Hello readers, Welcome to the July-August issue of Champa Meuanglao. The warm rains are greening the expanses of Laos’ rice fields and forests. The rivers are rising and it is now the season for the Boat Racing Festivals, which spring up all over the country. In this issue we meet Laos’ premier clay sculptor who uses his skill to teach life lessons. We also meet an American entrepreneur who shares the tasty food of his homeland with the people of Vientiane. On a similar note, we also meet a woman bringing tastes of Korea to a wider audience in Laos.

BEGINNING OF BUDDHIST LENT

MADE IN LAOS FAIR

The three month Buddhist Lent begins in July, which also coincides with the rainy season in Laos. Monks are required to stay in one temple for the duration, which comes from an old practice of wandering monks inadvertently trampling farmers’ crops during the growing season. Lao people make certain to give alms on this morning. Over ten wedding organizers are joining this luxury exhibition to showcase special wedding packages exclusive to this event. The fair will also offer food and wine tastings, a fashion show, a live band, and a lucky draw. Confirm your wedding ceremony during the event date and receive many special offers from Champasak Grand Hotel. facebook: @Champasakgrandhotel

DAY 1 CHANGCHUI CREATIVE PARK Also called the “Plane Market,” this hive of local creativity is constructed from antiques, reused, and recycled items, giving it a very well-planned vintage feel. A small cinema, as well as stages, allow space for performing arts. The focal point here is a disused airplane where passengers take off for fine-dining adventures, complete with a ride down the plane’s large spiral playground slide.

THE GRAND PALACE The centerpiece of the old city, this has been the official residence of Thailand’s kings since the city was founded, and is a delight for the eyes as every corner and crevice are filled with color and filigree. Although no longer the day-to-day residence of the royal family, ceremonial functions still take place here. It is also highly revered by Thai and Lao people, as the country’s most famous Buddha image, the Emerald Buddha, is kept here after previously residing in Vientiane.

DAY 2 WAT ARUN With a name meaning “The Temple of Dawn,” Wat Arun sits on the west side of the Chao Phraya River where it glistens in the morning sunlight. This is one of the best known landmarks of the city and even features on the reverse of the 10 baht coin. It is covered in white plaster and shards of broken porcelain arranged in beautiful patterns. Legend has it this crockery came from a ship that sunk in the river nearby.

There are local restaurants at the ferry pier at Tha Tien which offer fantastic views of Wat Arun as you dine. For a more upscale option, enjoy a fine meal at Sala Rattanakosin or Riva Arun.

CHINATOWN A small Chinese settlement was located in the area that was to become the Grand Palace, so the king granted them this land surrounding Yaowarat Road in exchange. Nowadays the area still retains a strong Chinese flavor with several famous markets, and is a very popular area for street side food stalls and restaurants in the evenings.

T

he people of Southern Laos are well known for their positive energy, big hearts, and close family ties. This shines through in their every interaction with visitors. So, it’s no wonder that the villages of Don Kho near Pakse (Sanasomboun District), Don Daeng in Champasak (Pathoumphone District), and Nong Luang in Paksong went into the homestay business. Locals are eager and excited to let tourists experience their lives and culture. “I started my homestay because I enjoy being hospitable. I like taking care of people,” said Mr. Vieng, head of the homestay association on the island of Don Daeng. Many owners are so good at what they do that they even achieved several ASEAN Homestay Standard awards for their excellent hospitality. All rooms are equipped with basic necessities; there are even some with air conditioners and Western-style toilets. The price per night differs depending on what’s included: from 30,000 kip for a single person per night without breakfast, up to 80,000 kip for a single person per night with Lao breakfast and dinner. Tourists must make a short boat ride to reach Don Kho and Don Daeng. While on the islands, there are several relaxing activities you can do to pass time: cycling (approx. 20,000 kip/bicycle), boating around the island (approx. 350,000 kip/trip), and fishing (approx. 130,000 kip/person). An ancient brick stupa famous among locals is located in the middle of Don Daeng surrounded by lush vegetation and stone Buddha images. There is also an abundance of Lao food on Don Daeng, but for more variety, the restaurant at the upscale La Folie Lodge is open for non-guests from 9 am to 9pm every day. Don Kho residents, meanwhile, are known for their weaving skills. Tourists visiting the island can also try weaving lessons at the homestays there. About an hour away from Pakse, Ban Nong Luang is the starting point of the famous Tree Top Explorer by Green Discovery, a system of zip-lines over steep gorges near a waterfall. Trekking in the forest around Nong Luang is also possible with a local guide (approx. 125,000 kip/guide for 2 persons). There are no restaurants in the village, but homestay owners can organize local food for guests.

SOUTHERN LAOS

As a country, Laos’ laidback nature results in tourists feeling like they can forget about time altogether. The term “sabai sabai” has many meanings, but in Laos, it is a way of life. It is the belief and understanding that there is a time for everything. Visiting these villages reminds guests of what makes the people of Southern Laos unique – their incredible warmth and generosity. Southern Laos as a destination is not only about wonderful heritage sites and nature. It’s about the warmth, character, and pure hearts of its people. Article developed by Mr. Outhay Khamsomphou of the Southern Laos Marketing Task Force. Special thanks to the local Information, Culture, and Tourism (ICT) offices for their cooperation.

CAPITOL IDEA

Great food and an amazing view is no tall order. TEXT BY CAMERON DARKE

PHOTOGRAPHS BY PHOONSAB THEVONGSA above: Ray's Capitol Grille offers stunning panoramas over the city 1. Guests may choose to sit at the bar or at comfortable tables 2. Royal Eggs Benedict 3. One of Ray's famous hamburgers 4. Sunset view toward the west

igh above Vientiane, atop one of the tallest rooftop restaurants in the city, breakfast is ready. Eggs flip, bacon sizzles, and the mixed aromas of milky pancakes and freshly brewed coffee waft about on the breeze. There is no doubt the view is a sight to see, but the kitchen is a site to smell, as well. Ray's Capitol Grille is the flagship restaurant of Daniel Buchanan, a man with no one left to one-up but himself. And in a country flavored with French heritage, Daniel has successfully brought the classic American menu to Laos. Wanting to create a space that captures the quintessential American dining expe-

rience, and with a panoramic view, Ray's Capitol Grille serves as breakfast balcony and evening bar and restaurant. Open from early morning for breakfast, diners can expect dishes such as blueberry pancakes topped with rich Marscapone cheese and homemade blueberry syrup, or the eggs benedict with smoked salmon or ham. Some of the more quintessential American breakfast dishes served include huevos rancheros with locally produced chorizo sausage, or the chicken-fried porksteak topped with a creamy southern-style white pork gravy. Meanwhile, the top floor of Capitol Residence provides a viewpoint seldom seen in low-rise Vientiane, and at sunup and sundown, it is a visual feast. Dinner hours include specialty gourmet burgers, "surf and turf, a wide selection of organic salads, and a nice variety of Tex-Mex dishes. But Daniel took a long, hard road to the top, with grits and wits helping him on his way. A long-time Bangkok resident, Daniel

had always enjoyed visiting Laos, and decided to make a move when the floods hit Thailand in 2010. "Our house was underwater. It was a difficult time for everyone, and we just thought we'd make a change," he says. Arriving in Laos, he quickly noticed a glaring gap in the market when it came to the restaurant scene. Gallic gastronomy was common, and there were pizza and pasta aplenty, but few were serving real American fare. And so Daniel began it all in a small, hole-in-the-wall space downtown where he housed his wife and young son, and served up hamburgers and cheesesteaks to hungry patrons.

MORE INFO Ray's Capitol Grille is located on the 10th floor of the Capitol Residence Hotel. It is open for breakfast and brunch from 7 am to 2 pm on weekends, and in the evening for tapas, cocktails and dinner, which includes a gourmet burger selection, wide variety of fresh organic salads, and a selection of grilled steaks. The space is available for private functions and includes a professional bartender.

"THE WORD SPREAD PRETTY QUICKLY. YOU HAD THIS HUGE EXPATRIATE POPULATION WHO HAD BEEN CRAVING SOME OF THE AMERICAN CLASSICS, AND A YOUNG LAO POPULATION THAT WANTED TO TRY IT."

4

2

3

And people just could not get enough: "The word spread pretty quickly. You had this huge expatriate population who had been craving some of the American classics, and a young Lao population that wanted to try it." One thing led to another, and today Daniel runs multiple restaurants as well as a school canteen, employing a total staff of thirty. His mission, he says, is to help bring more respect to the hospitality business in Laos, educating people and helping them understand that this can be a career choice. He focuses on providing employment for rural Lao women, who often have few prospects. And he has built a pathway for them to advance through, beginning as a cook or a waiter, and moving right up to restaurant manager. And despite his success, Daniel is not quite ready to hang up the skillet. With plans for a new venture, you can bet your last dollar the griddle will sizzle and the cheese will flow, and whatever Daniel does will be a capital idea. JULY / AUGUST 2019

INTO THE WILD

I

n off-the-beaten-track parkland, 60 km north of Vientiane, a young British couple are giving a new lease on life to the nation’s zoo. It’s no ordinary revitalization of ancient pens for wild animals, but a multi-year project elevating wildlife rescue and conservation throughout the country. Eve Mansfield and George Sullivan have run a rescue, rehabilitation, and release center around-the-clock since they took over the reins of the Lao Zoo two years ago. The pair, who met at the start of their careers in a Yorkshire zoo, headed to remote wildlife projects in Australia and Southeast Asia before pitching up to a job at the zoo. The couple quickly realized the potential to forge something special for multiple species, and create an education hub for the nation – the Lao Conservation Trust for Wildlife. “We’re trying to build up the Trust in this country,” Eve tells me. “It really is like a country-level project. It’s daunting, scary and exciting.” The ex-owners of the Lao Zoo supported the couple’s move to establish Laos’ only non-profit foundation for wildlife rescue, rehab, release, and education, and continue to help finance and support the venture. Funds also come from personal donations, conservation bodies, volunteer programs, western zoos, the EU, and the British Embassy. The center’s days are focused on the admin, staff, and 500 animals in its care, including furry Frida, a baby Phayre’s Langur with bushy eyebrows who thinks George is the bee's knees as he feeds her non-stop.

GETTING THERE The centre is located in the small town of Ban Keun, 60km North of Vientiane Capital. It can be accessed by public bus on the Vientiane–Ban Keun route departing daily from the Morning Market. WANT TO GET INVOLVED? To make a donation or enquire about an internship or volunteer program, contact the Lao Conservation Trust for Widlife at: lctwildlife.org or facebook.com/ lctwildlife

The couple keep a phone under their pillow – a 24-hour emergency hotline – and go anywhere at any time in their pickup truck/animal ambulance. George recalls answering a call to rescue two moon bears playing on the forecourt of a petrol station. Looking at images of 15 kg babies he imagined the call-out would be a breeze but when he arrived two 40 kilogram animals were messing about on the highway and had to be anesthetized. His team also recently rescued 105 birds from pet shops in Vientiane. Animals come into their care in different ways. Locals drop animals at the door several times per month – either by anonymous dump, or coming in to explain. Monks who care for donated otters, bears, and primates in temples also dial the duo. But many of the species are illegal wildlife trade rescues. Government Forestry Department inspectors confiscate animals and send them to the LCTW. Word is spreading, too, on social media about the trust’s work, and is gradually reaching stewards at provincial forestry departments: inspectors from Savannakhet called recently with a rescued haul of 20 king cobras, 30 tortoises, and some pangolins. All new arrivals are assessed by vets at the onsite Animal Hospital. To qualify for rehab, all native species are assessed for physical and mental health. Any animal habituated to humans will never be released, Eve tells me, because it’s certain the animal will find itself a victim of the illegal wildlife trade. Once given a clean bill of health, fortunate individuals are released into national protected areas with camera traps. Recently, two tortoises and a pangolin that had recovered from snare wounds were released into the Nam Et-Phou Louey in northeast Laos, a protected area where the Wildlife Conservation Society monitors eight camera traps and runs an ecotourism project. “Hopefully, the illegal wildlife trade will decrease and we’ll have less wildlife in the center,” Eve says, “but this site will evolve with the issues Laos faces. It will go with the trends and issues as they emerge.” The couple’s commitment is unwavering: “In the future, we want to go into the national parks, do fieldwork, pay for rangers and camera traps, etc. If it helps the conservation of wildlife in Laos we will help.” After lunch at the onsite restaurant, the pair guide me around pens on the 100-acre site, telling me about the animals that will never taste freedom – ex-pets, amputees from snare wounds, toothless big cats, etc. They are cared for in the sanctuary and their lives improved somewhat with resocializing, more space, a new diet, and exercise to resurrect muscles for climbing. I meet lifelong resident Rambo, a beautiful leopard; a Binturong – which looks like a cross between a bear, otter, and a sloth; and a pigtailed macaque, who used to be afraid of grass as he lived on concrete for 18 years.

1. A Great Hornbill, the largest species of hornbill which is sadly illegally traded for its beautiful red beak 2. A natural habitat for housing Macaques 3. Taking a DNA sample from a Binturong 4. Rambo, a 13-year old leopard at the sanctuary

2

Many of the animals have lived at the zoo since it opened in 1994, George says, but there are creatures who go way back to its origins in the 1970s as a government farm populated by deer and crocs. What can they do with inherited old stock? It’s the 70 bequeathed crocodiles who represent one of the most exciting challenges for the trust. Many are Siamese and saltwater hybrids but DNA tests on onefifth of the population revealed shocking news – 90% were pure Siamese. With less than 70 crocs in the wild in Champasak and Khammouane provinces, this news brings high hopes for a breeding programme with the aim of releasing new crocs back into the wild where it’s safe for the animals and locals. It’s important, George and Eve say, that these same locals are invested in the Trust and the welfare of the nation’s species – a good many listed as endangered. Thus the site will be open to locals and foreigners. Educational tours will launch later this year with ticket sales to foreigners funding free access for Lao visitors. Tours will visit the sanctuary and an education hub warning visitors of the illegal wildlife trade.

At the moment paying volunteers are welcome from all over the world. Professional internships are available, as are opportunities for wildlife fans who want to work with husbandry, food enrichment programs, and building enclosures. Donations of talent (social media/web savvy folk) are also welcome. International volunteers, who live together in rather smart woodland bungalows, rise with the unique song of Northern White-cheeked gibbon at 7.30 am and go to bed to the chatter of jackals at night. But there is one species which makes little noise but is getting extra love and attention. Laos’ first dedicated pangolin enclosure, paid for by the British Embassy, is newly opened, and a special rare Chinese pangolin living alone in stylish quarters recently gave birth to a boy. Her baby represents new hope for her species and the revitalized old national zoo. JULY / AUGUST 2019

uring the three-month period of Buddhist Lent, monsoon rains have swollen the rivers, allowing mythi cal water serpents, known as Nagas, to swim into the irrigated paddies. As the Lao wait for their rice to grow, they organize longboat races between neighboring villages in an attempt to lure the playful guardian Nagas back into the rivers before they recede. The villagers compete for bragging rights and prizes as crowds cheer on with great merriment. In Luang Prabang, the tournament is held halfway through Buddhist Lent (in 2019 it will be on August 29th) on the Khan River as onlookers crowd both banks. At the ďŹ nish line, Miss New Year and Lao dignitaries watch the races from a grand pavilion and award prizes to the winning teams.

Rowers aim to synchronize the speed and maximize the strength of their strokes. This is the winning formula for success in this competition.

Onlookers pray at the beginning of the race. The festival takes place on Hor Khao Padap Din, a festival occurring in the middle of Buddhist Lent which honors the spirits of hungry and forgotten spirits. In the wee morning hours, believers will leave small parcels of food and oerings around fences, gates, and stupas for the spirits. JULY / AUGUST 2019

above: Monks bless the participants and the populace before the races begin. They also ask for a plentiful harvest and prosperity for the town. right: Crews of 55 people maneuver each boat. Most of these are paddlers and one is a steerer. They keep their pace by shouting in unison with each stroke.

Novice monks at Wat Siphoutthabath have a good vantage point of the races and festivities from their temple on the slopes of Phousi Hill.

Races are often neck and neck. The men at the front of the boat call out directions to the paddlers and steerer and keep an eye out for obstacles.

MOLDING HIS

aturday evening at i:cat, a small gallery in central Vientiane. Visitors siphon into an upstairs screening room. Projected inside, a herd of colored buffalo, cheerfully rendered in clay animation, circle around a barren white plane. At first, the inviting film – with the sweetness of its wobbling animal protagonists – suggests a young audience. But the scene grows sinister as human figures arrive on screen and, mesmerized by the rotating herd, sprout buffalo heads and march along. The film, entitled “Flow,” is the latest by Vientiane-based artist, Souliya Phoumivong. Flow was featured at the Asian Pacific Triennial in Australia in November last year, making Phoumivong one of the first three Lao artists to showcase their work at this significant, global exhibition. Flow’s affinity to children’s programming is no coincidence. Phoumivong might be recognized as the artist behind the children’s television series Our Village, which ran from 2012 to 2017. Although Phoumivong initially balked at working on a children’s program – he wasn’t sure if he could create art exclusively for a younger audience – he found the change in perspective invigorating. “It was hard to adapt – but with experience, I began to see like a child,” Phoumivong says. Since Our Village, Phoumivong has found new energy in exploring mature themes through childlike visuals. As is the case in Flow, the sunny levity of his clay animals makes the violence of his subject particularly unsettling. “Many suggested that because I was dealing with something serious and dark, I should make the art dark too,” Phoumivong observes. “But it makes the meaning stronger when you have contrast.” Flow’s themes are serious and dark indeed, dealing with the hypotonic desire to be in unison at the expense of one’s personal, human-like qualities. “Rich, poor, bright, stupid – everyone has their flaw, the inclination to just follow the train,” Phoumivong says. Flow in part explores Phoumivong’s personal struggle to resist the pressure to create more traditionally lucrative art. Phoumivong was classically trained in painting at the National Institute of Fine Arts in Vientiane, where he graduated in 2008. But in 2012, a residency at Youkobo Art Space in Tokyo led him to experiment with video – here he “fell in love” with claymation. In 2012, Phoumivong returned to Vientiane and opened Clay House Studio, which produces video and stop-motion works and is the first of its kind in Laos. Phoumivong’s departure from painting was met with disapproval from family and friends. “When you do things differently, others become uncomfortable,” Phoumivong says. Many around him worried a career in animation wasn’t financially tenable. Phoumivong recalls being asked: “Why do you have to stop painting? How will you make money?” While traditional art forms like painting, sculpture, and textiles have long been supported in Laos by the tourist industry, financial and institutional backing for contemporary art has typically come from abroad. Cities like Singapore and Tokyo have recognized the talent of contemporary Lao artists through exhibitions and residency programs. But contemporary artists haven’t always had the chance to show their work at home.

In recent years, the efforts of local artists and gallery owners have strengthened the local presence of contemporary art. Galleries like i:cat feature material installations, performance pieces and audiovisual work, and new non-profit initiatives like Elevations: Laos support emerging contemporary artists. The National Institute of Fine Arts boasts more students studying contemporary art than ever before. Phoumivong has seen his own class on media and communication design spike in enrollment from only two students in 2014 to 30 this year. Phoumivong has also found the local response to his work indicative of burgeoning interest in new art forms. “Normally, people just come on opening day – but for this exhibition, people come every day, and stay for hours, just asking me questions,” Phoumivong says. Phoumivong sees this not only as a matter of personal success, but proof of how far Vientiane has come towards supporting contemporary art. “Many years ago, students would ask me, but how can I survive doing this? Now I have an answer: look at my life.”

老挝粘土艺术家在全球艺术界崭露 头角 翻译 : 尹航 图片来源:PHOONSAB THEVONGSA / VAN HAI

Souliya

“MANY YEARS AGO, STUDENTS WOULD ASK ME, BUT HOW CAN I SURVIVE DOING THIS? NOW I HAVE AN ANSWER: LOOK AT MY LIFE.”

It is no exaggeration to say that eating is a national pastime in Laos. Lao people say “Have you eaten yet?”, where the Englishman would politely ask “How do you do?” This is a nation of slow cookers, meticulous chewers and enthusiastic consumers. There is always time to prepare a full set of dishes, catering to a perfect balance between salty, sweet, sour, bitter, cooked, fresh, mild and spicy. A Lao mother, daughter or wife will always prefer the slow and thorough grind of the pestle against the mortar to quick, efficient and motorized high-tech cuisine equipment. The Lao kitchen is typically healthy. Fresh produce and cooking techniques that rely largely on grilling and steaming make for an exceptionally nutrient-rich and low-fat diet. However, malnutrition is prevalent, especially in rural areas, where diets, because of poverty, are typically less nutrient-dense and diverse than in urban settings. Vegetables are one of the most important food groups in Lao diets. All ethnic groups consume veggies on a daily basis, with 80 percent of vegetable intake coming straight from the jungle and peripheries of paddy fields. Wild vegetables and herbs are most commonly a staggering variety of leaves, some velvety matte, others vibrantly glossy, serrated or smooth, oblong or round, pungent or unassuming in fragrance. Names as exotic as sawtooth herb, ivy gourd leaf, elephant ear leaf, acacia leaf, or my personal friend in the herb category: hairy basil colour Lao platters in different nuances of green. Ask for a noodle soup, a papaya salad or the specialty dish of dishes: Laap, at any Lao food stall or restaurant, and you will notice a big plate of leaves arriving with your order. What seems like the perfect ingredient to an urban, up-and-coming healthy vegan lifestyle, is in fact very much the norm in many remote villages of Laos. Where protein sources are scarce, leafy greens have added value to local diets for centuries. Leafy greens and herbs are known for their high value in iron and calcium. Iron deficiency is the main cause for anemia, a lack of red blood cells, which affects 40 percent of women in Lao PDR. Lack of calcium causes reduced bone density and muscular cramps.

Since the consumption of dairy products is not typical in Laos, especially in rural settings, greens are all the more important as a main source of calcium. 100 grams of watercress (pak nam) contain more calcium than the same quantity of yoghurt. The United Nations World Food Programme is currently supporting authorities and communities to provide healthy school lunches to about 140,000 primary school students around Laos. The programme, amongst other components, also helps schools to grow their own native, leafy green vegetables and herbs, to supplement the daily meal with important nutrients. The students enjoy growing their own vegetables, while learning about the benefits of these green leaves to their bodies, and nutrition in a more broader sense.

Many upland ethnic groups use herbs and leafy green vegetables for more than just cooking. They retain ancient knowledge about the medicinal use of many of these vegetables. Rice paddy herbs (pak kanyaeng) and ivy gourd leaves (bai tamnin), for example, are not only known to treat various conditions, but they are also tasty and nutrient-dense ingredients in salads or soups. Ethnic wisdom around plants is however threatened, since it is not consistently documented because the oral transfer of knowledge about the benefits of wild vegetables is falling prey to the breaking up of traditional family structures, due to rural-urban migration, and interest in new, imported eating habits. The United Nations Food and Agriculture Organization has recognized the importance of encouraging the use of native local produce to improve diets and generate income, and operates a project that encourages 100 farmers in the upland areas of Southern Lao PDR to plant a variety of leafy green vegetables.

Leafy green vegetables are not only nourishing the body with important vitamins and nutrients, but also give villagers who live in remote areas something more than that. These green leaves carry hope. That they are tasty, does not hurt either. Khao Poon is a nutritious noodle soup, much loved by many Lao, who often prepare it for family celebrations. We have given the tasty dish a vegetarian spin, and have added loads of greens. Scan the code to try it at home!

Oh la la! Annabelle Cafe brings a certain je ne sais quoi to Vientiane’s dining scene. TEXT BY JULIA CASE-LEVINE PHOTOGRAPHS BY PHOONSAB THEVONGSA / ANNABELLE CAFE

hen Vientiane’s second branch of Annabelle, a French bakery and patis serie, opened earlier this year, the restaurant’s management planned to limit the first week’s customers to family and friends, choosing not to advertise the new location until after a successful test run. But the plan to have an intimate opening was quickly foiled. The minute passersby saw patrons sipping coffee and munching croissants on the patio, the customers came flooding in. “People were really curious when they saw us setting up and landscaping, ” recalls Lao-Frenchman David Bant of Annabelle

Group. “Some would come by every day and ask when we’d finally be open.” It was with stunned pride – and a touch of panic – that Annabelle’s management watched customers inundate the store before it had intended to officially open. That the restaurant’s premises had attracted anticipatory ogling is hardly surprising. Replete with fountain, manicured hedges, lanterns and garden swings, Annabelle’s terrace transports to a different terrain. Built with Paris in mind, the owners worked with an architect to meticulously craft the new location. In France, people are used to having an excellent variety of bakeries just meters from home. At Annabelle, a mouthwatering selection of freshly baked goods – faithful to French flavors and recipes – is now available in Vientiane. Everything is made from scratch in the cafe using artisanal craftsmanship with only the finest ingredients – without anything artificial or industrial.

The first Annabelle, named after the daughter of one of the business partners, opened two years ago in downtown Vientiane. The location quickly became a buzzing spot, particularly popular with tourists. But the owners weren’t yet satisfied. They wanted to pair this French-style bakery with the unique and specific ambience that inspired it. Annabelle 2 retains the first branch’s superb quality of baked goods – the croissants are impossible to beat – in a lush, leafy, and delightful environment. Located a short drive from downtown Vientiane, Annabelle 2 attracts both a local and expat crowd, and even the occasional Thai celebrity.

What’s next for Annabelle? Recently, the restaurant has fielded requests from entrepreneurs to franchise and open locations in Luang Prabang and even Thailand. But first, they want to focus on developing their product – perfecting their pastries. For now, Annabelle 2 is still evolving. An expansion to the patio will accommodate increasing demand for outdoor seating. The team is also working to create a special dinner menu, a natural pairing with the terrace’s twinkling lights and romantic ambience, which they hope to release this summer. The owners believe that in sharing their passion, they will offer a beautiful and delicious piece of France with their authentic recipes and homemade products. JULY / AUGUST 2019

waddled in lush plants and flowers and straddling a burbling brook, Rosewood Luang Prabang is a ro mantic sanctuary for those seeking escape and seclusion after walking the city’s UNESCO-protected villas and temples. Climbing up a hillside, beyond the Nam Dong River, 23 rooms including riverside villas, pool suites, and luxury tents are discovered off herringbone brick walkways stitched together with wooden bridges. There’s a sense of discovery among the trees – like wandering a maze – although with no sense of being truly lost, just a

fresh-air meander through the pale-pink hibiscus-flecked gardens. Riverside villas and pool suites overlooking the cool flow below have been fashioned in homage to the 19th-century French stalwarts of the Mekong Expedition, the men of the Indochina civil service, and Laos’ long gone Royal Family. Each room a curated wunderkammer: vintage trunks, butterfly nets, desks, botanical prints, framed maps, books, with taut white bed linens, and stencilled bathrooms. Higher up the jungly hill, six safari-style luxury tents, celebrating a handful of hilltribes, tower over the gardens like an explorer’s retreat. Bangkok-based American architect and designer Bill Bensley has crafted a luxurious cocoon in the heights – tangerine silk lanterns dangle over a turquoise velvet headboard, crowned by an exquisite tasselled Lisu headdress in pinks, royal blue, mustard

and emerald green, and jewel-toned cushions brighten the white bed linens. Carved elephant figures, a framed Lisu minority embroidered blouse, and a vintage brass blade fan evoke seriously smart jungle living; golden stencilling on turquoise walls brings to mind the dazzling mosaics found in Luang Prabang’s Royal Palace. No need to roll down the tent window panes for privacy in these sky-hugging hideaways: sink into the roll top bathtub underneath the gorgeous teardrop shaped mirror at night with an own-brand Vintage Negroni, or simply wake from your slumber with sunrise views across the hills, and the odd golden stupa piercing the distant view beyond. You’ll need to leave the room sometimes, but the menus crafted by French-born chef Sébastien Rubis, sourcing local and organic food in Laos since 2001, are more than tempting, and served on custom-made chi-

Sébastien’s focus at Rosewood is on Luang Prabang royal cuisine, made and served in a traditional way: intensely fragrant Goi Paa – minced river fish with banana flower and galangal; Phanaeng Kai, a chicken coconut curry; and tantalisingly textured Or Lam Ngoua, a dish of braised water buffalo, bitter leaves, eggplant, and sakhan, a local pepperwood. Light bites such as buffalo burger and Beerlao battered fish are perfect for lunch. Overindulgence in the cuisine required nothing more energetic than a wander over to the Sense Spa where a hot poultice of camphor, Vietnamese coriander, white butterfly bush, crinum lily, and Lao rice eased my back muscles while I watched the chirpy brook skim over stones and slip past ferns through a glass pane in the floor below. My view of the natural world was as relaxing as the treatment itself. Of course you can visit traditional villages with a guide, mountain bike, or bathe in the area’s twenty waterfalls, or even receive meditation classes from charming former Buddhist monk Sommaiy, or step it up on a walk with an elephant, or an ultralight scenic glide over the golden spires of Luang Prabang. I chose not to. My kind of adventure was simple – listening to the tinkle of the river while peering over the 200 miniature wooden pachyderms which appear to be walking over the Elephant Bridge Bar, and chatting to Sommaiy, in the soft glow of lanterns in the garden, while he slow toasted marshmallows over the burning coals of the fire pit.
