Brie
Brie is a “soft-ripened cow’s-milk cheese” whose origins arose from France. The curd of this cheese is covered in Penicillium candidum, a mold whose spores form the thin crust so characteristic to one of the most flavorful cheeses.1 This cheese takes three to four weeks to ripen and develop an odorous and pungent aroma which many so thoroughly enjoy.
