEN OVERVIEW

With an original location in Raleigh, it’s all about the food at this unpreten-

tious spot that formerly housed the eatery Golden Pig. A wide-ranging menu provides plenty of bona fide options such as japchae (seasoned glass noodles with vegetables), monkfish soup, steamed pork belly, and spicy kimchi stew with tofu, pork and rice cakes. DISTINCTIVENESS

“I have really good connections with Korean food distributors, so we are able to get the freshest quality ingredients,” said proprietor Li Woo, who hails from Suwon, South Korea. “All our chefs are Korean and have been cooking for many years, so the food they are preparing is really authentic,” he added. Soups are prepared daily using meat bones to make broth. MUST-TRY DISH

seasoned vegetables and a fried egg, cooked and served in a hot stone bowl. PRO TIP

Ask for the spicy red sauce to add some zest to your meal. Also, be adventurous when it comes to eating the banchan (small side dishes) like bean sprouts, daikon radish, pickled cucumber, stir-fried fish cake and kimchi. BEFORE YOU GO

Bear in mind the restaurant is closed on Tuesdays. Call-in reservations are accepted, and lunch specials occur weekdays from 11 a.m. to 2 p.m. 815 West Chatham St., Cary (919) 234-6002 seoulgardennc.com

Korean Dining Etiquette Tips Politeness is vitally important in Korean culture. That said, here are a few guidelines to keep in mind during mealtime. • If sharing food from communal plates or bowls, always transfer food to your own dishware.

Customize the Korean barbecue with a variety of protein choices, from pork belly and marinated beef to chicken and jumbo shrimp.

HONEY PIG OVERVIEW

This stylish, expansive restaurant opened in late 2019 and offers Korean barbecue in a la carte and combo options. Proteins include seven varieties of pork belly, beef brisket, prime rib, soy-sauce marinated chicken, jumbo shrimp and more. You can also select from a tempting menu of soups, stews and prepared dishes extending from a short rib box to stir-fried spicy squid. DISTINCTIVENESS

“We are focused on high quality rather than just quantity of food,” said proprietor Unah Ko, a native of South Korea, but diners can count on generous portions and friendly service. Low-profile gas grills at each table make cooking easy. “We have a downdraft system, so you don’t have to worry about it getting too smoky or any odor getting on your clothes,” Ko said.

If you need anything during your meal, simply press the nifty call button located at your table. MUST-TRY DISH

The top-notch spicy pork bulgogi box, which is among the most flavorsome and piquant dishes we tried. Your tastebuds will be tingling in a good way. Pair it with a bottle of soju alcoholic drink made from rice.

• Transfer food from communal plates by turning chopsticks around and using the wider ends. This way the narrow, germ-infested ends are pointed away from the cuisine. • When eating food accompanied by a communal sauce bowl, avoid dipping directly from the vessel, but rather use a spoon to ladle sauce onto your own plate. • If dining with natives of Korea, no one should begin eating until the eldest person at the table starts consuming food.

PRO TIP

If you have a salad with your meal, try the house-made blueberry dressing. BEFORE YOU GO

Call-ahead reservations are preferred, but walk-ins are welcome. Be aware that the restaurant is closed on Mondays. Lunch service is available from 11 a.m. to 4 p.m., and specials are offered only on weekdays. 1065 Darrington Drive, Cary (919) 234-0088 | honeypignc.com

SEOL GRILLE OVERVIEW

Expect an elevated experience at this Korean barbecue refuge, which debuted in January 2020. Modern décor meshes with subtle traces of traditional Asian flair. Don’t miss the striking handmade pottery placed throughout the spacious dining room. Most guests come for the all-you-can-eat proposition, but you also can choose rewarding dishes like the house- specialty Seol chicken with sweetand-spicy garlic sauce, cold naengmyeon noodle and ddukbokki, which comprises sauteed rice and fish cakes, cabbage, onion, carrots and a hard-boiled egg in a spicy red pepper sauce. DISTINCTIVENESS

The all-you-can-eat experience comes with a 100-minute time limit proviso. In addition, if one person in a party orders tabletopcooked Korean barbecue, everyone else must do the same. “Some customers are nervous about cooking at the table, but we have servers who can help them,” said co-owner Sharon Huh, a Korean native whose family has been in the restaurant business for many years. Seol Grille also has a make-up air filtration system that constantly supplies fresh air into the restaurant, Huh says. MUST-TRY DISH

Scratch-made steamed beef and pork dumplings that practically melt in your mouth. Vegetarian-friendly “Impossible” dumplings also are available. “Even the dumpling skins are made in house,” said Huh.

Beef and pork dumplings are made in-house at Seol Grille.

PRO TIP

Be sure to savor the house-made chimichurri sauce with onions, oregano and parsley. BEFORE YOU GO

The restaurant is closed on Tuesdays, and on weekends, it’s best to call ahead before visiting. 2310 Walnut St. (Centrum at Crossroads), Cary (984) 241-9112 seolgrille.com

Wen-da-Hell Hefeweizen from Bearded Bee Brewing WRITTEN BY DAVE TOLLEFSEN | PHOTOGRAPHED BY JONATHAN FREDIN

One beer style that I’ve pretty much ignored for the longest time is the Bavarian wheat beer hefeweizen (pronounced - hay-fuh-veytssenn). Brewed to style it’s wonderful, but unfortunately, ones I’ve tried over the years have been disappointing. Giving up on the style would be easy, but a continued pursuit is more fun. “Hefe” is German for yeast and “weizen” means wheat, so the name translates to a wheat beer with yeast. What is beautiful about this style is it’s nice and light, but with a little twist -— the presence of banana and clove flavor/aroma courtesy of the yeast. Wait — banana, in a beer? That’s the key flavor I look for in this style, and so many of the hefeweizens I’ve tried just didn’t have it. There was clove, sometimes bubblegum and vanilla, but I was looking for that elusive banana. When looking for a beer for this article at Bearded Bee Brewing, the Wen-da-Hell Hefeweizen was highly recommended. There was apprehension based on my track record with the style, but why not give it a try? What a find! Visibly this is a hazy beer, and it’s not that way because it’s trendy. The style has been around for over 500 years, so that appearance is long established. The beer started off with a soft banana-clove aroma, but what about the flavor? The banana flavor was beautifully present — smooth and easy to drink. This beer is definitely one to be enjoyed all year long.

Bearded Bee Brewing, located at 20 E. Campen St. in Wendell, is just a short ride and well worth the trip! The name of the brewery exemplifies the theme of the bee-centric taproom. The beer menu is all over the style charts, so there’s plenty to choose from to appeal to any palate. Dave Tollefsen is one of the NCBeerGuys – they have promoting North Carolina craft beer and breweries on their website, ncbeerguys.com, since 2012. He is an avid homebrewer for more than 10 years and is also part of the North Carolina Craft Brewers Guild.

‘Millenium’ Allium: More Than a Spellcheck MILLENIUM — if I had spelled this word that way on any of my eighth-grade English papers, a grade far south of “A” (a.k.a., 4.0) would have surely followed. But I’m a big boy now, and I can spell it any way I wanna. Actually, ‘Millenium’ is not a spellcheck error waiting to happen but rather the name given by plant breeder Mark McDonough to an outstanding ornamental onion he introduced in 2000. Even though it has been around since the beginning of this millennium, 98 JUNE/JULY 2021

‘Millenium’ has only recently caught the attention of the general gardening public. What really shined a light on ‘Millenium’ was it being named the Perennial Plant Association’s 2018 Perennial Plant of the Year. After that honor, this herbaceous charmer became an easier springtime find in many garden shops. I’ve even seen it in full flowering flaunt at big box home improvement stores with nursery centers.

The award was well earned. ‘Millenium’ is a compact cutie that has a foliage spread of only about 12 to 18 inches wide and tall. Sturdy, 18-inch-high stems support two-inch-diameter, round umbels bejeweled with masses of pinkish-purple florets starting in June when many flowering annuals and perennials begin to wind down in the building heat. Another advantage of ‘Millenium’ is that it is a clumpforming perennial, spending more energy expanding by way of underground fibrous bulb reproduction than seed production, meaning it will behave better than many other ornamental onions that can sometimes seed about with impunity. While you are admiring ‘Millenium’ in bloom, expect plenty of company from butterflies and bees. Conversely, don’t worry about deer and rabbits taking a culinary interest in this plant. ‘Millenium’ is happiest in full sun and resists drought, but placing it in a bed that has been well-worked with gobs of quality commercial garden soil or compost added will make for a healthier plant by providing an even supply of ground moisture through the long summer season. Fluffing the soil up with such organic amendments will also help it drain better — another plus because this ornamental onion doesn’t fare well in soggy sites. Come the fall, ‘Millenium’ will pack it in for the growing season with its foliage flopping to a withered brown, which can then be cut back. If this pretty has grown beyond its bounds, or you simply want to spread its beauty around, late autumn is also a good time to dig up and divide the clump. L.A. If you have been experiencing diminishing visual returns in an established daffodil bed the last few years, chances are this lessening of blooms is the result of overcrowding. Now is a good time to dig up, divide and separate the bulbs. Since they are dormant, the bulbs can be stored in a cool, dry area until the fall when you typically plant new, store-bought batches of bulbs, but replanting now in well-amended soil after separating them will also work just fine. Extra nutrients are not necessary at this time — wait until autumn to apply a specialized time-release bulb fertilizer around the sleeping beauties.

To Do in the GARDEN

June • Couldn’t part with your poinsettia last Christmas? Give it a vacation outdoors now in a semi-shady spot. Also, for a fuller, more compact plant, prune each branch back, leaving three to five leaves on each stem. • Do something different for the gardening dad in your life this Father’s Day. Plant a specimen, unusual or hard-to-find tree, shrub or perennial in his honor.

July • Better tasting — and least slimy — okra pods are best picked when they are about three inches long. And for little or no slime, leave the pods whole when boiling okra. • Continue filling the bird bath with water at least once a week, and to keep this refreshment stand fresh. Also give it a good cleaning every two to three weeks.
