As our Group continues marking successful milestones, we must remember our most valuable resource: YOU. None of our success is possible without the health and well being of the entire CB Group family, and it is important that each of us takes the time to care for ourselves.

Welcome

Gentlemen, you know when you reach a certain age, friends and family members start to give you “hints”. Probably because they care for you, or maybe they need a volunteer to go first in the line. You know how it starts...“my friend, when las’ you visit a doctor? U know seh...” And then you get the well meant suggestions, instructions, or sometimes orders. “When you pass 40 you should check up on certain things” or “You know after 50 you should do these checks every year?” Of course, we resist, we know our bodies much better than the doctor. ‘After all, me and my body grew up together!’ or ‘This pain is nothing’, ‘that lump does not hurt’, and ‘that spot will disappear.’ What’s that? Do I want to grow old with this body? Well since there is no option for a new one, yeah! Sometimes, we almost forget about the people we lose. Friends due to prostate cancer, or family with strokes due to high blood pressure, and others that are fighting it every day. A foot gone, courtesy of “sugar”, and more to go...breast and uterine cancer, killing our mothers, sisters, and wives. Let’s not even talk about heart and lung diseases. The risk of many of these diseases can be reduced by making healthy lifestyle decisions. We know about the exercise, the smoking, the weight, the stress, the sugar and the salt. I know many of you have made those great choices. So, take the next step; talk to your doctor for a proper check-up. All these afflictions can be better prevented, treated, and often cured if they are detected early. Make your appointment now! So anyway, I FEEL GOOD!! No worries! “Mass Dakta” says all is well. Sure! I could have told him that without the blood-tests, the samples, the stress-test . . . . and the finger. But I am sure glad he confirmed. Walk Good,

BlazesthroughMobay! Pan X Regional 2 invaded Dump Up Beach, Mobay on September 26th – nearly 20,000 Montegonians, and food lovers from as far as Falmouth and Negril came out to enjoy a day of great food, and good music by the beach. 35 of the best Pan Men and Women from Westmoreland, St. James, Hanover, St. Ann, Trelawny and St. Elizabeth put their skills to the test - with 12 talented chefs advancing to the finals on November 1st. Food and refreshments in hand, the crowd was blessed by Gospel Artiste Lubert Levy, before Chi Ching Ching and his dance crew got everyone moving. Then King of the Dancehall himself, Beenie Man closed the show, performing great hits from his decades on the dancehall charts. If you weren’t able to come out to Pan-X in Mobay or Portmore, don’t miss out on the finals on November 1st, when our Region 1 winners face off against Region 2 on the Downtown Kingston Waterfront, at our new venue by BOJ. And, a special thanks to all our CBG Family members that made their way to this regional, and our CB Group Pan-X Volunteers, we felt the love!

Whether you’ve put a small cottage ham in the oven for a special treat, or are planning a big holiday ham for Christmas Dinner, Alexa Von Strolley from Tootsie Kay Catering has creative ways to use your leftovers. It’s #SoEasy What You’ll Need • ¼ cup Caribbean Passion Ham • 1 tbsp Butter • 2 tbsp Cheddar cheese • 2 Slices of bread How you’ll make it 1. Cut the ham into thin slices 2. Melt the butter in your pan over medium heat 3. Cut the sliders in half 4. After halving each slider butter it on both sides and then layer with cheese, ham, basting liquid and more cheese! 5. Cover with the top bun 6. Place the sandwich in the pan flipping every 3 minutes or until brown. 7. Cover with a lid, and reduce the heat to low to melt the cheese.

(Austria’s Shredded Pancakes) Ingredients: 4 Smart Eggs, yolks and white separated 125 ml milk 100g powdered/caster sugar 1 pinch salt 125g plain flour 100g raisins, 1 tablespoon butter 2 tablespoons icing sugar 400g apple sauce, optional 16 oz fresh strawberries, optional Method 1. Beat egg whites in a clean bowl until soft peaks form. 2. Beat egg yolks in a separate bowl until smooth; mix in the milk, sugar, salt, flour and raisins until just moistened. Fold in the egg whites. 3. Melt the butter in a large frying pan over medium heat. Pour the batter into the pan and cook until golden brown; flip and cook until set on the other side, about 1 minute. 4. Tear the kaiserschmarrn into pieces using two forks and continue cooking until golden brown, about 2 minutes. Sprinkle with icing sugar to garnish and serve with apple sauce and strawberries.

Ingredients: 3 to 4 inch soft corn tortillas ¼ teaspoon ground cumin ½ can black beans, rinsed and drained ½ teaspoon crushed red pepper flakes (optional) ¼ cup mild salsa 4 Smart Eggs 1 Ripe avocado

Method 1. Preheat oven to 425 degrees F 2. Put tortillas on baking sheet and place in the oven to warm, about 5 minutes. 3. Toast the cumin in a small, dry saucepan over medium heat for about 3 minutes. Add the beans or red pepper. 4. Remove tortillas from the oven. Spoon some beans onto each, and then top each with some salsa, 1 fried egg and some cheese. 5. Bake until the cheese has melted. Serve with avocado.

Nutramix is committed to helping Jamaican farmers succeed, and as we grow we are also committed to helping the Caribbean region develop, and succeed as well. As part of this commitment we recently hosted in Jamaica, Mr Ellery Fokke, Surinamese contract poultry farmer. Some 60% of chicken in Suriname is imported and 40% is local, Nutramix is helping local Surinamese improve their food supply.

Ellery, as our guest, learned about poultry farming as he prepares to begin raising birds for Surinamese company Espee, which is a Nutramix customer. Ellery’s first house will house 29,000 birds and he hopes to begin operations at the end of October.

The CB GSAT Scholarship is now the CB Group High School Scholarship Programme

We’re making some great changes to the CB GSAT Scholarship. We’ve held focus groups within the CB Group Family to help us improve the programme, and have incorporated these recommendations. We are pleased to announce the redesigned CB Group High School Scholarship. What does it mean? We’re moving away from the overdependence on GSAT scores, to a more fair evaluation of students’ performance over their time in school, as well as involvement in extracurricular activities and in their community. We’re also introducing a new focus on mentorship and development, and most importantly, more scholarships. Eligibility Must be children of CB Group employees entering or enrolled fulltime at a high school. One parent or guardian must be an employee or contractor with the CB Group for at least two (2) years, and be recommended by his/ her Supervisor/Head of Department. Value of scholarship: A full scholarship is offered to students yearly, including: Full Tuition; and a Variable Book Grant Selection Criteria: A point system will be used based on academic merit (GSAT average), extracurricular activities and leadership. Returning students will also be evaluated according to coaching session attendance and community service. Scholarship Distribution: A total of Twenty four (24) scholarships will be awarded yearly and distributed by location first. The distribution is as follows: Arnold Road (8); Newport Mills & Wharf (3); Copperwood, Lucea (3); Group Office (2); Caribbean Hatchery (1); Field Office (1); Copperwood, Bodles (1); Freetown (1); Egg Farm (1); Imagination Farms, Pork Store & St. Ann’s Bay (1) Coaching & Development Sessions: Four (4) sessions per school year, with 2 sessions in the Christmas Term, 1 in the Easter Term and 1 in the Summer Term. A mandatory orientation session to the CB Group and its processes will be incorporated for new scholarship recipients Scholarship Information Sessions Sessions will be held annually with parents and children at the Grade 5 level to inform and motivate students to work towards the scholarship as they head to Grade 6. CB Cleans Coasts with Nuh Dutty up Jamaica The CBG family came out to support International Coastal Cleanup Day on September 19. Clad in our bold CB red, our volunteers proudly participated in the Jamaica Environment Trust (JET) annual beach cleanup at Fort Rocky (Palisadoes) in Kingston. The cleanup was a huge success, and as usual, a BIG thank you to everyone who volunteered their time, and even brought along the family to help make a difference for our environment. Over 2,800 people registered with JET alone, while thousands more worked at other cleanup sites around the island. It was a very eye opening experience. Not only did we collect litter, but valuable data about sources and types of trash that harm our oceans and waterways. The data is used to raise awareness, and inspire recycling efforts, as well as shape policy decisions in Jamaica and internationally. So remember to play your part in helping to keep our beloved Jamaica clean, as we believe in more than just safe food, but a safe, sustainable environment! If you missed out- see you next year!

ARNOLD GIVES ROAD Our team members at Arnold Road recently hosted their ‘Blood Drive Lyme’ as part of our ongoing support for the National Blood Transfusion Service (NBTS) through our ‘Give Love, Give Blood’ campaign.

A BIG thank you to everyone that was able to support -It was an overwhelming success, with over 75 units of blood collected. Everyone that went to the health check tent got a free health check and a $10,000 gift certificate from Delgado Health Services, redeemable for health services at that facility. And of course, our caring donors were treated to Bad Dawg Sausages to regain their strength! Remember, 1 pint can save up to 3 lives, so please look out for our next blood drive, and remember to give regularly whenever you can. We Believe in Education It’s almost that time of year, as we gear up for the annual CB Group UWI 5k. Now in its 4th year, we are so proud to have raised $38 million dollars for student scholarships thus far. Through your participation, so many young people have gotten an opportunity to attend University, many of which are the first in their family to do so. So we are ever grateful for your continued support. Every one of you can make a difference; Last year, we had nearly 4,000 registered participants, and this year we are aiming to pass 5,000. We know that with your continued support, we have the potential to surpass our goal. So, mark your calendar, and get the training going. This year’s run/walk is on Sunday November 15th. cb big ups — a day in the life of… miss patsy

How long have you been working with the CB Group? Since October, 1998. But I have actually been with this facility from 1972, before CB bought it. What section of the Group are you in and what is your role? Produciton Supervisor with Copperwood in Lucea. I oversee from slaughter, to breakdown, packaging and processing, the whole thing. For you, what is the best part about working at CB? I enjoy everywhere in CB, but I really do enjoy production. I have improved a lot myself since I began working with CB when they took over Copperwood. I really love the way that we work, and we have some hard working people here. Tell us about a typical day at work for you? From start to finish. I first get the production schedule from Mr Gibbs (Plant Manager) for the day and prepare it from slaughter to breakdown and update those sections so they can prepare. I also go to the Spice Room and let them know what spices we may need for hams and so on. I move on to shipping to get what we may need from them - this is where we store chicken meat or sausage meat for example for our processed

goods. We move on then to processing and I oversee to ensure we are producing according to schedule. I then oversee the products going to the cold room for storage before shipping, but the fresh products go straight from fresh packaging to the scale and on to shipping. What gets you through a hectic work day? I just try and cope and do my best. I don’t let it bother me, the work is here to be done and that’s ok, sometimes we work very late, but I don’t mind it at all. What is your favourite CB product? Corned Pork definitely, just in the microwave and I slice it and make sandwiches. If you could be in another section of the group for a day, where would you go and why? With the butchers here at Copperwood, and work on the slaughter the way I see them do it. I have experience with beef slaughter but never the pigs. What has been your most embarrassing moment at work? I’ve been here such a long time, to tell you the truth nothing in particular sticks out. Name your favourite chicken/ pork dish? Curry Pork Bones! I love the bones you know, so that’s good. There is meat on it, but not much and you curry it like any other meat. I take the bone from the loin, the picnic or the shoulder.

So Easy Caribbean Passion Ham & Egg Cups INGREDIENTS

Directions

–– 2 Slices of Caribbean Passion Ham

1. Preheat oven to 400 degrees

–– 2 Chippenham Eggs

2. Grease the muffin pan with butter

3. Layer the ham in the muffin pan to form a cup

⅓ Cups Mozzarella Cheese

–– 1 Tbsp Milk –– Pinch of Salt & Pepper –– 1 Tbsp Butter

4. Scramble the eggs, adding salt and pepper to taste then a splash of milk 5. Pour egg mixture onto the ham and place in the oven for 7-9 minutes or until egg is firm 6. Remove from oven and serve hot

Sweet and Spicy Drunken Chicken Wings with Crushed Peanuts INGREDIENTS Barbecue Sauce 2 tbsp. vegetable oil 2 tbsp. minced onion 4 cloves of garlic, chopped 2-3 whole scotch bonnet peppers, chopped 1 ripe mango, peeled seeded and chopped 2 cups ketchup 1 cup hoisin sauce 1 cup chicken stock ¼ cup red rum ¼ cup cider vinegar 2 tbsp. brown sugar 2 tbsp. soy sauce ¼ cup orange juice 10 whole pimento seeds Black pepper

DIRECTIONS Marinade 12 CB Chicken wings 4 cloves of garlic, chopped 2 stalks of scallion, chopped 1 tsp. lemon (lime) zest 1 thumb sized piece of fresh ginger, peeled and chopped 2tbsp. brown sugar 2 scotch bonnet peppers, chopped 1 tbsp. soy sauce 3 tbsp. fresh lemon (lime) juice 2 tbsp. red rum 2 tbsp. pineapple juice 1 tbsp. peanut (vegetable) oil, plus more for basting Salt and pepper to taste Bamboo skewers ¼ cup finely chopped, unsalted dry-roasted peanuts

1. Barbeque sauce: heat vegetable oil, add onions and caramelize. Add garlic and cook until it loses its aroma. Add remaining ingredients and simmer for one hour. Puree until smooth(Will keep refrigerated up to three weeks). 2. Marinade: place garlic, shallots, lemon zest, ginger and sugar in a food processor. Process well. Stir in soy sauce, lemon juice and 1 tablespoon of oil. Transfer to a large bowl. 3. Make 3 deep slashes in the meaty part of each chicken wing. Add the wings to the bowl, stir to coat and marinate for 4 hours at room temperature, or overnight in the fridge. 4. Put the chicken wings on bamboo skewers, opening each wing as wide as possible; reserve the marinade. Brush wings with barbeque sauce and grill over a mediumhot fire for 6 to 8 minutes per side. Baste occasionally with barbeque sauce until crusty. Transfer chicken wings to platter, sprinkle with peanuts and serve.

jerk did you know?

What exactly is “Jerk” cooking? Originally from right here in Jamaica, Jerk is a way that a meat; chicken, beef, pork, goat, fish, is seasoned and cooked. How do you make Jerk seasoning? With a marinade or paste that always includes at least some pimento (allspice) and scotch bonnet peppers (also known as habenero), thyme, and escallion, with other herbs and spices. The meat marinated and slow smoked over pimento wood. Where does the word Jerk come from? It’s actually a Spanish word that comes via the Peruvian word charqui, a word for dried strips of meat like many countries call Jerky. Jerk started as a noun and then became a verb as in “Jerking” which meant to poke holes in the meat so the spices could permeate the meat.

When did the Jerk style of cooking start? The original people of Jamaica, the Arawaks (Tainos) from South America used similar ways to smoke and dry meat in the sun or over a slow fire. This was important as the dried meat could be taken on journeys. The Spanish discovered Jamaica, and the Arawaks soon died and were replaced by African slaves. In the 1700’s some of the slaves escaped and hid in the Blue Mountains and became known as Maroons. Some of the cooking techniques of the Africans were mixed with those of the Arawak people. Maroons learned, using salt, peppers and spices to preserve meat. The meat was spiced and wrapped in leaves to keep. When it came time to cook it, they dug a hole in the ground, placed it all in with rocks then covered it, or it was Barbequed over a lattice of wood as we do with modern jerk. This evolved with the use of different spices to the cooking style that we know today as Jerk.

How to make a will in Jamaica It’s not something we like to think about, but the only sure thing in life is actually death. And though we can’t predict ‘our time,’ it’s important to be prepared. One way to ensure your family and friends are ok, is to write a will. This important document ensures that the testator (the person making the will) can control the division of their assets, which gives you peace of mind knowing that your loved ones will benefit in the way you want them to.

Put it in writing. A will must be in writing, whether hand-written or typed. Ensure that you use clear language to express your wishes and avoid using technical jargon. Appoint an executor. This person will be responsible for administering your estate. You must appoint at least one executor, but no more than four. It is recommended that at least two executors be appointed in case one dies before you or refuses to act. Ensure that you have witnesses. The will must be signed in the presence of at least two witnesses, who must be there at the same time. They will in turn sign in the presence of the testator. Failure to follow this procedure makes the will invalid. You cannot leave gifts to the witnesses and/or their spouses as the will may become void. Add a residuary clause. This can be used as the last paragraph to ensure that property acquired after the

will is originally drawn up is properly bequeathed. 5.

Draft a new will after marriage. It is important that you prepare and execute a new will after getting married as the first is no longer valid. You are free to change your will at any time, but you must ensure that after the new document is properly executed, and the old one destroyed.

Seek legal advice. You do not need a lawyer to draft a basic will, especially if you are not leaving behind a large estate. However, a will is a very important legal document and it is always best to seek qualified advice if you can.

Don’t hide your will. It is important to keep your will in a safe place, but ensure that it can be found in the event of your death. Be sure to advise your executor(s) where it is. If you drafted the will with an attorney, have him/her store the document.
