PAN-X AND JA FOOD AND DRINK FESTIVAL LAUNCHED In celebration of the 10th anniversary of the CB Pan Chicken Championship, we’ve dubbed the 2015 series PAN-X and unveiled our latest offering: Jamaica Food & Drink Festival. Launched at the Jamaica Pegasus in July, the hearts of the audience were captivated by the real life stories and experiences of past contestants that proved that in spite of the adversities, hope and inspiration can come from the unexpected. Pan has evolved into so much more than a cooking competition. It provides a platform for these pan men and women to grow, develop their small businesses, and drive their entrepreneurial spirit. Our guests were feted to pan chicken courtesy of Sitrena Gilling, the reigning CB Pan Champ. Check out highlights from the launch.

The BADDEST Sausages were at EDX - Electronic Dance Xposed – the Electronic Music Concert, keeping patrons full, energized and dancing. In its 3rd staging, EDX offers something different than the usual party. Packed with the biggest DJs and dancers in Electronic Music from around the world, there was a spectacular light show, fun costumes, a wicked vibe and of course, the aroma of freshly grilled Bad Dawgs! Nutramix Denbigh Champion Farmers beat the heat with innovation

As they prepped for an exciting Denbigh, Agricultural, Industrial and Food Show 2015 (July 31 – August 02), our National Champion Farmer 2014, Richard Bennett, and Young Champion Farmer 2014, Sheldon Williams were highlighted in the press for their innovative water management and farming techniques. With one of the driest summers on record, for farmers water management isn’t just about saving water, but saving their livelihoods. Williams, has over 1,000 pigs being raised for sale to Copperwood Farms, and also grows 30 acres of pineapple among other crops – this means he needs a lot of water. He uses numerous tanks and ponds to store water, and has a waste water treatment facility. Bennett, a CB Chicken contract farmer has between 150,000 and 160,000 birds on his farm. To beat the dry weather, he has a 120,000 gallon water tank underground, and uses gutters on his chicken houses to capture rainwater. His farm also has a state of the art water treatment plant for his livestock and collected water is used to irrigate his crops.

Quick &Easy Pizzas

Get your kids cooking with Caribbean Passion Summer is almost over, but before the kids go back to school, Caribbean Passion shared some fun ways for the little ones to get involved in the kitchen with The Gleaner. How? Pizzas! They are fast, fun, and with a little creativity – can be made in a flash. We visited Delicious Occasions’ Young Chefs Summer Camp to learn how to make a great Meat Lovers Pita Bread Pizza with our ready to eat products. Here kids can learn the basics of cooking, including knife skills, simple breakfast, simple dinner, cake and pastry making. For the more advanced young ones jointing and deboning of chicken, stock making and international Cuisine – there are also baking and ‘gourmet’ classes. As these little ones show, you’re never too young to get cooking.

Our CB Summer Work Programme CB Group’s High School Work Experience cohort tour Caribbean Hatchery

Our recently expanded summer work initiatve, now includes a High School Work Experience Program (CB Kids only), as well as a Summer Internship Program for tertiary students. This year, 19 students joined us from High School, and 14 from tertiary level. Brandon Gurrell, shared his experience of the orientation segment of the programme, which included tours of Newport Mills, Caribbean Hatchery, Freetown, Arnold Road and Imagination Farms: “Overall, it was very interesting to see all the company’s operations in action. This orientation process really encouraged me to put out my best work for which ever task I was given at work.” A BIG thanks to our Interns and Summer Workers for their hard work – The CB Group Family wishes you all the best in the new school year, we hope your experiences were great!

A Day In The Life Of…

Stanford Hamilton

Livestock Support Specialist

How long have you been working with the CB Group? From August 2009, so just 5 years now. What section of the Group are you in and what is your role? As of July gone, I’m with Newport Mills as a Livestock Support Specialist; I’m part of the technical team lead by Dr Young/Winston Thomas. I’m going to be working with assisting our farmers, offering technical support, especially with pig farmers, this will support sales for Nutramix feed, F1s (pigs) and semen. Previously, I was Livestock Attendant at Newport Genetics, and then Sr. Livestock Attendant. My responsibilities were overseeing/organising tours and overseeing the other Livestock Attendants. I was responsible for the care of the gilt development barn, which included our newest product, Pregnant F1 Gilts – this included their insemination and the processing of semen for internal use and for sale.

For you, what is the best part about working at CB? General care, and health care; CB looks out for the well being of their workers. And CB Group honestly, tries to make us comfortable in all aspects, not just work related, but family oriented – if you have a real problem outside of just working with CB, you can get help. It’s a family oriented company – they really try, it isn’t just work-workwork. Tell us about a typical day at work for you? From start to finish. With my new role – I visit farms, listen to the farmers concerns, and give them technical advice on how to feed, how to medicate. If needed, we give assistance with how to conduct artificial insemination – we basically do on the farm training for the farmers and bring them up to speed on best practices. The job is reaching out to farmers on a one on one basis – so the days depend on their needs. The day can have several farm visits in it, and you can’t rush them so it’s a juggle. The farmers really appreciate it – it shows that we care and offer full support. What gets you through a hectic work day? I have to be self motivated right, that’s one thing. At ‘Genetics’ – you can get bored of doing the same things daily – but being rotated through different areas gives you a new drive in each area. But, both there and with my new position it’s dedication and self motivation – I’m a driven person and I want to get my work done.

What is your favourite CB product? I would say Bad Dawg you know, but I do buy CB Chicken a lot. If you could be in another section of the group for a day, where would you go and why? I’d want to go to Lucea – to Copperwood, for a day to see the whole procedure, from receiving animals to processing and the preparation of the product – the cuts, I’d love to see that.

I can’t think of one really you know – maybe just disappointing moments when work isn’t how you want. Name your favourite chicken/ pork dish? Jerk is my favourite way to eat pork – Murray’s in Clarendon is wicked, it’s a good spot to deal with. That’s my spot for jerk chicken and pork..

The animals themselves also motivate me - when things are going well, with good farrowing, good weights. I really love animals and pigs have become my favourite. On the farms now, I’m motivated by talking to farmers one on one, and seeing how much I can do for them.

Meat Lovers Pita Bread Pizza INGREDIENTS

Directions

–– 2 large pita breads

1. Preheat an oven to 450 degrees farenheight (May also be microwaved)

–– ½ cup pasta/pizza sauce –– 2 cups shredded mozzarella cheese –– 1 cup diced Caribbean Passion fully cooked ham –– 1 cup sliced Caribbean Passion sausages

Notes Lining your baking tray with foil will eliminate having to scrub your baking tray. Burnt cheese is no fun to clean. This is a fun and easy recipe to make with your kids, it takes only minutes to assemble and may also be done in the microwave. For a crispier crust in the microwave, toast the pita bread before beginning. Add some of your favorite vegetables of to your toppings.

2. Place the pita breads on a baking tray that has been lined with foil. 3. Spread a ¼ cup each of the pasta/ pizza sauce over each pita bread 4. Sprinkle on the shredded mozzarella cheese 5. Top with the diced Caribbean Passion Ham and the Sliced Caribbean Passion Sausages. 6. Bake the pizzas for 15 minutes or until the tops are nice and golden to your liking. You may also place in the microwave and heat just until the cheese is melted. 7. Remove from the oven and slice each pizza into four. 8. Serve with a nice fresh salad and your favorite homemade dressing

Char Siu Copperwood Pork Tenderloin INGREDIENTS –– –– –– –– –– –– –– –– –– ––

2-3 kg Copperwood Pork Tenderloin 1 head of garlic, chopped ¼ cup favourite pork rub 1 cup Scotch or Whisky 1 jar Char Siu sauce 1/4 cup ginger, chopped ½ cup brown sugar ½ cup scallion ½ cup Hoisin sauce Sesame seeds

DIRECTIONS 1. Rub the Copperwood Pork tenderloin thoroughly with the pork rub and place in a deep dish. Mix the garlic, scotch (or whisky), Char Siu sauce, ginger, brown sugar, scallion and Hoisin sauce together and pour most of it over the tenderloins (reserve just enough to use as a gravy/glaze for the cooked pork).

2. Massage the marinade into the meat for at least three to four minutes. Seal in foil and leave overnight in fridge. 3. Get the grill nice and hot. Remove the pork from the marinade, making sure excess bits of seasoning are taken off. Place tenderloin on the grill for about seven minutes. 4. Flip and grill for about six minutes, then shift the meat to a cooler part of the grill and let cook over medium heat for about five minutes. 5. Take the reserved marinade (not from the dish the pork was in) and place in a small pot and boil over heat to cook. Brush this over the pork as it cooks. 6. When finished, remove from heat and let sit about three to four minutes. Sprinkle with sesame seeds and slice to serve.

Water is Life:

Conserve it

We all know that Jamaica is experiencing a severe drought, as many communities face increased water restrictions. Here are some helpful tips to ensure that you’re doing your part to conserve water. Let’s all make the effort.

1. Make sure your toilet does not leak. Place a few drops of food colouring in the toilet tank. If the colored water appears in the toilet bowl without flushing, you have a leak—fix it immediately. 2. Do not water your lawn. Where possible, collect water from roof gutters to use for lawn and plant watering. And, don’t wash your car. 3. Don’t leave the water running while you’re brushing your teeth. Instead, use a glass of water to rinse your mouth and toothbrush.

4. Take shorter showers. Remember, the longer you are in the shower, the more water you use. 5. Turn the shower off while soaping up. When you’re finished, turn the shower back on to rinse off. When shaving, use water in the washbowl to clean your razor between strokes, or use an electric razor. 6. Reuse kitchen drain water by collecting it in a container and using it to water plants, lawns, and gardens or to recharge the toilet reservoir for toilet flushing.
