welcome Hello CB Group Family,
Another year is nearing its end, and we have much to be grateful for. Of course, gratefulness does not mean we do not acknowledge the challenges this year has brought us, both as a Group, and in our own personal lives. We have weathered the storms together (and yes with the recent rains, maybe a little too literally), and though 2021 will bring its own challenges, we have much to look forward to. As you have already been notified, 2021 will be a year of great change. While much of this change is happening on our executive team, they affect all of our group. We are blessed that though Dr. Keith Amiel is retiring, he will be joining our Board of Directors and we will be able to benefit from his guidance and good council for years to come. I thank Dr. Amiel for all that I personally have learned from him during my years working with him, and look forward to learning much more. I hope you all will join me, and the rest of the executive team with wishing Mr. Haskins well, as he prepares to retire from the CB Group, and congratulating Matthew again on his much, deserved appointment as CEO, effective January, 2021. And for our beloved Lori-Ann Hendrickson Lyn, who has led us through decades of change and growth, I congratulate her on her retirement as a Director, and celebrate her new role as Chairwoman of the CB Group. While she says that her new role will allow her a bit less work, I think we all know her a little better than that. And, it wouldn’t be right if I didn’t mention The Nest. This exciting marquee project will be complete in first half, 2021, and we are very fortunate that Mr. H. will continue working with us after his retirement to see it to completion. 1
Without displaying too much bias, I must say, this for me will be the highlight of the New Year -– a project that so many of us will have worked diligently and faithfully to completion. So, CBG Family, as we get ready for the exciting changes ahead, and step into the swing of the busy holiday season, I ask that you continue to be your brother and sister’s keeper, practice great personal responsibility and safety measures and do your very best to keep yourselves, and our great country safe. In summer, the Marketing team headed to the studio to start cooking up new content. With events cancelled and postponed, trade promotions on hold, we wanted to find new ways to engage our consumers. Afterall, with curfew, we all are glued more to our digital devices for entertainment.
First big announcement, so, we signed Andre Sewell as our official CB Foods Brand Ambassador! A little bit of his story – Andre was in tech but he’s always been a food lover at heart. Five years ago, he entered a CB Foods competition for food styling… and he WON. This moment kick-started his career and five years later, we’re proud of our official Partnership with our CB Foods’ Boss. Afterall, at the heart of CB Group is making a difference for people and helping persons to follow their dreams. We’re airing the pilot videos for your feedback. We want to hear what you think, so for Season 1 in 2021, you’ll see more of the content you’re asking for. #PPOYFChallenge & Pig Out To end PorkOctober, Copperwood held its first online cooking competition so all pork lovers could try their hand at their very own winning dish. For Round 1, there were a dozen entries where persons submitted their pork dishes – from chops to ribs to burgers. Check out a few:
On October 23rd, three finalists were chosen by main Judge and Host, CB Foods Boss’ @AndreCooks. Our finalists were tasked to bring their best foot forward but this time around, they were challenged to film their entire cooking process! On Saturday October 31st, two guests Judges, 2019 Pork Palooza Top Hog Charissa Skyers (Pink Apron) and Chef Simon Levy (Roast Meats) joined Andre on Copperwood’s Instagram Live, as they also had a special announcement to make. For the 45-minute-long show, our 3 judges reviewed all three video submissions and rated them according to the following criteria: āā Cleanliness: Cleanliness and food safety in food preparation is one of Copperwood’s pillars. āā Execution: How well the participant showcased the cooking journey from prep to plate based on what they had set out to achieve. āā Appearance 4
āā Without the ability to ‘taste’ in this competition, we had to eat with our eyes, and so appearance and plating are critical. The dish must have made us want to DIG IN!

For the intermission, Simon and Charissa shared a sneak speak at to what to expect this November 26 with Jamaica Food and Drink Festival’s PIG OUT! That’s right! @JAFOODANDDRINNK launches its new look and new chapter. From November 18 to 22, there are 5 all new events where foodies get to enjoy the gastronomy that JFDF brings, but safely in their own homes. Pig Out! will see Simon and Charissa curating delicious Copperwood Boxes filled with favourite pork cuts, hearty sides along with Red Stripe and Heineken. ON the 26th, winner of DJ Edition of The Chopping Block, ZJ Nova will be bringing the vibes live on @Jafoodanddrink. Same love, Same taste, New traditions. ‘Tis that time of year when we look forward to all the festive activities, Christmas parties and family gatherings. Indeed, this year will be quite unique, with curfews and quotas. Some Christmas’ may look a bit different for those of us who aren’t able to spend the holiday in the way we normally would have.

Despite the restrictions, we must find ways to make this Christmas a special one. Whether apart or together, we’re committed to sharing the same great flavours and experiences that our Caribbean Passion customers have come to know and love, and we’re excited to be a part of new traditions this season.
3. Flatware (plates and utensils)
We realized that many of our suppliers have been out of work or having to pivot to find new revenue streams. To make a small difference, We partnered with three of our décor suppliers to show us how to make this Christmas a super special one on a budget. So whether you’re having an intimate dinner with only a couple persons or a backyard dinner with as many as twenty, you’ll be sure to add lots of festive cheer to your loved ones.

On Saturday October 31 to close out Pork Month, sister brands Bad Dawg and Caribbean Passion teamed up for a baadaddd giveaway. At the Devon House kiosk, between 11am and 6:30pm, all those who bought 2 Bad Dawg sausages received a complimentary pack of Caribbean Passion’s new Hickory Smoked Deli Ham Slices! While it started a bit slow because of the rain, in the afternoon the sun came out and so did our Pork Lovers. Folks came out, masked up to get their hands on the baddest sausage around town. Workplace Safety The Field Department strongly supports the vision of our company, and as such one of our mandates is to promote health, safety and the well-being of our people. In light of this, Occupational Health and Safety has been our priority and this takes into account the environmental, chemical and physical hazards, as well as identifying unsafe working conditions or processes. We also have a responsibility as individuals to contribute to the control of recognized hazards in the workplace and so ensure to play our part. In this pandemic, safety measures are taken to restrict the spread of COVID-19 so as to protect our team and others. Guidelines are posted at various key points, appropriate workplace protocols are in place to prevent or reduce the likelihood of exposure, as well as verbal reminders. We encourage all staff to take these protocols seriously, and continue to adhere to the procedures in place. Here are a few of the measures that we have put in place and highlights of a few team members observing same.

Celebrating the Season

It’s almost the most wonderful time of the year! Christmas season is fast approaching, the decorations and the Christmas trees are going up and everyone is looking forward to spending time with their families and friends. With the COVID-19 pandemic still going on, some traditions will have to done a bit differently as we have to celebrate the holidays, however there are many aspects of the season that can still happen as they have been done before.
Keeping the Traditions It’s so easy to focus on what we can’t do right now, but reflect on the memories of the last Christmas and you’ll see there’s lots to do. You can still put up decorations, or even get creative and do handmade versions with your family. Baking and cooking still allow for those homemade recipes to be enjoyed by all present, and you can still send cards and sweet treats to those you love. So get excited about the things that you can do, put your energy into them all and stay positive. 12

Staying Connected Large gatherings will now be trimmed to be replaced by smaller, more intimate gatherings, and connecting virtually with loved ones overseas. If you choose to not have any gathering this year, there are many ways to stay connected to friends and loved ones. Social media provides the perfect platform for you to stay connected while being socially distant. There are many voice and video call options available to keep you connected to anyone, anywhere in the world. Create New Traditions Although some traditions may change for this year, this is the perfect opportunity to incorporate some new ones so we can still enjoy the festive season. Instead of going to the mall to do your shopping for the holidays, avoid the crowds and do you shopping online! Instead of having physical Christmas parties, have your parties incorporating virtual games such as ice-breakers. Instead of doing your secret Santa in person, make them virtual. Even Christmas carols can be done virtually. The possibilities are endless!

CB Group / UWI VIRTUAL 5K & Smart Eggs K In its 9th year, the CB Group UWI 5K and Smart Eggs K has taken a new approach and will have its first ever virtual format. With that, the door of opportunity has been opened to allow many more persons to participate! Now more than ever, CBG is proud to partner with UWI to provide scholarships for tertiary students. The COVID-19 pandemic has affected the way we do several things this year, so we’ve had to learn to adapt and to be agile. So, what is a virtual 5K, and how does it work? A virtual 5K allows you to participate from anywhere in the world! Register online, choose your race day within the race period, your starting time, your own course and run or walk the distance at your own convenience, record your time and submit online. Your course can be in your neighborhood, your community park or even on your treadmill. You can register and complete the 5K individually, with your family, with your friends, with your coworkers or even as a social club. Virtual Runs are the way to go… Compared to a traditional 5K run/walk, virtual 5Ks boast many benefits, no long lines and crowded venues, no parking problems and no starter gun. Virtual 5Ks are super convenient as you can do them at your own pace, in your own time from anywhere in the world! 16
Tips for a virtual 5K āā Don’t forget to warm up before you run/walk! Also, remember to cool down after. āā Remember your water! Hydration is key! āā Do some training a couple days in advance of your race, especially if you aren’t normally a very active person. āā Mask wearing during your walk or run isn’t recommended, so if you are completing the 5K in a group, ensure you are following COVID-19 protocols in relations to social distancing. āā If walking/running at night, ensure it is in a safe area that’s well lit

Caribbean Passion Peach Bourbon Ham

INGREDIENTS
DIRECTIONS
1 Caribbean Passion bone-in leg ham (or your favourite ham)
1. Preheat oven to 350°F. Remove all the packaging and nets from the ham.
1 cup peach schnapps (peach liquor)
3. Place ham in the oven to warm, 10 mins per pound (6-8 mins for a boneless ham).
2 cups bourbon 1½ cup brown sugar 6 peaches, sliced
2. Wrap the ham in several layers of foil and place in a baking pan. Fill the baking dish with water. 4. In a saucepan combine, half the sliced peaches, peach schnapps, bourbon, and brown sugar. 5. Boil until it becomes a light syrup. When the peaches are tender, mash with a potato masher or fork. 6. Remove ham from oven, discard water and remove foil. Peel away the skin and carve off the desired amount of fat. 7. Using a sharp knife, score the fat of the ham diagonally. Pour the peach bourbon syrup over the ham. 8. Add the remaining peach slices in the pan to cook with the ham. 9. Increase oven temperature to 475°F - 500°F. Add the ham, occasionally basting until golden and caramelized. 10. Reserve the sauce in the bottom of the pan and the caramelized peach slices for serving. 11. Allow the ham to rest before carving. Tip: Add a few tbsp of peach schnaps to the finished sauce for a burst of peach flavour. 18

1. Using an electric hand mixer, beat eggs and lime zest on medium-high speed for about 3 minutes or until frothy
Zest of 1 lime 18 ounces evaporated milk 12 ounces sweetened condensed milk 1½ cups white rum
2. Reduce mixer speed to low and add the evaporated and condensed milk then mix for about 2 minutes 3. Slowly pour in the rum and mix for another 2 minutes
½ tsp nutmeg + more for garnish
4. Add the nutmeg and the bitters and mix for another minute
2 tsps Angostura bitters
5. Strain mixture into a pitcher
Sticks of cinnamon (garnish)
6. Serve immediately over ice, and garnish with nutmeg and a stick of cinnamon

Congratulations Veron! CBG’s Senior Treasury Officer Veron Burton-Miller recently completed her EMBA from the University of the Commonwealth Caribbean (UCC). Veron has been self-motivated as pursuing her graduate studies was something she wanted to accomplish. The most difficult thing she says? Doing a research paper with as little as two weeks’ deadline, with an exam in between, plus having to go to work daily. But the experience has provided some good lifelessons: once you put your mind to achieving something, you can do it! Have purpose, stick-to-it-iveness and never take your eyes off your goal. What’s the next step for Veron? A professional certification course by FSC, and she wants to become a radio or TV personality. Who has the hook-up for her? GC? A few words of advice to the person who is currently working and wants to pursue their studies - “don’t procrastinate as we’ll never know if tomorrow will come, so just register and in the wink of an eye you are finished!” And for the person who’s working and studying, she says, “you’ll have a couple more sleepless nights, uncooperative and lazy group members and what we think are unconscionable lecturers, but that feeling of self-gratification and accomplishment is worth it.” Thanks for the inspiration Veron. Congratulations once again, and we’re excited to hear about your media debut! 21
