Dear CBG Family! How lucky I am to be first up for 2016 and the one to wish you a happy, productive and successful new year! I hope you all had a wonderful Christmas and were able to spend quality time with your families, have some fun, relax a bit and perhaps even take a little quiet time to think of what lies ahead for 2016, which is already shaping up to be a very interesting year with general elections looming, American elections later in the year and the “Road to Rio” for what will likely be Usain’s last Olympics in the middle. The New Year is a time when it’s normal for many of us to make a list and commit to changing something in our lives for the better, but how many of us actually follow through on what we “commit” to? As a matter of fact, how many of us actually write down our resolutions rather than just saying them quietly to ourselves? How many verbalize them or tell them it to a friend and ask for their help? I wonder by time this is printed, how many of us would already have strayed? Sharing our personal goals isn’t something that we’re exactly used to, but just think about it; wouldn’t you help a friend try to keep their resolutions if you knew what they were, and especially if they asked you to? Goes without saying you would, and I’m sure they would do the same for you.
So, let me be brave and share a few of my resolutions. Hopefully all of you out there reading this will help me to keep them: Resolution 1: Improve health - eat better, drink more water, exercise regularly, get enough sleep. Resolution 2: Spend more quality time with the ones I love. Resolution 3: Learn more (of anything /everything) – read more, listen more, understand more. Resolution 4: Visit all the CBG locations more regularly. I won’t bother you with the rest of them, but the question is will you tell me yours (you can email me if you’d like)? Will you share them with the CB Family you see every day at your office? Or, will you agree to us printing them in the next issue of Chat Bout? I believe whole heartedly in team work. Just as today, we continue at all of our locations to meet and beat our company goals as a team, so too could we approach our personal goals as a team, and we all know that as a team we will always achieve more! Roast Chicken with
Jamaican Market Vegetables This “one pot” dish is seasonal, budget friendly and convenient - perfect for a no-fuss and healthy Sunday lunch. Ingredients: • 1 pack CB Chicken mixed parts • 2 tbsps vegetable oil • Chicken seasoning, to taste • 2 large carrots, peeled and cut into large chunks • 2 small cho chos, peeled and cut into large chunks • 2 large turnips, peeled and cut into large chunks • 1 small wedge of pumpkin, peeled and cut into large chunks • 1 cup good quality chicken stock • Rosemary sprigs • Thyme sprigs Method: 1. Preheat oven to 375F. 2. Add CB Chicken mixed parts to a bowl and rub all over with one tablespoon of oil and chicken seasoning. 3. Add parts to a large baking tray or casserole dish and place the varying vegetables around and in between the chicken pieces. Pour over chicken stock and add rosemary and thyme sprigs. 4. Bake for an hour and a half, basting the chicken and vegetables with the stock at occassionally. The stock will reduce to a tasty chicken gravy, the vegetables caramelised and the chicken will be golden brown. around the brand in 30 days — cb chicken

COOK UP JAMAICA As we make way for the New Year, we’ve been busy in the kitchen, helping you “COOK UP JAMAICA” with great Jamaican recipes using none other than Caribbean Passion products and other Jamaican ingredients. &Chefs Smart Young
Chef Latoya Panton's “Young Chef Cook Off” was the perfect way to kick off the Christmas season of family, food and fun! The competition featured young chefs of different ages and was hosted by Yanique “Curvy Diva” of Fame FM.
With live cooking and baking segments and a special Smart Eggs ‘easy egg challenge’ we had little ones as young as 4 years wowing us in the kitchen. Other challenges featured dishes that showed these young chefs were way ahead of their years, making ‘big people tings’ like Curry Chicken Pasta and Parmesan Crusted Pork Chops. The day closed with an exciting cook off between the Culinary Club of Wolmer’s Boys High School and young chefs from Chef Panton’s culinary school. This definitely was the perfect combination – Smart Eggs and Smart Chefs!

The definition of a Champion Farmer - Celebrated Jamaican and renowned animal geneticists and livestock development researcher, Dr. Karl Wellington has worked to change the lives and livelihoods of countless of Jamaican farmers through improved cattle breeds. In 1962, Dr. Wellington had received the first Jamaica Independence Scholarship to study Agriculture at the University of the West Indies in St. Augustine Trinidad. Today, Dr. Wellington’s work is known to be largely responsible for the development, maintenance and conservation of Jamaica's four cattle breeds - Jamaica Red Poll, Jamaica Brahman, Jamaica Hope and Jamaica Black Poll. Dr Wellington’s research has helped improve industry standards, with more productive animals, that are better for Jamaican climate conditions. The BIG FEED pulled out all the stops for its loyal customers in December, treating them to a real deal Farm Party like no other at Nutramix headquarters – Newport Mills. We thanked our Nutramix Family for their support in 2015 the best way we know how - with warm smiles, open arms, great music and even better food. The mento band got us going as we played dominoes, drank mannish water and ate finger licking curry goat that would remind you of your granny. And after the sun set, the famous Fab 5 Band was on deck to keep us dancing into the night. A BIG Thank you to all our customers– it’s a pleasure to work with you and help you Grow Jamaica.

1. How long have you been a member of the CB Group? Going on 7 years. I joined CB in June 2009….Oh my God, time flies. 2. So far, what’s the best part about working here? Working and interacting with a dynamic team – though sometimes we don’t see eye to eye, at the end of the day, we have to agree disagree and arrive at the same result. Also I enjoy working with a great organisation where there is opportunity for growth. 3. Describe what a typical work day is like for you. It starts at around 8 am at the office because I’m an early bird and I want to set things in order before the doors open at 8:30. First thing in the morning myself and the supervisor ensure all drivers report and that everything left overnight is accounted for. On a Monday, when we have staff sales, it can be very hectic because we have to make way of course for our regular customers and drivers who do their drop-offs. During the course of the day I also have to liaise with Accounts and Credit and Collection at Group Office, I work very closely with them. It’s a lot of careful paperwork to ensure everything is in order and accounted for the Company. But, I totally believe that when I leave in the evening, that if I’m not here in the following morning, anyone else would know what to do, because everything will be in perfect order. 4. What gets you through a hectic work day? Each day I take Solomon’s advice in Proverbs 3: Verse 5 to 6. “Trust in the Lord with all thine heart, and lean not to thine own understanding. In all thy ways acknowledge him and he will direct thy path.” And also some back ground music that gives me peace. 5. Which product is your favourite at CB? Copperwood Pork of course, and I say that with pride. Just about anything pork- that’s me. 6. If you could switch departments for a day, where would you go and why? Customer Service of course, because I love to put a smile on a satisfied customer’s face. 7. Any embarrassing moments at work? I really wish not to say, because I would have to call names. But I must say thanks to my manager Mrs Wilson – because I learned a lot from that incident and even now it brings a good laugh between us. 8. Any favourite chicken, pork or egg dishes? BBQ Spare Ribs! I do it myself with rice and peas, vegetable and a little cream potato. My secret is a little Red Stripe beer in my sauce with the usual spices.

CB Chicken Red Stripe Lemon Paradise Fried Chicken Ingredients • 10-13 Pieces CB Chicken Drumsticks • 2 Cups Flour • 2 Teaspoons Salt • 2 Tablespoons Onion Powder • ½ Teaspoon Black Pepper • Oil for frying • 2 Extra Bottles of Beer Marinade • 1 Tablespoon oil • 1 Onion • 1 ½ Teaspoons alt • ½ Cup Red Stripe Lemon Beer • 1 ½ Ounces, Ginger • 1 Ounce, Lime or Lemon Zest • 1 Tablespoon, Allspice • 2 Tablespoons, Honey Recipe courtesy of @greedygirlcooks

In a blender mix all the ingredients for the marinade, oil, onion, salt, beer, ginger, allspice and honey Submerge clean drumsticks skin on into the marinade and leave it to soak over night Heat oil on medium high heat In a shallow dish combine flour, salt, onion powder and black pepper Pour the bottle of beer into a bowl Remove chicken from the marinade and dredge in flour, remove excess then dip in beer then back into the flour After the chicken is floured twice, place it in the hot oil and deep fry for approximately 15 minutes If shallow frying turn after 7 to 8 minutes The chicken is finished when the internal temperatures reach anything above 165/ 170 degrees While the chicken is frying take the second bottle of beer and pour into a sauce pan reduce to a thick sauce, do not allow it to reduce too much or else it will become too hard and sticky like a toffee . Serve with sauce.
Chef’s Tip: You really have to watch the beer as it reduces it goes from 0 to 100 real quick. Let’s not waste bottles of beer!

Caribbean Passion Traditional Red Peas Soup with Chub Ham Preparation Time: 20mins Pre-Prep Cooking Time: 1hr 10min Ingredients: • 1 ½ Cups Dry Red Peas • 8 Cups Water, approximately • 1lb Caribbean Passion Smoked Ham • 1lb Yellow Yam • 1 Scotch Bonnet Pepper • 1 Medium Onion, chopped • 3 Stalks Escallion • 3 Sprigs Fresh Thyme • 1 Teaspoon, All Purpose • 3 Cloves Garlic • 1Cup Coconut Milk • 6oz Carrot, chopped • Salt and Pepper to taste
Method: 1. Soak the dry red seas and garlic overnight. 2. Place red seas in a large saucepan, cover with water, bring to the boil, and turn heat down to a simmer. 3. Cut smoked ham into bite sized chunks and add to the saucepan after 30 minutes. 4. Add coconut milk and leave to simmer. 5. Add yam, thyme and scotch bonnet pepper to pot after peas have been cooking for about 55 minutes. 6. When red peas are soft (after 45 minutes of cooking) carefully remove scotch bonnet peppers (don't break) and thyme sprigs. 7. Add carrots and all purpose 8. Put all ingredients back into pot then add escallion and simmer for 10 minutes. NOTE: Depending on desired preference, spinners, sweet potato and pigtail can be added to soup.

New Years Around The World
Like many parts of the world, we celebrate New Year's Day on January 1st, but did you know there are many different unique dates and New Year celebrations around the world? Chinese New Year – changes every year, but is always between Jan. 21 and Feb. 21, depending on the new moon of the first lunar month. In 2016, it will be February 8, and they will celebrate the Year of the Monkey. Chinese tradition claims this will be a prosperous year for people born in the year of the monkey (1920, 1932, 1944, 1956, 1968, 1980, 1992, 2004) – is it your lucky year? Jewish New Year – also known as Rosh Hashanah, is celebrated on the first two days of the seventh month of the Hebrew calendar. In 2016, it will be October 2nd – October 4th. For Jews, it’s a time to look back on mistakes of the past year and plan changes for the new one ahead. Jews usually spend the day in worship and apples are dipped in honey and eaten as a symbol for a sweet new year. Islamic New Year - also known as the Hijri New Year, it falls on the first day of ‘Muharram’, the first month in the Islamic calendar. For 2016 it will be celebrated on October 3rd, where special prayers are said and the appearance of the new moon will recorded in mosques. Thai New Year - called the Songkran, it’s celebrated from April 13-15. A favourite activity is the ‘Water Festival’, where Thai people throw containers of water, use water guns, and even garden hoses to play and soak each other. The water symbolizes the hope for good rains in the New Year. All Buddha statues and images are also cleansed for good luck and prosperity. Ethiopian New Year – or Enkutatash, meaning the "gift of jewels” is celebrated on Sept. 11, traditionally at the end of ‘the big rains’. Daisies blossom all over the mountains and fields change into bright yellow, which is a major eminence of the holiday. It is a period when the old bless the young and the young hope for new prospects, which New Year brings about. People dance and sing to celebrate this spring festival and some Ethiopian cities have spectacular religious celebrations.

Be Realistic Seriously! The surest way to fall short of your goal is to make it hard to achieve. For instance, resolving to NEVER eat your favorite food again is just setting you up to fail.
II. Plan Ahead Don’t make your resolution on New Year’s Eve. If you wait until the last minute, it will be based on your mindset that particular day. Instead, it should be planned well before December 31 arrives. III. Outline Your Plan Decide how you’ll deal with temptation to skip your exercise or have that piece of cake. Try calling on a friend for help, practicing positive thinking and remind yourself how your “bad” will affect your goal.
