We’re fast approaching the end of the year and before you know it, Christmas is here. But what a year it has been. Another year full of record breaking achievements by the CB Group, and none of this would have been possible without you all. We’ve fast become a group of people with ‘team” goals and a thirst for achieving. I’ve been fortunate to witness this, and I’m truly proud of you all. Congratulations to every one of you. However, as I’m sure you’re all aware, our successes will create opportunities for even greater achievement and we will have to establish new “team” goals as we move forward. Bill Copeland put it this way:
The trouble with not having a goal, is that you can spend your life running up and down the field and never score. Don’t be afraid to: • Listen to each other. • Play devil’s advocate • Propose solutions • Ask open-ended questions You will not be viewed as disloyal or untrustworthy, no one person knows everything. Take time to ensure everyone

Grand Champ Camita is a soft spoken woman, who knows the value of hard work and the power of maintaining a positive mind. As she recounts her PAN-X journey, she first gives thanks to her sister Camila Munroe, who made her enter. In fact, our very own Brand Manager Alicia Bogues had a chance encounter with Camila at the Group Office, where she encouraged her to enter the competition. Fast forward two months later, where both Camita and her sister Camila entered Regional 1 in hopes of gaining the two spots at the Grand Final to represent Kingston & St.

Andrew. As fate would have it, both ladies advanced. Camita shares, “from the beginning there were lots of ups and downs in preparing myself for the competition, I was nervous that everything was not going to be ok. I nearly never entered too, but my sister pushed me, and then I said OK, I have to win. Actually, I know I was going to win- and I kept a positive mind, and remained positive about the entire competition.” Now a celebrity, especially in her community, Camita is getting used to all of the recognition as she is often greeted by loud cheers
and shouts, “I see you on TV, you on my TV!” She also admits that the workshop helped to seal her win, “I learned so many things from Chef Bowes. There were things I didn’t know about food preparation and jerking, so I listened and it helped me to win”. Overcome by emotion as she was announced as the winner of CB’s 2015 PAN-X competition, Munroe is extremely grateful for the opportunity. She has absolutely no regrets about entering, and is thankful to CB, its partners and the entire team, especially Alicia and Kereen. She’s even more excited about expanding her business and enjoying her year as CB’s PAN-X Champion. 3

As we prepare for the holidays, we can’t get enough of our Caribbean Passion hams. Try this Amazing recipe courtesy of Greedy Girl Cooks. Ingredients • Fully cooked Caribbean Passion boneless leg ham • 1 pack Caribbean Passion streaky bacon • 1 jar maraschino cherries Glaze • 1 cup maple syrup • 1 cup bourbon • 1 ½ tablespoon instant coffee
Instructions 1. Make sure the ham is completely defrosted 2. Preheat the oven to 400 degrees 3. Completely wrap in several layers of foil 4. Place in a baking dish half filled up with water 5. Allow to steam for 35 to 45 minutes warming the ham all the way through 6. Remove from the oven and set aside to rest 7. In a sauce pan warm and dissolve the coffee in the bourbon and maple syrup 8. Remove the ham from the foil 9. Place the strips of bacon across the ham securing the ends with a toothpick and a cherry 10. Repeat until the entire ham is covered 11. Pour the maple coffee bourbon glaze over the entire ham 12. Place in the oven, bake until the bacon is golden brown and crispy 13. Remove from oven. Allow to to rest for 5-10 minutes before slicing

Running Events Director, Alfred Franno Francis gave the kids a quick pep talk as they anxiously waited to hit the track. At the sound of the horn and the release of balloons, filled with energy and excitement, the children dashed off, racing to take home the coveted first place spot. Privileged Employees

CBGroup
As employees of the CB Group, there is often a tendency to focus on the things we do not have. And though the lack of some of these things can in fact adversely affect our respective responsibilities, we should always try to strike a balance. Recently I went on internship at a Government Agency and was quite surprised with the conditions under which their employees worked. The little things we take for granted such as toiletries, stationery, and air conditioner were scarce commodities. As a matter of fact, the staff had to take or buy their own drinking water; and there was no coffee or tea. Even the very chair I sat on disappeared the moment I turned my back. While being employed by the CB Group is reason enough, let’s pause to highlight 10 small benefits that make big differences in our lives, which remind us that we are indeed, privileged employees. Lunch Especially for those of us who are out in the ‘country’, the lunch may not be five star restaurant quality; but trust
our community — the privileged employee
me, when you don’t have any lunch at all, it’s a different story. I am not saying that we should not express our concerns; I have certainly done so in the past. But just be mindful that the company did not have to provide lunch for us and there are many persons who would easily trade places with us. And, even if you are one of the fortunate ones and can afford to buy lunch every day, your allotted lunch time might just be insufficient to do so. Uniform I am sure that I speak for everyone when I say that we all feel very fortunate to be provided with uniforms by the company. I personally do not see how I could afford to buy clothes to wear to work and although I would have to find it somewhere, I certainly could use that money elsewhere. Couldn’t you? Bonus Many persons only dream that their company will give them a bonus when December comes. For the five years that I have worked here, I have received a bonus every year,and for that I am grateful. It doesn’t matter how small it is, it does make a difference, so much so that some of us make plans for our bonuses as far back as December of the previous year. Birthday Gifts Sometimes the smallest gifts make the biggest impact. I cannot say how 14
truly special I feel when I receive my birthday card, I save them every year. And although birthday cards seem to be fading out, no doubt we all have received something equally valuable. To be completely honest, the birthday gift from the CB Group is perhaps the only gift some of us get for our birthdays. Social Events Again, I am sure the Group didn’t have to, but every year we are feted to a Christmas event, whether at our location or the entire CB family comes together to enjoy great food and music. During the year, there are myriads of opportunities to enjoy social events such as the most famous Pan Chicken, 5K Walk/Run, Church Service just to name a few. We sometimes even get the opportunity by way of tickets to enjoy external social events such as Cricket Matches, Father Ho Lung productions and much more. Salary Increase No matter what is happening, no matter how small, the Directors and Senior Managers of the Group recognize the importance of giving us a salary increase every year. We are mindful of the challenges our economy faces and are aware that to do this is no easy feat. With this in mind, let us continue to do all we can to ensure that our company will continue to grow so that we will be partakers in its success. Opportunities to Volunteer This may not be such an obvious privilege to some of us, but being a volunteer is one of the most rewarding things we can do in life. Without the CB Group, some of us would not necessarily have the opportunity or find the time to give back to our society. our community — the privileged employee
Loan/Grants Although I cannot say that I have personally benefited from the loan or grant schemes. I am sure that those who have will express how grateful they are to be the recipients of either of these. Education costs a lot and without CB’s help some of us would not be able to finance our education or that of our children. Opportunities for Training & Development Without getting into the major opportunities for training and development which often times leads to promotion. We are grateful for small but important trainings such as First Aid & CPR Training which is so empowering; we can actually assist in saving lives. I was in a meeting recently and was delighted to hear some employees speak about how much they learned and the myths they debunked at the CPR training they attended recently. Scholarships I don’t know much about the scholarship the CB Group offers, what I do know is that persons have benefited from scholarship within the group. The GSAT Scholarship is one such scholarship opportunity and it’s not only for the GSAT year, but one which follows the students throughout high school and even into college, granted they make a certain grade. Isn’t that superb – I would love to hear from persons who have benefitted. I know especially for me as a single mother, having this scholarship would work wonders. Work Experience Program Even though many companies offer opportunities for our children to gain experience, getting into these companies is not the easiest thing to do. In addition, I am sure that my

It is even more appreciated when we learnt earlier this year that the program has been enhanced which meant that High School Students are now participants of the program. I am sure that this list is not exhausted; there are many other benefits that we the employees continue to enjoy while we work with this great company called the CB Group. It was William Arthur Ward who said, “Feeling gratitude and not expressing it is like wrapping a present and not giving it.” And although many of us have expressed gratitude on different occasions, let us collective say a BIG THANK YOU to the Directors and Managers of the CB Group and even to the staff who work tirelessly to make these events/perks possible, reminding us how privileged we are.

1. How long have you been a member of the CB Group? I’ve been at CB since January 21, 2015, a mere 9 months now, going on 3 years…lol!!
2. So far, what’s the best part about working here? The dynamism of the company and the people, there are some wonderful personalities working at CBG and that makes my job less challenging sometimes. Don’t get me wrong though, sometimes there are indifferences, but when the ultimate aim is the satisfaction of the customer, personal and internal differences have to take a back seat.
3. Describe what a typical work day is like for you. My mandate is the collection of the company’s money that is outstanding within their due date. I achieve this by checking the Cashiers’ Reports for all locations to see how much money was collected the previous day. I would then peruse the Accounts Receivables aging report to zoom into accounts of “interest” that need urgent attention and in conjunction with my team, give them the attention, which includes calling, coercing and negotiating with the customers. I would review and approve Customer Application Forms, though I must admit that I approve the CASH and COD forms a whole lot faster than the CREDIT forms. My team and I work closely with the Sales Representatives and on a daily basis there are requests from them on behalf of customers that sometimes literally have you thinking on your feet, the best way to appease the customers without compromising our Credit policy. A great day for me is an initial payment or settlement of an account with a long overdue balance after months of calling, coercing and negotiating with the customer.
4. What gets you through a hectic work day? Hectic days come and go, personally I just take the issues as they come and deal with them accordingly, as it makes no sense to stress over them, though I sometimes do, after all, I’m only human. My philosophy is: “you got to do what you got to do”. Hypertension is not a good thing and I do not need it, so I ‘whoosa’ and take it an hour at a time until the tasks are accomplished and the day is over.
5. Which product is your favourite at CB? Pork anything, all day, everyday….yummy!!
6. If you could switch departments for a day, where would you go and why? I would like to work in the Marketing department, as other than the CB staff, the Marketing team puts a face and personality to CB’s products. I would like to understand all the background work (yes, I know it is hard work and long hours, but I’m used to that) or production that happens within the department that produces the results in the visibility of the company.
7. Any embarrassing moments at work? So far, I can’t think of any and I’d like it to remain that way…lol!!
8. Any favourite chicken, pork or egg dishes? I love me some jerk pork, Copperwood’s bacon sausages, ‘smart’ omelettes and well, chicken is not chicken if it’s not CB chicken. cb big ups — a day in the life of… deanne whitely

Caribbean Passion Coca-Cola Ham Ingredients • 4 ½ lbs Caribbean Passion ham • 1 onion (peeled and cut in half) • 2 quarts Coca-Cola for the glaze • 1 handful of cloves • 1 heaped tablespoon molasses • 2 teaspoons mustard powder • 2 tablespoons sugar
Preparation
Put the ham in a pan covered with cold water, bring to the boil, then tip into a colander in the sink. Place the ham skin-side down, add the onion, then pour over the Coke. Bring to boil, reduce to a good simmer, put the lid on, not tightly, and cook for just under 2½ hours. If your joint is larger or smaller, work out timing by an hour per kilo. Preheat the oven to 240°C/gas mark 9/450ºF. When finished cooking take it out of the pan and let cool so it’s easier to work with. (You can let it cool completely then finish off the cooking at some later stage if you want.) Then remove the skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the molasses over the skin, without troubling the cloves. Gently pat the mustard and sugar onto the fat. Cook in a foil-lined roasting tin for approximately 10 minutes or until the glaze is burnished and bubbly. (If you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30-40 minutes, from room temperature, at 180°C/gas mark 4/350ºF, turning up the heat towards the end if you think it needs it.)
Serves: 8
Toast or grill the bread. Spread on the chicken and egg salad, and garnish with tomato and lettuce.

Caribbean Passion Ackee & Corned Pork Preparation Time: 10mins Pre-Prep Cooking Time: 15-20mins WHAT YOU’LL NEED • ½ dozen ackee • salt, to taste • 8oz Caribbean Passion Corned Pork • 2oz butter/2 tblsps coconut or vegetable oil • 1 medium tomatoes, chopped • 1 sweet pepper (bell pepper) chopped • 1 medium onion, chopped or in rings • 2 cloves garlic, minced • 1 hot pepper, diced (optional) • 1/4 tsp all purpose • 1 sprig thyme (remove leaves from stick) • white pepper TT • 1 stalk escallion (chopped)
HOW TO MAKE IT 1. Remove ackees from pods 2. Clean, wash and drain. Place ackees in boiling water (enough water to cover ackees) with salt, and boil for about 15 minutes or until tender. Drain and set aside 3. Dice corned pork to desired size 4. Heat the oil/butter over medium heat and add tomatoes, sweet pepper, onion, hot pepper, garlic, and escallion. 5. Add corned pork and ackee, and stir lightly. Heat thoroughly then add white pepper and salt to taste 6. Finish with fresh thyme

Ham
For The Holidays
1. Simply, ham is pork that’s been preserved through salting, smoking, or ‘wet curing’. It was traditionally made only from the hind leg of a pig, and referred to that specific cut of pork. 2. When Ham is preserved through smoking, the meat is placed in a smokehouse to be cured by the action of smoke. This is how our own Caribbean Passion hams are made. 3. Wet curing (also known as brining) involves soaking the meat in a ‘brine’, sometimes with other ingredients such as sugar also added for flavour. Meat is submerged in the brine for around 3–14 days, during which time the meat needs to be kept submerged. 4. Cured meats experience texture and flavour changes, but also have increased resistance to bacteria and spoilage. This is the reason why curing started in the first place in the days before refrigeration. That curing makes hams taste delicious is just a happy side effect. 5. To make boneless hams - after deboning, the hams are tightly pressed into oval-shaped packages, and wrapped in netting before curing. The curing will break down some of the proteins in meat muscle, allowing them to reconnect and link with each other. That’s why a boneless keeps its shape! 6. Although boneless hams are far easier to carve (just slice and serve!), many Jamaicans prefer bone-in hams, because of the flavour of the bone. The bone also makes a great soup!

Zika Virus
(Zik V) is in Jamaica.
The Zika Virus (Zik V) is in Jamaica. So be aware and protect yourself. • Use Mosquito repellents with DEET. • Avoid wearing dark or black clothing. This attracts mosquitoes. And wear long-sleeved shirts and long pants where you can • Empty standing water from containers such as flowerpots or buckets And did you know that people with the “O” blood type are twice as likely to be bitten by mosquitoes? So be extra careful! Zik V Symptoms are similar to those of dengue and chikungunya. The most common are: fever, rash, joint pain, or red eyes. Other symptoms include muscle pain, headache, pain behind the eyes, and vomiting, which can last for up to a week. So drink plenty of fluids to stay hydrated and get plenty rest. There’s no medicine to treat Zik V but you can take acetaminophen or paracetamol to relieve the fever and pain. Do not take aspirin! tid bits — zika virus
