As the saying goes, “Time flies when you are having fun”. The same is also true, the older you get. I suppose that accounted for my surprise when I was told it’s my time again to do the welcome for Chat Bout. By the time this issue is out, Christmas preparations will be in high gear and the CB Group would have again made its mark on the country. We would have had the inaugural staging of the Jamaica Food and Drinks Festival, a bold and game changing event, the fourth CB UWI 5K run/ walk would have also taken place and Pan X, yes Pan Chicken would have celebrated its tenth staging – talk about time flying.

These events are not just about promoting the CB Group; it’s a lot more than that. It’s about us giving back to society; it’s about us providing students with the opportunity to complete their tertiary education; it’s about us allowing families to bond together; it’s about us promoting healthy life styles; it’s about us creating opportunities for entrepreneurs to build businesses; it’s about us contributing to nation building and more importantly, it’s about us creating jobs for our people. These activities will also help to make the GB Group a household name across the island, set the stage for further growth locally and give us the confidence to take on the world. Our successes over the years have been
driven by our collective efforts. Each year we raise the bar and challenge ourselves even further to come up with new and innovative ways to get the job done and this year is no different. So as we continue to support these events and volunteer, where possible, we can feel proud that we are contributing to a worthy cause. is crowned Our 2015 Pan-X series came to a sizzling close on Sunday November 1st on the Kingston Waterfront. 28 lucky finalists vied for the coveted title of Grand Champion, and after a long day at the pans, and all the fun festivities Camita Munroe from Kingston & St. Andrew walked away as the newly crowned winner with over $1 million dollars in cash and prizes. With over 15,000 patrons, we also streamed the stage show and announcement live to our CB Chicken facebook page and Flow 100. In fact,

out of 280 channels, we were the 16th most viewed program that night. Thousands got a chance to enjoy the musical styling of Mr. Big Deal himself Chris Martin, the master Baby Cham, and the legend Barrington Levy from the comfort of their own home. Not to mention our Grand announcement, which had everyone in tears at Camita’s heartfelt emotion. Thank you for your continued support. You’ve helped make us the largest food festival in Jamaica!

A Healthier You for 2016 Are you planning to turn over a new leaf? So, when you pay for the full year’s subscription up front, there is a massive savings sometimes as much as 50%! To help you take advantage of the lower average monthly rates, CBG will advance you the membership fees for either a (i) one year membership or a (ii) six months membership (payable to your gym of choice) and allow you to pay back these fees over the length of your subscription via salary deduction.

I take performance seriously How long have you been working with the CB Group? For past thirty five years, I was actually here before CB acquired the Hatchery. What section of the Group are you in and what is your role? Caribbean Hatchery, and I am the manager for the Hatchery. For you, what is the best part about working at CB? The challenge, it is never boring to work at the Hatchery. The hatchery is like the labour ward in an Hospital, challenging but rewarding. Tell us about a typical day at work for you? From start to finish. For me, it’s: Hatches to be ‘pulled’, chicks to be delivered, reports to be submitted, meetings to attend and workers to talk to.
What gets you through a hectic work day? Truly, the word of God is what motivates me; the word says, for them that Love God, everything is being worked out for our owe good. What is your favourite CB product? CB Chicken! If you could be in another section of the group for a day, where would you go and why? I would say, in “the field” (Field Office), to assist our growers who are not performing at their best. I would enjoy seeing the chicks we hatch being raised. What has been your most embarrassing moment at work? For me, it is when we are not able to meet our target, because of Human error. I take performance seriously. Name your favourite chicken/ pork dish? Real Jamaican Curry Chicken.

Easy Eggs Benedict Directions Prepare Hollandaise Sauce, Benedict and Biscuits. Place Benedict (eggs first, then ham) on the biscuit and top with hollandaise sauce. HOLLANDAISE SAUCE –– 3 Smart Egg yolks –– ¼ Tsp. dijon mustard –– 1 Tsp. lime juice –– 1 Tsp. hot pepper sauce –– ½ Cup hot melted butter
Directions In a blender place Smart Egg yolks, mustard, lime juice and pepper sauce. Blend until all ingredients are incorporated. Set the blender on high speed and carefully stream melted butter gradually into blender. Pour sauce into a container and reserve. If sauce becomes too thick whisk in a few teaspoons of warm water and re-season as necessary.
BENEDICT –– 5 ¼ Inch slices Caribbean Passion chub Ham –– 5 Poached Smart Eggs
Directions Brown ham in a sauté pan. Crack Smart Eggs directly into simmering poaching liquid or if uncomfortable do so into mini bowls or cups then gently pour into liquid. Cook Smart Eggs for 4 to 5 minutes or until the whites are opaque and the yolks runny to soft (your preference).
Easy Biscuits –– 1 Pack of Pillsburry Grands
Directions Prepare Pillsbury Grands in oven according to instructions on package. Slice the top off the biscuit before layering on ham, eggs and hollandaise sauce.

Thyme Smoked Ribs INGREDIENTS
DIRECTIONS
2- 3 racks of Copperwood Pork ribs 1 large bushel of fresh thyme 30-35 coal briquettes
For the ribs 1. Season ribs with the dry rub and leave it overnight to marinate 2. The next day prep coals and place the bunch of thyme to soak in water 3. Arrange the hot coals in a circle and place thyme in the center 4. Place the ribs on the grill top with more fresh thyme and cover with the vents half open 5. Cook for 1 hour. Turn the meat unto the other side and cook for 1 more hour 6. Check for tenderness and if needed smoke for another 15 to 20 minutes 7. Remove the ribs form the grill and allow them to rest For the sauce 1. Melt butter in a sauce pan and sauté the chopped shallots 2. Add the sugar and salt and thyme and sauté 3. Add the Pinot Grigio and allow the sauce to reduce 4. Slice the ribs, sauce them and serve Greedy Tips: –– If you are using a gas grill the temp should be around 200 degree F. –– At no point do you want actual flames - the coals should be white and ashed over, but still hot. The aim is low temp with slow cooking to make the ribs tender. –– Make sure to use fresh thyme soaked in water so it burns slower and longer. –– You can use any white wine you want, not just Pinot.
Dry rub 1 ½ tablespoon Sugar 2 teaspoon Salt 1 tablespoon Onion powder 2 teaspoon garlic powder 2 tablespoon Thyme leaves 2 teaspoon Smoked paprika 1 teaspoon Black pepper 1 ½ tablespoon ground Allspice Sauce 1 tablespoon butter 1 large shallot minced 4 teaspoon sugar ½ teaspoon salt (to taste) 1 ½ cups Pinot Grigio
