welcome Welcome to the future.
Welcome to another month of exciting but disturbing times in the world. The last “Welcomes” in our newsletters have all concentrated on one thing. Yes, that nasty world-conquering thing. At one time, we thought we had it under control, with just a few casualties to mourn. Full of hope we talked about “Recover Together”, only to be disappointed by new cases, new measures and new victims. No one knows how long this is going to last, but we all instinctively know that we will conquer this disease one day soon. So, we need to look to the future. We all have learned something in the last months. I have learned how dependent we are on each other. I know that in our CB Group, we are all interacting and inter-relating; if one part hurts, we all feel the pain. That happens in our families and societies as well. I learned I may have to depend on my family, my neighbors, my colleagues and my friends. I think, as long as we understand that, we will deal with each other in a better, kinder way. For most of us, it means an attitude adjustment is needed. In business, it works the same way. We are all dependent on our farmers, our employees, our restaurants, our drivers, our tourists and so on. If one group hurts, we all feel the pain. We are working on changes here too. In a few months, we will be working with The Nest; a brand new facility that enables us to address our customer’s needs much better, faster and more efficiently. After the initial challenges, there will be new business opportunities and yes, more challenges. In the next weeks and months you will be introduced to many updates and upgrades in our Group, all designed to make us “future- ready and future-proof”.

We continue to enjoy #CookingwithCopperwood and engage with allnew audiences across our digital platforms. To kick-off Porktober with extra vibes, we had our first DJ edition of “The Chopping Block”. Chromatic’s Brush1 versus Zip 103 FM’s ZJ Nova went head-to-head on October 4th with one of our favourite pork cuts, pork tenderloin. The amateur chefs set up in their home kitchens, and went live on Instagram with approximately 1,500 persons tuning in during the hour long episode. ZJ Nova created a Pan Seared Oven Roasted Pork Tenderloin with Mashed Pumpkin and Potatoes that in the end, trumped Brush1’s Baked BBQ Pork Tenderloin with Mixed Vegetables. Not to mention, ZJ Nova is from St. Elizabeth and it was evident that a significant portion of our audience that night was St. E massive who followed us to support their favourite DJ. We applaud our newbies for putting their best foot forward and having fun with Copperwood in their homes. Check out the highlights! Pork Month with A Bang We just kicked off the #PPOYFChallenge! Now, any pork lover can try their hand at winning 1st place and being their very own Top Hog!

Adopt A Dog Month
October is Adopt A Dog Month – yes that’s a thing.
Our solution was to create a space for the interested parties to meet - adopters and adoptees. As it is done now, JSPCA, Animal Haven and others may post a picture on Instagram in the hope that someone will adopt the dog. So, we’re happy to be launching www.truepetmatch.com at the end of October, to connect those who are seeking companionship with a dog in need from a reputable institution - a dog that has been checked and treated for heartworm and other common maladies, as well as a plan to be spayed or neutered.
If you’re looking for a pet, try to source one from your local shelter which has animals that have a lot of love to give, but need a good home. With COVID-19, one challenge that hit home for us at TRUE is the fact that more dogs are being euthanized than before as not as many people are willing to brave the outside to browse the animals and adopt. It seems that the adoption circles are getting bigger as more people are finding stray animals and taking them to a shelter. No-kill shelters like the Montego Bay Animal Haven now have hundreds of ‘Royal Caribbean Terrier’ or ‘Jamaica Brown Dog’. A lot of these are adopted by people in other countries mostly because Jamaicans want to adopt or buy “pure breeds” or at least dogs with longer hair. Crazy, right? The bottom line is that we have a large population of dogs who need good homes and during this pandemic, many people realise that they have a desire, time and a home to share. 3

The G.O.A.T Semen is coming… What does it take to be the greatest? Increased litter size, better meat and milk production and improved herd production. These are the elements of a premium line of goat and sheep semen dubbed the “G.O.A.T Semen”, that will be introduced to the market by Newport Mills Limited. In September, Newport Mills finalized a partnership with Goldmine Boers in Texas, USA, to supply the country with semen that will encourage the small ruminant industry to focus less on “pretty goats” and more on quality meat thus improving the industry’s genetics pool. Owned by Samuel Golding, a Jamaican goat farmer, Goldmine Boers has spent years developing his herd, 4

and now boasts some of the best sires in the region. With his strong ties to Jamaica, and an ongoing relationship with the Nutramix Livestock Support Unit, Goldmine Boers and Nutramix have rallied to encourage more local production and less importation of goat meat and mutton. Upon its arrival, the G.O.A.T Semen will be introduced to local goats through the administration of Artificial Insemination (AI). Unlike AI in Dairy, Bulls and Pigs, AI in small ruminants is more technical and requires a trained Vet or Livestock Specialist. So, the Nutramix Livestock Support Unit has spent years training and improving their expertise in AI and Embryo Transfer. As we prepare for its arrival, the team can be found on major and minor goat and sheep farms prepping herds while improving their feeding managements. With many successful AI procedures and healthy babies on the ground, the team is confident that this genetic improvement will benefit the small ruminant industry. Kai stepped into new territory with his homemade ham and cheese, garlic knotted, stuffed crust pizza. Kai’s pizza features Caribbean Passion’s smoked chub ham with a red bell pepper-based pizza sauce, followed by a mix of mozzarella and pepper jack cheeses. When you thought he couldn’t get any more adventurous, Kai added caramelized red onions, freshly diced pineapple, olives and lastly, a pinch of Scotch Bonnet powder for a little heat. Before Kai slid this beauty into the oven, the crust was brushed with a mix of melted butter, garlic powder and parsley. 6
Ashlae had us falling in love with her Chorizo Sausage and Streaky Bacon Supreme pizza. While Ash clearly had a steamy love affair with Chorizo Sausages, she also added green bell peppers, red onions and pineapples to her

While we love a good Jerk pizza, what we don’t love is Daneille refusing to let us in on her ‘secret sauce’. That’s right ladies and gentlemen, under this cheesy goodness topped with onions and sweet peppers, is the world’s best kept culinary secret. Will we ever find out? Our appetite is growing by the second from just looking at Christine’s #PassionPizza creation! The funny thing is, she was so surprised at how easy it was to make a homemade pizza. Like most people, Christine had her doubts when it came to prep, bake time and of course her toppings. At the end of it all she decided on our Chorizo Sausage along with mushrooms, green peppers and tomatoes. She made a delicious decision in joining this competition!

CB Egg Farms operates on 40 acres with Poultry Houses located on 12 acres. The farm has 9 houses which produces white and brown table eggs. The poultry houses range from a length of 140ft – 350ft and the overall capacity of the farm is 75,000 layers. CBE is a SGS certified facility, and is the first Egg Operation in the Caribbean Region to be certified to SQF standard, committed to producing the finest quality table eggs to its customers. RESERVOIR Rain is the primary source of water for us. As such, rain harvesting is done to ensure the continuous supply of water to the farm. Rain water is collected in gutters installed on all the buildings on the farm and the excess water is stored at our reservoir. Water is pumped from the reservoir to the different areas on the farm. This reservoir is supported by four storage water tanks. However, with no rain or external supply, the capacity of the reservoir (one million gallons) would supply the entire farm for approximately 3 weeks. 8

EGG SORTING AREA Eggs collected from the Hen Houses are transported to one central location on the farm called the “Sorting Area”. Upon receipt of eggs from the houses in special crates, eggs are loaded onto a conveyor belt. During loading, the Production Worker examines eggs for deviation from established KPIs. These are separated for further processing and storage. The belt then transports the eggs through a washer system equipped with brushes and washed with a sanitizing solution. Once the egg passes through this machine, it is packed into trays on what is referred to as the ‘clean side’ of Sorting. Each tray holds 30 eggs. While production workers are packing these eggs into trays, they are also observing the egg to further remove eggs with cracks, blemishes, variance in colour or any other nonstandard characteristic. This classification measure is used to separate “Grade A” from “Grade B” eggs. Based on sale orders, further sorting takes place where eggs are packaged into the various eco-friendly containers such as: one dozen; half dozen; 18 pack; Smart dozen; Smart 7-pack; etc. These are loaded into our delivery trucks daily for island-wide service to our customers. WHAT’S NEW? As of the first week in October, newly instated Farm Manager, Camille Mighty-Atkinson, created an “Appreciation Board”. With most staff at CB Egg Farms unable to access #Slack, Ms. Mighty-Atkinson created this board to show her appreciation for her Production Team.
“All my workers are hardworking and dedicated, but there are some that go the extra mile and I have to big them up”. Team members are either recognised individually or as a group for specific tasks. The intent is to formally create a recognition and rewards system specifically for them. The team’s desire is to challenge, collaborate and change to make CB Egg Farms the number one in the Caribbean.

STILL BUZZING
The Hill Run community is located some two miles out the town center of Spanish Town. This lush green landscape has the perfect topography for larger scale crop production. No wonder Hill Run and adjoining communities were once home to a larger percentage of sugar cane production in Jamaica. Hill run could also be labelled as the epicenter of tilapia (red pond snapper) production in the unique country we call home. With hundreds of acres of land being designated to producing this tasty fish that some of us love to enjoy. With the collapse of the Bernard Lodge sugar factory, production in this area took a crippling blow. Not long after the tilapia industry also suffered a similar fate. This left the vacant vast amount of land awaiting fresh minds to develop. With a mandate around building sustainable agricultural industries, the CB Group took advantage of the opportunity to resuscitate the agricultural history of the area. Thus Hill Run poultry was born. A facility that houses 370,000 broiler birds and over 3,000 market hogs have proven to be a beacon in the community once again. From then until now, Hill Run continues to produce “the better tasting chicken” for the table of thousands of Jamaicans. Like everyone else, we have been navigating the turbulent times of COVID-19 but we are determined to persevere, nonetheless we have had to make adjustments to keep ourselves and others safe. The team remains connected while socially distant and this have been working for us thus far at Hill Run.

Mental Health Matters! World Mental Health Day is celebrated annually on October 10 to bring awareness to mental health. Mental health is not to be taken lightly as it is just as important as your physical health as it affects how you feel, think and behave. We often don’t give as much thought to our mental health as we do to our physical health, but sometimes our bodies are giving us some indicators that our mental health isn’t at its optimal best. Early warning signs that your mental health isn’t at its best may include: āā Eating or sleeping too much or too little āā Having little or no energy
Mental Wellness There are many things that can be done to maintain a positive mental health. Here are a few: āā Get active – Swimming, running/walking, aerobics
āā Feeling helpless and hopeless āā Pulling away from people or usual activities āā Feeling unusually confused, forgetful, angry, upset, worried, or scared This year’s World Mental Health Day came in a time when our daily lives were greatly influenced by the COVID-19 pandemic. Not only is COVID-19 a great threat to our physical health, but it can also take a great toll on our mental health. Adjusting to the new norms of curfews and social distancing does have its impacts and so it is of utmost importance that we try to ensure our mental health is well taken care of.
āā Create a list of things that bring you joy. Aim to do at least one of these each day. āā Indoor movie night with popcorn & your favourite snacks āā Read novels from your favorite author āā Pick up a new hobby āā Even getting some regular sun light and fresh air A good start to your day can almost always result in the rest of your day going well. Start it right with some morning affirmations and probably some journaling. Try to stay connected with friends and family via phone calls, social media and other online platforms as much as possible to fill the social void created by social distancing. If you are feeling overwhelmed, don’t forget to stop, take a deep breath, relax a little. Don’t forget to laugh and be kind to others.

COVID-19
Protocols The primary transmission of COVID-19 spreading is person-to-person contact so taking personal responsibility is key to managing the risk of spread. Our goal must be to keep safety measures top of mind and practiced throughout the CB Group. Are you still washing your hands and singing for the full 20 seconds like you did back in April? Are you still sanitizing your desks, phones and other surfaces as often? What about pulling your mask down by your chin when you speak to be heard more clearly? Do you find yourself hanging out with others and being only a foot apart? Sometimes we all let down our guard and revert to our natural behaviours and sometimes we all need a gentle reminder. When we find colleagues and friends behaving in ways that don’t support safety protocols, let us be our brother’s keeper.

BREAST CANCER
AWARENESS
MONTH The month of October is internationally recognized as Breast Cancer Awareness month, and it is especially during this time that women are encouraged get a mammogram done, particularly those over the age of 40. But, women shouldn’t be the only ones to take note of this useful information as although rare, (less than 1% of cancer cases) men do get breast cancer as well. Warning Signs Although awareness is promoted during this month, one should always be cognizant of their body all year round. Here are some warning signs of to be mindful of: āā Skin texture change āā Nipple discharge and/pulling in āā Armpit pain āā Dimpling or irritation of the breast skin āā Redness or rashes on the breast āā Lump in the breast or armpit area Self-Examination Breast cancer cannot usually be prevented but early detection can increase the chance of finding the cancer before it spreads. For adult women of all ages, it is therefore important to perform a self-exam at least once a month, 2/3 days after periods. How should breast self-examinations be performed? When in the shower with arms raised, use the flat of your 3 middle fingers to check the entirety of both breast and armpit areas. Pressing down with different levels of pressure, check for any lumps, thickening, hard knots or any changes of the area. When in front of a mirror, with arms by your side then arms 17
raised, visually inspect your breast for any changes in the contour, any swelling, dimpling of skin or changes in the nipple. When lying down, place a pillow under your right shoulder. Using your left hand, move the flats of your fingers gently covering the entire breast area, nipples and armpits checking for lumps or discharge. Along with self-examination, it is recommended that a mammogram is done as this can detect tumors before they can be felt. If a lump is indeed found don’t panic, consult a doctor. Nutrition and Lifestyle choice There are some factors that influence breast cancer risk such as family history that cannot be changed. However, there are other nutritional and lifestyle choices that can help to lower the risks of breast cancer for both men and women such as: āā Being physically active by dedicating time to exercise or playing a sport āā Increasing your intake of whole grains, vegetables, fruits and beans as possible āā Limiting your ‘fast foods’ intake; aim for more freshly prepared home cooked meals āā Limiting red and processed meats by replacing them with more fresh chicken, fish and legumes āā Limiting alcohol consumption as much as possible

1 lb. penne pasta
1. Cook pasta according to package instructions to al dente. Drain and set aside. Season chicken breasts all over with 1 tablespoon jerk seasoning and salt. In a large skillet over medium heat, heat 1 tablespoon oil. Cook chicken until golden and no longer pink, 8 minutes per side. Remove from pan and set aside to rest.
4 boneless skinless chicken breasts 2 tbsp. jerk seasoning, divided Kosher salt 2 tbsp. extra-virgin olive oil, divided 1 green bell pepper, sliced 1 red bell pepper, sliced 1 orange bell pepper, sliced 1/3 c. sliced green onions, plus more for garnish
2. Add remaining oil and cook peppers until mostly tender, 3 to 4 minutes. Add green onions and garlic and cook until fragrant, 1 minute. Season with remaining jerk seasoning. 3. Add chicken broth and heavy cream and let simmer until thickened, 5 minutes. Slice chicken. Add Parmesan and stir until melted, then add pasta and chicken and toss until completely combined. 4. Garnish with scallion and more Parmesan then serve.

Copperwood Dale’s Crispy Pork & Pak Choy Salad

Ingredients: Copperwood Pork belly (3-4lbs) 1 bottle of pre-made wet jerk seasoning 1 pack of pre-made dry rub (Texas style BBQ is a great option available in most supermarkets) Optional Home Made Dry Rub (Measured to Taste) Garlic powder, onion powder, paprika salt and chili powder Pak Choy Salad Pak choy White Cabbage Purple Cabbage Packaged Ramen Noodles

Directions: 1. With a sharp knife, make shallow diagonal slices across the surface of the pork belly (skin slide) 2. Rub the pork thoroughly with the wet pepper rub (jerk seasoning) 3. Rub evenly with the store bought or homemade dry rub 4. Let the pork marinate for at least 4 hours in the fridge 5. Roast skin side down in pig roasting box (or oven) at medium high heat until ¾ done. 6. Flip and roast skin side up at high heat until skin is crispy and dark brown. Pak Choy Salad 1. Finely chop Pak choy and cabbage 2. Toast Noodles until golden brown in a frying pan. 3. Mix salad with noodles and add dressing as desired 4. Recommended Dressing: any oil and vinegar based basic salad dressing
